A cavallo tra primavera ed estate, giugno e luglio sono forse i due mesi più belli dell’anno. I due mesi in cui la voglia di viaggiare ci travolge e si mischia con quella non meno intensa di andare in vacanza. Qualcuno, beato lui, già di questi tempi si può godere un po’ di meritato riposo, sotto gli occhi (invidiosi, diciamo la verità!) di chi al massimo si concede un weekend fuori casa in attesa che arrivi agosto... Ovunque voi andiate, carichi di bagagli per una villeggiatura vecchio stile, con solo uno zaino per un veloce fine settimana o in compagnia della ventiquattrore per una trasferta di lavoro, questo numero di BeBlueAir sarà al vostro fianco per i prossimi due mesi. E per farvi compagnia, vi proponiamo un ricco menù. Partiamo da Liverpool, che si racconta nel nostro servizio di copertina tra vecchie glorie e nuovi successi, tra la musica dei Beatles e la riqualificazione di intere aree della città fino a oggi dimenticate. A Shanghai un nuovo distretto agricolo come risposta sostenibile alle necessità di una città in continua crescita

24 milioni di abitanti e una città che cresce a dismisura e si espande a discapito dei terreni coltivabili. Come conciliare i ritmi dell’urbanizzazione con la crescente necessità di cibo fresco e sano? Lo studio Sasaki Associates ha progettato un vero e proprio distretto agricolo, il Sunqiao Urban Agricultural District, situato tra l’aeroporto e il centro cittadino. Il progetto sviluppa il concetto di agricoltura verticale su larga scala utilizzando dei grattacieli. Un grande esempio di urbanizzazione sostenibile fatto di tecniche agricole all’avanguardia tra serre galleggianti, pareti verdi e facciate per la coltivazione di semi.

Il Sunqiao Urban Agricultural District propone un modello basato sull’agricolutura verticale come alternativa alla coltivazione tradizionale. The Sunqiao Urban Agricultural District follows a series of proposals for vertical farms as an alternative to traditional farming.

In Shanghai a new agricultural district acts as a sustainable response to the needs of a developing city 24 million inhabitants and an extremely developing city that is expanding to the detriment of cultivated land. How to reconcile the pace of urbanization with the growing need for fresh and healthy food? The Sasaki Associates studio has designed the Sunqiao Urban Agricultural District. The project develops the concept of vertical agriculture on a large scale using skyscrapers. It’s a great example of sustainable urbanization made up of state-of-the-art agricultural techniques, including floating greenhouses, green walls and facades for seed cultivation. giugno-luglio 2017 _ 11

Al vertice della classifica mondiale c’è ancora la Spagna, mentre sono in forte ascesa le mete asiatiche. Il Belpaese occupa il 5° posto per patrimonio culturale, l’11° per le infrastrutture e il 12° per le risorse naturali. eglio i Beatles o i Rolling Stones? A Liverpool nessuno si pone la questione. George Harrison, John Lennon, Paul McCartney e Ringo Starr sono nati, cresciuti e diventati poi delle stelle in questa città affacciata sul Mar d’Irlanda, all’estuario del fiume Mersey. Una città che vive oggi di cultura, musica, vita notturna e sport. Per secoli, data la sua posizione strategica, il commercio è stato un volano incredibile per Liverpool, permettendone uno sviluppo senza precedenti. Agli inizi dell’Ottocento, circa il 40% del commercio mondiale transitava in questo porto. Da Hope Street inizia il caratteristico quartiere Georgiano dove è possibile visitare l’Everyman Theatre, la Philarmonic Hall e lo Unity Theatre. Quando poi scende la sera, approfittate per fare un salto a Ropewalks, il cuore bohemièn della città che offre ottimi ristoranti, caffè e locali con musica dal vivo. Il logotipo e motto di Siviglia, che gioca con l’associazione del simbolo dell’infinito e della matassa (madeja) all’espressione spagnola No me ha dejado, esprime come in una premonizione tutto ciò che questa preziosa cittadina andalusa lascia nell’animo di chi l’ha visitata. Un attaccamento perenne ai colori, al calore, ai profumi e ai sapori di Siviglia. In realtà, l’acronimo si riferisce alla fedeltà che la città andalusa dimostrò nei confronti di Alfonso X il Saggio durante la guerra di successione al trono, e oggi ogni angolo della città ne è disseminato. And nowhere says it better than Puglia, criss-crossed as it is with colors, flavors, nuance and suggestion. Puglia’s charm is a touch mysterious as a result of the caves running along the coast between Peschici and Mattinata – the former boasts some of the most beautiful beaches on the promontory – and the colour of the sea around the Tremiti Islands. In 1954 fishermen Francesco Sante and Michele Trimignino discovered the historic “Grotte dei Contrabbandieri” (Smugglers’ Cave), while other caves include “Pomodori”, “Rossa”, “Sfondata”, “Campana”, “Calda”, “Smeraldo”, “Del serpente”, “Dei colombi”, and “Dei marmi”. According to ancient legend the Greek hero Diomedes sought refuge here after the war of Troy. Upon his death his companions were transformed into seagull-like birds called “diomedes”, hence why the archipelago – marked by the three major islands of San Domino, San Nicola and Caprara – is also known as the “Diomedes Islands”. The stunning backdrops that can also be admired from the rocks of Cretaccio and the uninhabited island of Pianosa are among those bestloved by divers in all of Italy. Andare alla scoperta della Puglia significa anche osservare e assimilare un patrimonio antico, accompagnato dalle vestigie prestigiose della presenza normanna con Federico II, su tutti Castel del Monte (patrimonio dell’UNESCO) con le otto torri ottagonali. Andare alla scoperta della Puglia vuol dire concedersi una straordinaria esperienza da viaggiatori, non solo da turisti.

A road trip around Puglia can’t but take in Salento and its multi-faceted coastal landscapes. There’s something to suit every taste, from the “Torre Specchia Ruggeri”, a point of reference for kite-surfing lovers, to the Great Poetry Cave, one of the ten most beautiful natural pools in the world, and the Torre dell’Orso with the rocks of the Two Sisters, down as far as the long Alimini beach. Until Santa Maria di Leuca the coast is jagged, marked by the bays and ridges of a crystalline sea, like that of Ciolo creek. Dune beaches covered by wild lilies (Pescoluse, Torre Mozza, Torre San Giovanni) are typical, as are walks in the Ugento Coastal Nature Park, covering 1600 hectares of dune cords, fossil reefs, and gravine. Two “must-visits” in Salento include Otranto (the Cathedral boasts the largest paved mosaic in Europe, which you can walk on), and Gallipoli with its old town centered on a limestone island linked to the mainland by a bridge and beaches for all tastes. From here to Porto Cesareo, a protected marine area where every dive surprises, is a short hop. Undoubtedly, coastal itineraries aren’t the only possibility in a land flush with archeology, history and art. In addition to Lecce, Pugliese Baroque has a second point of reference: the Valle d’Itria, including the towns of Martina Franca, Cisternino, Locorotondo, Ceglie Messapica, and the UNESCO-listed Alberobello, with its typical “trulli”, ancient stone peasant houses made with a “dry” masonry technique. The Romanesque, however, is exalted in the seaside cathedrals of Trani and Bari, in the basilica of St. Nicholas and in the Cathedral. Discovering Puglia also means observing and absorbing an ancient heritage, accompanied by prestigious examples of the Norman presence under Frederick II, and in all of Castel del Monte (UNESCO heritage) with its eight octagonal towers. L’estate 2017 si annuncia incandescente anche al cinema, dove arriveranno alcuni dei film più importanti di tutto l’anno e che segnano delle tappe fondamentali nello sviluppo di vecchie e nuove franchigie. Ed è un periodo torrido che apre all’insegna della bellezza femminile. Wonder Woman è il quarto film della saga della Justice League firmata DC Comics-Warner Bros incentrato sull’eroina che è stata una delle migliori sorprese di Batman v. Superman: Dawn of Justice. Siamo alle origini di Diana Prince e il suo impegno per porre fine alla Prima Guerra Mondiale. Nei panni di Wonder Woman torna l’ormai ex modella e attrice israeliana Gal Gadot che alcuni anni fa vinse la serrata concorrenza di Cobie Smulders (che

Il nuovo costume da supereroe di Peter Parker che abbiamo ammirato già in Captain America: Civil War avrà numerosi gadget. All’interno del simbolo sul petto ci sarà un piccolo drone simile all’Ala Rossa di Falcon; un dispositivo gps nel polso può proiettare ologrammi; l’Uomo Ragno potrà sparare ragnatele esplosive come quelle che abbiamo visto nel trailer del film. Sempre nel primo trailer abbiamo scoperto che il costume indossato da Tom Holland avrà ali di ragnatela sotto il braccio, attaccate al torace.

As ever Michael Bay is behind the cameras, and right from the first trailer we see the robots in action in World War II, and even with King Arthur. This summer also marks the return of SpiderMan: Homecoming (July 6). Over the last 15 years five Spider Man films have come out from two different directors and with two different stars (Tobey Maguire and Andrew Garfield), although this time the character is coming “home” (as the title suggests). In fact Marvel (owner of Spider-Man) produced the movie after showcasing the “new” Spider Man in Captain America: Civil War, and in view of the grand finale of Double Infinity War scheduled in the coming years. The 13th July sees the arrival of another chapter in the reboot of the saga telling how apes became the master race on planet Earth. In “War For The Planet of the Apes” Matt Reeves directs again, while Andy Serkis plays ‘Caesar’ with motion capture. Woody Harrelson is the new entry in the cast. Last but not least Christopher Nolan’s new film is unfortunately missing from the orgy of films in June and July. Although largely released worldwide on July 19th and 21st, cinemagoers in Italy will only be able to see it from August 31st.

TAORMINA One of the Italy’s most wow-factor settings Taormina boasts a breathtaking panorama that sweeps from the Greek Theater to Etna and the Ionian Sea. Any concert with that kind of backdrop is bound to be amazing, more so when a band the caliber of Placebo is performing. The alt-rock band, composed of Brian Molko and Stefan Olsdal, will be in Taormina on June 21st, followed by another giant of international rock: Eddie Vedder. S. Da piccolo. Come capita spesso a coloro che appartengono a famiglie storiche di pizzaioli, ho cominciato a giocare con l’impasto per poi fare, verso l’età delle scuole elementari, qualche tentativo di pizza. Il premio finale era che riuscivi a fare quella cosa che avevi incominciato come un gioco e ne guadagnavi poi la pizza buona da mangiare. B. Era la notte di Pasqua, avevo 7 o 8 anni, mia madre stava preparando i lievitati della tradizione, fui folgorato, rimasi tutta la notte a guardare l’impasto che lievitava. Poi crescendo passavo le notti nei panifici affascinato dai segreti del pane, fino a quando nel 2003 aprii Pizzarium [a Roma, ndi].

Cosa rappresenta per lei la pizza? S. Uno stile di vita, uno stato d’animo, un’espressione d’arte, il veicolo di tante storie, di culture, un’identità personale e di territorio, un messaggio sociale. B. È la mia storia. È il prodotto su cui ho costruito il mio lavoro e il mio successo. Cosa rende la pizza “napoletana”? S. La pizza napoletana deriva dalla pizza a libretto o a portafoglio che per secoli si faceva e si fa ancora per fortuna nei vicoletti della città di Napoli e si piega in quattro. La pizza napoletana non è altro che l’evoluzione di quell’arcaica forma di street food. Il segreto della pizza “napo-

“Hands in dough” – when was the first time? S. When I was young. As often happens to those from long standing pizza families I started playing around with dough and then, around when I went to elementary school, I tried out some basic pizzas. The ultimate reward was that what started as a game finished up as pizza good enough to eat. B. It was Easter night, I was 7 or 8 years old and my mother was preparing the yeast in the traditional way. I was blown away and stayed up all night watching the dough rising. Then, while growing up, I’d spend nights in the bakeries fascinated by the secrets of bread until I opened Pizzarium [in Rome, in 2003 Ed]. What does pizza mean to you? S. A lifestyle, a mood, an art expression, the vehicle of so many stories and cultures, a personal identity and that of the land, a social message. B. It’s my story. It is the product on which I built my work and my success.

Riesce ad adeguarsi ai cambiamenti, anche la pizza segue un’evoluzione. Ha avuto e ha di tanto e in tanto degli attacchi però ne esce sempre più forte. B. Le caratteristiche principali della mia pizza in teglia alla romana sono: una lunga lievitazione, un’alta idratazione, materie prime di altissima qualità e ovviamente la cottura in teglia. Il risultato è una pizza croccante e soffice allo stesso tempo, molto leggera e digeribile. La sua timidezza e calma sembrano stridere col carattere verace dei partenopei, ma quando impasta non ci sono dubbi. Quale emozione

le trasmette questo lavoro? S. La possibilità di potermi esprimere. Già il fatto di poter muovere le tue mani, con le dieci dita, di poter trasmettere gli stati d’animo di quello che in quel momento senti. È come avere una tela davanti e riuscire a imprimere un messaggio artistico, anche solo una pennellata o uno scarabocchio, anche quella ha un senso, quindi raccontare il tuo stato d’animo… Questa cosa mi affascina. Quando stende la pasta sembra stia suonando il pianoforte e che l’impasto abbia vita propria, come ci riesce? B. S. Li scelgo per quello che sento, non so come dirlo. Mi affascina la storia del prodotto. Per me questo è un valore aggiunto indispensabile. Capire da dove viene una cosa, chi sono le persone che lavorano dietro, devo guardarle negli occhi, sentire quella mano se ha lavorato… Attraverso il mio disco di pasta racconto la storia di quel pomodoro, di quella mozzarella, di quell’olio. Per me è importante sapere chi raccontare. B. Scelgo sempre prodotti stagionali assolutamente naturali. Quanto agli accostamenti mi lascio ispirare dal momento, dall’umore e dalle sensazioni che ho guardando gli ingredienti e sentendone il profumo. La sua pizza preferita? S. La margherita. B. I think it’s a question of sensitivity and respect for raw materials, without disregarding the research that is at the base of every result. How do you choose new combinations? S. I choose what I feel, I don’t know how to say it. The story of the produce fascinates me. For me this is an indispensable added value. Understanding where it comes from, who the people are working on it in the

It’s important for me to know who tells the story. B. I always choose absolutely natural seasonal products. As for the combinations, I let myself be inspired by the moment, the mood and the sensations that I get by looking at the ingredients and by smelling their aroma. Your favorite pizza? S. The margherita. B. The one I haven’t made yet. Which pizza do your customers request most? S. One with pesto and one dedicated to my brother Toto, which is a kind of open calzone. B. Mi serve anche per controllare lo stato della farina impastata, del forno se ha lavorato bene… faccio delle indagini a campione. B. Non lo so, non ci ho mai provato.

Una pizza da viaggio? S. Sicuramente il calzone ripieno napoletano… cotto “a bocca di forno”. B. Pizza e mortadella, più viaggio di così! Una ricetta da regalare ai nostri lettori in volo? S. Il calzone imbottito… L’importante è non preparare i prodotti troppo tempo prima perché ne voglio percepire la freschezza dell’immediatezza di preparazione. B. E nel cassetto, quale sogno custodisce? S. Far conoscere sempre di più la pizza napoletana e soddisfare persone che hanno diete anche particolari perché la pizza napoletana possiamo farla senza glutine, vegana, con farine integrali nell’impasto, metterci il farro, la segale. La pizza napoletana è completamente trasversale, può essere fatta in centinaia di modi e credo che non ci sia niente di più universale. B. Ne ho più di uno, ma per ora preferisco custodirli nel cassetto.

To let more people know about Neapolitan pizza and to satisfy people who have special diets too, because Neapolitan pizza can be made gluten-free, vegan, with dough made from whole wheat flour or with spelt or rye. Neapolitan pizza can cross all culinary boundaries and can be made in so many different ways and 4I don’t think there’s a more universal food. B. I have more than one, but for now I’d prefer to keep them to myself.

La ricetta di Bonci

Ingredienti per l’impasto 160 g di acqua 1 g di lievito fresco di birra 7 g di sale marino 240 g di farina 0 o anche 00 Per il ripieno Ricotta di bufala, provola, salame, pomodoro e pepe.

Ingredients for the dough 160 g water 1g fresh beer yeast 7g sea salt 240 g flour 0 or 00 For the stuffing Buffalo ricotta, provola cheese, salami, tomato and black pepper.

Preparazione Nella ciotola con l’acqua aggiungiamo il lievito, il sale e facciamo sciogliere. Aggiungiamo la farina. Impastiamo per 10 minuti minimo. Compattiamo il tutto e mettiamo la pagnotta in un recipiente di plastica o vetro trasparente e dopo circa 8 ore di lievitazione possiamo procedere. Stendiamo la pagnotta ottenendo la classica forma tonda. Stendiamo la ricotta lavorata, aggiungiamo la provola e il salame a dadini, un cucchiaio di pomodoro e un pizzico di pepe. Chiudiamo la pizza in due e otteniamo un grande calzone. Sigilliamo i bordi con dei pugni. Disponiamolo in una teglia di 33 cm di diametro foderata con carta forno e diamo dei pizzicotti per rompere un po’ la superficie. Completiamo con un velo di pomodoro e pepe. Mettiamo in forno per circa 14 minuti al massimo della potenza del forno di casa. Aggiungiamo il basilico e tagliamo in triangoli.

Preparation Put the water, yeast and salt in a bowl and let it dissolve. Add the flour. Knead for ten minutes minimum. Press down and place the dough in a plastic or glass container and after about 8 hours of leavening, proceed. Roll out the dough into the classic round shape. Spread out the ricotta cheese, add the provola and pieces of salami, a tablespoon of tomato and a pinch of pepper. Close the pizza in two you’ve got a great calzone. Seal the edges with your knuckles. Put it into a 33 cm diameter baking dish lined with oven paper and prick a few times to break the surface a little. Cover it with tomato and black pepper. Bake for around 14 minutes at the oven’s highest temperature. Add the basil and cut into triangles.

Ingredienti per l’impasto 1 kg di farina 0 700 ml di acqua 15 g di sale 1 g di lievito secco 12 ml di olio evo Per farcire Mozzarella di bufala, preferibilmente una treccia, prosciutto di Praga, lattuga, maionese. Preparazione In una ciotola impastare acqua e farina, poi aggiungere il lievito, il sale e infine l’olio. Formato l’impasto, lasciar lievitare in frigo per 24 ore. Una volta tolto dal frigo, stendere l’impasto con le dita, disporlo sulla teglia solo per metà e chiuderlo a libretto. Infornare al massimo della temperatura e cuocere per circa 15 minuti. Cominciare a farcire con la maionese, aggiungere il prosciutto di Praga e la mozzarella di bufala strappata con le mani. Terminare con la lattuga.

Remove from the fridge, spread the dough with your fingers, place half of the dough on the pan and fold over the other half into a “book”... Bake at maximum temperature for around 15 minutes. Starting filling it with the mayonnaise, Prague ham and the buffalo mozzarella (ripped apart by hand). Finish with lettuce.
