Ducksoup Clare Lattin Orzo Pasta, Spicy Tomato Sauce & Feta The Italians use orzo in soups and stews, as it’s a good way to bulk out a dish without filling yourself up too much. Feta gives this dish an added saltiness, but not in the same way that Parmesan would— it’s more gentle. This dish reminds of how good a well-made feta can be. We love this dish as a summer weeknight supper. SERVES 2
1 lb [500 g] large tomatoes (we love Pink Oxheart tomatoes) 3 tbsp extra-virgin olive oil, plus extra for drizzling 1 tsp cumin seeds 1 tsp nigella seeds 1 small onion, diced 1 garlic clove, crushed 1 tsp dried chile flakes 1 bay leaf 1 tsp paprika 4 oz [120 g] orzo pasta 31⁄2 oz [100 g] feta Few leaves of fresh oregano
First skin the tomatoes. Bring a large pan of water to a boil. Using a sharp knife, score a little cross at the base of the tomatoes and cut out the “eye” of the tomato at the other end. Have a large bowl of ice water ready, and once your water is boiling submerge the tomatoes for 15 seconds, then immediately plunge them into the ice water. You’ll be able to peel off their skins immediately. Set to one side. In a large frying pan, temper the cumin and nigella seeds in the olive oil over low heat for 1 minute, then add the onion and cook until soft. Add the garlic, chile flakes, bay leaf, and paprika and cook for 2 minutes. Coarsely chop the tomatoes, add to the onions, and simmer for 10 minutes. You’re looking for a soupy consistency, so if you need to add a little water, then do so. Season with salt and pepper. While your sauce is cooking, bring a large pan of salted water to a boil and cook your orzo pasta for 10 minutes, or according to the package instructions. Drain and add to the tomato sauce. Let everything cook together for a couple of minutes. To serve, divide between two bowls, crumble the feta over, and sprinkle with the fresh oregano and a drizzle of olive oil.

Corn on the Cob with Chile Butter
SERVE S 8
8 ounces (2 sticks) unsalted butter, softened at room temperature 1 teaspoon kosher salt 2 ounces Fresno chiles (about 3 chiles), halved (stems, seeds, and membranes removed and discarded) 1 medium or large garlic clove, peeled 8 ears corn on the cob Maldon sea salt (or another flaky sea salt such as fleur de sel)
Nothing says “summer” to me more than grilled corn on the cob. In this recipe, the corn is dressed with a compound butter made with Fresno chiles, garlic, and salt. Make this only with delicious, farm-fresh corn when it’s in season. To turn this into Mexican-style corn on the cob, which I do when serving it with Sal’s Roasted Pork Shoulder (page 48) or Garlic-Rubbed Skirt Steak with Scallion Vinaigrette (page 194), squeeze lime juice over the corn after it’s cooked, roll it in finely grated Parmigiano or queso cotija, and top the corn with a dollop of crema (Mexican sour cream) or crème fraîche. If you are not cooking these on an outdoor grill, you will need a square or rectangular grill pan such as a 20-inch Lodge reversible grill/griddle.
Put the butter and kosher salt in a medium bowl. Finely chop the chiles until they are almost pulverized. Scrape the chiles off the cutting board using the side of a knife to get even the smallest bits and add the chiles to the bowl with the butter. Using a fine Microplane, grate the garlic directly into the bowl and stir with a rubber spatula or wooden spoon until the additions are thoroughly incorporated. Set the butter aside if you are using it right away, or cover and refrigerate for up to 3 days. Soften it at room temperature before using it. Pull back the husks from the corn and remove and discard the silks, leaving the husks attached. Slather the corn with chile butter, wrap the husks around the corn, leaving 1 inch of the corn kernels exposed, and tie the husks at the top with twine. Prepare a hot fire in a charcoal or gas grill to high heat. Alternatively, preheat a cast-iron skillet or grill pan over high heat until it is smoking hot. Put the corn on the grill or in the skillet and cook for 5 to 7 minutes, until the corn is cooked through, turning the corn to cook it evenly on all sides. Remove the corn from the grill or skillet and put it on a large baking sheet. Peel the husks back to expose the kernels and leave the husks attached to use as a handle. Slather 1 tablespoon of the butter on each ear of corn and sprinkle generously with sea salt. To serve, transfer the corn cobs to a long serving platter, no serving utensil necessary.
