Summer Fashion

Trend alerts for the season

Summer is ablaze with colours and trends, making it an incredibly eclectic season. There’s no need to stick to one look, have fun and flip from one style to another every day. It’s been edging its way into outfits for a couple of seasons and now that the sun is invariably shining, the crop top is a certain fixture for this season. High waisted shorts, pants and skirts with a cropped top will give a flattering look with a little strip of skin revealed. For the daytime, wear a pair of faded boyfriend jeans, rolled up to the ankle, with a snug little crop top or add a chambray shirt loosely over the top and slip on some heels. Denim, whether it’s distressed, vintage washed or soft blue will be a summer hit, not that denim ever goes out of fashion. Look out for sleeveless and cropped denim shirts, loose chambray shirts, utility pants and shorts. Shirred waist bands help to give a relaxed, summery look. White is a great pairing with denim but white on white is even more striking. Tailored white shirts look fabulous with narrow white pants as will shirts with sheer panels and cut outs. It’s an androgynous look that can be exaggerated with an over-sized white blazer yet, with fine gold accessories and towering heels, you can easily add femininity and sophistication. We can’t go too far without mentioning the colour combination of black and white. It is clearly a trans-seasonal fashion hit and right now monochrome prints of all sorts are everywhere. Try mixing up the prints for a dramatic look, although remember it is most successful when lines of clothes are kept simple. There’s also a softer ladylike trend emerging in the form of pretty, floral tea-party dresses, silk slips and little kitten heels. Lace panels add to the romantic feel. The Eastern feminine trend

is carrying on from spring too with dresses, shell tops and cropped jackets featuring intricate blossoms. Metallic accessories really set this look off. Metallic shimmer and shine is a big part of summer with sequins and detailing on tops and dresses. Another trend emerging is all about ruffles whether as a peplum, as a frill along the hem of a skirt, or on a dress. It’s feminine and adds fun to simple items. For men, they can do no wrong if they follow the nautical theme. As well as the striped tees, the classic yachting windbreaker, very popular during the European summer, is a perfect cover up for a cool evening. After studying Certificate 3 and 4 in Garment Construction, owner Christine Sunderland was approached by a friend to design a chlorineresistant swimwear collection. Who’s New? Shoe Gal

Located at Shop 3, 17 Albert Street in the heart of Busselton, Shoe Gal is the south west’s newest shoe shop. This stylish boutique originally began as a home-based business and is run by local entrepreneur (and former Telstra Business Women’s Award winner) Nikki Griffiths and her graphic designer husband, Warren. Wherever they travelled in the world they would bring back a shipment of unique and different shoes for friends and family and it wasn’t long before word spread, even to women in Mandurah and Perth.

The store operates out of a renovated shop that was built in 1899; a building that still holds plenty of old world charm. In store, however, Shoe Gal’s products are unique, funky and right on trend for each season. Discover a range of fabulous brands, including Serenade, Guess, Mollini, Top End, BC, Born, Poetic Licence, Fly London, Laura Vita, Django and Juliette, I love Billy, French Sole and Bella Ragazza to name just a few. There are also bags, gifts and accessories as well as a select range of shoes for men, including Guess and Rollie. The store also donates 5% of all sales to the Tenderfeet Education Centre in Kibera, Kenya, which provides food and education to poverty stricken and orphaned children in one of the world’s worse slums.

In May 2013, they decided to set up a shop on Albert Street, across from McDonalds, and since then they haven’t looked back. Nikki and Warren still want their shop to reflect their successful home business and encourage customers to enjoy a cup of tea, coffee or champagne while they shop. Customers are also given delicious treats to take home.

Making the most of your outdoor space

With more hours of sunshine that any other state, Western Australia provides the perfect climate for those who enjoy the outside life. Not only are we blessed with hot dry days, we also enjoy gloriously balmy evenings perfect for entertaining family and friends. So how can we make the most of our outside space at this time of the year?

Outdoor Kitchen The ultimate statement in outdoor living, the outdoor kitchen is all the rage. After all, if the kitchen is the centre of the home inside, then it should follow that an outdoor kitchen creates the same great entertaining area outside. So get rid of that tired old BBQ and, if the bank balance is willing, transform your outside space with a grill, fridge, sink and maybe even a pizza oven or wine storage area. You’ll be the envy of your friends, family and neighbours. Plus, you’ll never have to make those trips between the inside cooker and the outside table again!

Furnishings Furnishing your outside area is one of the keys to creating a comfortable and versatile outdoor living space. Create workable spaces that provide relaxing areas for socialising, i.e. don’t fall into the trap of arranging all of your chairs up against one outside wall. remains cool underfoot. Plus, being poured as one piece there are no gaps for unsightly weeds to grow through or burrowing ants to form anthills. Just seal it once it goes down and remember that in the event of needing to access burst pipes underneath, it’s not possible to just remove one slab! Decking is an increasingly popular way of creating a natural, luxurious feel to an outside area. Again, ideal in summer conditions, a deck is a real statement in style. Generally a more expensive option than pavers, its drawback is that once down it will require regular maintenance including oiling at least twice a year and sanding. If you can put up with that and the odd scratch from overactive kids, it will transform the look of an outside area.

Use solar powered lighting to create walkways or to highlight plants, and use lanterns or candles to create a soft ambience.

Bi-fold Doors The phrase ‘bringing the outside in’ was tailor-made for bi-fold doors. Incredibly stylish whether made from hardwood or aluminium, they open up a world of possibilities for the entertaining area. Recent innovations mean that it’s now possible to buy bi-folds with retractable flyscreens. Simply open up your doors, draw the screen across and your outside entertaining space connects as one with the inside.

Plants In the same way that accessories complement furniture, well thought out and cleverly arranged plants can add the ideal finishing touch. In our harsh climate, try to pick water-wise plants that will survive without constant watering and space them out to create a structured feel. Cordylines are perfect for creating low cost, low maintenance, colourful borders around entertaining areas.

Choosing the right lighting will create an inviting area for spending time after dark whilst lighting up popular areas of the garden. Homeward Bound Imports

Chris and Jayne Bowen-Sant, owners of Homeward Bound Imports, are not exactly new to retail, having opened their first shop over 30 years ago! Back in 1976, after having travelled the world for 3 years, the pair decided to put down their roots in Busselton and it was here that they opened their first store. Starting off by selling Jayne’s handmade jewellery together with a collection of exotic gifts gathered from the Philippines and China, it wasn’t long before the store was expanded to include a range of more diverse and eclectic stock. Following the demolition of the store to make way for a large shopping centre, Chris and Jayne opened a new shop within the new centre, and so began a journey that would lead to a total of 14 shops in the next 3 decades. Having operated out of Bunbury for the last 5 years, their latest venture sees Chris and Jayne return to Busselton with the opening of Homeward Bound Imports in the Busselton light industrial area. As with the previous Bunbury store, the new shop specialises in

importing a unique range of furniture, homewares and accessories predominantly sourced from Indonesia, India and Afghanistan. The latest shipment to have arrived features an eclectic mix of furniture styles, including vintage, shabby-chic, recycled boat timber and whitewash teak with much of the furniture in the signature style of the store. In addition to the furniture is an extensive range of decorative items, including mirrors, lamps, floor rugs, glassware, garden ornaments, bird cages and more. The store is a veritable ‘Aladdin’s Cave’ and, with its large floor space and different display areas, there’s plenty to catch the eye. The store also now stocks Jayne’s own resort-wear style label Island Time. This offers an affordable mix and match range with pieces all priced under $60. With stock levels now falling below 500 active listings for the region, a reduction of over 45% from 2010 and 2011, together with the increase in buyer demand, we would expect to see the market tighten considerably over the summer period, especially for beachside property. The rural residential sector has also been very productive over the winter months and we would expect this to tighten somewhat as we move forward. With around 2Â months of data still to be recorded (at the time of writing this article), recently released REIWA figures show that 2013 is on course to be a big year in real estate for the region. In fact, 2013 is set to be the best year since 2007 in terms of overall turnover for the Dunsborough, Quindalup, Yallingup and Eagle Bay localities. With sales figures looking at tipping over 400 for the region, for the first time in 6 years, the supply and demand ledger is finally starting to look balanced, which in turn is resulting in a return to positive capital growth rates. According to REIWA, the average sale price has remained fairly stable for the past 12 months but our own office sales figures have been showing capital growth in most areas. One such area, Dunsborough Lakes, has seen growth of between 10 to 15% in a neighbourhood where a large proportion of affordable housing is located. Property sales in the premium $1m to $2.5m price range have also increased considerably this year, resulting in our office achieving an average sale price of over $900,000 for the 100 sales we have completed this year. 34

That well-used expression, ‘first impressions count’, should have been created just for the Mercedes Benz CLA. Here at The Busselton-Dunsborough Life, our first glimpse of the car was a few months ago on the Mercedes-Benz portal. Captivated by its sweeping curves and thrilling lines, it was one of those moments that sticks in the memory. Now a few months on as we finally view this magnificent new addition to the Mercedes range, we can report that the CLA is just as impressive, if not more so, in the flesh. Pitched between the A-Class and C-Class, the CLA is in some ways a slightly difficult car to pigeon-hole. This is most certainly a compliment. Historically, all great designs when first sighted create the same conundrum and the new CLA is no different. As one of the best-selling SUV’s over the past decade in Australia, there is no denying our love affair with the Toyota Prado. Slotting in between its two siblings, the Landcruiser and the Kluger, the Prado was first launched in 1996 when Toyota were looking for a sophisticated 4WD to position itself underneath the Landcruiser. Originally named the Landcruiser Prado, it was introduced to take advantage of the burgeoning SUV market and was the first Toyota to be designed outside Japan. With around 200,000 models now sold in this country over its 17-year life, the Prado is without doubt an extremely important brand for Toyota down-under as well as being a huge

As Dealer Principal at one of regional WA’s most successful car dealerships, Busselton Toyota, Laurie Saltarini has been one of the south west’s most recognisable businessmen for almost 20 years. With his brand new state-of-the-art dealership about to open, The Busselton-Dunsborough Life caught up with him for a chat. How long have you been associated with Toyota and when did you take the helm at Busselton? After starting my career at GM Holden in 1976, I then spent 7 years working under Stan Perron, helping to run the Toyota WA distribution network and liaising with dealers throughout the state. It was then I decided that perhaps I should do this for myself and bought into Busselton Toyota in 1995. What do you think is the secret to your dealership’s success? Our customer service has always been our point of difference. A lot of people talk about customer service but few understand what it really means. I also believe that if you run a successful business, then you have to support the community you operate in, and we have always been a big sponsor of local businesses and events. I also pride myself on a very thorough approach to business and I would like to think that this has also been a factor. How has the car industry changed since you began your career? It’s changed a lot. The technology and IT revolution has meant we do business differently these days and the cars we sell have dramatically improved and will continue to do so. It’s still very much a people business, though, and perhaps that’s where technology hasn’t helped. There’s nothing better than picking up a phone and talking to someone as opposed to sending an email. One thing hasn’t

changed, though. It’s still a very competitive business. What benefits do you see the brand new state-of-the-art dealership bringing to your business? The new showroom will bring a number of positives. For customers, our level of service will improve further with an improvement in facilities, technology and comfort. It will also help improve employee satisfaction and the efficiency of our business. It also assures our future and the next phase of our dealership. If push comes to shove, what’s your favourite Toyota of all time? It would have to be the Landcruiser Sahara 100 series turbo-diesel. Luxurious on-road, I particularly like the fridge in the centre console, and as a big fan of off-roading, it’s the perfect 4x4 to go exploring with. There’s nothing better than sitting on the beach, tailgate down, waiting for a bite. Which Toyota do you drive? Currently, it’s the turbo-diesel GXL Landcruiser, but I am waiting on the VS turbo-diesel. How do you spend your spare time away from the dealership? Well, firstly I turn off my computer and mobile phone! Fishing is my passion, I’ll fish anywhere! In fact, I’m off to do some Barramundi fishing shortly near Darwin. I also play golf and own a couple of boats, including a 2007 Bar Crusher. At home, I also enjoy growing veggies! Well, I’ll have to find something to do when I retire! (Don’t expect that to happen some time soon! – Ed). 48

Avoiding hidden sugar in foods

So called ‘healthy’ foods may not always be what they seem. Here are 10 foods that often contain large amounts of hidden sugar:1. Fruit Juices - They might seem healthy but some fruit juices can contain the equivalent of 10 teaspoons of sugar! 2. Tomato Sauce - Sugar is often added to tomato-based products to counter acidity. Research has shown that up to one third of the contents of a bottle of sauce can be sugar. 3. Peanut Butter - Tastes great but it’s full of added sugar. Read the label and compare brands. 4. Salad Dressings - Low-fat dressings are often guilty of replacing fat with extra sugar and salt to improve the taste. 5. Dried Fruit - Often containing high amounts of sugar, the problem here is compounded by the fact that it’s easier to eat a greater amount of dried fruit than normal fruit. 6. Yoghurt - Flavoured versions, in particular, will contain added sugar as will low and non-fat brands. 7. Breakfast Cereals - Notorious for their sugar content! Again, read the labels and compare brands. 8. Health Bars - Avoid snacking on these!

Many contain the equivalent of up to 3 teaspoons of sugar per 30g bar. 9. Canned Vegetables - Often contain added sugar to help preserve them for longer. Avoid and buy fresh. 10. Canned Soup - Again, as with canned vegetables, sugar can be used to extend the shelf-life of the product.

This hobby includes the art of Tumbling, creating beautifully polished round stones, Cabbing, hand cutting on a grinder polisher, and Faceting, where a perfectly cut stone, like a diamond, is created. If you are thinking of fossicking for gemstones you may come across some just off the bitumen track of major highways or it may require some full on adventure with your 4x4. One thing is for sure, exploring the bush and camping outside whilst enjoying the peace and quiet is hard to explain unless experienced. Before setting out, always remember to take with you a few basic essentials. In WA, you need to obtain a Miner’s Right, which is available at any Mining Registrar’s office. They may also be purchased at the Department of Minerals and Energy. It also pays to remember basic tools such as a rock pick and shovel and

to take enough water and food. Do your research before you set off, plan your trip, get familiar with the roads and take a detailed map. If you’re lucky, the food eaten and fuel used will be replaced with an even greater weight in rocks for the journey home. Don’t forget, there will also be some fabulous photo opportunities not only during the day but also during the night whilst enjoying the campfire and star lit skies. Local Artisans Meet Renee Evans

For Bunbury-based jewellery designer Renee Evans, design has always come naturally. Entirely self-taught, Renee began creating pieces for her friends and family from a young age and her love of design continued throughout her schooling. On leaving school, Renee balanced her passion for jewellery design with her job as a dental nurse and, after securing a number of contracts with local gift and jewellery stores, she decided to start her own business. Initially starting with an out of town workshop, before her twentieth birthday she had opened her first store Eshe in Stephen Street, Bunbury, followed by a second store in Dunsborough shortly after. As well as running her 2 stores, Renee has also created Bowerbird, her very own unique jewellery collection. Drawing on influences from the world, nature and from her own journeys and life experiences, Renee was also inspired by a generous inheritance from her grandmother – a treasure chest of exotic jewellery from her worldwide travels. These pieces further fuelled Renee’s creative drive and appreciation of the craft and Bowerbird was born. Situated in the heart of Busselton in the Busselton Boulevard Shopping Centre, Blue 62 is the area’s one-stop location for all things music. Established over 20 years, the store specialises in vinyl, old and new, and musical instrument sales as well as having an in-depth knowledge of the local music scene. Run by local musicians Bron and Taylor Haenow since May 2013, the duo are members of the local APEX Club and perform regularly in the local area under the name Jack’s Golden Tales. Instruments sold cater for all ages and styles of music, the store even has acoustic guitars to fit a 5 year old, and the team can also recommend local music teachers, depending on the student’s level of skill. In store, find a selection of guitars, keyboards, harmonicas, drum sticks, instrument cases, straps, and bongos with Ziljdian, ESP, Washburn, Hughes and Kettner, Randall and Ernie Ball just some of the brands available amongst others. Being musicians, Bron and Taylor know from personal experience how frustrating it can be when a guitar snaps a string and a replacement is hard to find especially when away from home. Often the store name is mistaken for ‘Blues’ 62, but Bron and Taylor admit they don’t like to correct it! Vinyl vs CD

Recently at Blue 62, with the help of members from the Busselton APEX Club, the staff held a listening party to discuss the overall listening experience and the different factors at play when hearing the same album on CD and vinyl. It was decided that albums from different eras would be used and that the vinyl album would be a re-pressed recording. With the judges ranging in age from 17 to 45 years old, the albums chosen were the classic 1977 album Rumours by Fleetwood Mac and 21 by British singer Adele, released in 2011. On both the CD and LP, the group evaluated 3 tracks from each album. On Rumours, the songs listened to were 1.Second Hand News 2.Dreams and 3.Go Your Own Way. On 21, the songs were 1.Rolling In the Deep 2.Set Fire to the Rain and 3.Someone Like You. The shop was temporarily transformed into a campsite with the circa 1960’s turntable acting as the warmth of a fire with all seats facing towards it. A CD was first to play overhead on the surround speaker system and pens and ears were at the ready to compare and judge. After an intense listening session, the following comments were made:Advantages of CDs - Compact and transportable, convenient, a greater range of artists available. Advantages of LPs – Bring back nostalgic tendencies, a raw and balanced sound, impart romantic associations, retro and cool, and just watching the vinyl spin is fascinating and social. Disadvantages of CDs - smaller booklets and pictures, becoming obsolete with digital downloads, too layered in sound. Disadvantages of LPs - bulkiness and less clear sound. After a fascinating discussion, the general overall consensus was more in favour for the vinyl listening experience and traditional recordings. Mp3 players may be incredibly popular today, but even having the younger generation’s input, the vinyl experience came out on top. Huge thanks to the APEX team, Rodney, Allen, Donnetta, Kieran, Allen and Sophie and especially Shannon for their participation and honesty in this exercise!

complex spans both sides of Queen Street, a short walk from Busselton’s famous jetty. ArtGeo Cultural Complex has two main galleries – ArtGeo Gallery and the Courthouse Gallery. ArtGeo Gallery provides a delightful ‘white cube’ space for temporary and touring exhibitions in a refurbished early 20th century pavilion. The Courthouse Gallery specialises in arts and crafts from the South West region displayed in a 19th century judicial precinct. The historic precinct includes a spectacular courtroom furnished with original jarrah fittings,

a bond store with authentic wood-block floor, the old police station and nine primitive gaol cells. A fodder room and stables overlooking a pleasant grassed courtyard have been converted into a workshop and artists’ studios. The police sergeant’s quarters adjacent to the Courthouse now houses the Busselton Art Society and Acting Up theatre school, whilst Busselton’s branch of the West Australian Woodturners Association work in a modern shed next to ArtGeo Gallery.

Busselton Repertory Club

Established as the Busselton Repertory Society in 1949 before becoming the Busselton Repertory Club in 1956, this vibrant club contains a large and enthusiastic group of members producing several productions each year. Home to the club since the early 1960’s is The Weld Theatre, a fine heritage listed building set in the newly landscaped surrounds of the cultural precinct in Queen Street. Originally opened in 1881, over the years the hall served as a library, Masonic temple, dance hall, gym, school and auction mart before being converted into a theatre in 1962. In 2012, further renovations were carried out to include a spacious entry foyer and indoor toilets. The club’s aim is to put on at least 7 productions each year, including its highly popular pantomime in January. Shows are planned to cater for all tastes with drama, comedies and musicals all regularly performed and information on upcoming productions can be found at the club’s website (see below). The Goldfinch Donna Tartt

It is clear from the opening lines of The Goldfinch that this is a vividly drawn out tale and, at almost 800 pages long, it’s hardly surprising that it took its author, Donna Tartt, a whole decade to produce. It is only the third book written by Tartt in as many decades and has been eagerly awaited by fans and critics following the huge international popularity of her other novels. There is an intensity to the description of feelings, people and places from the outset as the reader is introduced to the main character, Theo. There is a brooding sense that, having led a troubled life up to this point, things will probably not improve. Travelling back in time to when Theo was a schoolboy, he survives a terrorist bomb attack in an art gallery to have his life change forever as a consequence. Out of the wreckage, he rescues a favourite painting of his mother’s, The Goldfinch by Fabritius, and the piece of art’s own story provides useful metaphors for Tartt throughout the book. Theo muddles his way through life, tragedy having determined his course. The Goldfinch is an artful study of the delinquency and love experienced by a boy through to his adulthood. Every emotion and action is clearly depicted as Tartt goes to great length to ensure the reader is immersed in Theo’s life experiences. It is not a book for the faint hearted, not in its story telling, nor in its length.

Food for Friends Barbecue The Australian Women’s Weekly

Essential for every self-respecting Australian, especially at this time of year, Food for Friends Barbecue, should be at hand before any weekend get-together is organised. The Australian Women’s Weekly is renowned for producing clear, no-nonsense cookery books that are full of delicious recipes and ideas that work. Each recipe is triple tested, as the stamp says on every cover, to make sure it is successful. The usual attention normally given to steaks and sausages has had an overhaul and there are new takes on preparing them and new ideas on how to serve them up. There are fabulous sections covering seafood, roasts and kebabs that are deceptively simple to create. Outdoor food has been taken to a new level and plenty of the dishes featured in the book would be perfectly acceptable for dinner parties when the barbecue has been stored away. At the start of the book, there is a useful section to guide first-time barbecuers through the process, including selecting the type of barbecue and fuel. In every section, there are double-paged essential tips so that the cook can get the best results. Photographs show each dish in beautiful detail, making this not only a must-have ideas book for the summer, but a joy to dip into and browse at any time. Restaurant Review

Next we tried the Raw Lasagna and Macrobiotic Plate. The Raw Lasagna is the café’s own raw food take on this classic Italian dish. It’s a combination of layers of butternut pumpkin, zucchini and beetroot accompanied by broccoli in a spinach and pine nut pesto, marinated mushrooms and garlic. This is an amazingly well thought out dish. Cooked food can often be thrown together, raw food has to work together on all levels and rest assured this dish certainly does. Take a bite, close your eyes and you’ll be able to individually name each separate ingredient; that’s how well it works! Each one has its place and each one adds its own component to the dish. Wonderful! Let’s not forget the Macrobiotic Plate though! A fabulous tasting plate of Quinoa, Tempeh skewers, seasonal vegetables, sea vegetables, kimchee, mung beans and miso sauce, this a great way of sampling different textures and flavours. Again, a triumph! We finished with the Banoffee Pie and Blue Berry and Lemon Cheesecake, marvelling at the fact that the dishes were not only raw but also gluten free and dairy free. Quite how those amazing flavours are created without dairy is a marvel. Set in beautiful surroundings with the option to dine in or alfresco, Samudra is an experience that should be tried by all. It’s a place for lovers of great food and not just lovers of vegetarian food. To us, that’s probably the biggest compliment we can pay it.

As one of the south west’s biggest drawcards, Samudra has long attracted visitors far and wide to come and experience its laid back vibe. Located in the centre of Dunsborough, its yoga school, retreats and wellness centre provide the ideal escape from today’s hectic lifestyle whilst its eco-store and online shop offer a vast array of organic clothing, books, body products, artworks and gifts. It is, of course, also equally well known for its award-winning vegetarian café; a dining experience that unashamedly aims to inspire its customers in to making healthy food choices. Needless to say with a feast of organic and raw food dishes to choose from, we were eager to sample the delights on offer. Greeted by Food and Beverage Manager Shelby on a busy Friday lunchtime, we were quickly shown to our table. We also quickly made our first decision! A Samudra smoothie is a must try and we wasted no time in ordering a couple of Green Smoothies. Containing pear, apple, lemon, banana and kale, I can assure you that one of these is worth the visit alone! Next, it was down to the serious business of what to order. We started with the Spring Slaw, a delicious combination of shredded cabbage, kale, walnuts, shaved fennel bulbs, fresh mint and coriander with a pear and almond dressing and a Zucchini Wrap full of marinated mushrooms, avocado, carrot, capsicum and beetroot in a pesto sauce. Fresh is an overused word in much of today’s marketing-speak but at Samudra, it’s a word that leaps out at you in every mouthful. You just know that the ingredients in the food here have been carefully hand-picked that very morning from the organic garden on site. It’s all in the taste.

Cheese and Prosciutto served with caper honey vinaigrette, a dish available on the entrée list. Our wines with this tasting plate included a 2011 Semillon Sauvignon Blanc, a recent gold medal winner for Chapman Grove at the Melbourne Royal Wine Show, and a highly enjoyable Shiraz from the premium Atticus range. Next, we sampled a main from the Spring Dinner Menu, Crispy Skin Atlantic Salmon. Served with buttered asparagus spears and a delightfully fresh spring salad of cherry tomatoes, peppery rocket and roasted butternut pumpkin on herb dressing, we accompanied the perfectly cooked fish with a glass of 2010 Chapman Grove Chardonnay. Excellent! To finish with, we tucked into a Spring Lime Cheese Slice served with raspberry sauce to complete an extremely satisfying evening. With picturesque views over the gardens and the outdoor pool, a pleasant atmosphere and an extensive wine list, Toby’s offers plenty of persuasive reasons for both guests and locals to visit. Located 10 minutes north of Dunsborough, the 90-room, Wyndham Resort and Spa is one of the area’s most popular holiday destinations. Situated on the edge of Geographe Bay, the resort features an outdoor pool, tennis courts, day spa and Toby’s, an A La Carte restaurant open 7 days for breakfast and dinner. With our host and resort General Manager Rolf Bucher having arranged a food and wine tasting evening in the restaurant, anticipation was certainly high as we arrived for dinner. Renowned for its unique take on contemporary Australian cuisine, Toby’s is also proud of its reputation of showcasing south west and Margaret River produce. With the majority of the ingredients sourced locally, our wine for the evening was also from a local producer, Margaret River-based Chapman Grove, a small, privately owned winery that is quickly forging quite a name for itself. With an extensive A La Carte menu, our choice of what to eat was not going to be easy but thankfully our host was prepared. Choosing a selection of tasters from the main menu, served with Toby’s bread of the day, homemade dukkah, oil and balsamic vinegar, we were able to sample a variety of different dishes and get an excellent insight into the creativity within the kitchen. For those visiting the restaurant, we would highly recommend the delicious Roasted Lamb Rack with its fragrant Moroccan seasoning, hummus and mint and parsley tabouli. Healthy Food Choices Gluten-Free menu at Vasse Bar Café

Whether eating a gluten-free diet is a necessity (for those suffering from medical conditions, such as coeliac disease) or purely a lifestyle choice, there‘s no doubting the increased popularity in eating glutenfree. Due to local demand, one Busselton restaurant has taken a bold and refreshing step. Vasse Bar Café on Queen Street has decided to offer a gluten-free option on every dish on the menu. The Busselton-Dunsborough Life went to discover more. There’s nothing more awkward when dining-out than having to discuss the ins and outs of every dish on the menu with a waiter in order to find a gluten-free option. We at the magazine can safely say this from experience as we have family members who have to eat gluten-free. At Vasse Bar Café, however, the only difficulty here is deciding which dish to order! Met by Head Chef of six and half years Michelle Lamotte, we were invited to sample a couple of the most popular gluten-free dishes on the menu. A baker by trade, Michelle and her close-knit team have sourced a selection of mainly local produce to create fresh, great tasting, gluten-free options to once and for all dispel the myth that gluten-free food lacks texture and flavour. First up, we sampled the Seafood Paella. Available on the menu at $31, this classic Spanish dish was served with gluten-free chorizo, chicken, mussels, prawns, squid, scallops and white reef fish on a bed of saffron-infused risotto. And what a treat this dish was! Showing no hint of compromise on flavours or consistency, this delicious meal would have even the Spanish coming back for more! Next, we tried the Sirloin on Duo Mash priced at $36. As the name suggests, the dish is served with both traditional and sweet potatoes and the 300g steak was topped with a fantastic gluten-free truffle béarnaise sauce with asparagus, spring onion and lemon. Again, the biggest accolade we could offer the team in the kitchen is that you simply would never know that the sauce was any different to a normal béarnaise sauce. Homemade Potato Gnocchi, Prawns, Sautéed Fresh Broccoli and Broccoli Puree This wonderfully light, yet satisfying dish was inspired by a visit to friend’s restaurant whilst on a family holiday in the Romagna region of north-east Italy. On return from our holiday we decided to add it to our menu, giving it our own special twist. Using our own homemade potato gnocchi, the dish combines fresh, flavoursome, healthy ingredients to create the perfect summer meal. It’s a light choice that works perfectly for lunch or dinner. Gnocchi at times can be hard to present but combined with the prawns and broccoli, the dish is transformed into a colourful, visually appealing creation with the broccoli puree adding extra colour and texture to bring the dish together. First tried on our specials menu, a process that

many of our new dishes go through, it is now part of our summer menu having been extremely popular throughout the spring. Perfectly accompanied by a crisp white wine, we recommend a Pieropan Soave Classico from the Veneto region of north-east Italy. This Riesling-style white combines mineral characteristics with a dry finish and is available in the restaurant. The above dish is available at La Casina, 1842, Caves Road, Dunsborough, price $32. Couscous Summer Salad With our beautiful south west climate, it’s a shame to to spend hours inside preparing lunch. This delicious salad is quick to prepare - and no time wasted fussing in a hot kitchen equals more time lazing outside. What’s more, it’s healthy and lends itself to lots of variations; swap the chickpeas for chopped up celery or gloriously green, uncooked peas – they make the dish look amazingly vibrant and fresh too. And try different feta cheeses, such as feta with basil or pesto. Serves 2

Ingredients

To prepare

250ml vegetable stock 200g couscous 1 tsp butter small can chickpeas, drained and rinsed ½ bag washed spinach leaves 1 tbsp chopped fresh mint 2 heaped tbsp black olives, pitted and halved 100g feta

Pour stock into a saucepan and bring to the boil. Remove from the heat and pour in the couscous. Cover and leave to stand for 3 minutes. Add the butter and use a fork or whisk to gently separate the couscous grains and then allow to cool. In a large bowl, combine the spinach, chickpeas, mint, olives and couscous. Crumble in the feta and season with black pepper. Olive oil drizzled over the top is a wonderful indulgence but the dish is scrumptious without it.

Method Preheat the oven to 180°C/160°C fan-forced. In a large frying pan, gently melt the butter with the oil. Add the onion and garlic and fry over a low heat until the onion is softened. Add the chicken and cook for a further 5 minutes. Add the mushrooms and the tarragon and continue to cook for 2 to 3 minutes until the mushrooms are soft. Slowly add the flour and cook for 1 minute while stirring. Add the stock and the wine and carry on stirring until the mixture has thickened. Remove the pan from the heat. Grease a 12 capacity muffin tin. Lay a sheet of filo on a flat surface and brush with melted butter. Add 3 more sheets of filo to the pile with butter brushed on each on. Cut the pile of filo sheets into 6 even parts. Press the cut filo into the muffin holes and repeat the process with the remaining filo sheets. Spoon the chicken mixture into the filo cases and scrunch up the sides. Pinch the sides together to seal the mini pie. Use the remaining melted butter to brush over each mini pie. Bake for 25 minutes or until the pastry is golden. Cool completely before packing in the picnic.
