Dear Premier Club Members, LABOR DAY WEEKEND is almost upon us, which means we’re about to host the second annual New Sounds of Nashville! The weekendlong blockbuster event was an enormous success last year, and this year’s version is sure to be even better. Songwriters for top artists like Tim McGraw, Jason Aldean, and Keith Urban will join us to talk about their creative processes and perform their hit songs in venues across the Resort & Club. It’s a great opportunity for Members to be entertained and inspired – so if you haven’t already made reservations, now is the time. I’m also pleased to announce that Lucca has won the Wine Spectator Award of Excellence for the third consecutive year. This prestigious award honors restaurants with extraordinary wine lists. In making their selections, the judges assess the quality and diversity of wines as well as their fit with the establishment’s culinary offerings. If you’re a wine lover and dine regularly at Lucca, you know how extraordinary their wine list is; if you love wine but have yet to dine at Lucca, please take note! SUMMER CEVICHE

With summer squash, roasted peppers, and charred herb salsa Recipe by Chef Jordan Lerman Basting Liquid 2 lemons, zested and juiced 2 cups dry white wine 1 ½ cups grapeseed oil (or another neutral oil) Herb Bundle 1 bunch parsley 1 bunch oregano 1 bunch scallion 3 garlic cloves, crushed ½ bunch basil ½ bunch mint Herb Salsa 1 pinch chili flakes 1 poblano chili, roasted/peeled/ seeded/chopped ¼ cup red wine vinegar 1 bunch parsley, chopped ½ cup grapeseed oil 1 cup basting liquid Salt to taste

Mix lemon juice, dry white wine and 1 ½ cups of grapeseed oil to make basting liquid. In separate bowl, mix lemon zest, chili flakes, roasted poblano pepper, red wine vinegar and chopped parsley. Tie herbs for herb bundle together with twine, keeping stems attached. Crush garlic and tuck into the bundle. Lay herb bundle down on grill until one side is charred and then dunk in the basting liquid (wine, lemon, oil mix). Place the other side on grill. When well charred, remove herb bundle from grill, remove the stems and chop the herbs. Mix chopped herbs into the herb salsa bowl and add the ½ cup grapeseed oil, 1 cup of basting liquid and season the salsa as needed. CEVICHE 6 oz. local raw fish, diced 3 Tablespoons grilled zucchini, diced 3 Tablespoons grilled scallions, diced 2 Tablespoons shallots, minced 2 Tablespoons chives 2 limes, zested and juiced 1/3 cup extra virgin olive oil 1 poblano pepper, roasted/peeled/seeded/diced 4 Tablespoons charred herb salsa 6 baby zucchini, sliced into thin rounds 3 teaspoons sea salt Mix diced fish with the diced grilled zucchini, diced grilled scallions, shallots, chives, lime zest, roasted poblano and olive oil. Add in salt, lime juice and season to taste. Place ceviche in serving bowl. Dress the sliced baby zucchini in a bowl with olive oil, lime juice and salt. Garnish on top of the ceviche and drizzle the charred herb salsa around the edges of the ceviche.
