Wedding
Straight talk, smart solutions by Mary Clarke, Editor in Chief
Q
My fiancé and I would like to include our beloved dog, Ripley, in our wedding, and have him walk down the aisle at our ceremony. Any advice on how to proceed?
A
Couples’ pets are definitely playing major roles in weddings today. Just be sure your location site is amenable to having animals on the property and included in the ceremony itself (most religious venues will not allow pets). And consider your pooch’s personality traits. Is your dog comfortable around lots of people? Does he tend to bark loudly and/ or often? Hopefully your canine is calm, loves people and obeys commands. You don’t want to risk including a pet that is irritable and snappish—or a frisky pup who won’t stay still for very long. Also, check with your venue to see if you might need a security deposit to cover any unforeseen accidents with your pet. It’s a good idea to bring Ripley to the rehearsal to make sure he’s comfortable with his role and to have him practice walking and sitting at the site. On the wedding day, don’t give him too much food or water before the ceremony, but do have treats on hand afterward. Speak with your photographer to determine what types of shots you want taken with your pet. Do note that we wouldn’t recommend bringing him to the reception—better to make arrangements to have Riley picked up after the photo session. However, if you do decide you’d like him to stay, designate a dog sitter to look after him during the festivities. If Ripley is a small dog, he can be 14 BRIDALGUIDE.COM Jan/Feb 2023
carried by a junior bridesmaid or groomsman or toted in a little wagon. Ask your florist to create a floral collar and check online for other fun accessories for the big day. Woof! GIFTED
Q
On our engagement party invitations, is it appropriate to let guests know where we have registered for gifts?
A
Registry information should never be included on engagement party or wedding invitations. Stores or websites where you’re registered should only be mentioned on bridal shower invites or on your wedding website. But since it’s likely that some guests will want to bring gifts to your celebration, go ahead and let close friends and family know where you’re registered in case they’re asked. Also keep in mind that it’s best to open any gifts you receive in private—after the party—and don’t forget the thank-you notes! PROGRAM NOTES
Q
What’s the best way to distribute wedding programs? Should they be displayed on a table in the back of the ceremony site or should ushers hand them to guests as they arrive?
A
There are a number of ways to distribute your programs. But leaving them on a random table isn’t one of them. You’ll find that many guests won’t notice that the programs are available until after the ceremony. Since you’ll be investing time and thought into writing
and designing your program you want to make sure your guests appreciate your efforts and have them in hand during the ceremony. Ask your ushers, a friend or relative to pass them out to guests as they arrive. They can also place a stack of programs at the end of a pew or on each seat. Another sweet idea: As your guests arrive, have your flower girls distribute the programs from handheld baskets. POP-IN PARTY
Q
I received an invitation to a “pop-in” bridal shower taking place from two to four p.m. and would like to know how long guests are expected to stay?
A
For this type of shower, guests can stay for as long or as short a time as they’d like. “Pop-in” implies that this is a casual affair and invitees can come by anytime within that two-hour duration. There may be some light refreshments offered rather than a full meal, and if it’s at someone’s home there may be limited seating as well. You’re not expected to stick around for the entire two hours, so if you’d like to stop in about an hour after it starts and stay for 30 minutes that’s perfectly fine. ››› Go to bridalguide.com/QA for more etiquette advice. “Our mission was to take this beautiful historic venue and add to it a feminine flare,” Amanda says. Using a light touch, “we enhanced the spaces with bright white and flashes of green for the ceremony and cocktail hour and pops of rich color throughout the reception.” 1 The bar beckons. 2 The green and white palette carried through to the bride’s bouquet (and Monique Lhuillier gown). 3 The couple enjoys a moment beneath a tangle of wisteria vines. 4 Escort cards were designed to echo the colors and style of the invitation suite.
OUR FAVORITE PROS SHARE NEWS FROM THE WEDDINGPLANNING FRONTLINES. BY CAROL STRALEY
Weddings came roaring back in 2022, and the bubble shows no signs of bursting. There’s a strong spirit of both fun and inclusiveness as couples ask friends and family to be “persons” or “friends” of honor, enlist pals as officiants, and pets as members of the wedding party. Here, more noteworthy trends we’re eyeing.
big weddings are back
• “The approach from most of our clients in 2022 was “go big” and they did!” says Michelle Leo Cousins, owner of Michelle Leo Events based in Utah. “The budgets were bigger, the guest counts were bigger, and the details were abundant throughout.” • “Big weddings are back!” agrees Jove Meyer, event planner and designer of Brooklyn-based Jove Meyer Events, and co-host of Tara Lipinski’s new TV series, “Wedding Talk,” airing on Crackle and Chicken Soup for the Soul. “After a couple of years of seeing micro weddings and elopements on the rise, couples are back to having larger weddings—and hosting full weekend events for everyone they know and love!” • Tyler Speier, owner/creative director of Tyler Speier Events in Santa Barbara, CA, is on the same page. “Couples are crafting a full weekend of experiences for their guests. After not seeing everyone for so long, couples want to invest in quality time and experiences over the course of the weekend vs. just the wedding day itself.”
LOCATION, LOCATION, LOCATION
Disco balls à go go at a Diwan by Design celebration.
A flower-bedecked crew at a Kristeen LaBrot Events-fete.
• “Couples are planning as far out as 2024 to secure their destination wedding venue,” says Donielle Warren, owner of Elegant Events in Philadelphia, PA. “The Caribbean remains a top pick, thanks to its all-inclusive resorts, effortless travel from the US, and bang for the buck.” • Noting the rise in couples “who are having mini destination weddings inside their own country,” Andrew Roby, planner and designer of Andrew Roby Events based in Washington, DC adds, “We are also getting inquiries from couples who are hosting their weddings in more rural 32 BRIDALGUIDE.COM Jan/Feb 2023

locations stateside, away from busy cities that may have higher fees.” • “A lot of my couples are seeking destination weddings, especially Mexico and Europe, specifically Greece,” says Sneh Diwan, founder of Diwan by Design, based in Jersey City, NJ. “The idea of a ‘wedding season’ doesn’t really exist anymore as destination weddings allow the couple to pick any date that works best for them.” • Whether couples are tying the knot on their home turf or at a far-flung destination, a love of the outdoors abides. “Even those getting married in the city want some sort of outdoor space, so they can feel the wind in their hair and be hugged by nature!” says Jove.
TO CAPTURE THE MYSTERY OF TRAVELLING BACK IN TIME, MCKENZI LOOKS TO “LOCATIONS THAT MIMIC ENCHANTED FORESTS, HAUNTED WAREHOUSES, ANYTHING WITH SPIRAL STAIRCASES, VICTORIAN HOMES, OLD CHURCHES OR A VICTORIAN GARDEN.”
THEMED CELEBRATIONS • “We’ve had a Bubbles and Butterfly brunch, an Under-the-Sea welcome dinner, a pirate-themed sailing excursion, and luau-themed welcome events”Tyler says, “and they are so much fun!” • “We’ve done a Miami meets Euphoria theme for a couple that wanted a modern twist—think disco balls, flamingos, neon signs and bright colors—to a traditional occasion,” says Sneh Diwan, founder of Diwan by Design, based in Jersey City, NJ. • Goth-themed celebrations are also taking hold. “Think Bridgerton with a darker twist,” says McKenzi Taylor, founder of Electric Sugar Elopements in Las Vegas, NV. “It harkens back to Old World romance, when people were more keenly aware of their mortality and how that impacted love and marriage. Many of our couples want to express that their love has overcome something dark or challenging, and cannot be broken.”

decor details
• “We’re seeing more patterns and color, as the typical white wedding isn't as popular as it once was,” Jove says. • “Colorful weddings can still be ethereal and timeless,” says Michelle. Ceiling installations, like this one by Tyler, are trending. McKenzi is loving tabletop decor that features “heavy fruits like grapes, pomegranates, plums, papaya, rich succulent fruits” as well as “melted candles and candelabras and vintage glassware.” • “Our couples have definitely budgeted for mood lighting!” says Michelle. “Whether it’s an installation over the dance floor that includes clusters of chandeliers and floral elements or thousands of strands of little white lights.” • For a number of Jove’s clients, it’s back to the glamorous ’70s with a rise in disco balls. “Couples cannot get enough of them!” he says of the dazzling orbs. • Sneh is seeing couples light up their celebrations by customizing neon signs for photo-booth backdrops or for their sweetheart table. • Stunning floral installations are edging out smaller flower arrangements. “We’re seeing big requests for ceremony backdrops, statement pieces framing the head table and venue entrances, hanging installations inside tents and venues, tall centerpieces layered with shorter ones for depth and so forth,” says Michelle. Donielle finds that her clients are leaning into “ceiling installations, flower clouds, and floral arches.” • Tyler and Jove are excited that sustainability is an important consideration in selecting florals. Noting that flower composting is on the rise, Jove adds, “Florists are working with companies who compost wedding flowers, so they go back to nature, not to a landfill.” • As for the flowers of the moment, says Kristeen LaBrot-Widmyer, found of Kristeen LaBrot Events in Southern California, “I’m seeing a lot of couples taking their inspiration from Dutch Masters painters—lush, opulent with very rich colors,” ➺ 33

food and drink
• “I would say 75% of my couples use a friend to officiate their ceremony,” says Kristeen. “It helps with the budget and makes the wedding feel a lot more personal.” Says Jove, “Instead of flower A moody moment via girls, we have flower people or children, Electric Sugar Elopements. as they no longer need to be young or a girl. It can be anyone that will bring joy and love moments before the ceremony begins!” • Pets are also in the spotlight! “Every wedding I have worked on this year has had the couple’s dog be a part of the ceremony,” says Kristeen. • “We had a couple call their dog from the ceremony site and he ran all the way to them with a basket of petals that scattered as he ran down the aisle!” recalls Jove.
LANGUAGE LESSONS • We are watching our words more than ever. “Gone are the days of the ‘bridal’party, as the newer terms are ‘wedding party,’ ‘wedding attendants’ or VIPs,”says Donielle. • Andrew Roby agrees. “Using the term ‘bridal party’ to describe both sides of a couple is reverse sexism and exclusive. Couples are also being considerate of those that do not drink, so zero-proof drinks are also being included more and more.” • Wedding cakes are running the gamut from elaborate, over-the-top creations that Jove describes as “throwback” designs “that feel and look like an elevated 1980s wedding cake” to the utter simplicity of elegant minimalist cakes as turned out by pastry-chef extraordinaire Nicolle Lugo, owner of NYC-based A Simple Cake. For 2023, Nicolle predicts less focus on naked cakes, a no-fuss approach to cake flavors, and buttercream frosting in lieu of fondant finishes. • Cake alternatives abound. “I did a wedding featuring Mexican desserts displayed in pieces the bride Mighty mini-bites. had collected in East Los Angeles,” says Kristeen. “They also had a churro cart and a beignet truck.” 34

CAPTURING MEMORIES • First Look moments captured on camera are prevailing over the Big Reveal at the ceremony. “The first look session is generally 45 minutes to an hour spent with your significant other, taking in the surroundings and the significance of the day without an audience,” Michelle says. “I think it’s one of the most genuine moments of the wedding day.” • “We are seeing more and more couples do a full wedding guest shot,” says Jove. “Honestly, it is not easy to achieve—but I get why couples want it!” • When it comes to photo booths, “We are seeing less is more,” says Jove. “Back to the printed black and white strips, no props, no gimmicks, just an old-school photo booth moment!” As for innovation, Michelle says, “We’ve seen a spike in booths that offer video and other photo formats that can quickly be shared on social media”.

LET’S PARTY! • “Our most popular package is the wedding weekend, which covers everything from the welcome party and/ or rehearsal dinner to the wedding, after party and farewell brunch,” says Michelle. “Couples want to entertain their guests all weekend to thank them for traveling long distances to celebrate.” • “We love when our couples start off the weekend with welcome drinks or a welcome dinner,” says Tyler. “This gives the couple the opportunity to greet all of their guests and for everyone to meet each other. Then, the wedding day is about celebration, not introductions or formalities.” • “After-parties are a must as many guests are looking to keep the night going,” adds Donielle. “Some couples are foregoing a traditional honeymoon and inviting their wedding party to join them for the getaway. The couple then extends their vacation for a last moment of togetherness before returning home.”¢

Sure, you’ve envisioned your wedding day as the picture of perfection, but you can’t help but think that with so many details—and people—involved, something is bound to go wrong. “Obviously some things are out of your hands,” says New York City event planner Marcy Blum. “But you can make some pretty good calls to help avert disaster.” Consider these “what if” tactics as you plan, so you can enjoy your big day even more. 36 BRIDALGUIDE.COM Jan/Feb 2023

Then discuss the shots with your photographer. “If it seems unrealistic time-wise, you should edit down the number of shots, or shift things around,” says Lefkowitz. “It might be preferable to have formal shots taken before the

AVOID CAKE CATASTROPHES • If visions of a fallen wedding cake are dancing in your head, rest assured that an experienced baker will know how to get the cake to your reception site without a slip up (and will likely bring along extra icing to do any necessary touch-ups upon arrival). • If you’re having a summer wedding, however, remember that some cake coverings—like buttercream frosting and fresh whipped cream—
KEEP FLOWERS FRESH The good news about flowers is that you don’t have to take a class in floral design and preservation to make sure they look great all day. The experts say it’s easy, as long as you hire a professional floral designer. “If they’re reputable, they’ll use fresh flowers,” says Blum. “If it’s a very hot day or your reception tables are in direct sunlight, it’s a good idea to have the staff wait to place your centerpieces on the tables until right before your guests sit down,” says Nichols. “If flow-

In that case, opt for fondant, which is sturdier. “Don’t display your cake in direct sunlight,” says Nichols. “Have it in a cool, shaded area if you have to have it outside, and put it out right before guests arrive. Definitely let your baker know if you’re planning an outdoor reception.”
When it comes to toasts, make sure only specific people can take the floor, so there’s no “passing the mic around.”

by the festivities that they forget to eat! Be sure your wedding-day supply kit includes plenty of snacks and drinks (we’re talking mineral water, not champagne). • Oh, and one last rule: “Never separate yourself from your dress,” says Nichols. “One bride recently had her sister-in-law bring her dress to the venue, but the sister-in-law was over an hour late getting there. It wouldn’t have been an issue if the bride had her dress! Ditto for flying. Carry the dress on board.”

Wedding Dress Shopping
101
CONGRATS, YOU’RE ENGAGED! You’ve probably been dreaming of this day for a long time — with good reason! There’s no greater feeling than trying on a wedding gown and seeing yourself as a bride for the very first time. Read on for everything you need to know about shopping for your wedding dress.
Choose Your Stores
Brides should begin shopping for their gowns 10-14 months ahead of their big day. Look up your favorite designers online to see which stores near you carry their dresses. A traditional bridal salon offers a large selection of reputable designers and styles, whereas a designer’s store or showroom is dedicated to their specific brand.
Bring These Important Items
It’s a good idea to bring a strapless bra and a pair of shoes with the heel height you’d like to wear on your big day.
Communicate With Your Consultant A bridal consultant cannot read your mind, so be vocal about what you’re
looking for, give honest opinions, and tell her if you love a dress or not. You’ll be making both of your jobs easier. Not sure? Bring trusted family and friends—your “YES” moment will be that much sweeter!
Make the Dress Your Own
The dress you try on in the store is just a starting point. Want to add a sleeve? Lower the back? Elongate the train? At a traditional bridal salon, you can work directly with the dress designer and an in-house seamstress to customize your gown and turn your dream into a reality.
Ask About Special Pricing
If budget is a concern, there are many ways to shop smart at a local salon. Many brick-and-mortar stores offer
discounts at designer trunk shows, and host sample sales annually.
Inquire About Delivery Dates
Don’t forget to ask your consultant about delivery dates. Due to supply chain issues, your dress may take longer to arrive. Short on time? Many bridal salons have off-the-rack sections where you can select a gorgeous gown and bring it home the same day.
Add on Accessories
Once you say yes to the dress, your consultant will help style your look with accessories like veils, headpieces, jewelry and belts. This is an important step as it helps you envision how you’ll look on your wedding day!

ANASTASIA SIMP
Brides’ frequently asked question: Can you make a cake like the one in this photo? Anastasia Simpson, pastry chef at The Inn at Spanish Bay, Pebble Beach Resort, California: “Pastry chefs are artists, each with a different skill set and style, and replicating another’s work is no easy task. So, before you set your heart on that dream cake you found on Pinterest or Instagram, show it to your pastry chef and ask if she can, in fact, re-create it. I, for one, gladly accept these challenges!”
FAQ: How much will my dream cake cost? AS: “Always keep in mind that many of the dream cakes posted on
social media have prices to match their extravagant design—designs that entail hours and hours of skilled, painstaking work. Couture cakes like these can be priced as high as $25 or more per slice. To avoid sticker shock, be sure to determine your cake budget from the get-go, so that you and your pastry chef are on the same page.”
of your cake is based on guest head count as well as the type of cake you envision. Do you want a round cake? Square? How many tiers, if any? Armed with this info, we can give you several options to choose from.”
FAQ: Can you create special, customized flavors? AS: “Yes, but to keep costs in line,
we always like to start by presenting couples with five or six readymade, standard cake flavors to choose from. You’ll find that pastry chefs often are happy to mix, match or even start from scratch, so don’t hesitate to ask. We want to bring your cake vision to life!” Adds pastry chef Kursten Restivo, “We encourage our couples to think beyond the flavors presented during a tasting. We might start with a wedding cake menu, you can always switch up the flavor of the cake and pair it with a different filling. And if you don’t see your favorite flavor, just ask. Chances are we can make it for your big day.” 40 BRIDALGUIDE.COM Jan/Feb 2023

FAQ: Which is better, fondant or buttercream? Kursten Restivo, pastry chef at Palm Beach Marriott Singer Island Beach Resort & Spa in Florida: “There are certain designs that can only work in fluffy buttercream and others, generally the more complex designs, that only work in firmer fondant. In addition, in most cases fondant is an upcharge. So, when you’re looking through photos for your dream cake, check to see which type of covering was used. Where your wedding cake is to be served is also a consideration. Buttercream doesn’t stand up to heat and humidity, for example, so be sure to factor that in during your consultation and tasting.”
FAQ: Will you provide the decorations? KR: “This is a must-ask question! If you have your heart set on a cake with ribbon around
each tier, seashell decorations or cute flip-flop toppers, for example, ask if the pastry chef provides those. If they do, it could be at a significant upcharge. Always ask first—you might find that even if the pastry chef can provide them, it’s more cost-effective to source and purchase nonedible trimmings and decorations yourself.”
FAQ: Do you provide the flowers? KR: “Couples often assume that their pastry chef provides fresh flowers for the cake or that
the pastry chef communicates directly with the florist. This is not always the case. Always let your florist know the kinds of flowers you want on the cake and ideally show her a photo of the design you want—particularly if you’re not sure how many flowers are needed to achieve your vision. By communicating with both your pastry chef and florist about your fresh-flower cake design, you can be confident that we’ll have what we need to execute it as you imagined it.”
FAQ: May we see photos of your wedding cakes? KR: “These days, every professional pastry chef documents her work. We always have photos
of cakes we have done in the past for special events of all kinds. This is a perfect opportunity for couples to see examples of what we do and what our capabilities are. You might just find we’ve already created the cake that perfectly aligns with your wedding-cake vision.”

DEAR DAVID Celebrations and wedding expert David Tutera addresses your most pressing big-day questions and concerns.

I’m really torn between having a buffet or a plated meal. What are your thoughts?
I personally feel buffets are too casual, but it all depends on the type of wedding you’re planning. Buffets are generally perceived to be less pricey than plated service—but beware! They can actually be more expensive due to wasted food. Caterers can’t accurately determine how much food needs to be made, especially since some people may gravitate toward different dishes. With a plated meal, the dish has already been portioned and brought out ready to serve to each table. If you decide on buffet, I would recommend doing as formal a buffet as possible or limiting it to food stations at the cocktail hour.

Elegant options abound but costs vary significantly, so take this expert advice into account before you start scouting locations.
T
GETTING MORE FOR YOUR MONEY he venues that offer the best value are dedicated event spaces, like hotels and banquet halls (generally speaking, sites with prescribed wedding packages). This is because many services you would otherwise need to hire come included, and bundling them together makes your dollar go farther. When shopping around for a venue, “the number one thing is to make sure you’re comparing apples to apples,” says planner Claudia Hanlin of The Wedding Library in New York City. “Bringing-in always costs more because you have pick-up and delivery charges for every single thing.” Many brides make the mistake of thinking an outdoor wedding at a family member’s home will result in a big savings. There’s no site fee, but the cost of transforming a backyard into a full-service reception space (tents, lighting, dance floor, portable toilets) can exceed even the most lavish pre-set wedding package.
PAYING LESS FOR PLACES Another way to save, says Hanlin, is by holding your ceremony, cocktail hour and reception in the same venue—such as a church or synagogue with an attached hall, or a restaurant with multiple party rooms. The cost of a few extra hours on property is considerably less than renting an entirely separate space, and you won’t have to pay to transport guests between locales. Religious and charitable organizations tend to rent for nominal fees, as do government-run sites like cultural institutions and state parks. Plus, what you do pay to rent these places benefits the community. Parks, in particular, can be great bargains, considering they often include scenic backdrops. Naturally picturesque outdoor locales—a stand of towering redwoods, for example—don’t need much adornment, which reduces your decor budget. The key is working with what you’ve got: “In California there are a lot of missions that rent for very little,” says Sasha Souza, the Napa-based event designer, “and they often already have benches in place so you save on furnishings.” Similarly, if your site features a stone patio, consider using that as the dance floor rather than renting one.
INSIDER TIP
At first glance, the fee for renting an empty loft may seem like a steal compared to a ballroom. But as soon as you factor in all the vendors (caterer, servers, bartenders) and rentals (tables, chairs, china, glassware, linens), you’ll see the price tag go way, way up. 42 BRIDALGUIDE.COM Jan/Feb 2023

COMPARING PRINT PRICES significant factor in stationery costs is your choice of printing method. At the most expensive end are engraving and letterpress techniques, where the script is artfully raised off the page. If you like this formal feel but don’t want to pay top dollar, consider thermography—it’s much less costly. Offset printing comes next on the price scale, while digital printing is very economical—especially if you’re incorporating multiple colors. Because offset and digital printing
are cheaper to produce, stationers recommend using them for all your day-of needs, like ceremony programs, escort or place cards and menus. “These pieces are often left behind,” says Karen Bartolomei, founder of Grapevine Paperie in Boston and NYC. “Splurge on items that will be mailed to your guests’ homes.”
SAVING BY CONSOLIDATING The more elements there are in a wedding invitation, the higher the price. One insert that’s easy to eliminate is the reception card. “If you’re getting married in a church and having your reception at a loft, print ‘Dinner and dancing to follow at Tribeca Rooftop’ on the invite itself,” says Cheree Berry of Cheree Berry Paper in St. Louis, MO. Rather than printing and sending out guest logistics in early mailings, stationers now recommend putting travel and
lodging details on your wedding website. Day-of items can be scaled back, too. Rather than calligraphed escort cards, print names and table assignments in a nice font on fine paper and display them in frames, or write them on a chalkboard.

For reception music leads, explore your city’s nightlife scene. A group that performs in local bars or clubs tends to be more cost-effective than a traditional wedding band. As with venues, you may get a bargain rate by holding your wedding on a weekday or a weekend in slow season. Saturday events incur the most competition for services, so they yield the highest price tags.
PAYING LESS FOR LIVE ACTS
THINKING OUTSIDE THE BAND
usicians are almost always more expensive than DJs, so hiring instrumentalists to perform at your ceremony and cocktail hour, plus a band as the main act, will cost top dollar. But cash-strapped couples don’t necessarily have to forfeit live entertainment. If you’re having a religious service, check your venue contract before booking anyone, says Deanna Jones, of NYC’s The Deanna Jones Orchestra. “Often you are already paying for a musician at your church or synagogue and just don’t know it.” If that’s not the case, look into nearby civic organizations and
DJs typically cost less than bands, and some couples prefer them because of the greater variety of songs they can play. Although smartphones and services like Spotify let individuals create a playlist and “spin” their own tunes, DJs double as emcees—introducing the bridal party and announcing special dances and toasts. They also provide speakers, which you may have to otherwise rent. Lastly, don’t overlook talented friends and family members. Asking your choir-star cousin to sing a hymn at your service or some college buddies in a cover band to play your first dance track adds the excitement of a live performance for free. ➺ 43

PLANNING FRUGAL FARE ou can reduce almost every wedding expense by editing your guest list, but nowhere does that tactic have more impact than in catering costs. Think about it: Food and drink may run hundreds of dollars per head, meaning that 10 or 20 fewer chairs will result in significant savings. If you can’t get your guest head count down, a buffet may come in as a budget-friendly option because you don’t have to pay for waiters. If you go this route, however, it’s important to serve less expensive fare that can be easily prepared in bulk. If you prefer sit-down service, request that guests make their dinner choices in advance. “Taking an order at the table means the kitchen has to have eighty percent of every option available, which costs a lot more,” says Seattle-based caterer Lisa Dupar. She recommends including an entrée selection line or insert with your invitations so the chef can plan ahead. Also, giving guests fewer choices to begin with (filet mignon or wild mushroom risotto, for example, instead of a meat, fish and vegetarian dish), or the same sides with each alternative, is less work for the cooks. Barely noticeable omissions or substitutions can have a profound effect on your final bill, too, says Brian Kiefer, a senior sales consultant at the Chicago-based caterer Food for Thought. “If you’re serving a beautiful salad with seasonal veggies and simply leave off the cheese, you’ll save one dollar per person,” he says. CHOOSING THE BLOOMS lowers can be as dramatically different in price as they are in appearance. The best way to get more for your money is by selecting seasonal blooms that can be purchased locally rather than shipped in. As soon as you set your date and location, ask your florist to suggest flowers that will be available in that place and time of year. You can also save by using a less expensive flower en masse. It makes a striking statement but requires less effort for your florist than arranging multiple blooms, says Hanlin. Alternatively, by using cheaper blooms like carnations at the base of your arrangements, you can get away with fewer, more prominently placed pricey blossoms. Chicagobased event designer Marina Birch boosts centerpieces with inex-
INSIDER TIP
Don’t get talked into splurging on top-shelf liquors. Go with one or two signature drinks in addition to red and white wine and two types of brews. And if the drinks are passed on trays as guests enter the room, most won’t even realize the bar has been scaled back. 44 BRIDALGUIDE.COM Jan/Feb 2023

catering
If your catering budget is tight, don’t fall into the common trap of overestimating how much your guests will consume. Do you really need assorted passed hors d’oeuvres, a made-to-order sushi station and a mammoth crudité platter at your cocktail hour? “Pick one hearty, filling display—like a local artisan cheese table with fruits, breads and crackers—and have that be it!” says Dupar. Another way to cut back is by shortening the event. “Costs are driven by length of time, so stick to an hour or less for cocktails,” says Kiefer—noting that, on average, people consume one canapé every ten minutes—and consider trimming an hour off the reception. For even deeper savings, skip the full-on dinner altogether, and opt for a brunch, afternoon tea and dessert, or late-night cocktail reception. If you stay flexible and open to creative new ideas, you’ll find lots of innovative approaches to throwing a great party that will also save money.
INSIDER TIP
“One trick I love is going with the house china from your venue, but adding colored napkins and gorgeous wine goblets from a rental company,” says Claudia Hanlin. “It looks as if you’ve done a custom table, but you haven't.” NONFLORAL LOOKS
pensive greenery, like ferns and ivy. “Any kind of leafy filler adds a lush, organic touch and volume, so arrangements don’t appear skimpy,” she says. For ceremony decor, Souza counsels couples marrying in a large church to skip the flowers because they’ll be overwhelmed by the space; just place wreaths on the entry doors.
Souza loves using hardy perennials like succulents and chicksand-hens plants in reception displays instead of fussy, fragile blooms; they aren’t pricey and can be replanted and enjoyed long after the event. Branches, topiaries and tree-trunk slices make great nonfloral centerpiece elements, too, while embellishing tablescapes with fruits and vegetables adds texture for far less than a flowers-only arrangement. Purchasing decorative items like candelabra or vintage vessels is often cheaper than renting them, says Hanlin, and you can always sell them after the wedding. If your floral budget is really limited, stick to adorning the center of the room (no one will notice if the perimeter is a bit sparse) and find other ways to spruce up the tables and chairs. Many venues offer basic linens in an array of shades besides white, and a profusion of one color looks purposeful rather than penny-pinching. Similarly, standard ballroom seats can be dressed up by tying ribbon or narrow lengths of lace into bows and placing them on the chair backs.

A decadent confection makes a fitting grand finale, but that fancy finish may not come cheap. Here’s how to sweeten your deal and score a cost-conscious cake.
S
IMPRESSING FOR LESS ome brides are surprised to learn how expensive wedding cakes run. But they have to look as good as they taste, and that takes effort. “The cake is a dessert, but it also plays a decorative role in the reception—similar to the flowers,” says pastry chef Cheryl Kleinman of Betty Bakery in Brooklyn, NY. When a couple’s eyes are bigger than their budget, a baker might suggest preparing a “fake” cake, made of iced tiers of cardboard or foam except for the tier that’s sliced during the cake-cutting ceremony. The guests are then served pieces of an inexpensive cake that’s cut in the kitchen. Alternatively, you can have a diminutive but dramatic cake that serves 35
presented on a pedestal stand on the escort card table; this way guests notice it when getting their seat assignments but later eat slices of an unseen sheet cake.
SCALING BACK ON SUGAR Although cakes are priced by the slice, it’s not likely that every single person will indulge—so you can usually get away with ordering a confection that feeds just 75 percent of attendees. Square cakes yield more slices than round ones, and rich flavors like chocolate make people feel full faster, meaning you can order less and cut thinner slices. To further cut costs, have your cake divided into very small pieces to be passed on trays during the dancing; this way, you may only need to budget for 25
percent of the guest count. Finally, while it’s fun to work with a pastry chef, it isn’t absolutely necessary. If your venue has an in-house caterer, consider booking their baker to save on delivery fees. And consider offering a number of single-layer cakes in a variety of flavors displayed on a collection of pretty cake stands.

LIZ JOEL
It takes a village, or in this case the father of the bride and a planning team, to put together a late-summer wedding in record time. PHOTOGRAPHED BY ASHLEY COOK PHOTOGRAPHY
DOCTORS LIZ DOOLIN & JOEL OHRT met during their residency. “We dated less than a year, and got engaged,” Liz says. “But when you know, you know.” The height of the pandemic found the couple working 80-hour weeks, so Liz’s dad stepped in to do the wedding planning. The couple envisioned “a fairytale garden aesthetic,” and the venue found by Liz’s dad, The Oregon Garden, perfectly fit the bill. But with everyone on the East Coast trying to plan remotely, “we found ourselves four months out, heading into panic mode.” Through their venue, the Doolin-Ohrts were introduced to the team at Zilla, who took the planning reins from there. Says Liz, “They literally took one photo I emailed them for inspiration, and planned the entire wedding from start to finish.”

PUERTO VALLARTA THIS TEXAN COUPLE WENT BIG FOR THEIR MEMORABLE WEDDING BASH AT A GORGEOUS OCEANFRONT MEXICAN RESORT WITH AMENITIES A GO-GO. BY JENNA MAHONEY
ON FEBRUARY 5, 2022,
Karishma and Shaylan hosted five events over the course of their celebration. 000
PHOTOGRAPHY: AMA BY AISHA CAPTION HERE
after rescheduling their nuptial celebration twice, Austin, Texas couple Karishma and Shaylan Patel swapped vows in a traditional Hindu ceremony at the Pacific-ocean facing Marriott Puerto Vallarta Resort & Spa. “According to the Gujarati calendar this was the same date my parents and my grandparents got married on so it was a really special day,” explains Karishma. “It meant so much to us that it ended up working out like that. We had to push our wedding twice, and the universe always has its way of making things work out,” she adds. The couple, who chose the breezy Mexican resort for its ability to host multiple events—they had five!—at various sites across the tropical property, blissfully toasted with their guests thanks to the excellent onsite service and impeccable wedding planning. “Having the best event planner and team ever means everything will work out perfectly!” gushes the bride.
Works made of traditional beading delighted wedding guests.
Beautiful Beadwork
In the past two decades, the Pacific coastline stretching from Nuevo Vallarta to San Blas and hugging the Bay of Banderas, which fronts Puerto Vallarta, has been called Riviera Nayarit. The original peoples of the Nayarit region are Huichol and their tradition of beadwork is on display throughout many of the hotels, restaurants, and cultural excursion offerings in the area. Intricate, vibrant and downright gorgeous, the pieces are made in the traditional method. First a thin layer of beeswax is spread over a hollowed gourd or wooden form. Small glass beads are then pushed into the wax to create the patterns.
All aglow for a dinner celebration.
“We had a welcome night on the beach while the sun was setting, and we had fireworks at the end of the night. It was a perfect way to start our celebrations with our loved ones.” Many of the vendors were local.

Go Downtown
The malecon (a wide beachfront boardwalk) stretches along Puerto Vallarta’s buzzy downtown. Visitors stroll the area for taco tastings, tequila flights and sightseeing. “I really loved downtown Puerto Vallarta, I think this destination is the best for A dreamy reception table. anything,” recalls Karishma. One night she and Shaylan enjoyed local offerings at Pancho’s Takos. “It’s not a fancy place and that’s why it was so perfect,” she explains. “My husband and I had the best tacos right in the middle of downtown on a Monday night. It was a really fun experience and if I go back that’s where I will be going first,” she adds. ➺

SIGHT SEA-ING The Marietas Islands, a unique group of volcanic islands with a fascinating ecosystem, have been called the Galapagos of Mexico. The collection of islets in the Bay of Banderas is a natural sanctuary chock-a-block with wildlife, sea creatures and birds. Day trips to the site are wildly popular with snorkeling, kayaking and stand-up paddleboarding being the draw once there. A quiet cove called Secret Beach with its golden sands also beckons. The couple chose the resort for its varied event settings.
The Mexican state of Jalisco, where Puerto Vallarta is located, is famously the homeland of tequila. Tasting experiences are a hallmark for all visitors. The Marriott offers a bespoke agave spirit for sipping. The welcome party was hosted on the beach.

Wild Ride
While the newlyweds reposed at the expansive resort for much of their stay, they did have another heart-pumping experience off property—an ATV excursion. Traversing a verdant jungle landscape via dirt roads and foliage-edged paths, they explored the unexpected side of Puerto Vallarta. On their excursion, Karishma and Shaylan wound their way to an impressive vantage point in the Sierra Madre Mountains. “It’s really beautiful. The perfect way to see all of PV,” they say. As a bonus they stopped for snacks at a family-owned restaurant with a view.
legally wed
The requirements for saying “I do” in Mexico are extensive. All couples must be 18 or older and not currently married. Upon arrival in the country, the couple must present, in person, a valid passport, tourist card (issued upon arrival), birth certificate, blood-test results (done in Mexico), completed marriage application forms from the local registry and four witnesses. All foreign documents, with the exception of the passports, must be translated, apostilled and notarized prior to the application day. The couple, and their witnesses, must arrive in Mexico four business days before the ceremony to complete the legal paperwork.

ELIZABETH TAYLOR AND RICHARD BURTON BECAME FAMOUSLY TABLOID fixtures as he filmed The Night of the Iguana at Playa Mismaloya, near Puerto Vallarta. The couple, for whom director Federico Fellini coined the term paparazzi after the cameramen who buzzed around Liz & Dick in those days, eventually bought a home in the area. Today, Casa Kimberly is a chic and intimate retreat. The property’s Iguana—a splendid indoor/outdoor eatery and tequila bar with ornate crystal chandeliers and sweeping vistas of the city and the placid Banderas Bay—accepts reservations from non-house guests for dinner service.

travel notes
WITH MORE THAN 400 ROOMS, EIGHT BARS AND RESTAURANTS, multiple pools, watersports and other robust activity offerings and a seemingly endless golden strand of sand, the Marriott Puerto Vallarta Resort & Spa is the postcard-perfect embodiment of a luxury resort property. The freeform infinity pool is the heart of the hotel and is positioned adjacent to both the barefoot Las Casitas (tip: order the lobster tacos) and the hammock-lined beach. The Ceviche and Tequila bar is a favorite gathering space that is at the same time splashy and laid-back thanks to its 180 tequila options, bespoke cocktail menu and a variety of ceviche preparations. Ohtli Spa is another standout. Breezy palapa-roofed cabanas set on the beach offer the most romantic setting for massages featuring traditional techniques. And guest rooms—all of which have balconies—up the luxe factor with sand-shaded furnishings, rattan accessories and splashy turquoise accents (room rates start at $269 a night. A
rizona couple Matthew Lujan and Kristen Jacobsen Lujan knew they wanted a destination wedding. “Since we met in Tucson, it was important to us to show off the desert landscape to our guests,” they say. They chose Loews Ventana Canyon Resort, set in the foothills of the Santa Catalina Mountains, because the views are “absolutely stunning.” The fact that they were able to host all of their wedding events—welcome dinner, ceremony, reception, and an impromptu golf tournament— at the property while maintaining different venues also sealed the deal. Add the impeccable service and lodging for all and the couple says “we were very fortunate to have had our dream wedding.”
Many of the events were outdoors.

They suggest driving up to the summit and its village called Summer Haven. “It’s so beautiful because you slowly transition from desert and cacti to a forest of trees.” About halfway up there’s a beautiful overlook called Windy Point. They also enjoy catching the sunset at Gates Pass, which has “awesome mountain

They shared favorite memories of each other in their vows.

As locals, Kristen and Matt have their preferred eateries and orders. In fact, one of the couple’s signature cocktails is a menu item at The Moonstone at The Graduate Hotel. For brunch their top pick is Snooze Eatery near the University of Arizona—“our favorite is the breakfast burrito, which is enough food to feed two people,” they say. “Our favorite lunch spot is Choice Greens with a cute interior and amazing salads.” For dinner, the couple enjoy the mac and cheese at Barnyard, or meeting friends at the Culinary Dropout, which has ping pong tables, corn hole, and music on the weekends.
