year Greenery is too adventurous for your kitchen, there is nothing wrong with a classic black and white palette. Two-toned kitchens are very ‘in’ right now, and the trend is growing in 2017. Having lighter, neutral upper cabinets and contrasting darker cabinets below, create an interesting aesthetic while keeping a timeless feel.

MIXED-MATERIAL COUNTERTOPS While
a kitchen island with a slab of stone is elegant, countertops that combine more than one material are on the cutting edge of kitchen design. Granite, quartz, and laminate remain staples, but wood is making a strong entrance into the countertop design world. A granite or quartz countertop will give you a luxurious feel, but a wood breakfast bar offers a modern flair while still feeling natural. With a mixed-material countertop, you can still have an upscale look while maintaining an organic island feel.

Iguana’s Chief Engineer Florent De Labarre explained the execution of this new technology. “Costs, performance and charging times are improving so rapidly that now the time is ripe for the electric drive,” he said. “Our E-Iguana 29 has already been undergoing intensive internal and customer trials since 2015, we now have an extremely reliable solution.” Many boating accidents occur during the boarding or disembarking of guests; the Iguana’s stability on land permits safe transition for passengers, cargo, and is especially helpful for children and individuals with limited mobility. “With a ground pressure per square centimetre equivalent to an 80-kg human, the environmental impact is the lowest in the boat industry,” said Steve Huppert at Iguana Yachts. “Most amphibious vehicles have been developed to operate on land and cross water sections; the Iguana goes further than this, capable of cruising 100 miles with the ability to securely transfer guests even in five feet beach break.” The uniqueness in Iguana’s electric drive systems is discovered in its range, environment of use, and service life. Captain Kenneth Faulkner

IT HAS BEEN THREE YEARS since the passing of Anegada boat captain, shipwright, and entrepreneur Kenneth Faulkner and I still think of him often. He had a profound influence on my work at the HLSCC over the past 14 years. I first met Captain Faulkner in 2003 when he donated the remains of the sloop Joyce L to the College. After that, I travelled back and forth from Anegada to Tortola on his barge Isabel while I was helping Watson White construct the sloop Sea Moon. In those days, there was no ferry service to Anegada and aside from a small plane operated by Neville Braithwaite, Isabel was the only

means of regular transport. She carried people, fuel, and provisions twice a week between Tortola, Virgin Gorda, and Anegada. It was during these voyages that I got to know Kenneth, enjoying his recollection over the old days and the boats he had built. I had just started working at the College and was putting together what would become our Maritime Museum. The stories that he and others told me in those days gave me an education I could never have gotten from books. The more I learned about the sloops, and the men who built them and captained them, the more I came to appreciate what a unique culture this was.
As a young boy, Kenneth dreamed of building a boat and by careful observation of the local shipwrights on Anegada—especially renowned builder James Smith—he built his first boat, a row boat, in 1948 when he was just 16. It sold quickly and with the proceeds—along with financial assistance from his older brother Wilford—he built the much larger North Queen. She was a sloop of 18 feet (keel). He went on to build over 30 boats in his lifetime including the Andrea, the Norajel, the Blazer, the North Queen II (28 feet), the Ileta, the Four Sisters, the Carrier and many small dinghies. In fact, during the whole time I knew him, there was

always a vessel under construction in his yard. Kenneth first sailed to St. Thomas with Captain Carleton De Castro bringing local Anegada produce, eggs, conch, and fish to market in Charlotte Amalie. He soon learned to navigate the treacherous waters between Anegada and St. Thomas using the moon, stars, and tides without chart or compass. This local knowledge enabled him to fulfil his dream of one day captaining his own vessel, which led him to spend the rest of his life working at sea, fishing, diving, and transporting cargo between the islands. Kenneth was also a visionary and above all else, a provider. In the 1960s, recognising that his community needed services in order to grow and develop, he began work on a gas station and dock at what is today called Setting Point where the Government later added a larger dock and ferry landing. Captain Faulkner soon began operating a barge service between Anegada, Virgin Gorda, and Tortola carrying fuel, construction supplies, provisions, and people. This lifeline that his service provided went on for the next 40 years and is kept going today by his son and daughter. Captain Kenneth Faulkner epitomised the resilience and hard work ethic that characterised a Virgin Islander and certainly an ‘Anegadian.’ He was both a visionary and an entrepreneur who took immense pride in his role of provider for his community. I count myself blessed to have had an opportunity to get to know and learn from him, and take great satisfaction seeing that his legacy lives on in his community and his nation. â–

TO START YOUR DAY OFF RIGHT, try this lovely Clean Green Juice, filled with vitamins and antioxidants, and tasty too. As much as I would love to say that you can make this the day before, it really only lasts a couple of hours in the fridge before the colour starts to turn. The good thing is, it’s quick and easy. If you’re making this to take to work in the morning and you’re pressed for time (no pun intended), set up the juicer and prepare the produce the night before; that way, the morning will allow you to have fresh juice in minutes. Mix it up with other fruits and veggies, and see what you like. Make it into popsicles – kids will love this.
ANYONE THAT KNOWS ME, knows I love avocadoes. This Guacamole & Tortilla Chips recipe is one of my favourites to make when the local avocadoes are in season; they’re so creamy and delicious. Another favourite is cilantro; there’s something unique in it, that you can’t get from other herbs. The two together are heaven. The chips are so easy to make, and they stay crunchy for ages. You can season them however you like, and keep them in a zip top bag or air tight container for days.
Clean Green Juice Homemade Guacamole MAKES 5 CUPS L E V E L E A SY Y O U W I L L N E E D A J U I C E R

INGREDIENTS 1 bunch celery (approx. 11 stalks) 2 large Granny Smith apples 2 large cucumbers 1 large bunch of kale *If you want to add some sweetness, add a couple of carrots.
INGREDIENTS 2 ripe avocadoes 1 /4 cup chopped cilantro and more for garnish 1 /4 cup fine diced red onion Juice of 1 lime Salt Pepper Fine diced jalapeno (optional)
METHOD This is one of my favourite juice combinations. I love the tart flavour of it. Wash all produce thoroughly. We suggest mixing 4 caps of white vinegar per gallon of water to wash produce in. Chop produce to fit in your juicer, and juice away.
METHOD In a bowl, mash the avocadoes with the rest of the ingredients until desired texture. Transfer to serving bowl and garnish with remaining cilantro, serve with oven tortilla chips. *To prevent from browning, make sure there is enough lime juice.
Additionally, before transferring to serving dish, place cling film directly onto the guacamole to prevent air from getting to it.

INGREDIENTS 6” flour tortillas Olive oil Salt Pepper Seasoning of your choice METHOD Preheat oven to 375 F. Cut tortilla chips into eighths and toss with olive oil and seasonings. Spread out evenly on to baking tray and bake for approximately 10 minutes. Keep an eye on them, they turn brown quickly.

RACK OF LAMB WITH CHIMICHURRI MINT SAUCE is my take on the Argentinian style that is traditionally served with beef. In Argentina, they predominantly use parsley, oregano, garlic, olive oil, and red or white vinegar in their chimichurri; however, I’ve incorporated some additional herbs including cilantro and mint. Mint and lamb go so well together. This is a fresh, healthy, and versatile sauce, that really can be used with any protein you fancy, just adjust the mint level to your liking or perhaps replace with basil. It makes a nice dressing for quinoa or couscous, and it freezes well too.
Rack of Lamb with Chimichurri Mint Sauce S E RV E S 4 L E V E L E A SY INGREDIENTS Olive oil 2 lamb racks 2 tbsp, room temperature butter plus extra for searing 2 tsp minced garlic 2 tsp finely chopped rosemary Salt Pepper ETHOD M Preheat oven to 375F. Rub each rack with butter and season with the remaining ingredients. Heat up pan, add olive oil and remaining butter. Carefully place the rack, skin side down in the pan, away from you so hot oil doesn’t splash you.
Sear rack for 2 minutes on first side and 2 minutes on the other side and transfer to baking tray, skin side up. Roast in the oven for approximately 25-30 minutes to get a perfect medium. * When lamb is removed, wrap in tin foil and allow to rest for at least 15 minutes before slicing. This keeps the meat moist and prevents it from losing all of those yummy juices.
FOR THE CHIMICHURRI MINT SAUCE

Adjust seasonings to taste. Consistency should be thick. Drizzle chilli oil over the top, if spice is desired.

PETER ADAM CROOK WASN’T ALWAYS the skilled freelance photographer, whose striking work is exhibited here. Inspired by the aesthetically-pleasing symmetry within nature, his passion for the art sparked out of unusual circumstances. Born in Tortola, he spent the first nine years of his life living on our islands until his family relocated to Wisconsin, US where he fell in love with snow. Prior to this, he’d only ever seen the cold weather condition that’s so alien to the Caribbean once. “I picked up skiing after my family and I went for a lesson and following the first time, I was hooked,” said Adam in reference to the sport he’s renowned for in the BVI. Moving to Colorado, US to pursue free skiing when he began high school, he met people that shaped his path toward a seven-year career in professional, international Halfpipe Skiing events. In 2011, Halfpipe Skiing became an official sport for the 2014 Winter Olympics; debuting in Sochi, Russia, Adam represented the BVI, but before this exciting feat, his enjoyment of photography was planted during a time of injury in 2010. “It was at this time that my interest in videography sparked,” said Adam. “Years later, I began to focus more on photography. It’s the simplicity of seeing something interesting, freezing that moment in time, and being able to share it with others that’s captured my passion for it. I hardly ever leave home without my camera.” Adam is hopeful that his photography will inspire people to appreciate the simple things in life, and enjoy the natural beauty of the world. ■
