EDITORIAL

Η νέα αυτή κολεξιόν εκφράζεται ιδανικά από τη φράση EMBRACE YOUR NATURE (αποδέξου/αγκάλιασε/γίνε ένα με τη φύση σου, με αυτό που είσαι). Η οποία δεν είναι απλώς ένα εφεύρημα του marketing, αλλά μια στάση ζωής τόσο αισθητικά όσο και ουσιαστικά: δεν χρειάζεται να προσπαθείς να γίνεις κάτι άλλο από αυτό που είσαι. Αξίζει όμως να αναδείξεις τον πραγματικό σου εαυτό, τον καλύτερό σου εαυτό. Για εμένα η μόδα δεν είναι απλώς όμορφα σχέδια. Είναι μια στάση ζωής. Είναι η αποτύπωση της αισθητικής, της ομορφιάς, της κομψότητας, της άποψης και της θετικής στάσης σε μια σειρά από καθημερινά και απαραίτητα αντικείμενα: τα ρούχα, τα υποδήματα, τα αξεσουάρ. Ταυτόχρονα είναι η προσπάθεια να έρθω πιο κοντά με την κάθε γυναίκα, όπου και αν αυτή βρίσκεται στον κόσμο, να βρούμε σημεία ταύτισης και να πετύχουμε την ιδανική έκφραση της προσωπικότητάς μας, με κοινό παρονομαστή τη μόδα. Σε πάρα πολλά σημεία του πλανήτη μας η γυναίκα θεωρείται ακόμα κτήμα: του πατέρα, του άντρα, της οικογένειας. Στις ανεπτυγμένες δυτικές κοινωνίες υπάρχουν επίσης βαθιά ριζωμένες προκαταλήψεις στο υποσυνείδητο των συνανθρώπων μας κατά των γυναικών, που αναδύονται με τη μορφή βίας. Με τη σειρά ρούχων EMBRACE YOUR NATURE θέλω να δώσουμε ένα ακόμα μήνυμα σε όλες τις γυναίκες: Είστε μοναδικές, είστε δυνατές, αξίζετε το καλύτερο. Το καλύτερο αναζητάμε και εμείς στην Axel σε κάθε μας βήμα. Όπως αυτό που κάναμε πρόσφατα με το νέο μας κατάστημα στην οδό Μητροπόλεως 73, στη Θεσσαλονίκη. Μια νέα αισθητική προσέγγιση, με πιο γήινα και industrial χαρακτηριστικά, ήρθε να προστεθεί στην πάντα προσεγμένη διαρρύθμιση και στο φιλικό, άρτια καταρτισμένο προσωπικό των καταστημάτων μας. Σας ευχαριστώ, να είστε όλες και όλοι καλά και να απολαμβάνετε την κάθε στιγμή της ζωής σας.

Τόσο διαφορετικές, όσο ίδιες και δυνατές

ιανύουμε πλέον το δεύτερο χρόνο από τότε που η Covid-19 μπήκε στη ζωή μας και τα άλλαξε όλα: τις καθημερινές μας συνήθειες, τις σχέσεις μας, τον τρόπο λειτουργίας της αγοράς. Ταυτόχρονα μπήκε βαθιά στην ψυχή μας ο φόβος, η ανασφάλεια αλλά και η δυσπιστία, με τόσες αντικρουόμενες πραγματικές αλλά και κατασκευασμένες ειδήσεις που συνοδεύουν την πανδημία. Μετά από 9 περίπου χρόνια έκδοσης του Axelife, όλες και όλοι γνωρίζετε πλέον ότι με διακρίνει μια έμφυτη αισιοδοξία, πάθος για τη ζωή και θετική διάθεση. Ταυτόχρονα, η αγάπη για τη μόδα συνεχώς μεγαλώνει μέσα μου και μου δίνει τη δύναμη, παρά την αύξηση και των οικογενειακών μου υποχρεώσεων στο ίδιο διάστημα, να μεγαλώνω μαζί με την Axel και να μπορώ να γίνομαι ακόμα πιο δημιουργική και αποδοτική. Σε αυτό το νέο περιβάλλον επιλέγω να βλέπω και πάλι το ποτήρι μισογεμάτο, χαίρομαι που ακόμα εμπνέω τους εξαιρετικούς μου συνεργάτες για την κατάκτηση ακόμα μεγαλύτερων στόχων και παράλληλα πιστεύω ότι έστω με την κοινωνική αποστασιοποίηση, μπορούμε να βρούμε τρόπους να έρθουμε πιο κοντά, να εμπνεύσουμε και να εμπνευστούμε. Με αυτό το πνεύμα δημιουργήσαμε μια νέα σειρά ρούχων, που στόχο έχουν να αναδείξουν τα ιδιαίτερα χαρακτηριστικά κάθε γυναίκας, ασχέτως ηλικίας, χρώματος, φυλής ή πολιτικών και θρησκευτικών πεποιθήσεων. Η νέα μας κολεξιόν εμπνέεται από τη διαφορετικότητα, προσπαθεί να την προβάλλει και να την πλαισιώσει ιδανικά, αποτελώντας την έμπρακτη δήλωση ότι κάθε γυναίκα έχει θηλυκότητα αλλά και δύναμη να καταφέρει τα πάντα.

Both different and similar, but all strong

e are now in the second year since Covid-19 intruded our lives and changed everything: our daily habits, our relationships, the way the market works. At the same time, fear, insecurity and distrust sank deep into our souls, with so many conflicting real and fake news around the pandemic. After about 9 years of publishing Axelife, you all know now that I have an innate optimism, passion for life and positivity. At the same time, love for fashion is constantly growing inside me and gives me the strength, despite the increasing family obligations, to grow up along with Axel and be able to become even more creative and efficient. In this new environment I choose to see the glass half full again and I am glad that I still inspire my excellent partners to achieve even greater goals. I also believe that even in a context of social distancing, we can always find ways to get closer to each other, to inspire and be inspired. In this spirit, we have created a new line of clothes, which aim to highlight the special characteristics of every woman, regardless of age, color, race or political and religious beliefs. Our new collection not only is inspired by diversity but is also attempting to promote and support it in the most inspiring way, being the practical statement that every woman, beyond her fascinating, self-empowering feminine side, has also the power to achieve everything. This new collection is ideally expressed by the phrase EMBRACE YOUR NATURE (accept/ embrace/ become one with your nature, with what you are) – a motto that is not just a marketing invention, but a way of life both aesthetically and essentially. There is no need in

trying to become someone other than you. You need to bring out your real self, your best self. For me, fashion is not just beautiful designs. It is a way of life. It is the imprint of aesthetics, beauty, elegance, point of view and positive attitude on a collection of everyday necessities: clothes, shoes and accessories. It is also my own effort to get closer to every woman, wherever she is in the world, to find points we can relate to each other and to achieve the ideal expression of women’s personality under the same roof: fashion. In many parts of our planet, women are still considered the property of the father, the husband, the family. In developed western societies there are still deep-rooted prejudices in the subconscious of people against women, which emerge in the form of violence. With the EMBRACE YOUR NATURE clothing line I want to give one more message to all women: You are unique, you are strong, you deserve the best. In Axel, we are also going for the best in our every step. Like with our new store at 73 Mitropoleos Street, in Thessaloniki. The practical and beautiful design and the friendly, well-trained staff, as in all our stores, were complemented by a new aesthetic approach, with more earthy and industrial features, ready to welcome you in a fashion and styling experience. A visit to Lisbon cannot be a two-day getaway. Here you need to have time and mood for exploration, as the historical and modern sights of the city, its top cuisine as well as the options of daily getaways beyond the capital are endless. We will, of course, focus on the most important of these. The city’s most iconic landmark is the Belém Tower (Torrede Belém), a UNESCO World Heritage Site. It was built as a fortress in the middle of the Tagus River during the golden age of discovery, in the 16th century. Very close to the Belém Tower is the Jeronimos Monastery (Mosteirodos Jeronimos), from which Vasco da Gama began his long journey. A modern attraction, however, that is a reference to the “golden” era of the 16th century, is the Monument of the Discoveries (Padrao dos Descobrimentos) at the mouth of the Tagus River. A stop at the Estrela Basilica (Basilica da Estrela) will offer you great views over the city. Its Elevadorde Santa Justa elevator was built in 1899 to facilitate the communication between Baixa and Largo do Carmo.

Ως αποτέλεσμα, αν κάποιος δεν αναζητά θαλασσινές απολαύσεις, μπορεί χωρίς δεύτερη σκέψη να χαρεί την πόλη με ελάχιστο τουρισμό και λογικές τιμές διαμονής. Οι πτήσεις προς την Λισαβόνα είναι αρκετές τόσο από την Ελλάδα όσο και από κάθε σημείο της Ευρώπης, με πιο φθηνές αυτές με ανταπόκριση. In winter, the weather is mild, with no snowfall in most parts of the country. So, autumn and winter months are also a good time of the year to visit Lisbon, if you are not fan of summer getaways to the sea, but you want to enjoy the city with only a few tourists and reasonable accommodation prices.

There are many flights to Lisbon both from Greece and from every part of Europe, with transit flights being even cheaper. However, the capital of Portugal is also accessible by road. For the more adventurous, it can be combined with a road trip across the entire beautiful European Mediterranean coastline, especially if you start from Greece, as long as you have several days and a hefty budget to spend for the extra travel and accommodation expenses on the road.

This 19th century market was originally called Mercado da Ribeira Nova. In Rossio Square, in the city center, you can see the tall statue of King Peter and start off your walk on the main pedestrian street, which ends at the Arcoda Rua Augusta, a monument of the city’s rebirth after the catastrophic earthquake of 1755. From the Arch head all the way down to the city’s most famous square, the Praça do Comércio on the Tagus River, which is one of the largest squares you have ever seen. The famous yellow trams of the city depart from this square and take you to the Belém Tower and the Basilica of Estrella. In the Alfama district you can see the oldest cathedral in Lisbon called Sé, as well as the castle of St. George's Castle (Castelo de Sao Jorge) with unobstructed views of the city, the Tagus River and the Atlantic Ocean. If you want to visit the huge statue of King Christ (Monument Christo Rei) on the hill of the Almada district, you have two options: by road across the huge and impressive 25 April bridge, or by boat through the bay created by the mouth of Tagus River. Although it has no historical value, it should be definitely included in your checklist. The Lisbon Aquarium (Oceanario de Lisboa), in the national park of the city (Parque das Naçoes), is the second largest in the world and one of the most interesting, with 8,000 different marine species. Don’t miss out! About thirty kilometers from Lisbon and around half an hour in travel time, you arrive at the city of Sintra, one of the most important attractions in the whole of Portugal. A visit to the Park and National Palace of Pena (Palacio Nacional da Pena), a fairytale architectural jewel, is highly recommended. At a close distance from Sintra, you reach the westernmost point of mainland Europe, the famous Cape Cabo da Roca, with beautiful sunsets and noisy Atlantic waves breaking on the steep cliffs.

hessaloniki welcomes another one brand-new Axel store at the heart of the city, at 73, Mitropoleos Street. The new Axel sale point is the old Axel store at Tsimiski Street that has been transferred into a new, beautifully designed, spacious and welcoming showroom, with the aim of becoming an attraction for every woman. Industrial design, light pastel colors and modern aesthetics dominate the space and highlight the wonderful clothing, bags, shoes and accessories collections in the most perfect way. After a few months of relationship, the couple married on Christmas Eve 1990 and adopted two children, Bella and Connor. The two have joined Scientology, like their father. Nicole Kidman and Tom Cruise lived together for over 10 years. In 1999 they met again on screen in the controversial (and last) Stanley Kubrick’s film “Eyes Wide Shut”.

Από Αθήνα, θα ακολουθήσετε την εξαιρετικά ασφαλή και γρήγορη Ιόνια οδό με κατεύθυνση προς Άρτα. Μόλις φτάσετε στην πόλη και περάσετε την παλιά γέφυρα, το ιστορικό γεφύρι της Άρτας, θα στρίψετε δεξιά ακολουθώντας τον επαρχιακό δρόμο Άρτας – Ιωαννίνων. Αν έρχεστε από βόρεια, θα φτάσετε στα Ιωάννινα προφανώς από την Εγνατία οδό και από εκεί θα κινηθείτε προς Καλέντζι. Αεροπορική σύνδεση υπάρχει μόνο με την πόλη των Ιωαννίνων. Από αυτή, οδικώς, θα χρειαστείτε περίπου 1 ώρα για να φτάσετε στην περιοχή. Πρώτος προορισμός του ταξιδιού και στις δύο περιπτώσεις, είναι το ιστορικό γεφύρι της Πλάκας. Το μεγαλύτερο μονότοξο γεφύρι των Βαλκανίων, που κατέρρευσε το 2015, έχει αναστηλωθεί και περιμένει να το περπατήσετε. Το ποτάμι του Άραχθου που περνά από κάτω του και χωρίζει τον ορεινό όγκο των Τζουμέρκων από το Ξηροβούνι, αποτελεί ένα εξαιρετικό σημείο ξεκούρασης αλλά και αφετηρία πολλών outdoor δραστηριοτήτων. Από εκεί, η επόμενη στάση σας μπορεί να είναι στα Πράμαντα.

If you start from Athens, take the safe and fast Ionian Road to Arta. Once you reach the city and cross the historic Arta’s bridge, turn right on the rural road of Arta-Ioannina. If you are coming from northern Greece, take Egnatia Road to Ioannina and then continue to Kalentzi. There are flights only to the city of Ioannina. From there, you need about 1 hour by car to get to Tzoumerka. The first stop either way must be the historic bridge of Plaka. This is the largest single-arch stone bridge in the Balkans, which collapsed in 2015, but has been fully restored and awaits you to walk over it. The river of Arachthos that flows under the bridge and separates the mountain range of Tzoumerka from Xirovouni, is an excellent resting place but also the starting point of many outdoor activities. Next stop is Pramanta.

Στα Πράμαντα υπάρχουν αρκετά πολύ καλά ξενοδοχεία και καταλύματα, τα οποία ωστόσο δεν είναι ικανά να δώσουν το χαρακτήρα ενός mainstream τουριστικού προορισμού. Ευτυχώς. Τα Πράμαντα μπορούν κάλλιστα να αποτελέσουν το ορμητήριο για τις επισκέψεις στους προορισμούς της περιοχής. Εδώ αξίζει να δείτε την εκκλησία της Αγίας Παρασκευής και τη βρύση της Αράπης που αναβλύζει, όπως και εκατοντάδες άλλες παντού στα Τζουμέρκα, δροσερό νερό. Μια βόλτα στο κοντινό χωριό Μελισσουργοί αποτελεί must, ενώ δεν θα πρέπει να παραλείψετε μια επίσκεψη στο σπήλαιο της Ανεμότρυπας, το οποίο είναι από τα ομορφότερα στην Ελλάδα. Με αφετηρία τα Πράμαντα και μετά από μια σχετικά δύσκολη διαδρομή, στο χωριό Καταρράκτης θα αντικρίσετε ένα από τα πλέον εντυπωσιακά θεάματα. Όχι έναν, όπως υποδηλώνει η ονομασία του οικισμού, αλλά δύο καταρράκτες να ξεχύνονται από ύψος 90 μέτρων και να φτάνουν σχεδόν εμπρός σας. Αν αντέχουν τα πόδια σας, οι πεζοπορικές διαδρομές στην περιοχή είναι ανεξάντλητες και σας οδηγούν σε εντυπωσιακά σημεία, όπου η φύση κόβει την ανάσα. Εντυπωσιακή σε αισθητική αλλά και χωροταξία είναι η μονή Κηπίνας, στο δρόμο προς τα μοναδικά στην Ελλάδα χωριά Συρράκο και Καλαρρύτες. Αν δεν προσέξεις, μπορεί πολύ εύκολα να την προσπεράσεις, καθώς παρότι βρίσκεται πάνω στο δρόμο, η μονή είναι μέρος ενός κάθετου βράχου. Χτίστηκε το 1212 και από τότε δέχεται τους επισκέπτες που μένουν έκθαμβοι από τη θέση και τη μοναδικότητά της.

Pramanta is the largest settlement in the area, offering breathtaking views towards the top of Strongoula. There are many very good hotels and guesthouses, which however do not provide the features of a mainstream tourist destination. Luckily. Pramanta can well be the starting point for visits to other settlements and natural attractions in the area. It is worth paying a visit to the church of Agia Paraskevi and the “Arapis fountain” (“Vrysi tou Arapi”), where you can quench your thirst with fresh running water, just like in hundreds of other fountains everywhere in Tzoumerka. A walk in the nearby traditional village and mountain refuge of Melissourgoi is a must. Don’t miss a visit to Anemotrypa cave, one of the most beautiful, impressive, and oldest caves in Greece. Starting from Pramanta and after a relatively difficult route, you reach the village of Katarraktis (meaning waterfall) where you will come in view of one of the most amazing spectacles. Not one, as the name of the settlement suggests, but two waterfalls, the famous twin waterfalls, drop from a height of 90 meters almost to your feet. If you are a hiking enthusiast or just want to explore the surrounding natural richness, the area has innumerable hiking trails that lead to spots of striking beauty. Impressive in aesthetics and spatial planning is the monastery of Kipina, on the road to the villages of Syrrako and Kalarrytes that stand out for the unique rural Greek charm. If you do not pay attention, you can easily pass it by, as although it views over the road, it seems to be a part of a vertical rock. It was built in 1212 and since then it welcomes visitors who are dazzled by its location and uniqueness.

κων του χωριού είναι πανταχού παρών, αναπτύχθηκε κυρίως κατά το 18ο αιώνα και εκφράζεται με αρχιτεκτονικά αριστουργήματα, που προκαλεί απορία πως δημιουργήθηκαν σε αυτόν τον δυσπρόσιτο, ορεινό όγκο, σε υψόμετρο 1.150 μέτρων. Σήμερα, το Συρράκο σφύζει από ζωή μόνο τους καλοκαιρινούς μήνες, κατά τους οποίους συρρέουν εδώ οι άλλοτε χιλιάδες κάτοικοί του. Αντίστοιχη είναι η εικόνα και στους πανέμορφους Καλαρρύτες, που ξεκίνησαν να χτίζονται τον 14ο αιώνα. Τους επόμενους αιώνες και έως την παρακμή του κατά τον 19ο αιώνα, το χωριό ήταν εμπορικό κέντρο με σημαντική βιοτεχνική παραγωγή υφαντών, καθώς επίσης ασημένιων και χρυσών κοσμημάτων. Πολλές εύπορες οικογένειες της περιοχής όπως αυτή του Βούλγαρη, που στη συνέχεια μέσω παραρτημάτων στην Ιταλία ίδρυσε τον πασίγνωστο οίκο Bulgari, συνέθεσαν το αρχιτεκτονικό θαύμα του χωριού αυτού. Η μεγάλη ακμή τόσο στο Συρράκο όσο και στους Καλαρρύτες, προέκυψε από το γεγονός ότι την εποχή της ακμής τους οι μεγάλοι εμπορικοί δρόμοι περνούσαν από τις κορυφές των βουνών, δηλαδή από τα πιο σύντομα σημεία που συνέδεαν την Ευρώπη με τις ελληνικές περιοχές της τότε οθωμανικής αυτοκρατορίας. Έτσι, ο πληθυσμός των δύο χωριών, που στις αρχές του 18ου αιώνα έφτανε τις 3.000 άτομα στο καθένα, είχε αφήσει τις γεωργικές και κτηνοτροφικές εργασίες και είχε ασχοληθεί πολύ ενεργά με το εμπόριο, που απλωνόταν σε όλη την Ευρώπη.

Το κυρίαρχο στοιχείο στη γαστρονομία της περιοχής είναι φυσικά το κρέας, κυρίως αρνί, κατσίκι, ζυγούρι, γίδα και χοιρινό. Εντυπωσιακή είναι η ποιότητα της πρώτης ύλης, καθώς τα κρέατα είναι ντόπια και οι κάτοικοι μεγάλοι μάστορες στη διαχείρισή τους. Όπως σε ολόκληρη την Ήπειρο, έτσι και εδώ την τιμητική τους έχουν οι πίτες, όλες χειροποίητες και πεντανόστιμες, τα ντόπια τυριά και τα λουκάνικα. Τέλος το τσίπουρο -χωρίς γλυκάνισο φυσικά- είναι κορυφαίας ποιότητας και από σπιτικά αποστακτήρια. Στην περιοχή επίσης ευδοκιμεί ένα πολύ ανθεκτικό είδος σταφυλιού, η ζαμπέλα, που δίνει ένα εκπληκτικό κόκκινο κρασί. Αν το βρείτε φρέσκο, δύσκολα θα το ξεχωρίσετε από... βυσσινάδα. Από τα γευστικά hot spot της περιοχής προτείνουμε τη χασαποταβέρνα του Μπούντζα στην πλατεία στα Πράμαντα, την ταβέρνα του Παππά στου Μελισσουργούς, τον «Άκανθο» του Ναπολέοντα Ζάγκλη στους Καλαρρύτες και την ταβέρνα του Γαλάνη στο Συρράκο. Εξαιρετικές επίσης κουζίνες έχουν και οι ξενώνες που αναφέρθηκαν προηγουμένως.

Στην περιοχή των Τζουμέρκων δεν θα βρείτε χιονοδρομικά κέντρα, ωστόσο αυτά που μπορείτε να κάνετε στη φύση είναι ανεξάντλητα. Αν ο καιρός το επιτρέπει, οι πεζοπορικές διαδρομές είναι πάρα πολλές και κλιμακούμενης δυσκολίας. Επίσης, στο γεφύρι της Πλάκας θα βρείτε όλες τις πληροφορίες που χρειάζεστε για δραστηριότητες στο ποτάμι του Άραχθου, όπως rafting. Ιδιαίτερο ενδιαφέρον έχει η επίσκεψη στο δασικό χωριό της περιοχής, το οποίο δυστυχώς δεν λειτουργεί σήμερα ως ξενώνας, ενώ υπέροχα είναι και τα υπόλοιπα χωριά όπως η Κρυοπηγή, τα Άγναντα, οι Κτιστάδες και οι Μελισσουργοί, τα οποία σας προτείνουμε να μην προσπεράσετε. Επιπρόσθετα μπορείτε να εξασκηθείτε στην ιππασία, στην ορεινή ποδηλασία, στην αναρρίχηση, τη σκοποβολή και την τοξοβολία. AXELIFE

T r a d itional c uisine The dominant element in the local gastronomy is of course the meat, mainly lamb, kid, teg, goat and pork. The quality of the raw material is impressive, as the animals breed in the area and the locals are great craftsmen in livestock breeding. As in the entire Epirus, the pies, all handmade and delicious, the local cheese varieties and the sausages have their special place on the table. Finally, the tsipouro -without anise of course – is homemade from top-quality distilleries. In the area of the plain, a very hardy, aromatic variety of grapes thrives under the name “Zambela”, which gives an amazing red wine. If you try it fresh, it will be difficult to distinguish it from… sour cherry juice. Some of the delicious local hot spots recommended are the meat tavern of Bountza in the Pramanta square, the tavern of Pappas in Melissourgoi, the “Akanthos” of Napoleon Zaglis in Kalarrytes and the tavern of Galanis in Syrrako. The guesthouses mentioned below also have excellent dishes.

It was mainly developed during the 18th century and is expressed in architectural masterpieces, which raise the question of how they were even created in this inaccessible, mountainous volume, at an altitude of 1,150 meters. Thus, the population of the two villages, which at the beginning of the 18th century reached 3,000 people each, had left agriculture and livestock to be actively involved in trade, which spread throughout Europe.

A c ti v ities in natu r e In the area of Tzoumerka, although a mountain range, there are no ski resorts, but the options of nature activities are inexhaustible. Weather permitting, hiking trails are plentiful and of varying difficulty. Also, at the bridge of Plaka you will find all the information you need for activities on the Arachthos river, such as rafting. A visit to the forest village of the area, which unfortunately has stopped working as a guesthouse, is of particular interest, while there are many other wonderful villages such as Kriopigi, Agnanta, Ktistades and Melissourgoi, you should not miss. Σε ποια δημιουργική φάση σας πετυχαίνουμε αυτήν την περίοδο; Μετά από ένα άκρως δημιουργικό καλοκαίρι, είμαστε έτοιμοι να ξεκινήσουμε τα νέα projects που έχουμε αναλάβει για το φθινόπωρο μέσω της συμβουλευτικής μας εταιρείας Consulting Horeca, τόσο στην Ελλάδα όσο και στο εξωτερικό. Παράλληλα, δε σταματάνε και οι πειραματισμοί για τα μενού των εστιατορίων μας στο Λονδίνο, OPSO, INO Gastrobar και Pittabun. Το OPSO, το πρώτο μας εστιατόριο στο Λονδίνο, είναι ένα feel-good εστιατόριο με μοναδικό vibe και ατμόσφαιρα στην καρδιά της Marylebone και αποτελεί μία μοντέρνα εκδοχή της ελληνικής κουζίνας και τα πιάτα μας είναι εμπνευσμένα κυρίως από παραδοσιακές γεύσεις, που αποδίδονται με μοντέρνες τεχνικές. Το νέο μας επιχειρηματικό εγχείρημα, το INO Gastrobar, βρίσκεται στην καρδιά του Soho και σερβίρει μικρά πιάτα κατά κύριο λόγο μαγειρεμένα πάνω σε κάρβουνο, συνοδευόμενα από ιδιαίτερα ελληνικά κρασιά και μπύρες από μικρές ζυθοποιίες της χώρας μας. Είναι ένα counter εστιατόριο και ο κόσμος που επιλέγει να καθίσει στο μπαρ απολαμβάνει όλη τη διαδικασία μαγειρέματος και στησίματος των πιάτων κσι σερβίρεται απευθείας από τους chef. Τέλος, πριν από λίγες εβδομάδες, ανοίξαμε στο Hawley Wharf στο Camden Town και το νέο χώρο του Pittabun, το οποίο αποτελεί το street food concept του ομίλου μας από το 2018. Το βασικό μας υλικό εδώ είναι η πίτα, που είναι χειροποίητη και η συνταγή της δημιουργήθηκε αποκλειστικά για το εστιατόριό μας. Σερβίρουμε πίτες σε στιλ pocket, open και burger, και τις συνδυάζουμε με φρέσκα λαχανικά, χειροποίητες σάλτσες και κρέατα που καραμελώνουν στη ρομπάτα και παίρνουν την καπνιστή γεύση του κάρβουνου! hat are you up to these days? After a highly creative summer, we are ready to start the new projects we have taken for the fall through our consulting company Consulting Horeca, both in Greece and abroad. Also, experimenting for the menus of our three restaurants in London, OPSO, INO Gastrobar and PittaBun, is an ongoing process. OPSO, our first restaurant in London, is a feel-good restaurant with a unique social vibe and atmosphere right at the heart of Marylebone. It is a modern version of comfort Greek cuisine, and our dishes are mainly inspired by traditional flavors, recreated with modern techniques. Our new business venture, INO Gastrobar, is located at the heart of Soho and serves small dishes cooked mainly on charcoal grill and paired with special Greek wines and beers from small breweries of our country. It is a counter restaurant and those who choose to sit at the bar enjoy the whole process of cooking and food styling and the dishes are served directly by the chefs. And then, finally, a few weeks ago, we opened our new PittaBun in Hawley Wharf in Camden Town. It’s been a street food concept of our group since 2018. Our basic material here is the pie. They are all homemade and the recipe has been created exclusively for our restaurant. We serve pies in pocket, open and burger style, and we combine them with fresh vegetables, homemade sauces and meat that caramelizes on the robata and get the smoky taste of charcoal! Over the last summer we traveled to a number of Greek islands and discovered many small local producers with excellent products, such as halloumi, louza, apaki, singlino, caper and many more, which we look forward to including in our new dishes.

Οι πειραματισμοί έχουν φυσικά ήδη ξεκινήσει στην κουζίνα του σπιτιού μου που μαγειρεύω για τους φίλους μου στο Instagram μέσω του προσωπικού μου λογαριασμού @georgianna_hiliadaki. Ποια πιστεύετε ότι είναι η πιο δυνατή τάση της νέας σεζόν και πώς την υιοθετείτε εσείς; Τα τελευταία χρόνια παρατηρούμε μια στροφή προς την υγιεινή διατροφή και την ευεξία. Καλαίσθητα και νόστιμα πιάτα φτιαγμένα με λιγότερα λίπη, υδατάνθρακες και σάκχαρα, βασισμένα περισσότερο σε βιολογικά εποχιακά προϊόντα και σούπερ τροφές. Υπάρχει επίσης ένα παγκόσμιο κίνημα «zero waste» που εξαπλώνεται σε όλο το φάσμα της παραγωγής, από τη βαριά βιομηχανία και τον τουρισμό έως τις κουζίνες των εστιατορίων και των σπιτιών μας. Μια προσπάθεια να μειωθούν τα απόβλητα με την κατάλληλη διαχείριση των πρώτων υλών, η οποία θα συμβάλει στην προστασία του περιβάλλοντος και θα ωφελήσει ταυτόχρονα την οικονομία. Μέσω των μενού που επιμελούμαστε προσπαθούμε να μαγειρεύουμε νόστιμα και υγιεινά πιάτα με όσο το δυνατόν μικρότερη σπατάλη υλικών. Αντίπαρος, Λονδίνο, Αθήνα… Σε ποιο κοινό άξονα συναντιούνται τα γαστρονομικά μονοπάτια σας; Στην ελληνική κουζίνα, την ποιότητα των υλικών και τη νοστιμιά των πιάτων. Σε όλα μας τα εστιατόρια και φυσικά και σε όσα επιμελούμαστε το μενού, κύριο μέλημά μας είναι να αναδείξουμε τη γαστρονομική κληρονομιά της χώρας μας και την πληθώρα των προϊόντων της ελληνικής γης. Στα εστιατόριά μας στο Λονδίνο, OPSO, Pittabun και INO Gastrobar, τα μενού είναι βασισμένα κυρίως σε μοναδικά υλικά που εισάγουμε από όλη την Ελλάδα με στόχο να γίνουν όσο το δυνατόν πιο γνωστοί οι γευστικοί θησαυροί της χώρας μας. Ο Νίκος κι εγώ αγαπάμε πολύ την ελληνική κουζίνα και θέλουμε να φτιάχνουμε νόστιμα πιάτα που δημιουργούν συναισθήματα και αναμνήσεις. Στην Αθήνα φτιάξαμε κάποια πιάτα για το Zurbaran, ακολουθώντας βέβαια, τη φιλοσοφία του εστιατορίου, τα οποία ενσωματώθηκαν στο μενού και νομίζω βγάλαμε ένα πολύ νόστιμο αποτέλεσμα που έχει ήδη αγαπηθεί από τον κόσμο! Το Zurbaran είναι ένα all day εστιατόριο που μπορεί κανείς να απολαύσει αγαπημένα πιάτα από τη μεσογειακή αλλά και τη διεθνή κουζίνα παρέα με ένα δροσερό κοκτέιλ ή ένα ποτήρι κρασί. Το concept του «Nostalgia» σημαίνει καλομαγειρεμένα κλασικά, comfort πιάτα που όλοι αγαπάμε. Στο Beach House στην Αντίπαρο αναλάβαμε φέτος την κουζίνα του εστιατορίου μαζί με τον σεφ Περικλή Κοσκινά και δημιουργήσαμε ένα άκρως καλοκαιρινό μενού βασισμένο στο concept «Raw & Fire», δηλαδή πιάτα ωμά, όπως ceviche γαρίδας ή αβγά αχινού με καπνιστό γιαούρτι, και πιάτα μαγειρεμένα στα κάρβουνα, όπως διάφορες κοπές κρεάτων που λιώνουν στο στόμα. Τι σημαίνει για εσάς να είστε η μοναδική Ελληνίδα σεφ με δύο αστέρια Michelin; Η βράβευση με δύο αστέρια Michelin είναι σίγουρα πολύ μεγάλη καταξίωση και αναγνώριση για έναν σεφ. Σίγουρα δεν ήταν εύκολο να το καταφέρουμε και χρειάστηκε πολλή δουλειά, μεράκι και «θυσίες». Οι απαιτήσεις είναι μεγάλες, ειδικά αν είσαι σεφ και ιδιοκτήτης εστιατορίου παράλληλα. Με το Νίκο και την αδερφή μου την Αργυρώ ήμασταν ταγμένοι στο Funky Gourmet. Δεν θα ξεχάσουμε ποτέ τη μέρα που μας ανακοινώθηκε ότι πήραμε το δεύτερο αστέρι. Αυτή η αναγνώριση μας βοήθησε να φτιάξουμε μια πολύ δυνατή ομάδα, η οποία συνέβαλε σημαντικά στην περαιτέρω επιτυχία μας. Η μεγαλύτερη, όμως, καταξίωση και χαρά έρχεται όταν βλέπεις τα χαμόγελα στα πρόσωπα των καλεσμένων σου. Στόχος μας ήταν και είναι να καταφέρουμε να αφήσουμε κάτι πίσω μας, να εμπνεύσουμε άλλους σεφ και να δημιουργήσουμε συναισθήματα με το φαγητό μας. Χαίρομαι πάρα πολύ όταν συναντάμε ανθρώπους που θυμούνται τα πιάτα μας και έχουν περάσει όμορφες στιγμές σε κάποιο από τα εστιατόριά μας. Η γαστρονομία είναι ανδροκρατούμενος χώρος; Νιώσατε ποτέ ότι αδικείστε λόγω του φύλου σας; Οι γυναίκες που εργάζονται στον χώρο της γαστρονομίας, συγκριτικά με τους άνδρες αριθμητικά είναι λιγότερες. Σε οποιοδήποτε κλάδο οι γυναίκες σε θέσεις καριέρας είναι λιγότερες από τους άντρες κυρίως λόγω οικογένειας. Στο δικό μας επάγγελμα ίσως αυτό το φαινόμενο εντείνεται λόγω του δύσκολου και ανάποδου ωραρίου. Προσωπικά, δεν έχω νιώσει ποτέ αδικία λόγω του φύλου μου. Θεωρώ ότι όποιος εργάζεται σκληρά, με όρεξη, πάθος και είναι καλός στην δουλειά του κερδίζει τον σεβασμό και την αποδοχή των συναδέλφων του ανεξαρτήτως φύλου. Σήμερα, όλο και περισσότερες γυναίκες αποφασίζουν να ακολουθήσουν αυτό το επάγγελμα και μάλιστα πολλές από αυτές συμπεριλαμβάνονται σε λίστες με τους καλύτερους σεφ παγκοσμίως, απόδειξη πως η γαστρονομία δεν έχει φύλο.

Of course, experiments have already started in my home kitchen where I cook for my friends on Instagram through my personal account @georgianna_hiliadaki. What do you think is the strongest trend of the new season and how have you adopted it in your menus? In recent years we have seen a shift towards healthy eating and wellness; elegant and delicious dishes made with less fat, carbohydrates and sugar, based more on organic seasonal products and super foods. There is also a global “zero waste” movement that spans the entire spectrum of production, from heavy industry and tourism to the kitchens of our restaurants and homes. An effort is being made to reduce waste with proper management of raw materials, which will contribute to the protection of the environment and at the same time benefit the economy. When setting up our menus we try to include delicious and healthy dishes with as little waste of ingredients as possible. Antiparos, London, Athens… Where do your gastronomic paths cross?

Georgianna Hiliadaki is the only female Greek

chef awarded with two Michelin stars for the Athenian Funky Gourmet, the restaurant she opened with her husband, Nikos Roussos and her sister, Argyro Hiliadaki, which is getting the highest ratings through all the years of operation.

Now, she and her team have spread their wings in London, with three fantastic restaurants, while they continue to impress the lovers of food with various creative projects that deserve our attention.

In the Greek cuisine, the quality of the ingredients and the taste of the dishes. In all our own restaurants and the restaurants, for which we set up the menus, our main concern is to highlight the gastronomic heritage of our country and the variety of local Greek products. In our restaurants in London, OPSO, Pittabun and INO Gastrobar, the menus are based mainly on unique ingredients that we import from all over Greece in order to make the delicious treasures of our country as famous as possible. Nikos and I love Greek cuisine and we want to create delicious dishes that evoke emotions or memories of experiences. In Athens we made some dishes for Zurbaran – following, of course, the philosophy of the restaurant – which were incorporated in the menu, and I think we got a very tasty result that people have loved! Zurbaran is an all-day restaurant where one can enjoy favorite dishes from the Mediterranean and international cuisine with a refreshing cocktail or a glass of wine. The “Nostalgia” concept means well-cooked, classic, comfort dishes that we all love. At Beach House in Antiparos this year we took over the restaurant kitchen with chef Periklis Koskinas and created a very summery menu based on the concept “Raw & Fire”, meaning raw dishes such as shrimp ceviche or sea urchin eggs with smoked yogurt, and dishes cooked on the grill, such as various cuts of meat that melt in your mouth. What does it mean for you to be the only Greek female chef with two Michelin stars? The two Michelin stars award is definitely a great recognition for a chef. It was certainly not an easy achievement; it took a lot of work, passion and “sacrifice”. The demands are high, especially if you are a chef and restaurant owner at the same time. Nikos, my sister Argyro and I, we were all devoted to Funky Gourmet. We will never forget the day we were told that we got the second star. This recognition helped us build a strong team, which contributed significantly to our further success. But the greatest recognition and joy comes when you see the smiles on the faces of your guests. Our goal has always been to be able to leave something behind, to inspire other chefs and to create dishes that “stir” up feelings. I am very happy when we meet people who remember our dishes and have had a good time in one of our restaurants.

COOKING Ποια χώρα στον κόσμο θεωρείται γαστρονομικό παράδεισο -πέρα από την Ελλάδα; Δεν μπορώ να διαλέξω… Είμαι ανάμεσα στην Ισπανία και την Ιαπωνία. Στην Ισπανία υπάρχουν άπειρα μικρά και νόστιμα εστιατόρια και είναι μια χώρα που έχει αναδείξει κάποιους από τους σημαντικότερους σεφ όλων των εποχών, όπως τον πρωτοπόρο και πατέρα της σύγχρονης γαστρονομίας, Ferran Adria, δίπλα στον οποίο είχα την τιμή να μαθητεύσω τα πρώτα χρόνια της καριέρας μου. Η Ιαπωνία από την άλλη, έχει μια από τις πιο ενδιαφέρουσες και ισορροπημένες κουζίνες του κόσμου. Θεωρείται ένας γευστικός παράδεισος και ένα ταξίδι εκεί σίγουρα ανοίγει νέους γαστρονομικούς ορίζοντες, ενώ μάλιστα τα τελευταία χρόνια τα εστιατόριά της έχουν ξεπεράσει σε αστέρια Michelin μέχρι και τη Γαλλία, που για Γεωργιάννα Χειλιαδάκη χρόνια κρατούσε την πρωτιά. και Νίκος Ρούσοος. Φυσικά, δεν θα μπορούσα να μην αναφέρω και την Αγγλία και συγκεκριμένα το Λονδίνο που είναι μια πόλη πολυπολιτισμική με πολλές επιλογές και κουζίνες κυριολεκτικά από όλη την υφήλιο. Είναι να σαν να πηγαίνεις σε μία πόλη και παράλληλα να ταξιδεύεις σε όλο τον κόσμο! Is gastronomy a male-dominated industry? Have you ever felt that you are treated unfairly because of your gender? There are fewer women working in gastronomy compared to men. In any industry, women in career positions are fewer than men mainly because of the family duties. In our profession, perhaps this phenomenon is even more visible due to the long and difficult working hours till late at night. Personally, I have never been treated unfairly because of my gender. I think that anyone who works hard, has passion for and is good at his or her job can win the respect and acceptance of colleagues, regardless of gender. Today, more and more women decide to pursue this profession and many of them are included in the lists of the best chefs in the world – proof that gastronomy has no gender. Which country in the world is considered a gastronomic heaven – apart from Greece? It’s hard to choose… I think Spain and Japan. There are countless small and delicious restaurants in Spain, and it is a country that gave us some of the most important chefs of all time, such as the pioneer and father of modern gastronomy, Ferran Adrià, whom I had the honor to work with and learn from during the first years of my career. Japan, on the other hand, has one of the most interesting and balanced cuisines in the world. It is considered a culinary paradise and a trip there certainly opens new gastronomic horizons, while in recent years its restaurants have surpassed in Michelin stars even France, which for years held the lead. Of course, I could not fail to mention England and specifically London which is a multicultural city with many options and cuisines literally from all over the world. It is like going to a city and at the same time traveling around the world! This was one of the reasons we chose to open there our three restaurants OPSO, PittaBun and INO Gastrobar, and we are very happy about it! AXELIFE

Διαδικασία 1. Μουλιάζουμε, για λίγα λεπτά, το ψωμί σε νερό. Στραγγίζουμε το νερό από το ψωμί όσο καλύτερα μπορούμε. 2. Βάζουμε όλα τα υλικά στο Thermomix και αυξάνουμε σταδιακά την ταχύτητα μέχρι το 7,5. Χτυπάμε μέχρι να φτάσει τους 45°C και το μείγμα να γίνει παχύ και κρεμώδες. 3. Το κρυώνουμε στο chiller ή σε μπολ με νερό και πάγο. 4. Μπορούμε να το κρατήσουμε στο ψυγείο έως 3 μέρες.

165ml water / 90gr rye bread, crust removed / 200ml sunflower oil / 30gr tarama eggs / 23ml olive oil / 6ml lemon juice, strained / 4gr fine salt / 1gr garlic clove / zest from half a lemon

Διαδικασία 1. Μεταφέρουμε την ταραμοσαλάτα σε μια σακούλα ζαχαροπλαστικής με μύτη και σερβίρουμε περιμετρικά στο πιάτο, αφήνοντας ένα μικρό στρογγυλό κενό στη μέση. 2. Σερβίρουμε τον κρόκο στο κενό που αφήσαμε και τον πασπαλίζουμε με το αλάτι και το σχοινόπρασο. Γαρνίρουμε τον ταραμά με τα υπόλοιπα υλικά. 3. Αν θέλουμε μπορούμε να σερβίρουμε με πίτα, ψημένη στο γκριλ.

Preparation 1. Soak the bread in water for a few minutes. Then squeeze well to remove the excess moisture. 2. Put all the ingredients in the Thermomix and gradually raise the speed up to 7.5. Blend until the mixture reaches 45°C degrees and becomes creamy. 3. Leave in the chiller or in a bowl with water and ice to cool. 4. This will keep in the refrigerator for 3 days.

COOKING Για την κρέμα βανίλιας Υλ ι κ ά 125γρ γάλα / 12γρ εκχύλισμα βανίλιας 40γρ κρόκοι αβγού / 10γρ ζάχαρη / 10γρ ζελατίνες, που τις έχουμε μαλακώσει σε κρύο νερό και τις έχουμε στραγγίξει / 500γρ κρέμα γάλακτος πλήρης / 300γρ σοκολάτα λευκή Διαδικασία 1. Σε ένα κατσαρολάκι προσθέτουμε το γάλα και τη βανίλια και φέρνουμε σε βρασμό. Εκτός φωτιάς καλύπτουμε με μεμβράνη και το αφήνουμε για 20λεπτά σκεπασμένο να πάρει άρωμα. 2. Σε ένα μπολ χτυπάμε με μίξερ χειρός τα αβγά με τη ζάχαρη μέχρι να αφρατέψουν. 3. Μόλις αρωματιστεί το γάλα, αφαιρούμε τη μεμβράνη και το προσθέτουμε στο μείγμα αβγού-ζάχαρης. 4. Μεταφέρουμε σε ένα τηγάνι και μαγειρεύουμε σε χαμηλή φωτιά, ανακατεύοντας με μία σπάτουλα μέχρι η κρέμα να φτάσει τους 82°C. 5. Εκτός φωτιάς, προσθέτουμε τις ζελατίνες στο μείγμα και ανακατεύουμε μέχρι να διαλυθούν. 6. Τοποθετούμε τη σοκολάτα σε ένα μπολ, σουρώνουμε το ζεστό μείγμα πάνω από τη σοκολάτα και ανακατεύουμε καλά μέχρι να διαλυθεί η σοκολάτα. 7. Προσθέτουμε την κρέμα γάλακτος και χτυπάμε με ένα μίξερ χειρός μέχρι να γυαλίσει. 8. Σουρώνουμε, σκεπάζουμε με μεμβράνη που να εφάπτεται στην επιφάνεια και μεταφέρουμε στο ψυγείο για ένα βράδυ. 9. Μεταφέρουμε σε σακούλα ζαχαροπλαστικής.

Προσθέτουμε το νερό, το γάλα, το βούτυρο και τη ζάχαρη σε ένα τηγάνι και φέρνουμε σε βρασμό. 2. Προσθέτουμε το αλεύρι και σε μέτρια φωτιά ανακατεύουμε με μια σπάτουλα μέχρι η ζύμη να ξεκολλάει από τα τοιχώματα του τηγανιού. 3. Μεταφέρουμε τη ζύμη στον κάδο του μίξερ, ρίχνουμε ένα ένα τα αβγά και χτυπάμε με τo φτερό. 4. Μεταφέρουμε τη ζύμη σε σακούλες ζαχαροπλαστικής με μύτη 10mm και σχηματίζουμε μπαλίτσες 8γρ σε αντικολλητικό ταψί/λαδόκολλα ή φύλλο σιλικόνης. 5. Ψήνουμε σε ξηρό φούρνο στους 180°C για 13 λεπτά, μέχρι να πάρουν χρυσαφένιο χρώμα. 6. Τα βάζουμε σε μια σχάρα να κρυώσουν καλά.

Προσθέτουμε όλα τα υλικά σε ένα ταψί, που του έχουμε στρώσει λαδόκολλα. 2. Ψήνουμε στους 160°C για 5 λεπτά. Ανακατεύουμε και ψήνουμε λίγο ακόμα αν χρειάζεται. 3. Τα αφήνουμε σε μία σχάρα να κρυώσουν.

100ml water / 100ml milk / 80gr butter / 10gr sugar / 125gr all-purpose flour / 2gr fine salt / 200gr eggs

Διαδικασία 1. Γεμίζουμε το εσωτερικό των choux με την κρέμα. Κάθε choux θα έχει περίπου 3γρ κρέμα. 2. Την υπόλοιπη κρέμα, περίπου 50γρ, την απλώνουμε στον πάτο ενός πιάτου. 3. Πάνω από την κρέμα, απλώνουμε τα αμύγδαλα και την μαρμελάδα. 4. Τοποθετούμε τα choux, στο πιάτο περιμετρικά. 5. Γαρνίρουμε με φρέσκες φράουλες στο κέντρο και φύλλα δυόσμου.

Preparation 1. Add the water, milk, butter and sugar into a saucepan and bring to boil. 2. Add the flour and stir over medium heat with a spatula until the dough comes together. 3. Transfer the dough into a stand mixer, add the eggs one by one and mix with the dough hook until it forms a smooth ball. 4. Transfer the dough into pastry bags with a 10mm tip and form 8gr balls on a baking paper or silicone baking sheet. 5. Bake in dry oven at 180°C for 13 minutes until golden brown. 6. Place on a tray and leave to cool.

125ml milk / 12gr vanilla extract / 40gr egg yolks / 10gr sugar / 10gr gelatins, soaked in cold water and dried / 500ml whole cream / 300gr white chocolate

20ml water / 75gr sugar / 200gr almond flakes

Preparation 1. Pour the milk and vanilla into a saucepan and bring to boil. Remove from heat, cover with a wrap and leave for 20 minutes to bring out the flavors. 2. Βeat the eggs and sugar in a bowl until smooth. 3. When the milk brings out the vanilla flavor, remove the wrap and add the egg & sugar mixture. 4. Transfer into a saucepan and boil at low heat, stirring with a spatula until the cream reaches 82°C. 5. Take off the heat, add the gelatins in the mixture and stir until dissolved. 6. Add the chocolate to a bowl, pour the hot mixture over the chocolate and stir until the chocolate has melted and the sauce is smooth. 7. Add the cream and beat with a hand mixer until soft and smooth. 8. Strain, cover with a wrap touching the surface and put in the refrigerator for one night. 9. Transfer into a pastry bag.

POPS of color Ένας πρώην φούρνος σε βιομηχανικό στιλ στο Μπρούκλιν της Νέας Υόρκης μεταμορφώθηκε σε ένα υπέροχο loft. A former industrial-style bakery in Brooklyn, New York has been transformed into a cool loft.

Antonio Monserrat είναι διακεκριμένος αρχιτέκτονας. Υπήρξε μέλος των Zaha Hadid Architects, ενώ στο βιογραφικό του συναντά κανείς διάφορα πρότζεκτ σε Λονδίνο και Βιέννη. Ο ίδιος, λοιπόν, αποφάσισε, στη διάρκεια του lockdown, να εκμεταλλευτεί τον ελεύθερο χρόνο για ένα προσωπικό του πρότζεκτ, την ανακαίνιση του loft του στο Μπρούκλιν της Νέας Υόρκης. Το κτίριο χτίστηκε το 1915 και κάποια στοιχεία του έχουν διατηρηθεί, όπως τα ξύλινα δοκάρια και οι κολώνες, τα εκτεθειμένα τούβλα στους τοίχους και τα ψηλά ταβάνια με τα μεγάλα παράθυρα. Πρόκειται για έναν πρώην φούρνο σε βιομηχανικό στιλ, το οποίο μεταμορφώθησε σε έναν εντυπωσιακό χώρο διαβίωσης. Προκειμένου να κάνει περισσότερο ξεκάθαρη τη διάταξη των χώρων, ο αρχιτέκτονας χρησιμοποίησε έντονα χρώματα. Το χολ έγινε σκούρο πράσινο, με χαμηλό ροζ ταβάνι. Προχωρώντας στο εσωτερικό του σπιτιού, κανείς δεν μπορεί παρά να θαυμάσει το φυσικό φως που λούζει τα ψηλοτάβανα δωμάτια, κάτι που τα κάνει να φαίνεται μεγαλύτερα από ό,τι είναι στην πραγματικότητα. Οι κοινόχρηστοι χώροι είναι βαμμένοι σε ανοιχτό ροδακινί -μια ενδιαφέρουσα εναλλακτική αν θέλετε κάτι διακρι-

ntonio Monserrat is a distinguished architect. He was a member of Zaha Hadid Architects, and his resume has a list of various projects in London and Vienna. During the lockdown, he decided to use his free time on one of his personal projects, the renovation of his loft in Brooklyn, New York. The building dates back to 1915, with some of its elements being well preserved, such as timber beams and columns, exposed bricks on the walls and high ceilings with large windows. It is a former industrial-style bakery, enriched with bespoke elements and transformed into an impressive living space. In the intention to make the layout of the spaces clearer, the architect used bright colors. The hall was made dark green, with a dropped pink ceiling, and as you walk inside the apartment, you can only be impressed by the natural light that “bathes” the high-ceilinged rooms, making them look bigger than they actually are. The common areas are painted in light peach – an interesting alternative if you want something discreet – while for the bedrooms a pale blue tone was used, which exudes calm and serenity. Monserrat did not want to use any white.

Το interior design συμπληρώνουν custom-made έπιπλα, σχεδιασμένα από τον ίδιο τον αρχιτέκτονα, σε ιδιαίτερα σχήματα και χρώματα, που ταιριάζουν απόλυτα στην αισθητική του διαμερίσματος. «Μπορεί να είναι μικρό, αλλά το διαμέρισμα φαίνεται άνετο και ευρύχωρο. Ήθελα να μειώσω λίγο τη ρουστίκ αισθητική που είχε το loft και να του δώσω ένα περισσότερο Mediterranean vibe. The interior design is complemented by custom-made furniture – designed by the architect himself – in special shapes and colors that perfectly enhance the language in the apartment. “Although small, the apartment feels spacious and comfortable. I wanted to tone down the rustic feeling of the standardized loft warehouse apartment by making it feel more Mediterranean. I wanted to create an airy feeling by keeping the design simple and elegant, and by accentuating the division between the spaces with minimal and soft geometric forms,” says Monserrat. Using intense, bright pop colors, harmoniously combined with retro elements and modern design trends, the apartment has gained the attention of international magazines and websites for decoration and architecture (see Wallpaper* and Designboom). G r ee k c r e a t i v i t y Ο Πέτρος Καμινιώτης είναι ένας ταλαντούχος 23χρονος με καταγωγή από την Κατερίνη, ο οποίος έχει καταφέρει να συνδυάσει την ελληνική παράδοση με ένα από τα πιο αγαπημένα παιχνίδια όλων των εποχών, τα Playmobil! Μέσα από τον λογαριασμό στο Instagram @playmogreek, ο Πέτρος παρουσιάζει τις υπέροχες δημιουργίες του -δηλαδή, φιγούρες Playmobil ντυμένες με παραδοσιακές φορεσιές από διάφορες περιοχές της Ελλάδας. Ο ίδιος, αφού κάνει την έρευνά του και βρίσκει όλες τις απαραίτητες πληροφορίες, σχεδιάζει και φτιάχνει μόνος του τις φορεσιές. Το αποτέλεσμα είναι πραγματικά απίθανο. Κάθε φιγούρα του παίρνει 5-6 ώρες να ολοκληρωθεί και είναι μοναδική.

Petros Kaminiotis is a talented 23-year-old designer from Katerini, who has managed to combine the Greek folk culture with one of the most favorite toys of all time, Playmobil! On his Instagram account @playmogreek, Petros presents his incredible creations: Playmobil figures dressed in handmade traditional costumes from various parts of Greece. After doing his research and collecting all the necessary information, he designs and tailors the costumes by himself. The result is truly incredible. Each figure takes 5-6 hours to complete and is a unique piece.
