A
s spring approaches, I can’t help but start to get the itch to do every imaginable outdoor activity I can think of. We are spoiled in the hill country, with this great climate, because by mid February when we start having a few 80 degree days, we think that spring is already here and we have survived the winter (they are so tough here). If you look at our Calendar of Event section of this issue you will see that we barely had enough room for everything that happens in the hill country in March and April. Whether it’s all the activities within the Cordillera Ranch community or the events that are happening in all the surrounding towns, there are so many things to do to take advantage of this amazing area. I encourage you to take a look at the calendar and pick a few events that you’ve never been to. So many of them are outdoors, whether it’s a concert or a tour of the hill country wineries, there is nothing like exploring the hill country this time of year. As we move into 2009, we have a lot of things to look forward to. We have seen a positive trend in the Cordillera Ranch real estate market which gives me comfort that, despite all the positive things we hear about the economy (insert a chuckle), this community will continue to buck some of the national and regional trends we see and hear about. With the progress and imminent completion of the stunning clubhouse facility later this year, it’s easy to understand why people continue to see the incredible value and unmatched lifestyle that is part of this community. As we’ve said for so long, it’s really the people that make this community what it is. The features of this issue will do nothing to create any doubt about the special people and events that make this place so unique. Many of you have given us positive feedback on how much you enjoy the Cordillera Ranch Living magazine. It is our mission to bring new ideas to each issue so that it always gives you something new that you are interested in reading about. The best ideas for future issues will come from those of you who live and socialize in Cordillera Ranch. The Villas at Cordillera Ranch

Many of you continue to inquire about the “villa” product that has been discussed over the past few years. We have dedicated hundreds of hours over the past two years to the researching and planning of this unique village to make sure it is the perfect fit for Cordillera Ranch and we are extremely excited about its official launch planned for April. This “village within the community” will
provide a truly unique lifestyle that we have not been able to offer until now and based on the high level of interest from visitors and current property owners over the past couple of years we anticipate significant demand for it. In 2007 we selected the award winning architectural firm, Cornerstone Group Architects, with offices in Austin and Aspen Colorado, to design the Villas and assist in the site planning of the project. Cornerstone has won numerous architectural awards and accolades for the design of creative, upscale residences in Texas and Colorado and was ideally suited to help us carry out our vision for this project. As planned, the approximately 36 acre Tuscan themed, hillside village will be located on Clubs Drive stretching from the new Tennis Center at the Clubs of Cordillera Ranch southward to near the Joe Klar Rd entry gate. The Tuscan styled Villas will be located behind a meandering rustic stone wall running along Clubs Drive which will provide privacy and help define this unique village. The site offers a variety of homesites with great character ranging from magnificent hillside views, gently sloping interior sites, to fairway homesites along hole # 3 (Phase 2). A walking path will wind its way throughout the villa community and the close proximity to the clubhouse, tennis courts, pools and fitness center will offer easy access via golf cart or walking path for all owners. With architecture inspired by the romantic country homes of Tuscany and the Mediterranean, Cornerstone has created four dramatic Villa plans, each with natural rustic stone and earth tone stucco exteriors along with imported Italian clay tile roofs. Entry to each home is through a stone-walled portico into a private garden courtyard providing continued on page 12

an intimate outdoor living area for entertaining. The residences will range in size from approximately 2,500 square feet to more than 4,300 square feet with each plan offering several expansion options that will allow buyers to expand and customize each Villa by adding bedrooms, game rooms, exercise or media rooms to fit their lifestyle and most importantly allow each home to have its own distinct look and character. Several of the plans have an optional detached guest casita off of the entry courtyard. Two of the plans are single story and the two 2-story plans have the primary living area, kitchen, dining, master and guest bedroom on the main level with the upper or lower levels providing space for game rooms, media rooms and extra bedrooms. All Villa plans will include, as standard features, high vaulted ceilings with Douglas fir beams in the great rooms, graceful interior archways, gourmet kitchens with Viking appliances and covered outdoor terraces or loggias with optional fireplaces and outdoor kitchens. Each residence will be complemented with natural granite countertops in the kitchen and all baths, travertine and limestone tile floors along with divided light wood windows and stained, solid wood interior doors to bring an unequaled level of elegance and quality. Buyers will choose from a pre-selected palette of stone and stucco colors, blends of imported clay roof tiles and paint colors so that each home is truly unique but in architectural harmony with its neighbor. Everything from the entry of the community to the streetscape landscaping and walls will reflect the essence of Tuscan inspired architecture. The initial offering prices will range from the mid $600,000’s to approximately $1.3 million including homesite. As currently planned, the project will be developed and built in 3 phases with the initial phase consisting of 26 individual, freestanding or detached Villa residences. In addition to being members of the Cordillera Ranch POA, this village will also have its own sub-association that will provide year round exterior landscape

maintenance for all of the Villas and common area to allow for a “lock and leave” peace of mind for those whose lifestyles include frequent travel or own homes in other places. Pasadera Builders will be the general contractor for all of the residences with expected commencement of construction in May and completion of the first residences in early 2010. You will recognize some of Pasadera’s work in Cordillera Ranch such as the Clubs’ Cabana Grill, Swim Facility, the new Tennis Center Clubhouse, the golf course maintenance building and golf course comfort stations. This is a very exciting project for Cordillera Ranch that we believe will satisfy the desires expressed by many since we first announced The Clubs of Cordillera Ranch. We plan to officially announce this project to the public in April but want to allow those who have expressed an interest in the Villas an opportunity to preview and purchase first. The winery's tasting room includes a large working stone fireplace and an antique bar originally from the Green Tree Saloon, established in San Antonio during the 19th Century. The bar and backdrop were produced at the August Kerns Supply Company in St. Louis, Missouri in the mid-1800s. The bar is made of long leaf red pine and ceiling tin panels. The backdrop features are Moravian design. The tasting room is decorated with arts and crafts by local artisans and with antique pie safes and armoires found in the Fredericksburg area. Adjacent to the winery is The Homestead Bed and Breakfast, a log cabin built circa 1890 and fully renovated in 1997. Along with the milk house, corral and hand-dug water well, the cabin recreates the original homestead. Becker Vineyards is open for tasting, tours, wine gift purchases, and picnics. lose your eyes and imagine a chance to see the vast beauty of Cordillera Ranch while enjoying the sounds, smells, and the little details that often escape us in our busy lifestyles. Imagine taking a slower pace, leaving the crowds and cities behind for a while and getting to exist with nature. Imagine being eye to eye with a doe and her fawn, or watch a flock of wild turkeys busily scratch for food. Now, add the smell of fresh hay, the sounds of horses nickering and the sheer joy on a child’s face as they ready themselves to ride their favorite horse. These tidbits are just a few of the things that make the Equestrian Club at Cordillera Ranch a hidden, yet most beautiful jewel on the crown that is Cordillera Ranch. The Equestrian Club is nestled in the far Northwest corner of Cordillera Ranch just inside the west gate. It resides on 90 acres of rolling landscape complete with live oak trees, abundant native grasses and beautiful wildflowers in springtime. The focal point of the facility is the rustic King Ranch style barn that features roomy 12x12 stalls with attached 12x40 runs which houses member horses as well as club owned horses. An indoor wash rack with hot and cold water, members only tack room and kitchenette with sink and refrigerator are also available in the barn. In addition to the stable, there is an outdoor arena suitable for many types of riding, a covered round pen, and plenty of pasture for outdoor boarding and turnout. Adjacent to the outdoor arena is the Club Lounge and viewing area. Here members can relax after a trail ride, enjoy cold or hot beverages, or watch their favorite student take a riding lesson. boarding available for horses that prefer to live outdoors. All of the above options include feeding twice a day, stall cleaning, turnout for the stalled horses, and blanket and un-blanket in the winter. Along with the board comes full use of the facility including both arenas and the miles of trails that cover Cordillera Ranch from end to end. For those horse lovers that do not yet own a horse, we have several club owned horses to
enjoy. These horses are educated and diversified enough to teach a young child or beginner adult to ride, offer challenge to an experienced rider, or take out on the trail. Our youth and adult lesson program is building bigger all the time. We offer group as well as private lessons. The disciplines offered are, Western, English, basic Dressage and Hunter/Jumper. On most afternoons the EQC is filled with laughter and the sounds of kids enjoying horses. There is something truly magical about a child bonding with a horse, and we firmly believe in perpetuating that relationship. We put together a spring and summer youth horse camp that can only be described as AWESOME! For an entire week in the months of March and July the kids take over the EQC for four hours a day. They groom the horses, they ride, rope, laugh, meet new friends and keep
the instructors hoppin! On the last day of camp the families and friends of the campers are invited for an exhibition where the kids can “show off� what they learned throughout the week. Spring Break Camp will be held March 10-14, and summer camp is scheduled for July 21-25. We offer trail rides throughout the entire year, as the weather permits. We enjoy trails within the gates of the EQC and all through the ranch. Most of the trail rides initiate at the EQC and cover the west end of the ranch up to Spring Creek. We are also able to trailer the horses over to the east side of the ranch to enjoy the beautiful Swede Creek park and Guadalupe River park areas. For those that have a lot of ambition and a few hours to kill, we can tour the entire ranch via horseback. Trail riding through the community is a great way to see the ranch from a different perspective. We are here to enable the members of Cordillera Ranch to experience the wonderful things that horses have to offer. Whether your desire is the occasional trail ride, for your child to become an accomplished rider, or just to come out and feed some carrots, we will do what it takes to meet your needs. A Tour of One of Cordillera Ranch’s Most Exquisite Homes

fter a partial retirement from the oil and gas industries, the Fullers began the monumental task of designing their new home. Utilizing a specific vision for the residence, the Fullers enlisted Lee Anne Keim Interior Design, drew up their preliminary plans, and started shopping. “We began this process in 2003. Originally we were looking at a ‘lock and leave’ townhouse because we wanted to travel…but we eventually leased a home in Cordillera on 6 acres, and we enjoyed the space. We called Tracy Harris (Cordillera Ranch Realty) and asked for a larger lot, and our friends had just purchased a larger lot next door, so we were able to pick up 18 acres right here. After we lived here, and leased, we just didn’t want to leave. I had always wanted a stone and stucco home, because of my love of Italy. Boerne’s original name was Tusculum because it looks so much like Italy so I began to design my Italian villa,” Nawanda Fuller explains. “We wanted to have an inviting home for friends and family and we tried to find an Italian name for the feel of what we wanted and it was ‘Villa Serena’. It means ‘restful or peaceful’…and we wanted that feel for the setting. We also have 10 grandchildren, and so we wanted a lot of space for them to run and play.”

work all day, but when they can go into one of my homes and see my work and feel it, and realize how it makes them feel, then that’s what inspires me.” Nawanda agrees. “Without Lee Anne we wouldn’t have built this home like this. From room to room, the transitions are elaborately and perfectly done, and that amount of detail isn’t something we could have done on our own.” As they finalized their plans, the Fullers needed to decide where to focus their efforts. Keim explains, “We tried to focus much of our energy on the main floor, where they spend 90% of their time, and we tried to use an eye for detail with those areas. We wanted all the angles to have little surprises showcasing the attention to detail. It all just came together. The whole home is livable and touchable and cozy, and yet expansive.” Nawanda can easily identify her favorite features. “One of the things I love in this home so much is the granite kitchen island. It’s called ‘Louis Blue’. When I saw it at the tile yard, I said ‘I have got to have this in our home’. We had already picked the other countertops, and we knew they wouldn’t match, so we changed the design and color of the other counters. It’s simply beautiful. “ Following the Italian design, the Fullers enlisted craftsmen from Italy for much of the tile design, and wood craftsmen for much of the hand-carved woodwork. Keim details, “I designed every single piece of tile we put in. It’s a very complicated design, that was tremendously difficult to have installed. The craftsmen that Burdick and Christofilis supplied were wonderful, and the finished product is simply breathtaking. “ As every detail of this home was planned, considered, and chosen carefully, one can only assume that the location for the home itself was just as important a decision. Nawanda answers quickly, “I’ve never lived in a neighborhood like this. I can drive people through here and name every person’s home, and that amazes people. When we lived in Houston and Plano, we didn’t know our neighbors. Cordillera makes it so easy to get involved and meet your neighbors.” Dean adds, “When everyone was leaving a party we had, Mac and Carla (Northington – original owners of Cordillera Ranch) were leaving, and I told them ‘Thanks for letting us live here’ and I mean that.” Keim agrees, but for different reasons. “I like the worldwide appeal of Cordillera Ranch. It attracts people from all over the world, not only Texas and the United States, but there are people there from all over the world. It’s sort of like being in this home – it’s very professional, and you don’t even notice how much thought has been put in behind every aspect of the Ranch. From the Cabana to the new club, to the course, the entire layout has had a lot of thought put into it, and as a designer, that’s important to me.” From the back patio of their home, it’s clear that the Fullers are pleased with the result of their work. Utilizing the design expertise of Lee Anne Keim, and following their very specific vision from start to finish, the Fullers have reaped their rewards. However, they recognize there is more to their happiness than just their home. “We love this house, but continued from page 27
With this vision in place, Lee Anne Keim had her work cut out for her as she surveyed the plans for this 6,800 sq.ft., 4 bedroom, 5.5 bath home. “My mission for this house was to create the most beautifully detailed home anybody had seen in a long time. I wanted to be able to show other people exactly how far I can go. The sky is the limit. If they want me to think of it, dream of it, and just be blown away, then I wanted to be able to show that off. I wanted them to not necessarily see a home, but also to see a true work of art. I also want a timeless home, where they are happy with it for as long as they are in their home. I’m very passionate about this house and what I do, and I think you can prove yourself by example. I can show people pictures of my

we know it’s just a house. We love the Ranch and the people more. We moved so often the past 10 years, so at this point in our life, to have this opportunity to meet new people and forge relationships from the comfort of this most beautiful home is just wonderful.”

ometimes you never know who is sitting at the table next to you having lunch at the Cabana Grille. Or you’re unaware of the notoriety of a member of the twosome ahead of you on the golf course. And sometimes you are amazed to find that that man, recently retired, was one of the most powerful men in the Armed Forces. General Paul Hester is an unassuming man. He has a slightly quiet nature to him as he relaxes on his veranda, enjoying a cocktail with Lynda, his wife of 27 years. Recently retired from the Air Force, General Hester entered the military in 1970, at the height of the Vietnam War, and simply never left. As unassuming as he may be, his piercing gaze is indicative of more than 200 combat hours as a fighter pilot throughout Southeast Asia, and a total of almost 3000 flight hours. Rising through the ranks of the military, General Paul Hester was promoted to a 4-Star General in 2004, making him one of only 7 such officers in the United States Air Force. Recently retired and now a resident of Cordillera Ranch, General Hester sat down with us to detail his many adventures. “My family always had folks that served, as the previous generation was in WWII. There was never any doubt that I would spend a portion of my life in the military. My dad obviously had an interest in WWII because he flew in that war, but he never pushed Air Force. I came to that conclusion myself.” Upon entering college at Ole Miss, Hester quickly enrolled in the ROTC program. He completed his two compulsory years, and re-enrolled for an additional two years. “The last two years of ROTC are for advanced students, pending a commitment as they will pay your tuition. At the end of the 4 years, you are a 2nd Lt.” “After graduation, I went on to pilot training. This was 1970, and I had just received my Accounting Degree. There was a delay of me reporting to pilot training, so I had a year as a tax accountant for Arthur Anderson in Atlanta. I had a job waiting for me at the end of my service, but I obviously never went back.” After a quick year of pilot training, Hester was sent on his first tour to Vietnam at Korat AFB in Taiwan flying an A7D plane, which is a single seat attack bomber. Quickly, he learned the realities of combat. “I’m not sure anybody knows what to expect when you get into combat, and it changes based on the level of combat. Was it fearful, exciting, and thrilling for a 23 year old boy? Sure. Was there some naivety? Definitely. It met my expectations, though. As Winston Churchill said, ‘ There’s nothing more exhilarating than being shot at and missed’”. Additionally, Hester was able to gain some all-important knowledge. “All of the young people that go into the military and face something stressful, they grow up faster. They understand very quickly what’s important in life and what’s not. It doesn’t mean it will always stick with you, but at that time, you know what’s important to you.” Eventually transferring to Luke AFB in Glendale, Arizona, Hester transitioned into the F-4, and began teaching others how to fly that particular aircraft. “I thought about de-enlisting at this point. My initial

commitment was for 5 years. I was coming to the end of that, and I thought about going to law school. About that time in my life, the Air Force was introducing the F-15. I had an opportunity to get in that program early, and law school became a distant memory.” After training others, Hester’s career took him to Germany. “Once in Germany, I helped stand up the first wing of F-15 in Europe at Bitburg AFB. The wing at Bitburg flew F4s, so they needed to transition to the F-15. So I came in as an instructor to help them transition. That was real exciting. That was the height of the Cold War and we set Zulu Alerts at Bitburg. We had wall to wall missiles, hot and ready. You get a combination of active scrambles and training scrambles…so you’re going live with active missiles. After afterburner, you make a turn and begin looking for Soviet airplanes.” While perhaps a scary prospect of going to war with the USSR, Hester and his force remained confident. “There was never any doubt in our minds who was going to win that contest. We knew we were the best pilots in the world.” Hester was quickly promoted in 1979 to a Staff Officer for Tactical Command Headquarters in Leavenworth, VA. “I had reached a point where I knew that I would serve 20 years and retire. I was still having fun, and it made economic sense to carry that 20 years.” At the same time, Hester had also met his match in the form of his wife, Lynda. Lynda remembers, “I was going to school at Old Dominion, and we met thru mutual friends. My first husband was shot down and killed in Southeast Asia, so I was an ‘MIA wife’ for 7 years. In the late 70s, the US government did a review and tried to resolve the cases of the missing.
They declared him “presumptively dead” and we were married. I had been on the east coast at the Air Force Base, and I took my children to Langley to be with Paul. We were married in the Langley Chapel in 1982.” Quickly promoted again, Hester and his new family went to Washington, DC to run the office for the House of Representatives for the Air Force. Then in 1990, Hester went to the National War College for a year. Following that, and in the same year, the Air Force moved him to Okinawa, Japan. “We went there and basically never came back until we retired. The Air Force had decided that would be where we would live life. I was now the Vice commander of the 18th Tactical Fighter Wing.” As for Japan, the Hesters were in love. “We spent 3 different tours in Japan, and loved every minute

of it. We loved the people, loved the island, and I loved flying out there. They are such great people and would just give you the shirt off their back.” Despite their love for Japan, the military had other plans for General Hester. He returned to attend Harvard for a year. Then a quick move to Washington where he spent a year on the Joint Staff. Then to Vienna to work with the Commission on Security and Cooperation in Europe, and then back to Japan. Another move to Florida where Hester was the Wing Commander of Testing and Evaluation. He then returned to DC for a year, after receiving his 2nd Star. In 1999, Hester received his 3rd Star and was sent back to Japan as the Commander of US Forces in Japan. Finally, in 2004, Hester received his 4th Star, and was sent to Hawaii as the Commander of the Pacific Forces, a regiment with over 55,000 active. 4 years later, he retired. A lifetime military family, the Hesters were poised to make a decision that had been delayed 35 years: where should we settle down? “It was a simple process – we had a home in DC, and figured we would always move back there. However, we made a family decision to not retire in that environment. The pursuit for our home fell on Linda’s shoulder, who is from Texas. I told her I would only go one place in Texas – San Antonio. I like South Texas. It became her job to find a house, and on one of our visits I sent her to scout some locations. She did, she came to Cordillera Ranch, and this was the first house on the first day she looked at. So I can thank Kevin Best for taking her around. She walked in the front door and said ‘this is it.’ That was on a Tuesday, and we bought it on Friday.” Lynda explains her decision, “The quirkiness of this home is my favorite. It fit the blend of our life – some of the Japanese aspects of the home were what we wanted. I wanted the casual rustic with the Japanese flair, and I just loved it. I walked in and could see the trees and the pools outside, and I was hooked. Robert Thornton was a joy as well, as we learned what he stood for as an individual, in terms of his quality and his commitment to
his product. People ask each other all the time ‘who built your home’, and when they hear Thornton, their eyes just light up.” A man known for making some difficult decisions, the Hesters couldn’t be happier with the decision of living in Cordillera Ranch. “We are overwhelmingly pleased with the Ranch. We’ve migrated through what I like to call “Tribes” of our life. I have Ole Miss, my fraternity, then the Air Force for 37 years, and the Ranch and the residents have become my new tribe. You certainly feel home when you come thru the front gate. Last summer we had some retired General officers from the Japanese military to Cordillera, and they came and learned all about Lackland, Randolph, and we brought them to Cordillera for dinner. We introduced them to the Hill Country. They walked out the front door and saw the night sky and how dark it is here and they just fell in love with it, much as we have.” A life that has been brimming with adventure, travel, and exotic locations, one naturally wonders if the General Paul Hester still flies, still travels, and still seeks the intrigue that the past 37 years have given him. “You know, just getting in a plane to fly from point A to point B is not very exciting to a fighter pilot. Instead, I’d much rather just ride my Harley. And hey, my blood pressure is lower.”

Happy Golf New Year

ven though the ball dropped in Times Square a little over two months ago to ring in 2009, in the golf world, March is the start of the New Year. The weather is great, the golf course is green, and the days get longer, all suggesting it is time to play golf. Make a checklist and then get out to the course. Find the clubs in the garage, check. Clean off the inch of dust on them, check. Now where are the shoes again? Now the fun begins! How do I hit this ball again? Here are a few suggestions to get your playing year started on the right foot. Paying attention to some basic fundamentals, although not glamorous, is the best way to build a swing. Jack Nicklaus started each and every year with a visit to his longtime teacher, Jack Grout, and they would review his fundamentals one by one. Starting with his grip, stance, and posture then progressing through his swing they would review the fundamentals that had been taught to Jack since his youth. You can and should do the same thing. The first item to pay attention to is your grip. The easiest way to practice a good grip is to have a 6 or 7 iron with a corrective grip on it. A corrective
grip is a molded grip that can be purchased at most golf shops and it places your hands in the proper position. At home, practice placing your hands on and off this club 10 times a day. Hitting practice balls with this club can give you a great feeling of a proper and unified grip when hitting the ball. Many swing faults are the result of poor alignment and body angles. The next fundamental to pay attention to is your alignment. Simply place an alignment rod, club shaft or club on the ground just to the outside of your golf ball. Then make sure your feet, hips and shoulders are parallel to that alignment aid, and that your clubface is at right angle to the aid. Balance is not to be overlooked as a fundamental. Good balance helps create and maintain a smooth tempo. To practice good balance one of the most effective ways is to hit balls off a tee with a 6 or 7 iron and with your feet placed together. Make a swing that is easy enough so that your feet remain planted on the ground and you are hitting the ball. Unfortunately, there is not a magic pill that can make you a better golfer. The top players in the world execute fundamentals better than lesser players. Many things written in golf magazines about methods relate to a particular style that a player may use. Since the top players in the world have varied styles then it can be assumed that one method is not necessarily a cure for all players. Sit down with your PGA Professional and list your short and long term goals and then a roadmap can be developed to help achieve these goals. Practicing fundamentals and developing a plan will help you celebrate a Happy Golf New Year!

Cooling beverages and energy snacks are always available after or during tough on court sessions. The spacious locker rooms are available for a quick change or to store extra gear. The courts of course are first class with “cabanas” between each set to provide shade, rest, and a place for gear. Cold bottled water is on every court, the corners of each court are angled to filter balls to the middle, and best of all each court has eight lights for the best possible view at night. The courts are set in twos and separated so they will fit in with the natural lay of the land but close enough so by standers won’t miss any of the action. Tuesday thru Thursdays. Saturdays are a great time for family clinics, private lessons, and the always popular “Cardio Tennis” class at 9:30. Video analysis of stroke production is a frequently used tool to break down strokes in an effort to identify problem areas but also too measure ones progress. Events are an important part of the fun with tennis at Cordillera. We have evening inter club challenges, the competitive “Extravaganza”, the holiday morning social, and the very popular member-guest. We also host a men’s league every Wednesday evening, mixed leagues, and ladies 2.5 and 3.5 USTA teams. Summer time brings Tennis, Sports, Adventure Camp, for ages 5 to 11, which is a camp designed specifically for Cordilleras’s unique outdoor opportunities. We play tennis, fish, adventure hike, pool swim, play softball, soccer, fly kites, roast marshmallows, and other outdoors games. The idea is to expose kids to different sports, explore the world around them safely, build confidence, and have some serious fun doing it. No computer games allowed. I have played tennis in many different parts of the U.S., Europe, Australia, and South America and the first time a saw the Cordillera Ranch tennis center I thought wow somebody did this right. How to Make It:

here are many classic wine to food parings we encounter during dining out or at home. Steak and Cabernet Sauvignon, Oysters with Chardonnay and Tomato based pasta sauces with Sangiovese are all classic combinations you may have tried, but one we miss out on is at dessert. What better way to finish a dinner at the Cabana Grille or WOW your dinner party guests at home than with a great wine to food match like Port wine and Chocolate. Port wine is produced from grapes grown and processed in Duoro region of Portugal, the third oldest defined and protected wine region in the world. The wine produced is then fortified with Brandy to stop fermentation which leaves residual sugars in the wine and boosts its alcohol content making it an ideal dessert compliment. This is where the chocolate comes into play. Everywhere you turn lately- you find chocolate. A long time staple on hotel pillows and grocery store candy aisles, now premium, all natural, and gourmet chocolates are all the rage. This attention on premium chocolate has elevated it to star status on restaurant menus around the country. At the Cabana Grille, it is the Lava Cake and armed with this recipe and a bottle of Port you can replicate this experience at home.
Chocolate Lava Cake Preparation Time: 15 minutes Cooking Time: 12-18 minutes Serves 4 individual cakes
Ingredients: 6 ounces Semi-Sweet Baking Chocolate or use your favorite 55% or greater Dark Chocolate Bar 6 ounces Butter (diced and at room

Preheat oven to 350 degrees 1. Melt the chocolate on low heat in sauce pan or double boiler. Once melted, remove from heat and… 2. Stir in diced butter until it melts. 3. In another bowl, beat eggs and sugar, until it starts to whiten. 4. Stir in melted chocolate and then the flour 5. Butter 4 individual ramekins, and pour in chocolate batter. ( We put a little extra sugar in our bowls as well) 6. Cook 12 minutes and check doneness 7. Tip ramekins upside down on to plates and serve
Hints: You can prepare this recipe a few hours ahead of time and then bake before serving. In buttering the ramekins, butter the bottom first and then the sides – wiping from bottom to top. It will help the chocolate rise even more. On the baking times, it just depends on how runny you like it. If you like an oozing center, you want the top to be cooked through and the center runny. Just check it with a toothpick after 10-12 minutes. If you don’t like an oozing center, just let it cook a little more and you will have a moist warm chocolate cake. Either way, you cant go wrong. For an extra touch, serve it with raspberry sauce, Crème Anglaise, or Vanilla ice cream. Why do these flavors match? Dark chocolates and red wines, including port, have comparable properties, causing the tannins in the wine to enhance the sweetness in the chocolate, while the fruit in the wine brings out the bitter undertones and smokiness in the chocolate. So the bold tannins and the sweetness found in ports make it a great match to dark chocolates and baking chocolates! So next time you are at the Cabana Grille save room for a Lava Cake and a glass of Warre’s King Tawny Port or spend a few extra minutes on the wine aisle at the liquor store picking a port to finish dinner with.

n April 4, 2009, Cordillera Ranch residents and their friends will gather for the Cordillera Ranch Shindig to have “A Good Time for a Good Cause”. This event will be held under the stars and spreading oaks at the beautiful Cordillera Ranch Equestrian Center. The Cordillera Ranch Social Club, in 2002, agreed that they wanted to do something that would provide support both physically and monetarily for a deserving Kendall County area charity. It was decided the “Shindig” would be a catered event in the neighborhood park with dinner, dancing and both live and silent auctions. Over 200 people attended and over $25,000 was raised that evening! Neighbors were so enthusiastic that they soon began planning for another. The planning and preparation process of Shindig was a great way to meet neighbors and to always be having “A Good Time for a Good Cause”. As the neighborhood grew, so did the number of volunteers and they brought with them a variety of talents, which helped this fun event grow too. Shindigs 2003 and 2004 were held at the Northington Horse Ranch and Cordillera Ranch residents didn’t let the rain of 2003 dampen their generous spirits. Each year the number of Shindig guests and the amount of money

raised for various area charities has increased. In 2006 the Cordillera Ranch Shindig Foundation was formed enabling Shindig to donate funds to more than one 501(c)(3) organization. This has made it possible to make a greater impact in the community by broadening the number of people than can benefit from the designated charities. Shindig 2006 was held at the newly opened Clubs of Cordillera Ranch Pool Complex. Attendance was capped at 750 and over $200,000 was raised for five local charities. Planning for the 2009 Shindig began last spring. Cordillera Ranch neighbors suggested area 501(c)(3) philanthropies to be considered and again five charities were chosen as recipients of Shindig funds. This year all net proceeds will benefit the Bergheim Volunteer Fire Department, Christian Job Corps of Kendall County, Hill Country Mission for Health, Kendall County Women’s Shelter and the Triple H Equitherapy Center. ne of the smaller, more selective homebuilders at Cordillera Ranch, Patrick McGrath and McGrath Custom Homes has made a name for building some of the finer homes in the Hill Country. Focusing on a home that he describes as “practical”, McGrath has carved a niche for himself that suits his personality and style. Celebrating his 15th year of homebuilding, McGrath knew early on that this was his calling. Upon graduating high school, McGrath enrolled at Texas A&M, seeking a degree that would have him following in his father’s footsteps, as an orthopedic surgeon. “I was pre-med for a while, and I changed it to building and construction. I remember calling my mom and telling her what I was doing, and she said ‘I didn’t send my son to college so he could learn how to swing a hammer.’ But I knew that this was the direction I wanted to go. At my sister’s house I had helped do some remodeling when I was 13 or 14. I worked construction when I was younger, and just really enjoyed building. I really think people in homebuilding have a gift for it. Some do, and

some don’t…but the good ones can visualize things and see them, and it’s effective.” Hurrying to get out of school, McGrath moved to the San Antonio area to be with his wife, who was finishing nursing school. McGrath immediately entered the homebuilding business. “When I graduated, I worked for Pulte Homes as a superintendent. I did that for 3 years. I enjoyed it, but I wasn’t able to be involved in the process as much as I would have liked. As soon as I got one started, I had to go to the next one. Eventually, I had an opportunity to step out and do my own thing…and built my first house. From there, I was off to the races.” And ‘off to the races’ he was. Continually working as a homebuilder since 1995, McGrath draws on several inspirations as he creates his homes. “My favorite part is that you’re starting with the raw land and making something from nothing. It also keeps me grounded. I work with guys making $5/hr, all the way to the multi-millionaires that are buying the houses, and it’s nice
to stay grounded…It also helps me to understand what makes you happy, and it’s not always the money. Everybody’s got a kitchen, a toilet, and a bedroom. We’re all people, and you gotta remember that we’re all the same, no matter what kind of house we live in.” As McGrath built a name for himself, he came in contact with Cordillera Ranch, and a strong partnership was formed. However, McGrath laughs, it had an unflattering beginning. “I bought a lot here 10 years ago when Cordillera Trace was only paved for 2 miles. Back then, I remember the sales guy told me ‘Maybe one day you’ll be a preferred builder out here’ and as the home prices have become more diverse, I was able to find a great niche in this community. Cordillera has done such a great job out here controlling the architecture…and keeping the aesthetic standard. It’s such a unique place out here… and has such a great offering to residents. They are able to provide such an amazing environment, and I’m honored to be build-
ing exclusively at Cordillera Ranch now.” Again, McGrath’s niche of building a practical home fits him just fine. “They brought me in because I wanted to build a more affordable home. As a man of faith, I am a very practical thinker and feel there’s a bit more practicality in a $500,000 home. It just fits my personality. As I’ve stepped out of my bubble, I did a couple of specs that were $1 million, but I think I find a greater joy in building a home that I have to get more with less. It’s also part of the challenge in terms of staying in budget.” McGrath, his wife Amy, and their 5 children live in the Spring Branch area, in a home that was McGrath’s first home to build from design to completion many years ago. An avid biker, McGrath works hard to keep his faith, his health, and his family in good spirits. “God has designed everyone with gifts, and this is what I was made to do. There are days when it’s frustrating when things don’t go right, but there’s never a day that goes by when I don’t love what I do.”

What are your hobbies/interests? I actually love anything to do with the outdoors. I was in the commercial diving industry offshore and have a passion for the ocean which is probably my favorite arena.

It’s an individual sport where the clock is your judge and money is not your idol. My favorite sporting event I have attended was watching my daughter win a gold medal in swimming at her State meet when she was 7. I have never been so proud and filled with joy in my life. How did you get into real estate? By my deep desire to leave Houston. I came through the Hill Country in 98’ on the way back to Houston from some time in the mountains of New Mexico and saw how beautiful it was. It just felt like home and I had not found that in all of my travels. How long have you been with Cordillera Ranch? Cordillera Ranch has been a part of my life since 1999.
What is your favorite aspect of working in the hill country? I love the outdoors and this area has a rugged
one. My greatest challenge has been sitting in the office and doing the administrative paper work. I love the details in a contract and fighting for my customer’s best interest, however, everything beyond that is where I am challenged. I can tell you the details of every lot, rock, tree and home. I am just not an office guy.
What has been your most rewarding experience in the business? I have helped customers who have been around the world looking for a place to call home and to retire. They are making one of the most important decisions in their life for their family. My reward is their trust and faith in my knowledge to help educate them in their best interest.
What has been the most rewarding experience in the industry? My most rewarding experience in the industry is selling property in a development that I personally believe in. I was always involved in operations in my diving and oil field days and that was self fulfilling. When you are selling something, the fulfillment comes from a core belief in your product.
Favorite aspect or feature at Cordillera Ranch? My favorite aspect is the people. You really have a great diversity of people from all over the world. It has been very rewarding being able to share a part of their life. My favorite feature is the raw natural beauty of the creek canyons, with Spring Creek, Swede Creek and Panther Creek.

Here’s a list of some of the Cordillera Ranch Family who have been in the news recently. Congratulations! Dr. Ron Duncan, of Turf Ecosystems, recently released his new book Water Quality in Turfgrass. Dr. Duncan is an industry leader in plant breeding and environmental stress tolerance in grass crops. This was the ninth book he’s been involved in. One of the most recent breakthroughs by Duncan is his development of the SeaIsle paspalum grasses which can be irrigated with high salt content water, such as seawater. This development has revolutionized the golf course business because of limited supply of high quality irrigation water. Find more about Dr. Duncan and his accomplishments at www.turfecosystems.com Dr. John Brazil, President of Trinity University and longtime Cordillera Ranch homeowner, recently announced that he will retire from the presidency of Trinity University in January 2010. Brazil has held the top position at Trinity since 1999 and during his time in charge he has overseen a successful $200 million capital campaign and seen the university amass a $1 billion endowment. Congratulations John, now you have more time for golf!
• After a two week lull, the weekend of Friday 13th started the most recent wave. On February 13, Janet Kramer made her first career ace on the 7th hole when she aced the 122 yard hole with a 7 iron. What made the feat more impressive is that there was dense fog and Janet did not realize she made a Hole-In-One until arriving at the green. Not to be outdone, her playing partner Eldon Kramer then promptly holed out his bunker shot for a birdie 2! How about a total score of 3? • On February 15, Jim Thor aced the 16th hole from 133 yards with his 9 iron. This is his first ace and it only took him 46 years!
• Also on February 15, Dr. Jerry Merritt aced the16th from 133 yards with his 9 iron. This is his second ace on the 16th as he made the first Hole-In-One ever recorded on that hole on July 2, 2006! To celebrate the feat, rumor has it that Doc stepped to the tee on 17 and smoked his tee shot by his much younger and stronger playing partners (we won’t mention any names here to protect egos) who immediately started calling for congress to investigate what A Hole In One barrage is upon us.
