Molten Drambuie Brownies!

As can be expected, having hosted hundreds of families on board Lolalita in the beautiful British Virgin Islands, many requests have been presented to us as crew. These can be divided into two categories: places to visit—for example The Baths, Willy T’s, The Caves, Foxy’s, North Sound—and food desires. One of my favourite requests was to make absolutely nothing but chocolate desserts for the entire week. I went through my usual repertoire of recipes and then picked the brain of my husband/business partner/fellow food lover, Captain Ernie. He suggested toying with a brownie that incorporated some delicious liqueur – and so Molten Drambuie Brownies were born...

Ingredients

3 heaping tablespoons dark cocoa powder 1.25 cups all-purpose flour 1/4 teaspoon salt 1/4 teaspoon Ceylon cinnamon 10 tablespoons butter 3 tablespoons canola oil 5 ounces 80% dark chocolate 2 cups brown sugar 4 eggs, lightly beaten 6 tablespoons Drambuie liqueur • Heat oven to 350º F. Grease a 13x9-inch pan with non-stick spray • Sift together cocoa, flour, salt, and cinnamon • Using a double-boiler method, melt butter, oil, and chocolate. Add brown sugar and mix well. Add eggs, slowly, mixing until smooth. Add liqueur. Slowly add flour mixture, beating until incorporated. Pour into prepared pan, and bake for 20 to 30 minutes. Brownies should be just barely done, in a ‘molten’ state Serve brownies warm with a dusting of powdered sugar, cocoa powder, and chopped pistachios. This recipe is more than enough for 8 to enjoy

Escape for a Day on Your Own Private Yacht

Since moving to the BVI, I’ve ventured on numerous excursions which often include a stop at

this tourist hotspot on Jost Van Dyke (JVD). What I hadn’t experienced, however, was what happens on this charming island once the sun goes down. I again became a tourist in my own town when I spent a weekend over on JVD. My friend Mickey and I arrived by ferry on Saturday morning and were accommodated in a beautiful 2-bedroom villa at White Bay Villas and Seaside Cottages, which delivered panoramic vistas of the ocean and an unrivalled view of the bay. After settling in, we immediately headed down a short trail to White Bay and its familiar setting of quirky beach-bars, hammocks between palm trees, and of course, the turquoise sea. Boats of all sizes were moored in the bay where visitors danced on their vessels and one by one jumped into the water to swim ashore. Our favourite bar—Soggy Dollar—is renowned for their entertaining bartenders, who interact with the patrons as they await a drink from the legendary ‘home of the painkiller.’ The majority of the establishments are decorated with an eclectic blend of Caribbean knick-knacks and serve beach-bar cuisine with an island twist.

We were greeted by two friends, who arrived on their boat from Tortola and wound up joining a group of tourists in a game of ‘Let’s Get Ready to Toss the Lime.’ Frequently played at WB, participants form a circle and toss a lime in the air, trying to keep it up with one hand – no, it’s not easy…especially with a margarita in the other hand. Another day was spent working on our tans at White Bay before catching the last ferry home. Mickey and I were surprised to learn all of the activities offered over on JVD. Our hosts informed us of the numerous attractions available including natural gems such as the Bubbly Pool, and an array of water-sports and unique excursions – next time we visit, we plan to go on a glass bottom boat which at night uses LED lights to attract the fascinating marine life. We both agreed that when we need to ‘get off the rock’ for a weekend, White Bay is first choice.

Governor’s Gourmet Gathering VISAR holds its largest annual fundraiser On November 27, 2015, Virgin Islands Search and Rescue (VISAR) held its largest annual fundraising event at His Excellency the Governor, John C. Duncan’s residence. Every year, the BVI community gets dressed up for this elegant evening affair where guests are invited to sample gourmet canapés from 15 of the BVI’s best restaurants, sip cocktails, socialise, enjoy music, and be entertained by a live auction. The event raised just over $31,000 from ticket sales, auction items, and personal donations in support of VISAR’s mission to save lives at sea.
