This course is an introduction for students who want to work in food preparation and service. You will learn about different types of establishments such as hotels, restaurants, pubs and bars, cafes and contract catering, and the different and responsibilities within these establishments. You will also learn how to prepare and serve a range of food and beverages, and how to work safely.

One year, full-time

This vocational course will introduce you to the catering and hospitality sector. It will help you develop skills to progress onto a subject-specific Level 1 course, a Level 2 course, an apprenticeship or employment.

Introduction to Professional Cookery Certificate Level 1

This vocational course is an introduction to the catering and hospitality industry. It includes topics like food safety, preparing and cooking food using a variety of methods, healthy foods and special diets.

Progression courses from year one, or for students who have some industry experience.

Professional Cookery Technical Certificate Level 2

One year, full-time

On this course you will learn many of the techniques used in professional cookery, including boiling, poaching and steaming, stewing and braising, baking, roasting and grilling, deep and shallow frying, and cold food preparation. You will also learn about the structure of professional kitchens and the principles of working as a professional chef.
