AUTHENTIC SPANISH CUISINE IN THE HEART OF BOERNE by Lauren Stumberg
For Luis and Gaby Mongiello, owners of Botero Tapas + Wine Bar, the new local restaurant has been a lifetime in the making. “Both of us grew up with food being an integral part of our families and our culture,” said Luis. “Gaby’s family was very successful with many street restaurants throughout Mexico and I was raised where diverse food was a part of everyday life.” Luis is the chef and creator behind the authentic recipes served up at Botero and credits his upbringing as the inspiration behind Botero’s fantastic dishes. “My mother is Italian and her parents immigrated to the United States from Naples, Italy. My father is Spanish and was born in Casablanca, Morocco. My greatgrandfather was actually the Head of Communications for the King of Spain and we even have a letter addressed to him from the King,” said Luis. “My paternal grandfather was a painter and a mathematician, my mother graduated from New York University and is also a painter; there is lots of creativity in my blood. My mother’s side of the family had several Italian restaurants in New York City as well. Growing up there was always this friendly competition it seemed of Spanish
