In veste di amministratore delegato di Blue Air, sono onorato di accogliervi a bordo! Vorrei ringraziarvi per aver scelto Blue Air e sono sicuro che il volo per voi sarà una piacevole esperienza. Lavorando da più di dieci anni come pilota e consigliere di Blue Air, è un onore e una grande responsabilità ritrovarmi a capo della maggiore compagnia aerea rumena. Nell’ambito di un’industria in continua evoluzione quale quella dell’aviazione, Blue Air ha indirizzato le proprie energie sul miglioramento costante dei servizi rivolti ai passeggeri. I miei trent’anni d’esperienza maturata nell’aviazione e nella dirigenza mi inducono a confermare che il punto focale di ogni compagnia è proprio il cliente. Blue Air continuerà a svilupparsi seguendo il continuo evolversi delle esigenze della sua clientela. La sicurezza e la soddisfazione dei nostri passeggeri sono infatti per noi obiettivi prioritari. Per tenere fede alle promesse fatte ai nostri passeggeri, è importante continuare a investire sulla lotta, che oggi vanta 30 aeromobili. è con gioia che annunciamo l’inaugurazione di nuovi voli in partenza da Torino diretti a Venezia, Stoccarda (Germania) e Cracovia (Polonia). As a pilot and member of the Blue Air family for more than 10 years, it is an honor and a big responsibility to ind myself handling the control column of the largest Romanian airline. In this always-changing aviation industry, Blue Air focuses its eforts towards constantly improving the services we ofer to our passengers. My experience of working over 30 years in aviation and business makes me conirm each day that the heartbeat of every company is in its clients. Blue Air will continue to develop while the needs of its clients will evolve. For us, the safety and the satisfaction of those travelling on board our planes are top priority. To deliver on the promises we made to our passengers it is important we continue to invest in our leet. It was only recently that we have added a Boeing 737-800 NG to our leet, having now a number of 30 airplanes. We are pleased to announce the launch of our new lights from Turin to Venice, Stuttgart (Germany) and Krakow (Poland). Questa volta partiamo dalla musica. Partiamo dal grande successo Who You Are, il tormentone uscito nel marzo di quest’anno che ha fatto conoscere in tutto il mondo Mihail. Se volete scoprire tutti i retroscena che hanno portato il singolo a conquistare le top ten di ogni Paese (Italia compresa), fa al caso vostro la nostra cover story, un’esclusiva intervista al giovane cantante romeno. Ma state tranquilli, non ci siamo dimenticati dei viaggi e anche per ottobre e novembre vi proponiamo tre mete molto diverse l’una dall’altra. Per l’Italia troverete una delle grandi capitali del sud, Bari, una città con una forte tradizione, ma da sempre aperta ad accogliere culture e inluenze di terre vicine e lontane. Chi avesse voglia di fare ancora un po’ di mare, o di andare alla ricerca di coste frastagliate, panorami mozzaiato e buon cibo, invece avrà pane per i suoi denti con il servizio su Alghero! Per l’estero vi portiamo a Londra che, come si dice in questi casi, non ha bisogno di presentazioni... Quello che stiamo vivendo è un periodo d’oro per i registi italiani che vogliono sbarcare ad Hollywood e allora è il momento di fare un punto insieme su questa fortunata stagione del cinema tricolore. Yondr è la tecnologia usata dal liceo San Benedetto per evitare l’utilizzo degli smartphone. Lo stesso servizio viene impiegato anche in alcuni tribunali, prime di film e concerti. Yondr is the technology used by the San Benedetto High School to avoid the use of smartphones. The same service is used also in some courthouses, at film premieres and during concerts.

Il liceo San Benedetto di Piacenza è il primo istituto “smartphone free” italiano grazie all’utilizzo delle sacchette Yondr Nel liceo San Bendetto di Piacenza sono banditi i cellulari. Si tratta di una novità in Italia (già in uso invece in America) che non permette agli studenti di utilizzare i loro smartphone. I ragazzi, infatti, prima di entrare devono inserire i loro dispositivi all’interno delle cosiddette sacchette Yondr, una sorta di tasca che sigilla i cellulari e li isola completamente sia durante le lezioni che la ricreazione. Secondo l’istituto piacentino gli smartphone sono un’importante fonte di distrazione e comportamenti asociali. Una brutta notizia per gli studenti. This new measure (adopted in Italy for the irst time and already used in America) does not allow students to use their smartphone at school. The students are obliged to put their devices inside the so called “sacchette Yondr” a sort of pocket that seals of completely the smartphones both during the lessons and recess. According to the Piacenza institute, smartphones distract the students and cause antisocial behavior. Bad news for our students.

Farsi un bel bagno in una vasca piena di birra non sarà più un sogno, infatti, The DogHouse Hotel & Brewery ofre, oltre al tradizionale bagno nelle botti, anche trattamenti alternativi: maschere al lievito di birra, gommage al malto d’orzo, massaggi al luppolo. Un odore che si respira in dal mattino, quando gli chef propongono colazioni con menù dove birra, malto e luppolo la fanno da protagonisti. E durante la notte? Niente paura c’è anche la suite con vista sulle botti.

Secondo uno studio condotto dai ricercatori della University of Manchester, i capelli hanno dei ricettori olfattivi e quando sentono l’odore del sandalo sintetico crescono più velocemente. L’analisi è stata condotta sul ricettore OR2AT4, questo sarebbe in grado di stimolare la proliferazione di cheratinociti nella pelle, e considerando che la guarigione della cute e la crescita dei capelli sono strettamente collegati, sono arrivati a questa conclusione. Dai test efettuati si è notato che nel giro di sei giorni, i follicoli piliferi trattati sopravvivevano più di quelli non trattati. ’inizio di settembre ha portato grandi novità per Blue Air. Gheorghe Răcaru, il primo CEO di Blue Air e l’uomo che ha portato la compagnia al suo attuale successo, ha annunciato le sue dimissioni. Dopo 48 anni passati nel mondo dell’aviazione e più di un decennio con Blue Air, Gheorghe Răcaru, ha lasciato il timone ad un altro pilota, Marius Puiu. Il nuovo amministratore delegato intende proseguire nello sviluppo della più grande compagnia aerea rumena per ofrirle un ruolo di maggior spicco in Europa.

Ci racconti tre cose importanti che la riguardano. «Sono il padre di due meravigliosi igli e ho una bella famiglia. Ho sempre desiderato essere un pilota e nel mio tempo libero mi piace andare in barca a vela». È entrato nella famiglia di Blue Air nel 2008 come pilota. Oggi, dieci anni più tardi, è stato scelto dal consiglio dell’azienda per ricoprire il ruolo di amministratore delegato. Come è arrivato in qui? «La mia esperienza in aviazione 12 _ ottobre-novembre 2018

è iniziata nel 1986 quando sono entrato alla Tarom come tecnico specializzato. Ho continuato a salire nella scala gerarchica di questa industria come meccanico di bordo, assistente di volo ed inine pilota. Dalla Tarom sono passato alla Romavia e, per un paio d’anni, mi sono concentrato sul management aziendale. Ho studiato presso una scuola di economia a Vienna pur non smettendo mai di volare. Ho studiato privatamente. Nel 2008 sono stato assunto da Blue Air come comandante. La compagnia mi ha aiutato a crescere ulteriormente e sono diventato istruttore di volo. Dal 2013 sono anche uno dei quattro azionisti della compagnia». Cosa signiica passare dal ruolo di azionista e COO (Direttore Operativo – a cui riportano direttamente le divisioni: Operazioni Volo, Operazioni di Terra e le Operazioni Centro di Controllo) a quello di CEO? «Prendo questa nuova responsabilità come un passaggio obbligato e voglio continuare a fare quello che avevo iniziato in quanto azionista».

The beginning of September came with big news for Blue Air. Gheorghe Răcaru, Blue Air’s irst CEO and the one that drove the company towards its current success, announced he would step down from his role. After 48 years in aviation and more than a decade spent with Blue Air, Gheorghe Răcaru handed over the reins to another pilot, Marius Puiu. The new CEO of the company is determined to continue the advancement of Romania’s largest airline and give it a more prominent role in Europe.

was a year of consolidation. We are aware of the fact that in order to grow further and develop, we need a solid structure, one that is well-organized and well-adapted to this ierce competition we are dealing with. As for 2020 we will continue to expand the company but this expansion will be a cautious one. By 2020 the new Boeing MAX 8 aircraft will be in use as well. With these new planes Blue Air will enter a new stage».

How will the introduction of the Boeing Max 8 inluence our passengers? «First of, they will be able to ly to new destinations on longer distances. Then, a reduced fuel consumption will be costeicient for us hence we will be able to maintain the same afordable prices. Another important aspect to mention is that the new MAX planes have a 20% reduction of CO2 emissions compared to the Next Generation 737 model launched in 1998».

You joined Blue Air in 2008, as a pilot. Today, ten years later, you have been chosen by the company’s board as the new CEO. What were the steps that brought you here? «My journey in aviation started in 1986 when I became a technical engineer at Tarom. I continued to climb up the hierarchy ladder in this industry as an on-board mechanic, a light attendant and eventually a pilot. From Tarom I joined Romavia and, for a few years, I have focused on business management. I studied at an economics school in Vienna but during this time I never stopped lying, I did so privately. It was 2008 when I joined the Blue Air family, as a light commander. The company helped me grow further and I became a light instructor. Since 2013 I am also one of the 4 shareholders of the company». What can you tell us about moving from the role of shareholder and COO (Chief Operating Oicer - with the Flight Operations, Ground Operations and Control Center Operations departments reporting directly to you) to the role of CEO? «For me, this new responsibility comes as an obvious step and I want to continue doing what I already started doing in my role as a shareholder». How do you see Blue Air’s future? «My vision for Blue Air remains the same as before, and it is a very ambitious one. We aim at getting a 50-airplane leet and becoming a strong European player. Tell us three interesting facts about yourself. «I am a father of two wonderful children and I have a beautiful family. I’ve always wanted to become a pilot and in my spare time I enjoy navigating a sailing vessel».

Come vede il futuro di Blue Air? «La mia visione di Blue Air rimane la stessa, ed è una prospettiva molto ambiziosa. Puntiamo ad ottenere una lotta di 50 aerei ed a diventare una compagnia forte in Europa. Per questo motivo, il 2018 è stato un anno di consolidamento. Siamo consapevoli che per crescere ancora abbiamo bisogno di una struttura solida, ben organizzata e che sappia gestire l’agguerrita competizione del settore. Per il 2020 continueremo la nostra politica di sviluppo, ma con un’espansione cauta. Per il 2020 saranno in uso anche i Boeing Max 8. Questi nuovi apparecchi porteranno Blue Air in una nuova fase di sviluppo». In che modo l’introduzione dei Boeing Max 8 inluenzerà

i nostri passeggeri? «In primo luogo saranno in grado di raggiungere nuove e più lontane destinazioni. Poi, un consumo ridotto di carburante ridurrà i nostri costi dandoci la possibilità di mantenere i prezzi altamente concorrenziali. Un altro aspetto importante da menzionare è che i nuovi aerei MAX riducono le emissioni di anidride carbonica del 20% rispetto ai Next Generation 737 lanciati nel 1998». Quale pensa sia il punto di forza di Blue Air? «Fortunatamente abbiamo un nucleo molto forte e sano: il nostro team. Quando sono entrato a far parte di Blue Air, eravamo solo qualche centinaio di colleghi. Adesso siamo quasi 1.500! Siamo diventati un team eccezionale che condi-

vide molti valori ed io sono molto orgoglioso di rappresentare questa squadra in quanto CEO. Abbiamo un gruppo molto capace, che siano i tecnici, il personale di terra, gli assistenti di volo, i piloti o i comandanti. Amano l’aviazione e desiderano ofrire ai nostri passeggeri le migliori condizioni di viaggio possibili. Rappresentiamo tutti Blue Air e abbiamo tutti il merito del successo di questa compagnia». Come deinirebbe il successo in aviazione? «Il successo sta tutto nella soddisfazione del cliente. What do you think is the strong point of Blue Air? «Luckily, we have a very strong and sound core: our team. When I joined Blue Air we were only a couple hundred colleagues. We have a very skilled team, including technicians, ground staf, light attendants, pilots and captains. They are passionate about aviation and are eager to ofer our passengers the best travel conditions. We all represent Blue Air and we all have our merit when it comes to the success of this company». How would you deine success in aviation? «Success is all about the clients’ satisfaction. If they are happy with the service and they leave the plane feeling they’ve had an enjoyable experience, they will come back. So far, we have been working to consolidate the safety of all Blue Air lights, which is crucial to us, the on-time arrival that we want to ofer while putting safety irst, and the services we provide and try to expand and diversify continuously. All of these need to converge into a great experience on board for our passengers. The number of our passengers is growing each year. Who You Are è una canzone che ci accompagna da molti mesi e che ha scalato le classiiche di tutto il mondo… Come è nata questa canzone? Si aspettava di riscuotere un tale successo? «Sono davvero felice che Who You Are sia stata apprezzata in Europa. Non pensavo che sarebbe diventata una hit, come non ho mai pensato che la mia musica potesse riscuotere successo. Spero solo che la gente percepisca questa mia sensazione. di condividerlo. Who You Are è scaturita da un mio momento di smarrimento. Mi guardo dentro e cerco di capire se mi piace l’uomo che sono diventato». In un’intervista ha dichiarato che la ine di una storia d’amore ha ispirato questa canzone… «Sapevo che avrei dovuto rinunciare a qualcosa per focalizzare la mia attenzione solo sulla mia musica. È stata una scelta consapevole, non so dire se sia stata giusta o sbagliata, ma era quello di cui avevo bisogno». Nonostante il successo sia attribuito tutto a Mihail, lei non smette mai di sottolineare l’importanza del lavoro di gruppo… «La mia squadra è fortemente dedita al lavoro, e merita il mio stesso riconoscimento per il successo che ho raggiunto. In efetti “We are Mihail” sta diventando il mio motto (ride, ndi)».

A che punto è l’album. Quando potremo ascoltarlo? «Spero entro la prima metà del 2019. Direi che stiamo a metà strada, ma siamo perfezionisti, quindi stiamo impiegando più tempo. Abbiamo intenzione di chiuderci in studio questi mesi per ultimarlo». È il primo artista rumeno a raggiungere un successo così importante in Italia. Più grande la soddisfazione o la responsabilità di doversi confermare? «Tutte e due e nessuna delle due. Non ritengo che la musica sia una competizione, perché è talmente personale che è impossibile giudicare due canzoni seguendo lo stesso criterio. La responsabilità di riconfermare il proprio successo è una strada a doppio senso, se diventa un’ossessione, rischia di iniciare il tuo lavoro. Cosa si aspetta dal pubblico italiano e che spettacolo sarà? «Beh, non so davvero cosa aspettarmi. Ho vissuto dei momenti indimenticabili con il pubblico italiano questa estate e spero di riuscire a ricreare la stessa atmosfera in ottobre. Sarà uno spettacolo eclettico, un misto di musica elettronica, pop e alternativa che vi porterà a vivere diversi stati d’animo». Negli ultimi mesi l’abbiamo vista spesso ospite nel nostro Paese. Cosa le piace di più dell’Italia? «È molto diicile da stabilire. Tutto. Posso dirlo? (ride, ndi). La lingua, le persone, il cibo, l’incredibile architettura e le vostre spiagge piene di sole. Let’s start with Who You Are, a song that has accompanied us for so many months and that has climbed the charts all over world... How was this song born? And did you expect such a planetary success? «I’m truly happy that Who You Are is appreciated and loved across Europe. I’ve never bet on this song to become a hit, as I never bet on my music’s success, I just hope people will feel it. In the end it’s more about being lucky enough to do what you love and be able to share it. Regarding Who You Are, the song comes from a point where i was feeling quite lost. It’s all about self-relection and trying to understand what kind of person i have become and if i like that person». In an interview you stated that the end of a love story “inspired” Who You Are… «I always knew I had to give some things up in order to focus on music, so it was a conscious decision. I can’t say it was right or wrong, but it was what I needed». What is surprising is the fact that despite the success of Who You Are attributed to Mihail, you continue to stress the importance of teamwork and the importance of working alongside a great team… «I do have a very committed team, and they deserve just as much credit for the success as i do. I’ve actually started to say We are Mihail». What point has the album got to? When will we be able to listen to it? «Hopefully in the irst half of 2019. I would say we’re halfway there, but we’re perfectionists, so it’s taking a bit longer. But planning to lock ourselves in the studio these months and inish it».

You are the irst Romanian artist to achieve such an important success in Italy. What moves you the most, the satisfaction or the responsibility of having to reconirm your success? «Both and neither of them. I don’t see music as a competition in general, because it’s something so personal that you cannot judge 2 songs by the same criteria. The responsibility to conirm is a two way street, if you let it get into your head too much, it might afect your work. I think that as long as you are staying true to yourself you don’t really have to worry about these type of things».

Speaking of Italy, on October 4 and 6 you will be the star of two live concerts in Rome and Milan. What do you expect from the Italian audience and what kind of show is it going to be? «Well, I don’t really know what to expect. I’ve had some unforgettable moments with the Italian audience this summer and I hope we can recreate the same atmosphere in October. E quanto i suoi studi in arti visive hanno caratterizzato il suo modo di fare musica? «Nella mia musica c’è molto delle arti visive, perché posso correlare la musica all’espressione visiva». Quando ha capito che la passione per la musica poteva trasformarsi in un vero e proprio lavoro? E il sogno iniziato quattro anni fa a che punto è? «Il mio sogno è in pieno svolgimento. Ovviamente non ne ho mai abbastanza e sento che è ancora una mia passione piuttosto che un la-

voro vero e proprio. Non credo che questo cambierà mai». Nato in Russia, ma cresciuto in Romania. E stando alla location scelta per Who You Are questo Paese deve averla stregata e non poco. Quanto e in cosa la Romania ha inluenzato la sua carriera sinora? «Parecchio. Io amo sia la montagna che il mare e ogni volta che rientro mi sento a casa. Quando vivi vicino alle montagne, le porti dentro con te, e anche questo diventa parte della tua musica». In cosa si sente più russo e in cosa più rumeno? «Si può imparare da ogni luogo e sono felice di saper parlare il russo, il rumeno e l’inglese, perché in questo modo posso venire a contatto con diverse culture. Ma in in dei conti, credo di essere un cosmopolita, mi piace qualsiasi posto e apprezzo qualsiasi tipo di esperienza». Quanto del Mihail bambino che suonava il piano regala-

Over the last few months we have often seen you performing as a guest star in our country. What do you like the most about Italy? «Oh, that’s very hard to pinpoint. Everything? Can I say that ? (laughs, ed) The language, to the people, to the food, to the amazing architecture and your sunny beaches. Basically, everything». Music and art in general have always been part of your life. Not just for your degree in visual arts, but for a family tradition: your father, your mother, your grandfather and your sister, you all have artistic experiences. It’s in your DNA and in some way your career was already determined since you were born... «In my country everyone has an artistic side. A lot of people start studying music from an early age, a lot of them can play diferent instruments. I was just lucky enough to be able to follow this passion and make a career out of it». How much your studies in visual arts inluenced your way of making music? «My music holds a great deal of visual arts because I can correlate my music with its visual expression». ottobre-novembre 2018 _ 21

CHECK-IN When did you realize that your passion for music could have been turned into a career? And what point has your dream – that started four years ago – got to? «The dream is in full swing. Of course you can’t get enough of it, but it feels like it is still a passion and not a real job and I don’t think that’s ever gonna change». Born in Russia, but raised in Romania. And according to the location chosen for Who You Are, this country must have enchanted you quite a lot. How much and in what way has Romania inluenced your career so far? «Quite a lot, I love the mountains, the seaside and I always feel at home when I’m coming back. When you live close to the mountains you bring them with you, and it becomes part of your music, too». What are your Russian and your Romanian traits? «You can learn from every place and I’m glad I can speak Russian, Romanian, English, because this way I can learn from diferent cultures. But at the end of the day, I consider myself as a cosmopolitan, I am passionate about every place and I appreciate all types of experiences».

C’è un luogo in particolare in cui le piace rifugiarsi quando ha voglia di restare solo veramente? «Nella natura, sempre. Per lavoro lo utilizzerà molto, ma che rapporto ha con l’aereo? «Adoro volare, è uno dei momenti migliori quando sono in giro per lavoro. Adoro specialmente volare nel cielo azzurro, sopra le nuvole. Credo che metà delle foto che ho salvato nel telefono siano foto di nuvole». E le è mai capitato di pensare la melodia di una sua canzone viaggiando in aereo? «Quando viaggio ascolto molta musica. Posso certamente afermare che non riesco a volare senza musica». Il viaggio che non dimentica? «Ogni viaggio ha qualcosa di nuovo e di indimenticabile, questa è un’altra delle ragioni per cui amo viaggiare».

What is left today of the “little Mihail” who played the piano that was given to you when you were ive? «It never went away. It’s still the main drive behind everything I do, that childish innocence with which I approach music. Music remained as pure to me as it was when I was 5». You travel the world a lot for work, but I’m sure there are times when you feel the need to put your work behind your back and to recharge the battery. Is there a place in particular where you like to hole up when you really want to stay by yourself? «Nature, always. I ind nature very comforting and relaxing and I love the peace and quietness you ind in the woods or at the seaside. Silence, peace, sometimes silence is the best music». I am sure you ly a lot, what kind of relationship have you got with the airplane? «I love lying. It’s one of my favorite parts when travelling. Especially lying on a clear sky, or above the white clouds. I think half of the photos stored in my phone are of clouds».

is still linked to the oldest traditions and that encloses within it another example of Romanesque-Pugliese architecture: the Cathedral of San Sabino and the beautiful Crypt. At the outskirts of the old town, the Norman Swabia Castle defended the ancient village: a fortress built in 1131, then destroyed and rebuilt by Frederick II of Swabia. È rimasta intatta ino a noi invece la grande fortezza di Castel del Monte, fatta costruire nel XIII secolo su una collina delle Murge da un Imperatore che ha lasciato il segno anche a Bari, distante da qui circa 55 km: Federico II di Svevia. mo pensiero non può non andare a Gordon Ramsay, forse lo Chef più conosciuto al mondo anche grazie alle sue 14 Stelle Michelin. Il ristorante del conduttore di Hell’s Kitchen si trova a Chelsea, tra i quartieri più ricchi della città. Ma se è una vera esperienza britannica, oltre a una birra mai bevuta, è nei classici pub che bisogna andare: dal George Inn al Maylower; dal Grenadier al Prospect of Whitby ino al The Sherlock Holmes, passare una serata su uno di questi banconi di legno non avrà eguali.

Capitale dello sport

Il pub, e le sue pinte di birra, richiamano subito alla mente lo sport, e il calcio in particolare. Londra ospita la bellezza di ben 14 stadi compreso il leggendario Wembley, uno dei templi del football, casa della Nazionale dei Tre Leoni e luogo dove si gioca la inale del più importante torneo del mondo: la FA Cup. Since then Buckingham has been an incomparable landmark for the entire British population especially in the most diicult times. The changing of the guard ceremony remains one of the most fascinating to admire. A must-see is the Tower of London with its history that tells how over time the building was used as an arsenal, treasury and, even today, home to the Crown Jewels. Westminster Abbey and St. Paul’s Cathedral, two of the most beautiful places of worship in the world, give a touch of sacredness to the journey through the alleys of London.

Alghero is the ifth biggest city considering the number of its inhabitants in Sardinia, about 44 thousand. Also known as Barceloneta (little Barcelona), it has kept the use of Catalan, as it is a linguistic island, and 22.4% of its inhabitants speak it in a variant of Alghero, recognized as a linguistic minority. The sandy coasts are an element of extraordinary importance in the over 60 km of coastline that characterize one of the Park’s borders. Con un’estensione di oltre 5mila ettari, questa “oasi della felicità” raccoglie al proprio interno falesie a picco sul mare, complessi collinari dagli scenari naturali mozzaiato, spiagge bianche ricche di biodiversità e un’area umida di rilevanza internazionale. Il Parco Naturale Regionale di Porto Conte, inoltre, ospita un ecosistema variegato, dove, specie animali e vegetali di elevata importanza naturalistica, hanno trovato il proprio habitat naturale. L’aspetto faunistico più interessante è la presenza del grifone (Gips fulvus ), ora in pericolo di estinzione. Tra i rapaci sono invece presenti il falco pellegrino, lo sparviere e i più comuni poiana e gheppio.

An area of over 5 thousand hectares, this “oasis of happiness” includes clifs overlooking the sea, hilly complexes with breathtaking natural sites, white beaches rich in biodiversity and a wetland of natural importance. The Regional Natural Park of Porto Conte also hosts a diverse ecosystem, where animal and plant species of extraordinary naturalistic importance have found their natural habitat. The most interesting aspect of the fauna is the presence of the grifon (Gips fulvus), which is now in danger of extinction. Among the birds of prey are the peregrine falcon, the sparrow-hawk and the most common buzzard and kestrel.

One of the most important areas for biodiversity safeguard in the Mediterranean, the Capo Caccia peninsula is home to the rarest species of seabirds and plants. At Punta Giglio, however, worthy of note is the cave “Grotta sommersa dei Cervi”.

Il ilm fu proposto a Guadagnino che riiutò la prima volta, fu proposto a Ozpetek e Muccino. Alla ine Guadagnino accettò.

o chef socio de La Credenza, Stella Michelin dal 2006, sa il fatto suo. Le esperienze all’estero gli hanno insegnato a gestire al meglio la sua squadra, ma rendere felice chi assapora i suoi eleganti piatti resta il primo obiettivo. Di recente ha scoperto il rapporto con la terra grazie a Casa Format, progetto condiviso con il socio Giovanni Grasso e Alessandro Gioda, per una cucina più responsabile.

Dal prepararsi da mangiare a farne un mestiere, com’è andata? «Mi è sempre piaciuta molto la sensazione che danno le persone quando dicono “mi è piaciuto quello che hai fatto”. Ed è stata un po’ la cosa che mi ha fatto continuare a cucinare. È suc60 _ ottobre-novembre 2018

cesso, quando avevo 11-12 anni, che i miei invitassero qualcuno a cena e in quel periodo avevo il trip del risotto ai formaggi: l’ho cucinato per chiunque venisse a casa nostra. Da lì ho pensato “forse fare il cuoco può essere una scelta giusta”». Da Londra a Parigi, cosa le hanno insegnato le sue esperienze all’estero? «Sono convinto che viaggiare, in ogni caso, aiuti ad aprire la mente e a vedere quello che succede intorno, visto che in Italia sappiamo dire “quanto siamo bravi, quanto siamo belli”, ma poi ci fermiamo lì. Uscire fuori ti permette di vedere le cose in un modo un po’ diverso e ogni ristorante ti forma in un modo diferente. I grandi ristoranti all’estero, soprattutto di ottobre-novembre 2018 _ 61

Per esempio? «In Belgio ho capito che le persone, per farle rendere al meglio, bisogna trattarle bene e capire che quello che noi riusciamo a fare è legato alle persone che abbiamo dietro, perché uno può essere bravo, ma da solo si ferma a un certo punto e se vuole crescere ha bisogno di un gruppo dietro che faccia la diferenza». Se le dico Giovanni, chi le viene in mente? «Credo che quello che c’è con Giovanni (Grasso, socio fondatore, ndi) sia un buon rapporto tra un padre e un iglio, ci conosciamo da più di 20 anni… con le cose negative e soprattutto positive. Ho imparato lo spirito di sacriicio, la voglia di fare e l’incoscienza presa come una cosa positiva». E l’esperienza di Casa Format? «È nata per gioco ad “Artissima”, una manifestazione d’arte contemporanea di Torino, dove quattro anni fa ci occupavamo del catering,

VIAGGI NEL GUSTO mentre l’azienda “Format Progetti Abitativi” arredava la Lounge che ci ospitava. Così uno dei referenti di Format ci ha chiesto di visionare un progetto di costruzione di questa casa ecosostenibile, con uno showroom vivente dei loro prodotti e un probabile ristorante ed è nata “Casa Format”. Abbiamo deciso di fare l’orto, di fare tutto più responsabilmente e ci ha dato grosse soddisfazioni. Ho scoperto che la terra è molto bassa perché l’orto è un impegno non indiferente, però è una bella palestra». Il territorio piemontese cosa dà alla sua cucina? «“La Credenza” è su un territorio non-territorio, siamo appena fuori da Torino e non siamo nelle Langhe, ma abbiamo la possibilità di giocare con quello che vogliamo. Mentre in Langa il turista si aspetta di trovare delle cose, non avendo limitazioni, noi possiamo spaziare su tutto. Viaggiando tanto in Asia, abbiamo anche delle inluenze asiatiche sia a livello di “dentazione” (consistenze, ndi) che di gusto, mentre a “Format” abbiamo una cucina che va più sul territorio avendo i prodotti dell’orto».

TRAVELLING CHEF He loves opening up to the world and discovering new flavours that influence his cuisine like the Asian notes of some dishes The Chef member of La Credenza, Michelin star since 2006, knows his business. The experiences abroad taught him to better manage his team, but his irst goal remains that to satisfy those who try his sophisticated dishes. He recently discovered the relationship with the soil thanks to Casa Format, a project shared with his partner Giovanni Grasso and Alessandro Gioda, for a more responsible organic cuisine. From just making a meal to making it a career out of it, how did it go? «I’ve always loved the feeling people give me when they say “I liked what you did”. And it was a bit the thing that made me continue to cook. It happened when I was around 1112 years old that my parents would invite someone to dinner and at that time I had a thing for cheese risotto: I cooked it for anyone who came over. From there I thought “maybe being a chef can be a right choice». From London to Paris, what did your experiences abroad teach you? «I am convinced that traveling, in any case, helps to open your mind and see what is happening around you, since in Italy we claim “how good we are, how beautiful we are”, but then we stop just there. Getting out lets you see things in a slightly diferent way and each restaurant

Tutti i piatti funzionano, tutte e tre le categorie sono importanti, dipende dai momenti…». Come definirebbe la sua cucina? «C’è un aggettivo che mi piace molto che però è diicile da usare. Credo che la cucina de La Credenza sia molto “femminile”, nel senso che è una cucina molto delicata, leggera, molto ben presentata e invoglia con lo sguardo. Non è mai aggressiva, è sempre rispettosa degli ingredienti di base. Questa è la prima parola che mi viene in mente insieme ad accattivante, per le presentazioni molto belle

La semplicità paga di più». Un sogno da realizzare? «Ne ho realizzati tanti. Visto che parliamo di viaggi, sto mirando molto alle ferie di gennaio, per riuscire ad avere del tempo libero e un po’ di tranquillità che, nella vita di un cuoco o di persone che lavorano nei ristoranti, a volte manca. Ma non so ancora dove sarà…». Un gusto o un ingrediente che la descrive? «Direi il wasabi, perché ha un gusto molto particolare che piace un po’ a tutti: ti dà subito la parvenza di essere rude, ma in un attimo passa e te lo ricordi come una cosa positiva. Poi non è facile da trovare…».

Like the “bacio 2006”, a small glass container in which a pre-dessert is served, created for an event linked to Moscato (wine, ed.). Until the night before we were in over our heads, in the night it inally hit us, we left for Milan the next morning and from 2006 to today we continue to propose it over and over. All the dishes work, all three categories are important, depending on the moments...». How would you deine your cuisine? «There’s an adjective that I like very much, but it’s hard to use. I think that La Credenza cuisine is very “feminine”, in the sense that it is very delicate, light, very well presented and inviting to the eyes. It is never aggressive; it is always respectful of the basic ingredients. This is the irst word that comes to my mind along with “catchy” for very beautiful presentations that also relect the lavors». Football player Cristiano Ronaldo was your guest, too. Celebs like him change your way of cooking? «I think a restaurant should have its cooking philosophy shared with all the staf and that it should always follow this philosophy. Cavolo, toma delle viole, nocciole e caviale di tartufo nero Ingredienti per la preparazione del cavolo 1 nr. Cavolo verza - Sale - Pepe Procedimento per la preparazione del cavolo Eliminare le foglie esterne del cavolo, quindi condirlo con sale, pepe e olio d’oliva. Condizionare sottovuoto e cuocere in forno a vapore ad 80°C per 50 minuti. Raffreddare, quindi tagliare il cavolo nelle dimensioni volute.

Procedimento per la preparazione della fonduta di Toma delle Viole Scaldare il latte e aggiungere la Toma delle Viole, quindi aggiungere il tuorlo d’uovo e lasciar rapprendere. Procedimento per la presentazione del piatto Impiattare la fonduta, quindi aggiungere il cavolo grigliato, i pezzi di nocciola e il caviale sferiicato di tartufo nero. Decorare con chips di cavolo e germogli freschi.

What do you bring to your cuisine from abroad? «The use of spices and the idea of being able to work with large numbers and, at the same time, high quality». What is the dish of autumn for you? «An ingredient, this year the trule season is quite promising, and a dish that combines the two restaurants and is based on cabbage (see recipe, ed.). Simplicity pays of». A dream you are pursuing? «Many of my dreams came true. Since we are talking about travel, I’m looking forward to my holidays in January, to be able to have some free time and a bit of tranquility that, in the life of a chef or of people working in restaurants, is sometimes lacking.
