Από την άλλη πλευρά, όλοι εμείς πρέπει να αντιληφθούμε ότι δεν μπορούμε απλά να σφυρίζουμε αδιάφορα. Πρέπει να συμπα ραταχθούμε με ορθές κλιματικές πρακτικές, πρέπει να αφου γκραστούμε και πάλι τη φύση, πρέπει να ανακαλύψουμε την ομορφιά και την ηρεμία της επαφής μαζί της. Οφείλουμε να απο κλιμακώσουμε την καθημερινότητά μας από τον αρνητισμό και να γειωθούμε περισσότερο.Ταπροβλήματα υπάρχουν, όμως δεν πρέπει να μας αδρανοποιούν, κοινωνικά και ατομικά, αλλά να μας παρακινούν προς βέλτιστες πρακτικές συλλογικών πράξεων και ατομικών επιδιώξεων. Στην Axel έχουμε αντιληφθεί ότι πολλά από αυτά που στο παρελθόν θεωρούσαμε δεδομένα, πλέον δεν είναι. Έχουμε τη γνώση και τη θέληση να αλλάξουμε προς όφελος δικό μας αλλά και όσων μας εμπιστεύονται. It looks like humanity has to face problems that have been accumulating for many hundreds of years. Now it’s time to actually deal with them, not sweep them again under the rug and carry on its reckless course towards even greater climate, economic and social crises. There are brilliant brains, there are good enough resources, the only thing we need is will. On the other hand, we should all realize that we cannot go on looking the other way like nothing is happening. We must work together on proper climate practices, listen to what nature needs, and rediscover the beauty and tranquility it offers us. We have to put down negativism and stand tall.

At an economic level, the recession is hugely reflected on the high inflation rates, the lack of energy sources as result of the war in Ukraine, as well as on the continuous pressure exerted on the more vulnerable sections of the population. Experts are speaking of an extremely difficult winter coming up, in which further energy consumption restrictions are possible. The last time Europe experienced such conditions was almost a century ago, right after World War II.

ven for the most optimistic person, it is really hard to “see light” in such gloomy times, both in our country and abroad. The climate crisis has already begun, causing huge problems and extensive droughts in countries that hadn’t experienced such phenomena in hundreds of years. Forest fires are more frequent and relentless than ever before, with dramatic effects both on humans and on the flora and fauna of most European countries, especially those in the South.

There are indeed problems, as there have always been, but we should not let them bring us to a standstill, both socially and individually - they should rather motivate us to optimal practices of collective doing and individual pursuing. At Axel we have realized that we used to take many things for granted, and that was just wrong. We have the knowledge and the will to change, for our own benefit and for the benefit of all of those who trust us.

Mary Lennox is a studio in Berlin specializing in Flower Styling and Botanical Set Design. It basically creates compositions with flowers and plants reminiscent of Wonderland, a dream-like setting for photo shoots, events or decoration. It has collaborated with Gucci, Versace and Chanel, taking catwalks, campaigns or boutique interior design to a whole new level. National Museum of Oslo has recently opened its doors at the heart of the city. The largest art museum in the Nordic countries cost more than half a billion euros and merges four of Norway’s most important art and design institutions under one giant roof. “Norwegian politicians decided to bring these four collections into one to have an institution that was able to tell the whole story from antiquity up until today about visual arts and culture”, said museum director Karin Hindsbo at the press conference. Υπάρχει χώρος στάθμευσης και η πρόσβαση μέχρι την είσοδο των περισσοτέρων μοναστηριών είναι μόλις μερικά μέτρα. Σε κάποιες άλλες, θα απαιτηθεί ολιγόλεπτη πορεία πεζή. Εκτός από τις έξι επισκέψιμες μονές αλλά και το σπήλαιο της Θεόπετρας που δεν πρέπει να προσπεράσετε, μην παραλείψετε μια βόλτα και στο Καστράκι. Ο οικισμός βρίσκεται στη σκιά των υπερβατικών βράχων, μόλις 2 χιλιόμετρα μακριά από την Καλαμπάκα. Το παλιό Καστράκι ή παλιό χωριό όπως το λένε οι ντόπιοι, μοιάζει σε πολλά σημεία ως συνέχεια των κάθετων βράχων, καθώς τα πετρόσπιτά του ακουμπούν σε αυτούς. Εδώ θα δείτε τον εντυπωσιακό ναό του Αγίου Αθανασίου που δεσπόζει στην άκρη του παλιού χωριού και το Μουσείο «Γεωλογικών Σχηματισμών των Μετεώρων Στην Καλαμπάκα αφήστε πίσω τον κεντρικό δρόμο και περπατήστε στα δρομάκια που από το σιντριβάνι οδηγούν στις παλιές συνοικίες του Πλα τάνου, του Αϊ-Γιάννη του Προδρόμου, του Σωποτού. Καταλήξτε στο προ αύλιο της βυζαντινής εκκλησίας της Κοιμήσεως της Θεοτόκου (11ος αιώνας) που είναι ένας από τους παλαιότερους ναούς της Θεσσαλίας.

The dozen monasteries of Meteora date back to the 11th century AD, however today there are only six monasteries that can be •visited:TheMen’s Monastery of the Transfiguration of the Savior, also known as “Great Meteor”, as it is located on the highest rock. • The Monastery of Agios Nikolaos (St. Nicholas) of Asmenos or

Old Kastraki, or old village as the locals call it, looks like a continuation of the vertical rocks, as its stone houses lean gracefully against them. Here you will see the impressive church of Agios Athanasios that dominates the edge of the old village and the Museum of Geological Formations of Meteora.

Συνολικά, ο γύρος των Μετεώρων με αυτοκίνητο εκτείνεται σε απόσταση 20 χιλιομέτρων περίπου, ακολουθώντας τη διαδρομή Καστράκι – Καλαμπάκα. Στη διαδρομή υπάρχουν εκπληκτικά σημεία θέας και ανάβαση ελίσσεται ανάμεσα σε πλατάνια, ρεματιές και βράχια φέρνοντας τους επισκέπτες σε απόσταση αναπνοής από το προαύλιο των μοναστηριών.

KALAMBAKA – METEORA

The tour of Meteora by car, following the Kastraki-Kalambaka route, covers a total distance of approximately 20 kilometers. There are amazing view spots along the route, while the ascent meanders between plane trees, ravines and rocks, bringing visitors within striking distance of the monasteries’ courtyard. There are parking spots very close to the entrance of most monasteries, while in some others, a few minutes’ walk will be required.

As you climb up to the monasteries, the view is breathtaking. Access roads were constructed during the 1920s, and until that time, monasteries would get their supplies by using rope ladders, ropes, pulleys and floating baskets!

Pertouli occupies a prominent position among the large villages of Pindos. It has also the Pertouli University Forest, which belongs to the Aristotle University of Thessaloniki, and the facilities where future foresters are trained. Most of the houses are hidden in the forest, while large part of the settlement is mainly holiday homes, due to the ski center that operates in Pertouli Meadows.

Το τοπίο μετα μορφώνεται, οι θερμοκρασίες τη νύχτα επιβάλλουν στα τζάκια να ανάβουν, ενώ οι μέρες δεν έχουν χάσει το φως τους, που είναι απαραίτητο για τις περιηγήσεις στα γεμάτα χρώματα δάση ή για υπαίθριες δραστηριότητες στο βουνό και στα ορεινά λιβάδια. Είτε ανηφοριζετε μέσω Πύλης – Ελάτης είτε μέσω Καλαμπάκας προς τη Χρυσομηλιά και τα Περτουλιώτικα Λιβάδια, ένα είναι βέβαιο. Η Ελάτη είναι το παλαιότερο ορεινό θέρετρο της Θεσσαλίας, σε κομβική θέση της στα ορεινά περάσματα της Πίνδου. Σήμερα η πλατεία όπου συγκεντρώνονται τα περισσότερα καφέ, τα εστιατό ρια, τα μαγαζιά με τα τουριστικά είδη και τα παραδοσιακά προϊόντα μονοπωλεί το ενδιαφέρον των επισκεπτών. The landscape is transformed, the temperatures at night make the lighting of a fire and the cozy gathering around the fireplace a must, and additionally, the days are still long enough for walking tours in the colorful forests or for outdoor activities in the mountains and mountain meadows. Whether you ascend via Pyli-Elati or via Kalambaka towards Chrysomilia and Pertouliotika Livadia (or Pertouli Meadows), one thing is certain: The mountainous views that slowly begin to unfold before your eyes will leave you speechless. From the low altitude of the plain you will find yourself within about 40 minutes in the arms of Pindos mountain range, at an altitude of 1200-1300 meters.

If you want to enjoy the natural landscapes with endless walks and outdoor activities, the best season – recommended – is autumn. If you love skiing, plan your trip from December until March. In Kalambaka, Kastraki, Elati and Pertouli there are hundreds of rooms for rent, but they become very busy during the three-day offs and on public holidays. So, make sure you travel on off-peak days, or make a reservation well in advance. For top level hospitality, you can find 4-star hotels and resorts such as Amalia Hotel , Grand Meteora Hotel and Divani Meteora in the wider area of Kalambaka. In Elati there are smaller but very interesting hotel units, such as Hotel Giamandes and Hotel Oreades , while in Pertouli check for accommodation in Xylino Chorio.

FOOD AND DRINK

Trikala cuisine is mostly known for its pies. With or without phyllo, with cheese, meat, vegetables, greens, sweet or savory, they come in endless versions and special combinations, that give you all the energy you need for long walks and activities in the nature. In the forests near the city of Kalambaka, the visitors have also the opportunity to enjoy a unique truffle hunting and to taste these rare underground mushrooms with the divine flavor. Try them on the grill, in syrupy desserts and of course paired with local tsipouro, especially that of Tsililis distillery that operates in Trikala and produces exceptional distillates.

Την εποχή που μπήκα στο μαγικό κόσμο της γαστρονομίας σε τοπικό αλλά και παγκόσμιο επίπεδο, δοκίμασα μονα δικές γεύσεις, σπούδασα και γνώρισα σπουδαίους ανθρώπους. Αυτό ήταν η αρχή για όλο αυτό που συμβαίνει σήμερα. Πιστεύω πως όταν βάλεις καλές βάσεις, τότε τα επόμενα βήματα μοιάζουν πιο εύκολα. Την περίοδο αυτή βλέπω πλέον τη γαστρονομία αλλιώς. Both in Greece and worldwide, the prevailing trend is the return to the good raw material. It is important to know the producer who brings us the tomatoes, the fisherman who brings us the fish, and so on. This is how a relationship of trust is built and this is also passed on to customers and consumers. Of course, the reduced use of meat in the menus is seen everywhere. To not watch too much TV, and before starting their cooking studies, to spend at least two weeks in a professional kitchen. Where can we taste your dishes?

We wanted the alternative places that not many people knew and were not in the tourist guides back then. And so we thought, why not make such a place ourselves. At the same time, I came up with the idea of writing a book with easy, quick and most importantly delicious recipes. Every cookbook at that time was addressed to parents or whose who already knew how to cook, not to young people. So, with the help of my friends, I wrote the book and also made an app for iPhone and Android smartphones with a shopping list for each recipe – the app was on top of Apple Store for one week. Then the proposal by Patakis publications came for publishing my book. The book became a best seller, with sales in London and New York. – way beyond our expectations! We also had presentations there with great success. And all this thanks to the friends of mamapeinao, who later became our partners. We basically built a community. Even now, after so many years, I receive some very touching messages, like “I learnt how to cook by watching you and now I cook for my family”. It gives me incredible joy and satisfaction.

How did you come up with the idea of “mamapeinao” (Mom, I’m hungry) and why did you choose this title for your website?

The time Tassos Antoniou spent in London – working among others alongside Jamie Oliver – was a “big school” to him, as he says, while his book “Για να μην ξαναπείς ποτέ Μαμά Πεινάω” (So you never have to say “Mom, I’m hungry” again) is widely sold in London and New York!

London was, is and will always be a milestone in my journey so far. In such a big capital you meet all the cuisines of the world and learn their secrets, you find incredible ingredients but also

More than ever! When I first entered the magical world of gastronomy on local and global level, I tried extraordinary tastes, studied, and met great people. That was only the beginning of what was later to come and the plans I have today. I think that the better your foundation, the easier you can build upon it. Now I see gastronomy with a completely different mindset. This is also a result of the two restaurants I opened during the COVID-period which people truly loved. Working with people under such tough circumstances has changed my viewpoint. I may have now walked away from both restaurants, but I have the full support of people, who visit my website mamapeinao.gr, read my book ‘So you never have to say “Mom, I’m hungry” again’ and try my recipes, or watch me on YouTube and earlier on TV. We have been a relationship of companionship, and this is something priceless! I am now working on a new book in Greek, as my first book by Patakis publications sold out. There will be some fresh new recipes in there, with a contemporary twist, always simple and easy to prepare. We are also in the process of rebranding mamapeinao.gr, so that it also becomes more contemporary in terms of design and content, keeping up with the trends of our time, such as vegan and flexiterian. This past summer, I also published a travel guide to my home island, Aigina, with tips on food, accommodation and activities. What do you consider to be the biggest culinary trend nowadays and how do you adopt it in your recipes?

ΥΛΙΚΆ : 4 φιλέτα κοτόπουλου πανέ ΓΙΑ ΤΗ Σ Α ΛΤΣΑ Κ ΑΡΥ: 1 κουταλιά της σούπας ηλιέλαιο / 12 κρεμμύδια, ψιλοκομμένα / 12 μεγάλα καρότα, ψιλοκομμένα, συν 1 ξεφλουδισμένο σε κορδέλες / 12 σκελίδες σκόρδο, λιωμένες / 1Λίγο τζίντζερ, καθαρισμένο και τριμμένο ή ψιλοκομμένο / 11 κουταλιά της σούπας σκόνη κάρυ / ½ κουταλάκι του γλυκού κουρκουμάς / 1400 ml γάλα καρύδας / 12 κουταλάκια του γλυκού μέλι ΓΙΑ ΤΟ ΣΕΡΒΙΡΙΣΜΑ: Βρασμένο ρύζι / 1Φρέσκια σαλάτα ΕΚΤΕ ΛΕΣΗ: • Προθερμαίνουμε τον φούρνο στους 180 οC στον αέρα. Ψήνουμε το κοτόπουλο σύμφωνα με τις οδηγίες της συσκευασίας. • Παράλληλα ετοιμάζουμε τη σάλτσα κάρυ. Ζεσταίνουμε 1 κουταλιά της σούπας ηλιέλαιο σε ένα τηγάνι. Σοτάρουμε τα κρεμμύδια και τα ψιλοκομμένα καρότα μέχρι τα κρεμμύδια να μαλακώσουν και να αρχίσουν να καραμελώ νουν, για περίπου 8 λεπτά. Προσθέτουμε το σκόρδο και το τζίντζερ και σοτάρουμε για άλλα 30 δευτερόλεπτα. Στη συνέ χεια ρίχνουμε τη σκόνη κάρυ και τον κουρκουμά. Προσθέστε το γάλα καρύδας, το μέλι και 100 ml νερό. Αλατοπιπερώνου με, καλύπτουμε το σκεύος με καπάκι και σιγοβράζουμε σε χαμηλή φωτιά για 20 λεπτά. • Κόβουμε το κοτόπουλο σε λω ρίδες, το μοιράζουμε σε 4 πιάτα και περιχύνουμε με τη σάλτσα κάρυ. Σερβίρουμε με ρύζι και φρέσκια σαλάτα (προαιρετικά). ΧΟΎΜΟΎΣ ΥΛΙΚΆ: 1 κονσέρβα ρεβύθια σε νερό / 11 κουταλιά της σούπας ταχίνι / 11 μεγάλη σκελίδα σκόρδο σε κομμάτια / 1½ κουταλάκι του γλυκού ζάαταρ (μπαχαρικό) / 1 Λεμόνι / Αλάτι, φρεσκοτριμμένο πιπέρι ΕΚΤΕ ΛΕΣΗ: • Στραγγίζουμε σε ενα μπολ τα ρεβίθια για να κρατήσουμε το νερό τους. • Βάζουμε τα ρεβύθια, το ταχίνι, το σκόρδο και το ζάαταρ σε ένα μπλέντερ ή food processor και αφήνουμε να λιώσουν για περίπου ένα λεπτό μέχρι να αποκτήσουν μια κρεμώδη υφή. • Ρίχνουμε μέσα στο μείγμα μια κουταλιά της σούπας από το νερό των ρεβιθιών κάθε φορά μέχρι να έχουμε την τέλεια υφή. Κατόπιν μεταφέρου με σε ένα μπολ. • Προσθέτουμε λεμόνι και αλατοπιπερώ νουμε κατά προτίμηση.

PREPARATION: • Rinse the chickpeas in a bowl to keep their water. • Place the chickpeas, the tahini, the garlic and the Za'atar in a mixer or food processor and process for about one minute until the mixture is creamy. • Drizzle in one-by-one a tablespoon of the chickpeas water until you get the perfect texture. Then transfer into a bowl. • Add lemon, salt and pepper, by preference.

4 breaded chicken filets

BROWNIES ΥΛΙΚΆ: 110γρ. βούτυρο / 1160γρ. κουβερτούρα, ψιλοκομμένη / 13 αυγά / 1200γρ. ζάχαρη / 190γρ. αλεύρι για όλες τις χρήσεις / 11/4 κ.γ. αλάτι / 140γρ. κουβερτούρα γάλακτος, σε σταγόνες ΕΚΤΕ ΛΕΣΗ: • Προθερμαίνουμε τον φούρνο στους 180°C.• Σε κατσα ρολάκι, σε χαμηλή φωτιά, λιώνουμε το βούτυρο και κατόπιν προσθέτου με την ψιλοκομμένη κουβερτούρα. Ανακατεύουμε και αφήνουμε το μείγμα στην άκρη να πάρει θερμοκρασία δωματίου. • Σε μπολ χτυπάμε τα αυγά και τη ζάχαρη με το σύρμα, ώσπου να ομογενοποιηθούν. Ρίχνουμε το κρύο μείγμα κουβερτούρας και αναμειγνύουμε. Προσθέτουμε το αλεύρι και το αλάτι και ανακατεύουμε καλά. Τέλος ρί χνουμε τις σταγόνες κουβερτούρας και ανακατεύουμε ώστε να απλωθεί στο μείγμα. • Μεταφέρουμε το μείγμα σε βουτυρωμένο και και σερβίρουμε προαιρετικά με παγωτό βανίλια.

INGREDIENTS: 110 g butter / 160 g dark chocolate, in small pieces / 3 eggs / 200 g sugar / 90 g all-purpose flour / 1/4 tsp salt / 40 g milk chocolate in drops

αλευρωμέ νο ταψάκι. ψήνουμε στον φούρνο για 30 λεπτά, ώσπου να σταθεροποι ηθεί το brownie. Αφήνουμε να κρυώσει για 20 λεπτά

PREPARATION: • Preheat the oven at 180°C. • In a small saucepan over low heat, melt the butter and then add the dark chocolate. Stir and leave the mixture to cool to room temperature.• In a bowl, whisk the eggs and sugar until pale and fluffy. Add the cooled chocolate mixture over the eggy mouse and stir gently. Add the chocolate drops and stir well, until they’re dotted throughout. • Pour the mixture into a buttered and floured tin, and bake in the oven for 30 minutes, until the brownie is firm. Leave to cool for 20 minutes and serve, preferably, with a scoop of vanilla ice cream.

1 tbsp sunflower oil / 2 onions, finely chopped

KATSU CURRY CHICKEN

/ 2 large carrots, finely chopped, plus 1 peeled carrot sliced in rings

PREPARATION: • Preheat the oven at 180οC (fan forced mode). Bake the chicken according to packaging instructions. • Prepare the curry sauce. Heat 1 tbsp sunflower oil in a pan. Cook the onions and chopped carrots, until the onions are soft and starting to caramelize, about 8 minutes. Add the garlic and ginger and cook for another 30 seconds. Then stir in the curry powder and turmeric. add the coconut milk, honey and 100ml water. Salt and pepper, cover, and simmer over low heat for 20 minutes. • Cut the chicken into strips, share in 4 plates and drizzle with the curry sauce. Serve with rice and fresh salad (optional).

Chinese artist Ai Weiwei’s impressive steel sculpture named “Arch” has been temporarily installed outside the Nationalmuseum gallery in Stockholm. The breathtaking 12-metre-tall structure is made from polished steel, while its shape resembles a cage. The two cut-out human figures at its center symbolize refugee stories and are seen as an ode to freedom. If you travel to the Swedish capital, it’s totally worth a photo!

On the occasion of the 60th Salone del Mobile in Milan, Stella McCartney announced her collaboration with B&B Italia, for the new version of Le Bambole armchair of the famous design brand. The iconic armchair was “dressed up” in the designer’s handmade Fungi Forest Burgundy fabric, which we saw in her Spring/Summer 2022 collection. The same print adorns the wallpaper that the designer released with Cole & Sons. McCartney’s debut in interior design has excited the decor lovers who are eagerly waiting for the sequel!

On September 15, Design Museum in London opens an impressive exhibition dedicated to the colourful world of artist/designer Yinka Ilori - one of the most talented and influential visual artists of his generation. The London-based artist was born and raised in London, while his parents are immigrants from Nigeria. His fantastic installations and murals stand out for their vivid color and lively patterns.
