Firmly established as one of the crossover superstars of British music, the Hackney born and raised rapper builds on a career that has spawned two Top 3 albums and nine consecutive Top 40 singles – including #1 Read All About It and most recently #2 Lullaby. Marking the next chapter in his extraordinary story, his latest album Growing Up In Public bears Green’s trademark autobiographical approach and critically acclaimed lyrical style. He switches seamlessly from cheeky self-deprecating humour, witty braggadocio and satirical jabs, to more reflective, confessional moments with the finely tuned skill of a natural wordsmith throughout. Life’s been no fairy-tale for the 30-year-old Prof, born Stephen Manderson. He took a near fatal hit to the neck with a glass bottle in an unprovoked attack at a London nightclub – the scar now covered with a tattoo reading Lucky; he’s had his fair share of run-ins with the law and lost his Dad to suicide; but through releasing his anger in music, has had 500,000 album and 1.75million single sales in the UK alone.
Q. You’re soon to embark on your 2014 UK tour (November 28) – what should we expect from the shows? A lot of energy and brilliant music. Even if I may say so myself. I’ll be performing tracks from my new album, Growing Up In Public, and some of my older music too. I like to perform a mix, but I’ll be shaking up some of the old tunes to keep it fresh. Q. Your tour features dates in Manchester and Nottingham but not Sheffield. Any plans to play here next year? I love the steel city and I’d love to come play here but I have no plans just yet. The Lights Switch On was the first time I’d been back in Sheffield in a long time, but the crowd were big and loud, so hopefully I’ll come back with my own tour to entertain them again soon. Q. What’s next for you after the tour? I’m releasing my next single, Little Secrets, on December 7, then early next year I’ll be releasing another track. After that, I’ll be back on the festival circuit and continuing to make more music. I’ve already got some tracks done for the next album, I don’t plan to take a break this time even though my last break wasn’t through choice. Apart from that, I’m pretty open minded about where the year will take me. The last few years have proven you never know what’s going to happen next – hopefully it will be a good year for me.

Q. What should we expect from Little Secrets? It’s an acoustic-guitar driven soulful anthem featuring vocals from My Probz. It’s the second single release from my third studio album, following Lullaby. The video was shot LA.
Q. Welcome to Sheffield! How’s your experience been in the city? A bit chilly. But it’s ok, I was wrapped up in my Acne jacket. I was really excited to turn on Medowhall’s Christmas lights – I’d never done anything like that before.
Q What’s Christmas 2014 got in store for you? I’ve got an ideal Christmas planned this year. Millie’s family and my family are coming to my house to celebrate together. Me cooking is a first, but I’m really looking forward to it. Hopefully I won’t ruin Christmas dinner – I need to start practicing and learn how to cook one.
Q. What have been the highs and lows of the past year? I took a long break which I didn’t want to do but I had to due to a series of unfortunate events, and a fortunate one – I got married to Millie [heir to the Rowntree Mackintosh sweet manufacturing dynasty but better known as one of the cast members of E4 series Made in Chelsea]. That took up some time in my personal life but now I’m back!

Twin Atlantic Fresh off the success of their new album – Great Divide – Chic catches up with Twin Atlantic drummer, Craig Kneale. The band formed in 2007 and built a loyal fan-base in their hometown, Glasgow. Not afraid of a bit of elbow grease and grafting, the band toured relentlessly and it was not long before their hard work paid off. Their star rose considerably with supporting slots for Smashing Pumpkins, fellow Scots Biffy Clyro, Blink 182 and Kings of Leon. Great Divide was released in August and reached no.6 on the UK album charts. A month later they were awarded Independent Track of the Year for ‘Heart and Soul’ at the AIM Independent Music Awards. Twin Atlantic’s combination of powerful riffs and heartfelt lyrics have won them critical acclaim and a loyal fanbase. We find out more… Word s: Tom As k a r
For people who aren’t familiar with your music, how would you describe your sound? I’d say it’s like rock music with a pop slant. It’s definitely rock music but it’s quite accessible, it’s not mega heavy. It’s the sum of our influences because we’re into both rock and pop music. Who are your influences? Sam and I are in to straight heavy rock, Nirvana and Foo Fighters. Ross is into his dance music and Barry is more into singer/songwriter artists. As a band we end up listening to each other’s music. You’ve had a very busy summer, playing at Glastonbury, T in the Park, Reading and Leeds festival to name just a few. What was your highlight of the summer? T in the Park and Reading and Leeds were great fun but because of the album we’ve had a lot of other promotional work to do. Festivals are always fun but this summer was the best yet because we had pretty good slots and had been gone for so long. It was the first time we could see what sort of reaction our songs would get. As the summer went on the crowds were more familiar with the new ones and to have fans singing our songs back to us was brilliant, it made us feel like we’d produced something that was actually alright. There was a three year gap between 2011’s ‘Free’ and your new album, ‘Great Divide’, did you do anything differently that might have contributed to how successful ‘Great Divide’ has been? Having been together for so long – about seven years - we slip back in sync with each other very quickly. I don’t know if it’s an age thing, but
there’s only so long that you can make heavy rock music. We want to be great songwriters now, whereas before we were more interested in if a song sounded cool. We didn’t put a time limit on ourselves and our label were very supportive. They gave us time to make sure that the songs were the best they could be. You recorded some of the album in Los Angeles - how was this experience? We recorded 80% of the album at Rockfield Studios in Wales but we had written songs over the summer that we just didn’t have the time to record. When we listened back to the album, we felt like we could still improve on it and we really wanted an anthem too. So a couple of months after finishing in Wales we went to Topanga Canyon in LA and recorded the three singles ‘Heart & Soul’, ‘Brothers & Sisters’ and ‘Hold On’ - with Jacknife Lee. Gil Norton, who you worked with in Wales, is famous for working with bands like Pixies, Foo Fighters, Echo & the Bunnymen and Jimmy Eat World. Would it be fair to say that Norton helped with your alternative rock sound and Lee with your pop elements? I’d definitely say so. If you wanted to make a full on rock album you’d go with Gil every time, he knows what to do to get the best out of your music. Jacknife has worked with bands like Weezer and U2 and has some interesting techniques. He likes to record things out of tune, he makes really good pop music but in an unconventional way which suits us. Can you pinpoint a moment when you blew up or was it a gradual process? It was very gradual; for the first four or five years - 14 -
we did okay in Scotland and Glasgow in particular because we’re from there. We’d be playing in front of 1,000 people at home, but south of the border we’d have maybe 100 or so fans at our gigs. We had a single on our last album, ‘Free’, that played on Radio 1 and that’s when our tour started to sell out and we started to play in much bigger venues. If you’d have told us this three or four years ago, we’d have thought it was absolute nonsense. It’s kind of cool that radio still has that sort of effect. You’re based in Scotland when you’re not on the road – does this help to keep you grounded? Because we tour so much we don’t really need to be based anywhere but at the same time we all love Glasgow. Like Sheffield, it’s one of those cities where you can’t get carried away with yourself; it just doesn’t work that way there. It’s good for your music because it keeps you modest. We never want to get to the point where we make the wrong decisions because we’re getting ahead of ourselves. Have you had a chance to see much of Sheffield on your travels? Personally I’m a keen runner and I’m not great with steep hills, so Sheffield was a bit of a struggle in that respect! When we’re touring we don’t often get days off but a few years ago we played Tramlines and the atmosphere was amazing. Now that you’re a successful band in your own right, are there any up and coming artists that you’d like to have touring with you or that you could recommend to our readers? Catfish and the Bottlemen are a band who have been around a little while but are just starting to blow up. I’ve not been as excited by a new band as these guys for a long time. They remind me of The Strokes with how young and energetic they sound.

Opening her set at the O2 Academy, Katy B and her four female dancers set the pace for the night with infectiously upbeat and bass-heavy ‘Hot Like Fire’ arresting each member of the vastly diverse crowd’s attention. Katy’s strong presence – alongside the powerful aesthetics of the stage and lighting – is one of refreshing qualities. She’s sultry and fun, presenting herself as a friend you could definitely party or cry alongside, cleverly rejecting any opportunity to be overly sexualised and remaining unapologetically genuine. With a cast of only six This Is My Family perfectly captures the universally relatable family dynamic making it one of the most relatable theatre experiences I have had in years. Centred on the play’s protagonist Nicky - A 13 year old school girl- the musical comes as a heart-warming celebration of present - day family life. Nicky applies to win a family holiday through a competition asking for a detailed and realistic description of her family. Nicky’s comedically frank and endearingly naïve account of her own relatives wins over the hearts of both the audience and the competition judges. However, it is the exposure of the household dynamics which truly captivate the viewer above the play’s refreshingly simplistic plotline. Through Nicky’s mother; father; brother; aunt; and gran each member of the audience are able to identify with each character to a striking degree. The musical resonates so strongly as it presents the ups, downs and complexities of a person’s most personal relationships - their family - with an overall life affirming tone. And even more so, Nicky’s attempts to constantly please each member and uphold peaceful relationships confirms the family dynamic as a generally strained, but overall loving and crucial one. When I was seven or eight, my parents bought me the most perfect pink bike. I’d been asking for it for months but they continued to tell me they couldn’t afford one, so on Christmas morning I was so overwhelmed. I think that memory will stay with me forever.

Will you be making any New Year’s Resolutions? I need to stop eating fast food. What has been the most memorable moment of 2014? I opened the main stage at Wireless Festival. It was incredible – so much fun. How would you describe your music in three words? Versatile, fun and thought-provoking. If you weren’t singing, what would you be doing? Singing has been my lifelong ambition and it’s what I enjoy doing so I couldn’t imagine doing anything else. I did once work as a care worker though, looking after a lady with Alzheimer’s. She had me in stitches all the time – she was incredible.

How important has YouTube and social media been to your success? So important. It’s thanks to YouTube that I got spotted. Roc Nation – the label founded by Jay-Z – saw my videos online and signed me. I was lucky enough to meet Jay-Z in person recently and he introduced me to his wife Beyoncé – it was one of the best moments of my life. She is my idol. Who inspires you musically? John Legend and Whitney Houston are my heroes. Who would be your ideal dinner date guests? Alan Carr – he’s hilarious, and Darren Brown – he fascinates me. What’s the best thing about your job? Performing. There’s no feeling like stepping out on stage. You feel so powerful. What’s next for you? Making more music. I’m hoping to release my album early next year. I’ve spent so long doing covers but now I want my own album out for people to hear the real me.

a portal to the past In our modern world of Kindles, iPads and e-readers we have come to expect instant access to a world of knowledge. As a consumer of technology, I’m as guilty as anyone else of indulging my impatient side with digital books, but the nostalgic side of me longs for the erstwhile days of antiquated pages and the smell of leather bound books. Sheffield’s independent bookshop “Porter Books” offers the book-lovers amongst us the chance to buy and sell second-hand books, giving us a virtual portal to the past.

In reading a second-hand book we hold a little piece of history in our hands - not just of the characters, but of previous owners and their stories. They open us up to a world of possibility and belonging - we are each a vital part of a book’s journey. As long as people continue to find magic within their pages, it seems the legacy of the second-hand bookshop is here to stay. By Jessica Beasley
Porter Book Shop, located on Sharrow Vale Road, was born in Sheffield in the late 1970s. Little is known about its history, but the mystery surrounding it only adds to its allure. Current owner Brian took over the bookshop in 2005 and has worked to preserve its magic - retaining its traditions whilst making it appealing to a diverse range of people - children, pensioners, artists and dreamers have all walked through its door. Like any memorable second-hand bookshop, books are piled, Jenga-like, - creating a labyrinth of literature in which we can lose ourselves. The atmosphere is relaxed and tranquil, perfect for leafing through a book or two on a rainy afternoon and escaping from the chaos of the outside world. The survival of second-hand book shops like Porter, in spite of the growth in digital printing, shows us that their popularity is anything but waning. But what is it precisely that keeps our interest in second-hand book shops alive? Perhaps it is the

rom his Grandma’s kitchen to the national supermarkets, SuperJam founder Fraser Doherty (25) stole the show when he shared his fruity adventures with the hundreds of budding entrepreneurs at Sheffield Made Festival 2014...
How did your journey begin? I’ve always been entrepreneurial – I once set up a chicken farm in the back garden of my home in Scotland and I kept the eggs warm on top of my Sky TV box. I then learned my Grandma’s jam recipe aged 14 and I started selling it to family and friends. The word spread and at age 15, I got my picture in the local paper; I was being recognised as ‘Jam Boy’. I started selling my jam at farmers markets across Edinburgh – Up to 1,000 jars a week. I’d taken over my parent’s kitchen. How did you make the move from farmer’s markets to supermarkets? I borrowed my Dad’s suit and naively went to pitch to Waitrose. It was like The X Factor in a supermarket. They told me I needed to set up a factory, organise production and have labels made. I wasn’t prepared for this. I came up with a comic book theme to fit with the SuperJam brand name and despite being sceptical of a 17 year old child, I managed to convince a manufacturer to work with me. I went back to Waitrose but they didn’t like the labels or the flavours. I did my market research the next time. I got in touch with Innocent HQ because I loved their branding and company ethos. They advised me to design a product to appeal to parents not children. It worked. I launched my 100 per cent fruit and sugar free jam in Waitrose eight years ago. You became the youngest ever supplier to Waitrose and have won more than 20 awards for SuperJam. Did you ever expect the brand to become such a success? I was overwhelmed with the initial response. 1,500 jars sold in the first 24 hours at Waitrose. We sold more jam in one day than their average jam sales for a month. I went on a ‘rock n roll’ jam tour of supermarkets – setting up a stand in Tesco, Morrison’s and Asda. I got a lot of media coverage. SuperJam now supplies more than 2,000 supermarkets around the world including Australia, Russia, Denmark, Finland and Ireland. What have been your proudest moments? SuperJam is exhibited in the National Museum of Scotland as an ‘Iconic Scottish Brand’, alongside Irn Bru, Tunnock’s and
Baxters. I appeared on Korean TV where a small Korean child played me – which wasn’t very fitting to the story but I was still honoured to be on TV there. I teamed up with The Sun newspaper to give every reader a free jar. I shared the front page of the paper with Susan Boyle. That was a proud moment. And I was invited to dinner with Gordon Brown who commended me for what I’d achieved. What’s next for you? I dedicate my time to sister projects now. The company invests in running ‘SuperJam Tea Parties’ for elderly people who live alone, in care homes or in sheltered housing. SuperJam has hosted over 125 events across the UK, with live music, dancing and, of course, scones and SuperJam. Up to 600 guests attend each of these events and they are growing in popularity every month. I also launched The SuperJam Cookbook to share my jam-making secrets with the world; and SuperBusiness – a book about my story and what I’ve learned. From competing in Don’t Flop and Lord Of The Mics VI, to featuring on BBC Radio 1Xtra and Rinse FM, Sheffield’s 23 year old AK (Kieren Adshead) has had a busy year in grime. In between working on his solo mixtape (with exclusive features from Jammer, Dialect and Predz) and a collective ScumFam mixtape, AK takes a few minutes to speak to Chic about his rise in the industry and how UK grime is influencing artists internationally. For those who don’t know, how would you describe your style as an MC? Clever, cheeky & skippy. When did you first start writing and how did you get into music? I first started writing lyrics when I was about 14 or 15 but I always had a love for music. My mum was a big reggae and R&B fan, whilst my dad was into rock & roll and indie music. By the time I was old enough to really appreciate music we were in the era of garage and both my parents loved it. I loved it too and wanted to be involved that’s when grime was born and I started to take part in music. You recently battled Villain in Lord Of The Mics VI - tell us about it? Lord Of The Mics was a great experience! Pressure, nerves, excitement and adrenalin all mixed into one. I had a tough opponent but I was confident that I could perform and make the people supporting me proud. A lot of opportunities have grown because of Lord of the Mics and for that I thank Jammer, Ratty, Cat, all of the Lord of the Mics family and everyone at Ten Letters PR. How was your experience at Don’t Flop? How did it compare to Lord Of The Mics and which did you prefer? Doing Don’t Flop was a different experience to Lord Of The Mics. For Lord Of The Mics I was in a little basement with around ten people, big hot bright lights and a huge amount of pressure. At Don’t Flop I clashed XP live on stage infront of an audience, which is different kind of pressure. Because Don’t Flop was in front of a live audience I knew I had to prepare my lyrics for the moment of the clash. I wanted to catch reactions right there and then. Lord Of The Mics is filmed and saved untill release of the DVD, so I knew I could be a bit more technical and clever with my lyrics because people would watch and study the clash more. The Don’t Flop audience will go on who grabbed their attention at the time. I preferred Lord Of The Mics to be honest, I could be myself and more comfortable. What do you think to Don’t Flop now introducing grime clashes instead of keeping their token a cappella battles? I think it’s a great idea. Don’t Flop have got an amazing following and have had that for some
time. Bringing grime clashes into Don’t Flop will make that following grow; it will benefit the UK music scene as a whole too. Do you have any future plans with Sheffield grime collective ScumFam? ScumFam are always working, whether that’s as a collective or as individuals. So when people think we are quiet we know it’s time to come together and give you all something. We have all been working on individual projects or paths as of recent. I’ve just done Lord Of The Mics and Don’t Flop; Kannan won Prize Fighter and the royal rumble clashing competition on DJ Big Mikee’s show on Silk City FM radio (Birmingham); Tez Kidd is working on a project called Dirty Wrks 2; we re-released K Dot’s mixtape “Friday the 13th” with bonus tracks, and we’ve also featured on radio stations such as BBC Radio 1xtra and Rinse FM. There’s a lot out there and more to come too, we are always active. What’s your opinion on the Sheffield music scene at the moment? The music scene in Sheffield is going well. ScumFam have broken into the grime scene over the past two or three years, earning that respect and acknowledgement that a lot of MCs from the city have been searching for. More and more artists in Sheffield are taking music seriously, which is always a good sign. The nightlife has also picked up again with the big wave of house music being very popular up north and it’s worked really well. Dances and raves are calmer and more enjoyable, meaning better chances for local grime artists to get bookings. Promoters can let their guard down - they don’t even need it anyway - book us! Haha. What about the grime scene in general? The grime scene right now is bigger than it’s ever been. I’ve been up and down the UK and grime is loved everywhere. It’s taken more seriously by the people involved; it’s something we can be proud of and make a living from. We’ve seen people come from the grime scene like Dizzee Rascal, Wiley and Kano, and make big names for themselves internationally. We’ve also seen how UK grime has influenced music internationally, with the likes of P Diddy working with Skepta and Tre Mission from Canada doing Lord of the Mics. Even Drake talks about how his music and flow is influenced by Sneakbo. So to see grime be created in East London and then go international is major progress.

What are your plans for the future? I’ve got a new single coming out early 2015 on iTunes called “I Like Your Wife”, produced by Heavytrackerz. I’ve also got a free mixtape called “Throwaways” dropping on 30th November, featuring a few of the greats from the grime scene. Another ScumFam mixtape is coming very soon too! Any particular producers you would like to work with? There’s too many to mention I’d like to work with, but I’m working some good ones right now too like DJ Q , Toddla T, Darx, Ethan Ryan, Heavytrackerz and Riddla.

Christmas Wrapped Up Early South Yorkshire shoppers enjoyed getting Christmas Wrapped Up Early at Meadowhall for an exclusive all-day shopping extravaganza. Thousands of eager shoppers enjoyed hundreds of exclusive offers and discounts as well as festive activities across the malls including a meet and greet with the Penguins of Madagascar and a magical family photo experience in a giant snow globe. The event also saw crowds gather in seasonal sweaters for Shopping Centre’s charity Jumperthon. Shoppers got into the festive spirit by attempting to break the Guinness World Record for the largest gathering of people wearing Christmas jumpers in one place at Meadowhall Shopping Centre. Reality television star and business woman Amy Childs led huge crowds of shoppers in the Christmas Jumper-thon as they attempted the break the record whilst raising funds for the Centre’s Charity of The Year St Luke’s Hospice. Amy Childs, who rose to fame on ITV hit show The Only Way Is Essex, was in-centre showcasing her latest collection and was delighted the get involved in the Jumper-thon. She said: “It was an amazing experience to join hundreds of shoppers to break the World Record for the most people wearing Christmas jumpers. “We all put on our silliest seasonal jumpers in order smash the world record, and raise funds and awareness for a wonderful local charity, St Luke’s Hospice – it was so much fun!” Meadowhall Centre Director Darren Pearce said: “Thank you to all the hundreds of shoppers who made the effort and got into the festive spirit supporting our Charity of The Year St Luke’s Hospice. “Unfortunately we were just shy of the amount required but we’re looking to attempt it again next year, so stay tuned.”

NLP has a “hypnotic” effect on the client, without actually sending them into a state of hypnosis. It may seem a less intimidating treatment for the beginner, as most of the treatment simply involves conversation - gently guiding the client to uncover the roots of their anxieties, phobias and pains of the past. By using ‘key words’ and body language to stimulate brain receptors, this subtle treatment can be incredibly powerful. An equally important part of the treatment is helping the customer to tap into how they want to feel - as our imaginations are incredibly sensitive, merely simulating positive, happy and confident thoughts is often enough to trigger clients into adopting a calmer and happier state of mind. Linked to NLP is Guided-Daydreaming, in which a member of the clinic will get the client into a relaxed state of mind, which makes them more

open to following suggestions. This also makes it easier to talk to the “unconscious” part of the mind - the area where we form many of our bad habits. When experiencing such a treatment the client will be induced into a hypnogogic state - a dream-like sensation of being between sleep and consciousness. It could be described as the feeling you have when you drive from your home to the local shop and have no recollection of how you got there; or the far-away feeling of being lost in a good book or a restful sleep. The idea is that time literally ‘stands still’ - creating the ideal environment for tackling anxieties and phobias. Conquering our fears requires us to temporarily “switch off” our thoughts and feelings, so our brains can begin to tackle our worst anxieties without being interrupted by our irrationality or over-thinking. There are a myriad of phobias out there, everything from fear of public speaking to the slightly more unusual xanthophobia (fear of the colour yellow!) Hypnotherapy Clinic has seen it all, but they claim that practically any phobia can be cured. None of us are born with phobias. We all begin as blank canvases that soak up the world around us. Phobias - like anxieties - are learnt responses to situations and so they can be unlearnt. Ross ‘The Boss’ Burkinshaw

2014 has been a great year for Ross ‘The Boss’ Burkinshaw. Under the tutelage of former European champion, Ryan Rhodes, and manager Dennis Hobson, Burkinshaw has claimed the Commonwealth Bantamweight belt in an instant classic at the Doncaster Dome. With his career on the up once more, Chic reports on the changing fortunes of Sheffield’s newest boxing champion. After suffering a ligament tear in January of 2011, Burkinshaw’s career was put on hold. It was a stroke of luck in September that gave The Boss the chance he so desperately wanted to return to the heights he seemed certain to reach before the injury slowed him down. The phrase ‘one man’s misfortune is another man’s gain’ applies here, as title holder Martin Ward was forced to withdraw from his scheduled clash with Jason Cunningham due to a chest infection. Chances like this don’t come around too often in sports, and so in stepped Burkinshaw, seizing on a golden opportunity to claim the now vacated belt. It was by no means easy – Burkinshaw was given only three days notice to prepare himself mentally for what might well have been the biggest fight in his twenty years of boxing. Speaking before the fight, Burkinshaw said “This opportunity has come at the best time for me. I’ve never felt better. I’m in the best shape of my life and I train like every fight is a world title.” The Boss’ professional approach to training was key to his success in the ring; the bout went the full twelve rounds and it was left for the judges to decide who would be the thirty-sixth Commonwealth Bantamweight champion. The slug-fest left both athletes battered and bruised, but of the two it was Burkinshaw and his camp who celebrated the final bell with the most conviction. It was a close-run thing in the end with Phil Edwards ruling 116-112 and Michael Alexander 116-113 in Burkinshaw’s favour, while John King scored it 115-113 for Cunningham. Now that The Boss is on top, the challengers will be coming thick and fast. Martin Ward is the first contender – his chivalry in vacating the title earning him an automatic shot at the new champ. Burkinshaw won’t have any qualms with that, for now his focus will be on making up for lost time and trying to get better every day. WORDS: TOM A SKER

That’s exactly what Frankie Snobel thought when she came up with the idea two years ago. “I was bored of my job in journalism” Canadian born Frankie told us. “I had this idea I felt so inspired to do, but I didn’t know how to make my dream a reality. “That was until I saw an advertisement for School for Creative Start-Ups. “The course mentor – Dragon’s Den star Doug Richard – was holding a talk to encourage budding entrepreneurs to get involved so I went along. I was so inspired, I decided to go for it and apply even though I had no existing business. To my surprise, I was accepted. “The programme advanced me so quickly and in less than nine months, Tipplesworth was born.” Tipplesworth cocktail cases bring the art of mixology into the homes of discerning drinkers. Running a business is tough – it’s easy to get excited and passionate but keeping a focus on finances is key. Don’t assume you’ll be a millionaire overnight, but work hard and the profit will come in time. “Having a strong support network is key – School for Start-ups have given me discipline, confidence and help securing financial support. November often brings the first severe frosts of the new winter season, and as the warm glow of autumn cools, one really appreciates the small pockets of colour the garden provides. The importance of evergreen plants becomes increasingly obvious as the seasons progress, especially those specimens with well-defined structures. Shrubs such as Box (Buxus) clipped into tall slender cones or Yew (Taxus) in perfectly trimmed spheres are easily overlooked in summer when the colourful perennials are in full flower, but at this time of the year, when covered in frost, are a valuable addition to the garden. Fragrance adds a fourth dimension to the winter garden, and now is the perfect time to plant root balled shrubs such as the wonderfully scented Hamamellis or the evergreen Sarcocca confusa which will provide colour and scent as we move deeper into winter. This month is also the traditional time of year to plant roses and hedging, and both establish well as bare root plants. Supplied without soil, therefore much cheaper than containerised specimens, you should ensure they are freshly lifted from the field and not dry. In Woody Allen’s Midnight In Paris, Owen Wilson’s character finds himself transported to 1920s Paris, soaking up the romance, beauty and nostalgia of a bygone age. What many may not realise is that a similar opportunity for transportation is available to modern city-dwellers in the form of Sheffield’s Antique Quarter. Combining the eclectic and the familiar, the quarter offers something for all tastes - from stunning traditional antiques, chic 1960s minimalism to good old-fashioned grub. Boasting six antique centres and 20 independent shops, the area, which includes Abbeydale and Bradfield road, as well as parts of London and Queen’s Road, is a vista of delights. Antique centres include Heeley Bank’s Antique Centre on Queen’s Road, an atmospheric grade II listed building, that sells a combination of vintage, collectables and artwork. If you amble down Abbeydale Road you will also find the Abbeydale Picture House, a building that has undergone quite a history of change in its time. A former cinema, the building is now host to events such as the Antique Quarters Vintage Market and the new Pedlar’s Corner Carboot Sales. There are plans to continue renovations, with the aim of turning the Picture House into a hub for artistic and community events in Sheffield.

The Vintage Christmas Market is set to take place on Sunday 7th December. You’ll be able to experience the taste of Christmas with mulled cider and roasted chestnuts; soak up a little festive glamour with a live fashion show that traverses the eras and enjoy the magic of Christmas a little early with a visit to Santa’s Grotto with the little ones. As the night’s draw in on us, what better excuse to venture outside than to head over to Sheffield’s Antique Quarter and indulge in the fun and festivities that make Sheffield such a unique place to live.

A White Christmas at Marco’s Christmas came early for team Chic, as they visited Marco’s New York Italian Diner to sample their festive menu… Work party? Celebrating the festivities with friends? Family function? Whatever the occasion, Marco’s Sheffield have the menu. We visited at lunch and indulged in the three-course set menu (£20pp) with the choice of three starters, three mains and three desserts. For ‘primi’, as said by our Italian waiter, Antonio, you can choose from a Tuscan Ribbolita Soup, Classic Bruschetta or Melon and Prosaciutto Ham. I opted for the bruschetta while my dining partner decided on the melon dish. Both arrived artistically arranged on the plate – just the right portion sizes to tempt your taste buds ahead of your main course. Suitable for vegetarians, the Classic Brushetta came topped with fresh tomato, basil and garlic. The melon was served in slices, covered with thin tasty rashes of ham. For main course, choose from Roasted Scottish Salmon with a Pesto Crumb Crust, Traditional Turkey Escalope or Butternut Squash and Gorgonzola Risotto. The traditional turkey dinner was served with a sage and chestnut stuffing and balsamic and onion gravy plus a plentiful portion of rosemary and garlic roasties and a side of seasonal vegetables. More than enough for one diner. For dessert – once you’ve loosened your belt – choose between Christmas Pudding, New York Cheesecake with Mulled Wine Fruits or Chocolate Truffle Mousse. The traditional half circle of Christmas Pudding comes with an individual jug of amaretto cream while the chocolate truffle mousse is a wedge of chocolate heaven – a similar consistency to a gooey brownie. Priced at £20pp, considering the portion sizes, the luxury venue and quality of food served, we were more than impressed with the value. Fancy visiting in the evening? A Celebration of Truffles at Inox Dine
“Yorkshire is in fact a great place to grow truffles because of the nature of the soil and the climate,” said Dr Thomas. “Indeed, a summer truffle grown in Sheffield has a better flavour than those cultivated in France and Italy. It’s set to become a true Yorkshire delicacy. “Truffles have a romantic appeal because of the unique flavour. They are traditionally very hard to find – often done with the aid of trained truffle sniffing dogs – and their short shelf life adds to their allure. Demand is increasing and although the strange, heady truffle flavour is very unique, once you’ve tasted fresh truffles, you’re hooked.” Joe Berry, Head Chef at Inox Dine said: “It’s an exciting opportunity as a chef to use truffles in your cooking. It’s a bit like cutting into a diamond and because of the strong and unusual flavour, there’s also the challenge of pairing it with foods correctly to make sure that it shines in the dish. You have to have a real working knowledge of how to use the ingredient. I think the fact that they are so expensive and the quirkiness and mystery of foraging for truffles with pigs and dogs, all adds to the fascination. People are also interested in unusual flavours so we were delighted to showcase this gem of an ingredient.”
A Yorkshire chef, in collaboration with a worldwide expert on the cultivation of truffles, showcased the world’s most precious ingredient at a special ‘Celebration of Truffles’ event at Inox Dine, the restaurant on level 5 of the Students’ Union Building at The University of Sheffield. A unique ‘truffle trio’ of dishes was served to over 100 truffle fans as diners gathered to experience the rich taste of this exotic and delicious delicacy. The fresh truffles, worth anything from £30 to £300 per kilo, are cultivated in the UK, including a plantation in Sheffield. Dr Paul Thomas, a former doctoral student at the University, has created a method to inoculate trees with truffle spores and his company, Mycorrhizal Systems Ltd (MSL), is now the largest grower of cultivated truffles in the world. Inox Dine, which has its own truffle trees donated by MSL, teamed up with Dr Thomas to host the event. It’s the restaurant’s first collaboration with Dr Paul Thomas, who gained his PhD in Plant Sciences from The University of Sheffield.

Top up with anti-freeze Make sure that your radiator doesn’t stall by filling it with some antifreeze. Most petrol stations will stock it and it’s handy to have in the car during the winter months.
Drive safely The most important thing that you can control on the road is your driving. Keep to the speed limits and use your judgment on how best to drive during the winter months.
Pump up your tyres At this time of year, rain snow and ice can make the roads a treacherous place for motorists. Pumping up your tyres to the correct inflation level helps to lower the risks of skidding on icy conditions, and better still; this can also help to improve your motor’s fuel efficiency.
Get breakdown cover Don’t get left on the cold shoulder. During the winter months hundreds of motorists across the UK break down every day, which will no doubt put a strain on the emergency break down services. Ensure that you’ll be looked after by investing in breakdown cover and keep the details with you at all times.
Brake pads and discs Make sure that your brakes are ready for the winter by getting them checked out by your mechanic. Icy and wet roads can lead to braking distances being reduced; therefore a healthy set of brake pads is vital for the winter months. If you’re not sure about something take it to a garage and have a qualified mechanic look at it. To add to this, it may be wise to bring your car in for a service to get everything double checked before the weather gets too bad.
Battery Make sure that your car battery is charged and doesn’t need changing. Colder weather conditions put a greater strain on your car’s battery, so ensure you don’t get left stranded at the side of the road by getting yours checked at a reputable garage – especially before setting out on a long journey.
Don’t put boiling water on your windscreen It may be tempting if your car windscreen is iced up to put boiling water on the windscreen, straight from the kettle. However, the dramatic difference in temperatures can cause the glass to crack and will leave you with a hefty repair bill.

The winners of the fourth annual English Curry Awards were announced at a swanky affair at the AJ Bell Stadium, Manchester in October. Over 10,000 nominations came in from all across England and the race to be crowned at this year’s awards ceremony was an extremely tight contest. Akbar’s, who have a chain of 13 restaurants across the north of England including Sheffield and Leeds, were awarded the top titles of Restaurant of The Year and Best of Manchester. Owner Shabir Hussain said: “We are thrilled to announce this is the second year running Akbar’s has withheld the title of Restaurant of The Year. We were also overwhelmed to receive the Best of Manchester award – just to be nominated was enough recognition for
us, but to take the title was an honour.” Noim Ullah, head chef at Cutler’s Spice of Sheffield also took the title of Chef of the Year for the North of England. He said: “This is the third year running our family-run restaurant has retained the Chef of the Year title. I won in 2012, then my wife, Asharfun Nessa Begun won the award last year.” The glam event was hosted by Sunny and Shay Grewal, the couple from the Bafta nominated Channel 4’s ‘The Family’, who currently present a show on BBC Radio London 94.9fm. As well as recognising the curry industry in all its facets, the event also raised just over £1500 for the official charity partners The Well Foundation. Yasmin Mahmood, Operations Director of event organisers Oceanic Consulting commented: “It was a fantastic evening and I would like to thank everyone for attending and a big thank you to our sponsors. Congratulations to all our winner and finalists, and I hope to see you next year!”

Yotam Ottolenghi Words : Jessica F ogarty
Yotam Ottolenghi’s path to the world of cooking and baking has been anything but straightforward. Having completed a Master’s degree in philosophy and literature whilst working on the news desk of an Israeli daily, he made a radical shift on coming to London in 1997. He started as an assistant pastry chef at the Capital and then worked at Kensington Place, Launceston Place, Maison Blanc and Baker and Spice, before starting his own eponymous group of restaurants/food shops, with branches in Notting Hill, Islington, Belgravia and Kensington. Chic meets Yotam Ottolenghi when he stops off in Sheffield as part of the Off the Shelf Festival of Words… When did you first discover an interest in food? I grew up in the Middle East – in Jerusalem – so I never had many ingredients to work with; mainly Arabic lentils, vegetables and herbs. But through travel and research my knowledge of food began to develop – I like to play around with food. My mum is German and my Dad is Italian so I take influences from both of them too. What is your favourite food to work with? The world of the vegetable is so varied. I love working with unloved vegetables – the sweet potato, turnip and sprouts. I always say – it’s not the vegetables fault they don’t taste good – it’s the person cooking that gives them a bad name – over-boiling and under-seasoning. Tell us about your new cookbook, Plenty More? It’s all about giving vegetables the love and attention they deserve. People don’t have enough respect for vegetables. When dining in a restaurant, most will send their steak back if it’s overcooked or not to their liking but they won’t send back cauliflower. My book focuses on the cooking techniques of vegetables. Take cauliflower as an example – you could grate it and serve it raw in a salad; chargrill it for a smoky side dish; deep-fry it so it’s got a new texture – crunchy on the outside and soft on the inside; or even put it in a cake. It’s a mix of sweet and savoury recipes focusing on flavour and texture.
What has the response been to your book? Really good. Although I have been tormented by the amount of ingredients I include in my recipes. Some feature up to 18 ingredients and up to eight varieties of spices from the Mediterranean to Asia. Although complex, the results are worth it. There are some more simple recipes for beginners though and ingredients can be substituted if you don’t have an exact match in your cupboard. Do you cook at home? Usually I don’t eat on an evening. I nibble so much throughout the day, testing different dishes, I’m too full to stomach a meal. I just drink wine and watch TV instead. I eat out at friends’ houses fairly often though – in fact one of them cooked a recipe from my new cookbook at a dinner party recently. It was delicious if I may say so myself. Have you ever had a kitchen disaster when trying out a new dish? Oh yes. Last month I appeared on a cookery show and they asked me to create one dish - so I decided on a Quinoa cake. It disintegrated in the pan and there was nothing I could do as I had the exact measurements provided for me and no extra ingredients. Distaster! I play around with food a lot too so I do of course have some failures. I once cooked a whole salmon for a 1970s party and covered the entire - 29 -
fish in tiny slices of cucumber held together with gelatine. It took me hours to make and it tasted awful. All food was awful in the 1970s though. How did becoming a food columnist for The Guardian come about? The newspaper’s offices are based near to where I work so they came in one day and asked me if I was interested in becoming a contributor. I had a struggle writing my column at first. It’s a lot of pressure writing recipes for a national newspaper – I didn’t know how I’d be able to come up with a recipe every week and I was worried what the response would be from other chefs. Now I can create four or five recipes per week. What motivates you in life? Food. I love making it. I love eating it. I’m a big believer that once you’ve had your stomach filled nicely, you’re at ease with the world. What’s your food heaven? A south Asian dish made from Arabic rice, lentils, fried onion, cumin, cinnamon and full fat yogurt. It’s divine. And food hell? A cold falafel. Traditional Arabic Falafel should be fried and served hot, but supermarkets in the UK think it’s acceptable to serve it cold the day after it’s cooked. It’s like serving chips the day after cold.

Wagamama takes things upstairs at Meadowhall with restaurant relocation The popular Wagamama restaurant in the busy Meadowhall shopping Centre is set for a move and a makeover just in time for Christmas. The current location will close on November 26 and a brand new restaurant will open upstairs in the lively dining quarter early December. The new restaurant will boast updated interiors with a fantastic open kitchen and relaxing seating booths as well as the iconic communal dining benches that Wagamama is known for. The newly located restaurant will be serving all of the classic Wagamama favourites including the famous chicken katsu curry! There will be room for 146 people to dine in the restaurant to enjoy Wagamama’s flavour-packed dishes such as chicken and prawn pad Thai and ramen dishes – bowls of delicious soup filled with meat or vegetables and heaps of noodles. There’s also the new Wagamama winter menu to be enjoyed, packed full of warming dishes including the spicy surendra’s curry, freshly squeezed juices and the sticky, melt-in-the-mouth banana katsu dessert!
Indika hits the South Yorkshire stage A spectacular theatrical production bringing to life the story of one land – you guessed it – through dance, drama, story-telling and song came to the Doncaster Cast Academy stage in October. The international cast included 24 talented young dancers from India, including finalists from India’s Dancing Superstar (IDS) and India’s Got Talent (IGT). Dr Kumar (52), an Orthopaedic surgeon from Doncaster was the driving force behind the heartwarming production 'Indika' which was seven years in planning. Originally from Vizag in India – a peaceful coastal town, his musical journey started 22 years ago after taking inspiration from an Oprah Winfrey quote – "Passion is energy – feel the power that comes from focussing on what excites you." Told in English, the colourful show brought together a vibrant, foot tapping, high energy Indian spectacle. Its creative mission was to inspire audiences through Indian dance forms whilst sparking curiosity and educating visitors of the 5000 year history of the country in the two hour performance encapsulating the story through song, dance, an eclectic array of music and drama. Dr Kumar told us: "Having worked hard for a career in medicine and gaining my consultant status in Orthopaedics, I looked for a new challenge, a creative journey if you like. "In the beginning it was just an idea, a thought, a dream – with no previous experience I never thought it would ever come to fruition.
“We’re so excited about our brand new look at Meadowhall, and to be able to open our doors just in time for Christmas!” said general manager Dave Gibbon. “We're looking forward

he biggest names turned out for the Brit Asia Music Awards at the NIA Birmingham in October. Although the award ceremony celebrated new talent and honoured rising stars, this year’s ceremony very much belonged to established names who have been powering Asian music for the past two decades. The Legends Band opened the event with a performance with Saini Surinder and Jay Status for a night of outstanding music and entertainment. Hosted by Radio WM Presenters Sunny & Shay and Brit Asia TV host Sukhi Bart, who encouraged going “off the leash” and whipping up some spontaneous fun, which involved some light hearted fun with TOWIE’s Jasmin Walia who made a entrance with a glittering backless silver dress. The combined UK and India star wattage of Apache Indian, Saini Surinder, Jay Status, Nafees, Manj Musik and Lehmber Hussain Puri added a lustre to the live performances which had the audience on their feet. Most notably, Apache Indian’s win for Lifetime Achievement Award cemented his achievement in the industry.

CHAOPHRAYA Asian Chic try out the lunchtime menu at Chaophraya Leeds to experience a true taste of Thailand… Located in the heart of Leeds, you’ll discover Chaophraya – sister restaurant to Sheffield venue Chao Baby. Just a few minutes from the train station, Chaophraya is home to a newly fitted out restaurant complete with Palm Sugar Lounge and a sunken seated private dining room, where guests can get a true taste of Thailand complete with first class service and a bustling atmosphere. The menu features classic authentic Thai dishes from the different regions of Thailand and all dishes are created by chefs who use the finest, freshest ingredients. It’s a truly special place to dine – especially as this year celebrates chaophraya’s tenth anniversary. A friendly face greeted us at the door and we were seated in a circular corner leather booth, overlooking the downstairs dining area. The whole venue oozes class and sophistication. Our drinks order was taken, then we were left to browse the menu while we tucked in to a complimentary bowl of spiced prawn crackers and a sweet chilli dipping sauce. We dined from the lunch menu – two courses for £8.95 served between 12 noon and 6pm Sunday to Friday and 12 noon to 4.30pm Saturday. The choice of starters included: Chicken Satay, Grilled Pork Skewers, Steamed
Wonton, Tempura Vegetables or Prawns and Spring Rolls. We opted for the satay starter – two chicken pieces marinated in Thai herbs on bamboo skewers with peanut sauce; and two homemade crispy spring rolls filled with carrot, cabbage, taro and vermicelli served with sweet chilli sauce. Both were impeccably presented and full of flavour. For main course, there’s the choice of Pad Thai, Egg Noodles with Duck, Chicken with Cashew Nuts & Thai Herbs, Sweet and Sour Chicken, Beef with Thai Basil, Green Curry with Chicken, Panang Beef Curry, Massaman Lamb Curry or Spicy Crispy Chicken Salad. I opted for the Panang Beef Curry – tender beef strips slowly cooked in a rich Panang curry sauce with coconut milk and cashew nuts, topped with red chilli and served with steamed rice. The sauce is incredibly Moorish. My dining partner opted for the Pad Thai – Chaophraya’s most popular stir fry noodle dish – a plentiful portion of chicken, carrots, spring onions and bean sprouts in a tamarind sauce. Delicious! If dining in the evening, you’ll be spoilt for choice browsing the a la carte menu – from curries, stir-fries, noodle and rice dishes to grills, seafood and vegetarian options. Chaophraya takes its name from the main waterway in Thailand. In ancient times the Chaopraya River breathed life into the families who lived along its banks. Today the river is still regarded as part of the essence of Thailand which is where the restaurants takes inspiration from. Chaophraya Leeds is one of eleven restaurants and bars under the Thai Leisure Group name – a family-run restaurant jointly owned by Kim Kaewkraikhot and Martin Stead. Kim has been a chef for more than 20 years and previously ran her own small restaurant in Bangkok. Kim’s food was renowned in the local neighbourhood for its fantastic flavours. As Martin learnt more about Thailand, he began to see an opportunity and to set about creating a vision. That vision was to bring authentic Thai cuisine and genuine Thai hospitality to the UK. YO! Sushi This month, the food tasting team at Asian Chic have visited YO! Sushi, Meadowhall, to try out their new menu… We perch on a bar stool and begin to drool over the dishes that trundle around the conveyor belt. You may be under the impression that YO! Sushi only serves up raw fish, given the restaurant name, but the Japanese inspired menu actually offers more than 80 dishes including hot classics, sashimi, tempura, salads, hand rolls and desserts. So whether you love meat, fish or vegetables, don’t panic, you’re catered for. The dishes sit under clear plastic domes on coloured plates. The six coloured plates represent the prices of the dishes – ranging from £1.90 to £5. We love the simple concept, just sit, take, eat and pay – the empties are counted at the end of the meal for the bill. We take a Miso Soup and some Edamame beans as appetisers while we browse the
menu. The soup is a soy bean broth with seaweed, tofu and spring onion. We’re happy to hear refills are unlimited for no extra cost. The soy beans are seasoned in Cornish sea salt – just squeeze, suck then discard the pod. It’s a flavoursome start. Peek over the conveyor belt and you’ll see the team of chefs preparing the dishes – mostly sushi and side dishes circulate the restaurant on the conveyor belt so if there’s something specific that catches your eye on the menu then press a button and a waiter will come take your order. There’s also a button for unlimited still water and another for sparkling water. We’re impressed with the mod-cons. New dishes to the menu include: Oishii Buns – soft white rolls filled with your choice of filling – Hoisin Duck, Spicy Beef, Kimchee Salmon or Mushroom; plus a new selection of sashimi dishes – slices of premium raw fish and Takoyaki – battered octopus balls. I press my buzzer and opt for one of each. In around five minutes my Tuna Tataki and Ponzu Sashimi arrives – five slices of peppered seared Yellowfin tuna with chilli daikon and crispy shallots. Heavenly. A few minutes later my octopus balls and duck roll arrive together – I don’t know where to start. The battered octopus balls are seasoned with mayonnaise, red ginger, bonito flakes, aonori (Seaweed powder) and fruity katsu sauce. I decide these are an acquired taste yet I still manage to polish them off. I saved the best while last. Filled with shredder roast duck and topped with hoisin sauce, spring onions coriander and white sesame seeds – the Oishii Bun is my overall favourite. Room for dessert? We recommend you try the Banana and Chocolate Harumaki – a banana filled spring roll with a side strawberry and chocolate sauce. Naughty but nice. The Meadowhall restaurant has a relaxed, informal atmosphere and the friendly and knowledgeable team give diners a warm welcome. We’ll be back again soon! Gujarati Speciality Whipped Yoghurt Dessert
Makes: 20
30oz / 850g plain yoghurt 6oz / 175g sugar 1 tsp cardamom seeds, crushed 1 tsp pistachio nuts, crushed 11oz / 300g mandarin or any other fruit of your choice
225g chapatti flour – wheat 2 tsp oil Oil for deep-frying 1 tsp of salt 140ml water

Tie the yoghurt in a muslin cloth and place in a colander. Place the colander in a large bowl, and leave to drain for 9-10 hours. The yoghurt should now be reduced to a thick curd. Transfer the colander into a bowl, add sugar, stir lightly and leave to stand for 20 minutes. Beat the mixture until it is light and smooth, add the fruit and ½ tsp of cardamom to the mixture and mix gently to avoid damaging the fruit. Transfer to a serving dish and garnish with some fruit, the rest of the cardamom and pistachios. Refrigerate before serving.

Tips: • Shrikand can be made in advance and stored in a fridge for up to 2-3 days without the fruit garnish. • Shrikand can also be frozen for up to 1 month without the garnish and the fruit. Defrost by leaving it out for 3-4 hours before serving with the garnish.

Combine the flour and salt into a mixing bowl. Add oil and salt. Using your fingertips rub the flour until well mixed. Add the water and knead the mixture with your hands until it forms a stiff dough. Take a little oil onto your hands, knead well to form a smooth dough. Divide the dough into 20 portions and form into smooth balls. Take one ball and roll into a 3 ½ inch (85mm) round, on a lightly greased surface. Heat the oil for deep-frying to a moderately high heat. When the oil is hot, gently slide the puri into the oil, when the puri comes on to the surface pat it gently with a slotted spoon to encourage it to puff up. Turn it over and fry until golden brown on both sides. Remove from the oil with the slotted spoon onto a paper towel. Repeat until all puris are made.
Tip: • If the puris come out too oily, the temperature of the oil is too low.

Bhagat M uthiya ½ lb (225g) channa daal 1 tbsp gram flour ½ tsp ginger (crushed) ½ tsp garlic (crushed) ½ tsp green chillies (crushed) ½ tsp cumin and coriander powder 6-7 sprigs Fenugreek (finely chopped) 3 tbsp oil Oil for deep frying 1 tsp salt Sauce: 1 large onion, chopped 1 small tomato, diced 1 tbsp tomato puree 1 ¼ tsp chilli powder 1 lb / 450g potatoes, cubed and part-boiled 1 ½ tsp ginger, crushed 1 tsp garlic, crushed 1 tsp cumin and coriander powder 3-4 sprigs fresh coriander 1 ½ tsp garam masala (for garnish) 5 tbsp masala (for garnish) 5 tbsp oil 1 ¼ tsp salt 1 ¼ pt (700ml) water
Method for koftas: 1. Soak the channa daal for 1 hour in hot water, drain and grind in a food processor. Transfer the daal into a bowl and mix with gram flour, all the spices and 3 tbsp oil. 2. Form the mixture into 16 balls, place on a tray and then deep fry them on medium heat for 4-5 mins. 3. Remove with a slotted spoon and leave to one side. Method for the sauce: 1. Heat the oil in a pan and fry the onion until golden brown, then add the tomatoes and the rest of the spices. Let it simmer for 5-8 mins stirring occasionally. 2. Add water, mix well and add the koftas and potatoes. Cover the pan and let it simmer for 20 mins, stirring occasionally. 3. Transfer into a serving dish and garnish with the garam masala and fresh coriander.

Don’t peel ginger – scrape it. It saves waste and you can use the outer layer to make ginger tea. Don’t take the seeds out of chillies – if you don’t like spice, use less chilli. Prepare your spices in bulk to save time each time you cook. Put a dash of oil and salt in the spices to preserve then freeze. It’s Indian tradition to always have some food left in the pan. This is why Indian food is often branded oily – because oil is used to preserve the leftovers. If you burn your spices, don’t continue. Start again – the flavour will be wrong. Never add spice to a Gujarati main course dish. Only starters should taste sweet. When cooking rice – don’t measure it. Use the guideline of five handfuls for five people, plus one more.

What is the secret to successful Gujarati cooking?
No. I never went to college or studied nor did I ever pay attention to my mum in the kitchen. I was the youngest in the family so I managed to escape cooking duties. It was only when I married and moved in with my in-laws for six or seven years that I started to learn to cook and enjoyed it. I also learnt different recipes from friends – every Gujarati family has their own recipes. 28 years ago, I gave up my job as a social worker to become a professional chef. I started with a food stall selling Gujarati snacks before opening Hansa’s Restaurant in Leeds. Most Yorkshire diners had never experienced the taste or had any knowledge of Gujarati.
Spice! A spice tray is like a first aid box to a Gujarati chef. It not only adds flavour but each spice has its benefits. Roasted cumin and fresh garlic are good for circulation; fenugreek will cleanse the body and give appetite while turmeric – which adds colour to food – is good to fight flu or treat sprains. I treated an airline fracture on my foot with turmeric. Unusually, your team of staff at Hansa’s are all women. Why is that? I have worked with a lot of Indian men in the kitchen but women are not recognised enough for their talents so I wanted to showcase their skills. So far, it’s worked for me. I only have two rules in my kitchen – firstly no swearing, seconding no shouting – I couldn’t work with Gordon Ramsey. I like a tranquil atmosphere – peace, quiet and happiness. My staff call each other sisters, we are like a family.
Tell us about the menu at Hansa’s? Hansa’s is Gujarati vegetarian home-cooking. Our menu consists of Starters (Sharuaat), our own specialities, a section of vegetable curries (Lilotri), beans or pulse curries (Kathor) and of course the sweets (Mistaan). Gujarat is on the west coast of India – where my parents originated. As with the rest of India, it is predominantly a Hindu state. Hindus are forbidden to kill any living creature, especially for food, so vegetarianism has been a way of life from time immemorial. My menu represents a very small selection of a vast and rich culinary heritage. I have modified my style of cooking to suit most palates, whilst still maintaining the distinct Gujarati taste.
You have two cook books, both highly acclaimed by the food critics of the Times, The Guardian and The Observer – tell us about these? I never thought I’d be able to write one cookbook, never mind two. My first book – Hansa ’s Indian Vegetarian Cookbook – intended to teach people how to cook simple and tasty vegetarian food. My second – Hansa’s More Than Just A Cookbook… It’s My Life – celebrated the 25th anniversary of the opening of Hansa’s Leeds. I’ve met a lot of lovely people since launching the restaurant, both staff and customers. My family eats in the restaurant every night and there is nothing I love more than seeing customers return to eat with us. It’s the biggest compliment.
Do you get the time to return to Gujarat? Not as often as I’d like to, but my husband Kishor, and I, take small groups of our customers on guided tours to Gujarat and other parts of India to give them the real experience of the mother country.
