El ascenso a las montañas más altas del mundo puede ser una experiencia maravillosa, pero su contemplación desde kilómetros y quizás sólo en fotografías como las que presentamos en esta edición de Mi Tierra, puede asombrar a cualquiera que se precie de contar con un mínimo de sensibilidad por la naturaleza y su grandeza.

Así mismo, en un rápido recorrido por los lugares que ofrecen alternativas turísticas con gran valor natural, nos encontramos con la capital de orquídea, Concepción al nor-este de Santa Cruz, dónde ya se ha hecho tradicional la realización del festival anual de la orquídea, que congrega a miles de visitantes nacionales y, desde hace un par de año, también a turistas e investigadores internacionales que llegan atraídos por la variedad y el misterio natural que envuelve a estas plantas.

En nuestra propuesta de destino internacional, nos admiramos con las playas y la gente espontánea y alegre de Recife, en el estado de Pernambuco, al noreste del litoral atlántico brasileño, uno de los lugares más atractivos por sus aguas cristalinas y la riqueza cultural e histórica que ofrece.

Pero esta edición tiene en la “almendra chiquitana” a su estrella. Un producto merecedor de la portada, que sale al mercado a mostrar sus bondades, su agradable sabor y sus características nutricionales que, en muchos casos, superan a las nueces y almendras más populares en las mesas de la gente. Valer la pena conocer esta variedad de almendra que desde ahora y gracias al esfuerzo visionario de gente con criterio positivo hacia el desarrollo, se introduce en los mercados locales y promete lanzarse a la conquista de los mercados nacional e internacional en muy poco tiempo.

Destacamos la labor de la Orquesta Sinfónica Juvenil de Santa Cruz, una muestra de la capacidad de gestión de un importante grupo humano y el apoyo de muchos a un emprendimiento que enaltece el espíritu humano.

Finalmente, las causas y efectos del colesterol en el organismo humanos, así como el ya clásico festival alemán de la cerveza, prometen una lectura entretenida, de Mi Tierra.

Scaling the highest mountains in the world can be a marvelous experience, but just gazing upon them from a distance or taking photographs, like the ones we bring you in this issue of Mi Tierra, can also move anyone who has an appreciation for nature and its magnificence.

Likewise, in our search for alternative tourist destinations that have a great ecological value, we find Concepcion, the orchid capital, northeast of Santa Cruz, where the annual orchid festival has become a tradition that gathers thousands of tourists around the country and as of a few years also tourists and researchers from around the world who are drawn by the variety and mystery that surrounds these plants.

We offer you Recife as our international destination, because we were amazed by its beaches and the joy and spontaneity of its people, located in the state of Pernambuco, in the northeastern Atlantic coast of Brazil; one of the most attractive destinations due to its crystal clear waters and its cultural richness and history.

But for this edition we have the “Chiquitana Almond” as the star. A product that deserves to be on our cover, because of it is début in the market with all its wonderful goodness, agreeable flavor and its nutritional characteristics, which in many cases is superior to that of other more popular nuts and almonds which people consume. It is well worth knowing about this local variety of almond that thanks to the visionary efforts of people in search of sustainable development is now being introduced to local markets and promises to conquer national and international markets very soon.

We also highlight the efforts of the Symphonic Youth Orchestra of Santa Cruz, an example of the organizational capacity of a very important group, which with the support of many has been able to bring forth this noble project that elevates the human spirit.

Monte Ararat

Pan de Azúcar

En portugués, Pão de Açúcar, es un pico situado en Río de Janeiro, Brasil, en la boca de la Bahía de Guanabara sobre una península que sobresale en el Océano Atlántico. Su nombre en portugués no hace referencia al pan, sino a la semejanza de su forma con los montículos que, durante los siglos XVI y XVII se formaban con el azúcar para su envío a Europa. En Recife, hay diversos restaurantes especializados en la culinaria regional.

Las playas son urbanizadas y el mar azul forma un bello escenario. Boa Viagem, la más frecuentada, posee tranquilas piscinas naturales en la faja entre la arena y los arrecifes. Entre las proximidades del puerto, centro de Recife, reúne construcciones centenarias, que después que pasaron por un intenso proceso de revitalización, tienen sitios utilizados como bares y restaurantes con mesas en las aceras, teatros y tiendas.

Una de las Iglesias más bonitas del país, la Capela Dorada, fue construida entre los siglos XVIII y XIX y presenta un rico altar revestida de oro y bellísimas pinturas que se exciben en el techo.

Esta Iglesia está integrada a un conjunto de construcciones erigidas por los franciscanos, del cual hace parte también el Convento, que ostenta paneles de azulejos con motivos religiosos.

Entre los museos que presenta este paraíso terrenal, se encuentra un amplio acervo con piezas que retratan la cultura de Pernambuco con temas principales: el ciclo de la producción del azúcar, el modo de vivir del nordestito y las manifestaciones folclóricas y religiosas.

Recife was founded in 1535 by the Portuguese, attacked by the English in 1595 and occupied by the Dutch between 1630 and 1654.

During the colonial era it became the main shipping port for Brazilian sugar to Europe.

The native cuisine of Pernambuco, which due to its mixture of seafood and other ingredients is one of the most varied in Brazil. Besides seafood dishes such as comolas peixadas, the local cuisine also uses beef, lamb, goat and chicken, always seasoned with a special mixture of spices. In Recife there is a variety of restaurants specializing in the different types of food of the local cuisine.

The city is full of beaches and the blue sea creates a beautiful backdrop. Boa Viagem is the most popular of the beaches because of its tranquil natural pools that lie between the sand and the coral reefs. The old downtown is around the port, where centuries old buildings, in a process of renovation, are used as bars and restaurants with abundant sidewalk cafes, theaters, and stores.

One of the most beautiful churches in the country is Capela Dorada, which was built between the XVIII and XIX centuries, and has a rich altar covered in gold and beautiful frescos on the ceilings. Estudios constatan que en los bosques tropicales de Bolivia las orquídeas constituyen un 10% del total de la flora (Orquídeas de Bolivia, 2000), constituyéndose en una flor importante dentro del ecosistema tropical. Hasta hoy se conocen más de 1400 especies de orquídeas en Bolivia.

Cuenta el mito que las orquídeas “habían sido puestas para que sean descubiertas y florecieran – y en - una luna más empezarían las lluvias (…) la eternidad nacía y moría todos los días y por eso no podía ser eterna”, recogido por Germán Coimbra Sanz. Libro Estrellas del amanecer. La orquídea ha estado presente en el imaginario chiquitano, convirtiéndose esta flor en un elemento importante en el ciclo ecológico y humano de la región.

Este vento está organizado por el Centro para la Participación y el Desarrollo Humano Sostenible (CEPAD), el Gobierno Municipal de Concepción y el Consejo Municipal de Turismo de Concepción, con el apoyo de diversas instituciones hacen posible que el festival tenga un nivel relevante en el ámbito nacional y se proyecte internacionalmente.

El festival nace, en el año 2001, a partir de la iniciativa de proteger un sitio natural donde nace una especie de orquídea endémica de Bolivia, la Cattleya Nobilior que crece en afloramientos rocosos al sur de Concepción, en la localidad de San Juan del Encanto a 40 km. El festival tiene el objetivo de preservar y proteger las orquídeas. Gracias a la iniciativa de CEPAD y el Gobierno Municipal de Concepción, en el marco de un proyecto de desarrollo local que busca sensibilizar a la población sobre el peligro de la extinción de la orquídea, además de crear un sistema de desarrollo productivo con la población. Para impulsar el proyecto, se declaró a Concepción “Santuario de las Orquídea Bolivianas”.

En estos años el festival se ha convertido en un evento importante y ha estado apuntado en las agendas de turistas nacionales e internacionales. Datos del año 2007 indican que más de 7000 turistas estuvieron para este evento y se generó un movimiento económico de más de 100 mil dólares.

pread out through the forest, tons of light brown fruits, slightly larger than a peanut and about the same consistency of other nuts(although much harder), lie scattered under leafy green trees that reach 15 meters in height, and cover the entire region of Chiquitania like a huge biological blanket. We are talking about the fruit of the “Chiquitano Almond” (Dipteryx Alata), a wild tree that is a nitrogen fixer, but which had no commercial value in the past for the local inhabitants, is now being utilized commercially for its seed, which is a source of hope for better days for 40,000 persons in 30 communities located in the northern and eastern parts of the department of Santa Cruz.

Y es que la posibilidad de generación de ingresos complementarios a partir de la recolección y venta de esta almendra, especialmente en el periodo crítico para las actividades agropecuarias, agosto y septiembre, despertó grandes expectativas entre los pobladores de la zona.

La empresa Minga, dependiente de la Mancomunidad de Municipios de la Chiquitania, compra al contado el kilo de primera a Bs. 15, la de segunda a Bs. 12 y la que está quebrada a Bs. 5.

Los comunarios recolectan el fruto y con guillotinas especiales, proporcionadas sin costo por la Fundación para la Conservación del Bosque Chiquitano (FCBC), la cortan para extraer su semilla, que luego es llevada hasta San Ignacio de Velasco, donde es seleccionada, almacenada, tostada y embolsada para su comercio en paquetes de 100 gramos.

Para Javier Coimbra, director del Proyecto de la Almendra Chiquitana, que es apoyado por la FCBC, se incentiva el aprovechamiento de la misma, porque la recolección es una actividad propia del modo de vida de los pobladores del lugar, además que con esta labor productiva se promueve la conservación del bosque por el valor comercial que representa y se evita chaqueos e incendios.

Hace dos años cuando comenzó el proyecto piloto de almendra en San Ignacio había poco interés de la gente, cuenta Ulysse Remillard, cooperante forestal de FCBC, porque no creían que un fruto que abundaba en la zona podía generarles ingresos económicos, por lo que se desarrolló intensas campañas de información mediante la radio para explicarles los réditos de esta actividad.

“La primera dificultad que se presentó fue que no había como guardar la semilla, que se fermentaba al poco tiempo de habérsela extraído de la pulpa. Este problema se fue superando al tostar la Almendra. Posteriormente introducimos las máquinas para partir el fruto y ahí se amplió la producción, pues en vez de sacar un kilo al día, se obtenía ocho”, comenta.

Hasta el momento, Según Remillard, se realizaron cerca de 50 talleres con los comunarios, para explicarles las “bondades” de esta almendra, los beneficios de su recolección y la extracción de su semilla, con guillotina. Se distribuyó unas 40 máquinas con las que se corta la pulpa, en los municipios de San Ignacio, Concepción y San Antonio de Lomerío.

Por otro lado especialistas en alimentos destacan que la almendra chiquitana tiene un valor nutricional excepcional, debido a que en comparación con otras nueces, tiene mayor contenido de

Nutritionists praise the nutritional value of the Chiquitana almond, which compared with other nuts, has a higher level of proteins (24%) and carbohydrates (30%) and a lower percentage of fat (20 %), which makes it a an important source of nutrition for athletes, growing children and lactating mothers.

From September to October, the fruit of the almond tree falls to the ground, although it can remain on the ground up to two years without being damaged, and can be collected during that period up to December, leaving the rest of the year available to the locals to plant and harvest their traditional crops of maize, yuca, rice, plantain, and other agricultural crops that make up the traditional subsistence farming economy of the Chiquitanos. proteínas (24 por ciento) y carbohidratos (30 por ciento) y menor proporción de grasas (20 por ciento), por lo que se constituye en un complemento nutricional importante, especialmente para deportistas, niños en crecimiento y madres lactantes.

De septiembre a octubre, cae el fruto del almendro, aunque puede conservarse dos años en tierra sin sufrir deterioro, pudiendo recolectarse el mismo en ese periodo, incluso hasta diciembre para dejar el resto del año libre para la siembra y cosecha del maíz, yuca, arroz, plátano y otros productos agrícolas que forman parte del cultivo de subsistencia de la pobladores de la Chiquitania. Hasta el mes pasado se recogió unas cinco toneladas del producto, suficiente cantidad para asegurar su venta en el mercado nacional desde noviembre de este año.

Según Zacarías Flores, funcionario de la Fundación Conservación del Bosque Chiquitano (FCBC), se estima que el potencial de producción de Almendras, vía recolección, es de por lo menos 100 toneladas, tomando en cuenta que existe en los municipios de San Miguel, San Rafael, San José, Roboré, San Matías, además de San Ignacio, Concepción y San Antonio de Lomerío.

Para lograr la producción de 200 toneladas por año de almendras, cantidad requerida para exportación a mercados de Italia, Japón, Perú, EEUU, Francia y España, se incentiva a los comunarios a incluir en sus siembras la plantación de árboles de almendro, pues ésta se adapta perfectamente a los sistemas silvopastoriles, además de mejorar el suelo. Se espera en cinco años obtener una producción suficiente como para enviar el producto a mercados del exterior del país. Por ahora se está sembrando y dado que el árbol requiere 4 annos para alcanzar su madurez y entrar en producción, se pueden incrementar los volúmenes de producción.

Con la pulpa se alimenta el ganado vacuno, porque madura en épocas en las que no hay pasto y sirve como sustituto de éste, aunque también lo consumen las personas, transformada en mermeladas y delicias horneadas.

Por sus características nutricionales y su excelente sabor, la almendra se presta muy bien para múltiples aplicaciones culinarias y repostería. Sus posibilidades van desde sopas, cremas, mayonesas, mantequillas, escabeches, guisos, hasta tortas, galletas, granolas, semillas tostadas y confitadas.

Con la almendra chiquitana se puede preparar todos los platos que se hacen con el maní, además que cocinadas tienen un sabor parecido al garbanzo y habas. En Brasil la pulpa sirve para la producción de un licor.

Pelar las almendras remojando algunos minutos en agua. Licuar y poner a cocer junto a la cebolla, el pimentón y el ajo picados.

Después de hervir cinco minutos añadir el arroz, la zanahoria y la papa. Cuando el arroz esté cocido, añadir el orégano y perejil picado y retirar del fuego. Opcionalmente se puede agregar carne de ave.

Peal the almonds and soak them in water for a few minutes. Chop them in a food processor and boil with onion, pepper, and garlic. After boiling five minutes, add the rice, carrot and potatoes. La Orquesta Sinfónica Juvenil de Santa Cruz de la Sierra (OSJ) se creó en julio de 2003, gracias a la iniciativa de la Asociación Pro Arte y Cultural APAC, bajo la dirección de Kenneth Lee Sarch y de Roland Schlieder, que actual mente la dirige; ella se ha convertido en una exitosa institución dedicada a la formación musical de niños y jóvenes.

La OSJ se creó con el fin de promover el desarrollo cultural y social urbano de la ciudad de Santa Cruz, por medio de un programa social de formación de jóvenes en instrumentos musicales, convocando a jóvenes de diferentes estratos de la sociedad. Busca, a mediano plazo, conformar un núcleo de músicos formados en Santa Cruz.

El Director de la orquesta es el maestro Roland Schlieder quien estudió guitarra clásica en Alemania y su formación coral y orquestal la realizó en Estados Unidos. Estas experiencias han tenido efectos positivos en la propuesta pedagógica y musical de la orquesta.

Sus interpretaciones fueron más allá de lo clásico. En su momento causó muchas expectativa la interpretación de “música pop” de Henry Manzini; otro éxito fue “Pop Hollywood”, con temas de las películas como Jurassic Park, Indiana Jones, Star Wars y The Lord of the Rings.

Hasta el momento ya se ha consolidado una cadena de formación musical iniciada por la OSJ, porque se cuenta ya con: la Orquesta de Cámara, la Orquesta Sinfónica Infantil, Big Band de Jazz y recientemente un Kinder Garden, ligado a este programa.

The Symphonic Youth Orchestra of Santa Cruz de la Sierra (OSJ) was established in July of 2003, thanks to the initiative of the Pro Art and Culture Association (APAC), under the direction of Kenneth Lee Sarch and Roland Schlieder, who is the current director; it has become a successful institution dedicated to the musical education of children and young adults.

The OSJ was created with the purpose of promoting cultural and social development of the city of Santa Cruz, through promoting a social program that trained young people to play musical instruments, bringing together young people from different levels of society. Due to the practices and the accumulated tension before performances, the young musicians have converted the orchestra into an interactive social space. Its short term goal is to create a group of locally grown musicians.

The conductor of the orchestra is Roland Schlieder, who studied classical guitar in Germany and choral and orchestral direction in the United States. His experience has had a positive pedagogical and musical effect on the orchestra.

Their performances have gone beyond the classics and they caused a sensation with their “pop music” concerts of themes by Henry Manzini and musical scores from such Hollywood blockbusters as Jurassic Park, Indiana Jones, Star Wars and Lord of the Rings.

The OSJ has developed into an association of musical training, because it has grown and now includes: the Chamber Orchestra, the Children’s Symphonic Orchestra, a Big Band and Jazz Orchestra and it has recently added a Kindergarten linked to the program.

The director also points out that these efforts will make it possible in the long run to create a philharmonic orchestra. “The goal is to consolidate the chain of orchestral formation and the APAC

next step will be to convert the chamber orchestra into professional musicians.

During these last few years we have used pedagogical techniques to develop musical qualities in the young people, for their personal and social development.

We are looking ahead, the pedagogical advances have been a success” says Roland Schlieder.

Music has given a new direction to the lives of the young people of the orchestra, because they have discovered responsibility and discipline which allows them to achieve their goals. The dedication of several young people has been rewarded with professional careers, some are currently studying classical music in the United States and Brazil.

Los festejos nupciales duraron cinco largos días, en honor a la dinastía del joven reino. Hubo desfiles de tiradores de la Guardia Nacional y de asociaciones de tiro, música, comida y bebida. Una enorme celebración a bombo y platillo que revitalizó la ciudad de Múnich.

La calle WirtsbudenHoy la Oktoberfest es con diferencia la fiesta popular más grande del mundo. Más de seis millones de visitantes de todas partes del planeta van cada año a la Wiesn. Con ello ha pasado de ser “la fiesta para toda Baviera” a ser una fiesta de carácter mundial, un lugar de encuentro universal. En 1986 se alcanzó la cifra, hasta hoy no superada, de siete millones de huéspedes. Sin embargo la Wiesn no es sólo un gran acontecimiento de rango internacional sino también la Fiesta para los ciudadanos de Munich.

Con todo ello la Oktoberfest, siempre abierta a nuevos progresos, ha consolidado las raíces de su tradición con la alta tecnología de las más modernas atracciones. Normalmente la Wiesn dura dieciséis días y acaba en domingo, pero en el año 2.000 duró excepcionalmente dieciocho al prolongarla dos días más en honor de la festividad del “Día de la Unificación Alemana (3 de octubre).

This celebration originated in Munich as a celebration of the wedding of Prince Ludwig of Bavaria and the Princess of Saxe-Hildburghausen on October 12th 1810, four years after the proclamation of the kingdom. The wedding festivities lasted five long days, in honor of the dynasty of the new kingdom. There were parades of the National Guard, horse races, shooting competitions, music, food and drink; a huge extravagant celebration that revitalized the city of Munich.

Nowadays the Oktoberfest is the largest popular celebration in the world. Over six million visitors from all over the world attend the Wiesn every year. It has transformed itself into the “the festival for all Bavaria” and has become an international event and a meeting place for the world. In 1986 it set a record attendance of seven million visitors.

However, the Wiesn is not only an international festival but a party for the citizens of Munich.

With all this tradition, Oktoberfest is always open to new innovations; it has combined traditions with high tech to make into one of the most modern attractions. Normally the Wiesn lasts sixteen days and ends on a Sunday, but in 2000 it was prolonged and lasted an exceptionally long period and lasted eighteen days to celebrate “German Unification Day” (October 3rd).

OTHER COUNTRIES The festival is repeated in many countries, wherever there is a large German community. Bavarian beer is displayed with honor around the world. Wherever a German community exists, or descendants of Germans, there is an Oktoberfest. This is especially true in the new world

In Argentina the most famous celebration is in Villa Belgrano, with 38 festivals already celebrated. It is known as the Argentine Oktoberfest and the Bavarian folklore and cuisine is always present.

La fiesta se repite en numerosos países, en cualquiera que exista una comunidad alemana. Las cervezas bávaras son paseadas con orgullo por todo el globo.

Y es que allá donde exista un colectivo de alemanes o descendientes de germanos, la fiesta de octubre está presente. Sobre todo en el nuevo mundo hacia donde se dirigieron miles y miles de centroeuropeos en los siglos XIX y XX. En Estados Unidos son varias las ciudades en las que se pueden disfrutar de la celebración. En Cincinnati encontramos una de las de más tradición. Hace 25 años que en esta ciudad comenzaron a reivindicar su herencia germana, reuniendo a más de medio millón de personas. En Tulsa (Oklahoma) se viene haciendo lo propio los últimos 23 años, al igual que en Freemont, cerca de Seattle. Música, salchichas destajo y por supuesto cerveza.

En el Sur del continente no se quedan atrás y también organizan la fiesta de sus antepasados. Sobre todo en Brasil, Argentina y Bolivia, países en los que los apellidos de origen germano son bastantes abundantes. Y es que en el Sur de Brasil se nota, y mucho, la influencia de alemanes. En la misma zona de Santa Cruz do Sul, organizada como homenajes a los colonos.

En la Argentina la más famosa es de la de Villa General Belgrano, con 38 ediciones a sus espaldas, se conoce como la Oktoberfest argentina, y en ella nunca falta la gastronomía y el folclore bávaro.

Según el endocrinólogo Douglas Villarroel, se trata de un lípido - una sustancia cerosa en la sangre - que se produce en el hígado, pero también se obtiene de las comidas que se ingiere. Es más, no es una entidad ajena al organismo, pues el cuerpo lo necesita para fabricar hormonas y construir las paredes de la célula. El problema surge cuando hay demasiado de la especie equivocada.

Aunque parezca paradójico, cierto grado de Colesterol es imprescindible para la vida porque es un componente importante de las membranas celulares, que ayuda al sistema nervioso central porque recubre las vainas de mielina, además de ser útil para el metabolismo del calcio en el organismo y precursor de las hormonas sexuales progesterona, los estrógenos, la testosterona, precursor de las hormonas corticoideas y de las sales biliares, explica Villarroel.

Existen dos tipos de colesterol: lipoproteína de baja densidad (LDL) o “Colesterol malo”, que puede contribuir a la acumulación de placas en las arterias; y la lipoproteína de alta densidad (HDL) o “colesterol bueno” que ayuda a eliminar la grasa de la sangre.

Cuando se genera “Colesterol malo” en cantidades excesivas se forma una placa en las paredes de las arterias compuestas de calcio, tejido fibroso y grasa, causando el endurecimiento de las mismas, lo que se conoce como arterosclerosis. Estas placas al aumentar de tamaño provocan que el flujo de sangre disminuya colocando a la persona en grave peligro, por lo que conocer el perfil lípido del organismo ayudará a predecir el factor de riesgo cardiovascular.

Por otro lado los ingredientes de la gastronomía boliviana si bien son conocidos por la delicia que causan al paladar, también llaman la atención por ser ricos en carbohidratos y grasas, debido a costumbres ancestrales y tradiciones familiares, lo que no ayuda a mantener un estado de salud óptimo.

DIETAS EFECTIVAS Las dietas para bajar colesterol se basan en los mismos principios que otras dietas, pero la elección y calidad de las materias grasas debe ser mucho más rigurosa, por lo que será necesario suprimir las de animales, y en vez de ellas usar aceite de oliva en la cocina, eliminar o limitar la yema de huevo, casquería, crustáceos, huevas de pescado y cacao. Además debe sustituirse la carne por el pescado al menos cuatro veces por semana, ya que los pescados grasos favorecen la disminución del LDL. Aumentar el consumo de fibra, legumbres secas y pan integral.

Los métodos de cocción serán al vapor, horno, fuego lento y microondas. Están totalmente prohibidas las frituras. La sal está autorizada con moderación y para realzar el sabor se pueden usar especias, ajo, limón, cebolla. Las legumbres en conserva o congeladas también pueden tomarse, pero analizando su etiqueta. Respecto a los productos light piense que están elaborados para reducir el peso y no el colesterol.

Evite comer carne de vaca, ternera, cerdo o cordero más de dos veces a la semana y reemplácela por pavo, el pollo y el pescado que tienen menor contenido en grasas. Se recomienda además que al cocinar carne, se empiece con una porción magra, para disminuir la grasa saturada al máximo, evitando freírla.

Se sugiere usar el asador, así la grasa no será absorbida por la carne. Ase a temperatura baja 120- 180ºC, pues la cocción lenta permite que la mayor parte de la grasa se desprenda de la carne. No añada harina ni pan rallado antes de asar o dorar carnes, puesto que cerraría la salida de grasa. El pavo y el pollo son una opción muy buena, pero según como se cocinen puede aumentar su contenido graso.

Del mismo modo es posible cocinar estupendas sopas, estofados y salsas con poca grasa saturada, removiendo la grasa del jugo de la carne. Para hacerlo hay que cocinar la carne un día antes, colocarla en el refrigerador con sus jugos toda la noche: la grasa quedará endurecida y en la superficie. Una vez endurecida se puede retirar la grasa y continuar con la elaboración del plato.

Limite en lo más posible su consumo de huevos (275 mg de colesterol en yema). Con paciencia y práctica conseguirá ganar la batalla al colesterol en la cocina y salvará a su corazón de las perniciosas grasas saturadas.

Do not bread meats before cooking, because this seals in the fat. Turkey and chicken are a good option, but it depends how they are cooked, so that they do not increase the fat content.

It is also possible to prepare wonderful soups, stews and sauces with very little saturated fat, by removing the grease produced by the meat. To do so, cook the meat one day before, place in the refrigerator with all its juices overnight: the fat will harden on the surface. Once it is hardened, you can remove the grease from the surface and continue with the preparation of the dish. Also limit your consumption of eggs to the minimum (275 mg of cholesterol per egg yolk).

With patience and practice you can win the battle against cholesterol in the kitchen and save your heart from the damages of saturated fats.

THE JUMBO HOTEL

Expedia, Inc. announced the results of its research study into business travel and travelers, with more than 2,400 respondents across France, Germany, the UK, the U.S. and Canada. Two out of three surveyed enjoy business trips and 85 percent state that traveling is a key reason why they like their current job. Priorities for business travelers are very different and the research identified six key demographic or psychographic groups or ‘tribes’ that unite corporate travelers globally.

The largest group, made up of 39 percent of those surveyed, is the ‘experience-hungry’ travelers. These people try to balance business travel with personal interests, scheduling in as much free time as possible so they can explore new destinations. In their briefcase, the experience-hungry traveler is most likely to carry a camera, a city map and, most importantly, a shopping list.

The ‘hyper-connected’ tribe comprises of 23 percent of corporate travelers. Although they don’t necessarily enjoy traveling for work, they like the opportunity to develop business networks. Not surprisingly this ‘hyper-connected’ tribe tends to carry a BlackBerry and a WiFi-ready laptop, and they are very focused on their business objectives.

The third largest group is the ‘cost-conscious’ travelers. Making up 14 percent of travelers, this group is most likely to work for a company with less than 50 employees and they make sure that value for money is the key priority in every business trip.

Un estudio acerca de gente que viaja por avión para realizar sus negocios, revela que dos de cada tres personas de este segmento, disfrutan su travesía aérea, mientras que el 85 por ciento usa este medio de transporte principalmente porque les agrada su trabajo actual, según Expedia Inc. La encuesta que tomó en cuenta a 2,400 viajeros por negocios en Francia, Alemania, Reino Unido, EE. UU. Y Canadá, compara grupos psicográficos y demográficos, definiendo seis grupos distintos a los que denominaron “tribus”.

El grupo más grande de los encuestados, con el 39 por ciento, son a los que se denominan “hambrientos por experiencias”, quiénes intentan balancear sus viajes de negocios con intereses personales, permitiéndose el máximo tiempo libre para poder explorar su destino. En sus maletines, es más probable que lleven una cámara fotográfica, un mapa, y lo más importante, una lista de compras.

La tribu de los “hiper-conectados” suma un 23 por ciento.

Se trata generalmente de personas casadas, que aunque no disfrutan de viajar, les agrada hacer conexiones de contactos. Generalmente portan un BlackBerry y tienen computadoras portátiles con Wi-Fi, y están bien enfocados en negocios. El tercer grupo más numeroso comprende a los viajeros “económicos”, quienes representan el 14 por ciento.

Generalmente trabajan para una empresa con menos de 50 empleados, enfocándose en costos, por lo que su principal criterio es minimizar gastos.

During the last few years the competition in the tourist market has led to the development of many original ideas which have captured the attention of the general public. One of these new ideas has led Oscar Dios of Stockholm to launch a hotel inside a Boeing Jumbo 747, the lagest plane in the world until the arrival of the 777 or the brand new A-380.

Normally, airplanes once they are taken out of service, wind up being dismantled or end up abandoned in a junkyard, forgotten by time. However, the businessman oscar Dios decided to find them a new use, and found it by transforming them into hotels, very close to the Stockholme airport. The establishment has 25 rooms. The ones at the front of the plane stand out, those located in the cockpit. Most rooms have share a bathroom, have airconditioning and heat, wireless wi-Fi internet and flat screen televisions. The strategy of Oscar Dios is to build a hotel that is not too expensive; for that reason several of the rooms are designed to be shared, like in a traditional hostal, comfortable but economical. En los últimos años, la competencia en el mercado turístico ha llevado a muchas personas a desarrollar ideas muy originales, que llaman la atención del público. Uno de esos ejemplos es el que ha llevado a cabo Oscar Díos en Estocolmo: un hotel montado en un avión Boeing Jumbo 747, uno de los más grandes hasta la salida de los 777 ó el flamante A-380.

Normalmente, los aviones, una vez que son sacados de servicio, terminan un desarmadero o un algún lugar donde quedan abandonados a merced del tiempo. Sin embargo, el empresario emprendedor Oscar Díos decidió buscarle un uso, y lo encontró al transformarlo en un hotel, muy cercano al aeropuerto de Estocolmo. El establecimiento cuenta con 25 habitaciones, de las cuales se destaca la que se encuentra en la parte delantera del avión, en la zona de la cabina de comando. La mayor parte de las habitaciones tienen baño compartido, aire acondicionado y calefacción, acceso inalámbrico a Internet vía Wi-Fi y televisores de pantalla plana. La estrategia de Oscar Díos ha sido construir un hotel que no fuera demasiado caro; por ello, varias de las habitaciones están pensadas para aquellos que quieran compartirlas, a la manera de un hostel (hostal) tradicional, cómodo pero de bajo costo.

For Andes ProCredit, people are the most important capital asset in the company. For this reason they have created their Training Center, with the purpose of training personnel inside the institution, fostering the development of middle and upper management potential.

With this center, they will attempt to implement an ordered strategy of training through the different programs and methods necessary to do an efficient job for all employees.

According to Rolando Garcia, Assistant Regional Manager for Human Resources, when hiring they place greater emphasis on the attitude of the applicants rather than on their resume, creating a culture that promotes training. “The objective of this program is to create a training system that allows over time to develop the basic skills to occupy a management position within the institution, and also foster the leadership abilities that are required of managers”, point out Garcia Oliva.

Cinthia Mariscal, in charge of the Training Center, explains that all employees selected for upper and middle management, who are not already involved in a training program at the ProCredit Academy, go through the training.

“The program consists of 396 hours in three modules per year during the three years of training. Each training module lasts a week, from Monday to Saturday” points out Mariscal.

There also exists a regional training program, whose purpose is to strengthen and certify the technical competence of employees in their different areas. Participants from all operational and commercial sections participate in this training which consists of 44 hours during a period of one week.

“Our main challenge is to implement our expansión plan on a national level, which means more branch offices, the generation of more jobs, more investment in technology and everyday more satisfied clients” explains Pablo Gonzalez, General Manager.

Para los Andes ProCredit la gente es el principal capital de concentración humana de una empresa, por ello ha creado los Centros de Formación, con el objetivo de capacitar el personal dentro de la institución, fortalecer y aportar el desarrollo de los Mandos Medios y Altos Potenciales. Con este Centro, se intenta implementar una estrategia ordenada de formación a través de diferentes programas y métodos necesarios para el desempeño eficaz y sostenido de los funcionarios.

Según Rolando García, Sub Gerente Regional de Recursos Humanos, para contratar el personal, la empresa prioriza la actitud de los profesionales más que el currículum, creando un valor cultural en la gente que direcciona la capacitación. “El objetivo de este programa es generar un sistema de formación que permita a través del tiempo desarrollar las habilidades básicas de un puesto de dirección en la Institución, además de buscar fomentar las habilidades de liderazgo que se desean evidenciar en los funcionarios”, señala García Oliva.

Para Cinthia Mariscal encargada del Centro de Formación, explica que participan todos los funcionarios seleccionados como Altos Potenciales y Mandos Medios, que no se encuentran incluidos en ningún programa en las Academias ProCredit en el año.

“La duración del programa es de 3 años con 396 horas y el sistema es modular a través de nueve módulos, es decir tres por año. Cada módulo tendrá un tiempo de duración de una semana de lunes a sábado”, apunta Mariscal.

De igual forma existe un programa de Formación regional, que tiene como finalidad fortalecer y certificar las competencias técnicas de los funcionarios en el desarrollo de sus funciones en diferentes puestos. Los participantes son todos los cargos operativos y comerciales, con una semana por grupo en 44 horas.

“Nuestro principal desafío es concretar nuestro plan de expansión a nivel nacional, que se traduce en más Agencias, en generación de más fuentes de trabajo, más inversión en tecnología y cada vez más clientes satisfechos con nuestro servicio”, explica Pablo González Gerente General.

Una recopilación de visiones, experiencias y encuentros entre Chiquitos y Extremadura, recopilada por el CEPAD, respecto a las políticas públicas culturales, mediante un recorrido de campo por las Misiones Jesuíticas, es lo que se encuentra en esta obra. La empatía entre el territorio boliviano y el español se entremezcló con la recíproca necesidad de convertir en sistema la experiencia alcanzada en la regulación del Patrimonio Histórico, Artístico y Cultural y las potencialidades que se expresan en los museos.

En su presentación Carlos Hugo Molina, presidente del CEPAD, destaca que una serie de actos sucesivos permiten reconocer el valor de este documento. Entre ellas, un encuentro de políticas públicas culturales del más alto nivel donde participaron el Viceministro de Culturas, un ex Presidente Constitucional, los equipos de la Prefectura de Santa Cruz y del Gobierno Municipal de la ciudad capital, técnicos y especialistas del escenario misional acompañados por la delegación más numerosa de extremeños expertos en la materia.

“Al estilo extremeño de cooperación al desarrollo, que ya existe y del que damos testimonio, se produjo un abordaje complejo del territorio y sus potencialidades. Se lo hizo como un acto de enamoramiento, paciente, consistente, sólido y entrañable. Varios años de maduración se recogen en estas páginas”, comenta en su introducción al libro, titulada Construyendo Juntos.

For the constitutional lawyer Jorge Asbun, the creation of a new political constitution leads to a necessary in depth examination of the document and the deep and complex political content with which it has been elaborated as well as the constitutional convention itself that formulated it. It is for this reason that Asbun presents this book which examines three constitutional issues: the constitutional convention, the autonomy referendums conducted by the states and the constitutional vinculation of these resolutions.

The country is currently experiencing a period of serious weakening of political institutions which this book examines from a legal standpoint. It is for this reason that this work tries to raise the democratic consciousness of citizens and for that reason examines these current issues from a deeply legal academic standpoint.

This book is important to the reader because it examines and explains the true legal constitutional state.

This book is a compendium of visions, experiences and meetings between Chiquitos and Extremadura (Spain) compiled by CEPAD, regarding public cultural policy, through a visit to the Jesuit Missions. The empathy between these two regions of Bolivia and Spain is mixed with a reciprocal need to convert the historical, cultural and artistic heritage of each, into a larger experience and maximize the potential of their museums.

Carlos Hugo Molina, President of CEPAD, points out in his essay that a series of successive acts that allow the recognition of the value of these documents. Among them are a meeting between the Assistant Minister of Culture, an ex-President, a team from the State Government of Santa Cruz, the municipal government of the capital city (Santa Cruz de la Sierra), technicians and specialists on the Jesuit Missions, and a large delegation from Extremadura experts on the subject.

“The Extremeño style of development cooperation, which already exists and which we share, covers a large complex territory and its potentials. It was done as an act of love, patience, consistently, solidly and with much affection.

Many years of maturation are gathered in these pages”, comments the editor in his introduction to the book titled “Building Together”.

Las reglas básicas para jugar al SuDoKu son muy sencillas: » El Sudoku se presenta normalmente como una tabla de 9×9, compuesta por cuadrantes de 3×3. » El objetivo es rellenar las celdas vacías con números del 1 al 9 haciendo que cada columna, fila y cuadrante contenga estos números sólo una vez, sin que se repitan. » Cada número de la solución debe aparecer sólo una vez en cada fila, columna y cuadrante, de manera que los números queden ‘solos’, como evoca el nombre del juego: SuDoku significa ‘Números solos’.

HOW DO YOU PLAY? The Basic rules to play SuDoKu are very simple: » Sudoku is played on a table of 9×9, componed of quadrants of 3×3. » The objective is to fill in the empty spaces with numbers from 1 to 9, making sure that every column, row, and quadrant only has the numbers once, with out repetition. » Every number must appear only once in a row, column, and quadrant, so that the numbers are “alone”, as the name of the game says: SuDoku means “numbers alone”.
