Dear Premier Club Members, WELCOME BACK TO A NEW SEASON! We’ve had an exciting and enjoyable summer here at the Club and I look forward to creating exceptional experiences and building lasting memories with all of our Members. Over the next couple of months, you can enjoy a return of our favorite wine dinner series “Corks & Conversations,” which will kick off with our annual Grand Tasting Event. This is a great opportunity for Members to meet and greet our talented chefs as they prepare and present innovative food and beverage pairings from each of our restaurants. We also look forward to a season filled with a spectacular line up of renowned winemakers and celebrity chefs from around the globe. We have expanded our live entertainment offerings as part of our “Sunset Rituals.” New performances include a rotation of jazz artists at The Monkey Bar and guitarists at the Marina. Be on the lookout for other offerings to include returning and new Artists in Residence, exclusive fashion trunk shows and culinary and mixology pop-ups. As we look ahead to the Holidays, we will see the return of our cherished traditions including the Thanksgiving Grand Buffet, the Christmas Tree Lighting Ceremony and Character Parade, and the Hanukkah Menorah Lighting. As always, our events and activities are designed for all ages and interests. I look forward to sharing our Holiday traditions together. Let’s make this a season to remember!

I am excited to welcome a brand-new season of spectacular food and beverage events to the Resort & Club. Mark your calendars for the season-opening of Corks & Conversations with the Grand Tasting on November 22. This is a special opportunity to talk with our talented chefs from 501 East, Lucca, SeaGrille, Bar Luna and Morimoto as they flex their culinary muscle and prepare a bountiful selection of tempting tastes to be perfectly paired with an exciting selection of wines, cocktails and craft beers. This year’s Corks & Conversations will be better than ever as we continue to feature high profile, highly sought-after rare wines. Join us as we welcome some of the world’s leading vintners to the Resort & Club offering you a once in a lifetime opportunity to meet wine makers from the best wineries in the world. They will share their knowledge and their stories with us over remarkable meals featuring menus that have been thoughtfully developed by chefs and winemakers working together to offer blissful pairings. An annual favorite, the Barolo & Truffles Dinner, will take place December 12. Celebrity Chefs & Mixologists

We will be bringing back a slew of celebrity chefs this season, to include Iron Chef Morimoto for an exclusive dining experience in November. We are also pleased to have Miami-based celebrity chef, Brad Kilgore, join us for a special chef dinner. Kilgore runs several hot restaurants in Miami as well as the Tokyo-inspired cocktail bar Kaido in the Miami Design District. He’s been named Best New Chef in America by Food & Wine

Magazine and his restaurant Alter was named “Restaurant of the year” by the Miami Herald and he was a semi-finalist for James Beard’s “Best New Restaurant.” In January, we will see the return of our Monkey Bar Takeover series featuring celebrity mixologists. Members will be pleased to hear that we are bringing back Julie Reiner of Clover Club, a renowned Brooklyn-based bar. Last year we saw experts from the best bars of New York City to Northern California bring their unique offerings and experiences to the Resort & Club, and we look forward to building new relationships and continuing to bring the best craftsmen from the top establishments around the world.

Next month, be on the lookout for details of our new Sunday Brunch offerings at 501 East. Beginning with the sparkling wines of Cava, Sommelier Jamin Stilley will guide you through the fine wine regions of Rias Baixas, Rioja and Ribera del Duero. INGREDIENTS 12 oz. sprouted beans ¾ cup chick peas ¾ cup black- eyed peas ½ cup chopped mushrooms, sautéed 1 tablespoon tomato paste 1 lemon, zested and juiced 1 tablespoon olive oil 1 cup sunflower seeds 2 teaspoons salt and pepper DIRECTIONS Pre heat oven to 350. Place chick peas and black-eyed peas on a sheet and place in the oven for 20 minutes until almost dry. In a sauté pan on medium heat cook mushrooms with blended oil till all liquid is cooked out of the mushrooms. In a food processor, place half of the living beans, dried-out chick peas and black-eyed peas, tomato paste, lemon zest and juice, olive oil and mushrooms. Blend until semismooth. In a bowl, place the blended mixture and the remaining beans and sunflower seeds. Fold the mixture until well mixed. Form into 6 oz. patties. Sauté the patties on medium heat for 5 to 6 minutes.
