For Aditya Havelia, professional photography happened more by chance than by choice. He developed the flair for photography while pursuing mass communication and ended up being a trained cinematographer in Mumbai. He has worked for several serials, ads, documentaries, films and music videos, but is most comfortable looking for a tiny insect in scorching heat or for a good specimen of mushroom in some dense forest. His love for nature has made him travel extensively through the forests of India and Africa. It is said that one cannot learn more with a glass full, and therefor considers his glass still half empty. He says that he needs people to help him fill it up with creative, meaningful and out-of-the-ordinary work. Q. From being a Masterchef India Finalist to a food blogger with a massive following, all the while being a working mom; tell us about your food odyssey and how do you manage all these roles with such flair? A. I guess it happened organically. My mom is an amazing cook, so I guess I learnt how to eat well early on. And when I moved to the USA, I realized that I must learn how to cook if I wanted to feed my family well, like my mom does. I am lucky to have a family that loves exploring different and new things, this was certainly a reason. My kids & husband make it easy to cook for them, always open minded and with great constructive critique. I did not set out to be a food blogger, it started off as my way to document some recipes I tried and liked. To date I don’t post anything to get hits on the site or likes, I post when I feel strongly about sharing it with everyone. Q. How has being a finalist in Masterchef India transformed, if at all, your cooking style? A. Masterchef India was an incredible journey. It not only shaped the way I cook, but opened my food horizons. It put my knowledge to test and it also made me realize how much I have learnt over the years. After MasterChef, I look at food with even more love than I did before and I must admit I dream about it all the time. Q. You have travelled across India and are wellacquainted with the diverse cuisines that are prepared 20 FEATURE

in the different regions of the country. While preparing these dishes, do you try to preserve the authenticity of the dishes or do you experiment with different cuisines? Why? A. I love traditional and authentic dishes, especially when you talk about some ancient cuisines like India, China and Persia, I feel that those recipes were well thought through, with a balance of flavors, texture and lots of love. When I talk about Indian cuisine, it’s sad that the only thing nonindians know are ‘Chicken Tikka Masala’ and ‘Naan Bread’. Indian cuisine is rich and diverse just like its culture but I feel we need to do a better job of showcasing it to the world. When I make some regional specialities I take two approaches. First I make the dish the way it’s supposed to be made traditionally, no alterations. However, while making it I try to observe the flavor profile and technique. I then use those techniques and flavors in making dishes where I see synergies. I will give you an example- Babka is a traditional Israeli bread, I have eaten different varieties of Babka and loved them all. One such variety is ‘Black Sesame Babka’. When I made it the first time it reminded me of the ‘Til Gul Poli’ from Maharashtra. So next time I combined the two and made Til Gul Babka. I don’t believe in force fitting something just because it’s a in thing, but I love to experiment as well. Q. With your experience in the culinary world, you
might have had some amazing food adventures.Please share the most memorable ones. A. I get excited whenever there is food. Whether its Vada pav on the streets of Mumbai or a 3 michelin star restaurant like ‘French Laundry’, its equally amazing. But if I had to list a few, French Laundry tops the list. The attention to details provided, incredible imagination the way dishes are designed, impeccably clean kitchen, the list can go on. The experience was something I will never forget. With the same token, I remember many such experiences fondly. Momos in Nepal, tastiest fish tacos on the streets of Mexico, the bestest of the pasta in Bologna, Lotan ke chole in Delhi, seriously, the list goes on and on. Q. You seem to have an affinity for saffron, so much so that even your Instagram handle is “@saffrontouch”. Is there a reason for your fascination with the red-threads? A. You guessed it right, I love saffron. Other than y love for, there is a bit of a philosophical reason behind it. It’s so tiny but adds that special touch. I want my food to be like that, the taste and fragrance lingers on even after some time. Q. How important do you think is food photography in today’s context and why? A. You eat with your eyes first, so when someone sees a beautifully pictured dish, it invites them to taste it. Also, I love telling a story about my food, where it came from, how I learnt it and so on. I feel it allows my readers to connect with my food through my eyes. I can do that the best with photographs. As they say, “ A picture paints a thousand words”.

Mark Romanek’s “One Hour Photo” is a psychological thriller, a drama and is a mirror that reflects our hypocrisybeholding dual personalities and concealing the “other” side of ours perfectly. Seymour Parrish aka “Sy” is an embodiment of that hidden hypocrisy loaded with other human complexities which any man in his shoes would have had- so much so that he even buys a random picture of a beautiful lady and makes her his pseudo mother. Sy is the man at the photo counter at SAVMART. With no family and friends, Sy tends to build an imaginary relationship with his favorite customers at SAVMART, as he did with the Yorick family and assumes himself to be an uncle to Jake (Dylan Smith) and a well-wisher of the family. Played by Robin Williams, Sy is regarded as one of the best performances by Williams in his career. “One Hour Photo” won him the best actor award at multiple film festivals summing up to 6 wins and 21 nominations in total. “Sy, the photo guy” seeks an escape from his loneliness in a friendly, longterm customer, Nina Yorick (Connie Nielsen) and her family and starts making copies of their photographs without her permission. There is a wall in Sy’s house which is covered entirely by the Yorick family photographs. Sy’s over-indulgent nature in his customers’ lives makes him unveil an affair in the Yorick family. Will Yorick (Michael Vartan) and Maya Burson (Erin Daniels) are involved in an affair that disturbs Sy to an extent that he 36 CLASSICS
decides to take revenge on Will for cheating on Nina and Jake. Sy, having no family of his own, is broken inside when he witnesses his “ideal” family falling apart in front of him. Sy takes it upon himself to conspire against Will and turns aggressive, brutal and a criminal that accounts for the thrill in the movie. The thrill begins at the moment when Sy’s boss at the mart comes to know that hundreds of photographs are being printed by Sy and no official records for the same were found. Sy is ultimately fired. Frustrated and alone as always, Sy decides to threaten his boss and captures his boss’ daughter which leaves the boss in need of help from police and detectives. The police visit Sy’s home and figure out his intention of doing harm to the Yorick family.

At the same time, Sy is busy following, threatening and forcibly filming the two lovers that leaves both Will and Maya shocked, disturbed and almost depressed. Sy lays out a perfect plan for himself and finds a way out for himself. At this point of time, Sy’s dual personalities are quite evident when he assumes the role of a control freak and shouts and threatens the two when they do not follow Sy’s instructions. Sy’s obsession with his pseudo-well-wisher role lands him into a trouble that might have destroyed all the reputation of a nice “photoguy” that he earns in the entire movie.
Sy’s thoughts speak out loud that no one in this world cared enough for him to click him. He sums this up in his own words and this seems to be the crisp crux of this movie, the whole complexity that he has- “Most people don’t take pictures of the little things in life. The used bandage… The guy at the gas station… But these are the things that make up the true picture of our lives. People don’t take pictures of these things.” People don’t take picture of Seymour. Seymour Parrish is the “guy at the gas station.” Hence, in Austin Chronicle, Marjorie Baumgarten rightly argues when she writes that “One Hour Photo offers a very interesting snapshot of some decidedly modern pathologies.”

We are all guilty of snapping our food before we eat it and sharing it with our family and friends or on social media. How many times have we caught ourselves hunched over that delicious looking platter, tweaking the filters, adjusting the light and looking for that perfect angle to get that one perfect ‘foodograph’. Of course, the tech world is brimming with photo-editing apps that can enhance your photos to the next level. Foodie, however, stands out as the app that helps you to have your taste buds match your visual stimulation. Foodie is a free iOS and Android app, created by LINE- the messaging app, that comes equipped with filters optimised especially for food photography. Its user interface is such that it lets you know how it is located above your dish. As soon as the app deems that the angle and lighting is perfect for a good shot, the shutter button turns yellow, indicating that it is the perfect time to click your best shot. Another cool feature is the ability of Foodie to blur the edges of the photograph so as to give an effect of depth-of-field. With this feature, users can give the illusion of a dSLR-captured shot in a phone-captured image. This not only enhances your picture but also gives it a slightly professional touch. In addition to this, there are a multitude of filters which
accentuate your food photography to a level that it becomes the envy of the beholder. Even the dull and drab pictures look vibrant, colorful and oh-so-delicious! The filters are bunched into varying categories pertaining to the different kinds of food; for example ‘Yummy’, ‘Plain’, ‘Sweet’, ‘Fresh’ and so on. These filters not only beautify your food photographs but also give your photographs the effects that complements their flavour. Foodie also has a flashlight and brightness feature for a dim-lit ambience. This feature comes handy while clicking photographs in low-light eating places where you just have to take that perfect shot but can’t because of the lighting. Just use the in-app flashlight while taking the picture and you’re good to go. It also has a share option from where you can share your finished photograph to your social media platforms. Chiiz Review: Foodie is a food-photography centric app that makes your food photographs pop. The amazing filters combined with the best angle indicator makes your photographs stand out. The user interface is very basic and and an app just to click food photographs would be stretching it a bit too much. However, it deserves a place in your phone for all the wonderful and scrumptious looking pictures it takes.

Supreet Sahoo is a photographer and an avid bird watcher from India, living in the United States. He started visiting Indian forests as a kid and preferred spending his time in the woods. In the last few years, he has been working with naturalists and guides in Central and South American rainforests to establish a network that helps him and his guests to get special access to tropical wildlife. This is what separates his tours from the rest. From seeing owls and quetzals in private farms in Costa Rica to finding Cock of the Rock leks in private tea estates in Colombia - he does everything to get the best images possible! He tries to learn from his fellow photographers across the community who have, over the years, both inspired and encouraged him in many ways.
Old is Gold Lunch Atop a Skyscraper
The Rockefeller Center is one of the most enticing buildings and is a perfect blend of modern and art deco style. It is a 70-storey building and looks dramatically unconventional with its absolute skyward, slender and elegant grandeur which is coherently consolidated into the horizontal compilation of the city below, situated in the predictably unpredictable chic city of New York. Going back to the time when the construction of this wonderful piece of architecture was in full swing, the city fell on its knees, burdened by the Great Depression. We reminisce a casual moment, though staged, captured in black and white with men sitting on a girder with their feet dangling high in the sky above the New York City. The image is wrapped with the spirit of one of the most remarkable delineate reflection of city’s history that reveals the contrasting phase of an era. Even today, after 85 years, the image has its own significance and is said to be the most precarious as well as frisky lunch break ever captured.

Q. What started as a fun food experiment has now garnered a huge number of followers which includes celebrity chefs like Jamie Oliver. Tell us about the journey so far and the plans for future. A. May 2015 I turned my son’s spelt pancakes into a lion- he absolutely loved it and it progressed from there. I opened my Instagram account to inspire other parents to make healthy food fun-within a month my page went viral gaining media attention from around the world. It was crazy! We have been so blessed to be able to have worked with some amazing companies including Disney, Nickelodeon, Barcelona FC, Nestle and of course Jamie Oliver! We are currently filming our own show which includes my son Jacob- showing parents and children healthy recipes and creations of the favourite characters. Q. Your creations involve a lot of food sculpting and art. Despite that you haven’t pursued art seriously. Why? A. Not at all - in my high school years I loved drawing but I didn’t pursue it - my drawing now a days isn’t great - in fact I can copy characters better with food than a pencil! Q. You are also an ambassador of #ChooseMyWellness Campaign. Can you tell us more about it and why you feel passionate about it? A. This was a campaign that I did a few years back - it was about raising awareness and being mindful of what you ate and your daily activities. It was a positive campaign which is what our page is all about.

Q. Your work is a curated feast of cartoon characters and pop culture icons. Which one of them is your favorite and why? A. I love creating Carl Fredrickson from UP - I love all his little features and the fact that even though he is so grumpy he is so adorable! Q. Most parents struggle to feed their kids healthy food. What ingredients do you incorporate in your meals and how would you advise other parents to creatively experiment with food? A. Our meals consist of only fresh produce- we love using lots of colours. All our creations are dyed using natural ingredients including beetroot, saffron, turmeric, purple cabbage, kale. Food art is an amazing way to encourage children to eat and also get involved in the kitchen - I mean who wouldn’t want to eat a minion?

Myron Ellis Lim Nepomuceno, from Marikina city, Metro Manila Philippines is a chef by profession and a photographer at heart. Myron Ellis first got into photography when he bought his first point and shoot camera at eighteen. He would use it to shoot any subject he could lay his eyes on, including food. Many years later, he got his first and only dslr camera, which, to this day, he claims he is still learning to use. Ingredients 250g All-purpose flour 250g Bread flour 3 Eggs 180g Warm milk 100g Sugar 4g Dry yeast 1 tsp Honey 50g Butter room temperature 1 pinch Salt Lemon zest EGG WASH 1 Egg 1 tbsp Milk 1 pinch Salt
In the bowl of your mixer with a dough hook attached, add the sifted flours, dry yeast and sugar. Warm the milk. Dissolve honey in the milk. With the mixer running on low speed, slowly add the milk/honey mixture. Add the eggs, lightly beaten with salt, butter and lemon zest. Mix on the low setting until just combined. When the dough has come together, increase the mixer to the next speed for about 5 more minutes. The dough is slightly sticky but do not add more flour to it. When the dough is soft and elastic, transfer to a bowl. Cover with film and place in the oven with the light on and let sit for 2 hours. Divide the dough into 130g balls. Remove a 15g portion from each ball in order to form the “tuppo” Make a deep hole in each ball using your thumb and put the “tuppo” in the base of the brioche. Transfer to a baking tray covered with parchment paper and continue with the remaining dough. Place in oven with the light on and allow to rise for 1 hours. Preheat oven to 170°. Brush each brioche with a mixture of one beaten egg, milk and salt. Bake in the centre of the oven for 20 minutes or until the brioche become golden.
