Mitch has held top positions at several three-star Michelin restaurants in Chicago and San Francisco and won the prestigious S. Pellegrino Young Chef award in 2016. Chef Mitch Lienhard

B

BORN IN MICHIGAN IN 1987, Mitch’s family moved to Florida when he was very young. He would watch his grandmother cook, his first culinary idol, and try to emulate her movements while making her signature dishes. He went on to culinary school after high school, and was soon hired as a chef de partie at The Breakers Hotel in Palm Beach. Over the next few years his career spanned stints in Michigan, South Carolina, and Hawaii.

In 2009, Mitch moved to Chicago to pursue a chef de partie position under Chef Curtis Duffy at Avenues Restaurant. He worked for Duffy for several years, eventually opening Grace Restaurant as Sous Chef. Eater took notice and named Mitch one of their 2013 Young Guns. While Grace was being built, he worked for Grant Achatz at the three Michelin starred Alinea, the only restaurant in Chicago holding the honor at the time. In 2014, Grace was also awarded three Michelin stars. Mitch went on to accept the position of Executive Sous Chef at Saison in San Francisco. Shortly after joining the team, Saison was also awarded three Michelin stars.

In 2015, Mitch was introduced to Chef David Kinch, and became intrigued by his culinary philosophy. He accepted the position of Chef de Cuisine with Manresa in early 2015. It was here that he began to understand his own culinary style and philosophy, and in 2016 the restaurant was also awarded three stars in the Michelin Guide. Chef Mitch representing America won the title of S.Pelligrino Young Chef 2016 in a thrilling Grand Final in Milan.

With over 3,000 chefs originally entered, 20 finalists of the world’s most talented young chefs from all over the globe competed in front of an international jury.

Is it Better to Change Your Diet OR Exercise?

WHEN CONSIDERING IMPROVEMENTS to your lifestyle, should you change your diet or your exercise – or should you change both at once?

Researchers at Northwestern University found that it’s more effective to change both at the same time.

A

According to the study, different groups of participants were given a pair of changes to make. One involved diet — either lowering saturated fat or increasing fruit and vegetables. The other involved activity — either increasing exercise or reducing screen time (for example, smart phones). All participants were given remote coaching to help them with motivation, but those assigned to eat more produce and spend less time on their screens were most successful at making their healthy changes a habit.

The study was followed up with another study that looked at making all the changes simultaneously. They added a smartphone component along with the coaching and found that participants who stuck with the program were able to reach all goals over the ninemonth study.

A separate study at Stanford University found that participants who boosted exercise and diet together improved in both areas. They also reached the goals of completing 150 minutes a week of physical activity, getting the recommended servings of fruits and vegetables each day, and limiting saturated fat to 10 percent of daily calories.

Those who first focused on improving diet only had a harder time establishing a consistent routine and meeting fitness goals when they did start working out. Those who started with exercise and changed their diet later ultimately met key goals, but weren't as successful as people who did both from the beginning. Conclusion? As you change your diet, be sure to add exercise to the menu as well.
