Because whether you're already happily connected with your soulmate or still searching for that special someone, a great love story is always inspirational. Amusing, even, as you're about to find out. Yes, the road to finding "The One" is different for everybody, but it eventually leads to the same destination: a partner for life (the person that's going to be by your side for years to come - through the good, the bad, and, of course, the ugly). The following area brides kindly shared the moment - or moments - when they realized that they had found "The One." A big thank you from us and may each couple enjoy many years of wedded bliss!
JENA EICHLER Prior to going out for dinner on a first date with my future husband Jason, I had gone out to lunch with a group of gals. Not much longer after the dinner date, I started to feel ill. Jason took me back to his place where I spent most of the night in the bathroom of his bachelor pad. He went to the store and got me Gatorade and saltines - even sent a text to my friends letting them know I was down with food poisoning. That was the moment when I realized that Jason was the real deal. Also, the Christmas before last, he was in a cast on his foot (after being in one on his other for six weeks) and decided to meet up with one of his friends who we only see once every couple years due to the friend being in the military. Well, they decided to start telling throwback stories and ended up getting pretty drunk. I had to drive his drunkenness home, help him up the driveway, through the kitchen and then up the flight of old barn house stairs - all while he was giggling like a five-year-old. And I still ended up marrying him this past August! #marriedlife Jena and Jason will celebrate their ďŹ rst anniversary on August 26, 2018.
CARRA MULLIS People think that our relationship may not be forever, because we do not get to spend the husband and wife time on a daily basis. It works for us and we tell people that the time we spend apart from each other just makes us miss and want each other more. Distance doesn't cause issues in our marriage, but it brings better days when we do get our moments. How can you ever get tired of loving someone who you're always missing? We have different backgrounds, but it makes our bond stronger and we balance each other out. He's country, I'm city; he was raised Catholic, I was raised Baptist; he grew up in a smaller family and mine is quite large. Having a nonverbal autistic child has its challenges. For my husband Chad to step in and be accepting and supporting has been the best. He is still learning the ways of communicating, but he treats Co like his own. Watching both of them grow closer makes our relationship grow even stronger - growing together as partners, parents and best friends. I knew Chad was the one when he continued to be determined to be my boyfriend. I became more sure he was meant to be my husband when he made promises and always kept them. He is truly my soulmate because even with our differences, we want the same from our lives - to love and to be loved. Carra and Chad will celebrate their ďŹ rst anniversary on March 25th, 2018. 6 | TRI-STATE BRIDE 2018

TIF F ANY HILLENBRAND My family probably would have voted me “least likely to get married”... that is, until I met Jason. We met almost seven years ago on a blind date. After our second date, I called and declined a job offer that would have meant moving a thousand miles away. It was the best decision I’ve ever made. On July 14, 2013, we stood outside the gates of Jackson Square in New Orleans and promised to be by each other’s side through it all, the good and the bad. It was just us, no family or friends, and it was perfect. Since then, we visit New Orleans every year and take a picture in front of the gates where we said “I do.” Jason is the balance that was missing from my life and he opened my eyes to what true, unconditional love is. It wasn’t until I became sick due to a chronic illness that I realized just how devoted he is. Without hesitation, he has pushed my wheelchair around when I was at my weakest, washed my hair, slept next to my hospital bed for two weeks, driven me thousands of miles for doctors’ appointments, hooked up countless IVs, and held my hand through it all. This illness has been difficult on him, as well, but he never lets it show. He is my rock, the one person I know who will always be by my side, through sickness and in health. I am grateful to be Jason Hillenbrand’s wife. Tiffany and Jason will celebrate their fifth anniversary on July 14, 2018
KATE MCCOLLOM My husband Brent and I are both IT Technicians and often share our interests with each other. We speak quite often to each other on the telephone and act like we're young teenagers. One day, my husband had gotten off work and was on his way home. He called me to chat and like any great wife would do, I hit the ignore button because, well, I was watching "my show." I then heard our Google Mini make a short sound. I thought how weird it was but chalked it up to technology glitches. A few minutes later, the Google Mini was at it again. Only this time it was serenading me with "So Call Me Maybe" blaring. He had turned on that song and was controlling the Spotify account that is linked to our Google Mini. He wanted to talk to me, so he spoke our language. I thought to myself, yeah, he's my soulmate. Kate and Brent celebrated their third anniversary on January 17, 2018.
CIARA ENGLERT When my husband Darrell and I had our son Dawson three years ago - just one year after our wedding day - he was born with multiple anomalies. His main diagnosis at this point is Pierre Robin Sequence, but we are awaiting more genetic testing. At just three days old he was life flighted to Riley Hospital. At 11 days old, he underwent his first of many surgeries. He has had a lower jaw distraction, cleft palate repair, feeding tube placed, and ear tubes placed. We spent a total of 35 days in the NICU and have made many trips back since, not only sitting through multiple surgeries but watching as our little baby has fought to live. Darrell has been my absolute rock through it all, always holding me tight and reassuring me. Especially in those dark NICU days. He would come home to Evansville to work and then go back to Indianapolis to be with us. He handled everything at home because he knew I couldn't leave our son. I am so thankful to have him to share this life with. I sure couldn't pick anyone better to be Dawson's daddy. He works very hard for our family. I have not been able to work since having Dawson due to all of his doctor appointments and therapies. But Darrell never complains. Everything he does is for us, his family. Ciara and Darrell celebrated their fourth anniversary on September 21, 2017.

Two Years Down, a Lifetime Together to Go A GUY’S PERSPECTIVE
Local husband reflects on making it to his second wedding anniversary

M
y wife Kristen and I are quickly coming up on our second wedding anniversary, and I’m grateful to once again be given a chance to tell what married life has been like so far. I’m happy to report that it hasn’t been the doom-and-gloom so often conveyed by many husbands and wives, and I dare say it keeps getting better. It’s amazing how after two years of marriage we’ve truly become each other’s best friends. Yes, it’s a cliché you can fi nd on any number of Pinterest boards, but it’s true. We share our daily ups and downs. We celebrate our wins and mourn our losses. We’ve developed a shared sense of humor filled with dark comedy

wins and mourn our losses.” and endless references to our favorite movies and TV shows. It seems like a foreign language to some, and no doubt we often leave friends and family members looking on in confusion as we endlessly crack ourselves up. But the laughter is usually contagious, even if the Arrested Development quotes don’t scan with the innocent bystanders, and no one can accuse us of not having a good time. Things aren’t always fun and obscure one-liners, though, and we’re not just there to be each other’s personal jesters. When life happens and problems come up, we’ve become the
10 | TRI-STATE BRIDE 2018
other’s de facto therapist as well. As things inevitably do not go according to plan, we brainstorm to come up with solutions to our problems, because that’s just it - they’re truly our problems now, affecting both of us. So we team up to fi x them, and even just being a sounding board helps more often than not. For me, this may have been the hardest part thus far. I’ve almost always been terrible at team efforts. I despised group projects in school; most of them ended with me trying to do all the work by myself. That’s something I’ve slowly begun to realize over the years, and I’m lucky to have a partner who wants to help me with my problems. “Help” is the operative word there, as we fi nd ways to positively give feedback. Rather than letting issues that arise devolve into shouting matches, we try to fi nd ways to carefully choose our words in a way that gets our point across without making the other party feel attacked. This has made all the difference, and it makes us both more likely to admit when we’re wrong. I’ve realized I didn’t always give my full effort in past relationships, and I admit this carried over into the beginning of our relationship as well. Accurate self-assessments are just as essential in our professional lives as our personal ones, and too many times we’re all guilty of donning the rose-colored glasses while looking at ourselves; I know I was, and I’ve worked hard to break myself of that habit. We both embrace fi nding our fl aws so we can figure out how to fi x them quickly and concisely. I’m constantly wanting to be a better person; if not for myself, then at least for her. I’m thankful that I’ve found someone who feels the same way. - Jonathan Gluff

NEWLYWED COOKING with Chef Amanda Hancock
Amanda Hancock is the former owner of Vecchio's Italian Market in Newburgh and a published author. Being a Newlywed is more work than you expect. It’s hard to see in the glitz and glam of the wedding bells, dresses, and all of the fun that comes with the wedding and the honeymoon. What happens when you get home and realize that you are “Happily Married, till death do you part?” I first realized that I was married about three months after the big day. Dan, the hubby, and I had a onebathroom apartment and it was time to get ready to go to work. It came to toothbrushing time and it was a battle for the sink. Realizing that we were both in our pajamas arguing over who gets to brush first struck the sign that, “Holy cow! I’m married to this man!” I looked at his yellow sleep shirt and martini boxers and realized that he was the one for me. Except neither of us could cook. Since then, I have attended culinary school and think I have it figured out. With the proper tools and ingredients, any couple can be a cooking duo!
Tools for the basic kitchen:
The food you have to have:
This will fill your fridge and pantry. Mind you, you don’t have to buy all of this at one time! ALWAYS MAKE A LIST AND KNOW YOUR BUDGET! ! I cannot stress this enough! • Milk • Eggs • Bread • Extra Virgin Olive Oil • Vegetable or Canola oil
• Pots and lids. Get at least a Stock pot,
• Flour
preferably one that has a strainer, a two quart, and a small pot for little things.
• Sugar
• Pans and lids. I like non-stick for beginners. You need a 12", 9" and a 6" skillet. Each will serve you for different applications. • Both regular and slotted spoons and a ladle and a pasta spoon are helpful. • Spatulas, both for flipping pancakes and the type for stirring things. • At least one whisk. • You need four knives: a Chef’s knife, a paring knife, a fillet knife, and a serrated knife for cutting bread. • Cutting boards, mixing bowls, measuring cups, hot pads, and towels - don’t forget cleaning towels. • A toaster is handy as is a speed cooker. A speed cooker is essentially an electric pressure cooker that you can use like a stew pot, crock pot, or a pressure cooker! Best multi-tool ever!

• Rice and several types of noodles. This is vital as you can put anything on them and make them taste great! • Canned goods • Butter • Baking soda AND powder. NO they are not the same thing! • A variety of spices: salt and pepper, garlic, chili powder, cumin, seasoned salt, parsley, basil, cinnamon, vanilla • Veggies of all types! Staples like lettuce, tomatoes, onions, carrots, celery, peppers of all different colors… I encourage you to buy as local and as fresh as you possibly can! • Fruits of all colors shapes and sizes. Each fruit contains vital nutrients that you need every single day! • Proteins: Pork, chicken, beef, bacon, turkey, lunchmeat, tofu, legumes, fish, shellfish, and even the lowly turkey!

I have included a couple of recipes for two that you can make together. Frittatas are an easy and quick meal that can be made for just two people or an army. Just make sure you adjust the cooking time accordingly. This is a dish that can be for a breakfast, brunch, or even with smoked salmon and capers to make a delicious supper. Here is a frittata that only takes 16 minutes. You start it on the stove and finish it in the oven: This will take you 10 minutes to prep on the stove and just 6 minutes in the oven.
Frittata: INGREDIENTS:
2 large eggs 1 TBS heavy cream 1 oz of green pepper, diced 3 cherry tomatoes, split in half 1 green onion, diced 1 large mushroom, diced 1 piece of bacon, diced 2 oz of Gruyere cheese (shredded)
DIRECTIONS: - Sauté diced bacon over low/medium heat. Once the bacon has started to release fat, add in the peppers, onion (reserving the green for the top), and mushrooms. - Cook until the veggies are soft. - While waiting, mix the eggs, cream and salt and pepper, if you like.
- Gradually add the egg mixture to your vegetable mixture. - Make sure you are gently stirring the eggs slowly pulling the mixture towards the center letting the egg mixture touch the bottom of the pan. Do not move it too much so you don’t scramble them. - When the top is starting to glisten, and the bottom is starting to cook, add your tomatoes, cheese, and green onions. - Bake until the top is firm and does not jiggle. - Gently move the frittata to a plate and add parsley (I like mine with hot sauce). - Frittatas are an easy and quick meal that can be made for just two people or an army. Just make sure you adjust the cooking time accordingly. This is a dish that can be for a breakfast, brunch, or even with smoked salmon and capers to make a delicious supper.
When Dan moved off to law school, his mom wisely told him, “If you can brown ground beef, you will live!” If you think about it, that is true. You can make chili, tacos, meatloaf, and pasta with a red sauce and ground meat. I say meat because you can use beef, pork, Italian sausages, turkey, chicken, or seafood. If you want to be vegetarian, but still want protein, use a firm tofu. I call this recipe beef and vegetable rigatoni. I suggest you get creative with your vegetables. I have used everything from eggplant, squash, and zucchini, to more simple peppers, onions, garlic and mushrooms. (I have to dice the mushrooms up tiny so Dan doesn’t recognize them.) That’s a great tip for kids too. Prep time is 10 minutes and cooking time is 20 minutes.
Beef & Vegetable Rigatoni:
INGREDIENTS: 1 pound lean ground chuck. I use 85/15% fat ½ of a large red pepper, diced ½ of a large green pepper, diced 1 small onion, diced 1-2 cloves of garlic, minced ½ a carton of mushrooms, cleaned and diced Salt and pepper Italian spices. I make my own blend, but you can buy them pre-mixed for you. A quality jarred or canned sauce. WHAT? Yes, if you have time, I totally say you should make your own sauce. Otherwise, doctor up your favorite brand. For this I used Hunt’s Garlic and Herb. Of course, I added my Italian seasonings and it will pick up the flavors of your veggies. Always add some sort of alcohol to tomato based dishes. The tomato flavor is alcohol soluble to your tongue. I would suggest the red wine you will be drinking with your dish.

DIRECTIONS:
-When making rigatoni, bring 2 quarts of water to 1/2 a box of rigatoni to a boil. Make sure you salt the water! Start slowly, because it will take you time to prep your sauce. -Brown the meat over medium/high heat until all of the pink is out of the meat. Strain the meat, but DO NOT rinse, reserving some of the fat for your veggies. -Sauté the veggies until soft, but still with some texture. -Get the water to a boil and watch it for 8-10 minutes while you add your meat, sauce, and wine if using) to the veggie mixture. Make sure you are tasting and seasoning your meal with each step. At this point I added some crushed red pepper to ours because we like the extra spice. -By this point, your pasta should be al-dente or “to the tooth.” Drain your pasta directly into the meat/sauce mixture. -Toss together and serve with cheese and some of your favorite Italian herbs! In my blend I usually use flat-leaf parsley, thyme, basil, oregano, and rosemary. My motto is, “Just make it taste good.”

edding planning may seem like a daunting task after the question is popped and you say, “YES.” Hiring a wedding planner certainly helps alleviate any stress when it comes to planning, however, if you choose to do it on your own, here are our TOP 10 TIPS to help you plan with ease. Enjoy and CHEERS!

Create an outline. You’ve said, “yes,” so now what? Create an outline! List the to do’s from start to finish and schedule a plan to make it happen. Don’t be afraid to delegate tasks.

Use a calendar. Use an electronic calendar or write everything down - it’s so satisfying crossing things off a list! This calendar is your guide, based on your outline, of when you need to do what.

Make sure to address the invitations by guest name, and not “and guest.” If the RSVP comes back with children’s names, make sure to give them a call and explain that the wedding is for adults only and you hope that they will still be able to make it to celebrate.
No, it is perfectly acceptable to invite friends or family members solo if they are not married or in a serious relationship. Make sure the invitation only has their name on it, and they will understand that bringing a “plus-one” is not appropriate.
It is considered impolite to put where you are registered on the actual wedding inviation. It can come across as though you are asking for gifts. Most people will put this information on a wedding website or on a separate card within their invitation.

our engagement and wedding season is such an exciting time! So many memorable moments with the one you love! During this time, it’s most important to just enjoy yourself and all of the experiences you’ll get to have together; however, there are some details you’ll need to attend to. Specifically, your hair and makeup for the big day. Here are a handful of tips to ensure you’ll look and feel your best on your special day.
TRY A FEW DIFFERENT STYLES
of both hair and makeup. It’s your day! You can never be too picky. Send your hairstylist your Pinterest board or Instagram inspiration; we love to see your ideas! The trial run for hair and makeup should be done no later than one month prior. You want to make sure you have enough time to try a few different options, if need be. One fun thing that I’ve had ladies do in the past is to plan their trial run for the same day as their engagement photos or bridal shower! That way, you’ll be all dolled up for your event and you’ll get to see your hair and makeup in photographs. That always helps to nail down your “final look” decision. Decide what color you want your hair to be for your wedding. Maybe even try a couple different options for that as well. This process can be started as soon as you’re engaged - or earlier if you’re already

planning to get married before the actual engagement! If you’re anything like me, your hair color is a revolving door. Decide which one you like best and have your final color completed no later than one week prior to your wedding day. Regarding hair color, balayage highlights (or lowlights) are always a good way to go. They always turn out looking natural and are very low maintenance as well. By far, this coloring technique is my favorite. It’s a great way to add in a little dimension without getting too “chunky." Your hairstyle should be one that complements you. Although, taking
