TO OUR NEW issue, and the new year. We’ve got North Sound fever! Right now, this dream BVI destination is abuzz with boats loaded with tourists and locals alike having fun on the water and checking out all the world-class properties in this magical little part of the BVI. I love my job, and as part of it, on occasion I get to take a sneak peak behind the scenes at some really special properties. Recently I was lucky enough to have the opportunity to visit Bitter End Yacht Club 2.0. General manager Patrick and assistant manager Alyssa kindly took Charlie Bufton and I on a tour of the brand-new resort. The attention to detail, quality and thought put into the construction really struck me. So much care was taken to preserve and re-use many original pieces of the resort; from the original staff boat that has become a beach bar, to timber, and many iconic reminders of days gone by at Bitter End. BEYC 2.0 is a thoughtful, sustainable, upcycled masterpiece. Read all about Bitter End rising in our feature on page 40. And as if a sneak-peak at BEYC 2.0 wasn’t enough, we were whisked off to Oil Nut Bay Marina Village and hosted for lunch at NOVA Restaurant by Oil Nut Bay’s director of marketing, Shaylene Todd (meet Shaylene in “People in this issue” on page 14). We were spoiled rotten with the incredible gourmet sushi boat and a crisp glass of rose–a match that is truly made in heaven on a warm afternoon in the North Sound. A born and bred Canadian, Shaylene joined the Oil Nut Bay team at the end of 2019 as their director of sales and marketing. No stranger to the Caribbean, Shaylene made the move to the BVI after living in Belize for six years, and felt immediately at home in the sailing capital, having previously worked as a first mate and chef on chartered catamarans. The four new marina rental villas currently under construction will join the existing three in the collection, which are proving exceptionally popular and quick to rent. Sunday morning: I’ve arrived in the North Sound by catamaran from Nanny Cay. We’ve just finished a week of sailing around the British Virgin Islands–Cooper Island, Norman Island, Trellis Bay, Jost Van Dyke, Cane Garden Bay, Sandy Cay, Anegada, Spanish Town. Camping out in the North Sound for a few days to see where the wind takes us.

The North Sound is the name for a protected body of water sheltered by Virgin Gorda and several other islands. It is known for its private islands, pristine beaches, top-notch marinas, exclusive resorts, engaging watersports, divine restaurants, and welcoming bars spanning Moskito Island in the west, Necker Island in the north, Oil Nut Bay to the east, and Leverick Bay to the south. In the centre of this sailing mecca are the newly reopened Saba Rock Resort and the protected nature island of Prickly Pear. For snorkellers and SCUBA divers, the North Sound has almost infinite visibility–the water is so clear, you can forget it’s even there. Kite surfers flock to this part of the Caribbean for the easterly trade winds which funnel between the islands at certain points. The experts will happily share the best spots.

Sunday morning (later): We hop off the catamaran and drive the tender from our mooring ball over shallow seas that are a shade of blue my brain doesn’t believe is possible. Ignoring the distraction of the turquoise waters, I navigate us to Saba Rock Resort where we tie up the RIB on the dock and disembark for Sunday brunch. We don’t leave until the sun goes down.

Only an acre-and-a-half in size, Saba Rock Resort is one of the tiniest resorts in the North Sound, but it has a huge heart. The destruction from Hurricane Irma gave the owners an opportunity to rebuild Saba Rock from the ground up. The quirky and cosy rooms are decorated with surf boards, nautical knots, pictures of the past, and historical touches. The island also features a lovely grassy lawn for lazing around while sipping cocktails and a gorgeous beach for sunning, swimming, and snorkelling.

Monday afternoon: I slink off the bow of the catamaran into the womb-like waters and snorkel around the boat, spying parrot fish, moon jellies, and a green sea turtle. Back on the boat, I sip on a cold beer with lime while watching the kite surfers straighten their lines before they take off from Eustatia Sound. The wind catches their kites, and they become liaisons between the sea and sky, navigating both elements with the joy and ease of sea birds.

Eustatia is a private island for hire. The 35 acres can be hired for groups of up to 14 guests at a time. Included with luxury accommodation are pristine beaches, gourmet meals, watersports instruction, bespoke cocktails, and a powerboat cruise. The gazebo at the summit of the island provides one of the best vantage points in the North Sound–a 360°-view that includes the nearby islands of Virgin Gorda, Prickly Pear, and Necker. Eustatia Island also boasts sustainability: the island is 100% solar powered; water is collected from cisterns or desalinated; and food and landscape waste is composted for fertiliser. Tuesday? Wednesday? I’ve lost track of time: I’m covered in ring-tailed lemurs at Necker Island. This place is wild. But then the gorgeous staff serves us champagne and sushi on a floating platter in the pool, and I remember that Necker Island is one of the most exclusive resorts in the world.

Necker Island allows guests to take over the entire island for 40 guests at a time (up to 54 if it’s for an event or celebration). The Bali-inspired décor feels uplifting and relaxing with a hint of mischief. Necker Island is Sir Richard Branson’s home, and billionaires, movie stars, hip-hop moguls, and premiere athletes have all stayed here. But unlike some of the other private islands, Necker also opens up a few weeks a year for Celebration Weeks where couples or smaller groups can book a room in one of the villas.

NORTH SOUND DIARY

Some evening … I’m sitting on a sun lounger at SandBox Bar & Grille on Prickly Pear Island watching a magenta sunset turn each ripple on the water into a saucer full of psychedelic cotton candy swirls. When the sun finally disappears beyond the horizon, I turn back to the beach, only to see, rising over Virgin Gorda, the most enormous full moon that seems so close, I feel like I could reach out and stroke the cheek of the man in the moon.

About a third of Prickly Pear Island is designated Prickly Pear National Park, home to many species of plants, insects, lizards, and birds that can be seen along many of the island’s walking trails. The reefs around Prickly Pear provides some of the best snorkelling in the BVI with stunning corals, sea urchins, fish, crustaceans, and sea turtles. The island is uninhabited, but features the SandBox Bar & Grille on the island’s southernmost point.

Thursday–all day and all night: I’ve heard stories of guests arriving at Bitter End Yacht Club by sea plane. Jealous. We zoomed up on our tender and docked outside before being greeted by some of the friendliest people we’ve met in the Caribbean. Billionaires mingle with beach bums. We were happy to be somewhere in between. We came for brunch and didn’t leave until they kicked us out. There was just too much to do. I even tried paddle boarding (before my first mimosa). And I didn’t fall too many times. I’ll leave the kite surfing and Hobie Cats to the more experienced wind experts … dinner was divine. I can’t get enough Caribbean lobster. Y’all can keep your cold-water lobsters at home. Is it true that fat is more buoyant than muscle? Because I’m floating after my overindulgent day at Bitter End.

The iconic Bitter End Yacht Club has returned after a five-year hiatus of recovery and reconstruction from Hurricane Irma, Hurricane Maria, and the pandemic. Bitter End basically invented what is now taken for granted in the North Sound–barefoot luxury. In addition to having several restaurants and bars, provisioning services, and a boutique, Bitter End is home to one of the most comprehensive water sports centres in the BVI. Friday morning: Blunder Bay Estates is the newest property development on Virgin Gorda. Located at the gateway to the North Sound, Blunder Bay Estates comprises 21 acres of untouched beachfront land divided into 10 building plots. The development company looks to construct a 12-berth marina, four private docks, private roads, a helipad, beach facilities, and other amenities.

That’s it. We’ve decided that we have to live here. We met a property developer at Bitter End who clued us in to Blunder Bay. We cruised over on our tender and fell in love with the secluded point that sits at the entrance to the North Sound. What a ridiculous location! Directly across from Moskito Island. We’re seriously considering it. This place has gotten in my blood!

Friday night: We start off with happy hour at Jumbie’s Beach Bar in Leverick Bay. Delicious drinks served by a friendly staff. Live music, good vibes, great food with our feet in the sand. A little dance with some Moko Jumbies. And maybe a few too many painkillers.

Leverick Bay Resort & Marina is a brightly coloured compound comprised of a hotel, rental villas, a spa, marina, beach, bars and restaurants as well as watersports and Arawak Boutique. It’s a place to kick off your shoes and relax without feeling like you’ve accidentally stumbled onto someone’s private island. Everyone is welcome at Leverick Bay.

Friday night (later): It’s midnight. I’m decked out in glow-stick jewellery on the beach at Moskito Island for a party, where a DJ spins dance tracks, partyers wear neon mesh tops over bikinis, laser beams bounce off the palm fronds, and Beyoncé says “hi” while I dig through the cooler for a Diet Coke. Am I allowed to mention that Beyoncé was here? Did I sign an NDA?

Saturday lunch: I’m never leaving this place. We’ve found an overwater restaurant and lounge, NOVA at Oil Nut Bay. I’m lazing on a daybed that is suspended above the sea. We’ve had the freshest, coldest cocktails delivered to us, and I’m contemplating taking a dip in the pool, which is also suspended over the harbour. Or I might try my hand kite surfing or e-foiling with local professional, Tommy Gaunt out of their Deep Bay Watersports Centre.

I will never forget the bluest waters I’ve ever seen, the warm people I’ve met, the many tasty dishes and cocktails I’ve consumed, and the spontaneous adventures that seemed to present themselves at every turn. I’ll be back next year to see what another week in the North Sound may bring. ■

A PHOENIX RISING from the destruction and devastation from hurricanes Irma and Maria, as well as the global pandemic, Bitter End Yacht Club returns, much to the excitement of guests, whether they’re coming from across the world or across the Sound. The original Bitter End Yacht Club was founded in the 1960s, purpose-built by sailors who wanted an outpost in the North Sound. In 1973, the resort was taken over by the Hokin family, who had initially just asked about the possibility of buying one acre for a seaside cottage, but ended up buying the whole place. They have privately owned and operated it since then. For 44 years, Bitter End prospered. The resort served as the ideal hub for kindred spirits to come together and chat about the sea. Olympic sailors, beer can racers, spectators, and celebrities have always been attracted to the resort for its unpretentious, welcoming vibe.

Hard times

In 2017, Bitter End Yacht Club was completely destroyed by Hurricane Irma. Kerri Jaffe, chief marketing officer at BEYC says: “We were a direct hit. Almost one hundred structures were destroyed within just a few hours.” The destruction took over a year to clear, and then the family began rebuilding. “No storm of any category could extinguish the Bitter End spirit,” reports the BEYC website. The attitude of “BVI stronger” has prevailed throughout the islands, and Bitter End is no exception. Photos and videos of Bitter End’s decimation were often used to show the destruction of Hurricane Irma. “Seeing it come to life again, after the hurricanes and the pandemic, it’s a shining light after a time that’s been dark for people near and far. It’s rewarding for us and bolstering for the community,” Kerri comments. Throughout the rebuild process, the resort retained several long-term crew members, often retraining them so that they could participate in the renovations.

Many former staff who did not stay on will be coming back to Bitter End. “To many people, it is more than a job, it’s a second home,” Kerri says.

Community spirit

“We surveyed thousands of our guests, and the feedback we received was that it didn’t have to look the same, but it had to feel the same,” says Kerri. Though it has the reputation as being the top water sports destination in the Caribbean, Bitter End never feels pretentious. “It’s about the community,” Kerri says, “kindred spirits who come together locally and from all over the world.” Whether you arrive by sea plane or

These gorgeous huts are truly designed for lovers of the sea. “They’re magical,” Kerri says. “Two-storey lofts with stunning views over the water with two private decks–one which serves as a private dock–the Marina Lofts have been tailored for active adventurers who are called to the sea.” The lofts are open to the sea breeze, and the two decks offer opportunities to relax and watch the sail boats come and go in the marina. Only two lofts are currently available, but there are plans to build three more. BVI residents who like a staycation at Bitter End need to book these lofts as soon as possible.

The Hokin family originally came to the BVI aboard a 72’ sailing trawler, and the importance of family vacations remains at the center of Bitter End. Kerri says: “Bitter End has always been multigenerational. A place that family members pass on to their children and grandchildren. It’s a tradition that we want to continue for generations to come.” Kerri tells me that many families met each other at Bitter End and now always vacation there together. These families are sure to be some of the first to reserve their vacations at the newly renovated resort. The devastation of Hurricane Irma provided an opportunity for the family to reassess, rebuild, and reconnect with the community, and the Hokin family’s commitment to retaining the spirit of the resort has resulted in an even better Bitter End. ■

“MY ATTACHMENT TO Virgin Gorda is like receiving your first kiss from your first crush and I’ve been crushing on Virgin Gorda all my life,” Esther Wheatley, a lifelong lover of the Virgin Islands, and Virgin Gorda in particular, explains. Esther was born and raised in the Virgin Islands. Her deep love for the islands was inherited from both her grandparents and parents, who were born on Virgin Gorda. Her father was Ralph Telford O’Neal, OBE, the longestserving elected representative in the British Virgin Islands. He represented the ninth district Virgin Gorda, and served as chief minister of the British Virgin Islands for three terms. Though she grew up on Tortola, Esther spent summer vacations and Christmas holidays on Virgin Gorda. This is where her love for the island was fostered and grew. It became such a crucial part of her being, that even when she lived in another country, Virgin Gorda resided in her heart. “Though I spent time abroad for school, I always knew that [Virgin Gorda] is where I would make my home,” Esther explains. After completing her tertiary education, she lived in New York for

In 1990, she left USA and lived on St John for a short time, until she received a call from Charles Tobias. He informed her of a job offering at the new Pusser’s Pub and Gift Shop. For Esther, it was an opportunity of a lifetime, as it meant she would finally return to the place that she always dreamt of. Esther accepted the offer and worked as a manager for Pusser’s retail at Leverick Bay for two years. After that, she received another opportunity, working at Little Dix Bay, where she was hired as retail director for all their stores. She worked there for five years. In 1996, she received a life-changing opportunity that would allow her to express her love for Virgin Gorda through entrepreneurship. That year, Esther was approached by the owner of Biras Creek, who asked if she would like to operate her own business at Biras Creek’s retail/

gift shop. Ever the entrepreneur (and with a wee nudge from her friend and current employer, Chris Smith, managing broker, Coldwell Banker BVI), Esther grasped this opportunity with both hands. Two years later, the Fat Virgin Cafe/Restaurant was born. It grew to become one of the most successful small boutique and dockside restaurants in the Virgin Islands. Esther says the inspiration for the name stemmed from an early childhood memory. “The first time I heard that Virgin Gorda translated to Fat Virgin, I knew anything I made was going to be called that. I was about 8 or 9, and from then, I held it dear to my heart.,” Esther shares. This newly established business proved to be not just a place to eat, but also a crucial community space. “I was privileged to have grown up in a time when I could witness Virgin Gorda transition from a place of lanterns, flambo and dirt tracks

to a place today with electricity, streetlights, paved roads around the island and several hotels and villas,” Esther says as she reflects on the development of Virgin Gorda. Fat Virgin was an invaluable part of this development, and her experience affords her a deep appreciation for this journey of development. It remained in operation just short of 20 years. “Before Hurricane Irma came in 2017, we had the unfortunate incident of Biras Creek Resort’s closure in June 2015. It was a challenging time, operating for two years without a certain infrastructure as a result of the shut-down, then the big storm

of 2017 completely destroyed the Fat Virgin,” Esther explains. After the Fat Virgin closed , Esther started thinking about the next move in her career. “I was figuring out how I would reinvent myself, when I was approached by Chris Smith to join his team in the real estate industry,” Esther explains. Due to her love for people (and Virgin Gorda), she says: “although there was a lot to learn, I took to it like a duck to water.” Chris is delighted to have her on board. “Sadly, in 2017 Irma took a liking to the Fat Virgin and ran away with her! However, every disaster

also provides opportunity and a silver lining. “We are absolutely delighted that Esther has joined the Coldwell Banker Real Estate BVI team, bringing all of her love, experience and intimate knowledge of the history of the BVI, and in particular Virgin Gorda and its people.” In addition to sharing the history of Virgin Gorda, Esther has also introduced previous clients from Fat Virgin to the company. “We had a very loyal following of Fat Virgin clients, many of whom were homeowners on Virgin Gorda. We have always considered them as not only clients, but friends,” Esther says. Alongside her work, Esther also enjoys spending time with her family. She is married to Honorable Vincent Wheatley, Minister for Natural Resources, Labour and Immigration, and the ninth district representative. They have two daughters: one a graduate from Swansea University Medical School, and the other a graduate of London School of Economics, with a master degree in international relations and politics. 600 ml double cream 150 gm caster sugar finely grated rind and juice of 3 lemons fresh berries and mint leaves to serve Heat the cream, sugar and lemon rind in a saucepan over a low heat until the mixture starts to simmer. Stir continuously for around 3 - 4 minutes, then remove from the heat. Cool until the mixture is lukewarm and pour into small serving glasses. Cover the surface with cling wrap and allow to set in the refrigerator for 2+ hours. Garnish with fresh berries and mint leaves, and serve with Citrus Shortbread.

Preheat oven to 180 C. Add the flour, sugar, lemon rind and sea salt to a food processor and process to combine. Add the butter and process until fine crumbs form (a couple of

minutes). Then add the egg yolks and lemon juice, processing to combine. Turn the mixture onto a lightly floured surface and knead until smooth. Roll the mixture out on a lightly floured sheet of baking paper till 6mm thick, refrigerate to rest for 30 minutes. Using a cookie cutter cut out rounds, re-rolling the scraps till the dough is used up. Place the cookies on an oven tray lined with baking paper, and bake for 15 – 20 mins until the edges are golden. Remove from oven and cool the cookies on a rack.

Lemon & Ricotta Muffins MAKES 12 375 gm self-raising flour 220 gm caster sugar 3 tablespoons finely grated lemon rind 70 gm seed mix (chia, sesame, linseed) plus extra for sprinkling 200 gm fresh ricotta 2 eggs, lightly beaten 2 teaspoons vanilla extract 280 gm plain greek-style (thick) yoghurt 125ml vegetable oil LEMON ICING 160g icing sugar 2 tablespoons lemon juice Preheat oven to 180°C. Place the flour, sugar, lemon rind and seed mix in a large bowl and mix to combine. Then add the ricotta, egg, vanilla, yoghurt and oil, using a butter knife mix again until just combined. Spoon mixture into 12 x 1/2 -cup-capacity (125ml) greased muffin tins. Cook for 20 – 25 minutes or until cooked when tested with a skewer. Set aside to cool for 2 minutes in the muffin tin before transferring to a wire rack to cool completely. In a small bowl mix together the icing sugar and lemon juice for the Lemon Icing. Drizzle over the muffins with a small spoon, then sprinkle with the extra seed mix.

LEMON FRITTERS Mix the ricotta and eggs together in a large bowl, leaving some texture in the ricotta. Add the caster sugar and lemon zest, then gently stir in the combined flour, baking powder and salt.

Heat 1 cm of oil in a sauté pan over a medium heat. Drop spoonfuls of batter into the oil and cook for 1 minute on each side or until golden and puffed. Drain on kitchen towels, then toss in the Cinnamon Sugar. Transfer to a serving plate and serve warm drizzled with the Citrus Honey Syrup. Serve extra syrup separately. CITRUS HONEY SYRUP Place all of the ingredients in a saucepan and slowly bring to the boil, stirring to dissolve the sugar. Cook at a fast simmer for 10 – 15 minutes until reduced and syrupy. Cool then chill till ready to use.

Lemon Curd 3 tablespoons cornflour 50g caster sugar 275 ml cold water 3 lemons, zested & juiced 50 gm butter, cubed 3 egg yolks 100 gm crème fraiche In a bowl mix the cornflour and sugar, then gradually whisk in enough cold water to just make a paste. Zest the lemon rind into a saucepan and add the rest of the cold water. Gently warm the mixture over a low heat. Mix the lemon juice into the cornflour paste, then pour into the saucepan and whisk together. Cook the mixture until thickened, whisking all the time. Add the butter, stirring continuously, then add the egg yolks one at a time. Continue cooking gently until the mixture thickly coats the back of the spoon (2 - 3 minutes), then remove from the heat to cool. Once at room temperature whisk in the crème fraîche

and transfer to a container. Cover the surface of the curd with plastic wrap and refrigerate until required.

Lemon Curd Sponge Cake SERVES 6–8 150 gm caster sugar 4 eggs finely grated rind of 1 lemon pinch of salt 100 gm plain flour 50 gm cornflour 1 /2 teaspoon baking powder 40 gm melted butter 250 gm crème fraiche 150 ml pouring cream 30 gm icing sugar, sieved 1 teaspoon vanilla paste 1 1/2 cups lemon curd – mix with a little hot water if curd too thick to drizzle edible flowers to decorate - violet, pansy, borage

Preheat the oven to 180°C. Butter three 18 cm diameter cake tins, line bases with baking paper and dust with flour. Whisk the caster sugar, eggs, lemon rind and a pinch of salt in an electric mixer until pale and tripled in volume (5 - 6 minutes). Sieve in the flour, cornflour and baking powder in 2 batches, fold to combine, then fold in the melted butter. Divide the batter evenly between the prepared tins and the smooth tops. Bake the cakes until golden brown and the centers spring back when lightly pressed (8 - 10 minutes). Cool in the cake tins for 10 minutes, then remove from tins and cool completely on a wire rack. Whisk the crème fraiche, cream, icing sugar and vanilla paste in a bowl until soft peaks form. Refrigerate until required. Place the first cake on a serving plate and spread one third of the crème fraiche mixture over the cake, followed by a generous drizzle of lemon curd. Place the second cake gently on top of the first and repeat the process. Place the remaining cake gently on top and repeat the process again. Decorate with edible flowers and serve with extra lemon curd.

Limoncello 2 1/2 cups vodka peel of 8 ripe unblemished lemons 3 /4 cup sugar 3 lemons, juiced and strained 3 whole cloves 1 cup water Combine the vodka and lemon peel in a non metal container, and cover and steep 48 hours in a cool, dark place. Boil the sugar, lemon juice and cloves with the water until syrupy. Cool the syrup. Strain the peel from the vodka, and remove the cloves from the syrup. Mix the syrup and lemon vodka together and store in a sterilized bottle. Serve the limoncello chilled in glasses straight or with ice and soda. ■
