Can cooking be fun? Yes. Can cooking be a hobby—even an art form? Of course! Can cooking be a daily chore to survive? You better believe it! Mastering the Dirty Dinner is your best weapon in

the daily battle to get dinner on the table. Let’s take a look at scenarios you may encounter where you can apply crowdpleasing, budget-friendly and super easy recipes.

Dirty Dinner #1: The Forgotten In-Law Dinner

Your spouse sends you a text, “Looking forward to hearing about their trip, what r u making?” Oh. My. Gosh. The inlaws, back from their vacation, want to see their grandkids and catch-up. Tonight. No one needs to know this slipped your mind (especially not your mother-in-law), it will be our dirty little secret. Chicken Monterrey it is!

Dirty Dinner #2: The New Baby is Home Early Dinner

You are the good neighbor who signed up to bring the first hot meal…but in two weeks when she was due, not today! Chicken Monterrey--its’ go time! You will need:

1 whole Baked Chicken (Rotisserie-style that’s sold at nearly every supermarket deli.) 1 X.X oz package of shredded Colby/ Jack cheese 1 box of Chicken Flavor Stove-Top 1 can of Cream of Chicken Soup 1. 2. 3. 4.

Prepare the stuffing according to package directions, then set it aside. Preheat the oven to 350 degrees. Remove the skin from your already baked chicken. Tear the chicken off the bone into manageable chunks/strips and place them in a 9 X 13 glass dish. Pop open the can of cream of chicken soup and pour it in a bowl along with one full can of water. Stir it into a paste that you will then pour and spread over the chicken in the glass dish. Open up the bag of shredded cheese and place over your chicken/soup paste. Finally, cover the entire dish with the stuffing prepared in step one. Put aluminum foil over the dish and pop it in the oven at for 45 -55 minutes. This last-minute easy and classy sounding dish (“I’m preparing Chicken Monterrey,” has as certain sophistication to it…) will be our dirty little secret.

Dirty Dinner dishes are topped off quite nicely with a peanut butter pie. The following recipe yields two pies, making you an over-achiever in the eyes of those enjoying every last bite. How easy it was to assemble (“make” is a strong word for this recipe), well that’s our dirty little secret! You will need: 2 graham cracker crust pie shells 1 1.5 oz. box of fat-free, sugar free instant Vanilla Pudding (It’s the bigger box in the in instapudding aisle.) 1 ½ cups of smooth Peanut Butter 1 cup Powdered Sugar Skim Milk (Enough to follow the package directions on the pudding.) Pinch of Sugar Bakery on 579 North Green River Road specializes in creative cake designs but they also specialize in making them taste great too. “Our most popular by far, is the vanilla cake or our wedding cupcake. It is not a white cake; it is not a yellow cake. We do a French vanilla cake with vanilla butter cream frosting,” Owner Dianne Miles said. For the past two years, the tri-state has celebrated their events with original cake flavors and designs that Miles and her employees have come up with. “We use a mixture of some family recipes. Mostly thought, they are flavors I have come up with or that my employees have thought of and suggested. We like to think outside of the box,” Miles said. “Our peanut butter chocolate is our most popular. I think it is the traditional aspect of the chocolate chip cookie combined with the peanut butter is what people really enjoy. Our Chef Doug Signature also does really well. We add cinnamon and walnut to that, and people really seem to enjoy it as well,” Chef Rennie said. “I have to admit it that Marla was the one that tweaked our cookie recipe. She made it better. After it started doing well, she asked for a retail store. So, in November of 2003 we opened our shop. Now she says, ‘I want to ship all over the country.’ So we are now working on that venture. We went online in July of 2010 and our website will be set up for international business soon. People in Chicago, Alaska, Hawaii and West Virginia can now say that they too have had a Rennie cookie.” Along with her three sisters, Cate Cisco has enjoyed keeping Evansville sweet with Piece of Cake bakery for the past 15 years. Located on 210 Main Street, passerby’s can enjoy more than a piece of cake. Their decadent treats are family recipes passed on from generation to generation. They even dye their coconut icing pink, because their grandma did. “We sell a lot of the cheesecake. While the Tahitian is my favorite, the Black and White is the most popular. It is cheesecake layered between chocolate cakes, covered in chocolate frosting and topped with ganache. Another big seller is our No Bake cookies. They are classic and our grandmother’s recipe. I love them too. Nothing fancy about them, just regular chocolate and peanut butter,” Cisco said. “We are lucky that all of us have this passion. We email recipes back and forth and make changes. Offering

HOPE

Over the course of the last year, the Catalyst Church Food Pantry has grown into much more than just a traditional place offering food to families.

T

his church that states they are a “church for people who don’t do church,” not only offer meals, meal stretching recipes, prayers, Bibles, but also an invitation to church and the church’s activities. Whether the Rock the Block party, Vacation Bible School, Wingnuts assistance, Bible studies, Singles, Youth or Marriage Group, clients are made to feel welcome. Being a small church with limited funds but a lot of heart, it is often hard to acquire the amount of food needed to provide for as many families as visit the pantry. The pantry is open Tuesday and Thursday from 4 – 6 p.m. each week, serving between 10 and 20 families each week. The need is great but was not truly realized until figures were kept of the number of meals sent out the door. The pantry provides groceries for three meals a day for three days for each family member. But until you see the numbers you can’t grasp the ideas of just what this little pantry is doing. To realize the magnitude, 271 people

One

Meal at a Time receiving food means that 2,439 meals went home with our families. That is a lot of food and sadly a great need. The Westside community has been a huge help and support since the food pantry’s opening in the spring of 2012, but the need continues to grow. Through a canned food drive at the Westside Schnucks, nearly 1000 cans of food and $300 in cash was donated one April Saturday. In addition, Mater Dei High School sponsored a spirit dress day where students donated $1 to wear spirit dress. A by-donation ping pong tournament and family movie night offered something for everyone in the community. The Catalyst Church Food Pantry offers hope, one meal at a time! Food as well as cash donations are appreciated. We are needing around $500-$600 a month plus donations of food to keep the pantry open. A few years back, I heard the phrase that a person should eat to live, not live to eat and by adopting that mentality a person could make better choices as to what he or she consumed, in turn, living a healthier life.

S

o with that in mind, last year I worked really hard to lose over 60 pounds during the course of the year to improve my overall health and well-being. In doing so, I avoided some of my favorite restaurants for fear I wouldn’t be able to find something that was healthy for me and enjoyable. What I have come to learn though, is that with a few simple tips and tricks, you can still enjoy the restaurants that you have always known and loved. Personal Trainer and Weight Management Specialist at Bob’s Gym Amanda Smith recommends starting with a sit-down restaurant. Not that drivethru restaurants are bad, but they likely don’t offer as healthy of items. She next recommends looking for restaurants that offer “healthy” or “lighter” denoted options on their menu. The next step is to look for unnecessary items that may come on a dish. Avoid salads that have items that can make them just as unhealthy as a burger, such as Chinese fried noodles, extra cheese, fried chicken strips, etc. Smith recommends instead choosing salads that have items such as fresh fruit or grilled chicken instead. You can also ask for your cheese or dressing on the side, and you generally should pass on crunchy toppings.

Smith shares, “I define healthy as living well, eating well and resting well. Doing these things will result in a healthy lifestyle. A healthy lifestyle has great side effects like a healthy body weight, low body fat percentage, better sleep patterns, and little to no medication for ailments. Our program, Simply Basics at Bob’s Gym, does not count calories. Instead, we focus on combining exercise with eating whole foods and watching our macro nutrients.” While eating out, you can also exercise your right to choose. Swap water for soda or an alcoholic beverage. Look for items on the menu that offer a whole grain or wheat bread versus a white bread option, or think about skipping the bread altogether. Choosing lean proteins like chicken, turkey or fish over red meats is another route. Also, consider asking the wait staff to not bring out the bread or chips before the meal, and always ask that your

vegetables be steamed in water only. According to Smith, a lot of places steam with additional oils or butters. You should also bear in mind your portion size when eating out. Smith recommends the following: fruit servings can be up to the size of a baseball, fish servings can be up to the size of a checkbook, chicken or beef servings can be up to the size of a deck of cards, cheese or peanut butter can be up to the size of your thumb, and oils or butters can be up to the size of the tip of your thumb. So, don’t just take it from a person who has walked on that path to losing weight and/or becoming healthy, but also heed the advice of a professional. There are ways to enjoy dining out while staying on a healthy track! WC

Burger Land BourbonBlog.com (BB): Will you be showcasing other types of burgers that aren’t beef on Burger Land? George Motz (GM): No, I think a hamburger is defined as, ‘made from a cow, ground up, cooked and put on bread.’ Veggie and crab burgers, those aren’t hamburgers. BB: How did this become a show on Travel Channel? GM: About 10 years ago, I was looking for a subject for a documentary. I wasn’t an expert about hamburgers; I was looking for stories about people. We estimate over the last 12 years, I have eaten close to 10,000 burgers. If I am doing research for the book or the show, I’m eating up to 20 burgers a week. Many of them are small.

BB: Are you just eating the burgers or cooking them too? GM: No, I don’t cook many burgers at home. There is one burger I make which is simple. I call it the primary source hamburger in America. It is like a slider, only about two or three ounces. It is smashed on flat top with a few onions on a white squishy bun. Many places in America still make them that way and have been for 80 or 90 years. This is how burgers started because back then, there was little to no refrigeration. Pickles, onions and mustard. This was the original burger. BB: Is there a definitive place that actually invented the hamburger in America? GM: There are many claims to the invention. The best and strongest claim is Louis’ Lunch in New Haven, CT, the

oldest continuously operating restaurant serving it this way since about 1900. BB: Any tips for making burgers at home? GM: Fresh ground beef. Pick up your meat the day you’re making burgers. Don’t freeze meat or go frozen. Traditional grilling is the hardest way to make a burger because you can easily under or over cook. For the best results on cooking your meat, take a skillet and put a flat top on the actual grill over the the flames. This keeps the juices intact.

BB: What do you hope viewers take away from Burger Land? GM: I want them to realize that there isn’t just one kind of hamburger. There are regional differences. Burgers don’t make themselves. They are made by people. People have souls and make them they way they want to. In some cases, the same way for a 100 years and they make them because they are excellent. WC

BB: What type of fries go best with a burger? GM: To me, about 90% of the time fries are a big let down. I usually stay away from them. I like waffles fries. If you are watching your weight, cut the fries out. www.EvansvilleDining.com • 19 •

Guacamole 1 1 3 1/4 Pinch Pinch 1 1 T. To Taste

Ripe tomato Ripe lime Ripe medium avocadoes Onion, finely chopped Ground cumin Mild chili powder Jalapeno, freshly chopped Cilantro leaves, freshly chopped Salt

Squeeze the lime into a bowl. Cut each avocado in half around the pit; twist apart and remove the pit with a knife. Carefully peel off the skin, dice the flesh in the bowl of lime juice to prevent loss of color. Add the onion, tomato, cumin, chili powder and jalapeno. Mash together and add salt to taste. Enjoy! It’s a perfect blend of salt and sweet and can be used as a condiment or as a dessert ingredient. 1 lb bacon (diced) 1 large onion (diced) 4 large cloves garlic (minced) 1/2 tsp cracked black pepper 1 tsp crushed red pepper (or to taste) 1 Tb cumin 2 tsp dry mustard 4 oz Bourbon 1 Tb apple cider vinegar Salt to taste

Turkey BLT with Bacon Jam

Sauté bacon over medium/high heat for 5 minutes (until the bacon has just started to brown), add onion. Reduce heat to medium and sauté for 5 more minutes, until onion becomes translucent. Add garlic. Sauté 2 minutes. Add black pepper, red pepper, mustard, and cumin. Stir. Remove from heat and add Bourbon. Return to low heat and let simmer until syrup is thick and the meat and veggies are completely soft. Remove from heat. Let cool. Pulse in food processor 4-5 times until jam is just spreadable. Blue Moon Burgers 4 half lb. Certified Angus Beef patties 4 tsp. Worcestershire sauce 4 tsp. Montreal steak seasoning 1 cup blue cheese crumbles, divided 4 oz. Blue Moon beer, divided Place one burger patty in a large bowl. Add 1 tsp. of Worcestershire sauce and 1 tsp. of Montreal steak seasoning to the burger. Then place 1/4 cup of blue cheese crumbles in the center of the burger, and shape the meat around it to form a new patty. Place burger on a flat-grill, pour 1 oz. of beer around the edges then immediately cover it with a large metal bowl, allowing the burger to steam. Cook to desired length. Repeat process with remaining burgers. To serve, top with sautéed onions and more blue cheese crumbles on a toasted bun. Serves four. Arancini 1 Tbl. Olive Oil 2 1/4 oz. Aborio Rice 1/2 Shallot 1 tsp. Minced Garlic 2 Tbl. White Wine 3 1/4 Tbl. Homemade Pomodoro Sauce 1 cup of Chicken Stock 1 1/4 Tbl. rehydrated Sun-dried Tomatoes 1/3 tsp. of White Sugar 1/3 tsp. dried Italian Seasoning 1/8 tsp. Kosher Salt 1/8 tsp. ground Black Pepper 1 1/2 Grated Parmesan Equal parts cooked spicy Italian Sausage & shredded Mozzarella Heat oil in a non-stick skillet. Add shallots and garlic and sauté until tender. Add rice and lightly toast. Deglaze skillet with wine. Add pomodoro sauce and stir until completely absorbed. Add seasoning, sun-dried tomatoes and sugar. Add stock in small amounts and continually stir until all liquid is absorbed and rice is cooked and tender. Stir Parmesan cheese into rice. Allow rice to cool. Mix equal parts of Italian sausage and shredded mozzarella cheese. Form a ball with the rice and use your finger to make a pocket. Fill with sausage and cheese mix. Tilapia with Lemon Cream Sauce 2 Tbl. Of Butter 2 lb. of Tilapia 1/4 tsp. of Salt 1/4 tsp. of Black Pepper 1/4 cup of Flour 3/4 cup of Heavy Cream Grated Lemon Zest 1 Tbl. Lemon Juice 2 Tbl. of Scallions (chopped) In a large, non-stick frying pan, melt the butter over moderate heat. Sprinkle the tilapia with 1/2 tsp. of the salt and pepper. Dust the tilapia with the flour and shake off any excess. Put the tilapia in the pan and cook for two to three minutes. Turn and cook until just done, about three more minutes. Remove the tilapia from the pan. Add the cream and lemon zest to the pan. Bring to a simmer and cook until it starts to thicken, about two minutes. Stir in the remaining 1/4 tsp. of salt, the lemon juice and scallions. Serve the sauce over the fish. Prepare cabbage:

Core cabbage, put into a pot of boiling water until pliable (about 5-10 minutes). Remove outer leaves when they are medium soft. Set aside.

Yebra Malfoof (Cabbage Rolls)

Prepare filling:

(Mix together in a large bowl.) 2 lbs. ground Beef (Can substitute Pork or Lamb.) 1 1/2 cups of long grain rice 1 tsp. of pepper 11/2 tsp. of salt Add water to make the meat and rice easier to mix. Put a small amount of the mixture in a cabbage leaf. Roll like a burrito. Place into a pot that has the scraps of cabbage in the bottom. Add one small can of tomatoes to the pot breaking up the large pieces of tomatoes. Add water until the cabbage rolls are covered. Cook for about 30 minutes on medium heat. Serves about 10 people. Meat & Cheese Platter 32 oz. of Chicken or Vegetable broth 14 oz. can of Italian style diced tomatoes 9 oz. Cheese Tortellini 6 oz. Fresh Spinach Bring broth to a boil. Add tortellini and tomatoes with their juice, heat on medium until the pasta is tender. Turn down heat to low and then add the spinach. Cover with lid. After roughly two minutes, stir so that the spinach mixes throughout and it is ready. Lastly, top with fresh grated parmesan cheese. Savory Jumbo Shrimp and Chicken Tenderloins

Mango BBQ Sauce (On the Mahi Mahi Tacos) Match this sauce with a GREAT pale ale. Stone’s Pale Ale fits the bill, slightly hoppy but very clean. Won’t hurt the balsamic and blends well with red pepper.

16 Jumbo Shrimp 8 Chicken Tenderloins 1 Large Sweet Onion cut in half and sliced thin (Vandalia or the Candy Onion that’s sold at various farmers markets during the season) 1 each Red, Yellow and Green Bell Pepper cored seeded and sliced thin ½ cup Olive Oil (or butter and olive oil) 2 tsp. Coriander 2 tsp. Turmeric (may substitute curry powder) 2 tsp. Ginger 1 tsp. Ground Annatto (or 1 tsp. Paprika) 3 tsp. Kosher Salt 1 tsp. White Pepper 2 Garlic Cloves crushed 1 1/2 cup Orange Juice 2 tsp. Cornstarch Add the oil, onion and garlic to a hot pan, which is large enough to hold all the chicken and shrimp, and reduce the heat to medium. Cook covered until the onion starts to sweat (create an aroma). Move the onion and garlic to one side of the pan and add the chicken tenderloins that have been seasoned with all the required seasonings. After lightly browning the tenderloins on both sides over medium heat cover the pan and cook for 5 minutes on medium heat. Add the unseasoned shrimp to the pan placing them on the bottom of the pan, and place the tenderloins and onion on top of the shrimp then cook 10 minutes on medium heat. Stir in one cup of orange juice and the bell peppers and cook covered for 15 minutes on medium heat. Remove the chicken, shrimp, bell peppers and onion from the pan to a serving dish. Add remaining ½ cup of orange juice with the cornstarch stirred into it to the pan and cook this savory liquid for another 5 minutes then add to the chicken, shrimp, bell peppers and onion. You may want to add some additional orange juice to create a medium consistency for the savory pan sauce (liquid). Serve with crusty garlic bread and a crisp semi-sweet white wine and side dishes of your choice. Recipe for four to eight servings. Seared Ahi Tuna

Soy sauce Green onions Sesame oil Minced garlic Crushed red peppers Whole limes Sushi grade yellowfin tuna Toasted sesame seeds Honey

Mix all ingredients in a bowl excluding tuna and sesame seeds for a marinade. Marinate tuna for two to four minutes. Pre-heat sauté pan. Add 1 tsp. sesame oil to pan; sear the tuna for one minute on each side. After searing, roll in toasted sesame seeds. Slice tuna into 1/4 inch cuts – serve and enjoy! Jason Suggests: Ahi is a delicate fish, but the cumin rub packs a punch! I suggest either Fat Head’s Head Hunter IPA or Carlsberg Elephant. Both have a strong district taste that won’t over power the rub, yet are still mild enough to not kill the fish.

Honeysuckle Sorbetto 4 cups, tightly packed but not smashed honeysuckle flowers, leaves and stems discarded 5 1/3 cups cool water 1 1/3 cups water 2 cups sugar Few drops of freshly squeezed lemon juice Pinch of cinnamon PLACE blossoms in a non-reactive bowl, glass or stainless steel, and cover with cool water. Weigh down with a plate. Let them stand on the counter overnight. MAKE a simple syrup out of sugar and water: boil together in a small saucepan until all the sugar is dissolved and it begins to look lustrous and slightly thick, three to five minutes. Add lemon juice to prevent sugar from re-crystallizing. Cool syrup completely. Strain honeysuckle infusion, gently pressing the blossoms so as not to waste any of your efforts. Combine the two liquids and add the merest dusting of cinnamon. Churn in an ice cream maker, per instructions. This does not keep for more than a week or two. Yield: 2 quarts. Whipped Cream

2 cups heavy Cream 2 tsp. pure Vanilla ¼ cup granulated White Sugar or Powdered Sugar Add the above ingredients until desired thickness.

Chocolate Sauce

Melt white chocolate and butter over water bath (or you can melt chocolate over a water bath and melt butter in microwave). Pour into mixing bowl, add in the following order: sugar, flour, eggs, rum, vanilla, salt and pistachios. Mix with paddle on first speed, increasing to second briefly at the end. Do not overwork or they become chewy and the top will flake off. Pour batter into greased and parchment-lined 9x13 in. pan. Sprinkle chocolate chips over top. Use the side of the rubber spatula to pat them down. Bake at 350 degrees for 60+ minutes. Rotate every 30 minutes top to bottom and give a half turn. When done, top will be golden and the center will spring back. If center sinks upon removal from oven, return it to the oven ASAP and continue to bake. The brownies can be salvaged. Note: can be served with vanilla bean ice cream, whipped cream and chocolate sauce. Serves 12.

Thai Shrimp with Cucumber Ceviche A spicy ceviche deserves a balancing wheat beer. Carson’s Eville Wheat will not overpower the shellfish or cucs. The wheat will calm the kimchi heat.

Fluffy Peanut Butter Pie 3/4 cup of smooth Peanut Butter 1- 8 oz. cream cheese 1 cup of powdered sugar 1/2 cup of milk 9 oz. of Cool Whip 9 in. pie shell, graham cracker crust Beat cream cheese until smooth. Add in peanut butter and powdered sugar then gradually beat together. Slowly add milk into the mixture. Fold in Cool Whip and pour into 9 in. crust. Set in freezer for 10 minutes to set up. Chicken Saltimbocca Ingredients 1 (7oz) boneless chicken breast 1 thin slice of prosciutto ham 5 button mushrooms 1 cup of heavy cream 1 teaspoon of butter 1 tablespoon of canola or olive oil 1 small bag of fresh spinach 1 cup of water 2 slices of provolone cheese Salt and pepper Directions Lightly salt and pepper chicken and place in oven, cook for 12-14 minutes at 350 degrees or until the fattest part of the chicken temps at 165 degrees or higher.

(usually time chicken is done) Add 1 teaspoon of butter, 1 cup of water, and a handful of spinach to sauté pan over medium heat. Sauté spinach till it wilts down then add prosciutto. Remove chicken when cooked place prosciutto then spinach onto chicken cover with 2 pieces of provolone cheese place back in oven just long enough for cheese to melt then remove and place on dish. Moist Pineapple Cake

Mix flour, sugar, baking soda and salt thoroughly and set aside. Beat eggs, vanilla and any juice off of your pineapple chunks together. Slowly mix in your dry mix. Add your pineapple chunks last and pour mixture into a 9 x 13 pan wiped down with vegetable oil. Bake at 325 degrees for 25-30 minutes or until the top is lightly browned then add an icing of your choice. Ours is cream cheese. Salsa 8 small Tomatoes (diced) 1 can of petite Tomatoes (diced, drained) 1 head of Cilantro 1 Onion (diced) 2 roasted Anaheim Peppers 1 roasted Jalapeno 1/2 Tbl. of Salt 1/2 Tbl. of Black Pepper 3 Tbl. of Cider Vinegar Roast all pepper over an open flame or under a broiler until the skin becomes black. Beef Brisket Hash with Mornay Sauce 1 lb. of cooked beef brisket ¼ in. dice 2 potatoes ¼ in. dice 1 small onion ¼ in. dice 1 garlic clove minced ¼ cup beef stock 1 Tbl. of fresh parsley Salt and Pepper to taste 8 Eggs poached In a large skillet melt butter over medium heat add potatoes, sauté to a golden brown. Add onion and garlic, cook till onion becomes translucent. Add in the cooked beef brisket and beef stock, let the stock reduce by half. Add in the salt and pepper, turn off heat and stir in the fresh parsley. Separate the hash onto four plates and place two poached eggs over the hash then drizzle with mornay sauce.

Mornay sauce 1 ¼ Tbl. of butter 1 ½ Tbl. of flour 1 cup of warm milk ¼ tsp. of kosher salt 1/8 tsp. of white pepper 1 oz. of Monterey jack cheese In a medium sauce pan melt the butter over medium-high heat, add the flour stirring constantly until the roux is a pale yellow and frothy. About one minute, slowly whisk in the milk and continue to whisk until the sauce thickens and comes to a boil. Reduce the heat to a simmer, add salt and pepper, allow to simmer about two minutes and add the cheese. Whisk until melted. Ri Ra Lamasco Burger 1 3 oz. Soft Pretzel bun 2 oz. Brussel sprouts 1 oz. smoked Bacon 1 pinch Rosemary 7 oz. hand-cut ground Beef 1.5 oz. Garlic Aioli 1 thick slice of Swiss cheese Garnish with lettuce, tomato and red onion rings. Grill seven oz. burger on flat top until desired temp. Melt Swiss on top. Sautee bacon, sprouts and rosemary together with a little coarse black pepper. Toast pretzel bun with butter on flat top until golden brown and sprinkle with a little kosher salt.
