Over the Line: Am I the only one who cares about the rules?

To quote Water Sobchak from the cult classic, and personal favorite, The Big Lebowski, “Over the Line!” Of course in the movie he was talking about a foul in bowling. However, I want to talk about a different line, or more appropriately, the lack of a line. I am talking about the line demarcating where a pint of beer should be poured to.

What is the perfect pint? It’s not the most existential of questions, however it is not as simple as your ABCs. From a subjective point of view, it could be the right beer in the right situation, e.g., a refreshing weizen on a hot summer day. However, from an objective numerical point of view it is as clear as the Dude’s hatred for The Eagles.

The simplest definition is that it’s a unit of measurement for liquid volume. However, as most people familiar with craft beer in Japan know, there are two different pints, the U.K. and the U.S. Until 1824 both the U.S. and the U.K. used the same units of measurement, known as the English Measure. However, in 1824 the U.K. passed the Weights and Measures Act. This act redefined an Imperial pint, aka a U.K. pint, as 20 Imperial fluid ounces or 568 ml. The U.S. continued to use the previous unit of measurement of 16 fluid ounces or 473 ml, which ultimately became known as the U.S. pint.

So now that the exact measurements have been established for the U.K. and U.S. pints, I would like to ask you a question. Have you ever ordered a pint at a craft beer bar and felt that it didn’t quite measure up? The answer for many of us is an emphatic yes! Or in the words of the Nihilists, “It’s not fair.”

There could be many reasons for this. It could be that the glass itself is not a standard pint glass. A thicker than normal bottom is a common culprit for this. It could be that the person who poured your pint is new and inexperienced. It could be that the beer isn’t the proper serving temperature or is overly carbonated. If the bar is busy, they might not want to take the time to correct this. It could be that the management has instructed its staff to pour the beer with more head to give the glass the Japanese aesthetic of 70-30(or get an extra pour or two from each keg).

Regardless of the reason, if it is not measured out, it is not a pint.

Furthermore, when the menu lists pints but the pour is short, that is nothing less than false advertising. Now some bars avoid this problem by labeling their beers large and small. This eliminates the issue of false advertising, but not the problem of inconsistency/human fallibility. Imagine if you went to put gasoline in your car and the pump varied from station to station. You might get a full liter at one station and .9 liters at another. Would you abide?

The Japanese government taxes beer ¥220 per liter. In fact, all excise taxes levied by the Japanese government are based on specific measurements or quantities. Therefore, we as craft beer consumers should expect the same measurement standards. After all, we are the ones ultimately paying.

I feel compelled to quote the Dude and say “This aggression won’t stand man”. So I hope you will stand with me and encourage your local craft beer bars to ensure that if they are advertising pints, they are serving full pints. And the best way to ensure that you get the same amount of beer every time is to have measured and marked glasses, regardless of size. Otherwise we as consumers are getting Log Jammed.

Craft Entrepreneurs With Kota Hosaka

One evening during Golden Week, I found myself in Higashi Shinsaibashi and thirsty. Looking for a vending machine, I stumbled upon an unusual vintage model, all red, sporting “Coca-Cola” in white letters.

Upon further investigation, I was delighted to discover that this facade is actually the doorway to an 8 tap craft bar, aptly named “Vend”. (OK, so maybe none of this caught me by surprise, having heard about Vend’s unique design before deciding to pay a visit.) Regardless, I have to say that it’s the most unique entrance to a bar I’ve ever personally seen!

Vend’s owner, Kota Hosaka, is a friendly and cheerful host. He’s no stranger to speaking English, having lived in Singapore for three years before spending most of the latter half of 2015 in San Francisco.

He first came to enjoy craft beer during his time abroad, and wondered why the good stuff isn’t more mainstream here in Japan.

“Meeting craft beer in other countries made me think, ‘How come Japanese don’t enjoy such nice beer?’” When Kota came back, he got to work: “I researched about the Japanese craft beer market.”

What did he find? More and more, “Japanese consumers’ minds are shifting to special/unique/extraordinary items. That means the end of mass product (including canned beer) consumption.” In this, he recognized an opportunity. “It will be a big business soon, I thought.”

Kota decided that he would open up his own craft beer bar and began planning accordingly. He had a clear vision for what he would build, explaining that “Vend is my life experiences, condensed.”

The location was purposefully chosen: “There should be more craft beer representation in Minami.” Kota had always liked the idea of using a vending machine as a door, so that became the bar’s iconic entrance.

His many happy evenings spent at the Golden Gate Taproom while in California, “every weekend for six months”, served as inspiration for the bar’s interior decor: sleek and modern intermixed with some retro throw-backs. Vend distinguishes its own style via 8

a darker ambience, complimented by a lighting scheme that sets a relaxing tone.

Prior to taking the leap into entrepreneurship, Kota had been the manager of a ramen shop, then worked as a company staff member before he felt the calling to open his own bar. Did he have much experience managing a bar before opening one himself? Kota laughs, “I just had a few months experience working part-time as a bartender. I have far more experience as a consumer!”

The philosophy behind his bar is “service” combined with a taste of foreign culture: “The Japanese hospitality mindset is really important. However, some customers feel that [style of] service is cold and aloof, so I behave casually . . . to let [Japanese] customers experience an overseas bar and open their mind.” Kota strives to put everyone at ease in Vend, and hopes to create a fun environment where people can make new friends.

Vend is still relatively young; it had a soft opening for Christmas 2016 and then opened for business in February 2017. In the future, many events are being planned. Kota mentions “DJ nights, live music, ugly sweater parties”, anything that will give customers a foreign style bar experience not commonly found here in Japan. Sounds fun!

When asked what advice he has for potential entrepreneurs in any field, Kota suggests one should “find a new marketing niche or else clarify what is [the] difference between your store compared to the existing competition”, and to “have keen insight into customer requirements”, both now and in the future.

Kota leaves us with a final comment: “Life is fun, life is BEERtiful!” Amen to that, brother!

[Beer No Man’s Land]

In the past two years two large US brewers, Goose Island and Brooklyn Brewery, have forged their own paths in the Japanese market. Firstly, in June 2016, Goose (one of AB InBev’s “High End” brands) unprecedentedly launched its own web store, selling direct to the public. Brooklyn had been available on import since 2003, and its Brooklyn Lager brewed locally by Kiuchi for draft since 2014. However, in late 2016, Kirin acquired a 24.5% stake in the brewery and in early 2017 began brewing the lager here for draft, bottles, and cans.

Just how advantageous have these unique approaches been?

Both brewers would’ve hoped the moves would push them beyond the craft segment and into a slice of the 98% market share owned by the big four Japanese industrial brewers. But to this observer both may be neither winning over your average beer drinker nor ingratiating themselves with the growing craft beer crowd. Basically, they’re existing in a beer no man’s land.

Let’s start with Goose and the decision to launch online, and operate mostly through there since. Without a great deal of retail accounts, it’s simply too easy to forget the beer is here. If I go to Seoul there’s a brewpub. In Sydney some core range is sitting, freshly brewed, on supermarket shelves. Here? Well, if I regularly scan Rakuten I come across it sporadically. It’s in Yamaya stores, but then here comes the 10

Jeremy McMahon next bugbear: freshness. Bottles within days of expiry sit on Yamaya’s shelves unrefrigerated. Even if I buy direct from them online there’s no guarantee it’ll be fresh (I received ten-month-old Goose IPA).

So it’s not so visible around town and not so fresh. But the non-discerning drinker will still appreciate buying well-made American craft at an affordable price, right? Sure, there’d be some audience for its core range at three for ¥1000 at Yamaya, but then why not focus on retail primarily and target impulse buyers on a budget? The thing is, undercutting other imported brands on price point does not seem to be the intent; in fact, it’s the opposite when it comes to its worldclass sours and Bourbon County Stout. Purely viva voce, the craft community here desire these beers, but the outrageously high price tags (especially for a direct-to-consumer merchant) or subscription conditions on them effectively turn their yen elsewhere.

Brooklyn Lager is a long-time favourite of mine, so upon hearing Kirin was going to brew and expand its reach here I was rapt. Initially I was disappointed to find that a can in my local supermarket was around ¥400, the same price as when it was imported in bottles from half a world away. Wouldn’t mass-producing a beer locally see the end product cheaper? Or is freshness the benefit the customer receives under this arrangement? Regardless, that was March last year, and I have seldom seen it since. Where are they hiding this beer in Osaka? I’ve looked in supermarkets, liquor stores, beer bars, restaurants, and soccer stadiums. Are they focussing on Kanto only?

Furthermore, Brooklyn’s import range has seemingly vanished since Kirin took over from Nippon Beer Co. For years, Japanese drinkers had been able to get beers like East IPA, Black Chocolate Stout, or Summer Ale, but they too are now scarce if here at all.

These two American brewers have quality portfolios and are backed by brewer conglomerate clout for the Japanese market. But are they blowing it? On price point, visibility, and connection to the consumer, they’re too easy to disregard, no matter whether you’re a “big four” drinker looking for something different, someone who enjoys “crafty” beer, or a seasoned connoisseur.

「ビールの無人地帯」 この2年の間で、アメリカのグースアイランドとブルックリンブ ルワリーが日本の市場に参入してきた。まず、2016年にグースアイ ランド（AB InBevの「高級ブランド」）が日本でウェブショップを 開き、消費者へ直接ビールの販売を開始した。その一方、ブルックリ ンは2003年から輸入されており、木内酒造（常陸野ネストビール） が2014年にブルックリンラガーを醸造していた事もあった。ただ し、2016年前半にキリンがブルックリンブルワリーの24.5%を買収し た結果、今後はキリンがブルックリンラガーを生・瓶・缶で醸造、販 売していくという。 この新しい発展は、一体どこまでクラフトビールにとって有利な のか。両社は、クラフトビール会社として認めてもらう以上に、まだ 日本で大手ブルワリーが98%の消費率を占める中、クラフトビールの 消費率を上げられないかと願っていたでしょう。私個人として、両社 がクラフトビールの世界に入り込もうとした結果、大手ブルワリーの ビールを飲む人に対しては大きなアピールにはならず、既にクラフト ビールに熱心な人に対しても魅力づけはできていない。要するには、 クラフトビールの無人地帯にいるのだ。 グースアイランドがオンラインショップを開き、主にそちらで販 売するという件から見てみよう。数多くの販売所がない限り、やはり ビールの存在感が弱くなる。グースといえば、ソールにはブルーパブ があるし、シドニーでは醸造したてのコアビールはスーパマーケット で売られている。日本では、楽天で探せばあるし、ヤマヤ等の高級ス ーパーには置かれているが、問題が一つある：フレッシュさ。賞味期 限まで数日しかないボトルは冷蔵されずスーパーの棚に並んでいる。 オンラインで買っても、醸造から10ヶ月経っていたグースIPAが私の元 へ届いたので、やはりフレッシュさは保証されていなかった。 グースは結局、日本ではよく目に入らないし、あった場合もフレッ シュではない。ただ、これが気にならないビールの消費者は、手頃な値 段ならば、まだ買う気になるのでしょうか。ヤマヤでは3本/1000円で 買えるのでお得かと思うかも知れないが、なぜ予算が限られている消費 者をターゲットにするのか、分からない。実は他の輸入ブランドより安 く売る戦略ではないようだし、世界で評判の良いグースのサワーやバー ボンカウンティーのインペリアルスタウトは決して安くない。口コミだ けを通じてかなりの需要が出てきているビールだが、信じられない値段 に唖然とし、最終的には他のブランドを探すかと思う。 ブルックリンラガーは私にとって愛飲してきたビールなので、キ リンが日本で醸造しブランドを拡大させると聞いた時はワクワクして いた。出回ってきた時にはスーパーで400円で売っていたが、地球を渡 りボトルで輸入していた時と値段が変わらないことにガッカリした。 日本国内で大量に醸造しているならば、もっと安く販売できるでし ょう。それとも、国内で醸造する価値は、フレッシュさが保たれるだ け？とにかく、2017年の3月に一旦出回っていたまま、それ以降ほと んど見ていない。大阪では、どこにブルックリンラガーが眠っている

のか。スーパー、酒屋、ビールバー、レストラン、サッカースタジア ムを確認したが、ストックがない。下手したら、関東を中心に販売し ているのだろうか？ また、キリンが買収をして以来、ブルックリンの輸入されている 商品は非常に減った気がする。イーストIPA、ブラックチョコレートス タウト、とサマーエールは以前によく目に入ったが、最近では全く見 ない。 グースアイランドとブルックリンブルワリーは、商品のライナッ プもよく、日本の大手ブルワリーに支援してもらっているにも関わら ず、クラフトビールのために役立っているか？それとも、台無し？大 手ブルワリーのファンが新しい味のビールを探す場合、実際にクラフ トビールが気になっている消費者の場合、もしくはクラフトビール通 の場合でも、この2社はコストパフォーマンス、視認性、とクラフトビ ールの意識につながる意味で、残念ながら注目を集めていない。 注：この記事に当たって、 Goose Island JapanとBrooklyn Brewery Japanに連絡したが、 返事は貰えなかった。

Slip Into A Brewtiful Summer: OC Beers to Kickoff Summer

As the days begin to heat up and the nights become balmy, we feel that warm reminder - it’s time to celebrate the coming of summer! With the season, of course, come the seasonal beers - and there are always plenty of new and exciting beverages to choose to sip poolside in the sun. I’ve assembled a list of beers that are apropos for any summer day, whether you choose to spend it with friends, on the beach, or lounging in a hammock.

Artifexican Mexican Lager | ABV 4.5% Artifex Brewing Company | San Clemente, CA If you’ve ever spent time in Southern California, there are undoubtedly times when you’ve found yourself sipping on a Corona with lime (or maybe a Modelo, Dos Equis, etc.). Perhaps you were feeling nostalgic and found yourself in the mood for something crisp, clean, and sessionable. Today, craft drinkers are lucky to have brewers who produce excellent, craveae Mexican lagers. Artifex brewers Johnny Johur and Bryan Rederer have accomplished just that with Artifexican Mexican Lager (which also dazzled the judges at GABF in 2017, where it snagged a bronze medal for its finesse).

As far as I’m concerned, on the eve of another sunny California summer, other styles of beer can step aside (although I must admit, I still crave Artifexican plenty in the cooler months). This beer is timeless, constant and provides an endless summer of flavor on your taste buds.

Drinko De Mayo | ABV 4.8% Mexican Style Lager | Mikkeller Brewing San Diego | I have a deep, ardent love for lagers and Mexican culture (being a proud Latina) - so, I’m happy to see Mikkeller offering a staple Mexican lager that pays homage to the style. This year’s version of Drinko is a straw-colored lager with light, incessant carbonation. This beer, while awesome on its own, can also elevate any food you pair with it. From ceviche to oysters; from aguachile to scallops; from tacos to tamales; this beer is pair worthy. Drinko De Mayo is flavorful, sure but it’s also relaxed enough to chill anywhere.

Unsung Brewing Company x Tustin Brewery | ABV 8.6% Crosstown DIPA | Anaheim, CA If you’re anything like me, you’ve probably watched Infinity War at least twice - and the hype has lingered. Much like the climactic film, Tustin Brewing and Unsung Brewing’s latest collaboration seems to be interminably exciting, bringing you back for more and more as you explore the small details they’ve poured into their ale. Mosaic, Citra and Amarillo hops serve to conduct a symphony of fruity hop explosion. The bitterness is balanced with clean, refreshing and crisp body, while hops triumph at sip’s end. Careful with this one you’ll sit down with it and find half of it gone with a snap of your fingers.

The Lost Beer Girl and the NOn-Dude Beer Geeks

Unless they know who I am, guys who come into the bar where I work, always turn to my male colleagues for beer advice. Subsequently, said colleagues always hand these guys over to me for some proper beer talk. The surprise on their faces is almost worth their presumption that men know more about this delicious liquid candy than women do.

I bet this doesn’t surprise any of you readers. Some would say, it’s just the way the beer world is built. It’s a man’s world.

One of my all time favourite novels is The Power, written by Naomi Alderman. The Power is set in a world where women suddenly, through a genetic mutation, discover that they can discharge deadly electrical currents from their bodies. This of course, leads to parents warning their sons to not go out alone at night, to not stray too far away from home, to take care how they dress so as not to attract unwanted female attention. An upside down world. Some hundred pages later, Naomi Alderman shows us how putting women in power and undermining men doesn’t necessarily make for a better world, she shows us that what we need on this tiny planet of ours, is a balance of power, some sort of a coexistence. That we need to respect and make space for one another.

Not being a man in the beer industry is no easy thing. The beer world is fun and inspiring and fulfilling. Not to mention that one gets to meet so many amazing people. But. It is also frustrating, sometimes even on the brink of nerve wracking. Why? Because there are some, who would say that women have no business putting their noses in this part of a “man’s world”. What these men choose to ignore, is that beer, has been women’s business since the era of ancient Egypt (this only changed once beer became industrialised). It was even a woman who first introduced hops to beer. Hildegard von Bingen (1098-1179) was a German Benedictine abbess, writer, composer, philosopher, brewster and a whole lot more. She was, and still is, an awe-inspiring character.

Google her. In the 12th century, she described how hops could be used to preserve liquids. So thank you Mother Hildegard von Bingen.

Back home in Sweden, we’re a gang of non-dude-beer geeks trying to work on making our sisters more visible in the beer industry, boosting them so they feel they can take a stance and not be too intimidated to voice their opinions in such a male dominated industry. One excellent example is my friend, Josefin Olsson. Josefin is a fierce, friendly, knowledgeable, beer geek who has created a platform called ÖLGÄRIS (öl means beer in Swedish and gäris is a slang term for a person who is not a man). This platform is a secluded group on Facebook where anybody who is not a man and has an interest in beer is welcome to join. Here we can freely express ourselves on anything that has to do with beer and no one can tell us that our opinions are wrong, stupid or silly. Josefin and I set up a beer workshop for these gäris on March 8th, international Women’s Day. We will tasted beer, discussed it and came up with some great recipes to brew. Fun times!

Another great example is the Stella Gala. This is a gala created to commemorate women in the restaurant industry, here, prizes are handed out to amazing bartenders, waitresses, chefs, and such. My dream is to have a beer festival for gäris. How awesome would it not be to walk into a beer festival filled with gäris at all beer stands, tasting and talking about beer? Paradoxically, I am hoping that such a festival just for us gäris will not be needed. I am hoping that we will learn to make beer spaces more open. A beer world where everybody is treated equally regardless of gender. That my dear friends, is my ultimate dream.

So think again. Next time you ask a beardless bartender, if she really knows her beer. Next time you advice your girlfriend not to order that certain beer because it is too bitter for her genteel taste buds. Next time you choose to order from the dude bartender instead of his beardless colleague. Think again that these gäris genuinely love their beer.

Who knows, you might even make a new bartender friend :)

Based in Longmont, Colorado, Oskar Blues is notable for several things: creating the crowler, Ten Fidy Imperial Stout, Dale’s Pale Ale and being the first to can craft beer.

In the US, you can find them in all 50 states, they have a chain of burger shops (CHUBurger), another of bikes and even coffee roasters!

They obviously believe in diversification but still keep a focus on good canned craft beer. So without further ado, on to the beers: Dale’s Pale Ale 6.5% This beer is consistently ranked one of the top US pale ales, I wonder what it tastes like? It’s a nice amber color with a beige head and is blessed with a very powerful aroma of citrus, hints of tropical fruits then some pine & a touch of dank. Truly a delicious smell. It’s got a fruity taste, kind of bitter at first but then it mellows into a complex fruity aftertaste. A really great pale ale.

Death by Coconut 6.5% On opening the can my first thought was: “Wow, that is a full on crazy coconut aroma!” The aroma evokes Tropicana sunscreen, Malibu coconut rum, piña colada, etc. This tropical smell brings to mind a fruity cocktail you’d expect to come in a coconut with an umbrella.

The beer is medium/light bodied and surprisingly dry with a raspy carbonation. The taste is fruity floral coconut and piña colada. A dessert beer with nowhere near the chocolate notes I was expecting.

IPA 6.5% I had this on tap at the Oskar Blues Tasty Weasel Taproom in Longmont, Colorado. It’s clear gold in color with a classic piney hop bouquet. It’s medium bodied and tastes like pithy orange and pine with a very dry finish. Crisply balanced and easy to drink.

Old Chub 8% It pours a very dark brown with a thin beige head with staying power. The aroma is one of rich creamy malts.

It’s got a wonderful flavor combined with a rich smooth mouthfeel that features toffee and caramel with a smoky finish. This is good stuff and a great example of a Scotch Ale. Ten Fidy Russian Imperial Stout 10% A dark viscous beer with a good centimeter head of reddish brown foam. Lovely cocoa aroma featuring rich milk chocolate. The texture is full-bodied and silky smooth while the taste is roasty bitter dark chocolate and lots of umami savoriness. Really good but after the rave reviews I heard I was expecting a bit more.

させる。ビールはミディアム/ライトボディで、驚く ほどにドライ。味はフルーティーなフローラルココ ナッツとピニャコラーダのような感じで、私が今ま で考えもしなかったようなデザートビール。 IPA 6.5% これはコロラド州ロングモントにあるOskar Blues Tasty Weasel Taproomでタップのものを飲ん だ。馴染みの松のホップの香りがするクリア・ゴー ルド・カラー。ミディアムボディで、ピーチオレン ジやパインのような味があり、とてもドライな喉ご し。良い塩梅で飲みやすい。 Old Chub 8% トップは薄い茶色で注ぐととてもダークなブラウ ン。クリーミーなモルトの香りがたまらない。スム ーズな口当たりで、タフィーとキャラメルを特徴と する甘く濃厚な香り。これは本当に良いビールでス コッチエールの素晴らしい例だ。 Ten Fidy Russian Imperial Stout 10% 赤褐色の泡が良い具合にある濃厚なビール。豊富 なミルクチョコレートを使ったたまらないココアの 香り。舌触りはフルボディでシルクみたいになめら か、味は苦いダークチョコレートとたっぷりのうま 味。本当に良いビールだが、もう少しを...期待して いたかな。

Kyoto station surrounds is a mess of traffic, commercial buildings, tourists, noise, congestion and annoyance. Great if that’s what you want, not so great if you’re just looking for a quiet local beer. Never fear: a pleasant stroll to the nearby Kiyamachi-dori, a double lane either side of a quant stream, will lead you North to a quiet neighbourhood with ducks and Kyoto Beer Lab, one of the latest breweries in Kansai. Their team consists of Cha-beer Muragishi-san who was responsible for the area’s Cha Beer, and Tom, an Aussie bloke with a slew of recipes.

Muragishi: I’ve been involved in a revitalization project for the Wazukacho area, where I renovated an old Japanese house converting it into an event space and share house. The area here is well known for tea, so I thought it would be a good idea to develop a beer with tea in it. Our Cha Beer was originally produced on consignment and sold at events, but the small batches made it financially unviable, and I was looking for a way to brew it in-house.

Hiroki-san (who now works at Beer Lab as the bar manager) introduced me to Tom. We decided to work together almost instantly. When we first met I realized with the cha beer our way of thinking was quite close; we were both interested in home brewing, and both thought about turning beer into

business. In the beginning we were looking at going for a large brewery (not a brewpub), but having somewhere customers could come and drink and talk about beer became important, so we went for a brewpub in the end, which suits our inner city location.

The day we finally got the license to brew our own beer in-house was a really special day for us. We’re really grateful to all the friends who cooperated, and all the people from Wazuka who have supported us along the way. We want to work to give back to the community.

There’s a real feeling of fellowship among all kinds of craft beer people; it makes it really enjoyable to brew. Working with other brewers to build the scene here is important to us. We plan to use Kyoto Beer Lab as an antenna shop and let people know about Cha Beer and Wazuka tea. I hope the number visiting grows!

Tom: I’ve been homebrewing since I was 20. I did a stint at The Grifter Brewing Co. in Sydney; they’re an interesting brewery. A mix of classic and new world beers. They love their celebration ales, but they’re like semi-hoppy Christmas porters, a good mix of the old and the new. I was studying a bit of Japanese back then, and a mate said, “why not go teach?” and so I did. That was four years back.

いつか自社製造したいと思い、ブリュワリーの 構想をいろいろと考えている時にブリュワーの トムと出会いました。まさしく必然の出会いだ ったと思います。 トムとビール作りやブリュワリーの話を始 めてからはかなり早い段階から一緒にやろう！ って、けっこうすぐ決まりましたね。最初会っ た時からビールについての考えが近く、私もホ ームブリュワーでビール作りの話も合ったの で、お互いがビールをビジネスとして近い距離 に感じていました。最初は和束町内で物件を探 していて、ブリューパブではなく大きめのサイ ズでブリュワリーにしようかとも考えていまし たが、飲みに来てもらえる場所があって、自分 のビールをお客さんと話ができる場所がほしい 気持ちが大きくなり、また和束のアンテナショ ップとしての場所を作りたいという思いから、 まずは京都市内にブリューパブを作ることにし ました。 製造免許を取って自社製造できるという日 が来たときは特別な最高の日でした。茶ビール のアイデアを皆に話し始めたころに協力してく れた友人達や、和束の人達にもすごくサポート してもらって、皆に大感謝です! クラフトビールの一員になって始めて知り ましたが、皆がすごく仲間意識があって協力的 にサポートしてくれて本当に楽しくて素敵だな と感じています。これから京都をクラフトビー ルでどんどん盛り上げていきたいし、そのため

村岸氏:私は10年以上前からまちおこしや 古民家再生のNPOを運営しているのですが、 今から8年ほど前に和束町が過疎で困っている ので何か出来ないかと声をかけてもらったのが きっかけで、それからずっと大勢のボランティ アの参加者や団体と一緒に和束のまちおこしを してきました。和束は宇治茶の4割以上を作る 宇治茶の一大生産地ですが、茶農家さんの後継 者不足だったり空き家が増えていたり過疎の問 題をたくさん抱えている地域でした。そこで私 達は空き家活用をベースに和束のまちおこし活 動を続けつつ、和束のお茶を使った産品開発も 平行してすすめて、そんな中でお茶のビールが 生まれました。私も含めて大勢のメンバーがク ラフトビール好きだったのがいいきっかけでし たね。当初は委託製造で茶ビールをイベントで 販売したり、和束町内の酒屋さんで販売したり していましたが、なかなかたくさん作れず大勢 の方に飲んでもらうことが出来なかったので、

Why did I stay here? I dunno. Honestly, it’s easier to brew in Australia, but there’s a lot more competition. I met Muragishi-san, and he talked to me about Cha Beer and wanting to brew independently, rather than as a gypsy brewer. He took me to Wazukacho, I met the people there and we said, “let’s do it.”

I’m pretty stoked about our first batch… it’s weird, more like I’m glad I’m not disappointed. We sold about 50 liters of our Pale Ale the other day. Good to see people loving topaz hops: come on Australia!

My dad was here for the opening, and he doesn’t drink beer, but he still downed like four of the gose. What a legend.

I’ve got like 200 recipes on file from all the years I’ve been brewing. Creating a new recipe is basically just being a nerd at home, researching online, looking at others comments and wondering how you would tweak something to suit your own palette. I like sour beers so I’ve got tweaked recipes from other breweries and a big variety of other stuff. I like a lot of different beers, but people visiting Kyoto Brew Lab should come expecting something different. I wanna keep two sours on tap through Summer, let’s see how we go, maybe throw an English bitter in there. I’m not saying, “I need to give people what they don’t have” from a high horse. I want to drink the beers man!

And if I don’t make them, no one else will.

I’m talking to Otani-san up at Nagahama at the moment about doing a beer together, probably in the next few weeks. We want to do a pineapple strong wheat ale; let’s see if we can work the peachy pineapple flavours out of the calypso hops.

10 minutes in conversation with Tom will get all Auzzies back to full-on lingo levels, yeah-ing and nah-ing with that raspy nasal accent we all know and luv. That and more when you rock up to Kyoto Brew Lab and check their rad lineup of sweet-as beers.

にしっかりブリュワリーのみんなが連携することが大事だと思ってい ます。Kyoto Beer Labは和束のアンテナショップとしての機能も持た せていきたいので、和束のお茶やまちの情報発信もしていこうと思っ ています。こうしてクラフトビールに興味を持ってくれる人がどんど ん増えていくと嬉しいです。 トム氏:僕は20歳以降からホームブリュワー。シドニーの面白い醸 造所「Grifter Brewing」で働きました。クラシックと新しいスタイル をミックスする場所です。セレブレーションエールが好きだけど、ホ ップ感の軽いクリスマスポーターのようなビールになり、古い、新し いが良いミックスって感じ。その頃日本語を勉強していて、友達が「 日本行ったら?」って来日しました。それは4年前。 なぜここで醸造することに? わからない。正直、オーストラリア の方が醸造しやすいけど競争が多い。村岸さんとあって、彼は茶ビー ルについて私に語り、ジプシーブリューワーより独立して醸造したい との話を聞いて和束町へ連れて行ってもらい、地元の方にも会ってか ら「やろうか」と自然とそういう話になりました。 最初のバッチは結構いい感じ。変な気分ですね、がっかりしてな いこと自体が嬉しいです。先日、一日でペールエール50L以上売りまし た。トパーズホップ、皆が美味しかったって。ゴー!オーストラリア! オ ープンの日は父がオーストラリアから来てくれました。ビールは飲まな い人だけど、うちのゴーゼ4杯も飲んだね。どんなにすごい父やねん。 醸造経験からのレシピが200種以上あるんです。新しいレシピ政 策は家でオタクみたいにオンラインで色々調べたり、人のコメントを 読みながら自分の好みに合わせるため、どのように調整するか検討す ることが多いですね。サワービールが好きで他の醸造からの調整した レシピも多いけど、ビールって色々持っているね。個人的に色々好き けどKyoto Beer Labへ来る方は何か違うラインアップを期待してくだ さい。この夏はサワー2種類キープしたいけど、どうでしょうか、そこ にイギリスビター加えるか。偉そうに「ない物を人にあげる必要があ

る」とは言ってないよ。自分でこのラインアップを飲みたいから!自分 で作らないと誰が作ってくれるのかな? 一緒にビール作ろうと、滋賀県長浜ビールの大谷さんと相談中で す。数週間の間にできているかなぁ。カリプソホップを使って、パイ ナップルストロングウィートエール作りたい。ピーチの様なパインの 風味をうまくできるか試してみよう! 日本に長く住んだオーストラリア人は、トムさんと話すと訛りが 10分以内でバリバリ戻ります。本人の関西弁も驚くほど強烈で、ざっ くばらんさで楽しい雰囲気になる。Kyoto Beer Labに到着してから気 づくと思うけど、バリうまいラインアップがßめっちゃ美味しくてごめ んやで!って感じ。

Shonan, an area next to Japan’s coastline in Kanagawa prefecture, is a popular Golden Week destination for Tokyoites and others in the region. The packed train ride down there on Greenery Day was enough evidence of that for me, if not the mass of people strolling up and down Komachi Street and other shop- and cafe-lined avenues in the old capital of Kamakura that day. The weather was gorgeous!

Once my girlfriend and I had finished our short hike from Kitakamakura into the main part of town, paid a visit to Hachimangu Shrine, and ducked in and out of a few stores, it was time to reward our “toil” at a local craft beer bar. Blue Room, conveniently located on the aforementioned Komachi Street, was our first stop. It was cozy - just a few wooden tables and bar stools in its second-floor locale. Six taps were available - all Japan craft! I opted for the “Old School” Single Hop Ale from Barbaric Works in Chigasaki, while my girlfriend chose Shiga Kogen Saison. The “Old School,” light in color, was fragrant and refreshing on the pleasantly warm day. The saison (we shared, of course) also hit the spot. Shiga Kogen rarely if ever misses the mark. 1400 yen is a bit steep, especially for a domestic pint, though two of the six options (Bay Brewing Pilsner and Nihonkai Club Weizen) were priced at 1100. Finally, Blue Room’s homemade potato chips paired nicely with both of these brews.

Next stop, Grano for pizza, pasta, and…more craft. Serving four different train lines, Fujisawa station is a main gateway to the Shonan coast. I know it primarily as the location of this pizzeria I’d been wanting to visit for years. The pizza and beer selection were great! I had a Fifty Fifty Hazy Rye from Truckee, California, while my girlfriend went for Parallel 49’s Cheap Perfume out of Vancouver. It’s rather courageous to give a beer such a name, but it was fitting, and yet very good! The Hazy Rye, while not all that hazy, 20

was also quite nice, although I’m partial to any beer made with rye.

Though my taste buds and I were temporarily disabled by the foolhardy addition of an unbelievably spicy BBQ sauce to a slice of the pizza, I recovered after a few minutes to drink more beer. (Note to self: Never again douse a small piece of pizza with any sauce whose label describes it as “Stupidly Hot.”) The next day we found ourselves in Zushi, a beachside town to the southeast of Kamakura. Zushi is the home of Yorocco Beer, one of the region’s finest breweries. I’d had their beers before, but they’re hard to find, so visiting the Yorocco Taproom at the vegan Beach Muffin café was a special treat. The atmosphere and vibe there were great. With lots of sunlight, plants, and comfy old furniture to sit on, I felt we could have been sitting in a café in Berkeley or San Francisco. After brunching on a tasty “tuna” bagel and a bean burrito, we headed down to the beach (vegan muffins in tow), to return later for beer…and curry fried potatoes. We ended up getting takeout cups, as the place was pretty packed when we returned. Four of five taps were up and running. We opted first for the Hop Breeze Saison and a brew they call ZAPPA, a dry-hopped pale ale. We went back inside a short while later for the other two: Brown Saison and Cultivator, but they had run out of the latter. All were good, but we both agreed ZAPPA was our favorite. Frank would be pleased.

We could have stopped there with the three beers between us.

But as we had to pass through Yokohama station on the way home anyway…Thrash Zone beckoned. Thrash Zone’s fine brews have been well documented in this and other publications, and I’m already over my word limit, so…

神奈川県の湘南は東京都民にとって、騒がしい都会と分離できる人気な場所 である。この間のゴールデンウィーク、ちょうど緑の日、に私も行ったがその人気 はあからさま。鎌倉小町通りには数々なカフェやお店が並んでおり、人もそれに引 きつられながら歴史のはびこる街を散策していた。 彼女と鶴岡八幡宮への参拝後、私たちはここへきた本当の理由、クラフトビ ールを飲むため地元のビールバーへ訪問することにした。1店目は鎌倉小町通りに あるブルールーム。２階にあるこのお店は小さく、木の椅子とテーブル数個で親密 感のある空間がただよっている。タップは６つ繋がっており全て日本製。私は茅ヶ 崎にあるBarbaric Worksのシングルホップエールを、彼女は志賀高原のセゾンを 注文した。エールの色はスッキリしており、華やかなで新鮮な口あたりをもってい た、暑い日にちょうどいいビールだ。セゾンのほうは相変わらず素晴らしい。１パ イント１４００円でちょっと高めだがそのほかのビールは１１００円で出ていた。 自家製のポテトチップスがビールとよく合うのでこれはオススメ。 次はピザ、パスタ、ともちろんビールで人気のグラーノ。藤沢駅より徒歩数 分でかなり近場。以前からここの名物のピザを食べたいと思っていた上、ビール のセレクションもかなりのものだと聞いた。私はカルフォルニア、TruckeeのFifty Fifty Hazy Ryeを、彼女はヴァンクーヴァー、Parallel 49’s Cheap Perfumeを注 文。ビールをCheap Perfumeと名付けるとはかなりの度胸がいると思うが、一度 飲んだらかなりうまい。Hazy Ryeは名前のわりにはかすみが少なかった気がした が、ライ麦でできたビールはなんでも好きなので文句は言えない。だが、次は舌の 準備をしないと思う。注文したピザにとてつもなく辛いBBQソースをかけてしま い、その辛さのあまり一時行動不能になってしまったからだ。ビールのおかげで口 の中の火は消えたが次は気をつけよう。 次の日、私たちは逗子に行きその地区一番のビール醸造所、ヨロッコビール へ足を運んだ。以前彼らのビールは飲んだことあるが一般的にレアであるため機会 があればいつも味わおうとする。ヨロッコビールはブルワリー＋ベーカリーとして 運営しており、Beach Muffin Caféが作る品はいつも絶品。お店の雰囲気も良く太 陽がはいり、植物も並んでおり、おしゃれな家具が揃っているサンフランシスコの バークレーを思い出すような場所。食事は基本的全てビーガンでおいしく、私たち は「ツナ」ベーグルと豆ブリートを食べた後ビーガンマフィンを持ち帰りにし砂浜 へ行った。ビールを飲むため帰ってきたらタップルームがもうすでに満員。テイク アウトのカップを持ちビールを味わうことにした。今回飲めたのは、セゾンとドラ イホップされたペールエールのZAPPA。そのあとブラウンセゾンとCultivatorを飲 もうとしたが残念ながらCultivatorはすでに売り切れ。最終判断ではZAPPAが一番 だったとおもう。皆様も一度来店してはいかがでしょうか？ここのもう一つの名 物、カレー風味のフライドポテトを堪能して見てはいかが？ ここでシメと言いたいが帰りには横浜駅があり、そしてそこにはスラッシュ ゾーンがある。ここのビールの品質は以前から噂になっているのでこのまま無視す るわけにはいかない。しかし記事の語数制限をすでに超えてしまったのでまた次の 機会に。皆様乾杯！
