Maximizing the‘ in Superfoods with

It’s true – we are what we eat. Our diets not only have an impact on our waistlines but also on our overall health, immune systems and energy levels. Eating healthy and incorporating superfoods packed with vitamins and antioxidants into our daily diets can be easy and delicious.
H
ere are some favorite ways from home to include superfoods into every meal. It can be as simple as adding blueberries or walnuts to your oatmeal or cereal at breakfast. For lunch, rev up a plain turkey sandwich by adding leaf lettuce, sliced peppers and tomato. Try putting a little chopped spinach or kale into your chicken or tuna salad, or use leaf lettuce as a wrap. Turn an ordinary garden salad into a super salad by throwing in some broccoli, peas, tomatoes, avocados and red beans. For dinner, mix these same vegetables (or a variety there of) in with some brown rice along with your choice of herbs and spices - makes a great meal on its own or as a side dish for salmon or turkey. Stuff fresh portobello mushrooms with hummus and chopped red peppers. Chef Blake Kollker of Perfectly Fresh Foods stated that red beans are very high in antioxidants. In fact, they have more than wild blueberries. “Broccoli, may help prevent breast cancer by fighting excess estrogen. It is rich in vitamin C, and it’s a good source of vitamin A. Broccoli also helps you feel full on less than 30 calories per serving,” said Chef Kollker.
He also pointed out that crimini and portobello mushrooms are as high in antioxidants as string beans, red peppers and carrots. “People think of berries, chocolate and kale when they hear the words ‘superfoods’ or ‘foods packed with antioxidants.’ The reality is that most fresh fruits and vegetables are good for you, and they all have their own special attributes. That’s what Perfectly Fresh Foods is all about,” Chef Kollker added. He also suggested some healthy snacks (besides the dreaded celery sticks) to munch on - in moderation of course - due to the high fat contents including dark chocolate, almonds, walnuts, pistachios, pumpkin and sunflower seeds, and cranberries. Cook quinoa with water or stock until it opens up and is soft. In a large skillet, brown off beef – drain and set it aside. In the same pan, sauté diced zucchini, squash, carrots, mushrooms and garlic in olive oil until soft. Add the remaining ingredients, and cook for 3-5 minutes while stirring. FOOD JUSTICE: An Inter view with Jen Chapin, Activist, Musician & Daughter of Late Great Folk Icon Harry Chapin by Nick Durcholz
Needless to say, she knows her foodstuff. But she fights to give people so much more! Jen took a moment out of her busy schedule to chat with What’s Cookin’ about food justice.
Q& A
What’s Cookin’ (WC): Define food justice... What do you fight for? Jen Chapin (JC): Good food for all. Food that is produced and consumed with the health of our bodies, and our earth in mind. Real food for people, not food-like edible factory consumer products produced with intensive carbon and chemical inputs from government-subsidized commodity products, aggressively-marketed and widely-distributed for maximum shortterm profit. WC: Can you share with us a story of how you have seen WhyHunger positively impact someone’s life personally? JC: In Brooklyn, we’ve seen teenagers start finding themselves through work on urban farms - reconnecting to their bodies and the earth, creativity and health and a new sense of power and possibility, even spirituality that comes from being a player and not a pawn in the food system.
Planting a new crop of ideology in the minds of the masses when it comes to our nation’s food culture of convenience and subpar quality isn’t an easy one.

ut if anyone has the resources to do it, it is Jen Chapin. She is armed with passion, compassion, her voice and experience serving as a chair, secretary and head of various committees for WhyHunger. WhyHunger is a charitable organization that is a leader in building the • 8 • www.EvansvilleDining.com
movement to end hunger and poverty by connecting people to nutritious, affordable food and by supporting grassroots solutions that inspire self-reliance and community empowerment. It was co-founded by Harry Chapin, Jen’s father and folk icon. She has also served as a member of its Board of Directors for 20 plus years.
WC: What do you think the main source of food injustice is in America? And how can we change? JC: Jobs, Jobs, Jobs. Wages, Wages, Wages. When people are not paid enough for honorable work as is the case for tens of millions of Americans, they cannot get beyond a life of reaction and crisis management to make plans or dream, let alone garden or shop and cook. Right now, our government and financial practices, even our foreign policies, subsidize junk food. When the true environmental and health costs of industrial agriculture are actually reflected in the price of processed food, the market will allow for more sanity and justice. The food movement is growing exponentially from the bottom up, with people across all cultures and incomes joining together to build up alternatives to the corporate food system. Tri-State

If you absolutely can’t get your day started without a cup of joe, you’re hardly alone. Recent studies have shown that more than half of Americans over the age of 18 drink coffee every day.
A
nd while there’s any number of typical places to get coffee in the tri-state – from corporate giants like Starbucks to donut shops and convenience stores – keep in mind that we also have several locally-owned and operated businesses that offer so much more than just that morning jolt.
Penny Lane Coffehouse
first appeared downtown nearly 15 years ago. Owner Brian Bennett recently opened a new location on the east side that also functions as a pub with alcoholic beverages and classic bar food. Under his direction, Penny Lane has continued to evolve and thrive in the community as an alternative to the standard coffeehouse experience. “We believe in creating a place for people to come and just hang out and be who they are,” manager Meagan DeLong says. “Customers often just start talking to each other and that’s how they meet and become great friends – it’s a very open place.” Along with an eclectic atmosphere, Penny Lane is famous for its
menu, including carefully-crafted drinks (coffee, tea, smoothies, juice and more) and great food, including delicious breakfast options, sandwiches, wraps and much more – all made to order. “There’s something for everyone,” DeLong says. Coffee-wise, she recommends Instant Karma (caramel latte with four shots of espresso) and the PL chais – apple, chocolate or regular. Look out for live music at both locations and upcoming bierstubes at the east side. Penny Lane is located downtown at 600 SE 2nd St. and
PG Gallery & Café is only a year old but has already made
sandwiches, burgers and dinner items using healthy, local and organic ingredients. Musically speaking, “anything goes” at PG – you can catch bands and artists from all genres. They also feature daily events/specials like Taco Tuesday, Game Night Wednesday, Sushi Fridays and more. PG Gallery& Cafe is located at

It’s not pre-prepared food that is brought in and heated up.” Carter and her crew brew seven different kinds of coffee every

While Carter acknowledges that the Coffee Cottage is hampered a bit by limited parking, she points out that her prices are cheaper than the big guys, especially from 2 p.m. – 4 p.m. when specialty drinks are half-price. For Summer: Turoni’s Black Light Lager I’m really partial to it because it is my first recipe. I drink a lot of it in the summertime. Even though it is dark, it’s very light in flavor and body. I like to take it to festivals and get people that don’t think they like dark beers to try it, and most of them do. For Fall: Turoni’s Autumn Smoke Porter It’s got that smoky character – it’s getting cool – thinking bonfire-y thing. It’s not real heavy. A few years ago we aged some in a bourbon barrel and that was really nice. By the time we opened the barrel it was three years old. For Winter: Turoni’s Ol’ 23 Chocolate Stout It’s got that chocolate-ty character. We try to have it out by February because of the chocolate. Late Fall to Winter because that’s when the ‘bigger beers’ are coming out. Bigger beers meaning higher strength alcohol beers. Also in that time of year, you have the pumpkin beers and winter beers with their spices in time for the holiday season. It’s the feel good time of year.
For Fall: Carson’s Red Dawn Amber Wheat Won Silver at the World Beer Cup, it has a lot of caramel-type flavors to it. Depending on how fresh the beer is from bottling or kegging, it can really have some assertive hop character to it that helps refresh my palate. When it ages a bit, some of those hops will die down and so, that caramel sweetness comes through. *Also consider Carson’s Jackie O’ Pumpkin Ale (Specialty)
For Spring: Carson’s Eville American Wheat
It’s heavily dry-hopped. When you dryhop beers really heavily you can get some grassiness off of it and spring time, it’s that first smell of somebody mowing grass. It’s here! It’s light like the Harlot. It’s got the hop zing that’s kind of nice and refreshing lingering with you. Some bitterness…Utilizes hops that are kind of on the citrus side, piney-type.

The Review: Best Flame-Grilled Burger
Restaurants that have been around as long as the Hornet’s Nest share something in common – a commitment to fantastic food that keeps people coming back year after year. You simply can’t put a price on the reputation for excellence that this north side tradition has earned, though you can certainly taste it in classic entrees like the Nest Burger. It takes confidence to name an item after your restaurant – it better be better than good. Not to worry in this case. The flame-grilled Nest Burger is full of flavor, topped with American and Swiss cheese, sweet BBQ sauce, sautéed onions and mushrooms, two slices of crisp platter bacon and fresh tomatoes and lettuce. With each bite, there’s a new zing, a near wallop to the taste buds. And the size of the burger is just right – that sweet-spot between not enough and too much. Like everything the Hornet’s Nest does, it’s the real deal.

The Review: Best Signature Sandwich for Lunch
This downtown staple was here when old downtown was “cool” when it wasn’t - and now that it is again, I reassert: Bits N Bytes Deli. This locally-owned and operated diner/deli just celebrated their 28th anniversary. That should be enough of a reason alone for you to try out this lil’ hidden icon. Any restaurant, lasting nearly three decades, has been doing the right kinda things. Serving up breakfast and lunch all weekday mornings and afternoons, these ladies and gents find themselves with a wonderful view, as well as a clientele that they have watched progress through the years. With a sandwich like the “Floppy Disk,” I can see why. Named before trendy names were a trend, this open-faced pita is served with your choice of meat, cojack cheese, alphalfa spouts and their own special sauce (mayonnaise-y, peppery and parmesan-y). After a couple bytes, it was easy to tell just why this family has been around for more than a bit. It was a quick, tasty treat of a sandwich, perfect for a hot day. The Review: Best Pizza for Herbivores
To put things in perspective, JFK was still alive when Turoni’s first appeared on the scene over 50 years ago. Not only surviving but thriving for five decades in the restaurant business is not easy, but Turoni’s has sure made it look that way with consistently great cracker crust pizzas, fresh, handcrafted beers, a warm, friendly atmosphere and excellent staff. The Review: Best Overall Sauces (Creole Mojo, Peppercorn Mayo) [Burger]
Since its grand opening two years ago, Backstage Bar & Grill has been one of the main establishments helping to revive Downtown Evansville nightlife. It’s perfectly positioned adjacent to the Ford Center, a prime location for pre and post-event celebrations – particularly for Icemen games. These guys know how to entertain big crowds with daily drink specials and the best in live music/DJs, but don’t forget about the great food. Their burgers, including the Showstopper, Hot Ticket and Blues Burger, are exceptional. All three are exceedingly tender halfpounders with very distinct flavors. The Showstopper features inhouse BBQ pork and onion rings for an incredible crunch and tender Apple wood bacon with peppercorn mayo that knocks it out of the park Tex-Mex style. The Hot Ticket features an in-house Creole mojo sauce for a slightly sweet, smoky flavor and jalapeno caps that provide just the right amount of heat. The Review: Most Unique Wings
The entire menu at CKB is anything but typical. So, it only makes sense that they would come to the wing-laden table with something that was more than slightly off the beaten path. CKB weighed in with their Pig Wings. Comparable in size to a normal chicken wing, they are pork shanks that were incredibly tender and flavorful. As far as spice goes, these came in at about a low to moderate level. They were a hit with all who tasted them. These glorious nuggets of pork in chicken’s clothing are more then worth the trip across the bridge!

The Review: Most Meaty/ Biggest Wings
Amy and her cozy joint on Franklin Street both have many different notable “assets.” And sure enough, you can add another to the list! Lamasco had the biggest and most meaty wings at the table. On top of ample size, Lamasco’s wings were some of the richest, most flavorful wings as well. The Cheesy Garlic wings especially, were sinfully rich and the Ass Kickin’ wings were a great option for those who like moderate to high heat. You certainly get the most meat per wing for your buck with Lamasco’s. Just be mindful you don’t bite off more than you can chew!

The Review: Best BBQ Beef Ribs
NW Chophouse in Newburgh, Ind. is a fairly new spot to go to enjoy great cuts of house-carved beef, chops and delicious pastas. But we’re talking about barbeque, more specifically about barbeque ribs. We’re talking meaty, smoky, fall-off-the-bone, slightly-sauced and wonderfully charred ribs. Ribs that are slightly sweet, packed with meat and a little Asian flair kinda ribs. Yep, we’re talking about NW Chophouse’s BBQ Curry Beef Short Ribs, that’s right beef, not pork. These beef short ribs are slow-cooked for around five hours making a fork or knife completely unnecessary. Before service, they go back to a hot grill, to add a nice char and smoke flavor. If you’re a BBQ person, or just a person who enjoys a really tasty meal, NW Chophouse & Wine Bar should be a must on your list. This pilot - turned restaurateur - has landed in Newburgh, with an upscale menu, in a relaxed and modern dining environment.

The Review: Most Beefy Burger
Sportsman’s Grille & Billiards is back this month to showcase another menu item that Franklin Street visitors have been raving about: the Two Fisted Jumbo Burger. This is not a burger for the meek or someone who is only mildly hungry. No, the name is spot-on – it requires that both hands be free at the time of ordering. Check it out: two burgers (six ounces each) with bacon, grilled onions, BBQ sauce and double cheddar cheese. Technically, it doesn’t look huge but, man, there’s a major amount of meat involved. Thankfully, this pseudo-giant of a burger has a big taste to match. Regulars at Sportsman’s know that their BBQ sauce is boss (i.e., try the BBQ Chicken Sandwich some time) – and that’s what really stands out here along with the grilled onions. There’s a nice balance of sweet and salty going on that truly hits the spot. And really, you can’t have enough cheddar cheese. Two thumbs up for the Two Fisted Jumbo Burger. The Review: Most Tender BBQ
Here’s an interesting fact: Texas Roadhouse originated in Indiana. Maybe you already knew that, but it’s good to remind people that this state is the birthplace of some legendary chains. Texas Roadhouse hit the ground running in the early 90s with a commitment to serving grade A, hand-cut steaks and took off from there. 20 years later, it’s still the place to go for the highest quality food, especially their handpulled pork which is tossed in TR’s signature BBQ sauce and slow cooked to perfection. It’s incredibly tender with just the right mix of sweet and smoky flavors. You can order it as a dinner portion or as a sandwich – OR go for the Texas Size Combo (with either grilled BBQ chicken, BBQ roasted half chicken and pulled pork and ribs). The Review: Best BBQ Style Pizza
Don’t get us wrong, having Old Chicago participate in both the wings and burger guides the last two months was fantastic – they wowed us with their selections and drove home the point that these guys are so much more than a pizza place. But to be honest, this is the guide that we were truly psyched about as Old Chicago’s reputation for Chicago style pizza is unparalleled. The reasons for this are many, but it all starts with the dough: hand-crafted from scratch by chefs who arrive at 6 a.m. every day, so it can be served fresh from the oven to your table – no artificial additives or fillers. The sauce is made from tomatoes that are specifically grown, harvested and fresh-packed for Old Chicago, and the cheeses are 100% real. Finally, all toppings are prepared fresh which means that every pizza on the menu is something special. We were treated to the Applewood-Spiced BBQ Chicken made with the highest quality ingredients and toppings: BBQ pizza sauce, sharp cheddar and Swiss, red onions, red peppers and Applewoodspiced chicken tossed in Old Chicago’s signature BBQ sauce – all on top of their classic Chicago Thick crust. The Review: Most Creative Pizza
The Pizza Revolution is all about taking the show on the road. With no fixed address, this mobile operation is indeed revolutionary. You can find these guys at the Farmer’s Market all summer long or at any number of local events – just keep an eye on their Facebook page to find out where they’re setting up shop each day. Famous for amazing wood-fired pizza, it’s fair to say that their ingredients are also revolutionary – everything from honey to baby bellas to sour cream. Some of their unique pizzas include the B.L.T., the Buzz Kill’a and the Wake-N-Bake (no shortage of catchy names on the menu). A big favorite is the Fig-N-Pig made with fig preserves, gorgonzola, prosciutto and fresh mozzarella on a thin crust. The combination of gourmet flavors is unlike most any pizza experience in Evansville – a hint of honey from the figs, smokiness from the prosciutto and a savory taste from the gorgonzola. Wow. Marinated Lamb Chops Lamb Marinade: 1 Frenched rack of lamb separated into chops. Submerge the lamb chops in extra virgin olive oil and add 1 tbsp. fresh rosemary. 1 tbsp. crushed garlic, 1 tsp. fresh thyme. Marinate the lamb for up to 48 hours. For the Red Pepper: Coat a whole red bell pepper in olive oil and roast at 400 degrees until the skin darkens and starts to loosen from the pepper. Peel the skin away from the flesh, de-seed and core out the pepper. Slice the red pepper into julienne. For the Artichoke: Peel away the outer green leaves from the artichoke until the core/ heart is exposed. Using a paring knife gently shave the outer skin of the artichoke heart. Roast the heart at 400 degrees until golden brown. Squeeze fresh lemon juice over the heart. Season with salt and pepper. For the Cauliflower: Remove the core from the cauliflower, separate the florets into “large dice” sized pieces. Steam the florets until tender, season with salt and pepper. For the Wild Rice: Cook on stovetop until the rice is tender. Season with salt, pepper, oregano, dried basil, fresh rosemary and a squeeze of lemon juice. Honey Balsamic Dressing
In a large bowl whisk together ¼ cup of the Honey Balsamic Dressing, honey and salt & pepper. Add the beets and toss together until all pieces are coated. Place a sheet of foil on a sheet pan, transfer beets to pan and spread out evenly. Bake in oven for 15 minutes. Remove from oven and allow to cool for 15 minutes. Transfer to mixing bowl and add the remaining Honey Balsamic Dressing, toss well and place in refrigerator to cool until ready to use.
In large bowl whisk together balsamic vinegar and honey. Add the salt & pepper, whisk until well blended. While continuing to whisk, slowly add the olive oil. Place in refrigerator until ready to use. Yields 1 ½ cups of dressing.

Fresh Roasted Beets
2 lb. fresh, whole beets 6 cups water 4 oz. white vinegar Pinch kosher salt 1 cup Honey Balsamic Dressing 4 tsp. honey Dash salt & pepper Preheat oven to 400°. Rinse beets under cold water. Place water, vinegar and salt in a large pot and bring to a boil. Place beets in boiling water bring water back to a boil. Reduce heat to medium and cook the beets for 15 minutes. Allow beets to cool down in the pot for 1 hour or until cool enough to handle. Cut top and bottom off the beets, remove skin with a paring knife. Cut beets into quarters and then cut the quarters in half or thirds, depending on the size to yield 1” pieces.

Honey Roasted Beet & Arugula Salad
Separate goat cheese into 10 equal portions; roll each portion into a ball and flatten to create patties; coat each goat cheese patt y with chopped walnuts. Arrange arugula on a large platter; evenly drizzle Honey Balsamic Dressing over arugula. Spread the fresh roasted beets, avocado and cranberries evenly across to top of the arugula. The Lamasco Irish Wake: Strong enough to wake the dead, and delicious enough to make it a party! 1.25 ounces of Jameson 1.25 ounces of Vodka 1.25 ounces of Blue Curacao 1.25 ounces Amaretto 2 ounces Orange Juice 2 ounces Pineapple Juice Pour in bar shaker over ice and shake vigorously. Octopus Carpaccio 1 baby octopus (head cleaned, eyes and beak removed) 3 large carrots (pealed and chopped) 2 stalks celery (washed and chopped) 1 large yellow onion (peeled and diced) ¼ cup red wine vinegar 1 tbsp. whole black peppercorn 1 tbsp. sea salt 2 bay leaves 1 orange’s juice and zest 1 lemon’s juice and zest Water In a medium-small pot, add 5 cups of water and all ingredients but orange zest, lemon zest and octopus. Bring to a boil on high heat, and right before boiling point is reached, lower heat to a simmer. Add whole octopus and simmer for 45 min to 1 hour, stirring every 10-15 minutes. Remove octopus and let cool, then drain on a plate at room temp. Once cooled, cut head from tentacles and toss in lemon and orange zest. Place the entire octopus on plastic wrap. Wrap in the shape of a 1 lb. sausage as tight as possible, squeezing out all air as you wrap. Refrigerate overnight. Octopus will congeal together. The next day, remove plastic wrap and with a sharp knife, slice octopus as thin as possible. Add sea salt, fresh cracked black pepper, lemon vinaigrette, pecorino Romano cheese and spring greens for garnish. Enjoy. Process asparagus in a food processor, then sauté sweet onions with butter and add asparagus. Cook over low heat for 10 minutes. Cincinnati Style Chili 2 Tbsp. vegetable oil 1 lb. ground chuck 1 large yellow onion, finely chopped 2 Tbsp. minced garlic 2 Tbsp. chili powder 1 tsp. allspice 1 tsp. cinnamon 1 tsp. cumin 1/4 tsp. ground cloves 1 can (6 oz.) tomato paste 1 Tbsp. Worcestershire sauce 2 cups water 1 oz. of unsweetened chocolate, chopped 2 tsp. basil 1 tsp. sugar 2 Tbsp. red wine vinegar 1/4 tsp. salt 1/8 tsp. pepper 1 can of light kidney beans (Optional) Cook beef in a saucepan with heated oil until golden brown. Add onions and garlic and cook until soft. Add allspice, cinnamon, cumin, and cloves and cook for an additional minute. Add tomato paste, Worcestershire sauce, and water. Whisk mixture until smooth. Add chocolate, sugar, and basil and bring mixture to boil, stirring often. Reduce heat and let simmer for one hour. Season with vinegar, salt, and pepper. Farmers Market Salad
1 medium size yellow squash (sliced thin) 1 green squash (sliced thin) 1 cucumber (sliced thin) ½ each medium sweet pepper varieties: red, yellow, green, purple ½ medium sweet or Vidalia onion (thinly sliced) 1 each of 3 varieties of heirloom tomatoes (wedge sliced into the desired size) 6 cloves of crushed garlic (cook on high heat for 1 minute in 2 tbsp. of olive oil) 6-8 oz. of your favorite oil and vinegar dressing (zesty Italian works great) 3 tbsp. of thinly sliced chives
Lightly toss all the ingredients together and refrigerate for 8 hours or overnight. Serves 6.
To add some flare to the squashes and cucumber, prick the skin with the tongs of a fork and pull the fork down all sides of the squash and cumber. Once sliced, it adds very good eye appeal to the vegetable cut. This is a fantastic salad to accompany pizza, baked and grilled meats, barbeque or a cold or hot seafood preparation. You can even add it to various pastas to make a seemingly complex, yet simple pasta salad. You can also use it as a topping for fresh spinach or any type of lettuce. Other optional ingredients are pepperoncini peppers, capers, mushrooms, olives, baby corn and artichoke hearts. The list goes on and on. Mix all ingredients in a bowl excluding tuna and sesame seeds for a marinade. Marinate tuna for two to four minutes. Pre-heat sauté pan. Add 1 tsp. sesame oil to pan; sear the tuna for one minute on each side. After searing, roll in toasted sesame seeds. Slice tuna into 1/4 inch cuts – serve and enjoy! Jason Suggests: Ahi is a delicate fish, but the cumin rub packs a punch! I suggest Turoni’s Blue-Eyed Moose IPA. It has a strong district taste that won’t over power the rub, yet are still mild enough to not kill the fish.

White Chocolate Brownie ½ lb. White Chocolate ½ lb. of Butter 1 ½ cups granulated White Sugar 6 eggs 1/8 cup (2T) dark Rum 1 ½ tsp. Vanilla 1 ½ cups all-purpose Flour ¼ tsp. of Salt 5 oz. Chocolate Chips ¼ lb. Pistachio nuts
Whipped Cream
2 cups heavy Cream 2 tsp. pure Vanilla ¼ cup granulated White Sugar or Powdered Sugar Add the above ingredients until desired thickness.
Chocolate Sauce

Melt white chocolate and butter over water bath (or you can melt chocolate over a water bath and melt butter in microwave). Pour into mixing bowl, add in the following order: sugar, flour, eggs, rum, vanilla, salt and pistachios. Mix with paddle on first speed, increasing to second briefly at the end. Do not overwork or they become chewy and the top will flake off. Pour batter into greased and parchment-lined 9x13 in. pan. Sprinkle chocolate chips over top. Use the side of the rubber spatula to pat them down. Bake at 350 degrees for 60+ minutes. Rotate every 30 minutes top to bottom and give a half turn. When done, top will be golden and the center will spring back. If center sinks upon removal from oven, return it to the oven ASAP and continue to bake. The brownies can be salvaged. Note: can be served with vanilla bean ice cream, whipped cream and chocolate sauce. Serves 12.
Grilled Chicken Marinade 1 cup olive oil 11/4 cup Worcestershire sauce 1/4 Italian seasoning 2 Tbsp. garlic powder 1 Tbsp. sea salt 1 Tbsp. cracked black pepper Whisk all ingredients in a bowl or pulse in blender until smooth. Pour mixture over six 4 oz. chicken breasts and marinade overnight. Chicken will be more moist and flavorful the longer you marinade. Grill for roughly 6 minutes total. Fluffy Peanut Butter Pie 3/4 cup of smooth Peanut Butter 1- 8 oz. cream cheese 1 cup of powdered sugar 1/2 cup of milk 9 oz. of Cool Whip 9 in. pie shell, graham cracker crust Beat cream cheese until smooth. Add in peanut butter and powdered sugar then gradually beat together. Slowly add milk into the mixture. Fold in Cool Whip and pour into 9 in. crust. Set in freezer for 10 minutes to set up. Jack Daniel’s BBQ Salmon 8 oz. Salmon filet 2 Tbls. of olive oil 1 cedar plank Rub: 3 TB Smoked Paprika 3 TB Cumin 2 TB Brown Sugar 1TB Onion Powder 1 TB Granulated Garlic 1 TB Dry Mustard 1 TB Celery Salt 2 tsp. Cayenne Pepper Jack Daniel’s BBQ Sauce: Jack Daniels, about 1/2 to 3/4 cup, or to taste. 1/2 cup chopped onion 4 cloves garlic (finely-chopped) 2 cups ketchup 1/3 cup vinegar 3 TB Worcestershire sauce 1/2 cup brown sugar (firmly-packed) 3/4 cup Molasses 1/2 tsp. pepper 1/2 TB salt 1/4 cup tomato paste 1 tsp. Liquid Smoke 1/2 tsp. Tabasco sauce, or to taste.

To Prepare: Soak cedar plank the day before in water. Preheat oven to 425 degrees. First, prepare the barbecue sauce by combining onion, garlic and Jack Daniels in a 3 quart saucepan. Sauté until translucent for about 10 minutes, then add all remaining ingredients, and bring to boil. Simmer uncovered until reduced and thickened, about 15 to 25 minutes. Add more Jack Daniels if a stronger flavor is desired. Start by mixing all ingredients of the dry rub into a bowl until seasonings are well-blended. Next, place cedar plank in oven and allow to heat. Then, roll salmon into the rub and shake off the excess. Place the seasoned salmon into a hot skillet with olive oil and sear the salmon lightly for the crust to form. Remove the salmon from the pan and place in the oven on the cedar plank. Cook 5-7 minutes or until it reaches 120 degrees, remove from oven and brush on the Jack Daniels BBQ sauce. Jerusalem Green Beans 1 lb. Roast (cubed) 1 medium Onion (cubed) 3 large cloves of garlic (sliced) 2 tbsp. vegetable oil Salt (to taste) 1 Cinnamon Stick 1 tbsp. 7 spice mixture 1 can chopped tomatoes 1 small can tomato paste 2 cans green beans or 1 lb. of fresh green beans Pour oil into pressure-cooker on medium. Add onion and meat. Sauté until meat is browned and onions are clear. Add salt and spices. Stir until coated. Add garlic and fill with broth or water until meat barely shows. Cover and pressure-cook for 45minutes. Pop top off and stir in green beans and simmer on stovetop until green beans are tender and hot. Add small amounts of tomato paste to thicken. Serve over rice. White Wine 2 oz. Heavy Cream Salt and Pepper to taste White Rice On a high heat, sauté chicken and onions in olive oil. When the chicken is about halfway cooked, add the tomatoes, mushrooms and artichokes. Add the white wine, lemon juice, and heavy cream. Reduce heat to simmer and let the sauce reduce.
