Farmer’s Harvest Pie This is a wonderful quiche-like breakfast that can be made vegan, vegetarian or omnivorous. It is a very versatile recipe for nearly anything you’ve got growing in your garden or left over. Ingredients for one large pie • 3-4 potatoes medium size • 4-6 eggs • 1/4 Half & Half • Vegetables whatever’s in your garden, • Zucchini, Tomatoes, • Herbs like sage • Greens kale, spinach etc… • Diced 2-3 Garlic cloves

• Onion • Salt & pepper to taste • 1 cup grated cheese of your choice, Gouda, Swiss, Cheddar, parmesan. STEP 1: Grate potatoes and zucchini (or other). Dice onions and other veggies STEP 2: Fry the potatoes in a pan about the width of you pie pan. Fry until the form a golden brown crust and place in the bottom of your pie dish STEP 3: Add onions and other diced and grated other veggies and greens to the pie dish. For meat eaters add cooked bacon or sausage here. STEP 4: Beat eggs with half & half, salt and pepper then pour over the veggies in the pie dish add more eggs till you just fill the dish STEP 5: Cover with grated cheese and bake 350 for 30 min or until a knife comes out clean.
