PRO-SURFER OR RESTAURANT OWNER – WHAT’S HARDER? Surfing puts you in some scary and difficult situations, but I have been practicing for them since I was seven. TELL US HOW YOU ENDED UP IN BYRON. I grew up at Copacabana, a small town on the central coast. Once I was travelling, surfing, and my friends got real jobs, I would come home and be pretty bored. I made the move to Bondi, as every overpaid under obligated teenager does, but realised I needed surf and a little more space. So Byron seemed like the perfect spot. I think I was right.

THE FRIDAY HUT DINING AND ACCOMMODATION VENTURE IS STILL PRETTY NEW – WHAT’S IN STORE? I have been lucky enough to travel the world, stay in people’s homes and eat amazing local foods. Our plan is to have the highest quality local ingredients and dishes set in our favourite part of the Byron hinterland. (My dad drives the complimentary shuttle, so everyone can have a drink and get home safe too!) The accommodation has been exciting to set up, so we can share where we live with other lucky travellers. We have 6 luxury bedrooms, a brand new pool, cinema-room, woodfire pizza oven and 80 metres of bubbling creek frontage. It feels like you’re in another world, but it’s only 15 minutes to the beach and the heart of town. COMPLETE THIS SENTENCE – “I LOVE …. early surfs when the whales are in town. Nothing like being out the back watching the sunrise and having those majestic creatures bellyflopping around you.
