Eva Kruse gives the bold statement “that nobody buys fashion to save the world”, because fashion and design still speaks to instincts and emotions. Clothes and accessories are not always something we need, but something we desire, and our vanity is sometimes stronger than our common sense.
Editor-in-chief
For most of us, the first priority in choosing something new to wear is often looks, cuts, design, and colour, and seldomly production, material origin and sustainability, which makes it hard to implement “green chic” among a majority of consumers, says Kruse in the interview.
It all started for me with the vintage Japanese kimono. I had seen friends salvaging anything from rock band t-shirts from the 80s to hand embroidered Guatemalan men’s shirts as wearable collectibles. We wanted to stand out. To save money – but to save the world? No, not necessarily…
CONTRIBUTORS
Eva Kruse recognizes the challenge in putting forward the important message of how much has happened in the evolution of materials, so you can’t tell whether the fabric is made from wool or recycled plastic bottles, and designers don’t limit themselves to interpret sustainable fashion as non-fashion. The latter being the biggest fear of fashion lovers if they have to compromise on current looks.
longevity, and still look instantly sharp. More and more upcoming designers and brands are walking down the same road, and here at The Daily we salute them in portraits as The Daily Green and Generation Next throughout the week. Once you have seen how amazingly beautiful clothes from recycling are made, natural or man-made fibres with a conscience, you may have been hit by the trickle-down effect, Eva Kruse talks about, and slowly makes the wish come true for her and many of the delegates at The Copenhagen Summit, how consumers pay more attention to how their clothes are produced. For many, though, the price point is still an important issue, and is what may refrain them from going green. So the fast-fashion production is not going to end any time soon, but if it is a matter of getting cheap t-shirts, it could very well be an even better buy to get a recycled vintage one. Or even get it for free, which is possible at the all-day Fashion Exchange on Saturday outside City Hall.
In an opening interview with The Daily, CEO of Copenhagen Fashion Week and initiator to The Copenhagen Fashion Summit,
On the contrary, many Danish brands, such as today’s showcase Fonnesbech, are perfect examples of how you can combine classic cuts with conscious choice of materials to give it

Stine Goya is coming home Designer Stine Goya has her hands full – litterally. Saturday she marks the opening of her new shop-in-shop in department store Magasin with a personal appearance to present her AW16 collection La Voliére, and later this Autumn she will debut her first home product line for Danish pottery brand Kähler Design. On her part, she enters new territory by working in clay to create pots and vases, but for the 175-year-old company, they have a history of collaboration with talented craftswomen outside their usual profession. Stine Goya has created a series of ceramics with
references to silhouettes and mode of expression of the 1950-60s with generous shapes, while the graphic decoration is very much an interpretation of the signature prints and colour scheme found in her fashion designs. - The collaboration with Kähler has an artful twist, and it means a lot to me that I can contribute to bringing little art pieces into the homes of a broad variety of people, who can use and enjoy my designs on an everyday basis, says Stine Goya about the Fiora range, which debuts in October.
Shows go live This season, you don’t need a front row seat to experience Copenhagen Fashion Week first hand. For the first time ever, three runway shows will be live-streamed online, allowing you to experience fashion week in real-time and from the comfort of your own home, even without a coveted show invitation. The selected shows, Won Hundred, Ganni, and Zalando Trend Show will be live streamed on the copenhagenfashionweek. com homepage today and tomorrow. In addition to the live streaming, several shows will be filmed, available for viewing online the same day.

Lulu Kennedy rocks CIFF For decades, the elaborate CIFF trend shows were the axis for many buyers and press at the large trade fair, but time took its toll on the concept and they vanished to be substituted with curated and creative installations to provide inspiration. Now CIFF has teamed up with Lulu Kennedy, the British talent scout, who has paved the way for many upcoming designers through her not-for-profit organization Fashion East over the last 10 years, and also editor of LOVE magazine. She will be curating a live presentation Thursday at Crystal Hall, and though it may sound like a return to the fashion trend show, CEO Kristian Andersen emphasizes that it is not. - When I took over direction a couple of years ago, it was not in a great shape financially or otherwise. CIFF was in dire need of a complete conceptual overhaul and re-branding. As part of that process a decision was made to use international collaborators, that together with the Copenhagen based team, could provide inspirational and relevant content, rather than focusing on dictating trends
or putting on catwalk shows intended only for press, he states to The Daily. - Even though we live in a global world, you can never replace the amount of information you get by being on the ground, and by working with professionals residing in cities such as London, Paris, Tokyo and New York, we are able tap into their unique network, experience and knowledge and bring this to Copenhagen. In this way we are collecting and presenting the current trends from around the globe directly through the lens of some of the most influential people in fashion today. It serves our visitors better than dictating trends ourselves, says Kristian Andersen. He is proud to say that this strategy has paid off. - Even in just the last two years we have seen a significant increase in both revenue and visitors. To achieve this kind of growth, whilst also simultaneously pruning away hundreds of non relevant (but revenue driving) brands, demonstrates just how much we have been able to capitalize on our branding to increase the square meter value of the fair, he concludes.
Growing talent Pioneer designer Sabine Poupinel has outgrown her boutique as venue for the third edition of the three-day exhibition FAN OUT, due to massive success during previous fashion weeks, so she is moving the set-up to a much larger space; the abandoned national Mail Depot by the central train station. Starting today, she plays host to yet another varied programme of art and design exhibition, performance, light-installations, music and talks. Known for her devotion to welcoming new design talents into her boutique, the FAN OUT exhibition embodies this spirit, focus-
ing on creating interplay between established designers and newfound talents, allowing them to support each other. The interesting mix consists of Lærke Valum, Søren Bach, Nicholas Nybro, Christian L’enfant Roi, Jane Kønig, Vibe Harsløf, Martine Jarlgaard, Louise Egebro, Nikolaj Storm, Shila Louise, Julie Amalie Svensson, Tobias Birk, Jan Machenhauer, Niels Gundtoft, Iben Høj and Oliver Sundqvist.

Fashion as art In an effort to introduce more diversity to the process of how fashion as art and art as fashion is sold in Denmark and Scandinavia, fashion and street photographer Omi presents a series of his unusual works during the three-day event Fashion As Art at Bar25, in the heart of Copenhagen, starting today. The venue for the exhibition is a bar with a New York/London atmosphere in which the best from the 1930’s and 1940’s is fused with a contemporary twist, making it the perfect backdrop for Omi’s aesthetic prints alongside a showcase of street couture from Animalistic. Behind the brand is artist, tattoo artist and designer Louise Hylland, who has become fascinated with a new minimalistic way of creating timeless designs in high quality. She has got a lot of attention on the music scene with her work, counting several of the greatest Danish artists among the brand’s ambassadors. Befittingly, the event also features Danni Elmo and Daniel Rosenfelt to deliver suitable musical notes.
Fashion underground This season, Copenhagen Fashion Week is collaborating with the Copenhagen Metro on streaming video footage from catwalk shows on big screens at the Nørreport and Forum Metro stations, reaching a daily number of passengers of up to 50,000. Copenhagen Fashion Week’s official newspaper The Daily will also be distributed to passengers at Nørreport, Kongens Nytorv,
Bella Center and Lufthavnen, maximising the reach of Copenhagen Fashion Week’s platforms. All filmed catwalk shows will be broadcast at the two stations. The Daily Green:
Armoire Officielle Brand: Armoire Officielle. Designer: Kjetil Aaas. Start: 2012 What’s new: mens/womens collection and Copenhagen flagship store. “Sustainability as brand identity is linked to my personal attitude on how we should live in the future, and considerations on how it can be part of a business strategy. Recognizing that fashion is one of the most polluting industries, it is our goal to affect the consumer to make more judicious decisions.
It is a complex contradiction working with fashion and sustainability, but we try to resolve the dilemma by producing ‘slow fashion’, focusing on aesthetics, details and functionality with a definite Scandinavian mode of expression combined with a conscious choice of fabric alternatives, e.g. eco-cotton and tencel. The concept of slowness is important to me, so we aim at two collections per year that are not too big. This way, we hope to contribute
to lower the pace in an industry, which lately has become much too fast, but sadly, there are still both business professionals and consumers, who are fairly indifferent. However, I think our longevity attitude is an ‘added value’ to the brand, and as long as we can deliver a product that is equal in style and quality to our competitors, it is definitely a plus to be sustainable.” Photo courtesy of Laura Kramer.

We will never buy fashion to save the world
- but Eva Kruse, Copenhagen Fashion Week’s CEO, still sees a brighter future for “green chic” in the wake of the successful Copenhagen Fashion Summit this past spring. If designers and manufacturers take leadership of a more sustainable production of clothing that meets consumer demands, it could also brand CFW as a unique fashion destination. Words: Elsebeth Mouritzen Photo: Kenneth Nguyen - I think we have started a wave, the movement that will definitely take all the talks and good intentions to the next level of action. Eva Kruse is hopeful. Copenhagen Fashion Week’s CEO, who is also the initiator of the biennial Copenhagen Fashion Summit through Danish Fashion Institute, a platform for discussions on development of new strategies towards a greener and more sustainable fashion manufacturing around the globe, finds herself a step closer to the longterm goal. In this interview with The Daily, she looks back on the recent Summit in May and reflects on how it can also affect the fashion week and trade fairs in the seasons to come. What was the most important outcome of this year’s Summit? We had the idea of gathering the strongest voices from the world of media and fashion to lead the way and benefit from the trickle-down effect it would cause in the rest of the fashion business. The critical mass of opinion leaders had a true massive impact and from that point of view, I think it was very successful. It gave more press coverage than ever before and thus became more important on a global scale. People in the fashion industry noticed that it is now an international movement.
Was that the goal, when it started as a national initiative? I think we have come a long way, since we started talking about sustainability in 2007 and held the first Copenhagen Fashion Summit two years later during COP15, the United Nations conference on climate change hosted in Copenhagen by the Danish government. We wanted to give the fashion industry a political voice, since it had never been present at these big international talks before. This is in spite of the fact that the industry may be able to solve many of the environmental issues the world is dealing with because it is one of the world’s most resource-intensive businesses. At the time, we thought it would be a one-off, primarily aimed at Danish manufacturers, but since many of them operate internationally, we saw the need for creating a venue for a global movement and the initial success made us continue. Have you achieved the desired attention? Even more so. We have had offers from the Italian fashion industry and New York Fashion Week, who would like to host the next Fashion Summit, but we are steadfast that it shall continue to take place in Copenhagen. If possible, we would like to make it an annual event, where it is not just a summit, but where we chair a process leading to action,
as “the Davos of the fashion industry”, so to speak. It is up to our board of directors, collaborators and sponsors, but we are in negotiations and I am very optimistic.
of production. I also hope that it will have an effect on our neighbouring countries, so that within the next 3-5 years we have significant clout as the “green” fashion week of Scandinavia.
Can you channel any experience from the Summit into CFW? By keeping the Copenhagen Fashion Summit on Danish ground, it is already a benchmark for our ambitions to brand Copenhagen as a destination for sustainable fashion, and I would love to see the fashion fairs capitalize on this branding. We are in dialogue with the directors of the fairs on how we can best promote CFW together and use it as a window to the world, for instance with a special section for sustainable exhibitors. We are already known as the Scandi-democratic-casual fashion destination, but it would be nice to add the green profile to our storytelling that already consists of DriveNow cars, the clothing swap market Fashion Exchange and the sustainable shopping guide The Green Walk.
How will you take it from talks to action and involve the consumers? This time, we created a different buzz with prominent (media) speakers, which is necessary to get the needed amount of attention and hopefully their commitment will convince the conscious consumers to buy sensibly and consciously when they read about it. Our task has always and only been to affect and move the business to deliver a sustainable product, and it is up to them to engage consumers and see it from the perspective of consumerism. It is an exciting and also very provocative discussion, because it basically clashes with the whole foundation of fashion, where we create a desire for new things all the time.
Will it draw more international attenders? I could very well see H&M choose to present their Conscious Collection during CFW as well as prominent frontrunners with sustainable agendas such as Stella McCartney and Prada, who both have an ethical point of view in terms
COPENHAGENFASHIONWEEK.COM
THE DAILY
Can consumers be won over to become more conscious? I think so, because many initiatives are in progress. Globally, S.A.C., the Sustainable Apparel Coalition, has developed the Higgs Index, which is a parameter equivalent to the environmental certificate we know from e.g. refrigerators. This will soon be on the market and enable consumers to figure out how
“green” a product is and from there they will be able to take a personal stand. At DAFI, we experience a great search on our seminars, we arrange speed-dating with manufacturers in third world countries and our library of sustainable fabrics shows that it is not necessary to compromise on style and colour. Is that the real problem; we are afraid that sustainable fashion doesn’t have the right look? Let’s face it. Nobody will buy fashion to save the world. When we buy organic food, it is a question of health, but when we buy new clothes, it is because we love fashion, we need something for next Saturday, we like the style or the colour. I don’t think we will buy sustainable clothes just because it is sustainable, except maybe for children’s underwear. Most of us have a craving for an interesting cut and design, and I think some consumers are afraid that they will have to compromise on that or it will not be available in the colour or the fabric they want. So it is important that the designers consider all this in their creative phase to eliminate all prejudice, but also to give the design a longevity. It is an equally important part of the idea of sustainability, that we keep our clothes longer, even if it speaks against the nature of fashion, but I am sure it will pay off later

Morten Ussing Education: MA womenswear Central Saint Martins, London Start: 2016 What’s new: top quality ready-to-wear and made-to-measure, Revolver exhibitor DNA “ I would say that my clothes signal an understated luxury with Nordic roots and a twist of London. This expresses itself through my choice of materials, shapes, and colours. I put an emphasis on ethics to allow sustainability and production to go hand in hand. I prefer to produce less at a higher price point but with a longer life span. Inspiration As a designer, I’m rather intuitive and I don’t necessarily work with the latest trends but more with the woman I’m dressing. The most important thing for me is that the clothes are well-fitted, that the cut is right and the dress length perfect. I have old patterns that I have been working on for years, and still do. Values I think self-criticism and consciousness are important in fashion design. We produce so much clothes of a poor quality, and I once read that if we stopped the clothing production today, there would be enough clothes to supply the entire globe the next seven years. You have to take a stand - produce a little less but buy better. Training My time at Saint Martins in London taught me a great deal on perseverance, being faithful to who I am and the values I believe in. I worked hard day and night, had cake thrown at me by tutors and saw my projects torn to pieces on several occasion. That hardened me and looking back on it now, I see the plan they had for me. For that I am deeply grateful. ”
Back in business After two seasons of coverage by the American fashion site Vogue.com, another internationally leading fashion site is joining the pool of media covering Copenhagen Fashion Week regularly. From this SS17 season, the London-based fashion news site The Business of Fashion will include shows from Copenhagen in its image boards; a coverage previously limited to major fashion capitals such as London, Paris, New York, and Florence.
“The Business of Fashion (BoF) has become an increasingly influential voice within the fashion industry over the past years and is now considered one of the most important news and opinion outlets for the industry. BoF is known for its serious approach to the fashion industry, which is why I’m thrilled that BoF is including Copenhagen Fashion Week.”
The inclusion of Copenhagen Fashion Week is a milestone for Danish fashion, according to Anne Christine Persson, VP and Development Director of Copenhagen Fashion Week:
The Business of Fashion will cover Copenhagen Fashion Week with runway photos and is in charge of the editing and selection of the included shows.

You’re one of Alessandro Michele’s model muses and you have walked shows and shot several campaigns for Gucci. What is your best experience from working with the Italian fashion house? At the gift-giving campaign last autumn and the pre-fall campaign this winter, my jaw nearly dropped when I first walked on set. It will probably take some time before it ceases to surprise me that you would fill enormous studios with whole houses, massive amounts of plants or live flamingos, all for a single two-minute film - not to mention the DJ’s, hired just for providing background music for the shoots. It’s like experiencing a little fairy-tale, how they are able to build entire universes just in order to create the ambience that the pictures/movies/shows require.
You were recently part of DR’s documentary De smukke drenge. What was the best part of being on that show? That was a positive and fun experience, it certainly got me a lot of fans haha.
What would be the dream job for you to book? A big perfume campaign, a Chanel campaign or something of that magnitude would definitely not be a bad thing to book, but taking my personal taste into consideration, I would be very grateful to be the face of brands like Marni, J. W. Anderson, Acne Studios or Dries van Noten. Gucci’s universe fascinates me as well, so I hope to be part of it a little longer. I think the whole Balenciaga - Vêtements movement is an exciting renewal, and it seems like the people behind it are having a great time, so being a small part of that would be interesting as well.
What would be your dream job to book? After walking the biggest shows - Louis Vuitton, Gucci, Fendi, Burberry and lots more, I’m betting on and hoping for big campaign jobs. I would like to work as an actor at one point and I hope that the fashion industry could open doors to the film industry. What is your best experience from CFW? I only worked at CFW once before. But chilling at Hotel D’Angleterre before and after Asger Juel Larsen’s show this January was rather awesome. What are you looking forward to this season of CFW? Meeting a ton of delightful, creative people and seeing my good friend Timur that I met on my very first shoot. We have been friends ever since. We are from opposite ends of the country.
Your best experience from CFW? I walked the latest Mads Nørgaard show at Charlottenborg a few seasons ago - Communions was playing live and there was a great vibe in the beautiful room. That was awesome. What are you looking forward to this season? For the first time ever I don’t have school or any other jobs I need to fit into my schedule, so I look forward to hopefully taking more part in this than I usually do!

Shoot for the moon FUTURE OF FASHION
Time: 17:00 Place: The Royal Stock Exchange Words: Elsebeth Mouritzen
Many aspiring designers would love to be in the shoes of Danish-born, Paris-based haute couturier Jørgen Simonsen, who for several decades has worked for Chanel, Valentino and Versace, when not under his own name. Last night he was in Copenhagen to give graduation students from Design School Kolding and The Royal Academy of Fine Arts, School of Design a boost on the eve of their future in fashion, and he boldly said: - Ahead lies a world of fashion-wonders ready to be embraced, fashion-endeavours ready to be embarked upon, fashion-landscapes ready to be conquered. Everything is possible – everything. In an uplifting mode of speech, he came as a breath of fresh air and encouraged the graduates to believe in themselves, just like he did, when he was in the very same spot. He was cocky enough to think, he would make it in a year, it took him five. - Only your imagination and your creativity will set the limit. Many of you will be lucky to have wonderful careers, but sadly a thousand times as many will face disappointment. The Irish playwright, essayist, novelist and poet Oscar Wilde penned a beautiful quote that goes like this: “Shoot for the moon. Even if you miss, you’ll land among the stars”. - This very quote is something I have lived by throughout my career, as we all – myself included, inevitably, will face defeat along the way. Defeat that you in turn will make a strong suit instead of a deafening blow, because, if it doesn’t kill you, it will only make you stronger. He gave the students a look into his mental toolbox, highlighting “creativity” as the very essence of their future in what he called “ this wondrous, crazy, at times nail-bitingly scary but truly amazing work-field that is fashion”. That was the cue for the 30 students to show their skills and interpretation of current trends on the catwalk, before networking with industry professionals present. A selection of the collections will also be featured at CIFF as of today and for the rest of the week, in order to catch the attention of possible investors and future employers. Because, in the words of Managing Director from The Chambers of Commerce, Lauritz Rønn, who was there to encourage the new breed of creative talents to think commercially, the world has a continued focus on innovation, especially in Denmark, where fashion alone accounted for DKK 27 billion. in export last year.

Great
Danes Danish fashion lost a unique couturier with the recent passing of Ivan Grundahl, but the brand is secured future success with appointment of internationally renowned Roy Krejberg as its new creative director. Words: Elsebeth Mouritzen Photo: Nicky de Silva.
It takes courage to pick up after veteran Danish designer Ivan Grundahl, who suddenly passed away shortly after his 65th birthday this spring, but if there is one with fellow international flair and talent for fashion with integrity and timeless style, who can do it, it is Roy Krejberg. He is the newly appointed creative director of the Ivan Grundahl brand, and his task will be to hone the strong DNA and at the same time develop the brand for the future. - My father was always more about style than fashion, and we want to keep that concept. He was unique in his field, and by appointing Roy Krejberg to lead our design team, we can continue to create clothes that goes beyond current trends, says Oliver Grundahl, now CEO of Ivan Grundahl, to The Daily. An architect by profession with his own company OGA, he has been a member of the board for almost a decade, so he knows the running of the business, but he has never had ambitions of following in his father’s footsteps on the creative side. - I know, where I would like to take the brand, and for that, Roy Krejberg is the perfect match for us, since he and Ivan knew each other. They share the same references in fashion, be it in their choice of fabrics and their common inspiration from the aesthetics of Scandinavia and Japan, says Oliver Grundahl about his new team leader, who worked for Paris-based Kenzo from the 1990’s until he formed a label under his own name in 2004, Peachoo+Krejberg. International appeal Ivan Grundahl started his career as an independent designer in 1974, where he soon carved
his own niche in the Danish fashion scene with powerful, often voluminous silhouettes inspired by Japanese Comme des Garcons and Yohji Yamamoto. While other brands came and went, he stuck to his vision of edgy, timeless looks in a muted monochrome palette of black, white, beige, khaki and taupe with an occasional bold dash of red. And when he chose to present it on the catwalk during Copenhagen Fashion Week, which was not every season, it was a tour de force in dramatic styling with tulled hats the size of millstone wheels, and a sweep of the best natural fabrics to be found. No wonder his designs caught the eyes of cosmopolitans, so he soon opened boutiques in as different places as New York, Oslo, Dubai and Beirut. Showtime He had almost finished the SS17 collection before his unexpected passing, so Roy Krejberg has only made a few adjustments before Oliver Grundahl declared it ready to present to their loyal clients this week. - I considered having a show now, but I think it makes more sense to return to the catwalk for next fashion week with a new message, when Roy Krejberg have had the possibility to implement our combined visions for the brand, says Oliver Grundahl. - Ivan Grundahl has always made clothes for the globally oriented, intellectual and educated women of all ages. Of late, it has gained a reputation for being a brand for adult women, but I want to show that the design also has an appeal to the younger generation, he concludes.

Insider’s City Guide Dinner Breakfast Atelier September Gothersgade 30 Copenhagen K
Central Kitchen Krystalgade 22 Copenhagen K
Far’s dreng Ny Adelgade 7 Copenhagen K
Granola Værnedamsvej 5 Frederiksberg C
This gallery-turned-café serves some of the best Danish breakfast essentials: skyr (Icelandic yoghurt) with granola, grape fruit with fresh mint, croissants and freshly pressed juice. Like everything else on the menu, the rye bread with sliced avocado (a Danish lunch classic) is exceptionally photogenic, making Atelier September one of Copenhagen’s most instagrammed cafés.
Skt. Petri Hotel’s restaurant Central Kitchen in the charming Latin Quarter serves an excellent breakfast buffet with a wide selection of bread and pastries, breakfast must-haves such as eggs and bacon, fruit, yoghurt, cereals and with the option of making your own waffles. Central Kitchen is lofty and spacious, which provides a relaxing setting to start off your day.
A new café in town, already renowned for their delicious and photogenic breakfast platter with eggs, fennel sausage, avocado, rye bread and much more. For those with a smaller appetite, their skyr servings or grape fruit salads should do the trick. By noon, the menu shifts to French croques and classic Danish open-face sandwiches.
Since its opening, Granola has been a breakfast favourite in the cosy neighbourhood where trendy Vesterbro meets mundane Frederiksberg, now home to new flagship stores by fashion favourites Aesop, Wood Wood, Soulland, and Mads Nørgaard. Granola’s menu offers a morning plate with all the basics: soft-boiled eggs, ham, sausages, cheese, jam, baked tomatoes and fruit as well as a sweet edition that includes skyr with granola and pancakes.

Kadeau offers a piece of Bornholm, a Danish island in the Baltic Sea, in the heart of Copenhagen. Chef Nicolai Nørregaard, himself a Bornholm native, opened Kadeau on the island in 2007 as an early New Nordic outpost, and when Kadeau opened in the capital a Michelin star immediately followed. The dishes are seasonal, encapsulating the island’s flora and fauna (more than half of the ingredients are sourced from Bornholm), think oysters with hemp and parsley or fermented flower petals and preserved berries in honey. In November 2015, Kadeau moved to a smaller space, betting on a more exclusive and cosy experience.
Väkst is hospitality group Cofoco’s latest offering, a green oasis in the charming Latin Quarter. Väkst literally meaning ‘growth’, the restaurant is an explosion of green, decorated with an interior green house in the middle and plants hanging from the walls and the ceiling. The cuisine is new Nordic with a focus on vegetables, though not vegetarian, with dishes such as flounder in mussel sauce, and pork neck with cherries, corn, chanterelles, and cheese.
Set in the lofty grand room in the heart of Skt. Petri Hotel, Central Kitchen is a restaurant suited to modern-day dinners that combine a high-quality experience with the easy-going Copenhagen atmosphere. Ingredients are sourced with care, keeping quality, animal welfare, and sustainability in mind all the way through the production line. The menu offers a selection of free-range meats to be combined with the side and sauce of your choice
The keyword at Amass is spontaneity. The food is Nordic and seasonal, the ingredients are chosen at the peak of their deliciousness. Run by Matt Orlando, a former Noma chef de cuisine, Amass’ inventive take on Nordic food earned it its spot among the world’s 50 best restaurants. The view from the restaurant overlooks the harbour and Amass’ private garden.

AUGUST 10
Copenhagen Fashion Week packs a pretty tight schedule, so making time to explore the city inbetween shows, trade fairs and showrooms can seem next to impossible. Fear not, we’ve put together an insiders’ guide to the culinary hotspots of Copenhagen, all in close proximity to the hotspots of fashion week. If you have a bit of spare time on your hands, our guide even includes the best of the local art scene and our suggestions for a successful night out. Enjoy!
Art Ny Carlsberg Glyptotek Dantes Plads 7 Copenhagen V
Drinks Liedkoeb Vesterbrogade 72B Copenhagen V
The Bar Krystalgade 22 Copenhagen K
1105 Kristen Bernikows Gade 4 Copenhagen K
The Union Store Strandstræde 19 Copenhagen K
Liedkoeb is not just a cocktail bar; it’s a cocktail house, serving drinks on all three floors. Located in the nightlife-heavy Vesterbro district, Liedkoeb caters to a younger audience than its pricier sister-bar Ruby. A Liedkoeb special is their Konfiture-Daiquiri, a cocktail shaken with homemade jams with flavours like plum/star anise and pear/rosemary.
Hotel Skt. Petri’s The Bar serves up the perfect combination of great cocktails and guests from all over the world, lighting up the late hours in Copenhagen’s Latin Quarter. This fashion week, The Bar is sure to light up cocktail hour with a two-forone deal on cocktails from 16.00-18.00.
Named after the postal code in which it resides, 1105 is an elegant and pared-down cocktail bar in the centre of Copenhagen. The cocktails are the centre of attention here and consequently the décor is subtle and sophisticated with a soft light and gentle grey walls. The crowd is mature and the music is a smooth mix of Motown and jazz. The Union offers an exclusive experience with old school cocktails from the Mad Men era. To enter you’ll have to ring the buzzer, wait to be let in and then go down the stairs to find yourself in a low-lit bar with a pressed tin ceiling, bare brick walls and a soundtrack of smooth jazz playing through the speakers. An old fashioned New York experience in the Danish capital.

Kunstforeningen Gl. Strand Gl. Strand 48 Copenhagen K
Seen from the outside, Ny Carlsberg Glyptotek is an impressive 19th century architectural gem. Inside, the vast collection of ancient and modern art offers a unique and excellent art experience. The department of antiquities exhibits Egyptian, Greek, Etruscan, and Roman art, a tour of 3,500 years of art history. The modern department focuses on Danish and French work among them Danish Golden Age paintings, French impressionism, Rodin’s sculptures and Degas’ bronzes.
Though situated 40 kilometres north of Copenhagen, Louisiana Museum of Modern Art is one of the most important museums for contemporary art in the region. With a permanent collection of more than 3,000 works (including Warhol, Rauschenberg, Picasso, Klein, Jorn and Kirkeby) and 8-12 special exhibitions annually, the museum has gained a reputation as one that is in touch with the zeitgeist of the contemporary art world. Louisiana also has an impressive park overlooking Øresund where 60 sculptures are permanently exhibited.
V1 Gallery is a contemporary art gallery in the Vesterbro district. The gallery gained international notability for being the first Scandinavian gallery to exhibit street art pioneers like Banksy and Futura 2000. The gallery represents a select group of emerging and established artists such as HuskMitNavn, Wes Lang and Søren Behncke.
Kunstforeningen Gl. Strand, founded in 1825 and housed in a beautiful historical building from the 1750s, is one of Copenhagen’s most visionary art spaces. They aim to exhibit new tendencies within Danish and international art and support young artists. The museum has no permanent collection, allowing it a great curatorial freedom for putting art into new contexts. At the moment, Kunstforeningen Gl. Strand hosts the Mario Testino-exhibit No Limits, showcasing the multi-facetted work of the influential Peruvian fashion photographer.
