When I was a mom with young kids at home, I used to dream of a time when I wasn’t meeting myself coming and going. Somehow though, even after my kids were grown, it still felt like there weren’t enough hours in the day. Then, God decided He’d slow me down Himself. It came in the form of major spine surgery. (Thank you to all who sent their prayers and well wishes. My recovery is going great!)
Being forced to slow down made me realize something. All that rushing from sunup to sundown made it hard to find time for the things I really wanted: a deeper relationship with God and others. Being forced to “shut ‘er down” for a while has given me time to embrace a slower pace, to ponder, to process thoughts one at a time, and to really focus on the person in front of me at each moment.
Don’t get me wrong. I adore my career. I am the most blessed person I know. But I want to return to my work-a-day life remembering to stop and truly see the beauty God has placed in front of me and the needs of the people He’s placed in my path. 1 Thessalonians tells us to give thanks in all things. So, thank You, Father, for all the pain and uncertainty You used to help me slow down and focus on what’s most important—You, Your work, and the people You bring into my life.

Here’s something to be proud of. The City of Arlington is celebrating its 25th year as a Tree City USA community. The Tree City USA program, sponsored by the Arbor Day Foundation, the USDA Forest Service, and the National Association of State Foresters, gives this national recognition to urban and community forestry programs each year in thousands of towns and cities that are home to millions of Americans.
Arlington is one of more than 3,500 communities nationwide that participate in the Tree City USA program. We first achieved our Tree City USA designation in 1999 in recognition of our efforts to protect and strengthen our urban tree canopy through strategic initiatives and annual community outreach events. A 2020 study determined there are an
average of 70.4 trees per acre across sampled Arlington parks and natural areas, with 48 “unique tree species” identified in the survey.
More than just offering beauty to us and a home to wildlife, these trees absorb the sounds of traffic in urban areas and drop the temperature in neighborhoods seven to nine degrees. The shade from trees can reduce energy costs up to 25%. Trees can add to the resale value of a home and trees in our green spaces contribute to the mental and physical wellbeing of Arlington residents. As the old proverb goes, “The best time to plant a tree is 20 years ago. The second best time is now.”

A SERIOUS trial
WHAT WILL THE VERDICT BE?

There is a very frustrating — and disturbing — type of question I’ve been asked more and more frequently over these past several years, as I have devoted more time to the word of God.
“Mike, why do you have to be so serious all the time?” or “Mike, why do you have to be so intense all the time?” or “Mike, if you have grown so much closer to the LORD, where is your Joy? Something must be wrong.”
Why do I find myself so disturbed by questions like these? Well, I guess I will give the answer you might expect because I view these as very serious questions!
Why are they so serious to me? First, because they are more than just questions; they are accusations. The accusation is that I have responded improperly or with imbalance to the message I am reading. Secondly, these “questions” often link the serious and intense response of my life with the joy in my heart. They are an evaluation of the fruit on my tree, and that is a very serious matter. A tree is known by its fruit. The condition of a tree is revealed by the quality and quantity of its fruit.
Furthermore, a tree that does not bear fruit is cut down and thrown into the fi re (Matthew 7:19). The fruit on my tree is the evidence of my salvation. A man who does not bear fruit may have deceived himself, and his eternity could be at stake. There could not be a more serious type of question. It is a charge — an accusation — of the highest nature.
I respond to my accusers and tell them they are wrong. I explain that I have more joy than ever, that my intensity and seriousness are justifi ed, and that they are the ones taking matters too lightly. But sometimes I wonder: what if they are right?
And therefore, considering the gravity of the charges at hand, I see no other option available. My joy, intensity, and seriousness — the demeanor of my life and the response of my heart — must be examined. They must be put on trial!
And so, I open the doors to the courtroom of my heart and let the trial begin: Court is now in session.
I fi rst ask myself: what if the very basis of the accusation is wrong? Could my accusers be misinformed? What if I am not a serious person at all? What if those who accuse me just don’t really know me and have evaluated my life incorrectly?
My accusers call those who know me best to the stand. My family!
One by one, my wife and children give their testimony. Their reports are consistent with one another. Each begins by saying he is one of the goofi est people they have ever known — rivaled only by his daughter Madeline. They assure the courtroom that if there were a “dad-joke” competition nearby, he’d have a pretty good shot at winning it. However, the countenance on their faces changes as they give their fi nal assessment. One by one, they reluctantly agree with my accusers: goofi ness and jokes — smiles, lightheartedness, and laughter — do not characterize his life. They may be the tone of his day, but not the essence of his life. They agree with the charges against me: he would be defi ned as an extremely serious and intense man.
My own heart agrees with them. The more I have read the Bible: the more intense — and serious — and solemn I have become. But that doesn’t mean I am right. I could be misinterpreting these words I am reading. What if the enemy has played a great trick on me? Now that I have established that the charges against me are valid, the questions to be answered must be defi ned.
How do I know if I have real Christian Joy? What does joy look like in the life of a Christian — on this side of heaven? Is it a feeling inside of me? That seems a bit subjective, as my feelings change like the wind. Does joy always show on a person’s face? Is the expression on one’s face, on any given day, an accurate indicator of the joy in their heart, on that day?
But I’m also examining much more than just one single Fruit of the Spirit on any given day. This isn’t about the demeanor of my face; it’s about the demeanor of my entire life. I am examining the entire response of a Christian’s life to the message of the Gospel. What is the proper response? Should it be intense and serious, or lighthearted and jovial?
Now that the questions to be answered have been established, I must call the First Witness to the stand!
Lord, although I tremble at the thought, may I humbly ask You — the only true Judge — to step into the imperfect courtroom of my heart, and allow me to interrogate You?
With perfect gentleness and kindness, as if reversing roles were His greatest delight and specialty, He politely obliges my request and takes a seat at the witness stand.
My Lord, You are the Great Example to be followed — The Origin and Source of all Joy — the Eternal Tree — What did Your fruit look like? What was the tone and demeanor of Your life? What was the response of your life to the situation at hand? What is Your Word on these matters?
As I listen to the testimony of His Word about Himself, I am shocked by what I hear — and perhaps even more shocked by what I do not hear. There is not a single mention of smiles and laughter in all of His testimony to the courtroom.
That’s right: there is no record of Jesus laughing in any of the four Gospel accounts, nor is there any clear or direct reference to even a smile on His face. Doesn’t that seem a bit odd?
I quietly think to myself, I have watched a few episodes of The Chosen and saw Him laughing, joking, and smiling all the time. But the actual Word of God records none of those things. That often overlooked second commandment — the one about making no “graven images” of God – comes racing to my mind. Hmmm, could this be one of the reasons why He said it? Could a false image in the mind of a Christian throw off the entire trajectory and response of their life?
I then realize, I’ve gotten distracted in the courtroom; The Chosen is not on trial today — The Witness is on the stand. I dare not waste any of His time. I immediately get back to those words: the ones said, and the ones not said…

Did you know you have 206 bones in your body?
In fact, there are 26 in one of your feet alone, 54 in one of your hands (if you include the wrist). The longest and strongest of your bones is your femur or thigh bone. The smallest and lightest is in your inner ear. Then, there are your indispensable joints, the places where your bones meet and connect. Some joints, like those in your limbs, move freely. Others, like those in your skull don’t move at all. Ball and socket joints, like in your hip and shoulder, move quite a bit. Gliding joints, like in your ankle and wrist, do this by gliding against each other. While others, like in your knee and elbow, operate similar to the hinge on a door.
It can be easy not to think about these fascinating bones and joints while they’re doing just what they were created to do. But when suddenly they don’t, you need experts to evaluate and address the problem, experts like Drs. Harris and Mairura at Methodist Orthopaedic Surgical Associates. Drs. Foot surgery encompasses a variety of procedures aimed at alleviating pain, correcting deformities, and restoring function. These surgeries address issues ranging from chronic conditions like arthritis to acute injuries. Here, we explore some of the most common types of foot surgeries.
BUNION SURGERY
(HALLUX VALGUS CORRECTION)
Bunions are bony bumps that form on the joint at the base of the big toe. They can cause significant pain and discomfort, often necessitating surgical intervention. Bunion surgery involves realigning the bones, tendons, and ligaments to restore the toe to its correct position. Various techniques exist, such as osteotomy, where the bone is cut and repositioned, or arthrodesis, which involves fusing the bones together.
HAMMERTOE SURGERY
A hammertoe is a deformation where a toe bends downward at the middle joint, resembling a hammer. This condition can cause pain and difficulty walking. Hammertoe surgery typically involves removing part of the bone and realigning the joint, or in severe cases, fusing the joint. Tendon transfer or tendon lengthening might also be performed to correct muscle imbalance.
PLANTAR FASCIITIS SURGERY
Plantar fasciitis is a common cause of heel pain, resulting from infl ammation of the plantar fascia, the ligament connecting the heel bone to the toes. When conservative treatments fail, surgery might be necessary. Surgical options include plantar fascia release, where part of the ligament is cut to relieve tension, or removal of heel spurs if present.
ANKLE ARTHROSCOPY
Ankle arthroscopy is a minimally invasive surgery used to diagnose and treat various ankle conditions. Small incisions are made to insert a camera and instruments, allowing the surgeon to address issues like cartilage damage, loose fragments, or infl ammation. This procedure is often used for conditions such as ankle arthritis, chronic instability, or impingement.
ACHILLES TENDON REPAIR
The Achilles tendon connects the calf muscles to the heel bone and is crucial for walking and running. Injuries to this tendon, such as tears or ruptures, may require surgical intervention. Achilles tendon repair involves stitching the torn tendon back together. In chronic cases, the surgeon might use tendon grafts to strengthen the repair.
METATARSAL SURGERY
The metatarsal bones are located in the middle of the foot, and surgery might be needed to address fractures, deformities, or conditions like metatarsalgia (pain in the ball of the foot). Procedures can include realigning the bones, removing damaged tissue, or shortening or lengthening the metatarsal bones to relieve pressure and pain.
NEUROMA SURGERY
A neuroma, such as Morton’s neuroma, is a painful condition involving nerve tissue growth, usually between the third and fourth toes. Surgery to remove the affected nerve can provide relief when other treatments fail. The procedure involves excising the nerve or releasing the surrounding tissue to reduce pressure on the nerve.
FLATFOOT RECONSTRUCTION

Autumn allergy triggers include ragweed pollen, mold spores, and dust mites. Ragweed, a prolific pollen producer, can travel hundreds of miles, affecting people far from its source. Mold spores thrive in damp, fallen leaves and can be airborne, especially on windy days. Although present
year-round, dust mites can become more problematic when homes are closed up during cooler weather.
SYMPTOMS TO WATCH FOR

Create a Pollen-Free Zone: Designate your bedroom as an allergen-free zone. Keep windows closed and use air conditioning if necessary. Consider using allergen-proof covers on pillows and mattresses to minimize exposure to dust mites.

The humble chicken fried steak, with its crispy breading and savory gravy, holds a special place in the hearts (and stomachs) of Texans. It was developed by German and Austrian immigrants who brought their tradition of Wiener schnitzel — breaded and fried veal cutlets — with them when they settled in the Lone Star State. Faced with a scarcity of veal and a need to prepare tougher cuts of beef, they adapted the recipe, tenderizing the meat, coating it in seasoned flour, and frying it to golden perfection.

The three-day Lamesa Original Chicken Fried Steak Festival draws visitors from all over, eager to indulge in the town’s signature dish and experience its warm, welcoming atmosphere.
The aroma of sizzling steak wafts through the air, along with the sounds of laughter and music, set against the backdrop of this vibrant community with a proud culinary tradition. In many ways, Lamesa’s chicken fried steak is a metaphor for the town itself — unpretentious, hearty, and full of character. It’s a reminder that the most extraordinary things sometimes come from the most unexpected places.
The family-friendly festival features live music, a parade, sports tournaments (e.g., coed volleyball and kickball), a pageant, a 5K run/walk, and a chicken-fried steak cook-off with cash prizes. Featured on menus throughout the United States, the influence of chicken fried steak extends beyond Lamesa. The name, however, is a different story. Sometimes, you’ll find chickenfried steak on the menu. Other times, it’s called country-fried steak. So, what’s the difference?
The meat and preparation itself are essentially the same. The dish involves using an inexpensive cut of beef that is usually tenderized, then coated in a batter or dredged in flour and fried. Some say the difference is in the coating, claiming the Texas settlers used flour when making chicken fried steak. Others claim the difference depends on whether you serve it with brown or white gravy. Most agree, however, that the name chickenfried steak is more popular than country-fried steak in Texas, Oklahoma, and Arkansas. In contrast, country-fried steak is generally used throughout the rest of the South.
Whatever you prefer to call it, the next time you savor a plate of chicken fried steak, take a moment to appreciate the small West Texas town of Lamesa that is said to have turned a simple dish into an enduring legacy.
Fried food reigns supreme at the State Fair of Texas in Dallas. In addition to time-tested favorites like Fletcher’s Original Corny Dogs, funnel cakes, fruit pies, fried pickles, Oreos, Twinkies, and ice cream, you may find innovations such as:
Chicken-Fried Bacon: Do you like bacon and chicken-fried steak? You’re sure to love bacon strips battered and cooked like chicken fried steak. Or should we say country-fried bacon?
Fried Butter: Yes, butter. It’s believed that Abel Gonzales Jr. invented deep-fried butter, serving it at the 2009 State Fair of Texas in Dallas. The simple recipe involves coating a ball of butter coated in dough and deepfrying it to golden perfection.
Fried Cajun Lobster Bisque Croquettes: Fancy a little lobster at the fair? New foods introduced in 2022 included these lightly seasoned potato balls filled with a mixture of rich lobster meat and creamy brie cheese, fried golden brown.
Fried Beer: Created for the fried food competition at the Texas State Fair, beer is encased in pretzel-like dough pockets that hold the liquid as it is fried in oil for about 20 seconds.
Fried Pho: A 2023 Big TexChoice Award winner, this dish blends southern flare with Vietnamese comfort food. Pho is rolled up and deep-fried Texas style, then served with a side of pho dipping broth, lime, jalapeños, cilantro, hoisin sauce, and sriracha.
Crispy Dilly Dog: These newfangled corndogs start with a dill pickle cored and stuffed with a hot dog. They are dipped in corndog batter, rolled in seasoned breadcrumbs, and fried to perfection.

A BRIEF LONE STAR HISTORY LESSON

Once upon a time, a tale of grit, glory, and a state with a larger-than-life personality was born. Welcome to Texas, a land where the hats rival the size of the cattle, and the history is as rich as its legacy oil fields and growing high-tech industries. So, saddle up, pardner, and let’s take a quick ride through the annals of Texas history. It’s a tapestry woven with threads of independence, resilience, and a pioneering spirit where the people are as diverse as the landscape, all coming together to create a unique identity and culture.
SPANISH EXPLORATION AND SETTLEMENT
The year 1519 marked the beginning of Spanish exploration and a search in Texas for El Dorado, a mythical city filled with gold. According to TexasPBS.org, the Spanish Colonial era began with Spanish missions established in the 1680s near where San Angelo, El Paso, and Presidio, Texas are located today. The missions spread, and settlers followed. At first, the indigenous people were friendly with the settlers. In East Texas, the Caddo native Americans initially called them “Tay-yas,” their word for friend or ally. The word went on to be spelled Tejas by the Spanish, and over time, the letter “j” was changed to “x,” and the area became known as Texas.
THE REPUBLIC OF TEXAS, STATEHOOD, SECESSION AND RECONSTRUCTION
Fast forward a couple of centuries, and the region’s population became more diverse, with settlers pouring in from the newly formed United States. In 1821, the area won independence from Spain and fell under Mexican control. The Mexican government allowed settlers from the United States to immigrate into the area, but tensions and boundary disputes rose, leading to the Texas Revolution in 1835. According to TheAlamo.org, the famous rallying cry — “Remember the Alamo!”— occurred when the Texan Army, under Sam Houston, attacked and defeated Santa Ana’s army on the banks of the San Jacinto River.
This triumph secured Texas’s independence and cemented its place in the annals of history. Declaring its independence from Mexico, Texas became the Republic of Texas. It existed as a sovereign state for almost 10 years, until becoming our nation’s 28th state in December 1845. But war wasn’t over yet in the area. Mexico continued to consider Texas a rebel province, which led to the Mexican-American war from 1846 to 1848.
Just 15 years after Texas became a state, with a new Governor, it seceded (something Gov. Sam Houston was against) in 1861, becoming the 7th state in the new Confederacy. After the Civil War, Texas experienced a period of reconstruction and growth, with the discovery of oil in the early 20th century transforming the state’s economy.

As we look to the future, it’s clear that Texas will continue to play a significant role in the United States and the world. With its booming economy, rich history, and proud people, the Lone Star State remains a beacon of hope and opportunity for many. Whole Foods Market
1980, a small vegetarian food store called SaferWay was renamed Whole Foods and eventually grew to hundreds of locations. In 2017, Amazon acquired Whole Foods for $13.7 billion.
Fritos – San Antonio resident
C.E. Doolin improved and popularized the corn chip and began selling Fritos in 1932 during the Great Depression.
In 1961, The Frito Company merged with H.W. Lay & Company, forming Frito-Lay, Inc. In 1965, the company merged with Pepsi-Cola to form PepsiCo.
Dr Pepper – According to DrPepper. com, the soft drink was originally made in Morrison’s Old Corner Drug Store in Waco, Texas, in 1885. In 1904, it was introduced to millions of visitors at the St. Louis World’s Fair and became one of our country’s biggest refreshment treats.
The Integrated Circuit –You might think the microchip was invented in California, but Jack Kilby of Texas Instruments demonstrated the first working integrated circuit in 1958.
Frozen Margarita – The Big D (Dallas) is known for many things, including this wondrous frozen drink invention. In 1971, Mario Martinez adapted a Slurpee machine to make frozen margaritas, and the rest is history.

Most of us have a favorite, including Lammes Candies, which have been made in Austin since 1885. Nutty for Peanut Rounders
Tucked away in the small North Texas town of Blossom, Anderson Candy Company keeps the Peanut Rounder tradition alive with timehonored recipes and methods. Often imitated but never duplicated, each Peanut Rounder features a delightful blend of textures and tastes, with the rich, nutty flavor of the roasted peanuts perfectly balanced by a crisp, sugary coating.
It all began in 1940 when Dan Hearn perfected his hand-made candy and called it Peanut Rounder. In 1980, Leon Anderson started the Anderson Candy Company to maintain Blossom’s Peanut Rounder legacy. He continued to use the original recipe, which is said to include a secret ingredient, as well as Hearn’s cooking pot and metal shaping rings. Today, the company is owned by Donny Gentry, who’s keeping the tradition alive for another generation of Texans and candy-lovers throughout the country. cornerstone of the community. Expanding Flavors in the Heart of East Texas
There’s more to present-day Lufkin, Texas, than being the largest city in Angelina County and the county seat. It’s the home of Atkinson Candy, founded in 1932 by B.E. Atkinson, Sr., and his wife, Mabel C. Atkinson. Grandson Eric Atkinson presently serves as president of the company.
Known for its classic retro candies, such as Chick-OStick, Peanut Butter Bars, and Long Boys — to name a few — Atkinson Candy has grown and acquired private candy companies, adding a variety of different brands under its umbrella, such as Black Cow and Slo Poke. Most recently, the company upgraded its ingredients, making them “simple and clean and nothing artificial.”

INGREDIENTS: 4 cube steaks | 2 cups buttermilk | 1 Tbsp. Tabasco | 1 cup flour | 1 Tbsp. kosher salt | 1 tsp. black pepper | 1 tsp. smoked paprika | 1 tsp. garlic powder | 3 eggs | Oil for frying, ¼ in deep in pan | 12 tortilla shells White Gravy: 2 Tbsp. butter | 2 Tbsp. flour | 1 ½ cups milk | ½ cup heavy cream | 1 Tbsp. fresh ground black pepper Corn Salsa: 1 package frozen corn | ½ red onion, diced | 1 jalapeno, diced | 2 Roma tomato, diced | 1 lime, juiced | ¼ cup cilantro, chopped
DIRECTIONS: WHISK buttermilk and hot sauce together. PLACE steaks in the buttermilk mixture and let sit for 2 hrs. COMBINE flour, salt, pepper, paprika, and garlic powder in a separate bowl. PLACE the flour mixture on a baking sheet. WHISK eggs with a tablespoon of water and place on a separate plate or baking sheet. HEAT oil in a heavy skillet over medium-high heat. REMOVE steak from buttermilk and dredge in flour, then in egg, then back in flour. REPEAT for all 4 pieces. PLACE steaks in hot oil and fry on each side for 3-4 minutes until golden brown. WORK in batches to avoid overcrowding in the pan. PLACE chicken fried steak on a wire rack to drain excess grease. POUR the remaining grease from the skillet into a heat-safe bowl. MELT butter using the same skillet. ADD flour and whisk. ADD in milk and cream and stir. HEAT until gravy thickens, continually stirring. SEASON with fresh ground pepper and salt to taste. COOK corn according to package. Dice red onion, jalapeno, and tomato (removing seeds). COMBINE corn and diced vegetables. ADD juice from 1 lime. CHOP cilantro and mix in. SEASON with salt & pepper to taste. BUILD tacos with lettuce (optional), chicken fried steak, white gravy, and top with corn salsa.
TIPS & TRICKS: Add vegan chorizo to charro beans for more flavor and texture.

DIRECTIONS: DICE onion, garlic, jalapeno, and tomato. HEAT 1 Tbsp. of oil in a sauce pot over medium-low heat. ADD diced vegetables and sweat until softened. Rinse beans and add to pot. ADD stock and seasonings. JUICE 1 lime and add juice to the beans. LET simmer for 45 minutes. ADD cilantro and check seasoning. SLICE bell peppers and onion. HEAT the remaining 1 Tbsp. of oil in a saute pan on medium heat. COOK peppers and onions until soft and slightly charred. HEAT each tortilla in a dry pan (I prefer cast iron) for about 30 seconds on each side. BUILD the tacos layering, refried beans, charro beans, peppers, and onion. GARNISH with avocado.

If you don’t have a pizzelle maker, you can use stroopwafels instead of pizzelle cookies, or you can use a waffle iron with the pizzelle recipe.
MEXICAN CHOCO CHERRY TACOS
SERVINGS: 8 | PREP: 1 HR. 15 MIN. | COOK: 30 MIN. | TOTAL: 1 HR. 45 MIN.
INGREDIENTS: ½ cup sugar | ½ cup butter, melted | 1 tsp. vanilla extract | 2 eggs | 1 cup flour | 1 tsp. baking powder | ¼ tsp. salt | 2 Tbsp. cinnamon, divided | 1 pint cherry ice cream (Ben & Jerry’s Cherry Garcia) | 1 bottle magic shell | 1 cup pistachios, chopped
DIRECTIONS: COMBINE sugar and melted butter in a mixing bowl. ADD eggs and vanilla, stirring until mixed. COMBINE flour, baking powder, salt, and cinnamon in a separate bowl. WHISK dry ingredients. ADD dry ingredients to wet ingredients and stir until dough forms. HEAT the pizzelle iron and drop about 1 large Tbsp. on each circle. BAKE until steam is no longer coming from the pizzelle iron. REMOVE , and while still warm, place each pizzella on a muffin tin that is upside down, in between cups, creating a shell. REPEAT for each cookie, and place pizzelle shells in the refrigerator to cool and harden. CAREFULLY scoop ice cream into each shell and place in the freezer for 1 hour. POUR the magic shell into a bowl and add 1 Tbsp. cinnamon. CHOP pistachios. REMOVE ice cream tacos from the freezer. DIP each taco into the magic shell and top with pistachios. KEEP in the freezer until ready to serve.

HILL COUNTRY SMASH
Milam & Greene Triple Cask Bourbon Whiskey is distilled in Blanco, Texas, on copper pot stills and in Kentucky on classic column stills, using its proprietary yeast recipe and mash bill. Aging takes place in rickhouses located across four states in casks with an assortment of char levels for a variety of fl avors, resulting in the most thorough array of casks made and collected by any craft distiller.
Ingredients
2 oz. Milam & Greene Triple Cask Bourbon Whiskey
1 juicy fresh peach
½ oz. fresh-squeezed lemon juice
½ oz. of simple syrup
1 to 2 oz. sparkling water
Directions
Peel and slice peach. Muddle the peach with simple syrup. Add whiskey and lemon juice. Shake well with ice. Strain over fresh ice and top with sparkling water. Garnish with mint and a fresh peach slice and enjoy!
