Q&A A conversation with Norm Poirier, Director of Parks & Recreation here in Belfast.
Norm Poirier; Director, Belfast Parks & Recreation
In the Works: Exercise Stations: Spring 2015, City Park New Kayak Rack: Spring 2015 at boat launch in City Park Winter Festival: January 2015, Waterfall Arts Movie Nights: Summer 2015, City Park Passy Rail Trail: The City of Belfast is pleased to be partnering with Coastal Mountain Land Trust to create the Passy Rail Trail. This will be a scenic 2.25 mile hiking and biking path following the historic Passagassawakeag River. Opening TBD.
6 Belfast The Bay and Beyond 2015
No one likes to be stood up, but after three or four attempts to meet with Norm Poirier of the Belfast Parks & Recreation Department, it almost became comical. When I realized that the latest attempt had been thwarted due to Norm’s impending launch of the “Pumpkin Carvin’ at the Muck” event, I even secretly smiled. Norm is quite literally, a one man band. He plays each and every proverbial instrument, and is constantly inventing new ones! When I finally caught up with him, he was in the midst of devising a plan to set the pumpkins afloat in the Muck. I could only imagine the delight on the faces of the children attending the event. Those smiles and the equally infectious enthusiasm Norm brings to everything he gets involved with, are what make Norm such an asset to Belfast and his position with the Parks & Recreation Department. If you’ve attended the Pumpkin Carvin’, the Ukulele Festival in June, or the Harbor Festival in August, you’ve witnessed Norm’s passion in action! Where do you like to hang out when you’re in Belfast? “I love City Park! I love the design, the (foot) traffic that it gets, the discoveries that I make each time I walk through it. When I got here, it was a bit down on its luck. Since I’ve arrived, I’ve been able to see what was always there, and find reasons to celebrate it with the community at large. Whether it’s the Ukulele Festival, or Movies in the Park, it’s been great to see the support in the community, for their park and the activities that take place there.”
What are your favorite events? “Pumpkin Carvin’ at the Muck” was a new event in 2014, but I’m hopeful it will take off and become an annual affair. We had a pumpkin carving contest, and pumpkins available for those that didn’t have one of their own. When the carving was finished, we had a contest and awarded prizes for best pumpkins, then everyone lit their pumpkins and set them afloat in the Muck. In the spring, we launched another new event, a kite flying festival. There’s a kite making workshop first, and everyone learned to make their own kites. Then we took them down to the waterfront and set them up in the air for an afternoon of kite flying. We’re trying to adjust the schedule for 2015 so that we can take advantage of good, strong wind currents, and late enough in the spring so that we catch warmer temperatures. The Ukulele Festival was fun this past year, and another first. It was gratifying to see so many people turn out. This event came about because of one man’s passion for the ukulele. He approached me with the idea, we both said, “Why Not?” and away we ran. We’re looking forward to an even bigger event for summer 2015, with more music, workshops, history and ukulele sing alongs.” What gets you out of bed in the morning? “Literally, my dog gets me up every morning!” After meeting and speaking with Norm on several occasions, I halfway believe him. Though I suspect that this is a man who genuinely loves his job, likes getting up, and is constantly dreaming up new ideas for his beloved City Park and the lucky town of Belfast! —Lisa Tichy

The Long Cove Headwaters Preserve in Searsport offers a woods trail well-traveled by moose and hikers alike—a perfect place for a backcountry skiing excursion. We’ve also partnered with the City of Belfast to help create the Passy Rail Trail on the former bed of the Belfast– Moosehead Lake Railroad. Walkers and bicyclists of all ages will soon be able to fully enjoy this two-mile trail along the scenic Passagassawakeag River. This exciting community project will provide a simple outdoor option for those seeking healthy exercise and the rejuvenating powers of nature right outside downtown Belfast, and will one day link to the City Point Railroad Museum, the Armistice Footbridge, the Harbor Walk, and the trails of the Passagassawakeag Greenway.

BROILER
FEST BY JAY DAVIS

3,000 pounds of chicken roasting over 100’ long barbecue pits.
FOR NEARLY HALF A CENTURY BELFAST WAS KNOWN FAR AND WIDE FOR A THREE-DAY CELEBRATION IN MID-JULY KNOWN AS THE BROILER FESTIVAL.
10 Belfast The Bay and Beyond 2015
Actually, it was Broiler Day until local entrepreneurs sensed an economic opportunity and made a big deal out of it. And a big deal it was, almost as popular an attraction as today’s Common Ground Fair in Unity. That Belfast should honor a common staple like a four-pound broiler chicken was due to the presence of two poultry processing plants on the city’s waterfront, one now occupied by Penobscot McCrum, the potato people, the other razed by MBNA in 1997. Maplewood and Penobscot Poultry companies were vertically integrated enterprises that raised and slaughtered millions of chickens each year, mostly for the Boston and New York markets. Belfastians had mixed feelings about the city’s claim that it was the “Broiler Capital of the World.” But they loved the Broiler
Festival, which set up in City Park on the third Friday in July with a midway, fried dough purveyors, attractions like boxing matches and sky divers ... and on Saturday afternoon, what was billed as the world’s largest chicken barbecue, where sweating cooks squirted barbecue sauce from firefighting Indian tanks on chicken quarters roasting over 100-foot long charcoal pits. The Broiler Festival was an agricultural fair like those in Fryeburg, Cumberland, Bangor and plenty of other Maine communities. The Broiler Queen, whose coronation was often presided over by the Maine governor, was a momentary celebrity like the Sea Goddess in Rockland or the Potato Blossom Queen in Houlton. She often traveled across the country to attend the national broiler industry convention.
In its early years, the Festival featured the latest in broiler technology, from breeding advances to a cooking contest and booths that extolled and sold new equipment for local growers. It was a low-key promotional event that attracted industry officials from the South and Canada. The bigwigs gathered at the Shrine Club for, of course, a lobster bake and dance. Saturday saw a contest among growers to produce the “Chicken of Tomorrow” that was held at the Macleod processing plant on Cross Street. A ton-and-a-half of locally raised poultry was barbecued the first year; it cost $1 for “all the chicken you can eat.” By 1956, when Gov. Ed Muskie and presidential candidate Adlai Stevenson crowned the Broiler Queen, chicken was Maine’s largest agricultural commodity with annual sales of $72 million (potatoes were second at $54 million). The new Penobscot Poultry plant on Cross Street was dedicated during the Festival and it could process a mind-boggling 180,000 birds a week. The Queen in 1958 was Bernice Watson Quirk of Corrinna, a high school senior who won competitions in her hometown and Bangor before her coronation in Belfast. Governor Muskie did the honors and also
accompanied Quirk on promotional trips around Maine and New England. She received two $500 college scholarships, luggage and a trip to the national poultry convention in Minnesota, where she was

named Miss Congeniality. She recalled later, “I think being a Broiler Queen builds your self-esteem. I think it makes you realize early in life that all that fanfare is nice, but it’s really shallow. What you really need is the ability to get out there and do things for others, and that’s what I really always wanted to do.”
Betty Perry, (and chicken), the 1949 Broiler Day Festival Queen.
A parade became part of the festivities in 1965, along with a hootenanny. The next year area businessmen incorporated to run the Festival, leading to the second era of Broiler Day in 1968. Under the leadership of Robert O. Hall, a Republican Journal ad salesman, Colonial Theater projectionist and city mayor (1974-76), and Michael Crowley, entertainment, not technology, was the byword for the Festival, which now featured a golf tournament and a water skiing exhibition and a parade that stretched for a mile along Northport Avenue. In 1970, Belfast’s bicentennial, an estimated 17,000 people crammed into City Park for the Festival, rivaling daily attendance at the Common Ground Fair. Admission to the fair was always free, and every year Hall would pump up interest by saying the current edition would be “the biggest and best Festival ever.” He sponsored huge Beano games, pancake breakfasts, visits by Navy destroyers, boxing tournaments, country music concerts, anything to attract a crowd. In 1985 he asked the City Council to let him bring a stripper to City Park, but they declined. The Broiler Festival wasn’t only an attraction for tourists. Local families from every status and background flocked to City Park to ride the ferris wheel, gorge on chicken and check out who was there. Families would save up all year so their kids could enjoy the rides and other attractions. In 1981 Maplewood Poultry closed and declared bankruptcy, and Festival organizers asked why the city should celebrate a dying industry. In no time the third weekend in July was reserved for the Belfast Bay Festival which featured, for a time, a chicken barbecue (Penobscot Poultry remained open until 1988). The parade and the midway and the rest of the fixings for a family celebration were retained, but the magic was gone. Even a $1 admission charge wasn’t enough to sustain the high cost of a major festival, and by the early 2000s, the carnival rolled out of town for good. Today, the Celtic Celebration, which has an entirely different mission and venue, is Belfast’s major attraction on the third weekend of July. 2015 www.belfastmaine.org

By Lisa Tichy
There is a general feeling that you’re either born an antiquer, (“junker” in some circles), or not. That you have the instinct, eye, and passion for the search. That no matter how decrepit, cold, musty and off the beaten path a shop may be, you’re always game for the hunt. Ninety degree heat and stifling humidity will not deter you from checking out the obscure flea market, or below freezing weather and driving snow, keep you from a show in some rural school gymnasium. For some this becomes a way of life. It frames their free time, informs their vacations and makes getting lost an adventure! Right: Joe and Bea Bryant of Bryant Stoves in Thorndike, Maine

“We don’t play golf, go to theme parks or partake of the usual Floridian follies, instead we go to yard sales.”

Belfast, Maine Kendrick’s Antiques 213 Northport Ave (Route 1) Belfast, Maine Bea Bryant and her collection of buttons. The collection spans almost three centuries of beautiful, unusual, and humorous finds.
This is not to say that over time, one cannot hone the instinct. It will slowly dawn on them, (or their partners, children, housemates), that perhaps the collection of vintage birdhouses, now taking over the garage, has suddenly gotten out of hand. Or that the stacks of obscure, first edition books leading into the living room, has finally become a hazard to circumnavigate. In whatever form the collecting bug takes hold, it does seem that once you have it, it’s a hard one to shake. Take for instance, Bryant Stoves in Thorndike, Maine. Bea Bryant will tell you that the wondrous array of stoves that line the showroom, began simply as a way to send her children to college. The tuition was due and they did not have the money to send their first daughter back for winter
22 Belfast The Bay and Beyond 2015
semester. After spending time reviewing Uncle Henry’s, Bea perceived a need and had a few stoves tucked away in the back of a barn. She listed them, they sold, their daughter returned to college, and Bryant Stoves was born. Bea and Joe sent their 5 children to the University of Maine on the proceeds that came from the sale of stoves. Today, what began as a business has grown to include the collecting passions of them both. Along with the stoves, one can now find Bea’s amazing button collection and assemblages, and Joe’s collection of 19th and early 20th century musical instruments of a particular kind: calliopes, street organs, and contraptions that once filled pre-war dance tents in Belgium with lively music into the wee hours. While each of them indulge their
respective collecting passions, together they have created a spectacular moving museum that is truly a delight to behold. Each winter Bea and Joe head to Florida. Joe explains it this way: “We don’t play golf, go to theme parks or partake of the usual Floridian follies, instead we go to yard sales.” It is while they are perusing these yard sales that they find the cast offs that will return with them to Maine. Once back in Thorndike, Bea will rehabilitate or re-fashion the stuffed animals, dolls, and all sorts of attendant paraphernalia, to populate and star in the museum that Joe has invented and built on site. When last visiting, Joe took me through the entry, flipped the first switch, and suddenly the air was filled with movement, color, sound, and phantasmagoric delight. It’s a visit I will always treasure.
Phyllis Sommer, proprietor and curator, Pumpkin Patch Antiques.
Pumpkin Patch Antiques in Searsport, is an experience of a different sort. Tucked away in a barn that she and her husband designed adjacent to the house, one will find Phyllis Sommer tending shop from early spring through late October. Originally from New York City, Phyllis brings a curatorial eye to her beautiful assortment of pieces that range from the 18th all the way up through the early 20th century. Most group shops are characterized by different dealers inhabiting their own section of the floor. Each dealer is responsible for his/her space and merchandises accordingly. This can lead to a somewhat wonderful, though haphazard assortment of various odds and ends,(and in my opinion, just the kind of place you want to spend an entire afternoon poring over), this can be found down the road at Searsport
24 Belfast The Bay and Beyond 2015
Antique Mall. What Phyllis accomplishes is at the other end of the spectrum: Clean, edited, juxtaposed and always interesting in a building that becomes the backdrop for her exquisite mix of pieces and periods. Phyllis groups categories of objects together, though she is so deft, that you may not notice that her porcelains and smalls are generally together, next to a case beautifully outfitted with 19th century Nepalese jewelry and Edwardian paste brooches. I make a habit of visiting Phyllis at least two or three times during the season, because along with a constant supply of new pieces arriving, Phyllis moves things around and is constantly inventing new arrangements. I asked her once how she works with so many dealers and gives each new piece such great exposure? She related it like this: “I know each of my dealers.
They know that when they bring me things, I have the final say about where and how they will be shown. Sometimes I will find a box of pieces left for me to go through. Some I will keep, others I will return. But in the end if they remain here, they will get seen and appreciated. The dealers I work with trust me and know this.” That same afternoon, we spoke at length about the future of the antiques business. Over the past fifteen years it’s become a tough business to succeed in. The advent of eBay, Google search and Antiques Roadshow have added a dimension to the business that’s been both good and bad. As most dealers will tell you, not everything that belonged to your Great Aunt Tilly is of value; few people retire on the contents of an old trunk. That said, the awareness on the part
Top Right: Interesting juxtapositions, and clean, well edited assortments characterize Pumpkin Patch Antiques. Bottom Right: Period lighting, furniture and accessories from the 18th century up through the early 20th century.
of the next generation has been growing. When I was young I remember my parents making their annual pilgrimage back to New England each fall to antique and visit the dealers they’d built relationships with over the years. Their purpose was singular: Appointing and decorating their period designed colonial home with age appropriate accoutrements. Each room was set with furniture, lighting and accessories much the way it might have been in the 18th century. Needless to say, I did not realize the value of what they were trying to create until I was much older. At the time, I just remember that I dreaded the weeks it was my turn to vacuum! Thankfully, (for most), times have changed, and it’s no longer the fashion to outfit an entire house with period antiques. I asked Phyllis this question: “Are you seeing younger people in the shop and what are they buying?” She did not hesitate to enthusiastically say that “yes”, she was seeing younger people shopping, but that they were buying to fill a need, as opposed to maintain a look. They recognized the value in purchasing a beautiful, early chest of drawers as opposed to buying a DIY Ikea version. My own observations were confirmed at the recent Waldoboro antiques show. A young couple came around the corner and spied an old, blue, punched tin pie safe, and exclaimed, “OMG this is fantastic! We have to have it!!!” I doubt very much that pies will ever again be stored in the safe. I’m not sure It matters. Falling in love with antiques before you even know where they will end up, is part of the love affair that fuels each discovery. l 2015 www.belfastmaine.org

Front Street Pub As you’re strolling Belfast’s Beautiful Harbor walk you’ll head right by The Front Street Pub
Going into its 11th year, the pub has become a Belfast staple. When they added outside dining in 2010 it became an even better place to enjoy the sun and sights of Belfast. Throughout the years many changes have been made, time has flown by and from the pub many other businesses have started including Katwalk, La Vida, Delvinos and The Lobster Trap. If you happen to stop into the Front Street Pub, make sure to sample some of the local treats they have. FOOD The Front Street Pub makes 99% of the items on their menu in house. Often times using locally sourced and staff grown foods. Maine items such as oysters and mussels right from our waters. Maine raised ground beef burgers. Maine made cheddar for the house “Mozzarella” sticks. Local eggs and even picking and stocking up on their own fiddleheads, which just so happen to be delicious fried up with some

ranch dipping sauce! When in Maine…EAT LOBSTER! The pub always has lobster rolls on the menu in the summer months. Enjoy one for lunch or dinner! BEER The Front Street Pub has 17 drafts, most of which are local brews. LIQUOR Maine made 22 vodka, Cold River Vodka and Backriver Cranberry Gin are among a few of their local choices. Katherine Loblein and Tina DelSanto owners and operators of The Front Street Pub grew from girls to women and realized not only what it meant to own their own businesses, but also what it meant to be part of a community they love. Along with their partners Anthony Jacovino and John Gibbs they are actively involved in their local Chamber of Commerce, were able to organize the Celtic Festival Beer tent, donate to hospice, and the game loft, along
with many other non-profit organizations. The Front Street Pub has seen Belfast transform over the past ten years. They look forward to the exciting changes that will undoubtedly happen in the next ten years. Front Street Pub will be there with the Belfast community as they continue to grow and evolve.

FOOD & DINING
Delvinos Grill & Pasta House & La Vida Restaurant Some say that great ideas start on a napkin in a bar. In Delvino’s Grill & Pasta House’s case, it is true…..
“We love giving people a wonderful experience through great food, warm atmosphere, and great customer service!” —Anthony Jacovino
“We’re so grateful to the people of Belfast who have supported us along the way, and allowed us to serve the greater community. We’ve been so thankful for this amazing opportunity.” La Vida surf & turf fajitas with marinated steak & Maine shrimp.
Pan-seared local diver scallops over Mediterranean risotto at Delvino’s.
THE STORY The story begins in 2005 for the owners of Delvino’s, Anthony Jacovino & Tina DelSanto. Anthony went to The Lookout Pub (recently renamed The Front Street Pub) to visit his friend Katherine Loblein. The visit yielded an introduction to Katherine’s business partner, Tina DelSanto. As it turns out, Anthony and Tina were both looking for apartments…you guessed it! Tina and Anthony became apartment mates and friends and fell in love. The rest is Belfast restaurant history. Fast-forward a few years to The Lookout, again, where Tina meets Bruce Thomas, another bona fide Belfast Lover. It’s 2010, and Belfast is once again going through a transformation. Bruce had recently bought a building that he knew the couple was dying to put a restaurant in. Over many months of working with Bruce, Tina and Anthony opened Delvino’s Grill & Pasta House in June of 2010.
In October 2011, Anthony & Tina opened their second restaurant, La Vida Mexican & Caribbean Restaurant. La Vida means “The Life” in Spanish, and that’s what they are aiming to live, The Life! THE FOOD Delvino’s: Stepping through the doors you might think you are in New York or Boston but you’re actually in Delvino’s Grill and Pasta House in beautiful downtown Belfast. Delvino’s is the perfect date night, family gathering, relaxing, upscale location with creative food, located in the historical downtown within walking distance from the harbor. The restaurant is in a circa 1865 brick building. Delvino’s takes advantage of everything the community has to offer: lobster and mussels harvested from our harbor, as well as produce, meats and cheeses sourced locally which add flare to an eclectic Italian menu. La Vida: Has local and imported foods with Mexican & Caribbean flare.

The dining room, lounge and bar with real fruit cocktails and homemade foods provide an exceptionally nice and laid back atmosphere. Anthony and Tina transformed the space into a brightly colored spot with an enthusiastic and creative staff providing outstanding service.

TWO BUSINESSES INFUSE THE MIDCOAST PALATE WITH WINE AND CHEESE By Arielle Greenberg Bywater
Terroir is a notion central to wine and cheese-making. While the French term literally means “earth” or “soil,” its connotations are deeper than that: it suggests all the particulars of a region—the climate, elevation, character of the land—that come to bear on what’s grown there and how it ends up tasting.
Joseph A. Corrado Photography
Jack Scully of Easterly Wine
Easterly Wines features well made wines that are not mass produced.
Anyone familiar with the Belfast area knows that we have a very special cultural terroir, one that inspires creative entrepreneurs to run their businesses here. Two such businesses —Easterly Wine and Eat More Cheese—make the lives of the gourmands and home cooks who live and visit the region all the more delicious. Easterly Wine is a distribution company owned by Jack Scully, a charming gentleman who runs it with eight employees and five trucks out of a small, homey warehouse on Route 1. Drawn to the area by his wife Tammy, who was raising her family here, Jack has forged a career he truly loves. “It’s a lot of work, but it’s worth it. I like being busy and I am,” Jack says. “I feel real lucky.” Jack grew up around niche wholesale:
36 Belfast The Bay and Beyond 2015
“IT’S A LOT OF WORK, BUT IT’S WORTH IT.”
his father and grandfather owned the American Fire Equipment Company, a “small, beautiful company.” When Jack’s father died in the mid-1970s, Jack took the business over before moving on some years later to Ideal Wine and Spirits, an importer in Massachusetts, where he learned the industry. “I learned to look for balance, structure and fruit, acidity: things that show integrity and skill in the winemaking,” Jack says. As a businessman, Jack notes that what he lacks in detail consciousness—Tammy’s strong suit—he makes up for in a willingness to engage with people. “I enjoy the relationships.” Experience has shown Jack that Maine has a very sophisticated market for wine: excellent restaurants and stores from
Kittery to Machias, to which Easterly distributes via Ideal. Because of Maine’s rules around alcohol, distributors pay cash on delivery, which means, as Jack says, “you put a little more thought into what you buy: three bottles of this, a case of that,” instead of big bulk orders. Jack shies away from “trends and gimmicky labels,” preferring “well-made wines that aren’t mass-produced.” “People need carefully crafted things,” he says. But he is aware of the economics of wine consumption in the state, and offers everything from good California Chardonnays that retail for $8.99, to charming Spanish wines or Tuscan reds at $15, and upwards to expensive but luscious Oregon pinot noirs that elevates a nice dinner to an experience to remember.
eeNatalia Rose with an assortment of olives and charcuterie.
“THE MORE YOU TRY, THE MORE YOU DEVELOP YOUR PALATE.” Local, national, and international cheeses are available at Eat More Cheese.
Natalia and Tony Rose believe that part of that dinner should be a hunk of good cheese. While neither member of the sweet-natured young couple have a background in either restaurants or retail, their love for one another blossomed while exploring the world-class food scene in Portland, where they met, and went handin-hand with a love for the food itself. “Cheese was a discovery, part of the weekly grocery shopping we did together,” Natalia says. “We realized that the simple combination of milk, salt and rennet can make thousands of different flavors and textures, that there was a whole universe out there we knew nothing about.” The decision to open a cheese shop in Belfast also grew out of their personal romance: they visited the town on their first anniversary and just kept coming back, and since, at the time, there were no other full-service cheesemongers around, they decided to give their retail dream a go in Belfast’s downtown.
“Anyone can buy a deli case and put cheese in it,” Natalia says. “But you need a place where customers can ask questions, have a cheese conversation.” Eat More Cheese, the store where such conversations happen, opened in 2012, first in a small space tucked behind the main drag, and now in a highly visible location at 94 Main Street. The shop is friendly and unpretentious, offering tastes of everything they carry, and catering to regulars during the off-season and augmenting picnics for tourists and locals alike in the summer. “Cheese is an old-fashioned industry: you have to get suggestions from other people, and then taste it for yourself, to find out what you like,” Tony says, and this is one of the things that draws him and Natalia to it. Every week when their new shipments arrive—from the Netherlands, France, Spain, New Zealand, Wisconsin, Vermont—they make new discoveries, since much of what they order isn’t familiar
to them until they unwrap and sample it. If sales at Eat More Cheese are any measure of Midcoast Maine tastes, then let it be known that Midcoast palates are geared to hearty, sturdy cheeses—aged goudas and cheddars—as well as rich, decadent triple creams and “nutty, brown-buttery” Manchego. The shop stocks these varieties and more, along with seasonal Maine-made goat’s milk cheeses and a coffee- and lavender-rubbed cheddar from Utah. Natalia, Tony and Jack all agree: learning to care about cheese and wine is like learning to care about anything: you have to keep your mind—and taste buds—open. “The more you try, the more you develop your palate,” Natalia says. It’s all a matter of being willing to experiment and evolve. “Trust your own senses,” Jack says, but allow yourself to change, because figuring out your tastes “is a lifelong process,” And, thanks to the hard work and passion of these local merchants, it’s a process in which we can all partake.

Youngtown Inn This quaint and cozy Lincolnville inn is home to fantastic French chef Manuel Mercier Where are you from? I was born in Paris and spent my teenage years in the south of France. While I was working on a small cruise ship in 1988, I met my wife MaryAnn. It was the classic shipboard romance, but then I made one of those life-changing decisions and accepted her invitation to join her on her return to New York City. We were married in 1989 and moved to Maine in December, 1992. What is your first food memory? The farmers’ market in the south of France. It would come to my town twice a week and take over the town square. I was interested in all the different foods. What are some of your early cooking experiences? I started working in restaurants when I was 15. I really enjoyed watching and learning from the chefs. Any family influences on your style and taste? I knew that food was in my future at a very young age. My family would visit my grandparents’ house and I would always watch my grandmother cook. I spent many years in Provence, so I tend to cook with the French country flair. Where did you study and apprentice? When I was 18 I received an apprenticeship position at the Majestic Hotel in Cannes. I spent two years working in every section of this large kitchen under the guidance of Chef Bagnasco. When did you realize you were a chef? I realized when I was about 16 that I wanted to be a chef. I enjoyed being around food all the time. I had already developed an acute sense of taste and smell and challenged myself to determine the ingredients of a dish before asking for the recipe. When did the inn open? How did you come to be the owners? I was a private chef for a very affluent (and demanding) French family in New York City. That job made me realize that I wanted to own my own restaurant and be my own
40 Belfast The Bay and Beyond 2015
boss. MaryAnn and I started looking for restaurants for sale through The New York Times. Each weekend, MaryAnn and I scoured the newspaper and set out looking for restaurants for sale. One week we came across a listing from a business broker in Maine. We saw about 10 properties before arriving in the Camden hills area. It was spectacular! We took the scenic drive down Route 52 past Maiden’s Cliff and there it was—the Youngtown Inn, a federal farmhouse built in 1810. We made an offer that day. That was September, 1991. We moved in on December 5, 1992, with our fourmonth old son, Matthew. What do you love about your location? This is utopia. We are located four-and-ahalf miles from Camden center, tucked into the Camden Hills. We are far enough off busy Route 1 to enjoy the quiet and country feel, but close enough to the surrounding towns to attract appreciative customers and tourists. It has been a wonderful place to raise our three sons and to build a life, which has allowed us to make a living by sharing our home and our talents. MaryAnn is the innkeeper. She has a natural skill at making people feel at home and part of the family. What is your favorite ingredient to work with? I love working with fresh fish. I enjoy getting the whole fish, filleting it, and using all the bones to make stock. When was the last time you really surprised yourself in the kitchen? I am not a pastry chef. I try, but measuring is not my thing, and you need to measure in pastry. That’s why I like soufflés so much. They work with a pinch of this and that. Last year I was making truffles and decided I would try using the recipe in a cake. It’s now the best selling dessert on our menu. It’s a chocolate lover’s dream. What do you love most about your job? That guests drive to the “middle of nowhere” to eat my food and stay in our

Windsor Chairmakers Hand crafting furniture, one piece at a time.
Located just six miles north of Camden on U.S. Route 1, Windsor Chairmakers has been a must-see destination for over a quarter of a century. The owners, Jim and Nance Brown, have created the quintessential Yankee workshop on a historic 5 acre homestead. The old barn now serves as the workshop where you are invited to wander through and see one-of-a-kind pieces of furniture being made. While Windsor Chairmakers is famous for the craftsmanship and comfort of their Windsor chairs, you will also see the crew at work handcrafting custom dining tables, beds, buffets, desks, chests, stools as well as custom pieces. The circa 1800 farmhouse welcomes visitors to explore over 15 rooms, all designed to showcase the traditional American furniture designed by Jim Brown and made on site. Each room displays furniture made in American hardwoods like Tiger Maple, Cherry, Curly Birch and Walnut, and creates an experience designed to inspire you when you choose your own custom furniture. The Shaker Gallery displays the Shaker-inspired furniture also designed by Brown. The Shaker furniture collection was selected as “One of America’s Best” for 2014 and is included in the Directory of Traditional American Crafts, highlighting the quality of design, construction and finishes found in all Windsor Chairmakers furniture. The friendly and knowledgeable crew at Windsor Chairmakers invite you to come and explore this special place. You can choose to purchase the perfect piece from the showroom, arrange to have a custom piece built for you or simply come by and visit. You’ll find this business reflects the Browns’ philosophy about making furniture here in Maine: “Things are best kept simple.
