Winter Fashion Stay warm and look cool!
After another hot summer, the thought of layering up and getting cosy seems quite appealing! So embrace the change of season as now is the perfect time to choose that winter essential, the leather jacket. For those who missed out on one during autumn, this season’s leather jacket is not only available in the classic black look but also in plenty of vibrant colours, including blue, green and red. The figure hugging biker style is still the most popular and looks great with skinny jeans as well as with dresses and skirts. Detailing on these jackets is fabulous with studs, exposed heavy zips and buckled straps. On the subject of jackets, gaining ground in popularity is the new-style bomber jacket. Featuring a strong sports influence, this season, latest designs are also incorporating a luxe feel with panels of silk, quilted fabric or leather. The pencil skirt may still be a wardrobe staple but it’s the A-line and flirty skater that are set to be the winter choices for skirts. Above or to the knee, in a weighty winter fabric, they are great with ankle boots. Leather is featuring hugely in winter fashion. It is soft, feminine and refined and comes in pants, tops, skirts and dresses, or adds an edge in the form of panels or sleeves. Whether faux or real, this season’s leather smooths the silhouette so is incredibly flattering. Other popular textures on winter clothes are fur, again, faux or real, baroque and

lace. Fur and baroque add touches of luxury to an outfit, and lace, being lighter and quite intricate in nature, adds a delicate note. Layering with such textures helps to define a body shape as well as creating a more interesting outfit. As for prints, there are plenty of leopard and snake prints around and new for the season Raw at Elysia Boutique is the winter floral print. This has a dark background with an oversized floral print. Winter colours are sumptuously rich, such as reds (especially oxblood), greens, strong cobalt blue, navy and purple, and metallics are still popular too. While colour is set to be prevalent, there is also a trend back to colour blocking with black and white. Men’s fashion embraces colour too with blues, greens and reds featuring strongly for chunky knits, shirts and within prints too. Add just one colourful item for layering on a cold day, stick to muted greys and black for the other pieces. And men don’t miss out either on leather jackets or the redefined bomber jackets. What’s on the racks? The store’s signature design, the pinafore is always in stock. This one-of-a-kind dress has a definite winter flavour featuring denim mixed with wool panels. History of the store Unsunk Funk opened in 2008, however, the building is estimated to be around 70 years old and has been a home for alternative trading for the last 10 years. As Bunbury’s best kept secret, proprietor Genevieve is able to continue to manufacture all garments on site. The low lying building (decorated with whales and dolphins) features a range of art, biscuit tins overflowing with retro earrings, racks bulging with alternative clothing choices and quirky pieces of furniture. Unsunk is a staunch for sustainability and according to Genevieve, the word unsunk originates from the synchronicity of artists collaborating to give meaning to the unwanted garments and fabrics at the bottom of linen cupboards that get cannibalized when one garment is made from another.
Who’s who? A haven for other local micro businesses, freelance artists and makeup artists, the store is a meeting point for local models, beautiful people and photographers. Too many to list! “Without creative people, without the random quixotic, how plain everything would be!” explained Genevieve. Along with her eldest daughter Emma, who is also following her mother’s footsteps in the fashion industry, the team has had great success in the South West Fashion Festival over the last 3 years. Unsunk Funk clothing is now also being stocked in the Fremantle markets and in Broome.

Design For The Home The Kitchen
With interior trends often taking much of their influences from fashion runways these days, the kitchen is the ideal room in which to stamp some personality in the home. After all, as the most lived-in space, and as a place where friends and family regularly congregate, it offers a chance to really show off those creative skills. And, with open plan living the norm, there are plenty of options to consider and plenty of opportunities to create a unique look. So what’s happening in kitchen trends right now? Currently, the key look is sleek, minimalist and striking in its simplicity. This is achieved by incorporating long benchtops, unfussy cabinetry and open shelving. Voids and floor space add to the minimal look and if careful thought has gone into planning the design of the kitchen, then the number of cabinets can be reduced too. As for the cabinets themselves, there is a definite requirement for quality workmanship with cabinets often designed to fit flush to the benchtop. Soft closing cabinet doors are essential and drawers with no handles, using instead subtle recessed edges for fingers, are becoming increasingly popular. For a more unique take on the minimalist look, use a single unit of cabinetry, perhaps a special one-off design, which can also be used as workbench space. Technological features can help to retain the uncluttered look too, such as
pop up range hoods that are only visible when needed. Smaller versions of appliances or appliances that do more than one job can also help. The recent trend of glossy white kitchens is now starting to be replaced by textures that have a flatter finish with a more natural feel. For cabinetry, there is a demand for timber veneers, metal finish laminates, matte or satin white, black and dark grey polyurethane doors. Add depth and interest to a design by showcasing a mixture of textures and match with floors using either timber, brick, slate or polished concrete. Walls also look great in raw or painted brick, or concrete. Colours should be kept simple, such as white or black or simply left as the material’s natural colour. Brass accents are growing in popularity and look fabulous when teamed up with natural finishes. The warm colour and shine are a perfect foil to flat surfaces elsewhere in the kitchen. A pendant light or feature splashback are great ways to add a brass or bronze-like tone. When it comes to lighting, it is LED that is in demand. LED lighting can be installed in a myriad of places, making it easier to create ambiance, contrast and interest. Lights under and in cabinets, in flooring, ceilings and alcoves are easily installed and can even change colour to suit different occasions. 22

Golf Tips With cooler temperatures and green, lush fairways, now is a great time to get out on the golf course. Here are some handy tips to improve your game this winter.
Try to ensure the hips are facing the target and the right foot is up on the toe at impact. Inconsistency is often caused by a flat right foot at impact and by hitting the ball with the arms.

How to hit a good, reliable golf shot

1. Ensure a good golf posture. This means feet should be shoulder width apart, no wider. Everyone wants to bash the ball as hard as they can, which leads to some taking a big wide stance thinking this gives good footing and balance. However, the power of the golf swing comes from the rotation of the pivot (bellybutton) and a wide stance restricts the pivot turn. Ignore advice that also suggests a wide stance is required for a big hit on the driver. A narrower stance encourages more rotation and more power. 2. Ensure a correct club face position. Forget worrying about the arm and hand position in the golf swing; it’s how the golf club face makes contact with the ball that is all important. The best swing in the world with a poor clubface still hits a poor shot. A good reference point for golfers is to check the clubface when it is half way back and the shaft is parallel to the ground. The clubface at this stage should point straight up in a 12 o’clock position. 3. The body or pivot should lead the golf swing rather than the arms hitting at the ball.
The secret to being a good putter is to roll the ball correctly. This helps with both line and distance control. To roll the ball correctly, it’s important to keep the putter head very low through the stroke and to let the loft on the putter do its job. Try holding your finish on the follow through so all the energy goes through the ball helping to roll the ball correctly. When a putt is hit out of the toe or heel of the club, thin or heavy, the ball travels different distances. Putting is exactly the same as any other shot. Always try to ensure the putt is hit right out of the sweet spot each time to control distances. A good practice drill is to hit some putts with your eyes closed to try to feel the stroke on the putter head. Any miss-hit will not only give a different feel but will also make a different sound. This drill is also good for taking the hands and hit out of the stroke. When you can’t see the ball or hole there is nothing to hit at, so generally, the result is a better stroke with more of an arm swing rather than a hand hit type movement.

Want a Better Mortgage Deal? Try switching banks! By Theo Krinos
Australia’s leading banks have had to put up with plenty of criticism in recent months over their response to rate cuts by the Reserve Bank of Australia (RBA). Whilst many of them have failed to pass on cuts in full to existing customers, a recent published report by the RBA confirmed that for new clients this has not always been the case. Released late last year, the report highlighted the fact that following the October cut of 0.25%, the leading banks actually cut their standard variable rates to existing customers by an average of just 0.19% whereas home loan packages offered to new customers were cut by an average of 0.29%. With fewer home loans being written and banks keen to grow market share, there’s no denying that competition in the banking sector for new customers is fiercer than ever. As a result, many of the leading banks have been prepared to significantly ‘sharpen their pencils’ and offer extremely competitive rates to secure new customers. In other words, if you go to the trouble of shopping around, banks will fight for your business.
So, if you are currently looking for a better home deal, make sure you do your homework. And, even if you have no plans to switch banks, don’t forget that there’s no harm in asking your existing lender to match the deals being offered to new customers. While I’m not suggesting that banks take existing customers for granted, many lenders probably take the view that most borrowers are generally apathetic towards rates and are unlikely to ask for a better deal. One thing’s for sure. The importance of working with an experienced mortgage advisor has never been more important. By having ‘someone in your corner’ when negotiating, someone who is constantly looking behind that headline interest rate to ensure a particular home loan product is the right fit for you, is almost certain to lead to a better outcome for the customer. One of the oldest properties in Bunbury, the original cottage on 18 Carey Street appears in the 1885 City of Bunbury rate book and records show that the land was purchased from the Bunbury Diocesan Trustees in 1866. Effective Tax Planning (before June 30th)

With June 30th fast approaching it won’t be long before the last chance to manage an income and tax position for the financial year is upon us. Once the June 30 window has closed, businesses and their advisors are severely restricted in methods to reduce tax liability. There are two types of tax planning:-
amongst as many individuals as possible (including children) • Utilising entities, structures or individuals with lower tax rates • Ensuring eligibility for tax rebates • Timing the sale of assets likely to yield a capital gain or realise a capital loss • Negative gearing of growth assets • Donations • Superannuation contributions June is also a time to consider maximising contributions for retirement planning. Recent years have seen changes to superannuation legislation placing restrictions on how much can be put away for retirement in any one year. It is therefore important to start contributing to superannuation earlier, rather than relying on topping up retirement funds towards the end of a working career. The great thing about superannuation is the favourable tax environment. Not only does it get immediate tax deductions on the contributions made now but the earnings within the super fund incur no more than 15% tax, which at age 55 could be down to 0%. Further, when withdrawing money from superannuation after age 60, it can be tax free. Superannuation is the last tax haven, so any business with favourable cash flow and a substantial tax liability should consider contributing before June 30. 1. Tax Deferral Tax deferral is the most popular line of attack at this time of year, as businesses look to delay their tax liability. Some of the more common examples of deferring tax include:• Delaying or withholding income e.g. not issuing invoices or putting off sales until July • Prepaying expenses i.e. bringing forward future expenses into the current period • Leasing plant or machinery instead of using other finance such as HP or a chattels mortgage • Utilising the 30% company tax rate if individuals are currently in a higher tax bracket NB Some of these methods do require the business to qualify as a small business entity. Tax deferral can be an extremely successful approach to reducing an immediate tax liability and an important part of an overall tax plan. It’s certainly always beneficial to delay paying tax for twelve months. However, be aware that the above tactics may just be a quick fix, instead moving the potential problem into a later year where the tax impact may be even greater.
2. Tax Saving A longer term approach to tax minimisation is tax saving where the benefits are more effective and ongoing. Some of the common strategies for tax saving include:• Income splitting i.e. sharing income 34

Mercedes-Benz GL King of the off-roaders returns!
It was in 2006 that Mercedes-Benz first revealed its luxury, full-sized SUV, the GL. Taking its design influences from its smaller sibling, the M-Class, the GL also paid homage to the iconic G-Class or ‘G-Wagon’ not sold in Australia for some time but occasionally seen as an import. Seven years on and hot on the heels of the launch of the new A-Class, Mercedes-Benz has reaffirmed that although it is now developing an impressive range of smaller cars, large, luxury vehicles are of equal importance to the brand. And make no mistake; the all new GL most definitely is large and luxurious. Measuring in at 5120mm long, 1934mm wide and 1850mm high, the GL towers over the M-Class with its muscular looks and sleek lines and its cavernous interior comfortably seats 7 adults across 3 rows of seats. The exterior of the new GL oozes poise and presence. Slightly wider than its predecessor, at first glance the eye is drawn towards the dominant front grille, housing the threepointed star and the row of now familiar LED daytime running lamps. It should be applied about two minutes after cleansing and followed, after about three minutes, by moisturiser. If a moisturiser is applied too soon, it may dilute the effectiveness of the serum. To get the best results, always follow the directions, for example, some serums are to be used at night when skin is repairing itself but also because some active ingredients may make skin sensitive in the sun. Here is a brief overview of what to expect from serums on the market today. Estée Lauder produces serums to combat the ageing process for the face and also for eyes where the skin is thinner and much more delicate. As the name would suggest, Advanced Night Repair, these are treatments intended for night-time use. Clinique’s Repairwear Laser Focus Wrinkle and UV Damage Corrector is an anti-ageing serum that is for day as well as night use, and is gentle enough to be applied around the eye area as well as on the face. Deferring the ageing process used to involve using either a day moisturiser with sunscreen or a decent night cream – or both. lesser extent. The skin of the face is the envelope which holds the contents of the face in place and as the contents reduce in volume, the face displays excess skin. This excess skin heading south together with a loss of collagen also adds to a loss of elasticity. At my clinics, we try and reverse the effects of ageing and enhance the look of a face through a combination of different proven treatments. A re-volumisation of cheeks, jawline and lips helps to re-establish the harmony of the face. Volumising fillers, wrinkle relaxers and collagen stimulators also have an important part to play as do surface skin treatments such as IPL and laser and chemical peels. When someone walks into a room we automatically form an opinion on that person without getting to know them on a deeper level. Superficial, yes, but true. There are a number of factors that determine this opinion and the face as a whole, including symmetry, proportionality and shape, is a major influence. This macroscopic analysis (analysis of the larger features) is an important part in the assessment made by a cosmetic surgeon on patients. A detailed assessment involves dividing the face into 3 roughly equal parts and then measuring for symmetry and balance. An assessment is then made of the smaller features such as lips, eyebrows, nose and ears. A microscopic analysis involves an assessment of the fine-print features of the face. These are the most common concerns of most patients who seek surgery, with minor superficial lines around the eyes, lips and lower cheeks of most concern. These areas can be easily addressed but a focus on the larger picture is likely to have a more positive overall effect to the look of the face. Of course, many facial issues are age related. Over time, our faces change through a combination of general ageing, sun exposure, lifestyle choices (such as smoking and drinking), genetics and illness. The most common change is a loss of volume which is predominantly caused by a loss of fat. Muscle and bone changes also occur but mostly to a 48

Exciting new state-of-the-art medical centre opens in Bunbury
A brand new high-tech medical centre has recently opened its doors in Bunbury. The Greater Bunbury Medical Centre, home to leading local health providers Brecken Health Care opened at the end of April and is located at 12-16 Vasse Street, opposite the Bunbury Turf Club. With 3,000 square metres of floor space over two floors, Brecken Heath Care occupies the entire 1500 square metre top floor and is currently leasing space downstairs to prospective tenants. The area is currently home to a pharmacy and a local pathologist with a number of other businesses having registered interest. The move to the new premises continues the remarkable growth of Brecken Health Care in Bunbury. Opening in early 2010 with one GP, by July the team will consist of over 30 staff and 15 GP’s offering a wide variety of health services. As a one-stop shop for health care, the practice features a large open plan reception area, dedicated patient waiting areas and children’s waiting areas, a gym and children’s play area. Health facilities employ the very latest equipment and include a large modern treatment room and special procedure rooms all linked by attractive tree-style floor-based murals. Specialising in General Practice, the team at Brecken Health Care includes psychologists,
exercise physiologists, physiotherapists and a mental health nurse together with 6 nurses with specialist skills in women’s health, antenatal, diabetes and asthma. The family doctors also have special interests in skin checks, sports injuries and obstetrics and, with the practice an accredited travel clinic, it can also advise on specific travel medicines. Taking just over 14 months to build, the new facility incorporates a number of environmentally friendly features and has been constructed to ensure plenty of natural light is filtered through the building. Energy saving technology includes motion-sensitive settings that control air-conditioning, lighting and heating, conserving energy when required, and the building’s air-conditioning system has been designed to recycle air to heat the hot water. An automatic energy reducer also switches off appliances at the end of each day before switching them back on at a set time the following morning. The World Health Organisation advises populations to reduce their salt intake to less then 5g per adult per day. In Australia, surveys indicate consumption is generally double this. Salt is also known as sodium chloride but labels often list sodium, which is not the same. To calculate salt content, multiply the sodium figure by 2.5. Therefore, a food with a sodium content of 1.2g contains about 3g of salt. To tell if food is high in salt, look at the figure per 100g. High is more than 1.5 g per 100g, low is 0.3g per 100g. Salt is an ingredient found in a lot of food, particularly processed and pre-packaged meals, cured and smoked meats, biscuits, pizza, breakfast cereals and ready-made sandwiches. Coq au Vin
Coq au Vin – it’s a classic French dish! So as a Japanese Chef, why is it one of my favourites you might ask? Basically, it’s because I’m French trained! This was one of the first dishes I was taught to prepare and perfect as a young chef and it continues to hold fond memories for me when I offer it to my diners on any menu. Naturally, now as the weather begins to cool, it is a dish that people like to call “a comfort dish”, one of those soul warming meals that reminds you of childhood or fondly of family dinners. Really, as a chef, it’s the same for me as it reminds me of my time as a young trainee, learning to perfect simple recipes and for my love and respect of lovely, simple fresh ingredients. This is a simple dish to prepare but it can fail to inspire without concentration over the rich sauce base. I’m generous with red wine in my recipe as I find it helps to cement the flavours that complement the vegetable mix of potato, onion and carrot that go together with the chicken so well. Maryland is my choice of chicken cut for this classic. The meat is plump and there’s
something satisfying about picking up the drumstick and eating the last of the meat and then licking your fingers to finish the sauce! Coq au Vin is on our restaurant menu at the moment. Recycle, Rejuvenate and Rejoice! Go green in your backyard By Annie Malone
Sustainability is the word of the decade. How can we play our part in helping to sustain this precious planet of ours? Conscious living is something to aspire to if each of us is to make a difference. We can all be more aware of how our consumerism effects the environment. Start off with our rubbish bins. If each household could reduce the quantity of packaging, tins and food waste by half, imagine what a difference that would make to landfill and the resources to maintain these sites. The kitchen and our food plate is a great place to start to practise a little sustainability in our own household. “From little things big things grow,” and there is no better place to start than by getting our hands into the earth. I love to grow things, especially things to eat. And I love using the richest soil so the grown goods are full of nutrients. To get the best soil and recycle waste from our own household at the same time, we need to start talking about compost and worms, two great words when it comes to soil talk. Compost can be started in a simple heap, an old garbage bin with the bottom cut out or a specially purchased compost bin. There are many household waste products that we can add to a compost heap or bin that will break down beautifully. Vegetable food scraps, coffee grounds, fish waste (buried deeply), paper and cardboard, lawn clippings, leaves, garden clippings and animal manures. Compost heaps normally heat up and micro-organisms begin the process of breaking down the contents. On the cooler outer edges of the heap invertebrates such as millipedes, earthworms, snails and slugs continue the work of decomposition. The whole process is an amazing complex
ecosystem that turns waste material into a beneficial resource. Worm farms can be started in specially purchased worm farms or in an old de-gassed fridge laid on its back or a polystyrene box with a drain hole. A worm farm processes the food waste in a slightly different way than a compost heap. It’s very important to keep your worm farm in a cool position. Worms don’t like light or heat. Keep them happy and they will chomp their way through their own body weight every 24 hours. They have no teeth, but they ingest sand particles that help to grind organic matter in their stomach. Feed them soft food and chop up any large particles and they will produce rich worm casting that can be added to your soil. The liquid from worm castings is a valuable fertilizer. Worms will also take shredded paper and coffee grinds. We have a ready supply of coffee grinds that we keep for customers at Natural Temptation Café that love to compost. Now you can see that there are ways to decrease your footprint on our precious earth by turning waste products into something beneficial. The really exciting part starts when you can use this changed waste product into growing great food for the table. More on that in the next issue! Winter Recipe Apple Crumble
Apple Crumble, perfect for get-togethers with friends or family, is an old favourite and a whole lot better when home-cooked rather than bought in from a supermarket’s frozen section. Serves 8
For the filling: 750g green apples, peeled, cored and thinly sliced 1tbs lemon juice 100g caster sugar 1tsp ground cinnamon 3 tbs plain flour
For the crumble: 150g plain flour 50g oats 100g dark brown soft sugar 100g caster sugar 1tsp ground cinnamon 125g butter
Method: Preheat oven to 180ËšC. To make the filling, combine the apples, lemon juice, caster sugar, cinnamon and flour in an ovenproof dish. In a separate bowl, mix together the plain flour, oats, sugars and ground cinnamon. Rub in the butter using finger tips until the mixture is crumbly. Cover the apples with the crumble mixture. Bake for 30 minutes or until the top is golden brown. This crumble is best enjoyed when warm or at room temperature. Serve with ice cream or warm custard. Try adding desiccated coconut or a little nutmeg to the crumble topping, or thawed frozen raspberries to the filling for delicious variations on this classic apple pudding.

New Trophy for Wine of the Show at Geographe Wine Show

For the very first time, a trophy is now available for the winners of the Wine of the Show at the Geographe Wine Show. The trophy, a replica of the French clipper, Le Geographe, was purchased in Italy and is now housed in a handsome case made by local cabinet maker Paul Milton. Although presented at the show in October 2012, the complete trophy including case was recently presented to the winners, Wayne and Ria Hammond of Oakway Estate, at an association function at Ferguson Farmstay, Burekup. Awarded the trophy for their 2010 Unwooded Chardonnay, the presentation was also attended by previous winners of the trophy before the prize was transported back to the Oakway Estate cellar door where it is currently on display.

Angelicus Wines located at Lennard Road, Burekup, has recently received an award from Gourmet Traveller Wine. In a recent review of places to visit in wine regions across Australia, the cellar door at Angelicus was nominated the Best Small Cellar Door in the Geographe wine region. Further news is the release of the winery’s new 2013 Natural Verdejo, a natural wine, as the name suggests, that is neither filtered nor Wine & chocolate at Bonking Frog Wines cold stabilised. The wine is described as having a floral nose with a texture of Pinot Gris in the mouth but with the citrus and acidity of a young Riesling. If you are quick, at Bonking Frog Wines, 7 Dardanup West Road, North Boyanup, you can still catch an ongoing exhibition of ornamental steel

Zinfandel pick at Smallwater Estate
The winery will also be releasing its first Paterson Reserve Merlot later this year so keep an eye out for that. Bernice O’Connell of Mandalay Road Wines reports that the winery has just released a Muscat for the first time, made in the true Rutherglen style. Bernice describes this as “a little ripper with great depth of flavour that lingers on the palate. A very moreish drink!” The winery will also shortly be releasing its second Moscato, made from the same Muscat grapes, “a delightful, musky wine tasting of rose petals. Lighter in alcohol than the usual table wine, its spritz makes it a great addition to the Mandalay stable,” explains Bernice. A
first for Mandalay this year is the production of a Durif and if reports on the colour and flavour are anything to go by, this looks like being a very interesting addition to the range. The 2013 unwooded Chardonnay and SBS will also be available later in the year. News from Smallwater Estate is that the winery has now sold out of all Chardonnay and cellar door Reserve White, however, the new vintage of both will be released at the end of May. May also sees the release of Smallwater’s new Vintage Port (made from Zinfandel). The restaurant continues to reflect the changes of season but for fans of marron, the good news is that this will continue to be available with 62
food & wine the current favourite, the garlic marron, proving popular. Located at 52 Tramline Road, Newlands, the winery is open for lunch and tastings from Friday to Sunday. St Aidan Wines found at 754, Ferguson Road in the Ferguson Valley, has introduced several new innovations for visitors to the winery. Cooking classes are now being held four to eight times per year and visitors can enjoy a Sunday lunch roast on the second Sunday of each month. To keep up to date with events at the winery, including the popular movie nights, join the mailing list, ‘Grapevine’, to receive regular news updates. Wines are also available online as well as from the cellar door, open six days. Ferguson Valley based Talisman Wines has just released its 2011 Gabrielle Chardonnay. The wine is described as having a powerful bouquet of guava and toasty oak with hints of lime, pineapple and toffee. The palate is equally as impressive with rich fruits and buttered spicy toast. At the northern tip of the Geographe Wine region, Vineyard 28 at 270 Bagieau Road, Harvey, has an exhibition running over the June long weekend. Running from Saturday, 1st June to Monday, 3rd June at the cellar door from 10am to 5pm, entry is free. The winery has also just released its 2011 Cabernet Sauvignon. Ruby red in colour, this full bodied, luscious wine is described as being velvety and warm with boysenberries and blackberries on the palate. Now available from the cellar door, $20 per bottle.
Tasting Notes Appearance: Mid to deep, bright purple/ crimson. Nose: Dark fruits and dark chocolate are the dominant characters. Some herbs and spices, sage and nutmeg, cacao, dark olive and some florals appear as it breathes. Palate: Only medium weight but those rich, dark fruit and chocolate characters from the nose come through with plenty of power. Ample but very fine grained, almost graphite-like tannins weave through the fruit to give the palate plenty of structure to hang onto for years to come. Cellaring: Delicious now (May 2013) but will definitely reward time in the cellar. Halliday suggests 2030, Mattinson 2025+. Rated 96 points, James Halliday Australian Wine Companion 2013, and described as a “seriously lovely wine,” the 2010 Black Dog Shiraz is available exclusively to Willow Bridge Estate Platinum Club Members at the cellar door. The name Black Dog originates from the second vintage in 2011 when cellar-hands commented that the wine from the most spectacular hilltop block of estate Shiraz seemed “as black as the inside of a dog”. The name caught on amongst family and friends and the Black Dog Shiraz was born.
