In volo verso le vacanze! Questo nuovo numero di beBlueAir vi accompagnerà in giro per l’Italia e per l’Europa in un periodo in cui le villeggiature - come si diceva una volta - la fanno da padrone... E allora abbiamo pensato ad argomenti e destinazioni che vi possano suggerire idee intelligenti per l’estate e fare compagnia mettendo da parte lavoro e pensieri. Il check-in, il biglietto di presentazione del magazine, è una bella intervista alla bellissima Bianca Guaccero (scusate il gioco di parole...!), che si prepara a sbarcare in televisione, a settembre su Rai 2, al timone di Detto Fatto. Ma entriamo subito nel vivo, con tre mete davvero esclusive. L’annuale report di AssoBirra ha rivelato che nel 2017 export (+7,5%), produzione (+7,9%) e consumi della “bionda” hanno toccato vette mai avvicinate. Un record interessante riguarda quello sul consumo pro-capite, che si è attestato su 31,8 litri l’anno. Da registrare anche il boom dei micro birriici e nuove realtà imprenditoriali giovanili che oggi superano quota 850. L’unico dato in calo riguarda le importazioni.

È recente, infatti, la scoperta in Giordania di alcuni ricercatori delle Università di Copenaghen, Cambridge e dell’University College di Londra – pubblicata sul Proceedings of the National Academy of Sciences – di resti carbonizzati di una focaccia non lievitata.

CICLOVIA In bicicletta da Limone del Garda ino in Trentino È stato da poco inaugurato il primo tratto della Ciclovia del Garda, un collegamento che va da Limone del Garda fino al confine con il Trentino, passando per Lombardia e Trentino, ma che soprattutto permette di pedalare o semplicemente camminare sospesi sul Lago di Garda, godendo di un panorama a dir poco suggestivo. Per ora si parla di circa 140 km, ma l’obiettivo è di far arrivare la Ciclovia anche in Europa. ndipendentemente dall’età o dalla formazione, siamo tutti legati da una comune curiosità, se non da una passione, per il mondo dell’aviazione. Oltre alla sicurezza fornita dalla nostra compagnia e all’esperienza di un grande viaggio a bordo degli aerei Blue Air, la più grande compagnia area rumena, ci piacerebbe farvi conoscere un po’ più da vicino la nostra grande famiglia. Piloti, assistenti di volo, tecnici, tutto il team risponderà alle domande più frequenti in materia di aviazione. Per questa intervista abbiamo accompagnato il comandante Stefan Bucur sul suo volo per Londra, durante il quale abbiamo sfatato miti, scoperto le difficoltà affrontate dai piloti, il loro stile di vita e altre interessanti curiosità sui

voli. Con 3000 ore di esperienza sul Boeing 737, la carriera del comandante Bucur è il frutto di una passione, unita ad una tradizione familiare. Il comandante infatti lavora con suo padre, un ex pilota dell’aviazione militare. Questa sarà probabilmente la domanda che più di frequente le hanno posto: cosa le ha dato l’ispirazione per diventare un pilota? «Ho tratto ispirazione dal fatto di essere cresciuto nelle vicinanze della base aerea di Fetesti (in Romania) e mio padre era un pilota militare. Per questo ho il volo nel sangue e non ho mai neppure pensato di fare un altro mestiere. Adesso io e mio padre siamo colleghi in Blue Air, ma non abbiamo

AL VOLO Bucur’s career is all about passion, combined with a family tradition, as he now works with his father, who is a former air force pilot. Here is probably the most frequent question you have been posed: what inspired you to become a pilot? «I got my inspiration from the fact that I grew up near the Fetesti air force base (in Romania), and my father was a military pilot. This made me have lying in my blood, so I never even considered choosing a diferent career. We are now colleagues at Blue Air, but we never had the chance to ly together because we are both captains». What were the challenges you had to overcome in order to become a pilot? «The challenges were both inancial and intellectual. In some respects, the curriculum is extremely intense, with a lot of information concentrated in a short period of time».

Qual è lo stile di vita di un pilota? «Il nostro stile di vita richiede un’estrema organizzazione, sia durante che fuori servizio. Le ore lavorative sono relativamente caotiche, iniziamo sempre in orari diversi, ed è per questo che hai bisogno di organizzare con cura il tempo libero per mantenere un 14 _ agosto-settembre 2018
sano stile di vita e godere un po’ della tua vita». Percorre ogni giorno la stessa tratta? «Il mio programma di volo cambia tutti i giorni. Oggi, per esempio, sono partito diretto a Londra alle sette del mattino e rientrerò questa sera. Domani mattina andrò a Roma a mezzogiorno e tornerò in serata. Di media, a causa delle severe regolamentazioni riguardo gli orari di lavoro, volo dai 16 ai 18 giorni al mese». Quali sono gli oggetti essenziali che si trovano nella sua valigia in questo momento? «I miei brevetti, le cuie per il volo ed il mio EFB – un tablet che calcola anche le prestazioni, mostra rotta del volo e contiene i ile di dati essenziali per il volo».
Qual è la prima cosa che ha fatto oggi, dopo il suo arrivo in aeroporto? «Ho incontrato il mio staf e insieme abbiamo controllato i dati del volo: il tempo, la rotta, il carburante necessario, le condizioni dell’aereo. Il passaggio successivo è stato il brieing con il personale di bordo: numero di passeggeri, orario del volo eccetera. Dalla sala del brieing siamo saliti direttamente a bordo dell’aereo, dove ciascuno di noi ha controllato e disposto l’area di propria responsabilità per quel volo. Una volta completate le solite procedure, abbiamo invitato i passeggeri a bordo e abbiamo dato il via alle procedure per il decollo».
What is the typical lifestyle of a pilot? «An extremely well-organized lifestyle is necessary, both on and of duty. The working hours are relatively chaotic, with diicult starting hours, which is why you need to structure your free time carefully in order to maintain a healthy lifestyle and get the chance to enjoy it».
Molti passeggeri pensano che, durante il volo, tutto il lavoro sia aidato al pilota automatico. E’ così? «Il pilota automatico non fa che seguire le istruzioni date dai piloti. È vero che rende il nostro lavoro molto più semplice, migliora il comfort del passeggero e l’eicienza in generale, ma non si tratta di un sistema autonomo e ha costantemente bisogno delle nostre indicazioni. Spero di aver sfatato questo mito!».
Do you ly the same route every day? «My light schedule difers a lot daily. Today, for instance, I left for London at 7 AM, I will ly back in the evening, and tomorrow morning I am of to Rome at noon and back again, in the evening. On average, due to the strict regulations regarding working hours, I ly 16 to 18 days a month».
Ogni sei mesi i piloti devono superare un esame al simulatore. In cosa consiste? «Utilizziamo un simulatore per prepararci alle situazioni di emergenza. I piloti devono sempre essere pronti ad afrontare le emergenze, e noi ci prepariamo al simulatore».
What are the essentials you have in your suitcase right now? «My licenses, aviation headset and my EFB – a tablet which is also a performance calculator, light map and ile containing vital light data».

What is the irst thing you did today, after arriving at the airport? «I met my crew and we checked the light data together: the weather, route, necessary fuel, condition of the aircraft. The next step was the brieing with the cabin crew: number of passenger, light time, etc. From the brieing room we proceeded to the aircraft, where each of us checked and prepared their responsibility

Potete ascoltare la musica o leggere? «Non ci è consentito ascoltare la musica o compiere altre attività che distolgano la nostra attenzione. Impieghiamo il nostro per così dire tempo libero – quando raggiungiamo la quota di crociera ed abbiamo poche mansioni da compiere – chiacchierando tra noi o leggendo il manuale o dei documenti relativi al volo. Ha una bella procedura di atterraggio e la vista della costa è eccezionale. I passeggeri di Blue Air che hanno viaggiato su questa tratta lo confermeranno!». E il più bel paesaggio che ha visto dalla cabina di pilotaggio? «Quando ci avviciniamo e scendiamo su Lione, in Francia. Il paesaggio è incredibile. Se il tempo è bello, la discesa sulle Alpi, passando molto vicino al Monte Bianco, ofre una vista spettacolare!».

Many passengers believe that, during light, the auto-pilot does all the work. Is it true? «The auto-pilot merely follows the pilots’ commands. It’s true that it makes our work considerably easier, increases passenger comfort and light eiciency, but it is not an autonomous system, and it permanently needs our indications. I hope I busted that myth!». Every 6 months pilots need to pass a simulator test? What does that imply? «We use the simulator to train for emergency situations. As a pilot you always need to be prepared to face an emergency, and the simulator is where we train». Many passengers wonder why the lights inside the aircraft are always dimmed for take-of and landing. «That is a standard procedure, meant to make the emergency lights more visible and accommodate the passengers’ eyes in case an emergency evacuation is necessary». During the light, some passengers read, others sleep. What are the pilots allowed to do? Can you listen to music, or read? «We are not allowed to listen to music or perform other activities which distract our attention. Our so-called free time – when we are at our cruising altitude and we have fewer tasks to perform – is spent having a chat or reading manual and light-related documents. During this period of time, one of the pilots has to monitor both radio frequencies and the aircraft’s light». What is your favorite airport when landing? «Nice, on the Cote d’Azur. It has a beautiful landing procedure, and the view of the coast is superb. Blue Air passengers who travelled to this destination can conirm!» And the most beautiful lanscape you have ever seen from your cockpit? «The descent and approach to Lyon, France. It is an incredible landscape, the entire descent is done above the Alps, passing very close to the Mont Blanc, and when the weather is good, our view is spectacular!». agosto-settembre 2018 _ 15

ON HOLIDAY WITH AISM For years now, the association has been committed to promoting “social and accessible tourism” thanks to specialized structures in the territory Each single individual afected by multiple sclerosis and with other handicaps has the right to live a full and inclusive life. Thanks to various activities and projects of accessible tourism, AISM is promoting physical independence of people with disabilities in order to give them the opportunity to spend a holiday in structures able to meet their needs and to travel “with no limits”. The accessibility does not involve only those afected by mobility impairment, it must be considered as “tourism accessible to everyone”. AISM introduced this “tourism for everybody” activity already in 2000 with the opening of “I Girasoli” a vacation home located in Lucignano in the province of Arezzo. It is the feather in the cap of the AISM activities connected to accessible tourism. This experience was extended to other structures scattered throughout the territory that now are part of the “like Home” network. On the strength of its experience, AISM has become an “efective association” nationally and internationally recognized in terms of accessible tourism. Furthermore, such experience led to the creation of projects aimed at spreading the accessibility culture. These projects include the WAT – Women Accessibility & Tourism – project, carried out in partnership with the Fondazione Costa Crociere. The mission: training women afected by multiple sclerosis to create accessible itineraries that connect the ports with the historic centers of 10 Italian and European cities. The “tourism for everybody” activities are included in the action campaign promoted by AISM, #SMuoviti, created to celebrate the 50th anniversary of the Association. Questo cambio di testimone alla guida di Detto Fatto è più una responsabilità o una soddisfazione? «Sono felice, ma nello stesso tempo consapevole che ci sarà un grande lavoro da fare e lo affronterò come ho sempre fatto, con grandissima attenzione e professionalità».
Dopo l’esperienza estiva sul palco del Festival Show, l’attrice è pronta a una nuova sida come conduttrice: da settembre su Rai 2 con Detto Fatto di Dario Morciano afaella Carrà diceva che “Non ci si improvvisa. Per diventare grandi serve molta esperienza alle spalle, dalla serata allo spettacolo, dalla piccola televisione alla radio”. Sono le persone che hanno sempre creduto in me». Di questo cambio tra lei e la Balivo si è parlato e scritto tanto… «La colpa è dei giornali che hanno creato una rivalità che non esiste. Tra me e Caterina c’è grande stima e afetto e il giorno della presentazione dei palinsesti ci siamo fatte l’in bocca al lupo». È un vulcano che riesce a caricare anche me. C’è una bella sinergia tra di noi. Ci compensiamo e le nostre energie creano una bella miscela esplosiva». Cosa porterà di nuovo, Bianca, a Detto Fatto? «Il mio bagaglio di attrice perché è quello che ho sempre fatto. Inoltre porterò tutta la mia professionalità e senza stravolgere il format ci saranno delle sorprese legate a ciò che mi piace e alle mie passioni». I tutorial sono il cuore di questo programma. Nella vita di tutti i giorni le è capitato di seguirne qualcuno? «Mi piacciono quelli sul trucco, il itness, la moda e tutto quello che riguarda il look. Questo mondo mi appartiene sin da bambina. Tra l’altro ho sempre sognato di fare un corso di cucina e ora grazie a Detto Fatto potrò inalmente farlo (ride, ndi)». However, the thing that pleased me the most was having discovered that this program is followed by a large audience, including many men who told me that Detto Fatto is their favorite program. It surprised me».
BIANCA GUACCERO Following her summer experience at the Festival Show, Guaccero is gearing up for a new challenge: from September Bianca will present the Detto Fatto TV program on Rai 2 As Rafaella Carrà once said: “You can’t improvise. You need a lot of experience to succeed: from night events to shows, from TV to radio.” Bianca Guaccero, who has always considered “Rafa” - the Italian iconic star – as one of her models, must have followed Carrà’s lead since she has succeeded in all her tasks, from cinema to theater, passing through music and TV. She has now developed a great experience that made her conquer both the critics and the audience given her skills and her niceness. The beautiful artist from Puglia is to face a new challenge in September. She, in fact, will present the successful TV program, Detto Fatto: «It is a great honor and challenge to enter the Italians’ homes every day». Yours has been a summer to the rhythm of music, at the helm of the Festival Show… «It was a very pleasant and thrilling experience, since I love music. The thing I like the most is the direct contact with the audience that gives you incredible energy». In September you are to present Detto Fatto on Rai 2. Are you ready? «I am happy to become part of this big family. I have a great opportunity to show a completely diferent aspect of myself. It’s a great honor and a great challenge to enter every day the Italians’ homes, I’ll try to bring my professionality, my experience and respect for this new adventure». A handover at the helm of Detto Fatto, is it more a responsibility or a gratiication? «I am happy, but in the meantime I know that I will have to work hard. I’m going to face it as I’ve always done, with great professionality and attention».

Who was the irst wishing you “good luck”? «They were two. The casting manager whom I had my irst audition when I was 16, and my director, Fabio Segatori. These two people have always believed in me». Much has been said and written about this handover between you and Balivo… «The press has created a rivalry that doesn’t exist. Between Caterina and me there’s nothing but afection and esteem. The day the TV program schedule was presented we wished each other “good luck”». Giovanni Ciacci too – despite this handover and the many proposals he received from other TV programs – has conirmed his presence and sent you a welcome message. «I adore him. We’ve already worked together and I can honestly say he’s an extraordinary man. We love each other and I do respect him as he’s a great professional. He’s really energetic and he gives me lots of energy. There is a good synergy between us. We compensate each other and our energies create a volcanic blend». What novelties will Bianca bring to Detto Fatto? «My experience as an actress, because this is what I’ve always been. Furthermore, I will bring all my professionality without revolutionizing the format. There will be new features connected to what I like and to my passions». Tutorials are the core of this program. Have you ever happened to follow one in your daily life? «I like those for make-up, itness, fashion and everything that has to do with image. This is the world where I belong since I was a child. Moreover, I’ve always dreamed of taking part in a cooking class and now, thanks to Detto Fatto, I’ll have the chance to do it (laughs, ed.)». Persone che riuscivano in maniera egregia a vivere sul palco come sul set come fece anche Walter Chiari. Sono loro i personaggi che fanno parte della nostra formazione culturale». Lontano dai rilettori, Bianca Guaccero che donna è? «Innanzitutto sono una mamma innamorata di sua figlia. Mi piace condividere la vita con le persone di sempre e torno spesso nella mia Bitonto. Come cantava Tricarico “faccio una vita tranquilla” (ride, ndi)». E come riesce a conciliare il ruolo di mamma con il lavoro? «Cerco di organizzarmi al meglio, magari con qualche aiuto, ma cercando di essere sempre presente per mia iglia. We start with a rich breakfast with churros, maybe with a nice cup of chocolate, before heading to the Rastro, a local market where you go on the lookout for the chollo, the deal. For lunch, the must is the bocadillo de calamares (sandwich with calamari) to be eaten in the Plaza Mayor, after having bought it in one of the many stands located in the square. And inally, sports fans can decide between the Santiago Bernabeu, realm of Real Madrid, or the Wanda Metropolitano, the new home of Atletico. The recently renovated Port of Liverpool and the entire port area are now the city’s feather in the cap and have been included in the UNESCO World Heritage Site list.
n intero esercito dal lontano Oriente è entrato a Liverpool e non ne uscirà prima dell’autunno. Cosa è successo nella città inglese patria dei Beatles e dello storico stadio di Anield? Niente di drammatico, ma una meravigliosa mostra che, dal 9 febbraio di quest’anno ino al 28 ottobre, è ospitata dal World Museum e porta agli occhi dei visitatori uno dei più importanti rinvenimenti archeologici che riguardano la Storia dell’Oriente. Nel 1974, dal mausoleo del primo imperatore cinese Quin Shi Huang, fu riportato alla luce un immenso esercito di terracotta posto “a guardia” della tomba del personaggio storico. Per oltre duemila anni i guerrieri (in scala 1:1, ossia grandi proprio come degli uomini in carne ed ossa) hanno vegliato sul primo della dinastia dei Quin, sepolto nell’odierno villaggio di Xiyang. Dopo la casuale scoperta da parte di un contadino del villaggio, sono iniziati gli scavi presso il sito ino alla sensazionale raccolta di tantissimi oggetti di valore storico che abbracciano vari secoli della storia cinese. Dal 1987 il sito è Patrimonio dell’umanità e l’incredibile mostra afascina ora i visitatori di Liverpool. Lo showcase include un numero di oggetti, utensili, statue che mai prima d’ora erano stati esposti nel Regno Unito e fanno luce sulle pratiche dell’antichità orientale di preparazione all’immortalità. Si tratta principalmente di un museo di storia naturale che abbraccia dal mondo dei dinosauri a quello fantascientifico dell’universo, passando per le meraviglie dell’antichità. Nello specifico, le tre mostre permanenti al suo interno si dividono in: storia naturale, storia dell’uomo e spazio. La struttura comprende anche un acquario e un planetario. Appassionati di storia e scienza, ma anche famiglie intere sono le tipologie di visitatori più attirate dal museo. Liverpool è la città europea con il maggior numero di musei e gallerie d’arte, tra cui spicca il già citato World Museum e gli fanno compagnia il Walker Art Gallery e il Tate Liverpool, galleria che ospita le opere dei maggiori artisti del Novecento e che festeggia nel 2018 il suo trentesimo anniversario. What’s going on in the Beatles’ hometown and the historic Anfield stadium? Nothing tragic, but an amazing exhibition that, from February 9 to October 28 2018, is housed in the World Museum and bringing to the visitors one of the most important archaeological finds related to the Far East history. In 1974, from the mausoleum of the first Chinese emperor Quin Shi Huang, an immense army of terracotta “guarding” the tomb of the historical persona was brought to light. For over two thousand years, the warriors (on a scale of 1: 1, that is life-size warriors) have secretly watched over the first of the Quin dynasty, buried in today’s village of Xiyang. A chance discovery by a village farmer, excavations began at the site until the sensational discovery of many objects of historical value, that span several centuries of Chinese history, were collected. Since 1987, the location is a World Heritage Site and the incredible exhibition now fascinates visitors in Liverpool. The exhibition will showcase a number of objects, tools, and statues that have never been on show before in the UK. These artefacts shed light on immortality and how Eastern antiquity prepared for the afterlife.

The Chinese history between b.C and AD is represented and admired through “China’s First Emperor and The Terracotta Army”. The World Museum is one of the most famous touristic and cultural centers in Liverpool, and was inaugurated in 1851. It is mainly a museum of natural history going from the world of dinosaurs to the science-iction of the universe, passing through the wonders of antiquity. Speciically, the three permanent exhibitions housed are: natural history, human history and space. In the structures, you will also ind an aquarium and a planetarium. The visitors most attracted to the museum are history and science fans, but also entire families. Liverpool is the European city with the largest number of museums and art galleries. Needless to say that the above mentioned World Museum stands out though immediately followed by the Walker Art Gallery and the Tate Liverpool. The latter hosts the works of the greatest 20th century artists and this year is celebrating its thirtieth anniversary. The Walker Art Gallery holds works such as the Cruciixion of Christ, the Master of Forlì, and other Italian and foreign paintings. The tenth edition of the Liverpool Biennial, entitled “Beautiful World, where are you?” was inaugurated on July 14. The title is a translation of a poem by Friedrich Schiller, German poet, then put to music by Schubert in 1819. The Biennial is presented in 21 locations across the city, in public spaces, civic buildings and art venues such as the Open Eye Gallery, the FACT, the Bluecoat, the Liverpool John Moores University’s Exhibition Research Lab, the Victoria Gallery & Museum. The curators of the Biennial, Kitty Scott and Sally Tarant have asked over 40 artists over worldwide to answer the call of “Beautiful World, where are you? 22 nationalities, 22 points of view for an event that is sending out a message of global responsibility. And if you’re speaking of art and culture in Liverpool you can’t go without mentioning Paul McCartney, John Lennon, Ringo Starr and George Harrison, who have created and marked pop art and culture forever. L’1 e 2 agosto è lo spettacolo “Future” a illuminare Villa Filippina con le danze acrobatiche. Finale poi il 5 agosto a Borgo di Stefano di Gibellina, in provincia di Trapani. La lungimiranza elettiva che va oltre le apparenze, una sida che si rinnova e non si esaurisce mai, proprio come il Teatro del Fuoco: è questo il tema dell’edizione 2018. «È un evento spettacolare con una sapiente miscela di ingredienti che si rinnova per creare meravigliosi show in palcoscenici naturali fra i più belli del mondo con artisti pieni di talento, ed il fuoco con la sua straordinaria forza evocativa. Un’esperienza unica rivelatasi vincente che ha qualiicato il Festival come un’iniziativa volta a generare un indotto con importanti ricadute turistiche per il territorio» afferma Amelia Bucalo Triglia, direttrice artistica del Festival. Il Teatro del Fuoco è un progetto indipendente nato nel 2008 a Stromboli, ma da cinque anni si tiene a Palermo.

THE LONG SICILIAN SUMMER A bill full of events in August and September throughout the island including concerts, shows, gastronomic events and... weddings The best of Italian light music, and also classical music, opera, theater and appealing food and wine events featuring singers as guests. In August, Sicily is full of live events, with an add-on in September just as catching: to close out the island’s long summer of concerts will be none the less Laura Pausini September 28 and 29 at the Pal’Art Hotel in Acireale. The long Sicilian summer ends, as per tradition, with the 21st Cous Cous Fest in San Vito Lo Capo, a party that celebrates from September 21 to 30 a dish common to many cultures: there are at least 40 recipes to choose from in the menus proposed, tasting points located throughout the town, including four on the beach. This year the cooking shows, the events with great Chefs including Giorgione from Gambero Rosso Channel, Andy Luotto, Prova del cuoco’s Sergio Barzetti, and the Sicilian host and Chef Filippo La Mantia will return. There will be free concerts and shows, except for the one already mentioned of Ermal Meta: other guests of the festival will be Le Vibrazioni, The Kolors and Beppe Grillo.

This splendid English-style garden located inside the Caserta Royal Palace Park was created by German nurseryman and botanist John Andrew Graefer. Commissioned by Queen Maria Carolina, it is still today one of the most beautiful attractions in the region. As for the classic English gardens, its characteristic is to try to reproduce nature in each of its details: creeks, small lakes and “ruins” following the trend linked to the discovery of Pompei. Local and exotic plants live in this special “oasis”.

Giardino di Ninfa Latina-Italia Il Giardino di Ninfa sorge ai piedi dei Monti Lepini, in provincia di Latina e venne realizzato a partire dagli anni Venti del Novecento sulle ceneri della scomparsa cittadina medioevale di Ninfa; è stato dichiarato Monumento Naturale dalla Regione Lazio nel 2000. Tipico esempio di giardino all’inglese, all’interno si incontrano varietà di magnolie decidue, betulle, iris palustri e una sensazionale varietà di aceri giapponesi. Inoltre a primavera ciliegi e meli ornamentali ioriscono in maniera spettacolare. The Garden of Ninfa lies at the foot of the Lepini mountains, in the province of Latina and was built in the 20s on the ruins of the medieval town of Ninfa; in 2000, the Lazio Region declared it a Natural Monument. A typical sample of an English-style garden, it features varieties of deciduous magnolias, birch trees, marsh irises and a sensational variety of Japanese maples. What’s more, in spring cherry trees and ornamental apple trees bloom offering a spectacular view.

Completano l’atmosfera piante come la cyca revoluta, le grandi felci arboree, le orchidee, le camelie e le azalee.
L’Eden Project è un complesso turistico in Cornovaglia, nel sud-ovest del Regno Unito, che oggi ospita due delle più grandi biosfere al mondo. Il bellissimo giardino è iscritto nella lista dei Patrimoni Mondiali dell’UNESCO. Due enormi cupole in acciaio e plastica ospitano al loro interno oltre 100.000 specie di piante provenienti da tutti i continenti. Roia. A fargli un torto si potrebbe ricordarlo come il Dandi del Romanzo Criminale televisivo, ma la verità è che l’attore romano è molto di più. Negli ultimi anni è stato in grado di attraversare un’ampia gamma di personaggi e generi. Roia, perchè hai accettato la sida? «Principalmente perché di film così non se ne fanno tanti e poi certamente perché mi hanno chiamato i Manetti Bros. Ci conosciamo da tanto tempo, volevo fare qualche cosa di interessante, ho conosciuto il regista ed era fico e soprattutto ho letto la sceneggiatura e ho subito pensato che fosse divertente e molto stimolante». agosto-settembre 2018 _ 51

Sei chiuso dentro un ascensore per quasi tutto il ilm, com’è andata? «È stata un’esperienza abbastanza alienante. Sono stato davvero tanto tempo là dentro a parlare da solo come i matti, però quello è stato il divertente, lavorare su una partitura emozionale e girare tutto in sequenza temporale che è una cosa rarissima». Tra l’altro eri solo in compagnia del tuo personaggio e non era un bel stare insieme perché il tuo Claudio è una brutta persona, vero? «Non volevamo il classico eroe. L’idea era di concentrarci su un personaggio egocentrico che sta salendo con l’ascensore per andare a compiere la missione della vita, la fusione tra due società che lo faranno diventare ancora più ricco e avere ancora più potere. Quindi è qualcuno concentrato sul suo successo personale, non sugli autentici valori della vita. Una persona come ce ne sono un milione, egoista, supericiale, ma ciò che ci racconta il ilm è che ci siamo creati tanti substrati che ci fanno diventare quello che siamo, ma poi, nelle situazioni più straordinarie o al limite, è tutto scarniicato e rimane l’essere umano con le sue debolezze, le sue paure, la sua capacità anche di pentirsi e di redimersi». Cambi spesso il tono dei personaggi che interpreti, il Dandi, il poliziotto corrotto di 1992, il pianista classico costretto a diventare cantante neomelodico, la piccola parte ne L’ora legale per Ficarra e Picone e anche la iction. Come scegli i copioni? «Da una parte sto vivendo la professione come ho sempre sognato, sono molto contento, ma penso sempre che si possa fare molto di più. Questo è il modo in cui io concepisco il mestiere, penso sempre che sia un gioco, senza tecniche, con più o meno novità, con più o meno studi diversi. Io lo vivo così e credo che, anche per una questione di carattere, io sia più portato verso quei tipi lì. Non sono un attore auto-rappresentativo, non ho quella forza». 52 _ agosto-settembre 2018

Sono persone più o meno “normali”, i ragionamenti sono sempre gli stessi, cambiano le condizioni e cambiano i caratteri. Quindi bene e male dipendono dall’occhio dello spettatore, dalla storia, dalla trama, non da me. Dal mio punto di vista il mio personaggio è sempre dalla parte della ragione, anche il peggiore dei criminali, alla ine della iera, pensa di avere ragione lui. Claudio Verona di The end? L’inferno fuori ti direbbe che è così che va la vita, che bisogna guadagnare, che nel mondo bisogna dare una valutazione a tutto, queste sono le sue convinzioni e alla ine ha ragione lui, almeno nel suo mondo».

On top of it you were alone with your character and that wasn’t that cool considering that Claudio is a pretty mean guy, right? «Well you know, we didn’t want your typical hero, the idea was to focus on a self-centered character who is taking the elevator to go sign the deal of his life, the merger of two companies that would make him even richer and have even more power. So it’s someone that’s focused on his personal success, not on the authentic values of life. Millions of people are like this, selish, supericial but what the ilm shows us is that we have created so many under layers that make us what we are, but then, in the most unexpected situations or at the limit, you’re stripped down and all that’s left is the human being with his weaknesses, his fears, his ability also to repent and redeem himself». You often change the characters you play: Dandi, the corrupt policeman in 1992, the classical pianist forced to become a neomelodic singer, the small part in L’ora legale for Ficarra and Picone comedians and also the iction. How do you choose the scripts? «I am living the profession like I always dreamed of, I am very happy, but I always think that we can do much more. This is the way I conceive the profession, I always think it’s a game, without techniques, with more or less novelties, with more or less diferent studies. I live it like that and I believe that, also for my personality, I am more inclined towards those guys there. I’m not a selfrepresentative actor, I do not have that strong point». You change a lot in your interpretations, it’s an impressive ability! «I never judge my characters; I try to understand exactly what they are doing. They are more or less “normal” people, the reasoning is always the same, the conditions and characters change. So good and bad depend on who’s watching, on the story, on the plot, not on me. From my point of view my character is always right, even the worst criminal at the end of the day, thinks he’s right. Claudio Verona of The end? L’inferno fuori, would tell you that this is how life goes, that you have to earn it, that in the world you have to evaluate everything, these are his beliefs and in the end he is right, at least in his world».

È cresciuta tra i fornelli del ristorante di famiglia, ma come ha capito che sarebbe rimasta in cucina? «Il bello di noi igli, siamo in quattro, è che ci siamo appassionati sempre di più al mondo della ristorazione, solo una ha capito che non era la sua strada. Non era scontato anche per me, però da piccola – anche da quello che mi hanno raccontato i miei genitori – sono stata sempre appassionata al ristorante come immobile, più che alla cucina (ride, ndi), perché era anche la mia casa. Ho avuto per tanto tempo una sorta di confusione tra abitazione e posto di lavoro ma, come si suol

Sul suo blog si deinisce “cuoca del ristorante Le Colonne”. Cosa cambia tra cuoca e chef? «Chef è innanzitutto un nome francese che esprime chi comanda. Io lo sono, però di fatto… Oltre a “Le Colonne”, abbiamo il “San Bartolomeo Casa in Campagna”, che abbiamo avviato senza papà. Della cucina me ne occupo io – sono ormai lo specchio dei due ristoranti – e mio fratello Loreto, mia sorella Maria e mia mamma pensano a tutto il resto. Non c’è solo la cucina, ma la moda degli chef ha fatto sì che emergessi più io che loro. È un lavoro di squadra, da soli non si fa niente, specialmente in questo lavoro».

You grew up around the cooker in the family restaurant, but how did you know that that’s where you would stay? «The good part of us kids, we’re four, is that we are passionate about catering, just one has taken another path. It wasn’t that obvious for me, but as a child - even from what my parents told me - I was always passionate about the restaurant but as a property, rather than the kitchen (laughs, ed.), because it was also where I lived. L’ispirazione da dove arriva? «Da quando si è più liberi (ride, ndi): la pizza al contrario, la palla di mozzarella, l’uovo mozzo, sono nati camminando (ride, ndi), non in cucina dove poi faccio le prove. Mi piace camminare, è un modo per staccare. Fino a un anno fa, quasi tutti i giorni, andavo a passeggiare alla Reggia (di Caserta, ndi), anche per tenermi un minimo in allenamento (ride, ndi). E poi dalla fame, dall’astenersi al cibo, ti viene la voglia di preparare delle cose… funziona! Ci sono dei periodi in cui non bevo il vino, non mangio per esempio i carboidrati. Sul cibo ci sarebbe tanto da raccontare…».

E l’idea di modellare la mozzarella? «La mozzarella è un prodotto così buono già da solo che quasi non andrebbe toccato e mi sono venute in mente idee anche facili. La pizza piace a tutti e “al contrario” perché no? Siamo nel maggiore posto di produzione della DOP e poi non mi ha mai dato soddisfazione servire la mozzarella così “nuda e cruda” tipo caprese: anche fermarsi in un caseiicio e mangiarla a morsi ti può dare una grande soddisfazione a 2-2,50 euro. Per far pagare 15-16 euro di caprese, devo dare quel qualcosa in più che giustiica il prezzo».
On your blog you express yourself as “cook of the restaurant Le Colonne”. What’s the diference between cook and chef? «Chef is above all a French word that expresses who gives orders. I am, actually a Chef ... In addition to “Le Colonne”, we have the “San Bartolomeo Casa in Campagna”, which we started without our father. I take care of the kitchen - I am now “the mirror” of the two restaurants - and my brother Loreto, my sister Maria and my mother take care of everything else. A restaurant is not all about cooking, but the latest trend of “Chefs” made it so that I stand out more than they do. It’s a team efort, you do not do anything on your own, especially in this job». You have received several prizes and awards, which one do you care about the most? «They are all very important to me. The Michelin star was the recognition of our hard work. Essere “ambasciatrice nel mondo della mozzarella di bufala campana DOP” cosa signiica per lei? «È una gratiicazione perché ci ho lavorato tanto. Ho lavorato tanto sull’identità di una Caserta che un po’ di anni fa era lo specchio di Napoli: si stavano quasi perdendo le caratteristiche di un paese che aveva buona parte della produzione di mozzarella di bufala e di tantissime altre cose. Pian piano mi sono accanita a questo prodotto e manager di settore, arrivati al Consorzio, hanno capito e riconosciuto il lavoro fatto per anni. Ci ho creduto sempre, l’ho perseguito e non è stato subito così». Degustare “con le orecchie”, di che esperienza si tratta? «Su Caserta e i suoi prodotti non c’erano molte informazioni, allora mi sono detta perché non fare un
aperitivo dove iniziamo a spiegare il territorio? Da uno siamo passati a quattro. “I sapori della nostra terra”: il commensale era invitato da un audio a stringere tra le mani la pietra vulcanica che era nel piatto per iniziare ad assaporare il carattere fertile della Campania, poi assaggiare la foglia di cicoria, il bocconcino di carne di bufalo, la mela Annurca, il bicchierino di acqua (delle Sorgenti) del Fizzo, cioè dell’Acquedotto Carolino che attraversa la cascata della Reggia. In collaborazione con la Ferrarelle è nato “A pane e acqua”. Poi abbiamo realizzato “Bianca d’olio”, un bocconcino di mozzarella con l’anima di olio evo servito su una vecchia riggiola con un incàvo di foglia d’ulivo su cui vi era una polvere di pomodoro: il commensale doveva farlo rotolare, metterlo in bocca e assaporare insieme l’olio e la mozzarella di bufala. What inspires you? «Freedom inspires me a lot (laughs, ed.): the backwards pizza, the mozzarella ball, the cut up egg, have been conceived while walking(laughs, ed.), not in the kitchen where I then do my experiments. I like walking; it’s a way to chill out. Up to a year ago, almost every day, I went for a walk at the Reggia (Caserta, ed.), just to keep in shape (laughs, ed.). And then from hunger, from refraining to eat food, you get the will to prepare things ... it works! There are times when I don’t drink wine, I do not eat, for instance, carbohydrates. There would be so much to tell about food...». And the idea of shaping the mozzarella? «Mozzarella is such a good product already on its own that it almost should not be touched and even easy ideas came to my mind. Everyone likes pizza and “backwards” why not? We are in the heart of the DOP production and I serving plain mozzarella, so “raw” like the caprese is not very gratifying to me: if you stop by in a dairy and eat a mozzarella in bites can give you a great satisfaction paying 2-2,50 euro. To charge 15-16 euros for a caprese, I need to give a little extra something that justiies the price». Being “ world ambassador of Campana PDO bufalo mozzarella” what does that mean to you? «It’s so gratifying because I’ve worked so hard on it. I worked a lot on the identity of

Caserta that a few years ago was the mirror of Naples: they were almost losing the characteristics of a land that had the most part of the bufalo mozzarella production and many other things. Slowly I became more interested and tenacious towards the product and industry managers, at the Consortium, have inally understood and recognized the hard work done for years. I have always believed in it, I pursued it and it wasn’t like that right away».

Per me è importante la televisione e i programmi che avvicinano le persone alla cucina e ai prodotti “strani” che mai potrebbero conoscere se non con il contributo, diciamo di uno chef. L’esperienza da giudice è stata molto divertente perché ho avuto dei compagni molto piacevoli…». Nella sua cucina cosa non deve mai mancare? «Torna sempre il pane in molte cose che faccio, il pomodoro, la mozzarella… non ne puoi fare a meno». Il suo piatto preferito? «Non ne ho, mi piace mangiare tutto, più il salato». Qual è la sua idea di viaggio? «La scoperta e la riscoperta di luoghi, tradizione e di tutto quello che è estraneo dalle proprie abitudini. Mi piace viaggiare, seguire il viaggio, le tradizioni del posto». C’è qualcosa che l’ha colpita particolarmente? «La cucina thailandese: la salsa di cocco, il curry, adoro le zuppe».

Che ha riportato nella palla di mozzarella… «Ho fatto subito la Palla Thai di cocco e curry. L’ho dovuta equilibrare, non con il piccante che piace a me, ma più leggerina, altrimenti la mangiavo da sola». Quello che le manca di più all’estero. «Posso stare 15 giorni senza pasta, pane… per più tempo mi dovrei organizzare (ride, ndi)». Il piatto che la fa sentire a casa. «I classici: parmigiana di melanzane, mozzarella in carrozza…». Un prodotto “non campano” che la conquista? «L’aceto balsamico, per esempio. Mi conquistano i vari invecchiamenti». A ogni stagione il suo gusto. Qual è per lei quello dell’estate? «La freschezza, l’estate ti riporta al pesce, alla caprese…» Una “palla di mozzarella” adatta all’estate? «La sfera bianca con il ripieno rosso: una mozzarella ripiena di peperoni, al limone, servita a 35 gradi». Un sogno da realizzare a breve? «Sono un po’ superstiziosa (ride, ndi)». Un gusto o un ingrediente che la descrive perfettamente. «“Il pane cafone”: una crosta un po’ più dura fuori e una morbidezza all’interno».
Tasting “with the ears”, what is this experience? «There wasn’t much info on Caserta nor of its products, so I said why not do an aperitif where we begin to explain the territory? From one we went to four. “The tastes of our land”: the guest was asked to hold, in his/her hands, the volcanic stone that was in the plate to start to have the feel of the fertile character of Campania, to taste the chicory leaf, the bite of buffalo meat, the Annurca apple, the glass of water (from the Springs) of the Fizzo, that is the Carolino Aqueduct that crosses the Reggia waterfall. In partnership with Ferrarelle we created”A pane e acqua”. Then we did “Bianca d’olio”, a small piece of mozzarella with a “soul” of extra virgin olive oil served in an old riggiola (old ceramic tile typical from the Sorrento area) on a bed of olive leaves on which we put tomato powder the diner had to make it roll, put it in the mouth and taste the oil and the buffalo mozzarella together. Finally, the fantastic return of Charles of Bourbon who can’t wait to be reincarnated so he can, once again, taste the mozzarella (laughs, ed.)». What has come from your experience as a judge and in general from TV? «Very much regarding image and it gave me visibility: people far from me became aware of what I was doing and came to try the “ball of mozzarella “, the “backward pizza”. For me TV is important as well as the programs that introduce people to cooking and to “strange” products that wouldn’t have been known if it weren’t for the, let’s say, Chef. The experience as a judge was a lot of fun because I had some very nice companions...». What’s never missing in your kitchen? «Bread always comes up in many things I do, the tomato, the mozzarella ... I can’t do without it». INGREDIENTI PER 4 PERSONE 680 g di sfoglia di mozzarella di Bufala Campana DOP 160 g di pomodori pelati San Marzano 12 foglie di basilico 160 g di pane tostato a quadretti olio evo sale PREPARAZIONE: Procedimento Con l’aiuto di un coppapasta, tagliare a disco la sfoglia di mozzarella di bufala. Preparare il into cornicione della pizza utilizzando la mozzarella eccedente il taglio. Ammorbidire gli scarti di mozzarella passandoli nel microonde a 600 W per un minuto, quindi iniziare a lavorarli con le dita.
Formare un cordoncino di lunghezza pari al diametro del disco di mozzarella. Farcire il cordoncino con i quadretti di pane tostato e richiuderne rapidamente i lembi per farli unire inché la mozzarella è ancora calda. Sistemare il cornicione lungo il bordo del disco di mozzarella e farlo aderire alla inta pizza scaldando l’insieme con un cannello. Fiammeggiare la supericie in modo da creare delle macchie di colore che simulino l’effetto della normale cottura della pizza nel forno. Finitura Disporre al centro di ogni inta pizza i pomodori San Marzano già schiacciati e salati, il pane tostato avanzato e sbriciolato, le foglioline di basilico. In ultimo, condire la composizione con un ilo di olio evo.
Upside down pizza INGREDIENTS FOR 4 PEOPLE: 680 g thin leaf of buffalo mozzarella Bufala Campana DOP 160 g San Marzano peeled tomatoes 12 basil leaves 160 g toasted bread cubes extra virgin olive oil salt PREPARATION: With a food ring mold, cut the buffalo mozzarella leaf in rings. Prepare the “fake” crust using the mozzarella in excess. Soften the remaining mozzarella in the microwave at 600 W for a minute, then start kneading it with your ingers.
Form a string with a length equal to the diameter of the mozzarella ring. Stuff the string with the cubes of toasted bread and quickly close by joining the edges while the mozzarella is still hot. Place the crust along the edge of the mozzarella ring and make it stick to the “fake” pizza by heating the whole with a blowtorch. Flame the surface in order to create spots of color that simulate the effect of a normal pizza cooked in the oven Finish: In the center of each “fake” pizza, place the already crushed and salted San Marzano tomatoes, the toasted and crumbled toasted bread leftover, the basil leaves. Finally, season with a drizzle of extra virgin olive oil.
What is your idea of travel? «The discovery and rediscovery of places, tradition and all that is foreign to one’s own habits. I like traveling, following the journey, the traditions of the place». Is there anything that struck you? «Thai cuisine: coconut sauce, curry, I love soups». What did you introduce into the mozzarella ball? «I immediately made the Thai coconut and curry Ball. I had to balance it, not with the hot spice that I like, but lighter, otherwise I would have been the only one eating it». What do you miss the most when you are abroad? «I can stay 15 days without pasta, bread ... any longer I would need to think it over (laughs, ed.)». The dish that makes you feel at home. «The classics: eggplant parmigiana, mozzarella in carrozza...». A not-from-Campania product that wins you over? «Balsamic vinegar, for example. MAXI CROSSOVER TRA SOGNO E REALTÀ Moto totali che permettono di viaggiare in completa sicurezza su ogni supericie e che hanno conquistato anche il mercato europeo: in sella alle cinque regine di questo segmento per scoprirne design e performance
l mercato delle moto in Europa sta andando a singhiozzo, con dei paesi che hanno un segno nettamente positivo e altri, come ad esempio l’Italia, che, dopo mesi positivi, hanno visto una leggera lessione. Il mercato europeo nei primi tre mesi ha comunque registrato un segno positivo di ben 6,1% con un numero complessivo che supera le 250 mila unità vendute. Se andiamo ad analizzare la situazione del mercato ci accorgiamo che anche nei paesi dove il segno è negativo le moto che stanno dominando il mercato sono le crossover, ovvero quelle due ruote che permettono di afrontare un turismo ad ampio raggio e in totale sicurezza sia su strade normali che su percorsi più accidentati. In questo segmento abbiamo delle regine, moto che sono tra le più apprezzate da parte degli utenti e che sono una garanzia sia nell’afidabilità che nelle performance di guidabilità e funzionalità. Sono quindi delle moto totali che permettono a chi le porta di utilizzarle in tantissime situazioni.

Fare una classiica in questo ambito di moto crossover non è semplice, anche perché le cilindrate di questo segmento variano dalle maxi alle medie per terminare con modelli di 250 cc di cilindrata. Le più apprezzate dal mercato, ma anche le più desiderate visto il costo di acquisto, sono però le maxi. Moto potenti, accessoriate e pronte per macinare chilometri di strada ovunque.
