SPIRITS 1917 it was used as a site for the production of armaments for the British Navy and returned active five years later. After a long ownership by the Whyte and Mackay group, today it belongs to Emperador Distillers. A peculiarity of Dalmore is related to the sizes of the stills: three 13,000 liters and one double, giving the possibility of varying the output gradation of the distillate. The core range of Dalmore presents products accessible to all, some of which with a declared age and also matured in well-seasoned ex-Sherry casks.
• Balblair: the iconic distillery that sells bottles according to the vintage instead of the canonical years of aging. Going deeper, we find ourselves in front of a distillery that began to operate in a first site in 1790 and in the second, the current one, in 1894. Included are several management changes, from Hiram Walker to Allied Distillers to Inver House, the current owner. Balblair’s New Make is rather rustic; young, the malt still has traces of this characteristic, while with the years in a barrel this prerogative changes and turns into fruity, sweet and slightly spicy notes. Balblair regularly introduces to the market vintage lines, true thousandths, replacing them with new thousandths. Single barrels are rare and very appreciated by tge aficionados. Balblair also appeared in the famous film by Ken Loach “Angels’ Share”, in which the discovery and sale of a barrel of the imaginary Malt Mill is narrated. • Aberfeldy: the heart of Dewar’s, says the distillery’s payoff. It is a story shared by many whisky distilleries in Scotland, or the almost total dedication to the construction of blends of various kinds, more sold than the Scotches of individual distilleries. Aberfeldy was born in 1898 at the behest of the Dewar family, wine merchants and recently landed in the blend world. Wanting to increase the volume of bottles produced, it was logical to build a distillery suited for the purpose: Aberfeldy is born and remains owned until 1925. Dewar’s joins John Walker, another famous name in the world of blends, and gives life to DCL, today’s Diageo, acquiring other Scottish distilleries (for example Oban, as seen above). Aberfeldy is enlarged in the early 1970s, doubling its production capacity. In 1998, to avoid the monopoly, Diageo must sell the entire Dewar’s brand, then Aberfeldy, Royal Brackla, Aultmore and Craigellachie, to Bacardi-Martini, a group that still owns the distillery. For some years Aberfeldy has released a core-range of single malts in its own name, malts of good sweetness and gentleness, characteristics due to slow fermentations and distillations.
