Vegetable jalfrezi A nutritious meat-free curry, delicious served with rice or naan bread and a dollop of mango chutney COST PER SERVING 38p SERVES 8 PREP 20 MINS COOK 40 MINS ✱ 1tbsp sunflower oil ✱ 1 red onion, chopped ✱ 2 garlic cloves, crushed ✱ 1cm piece root ginger, grated ✱ 1-2 chillies, deseeded and chopped ✱ 450g jalfrezi cooking sauce ✱ 400g can chopped tomatoes

✱ 650g butternut squash, chopped ✱ 1 cauliflower, broken into florets ✱ 200g frozen peas ✱ A few fresh coriander leaves (optional) 1 Heat the oil in a large pan. Fry the onion for 5 mins to soften, then add the garlic, ginger and chillies, and cook for 1 min. Pour in the jalfrezi sauce and tomatoes, then fill the tomato can with water and add to the pan.
2 Tip in butternut squash and cauliflower, season and stir well to mix. Bring to the boil, then reduce the heat, cover and simmer for 30 mins, stirring occasionally, until vegetables are tender. 3 Stir in the peas and cook for 2 mins. Scatter with coriander leaves, if using, and serve with rice or warmed naan bread. Per serving: 150 cals, 6g fat (2.5g sat fat), 17g carbs
