his is a special issue of Cordillera Ranch Living for several reasons. For starters, this marks the one year anniversary of the publication. We’ve come a long way with it in the past year and it has been a lot of fun to produce. A lot of credit goes to Ben Schooley and his team at Schooley Media Ventures for understanding how to produce a product that is on par with the quality of this community. There are many more great things ahead that I hope you will continue to find both interesting and entertaining about the community and the people who make it so special. The feature story in this issue is centered around the completion of the new clubhouse at Cordillera Ranch. This is a very historic event in the community and we wanted to give you a behind the scenes look at the people and thought process involved in making it what it is. We could not have had a better team of professionals involved in this project. From the very beginning to the end of the clubhouse project, everyone involved brought an incredible amount of knowledge, integrity and a desire to make it happen on time, on budget and most importantly, deliver a finished product that meets the high standards of all involved with Cordillera Ranch. I can’t say enough good things about these companies and people so I’ll just say THANK YOU! Those of you who were able to attend the C Star member guest party at the clubhouse or were one of the more than 600 members who were at the grand opening party on October 10 know that the new facilities offer an incredible amount of flexibility for our membership. If you haven’t been here to experience it yet, make sure to contact Rod Boyle and schedule a tour. I also encourage you to bring your friends and family out to show it off, its something for everyone to be proud of. Dickens on Main: Main Street Boerne receives a Holiday makeover as all the lampposts are decorated with wreathes and banners, streets are shutdown to all but pedestrians and the occasional horse-drawn carriage. Attendees are taken back in time to the 19th century when Boerne was originally settled as they stroll down Main Street taking in the holiday sights and sounds. Everyone gets into the act as carolers serenade passers-by and shop owners dress in Victorian Era garb. Come enjoy the crisp winter air, pick up your Christmas presents and stay to enjoy the parade. Dickens on Main takes place the weekends of November 27-28 and Dec 4-5.

Weihnachten in Fredericksburg:

During the Holiday Season, Fredericksburg is home to Weihnachten in Fredericksburg. Weihnachten is the German observance of Christmas. Come enjoy the three-day Christmas market and festival complete with a Christmas parade, Christmas Tree Forest, live entertainment and traditional German food and other delicious refreshments. With the exception of the parade, which travels along Main Street, Weihnachten activities take place on Marktplatz in downtown Fredericksburg. Weihnachtsmarkt takes place November 20 through the 22nd.

Fiestas Navidenas y Fiesta de las Luminarias: Christmas season in San

Antonio has a Mexican flair. Festivals include the four-day Fiestas Navidenas in Market Square and Las Posadas, a reenactment of the Holy Family’s search for an inn during which children go door-to-door seeking shelter. The most spectacular holiday event is the river parade and lighting ceremony known as the Fiesta de las Luminarias. Taking place in late November, this event celebrates the illumination of over 122,000 twinkling lights, suspended in the trees along world famous San Antonio River Walk. Meandering through the city’s center, the Riverwalk is transformed by thousands of decorative lights. The Fiesta de las Luminarias runs from December 4-20 and Fiestas Navidenas takes place on on December 5th.

Old Gruene Market Days Festival and Wassailfest: Christmas in New

Braunsfels isn’t complete without Old Gruene Market Days and Wassailfest. The Christmas Market Days Festival

includes a lighting ceremony, open shops and restaurants, and entertainment in the historic district. Wassailfest is an event downtown that includes wassail tastings (wassail is a hot spiced punch common in Germanic countries) and strolls through the historic downtown district. Christmas in Comfort: The annual Christmas in Comfort festival welcomes holiday shoppers to Comfort. The downtown historic district is blocked off to allow more than 150 vendor booths to fill the streets including a food court, visit from Santa, and daylong music and entertainment culminating in a lighted parade traveling down High Street after dark. Tourists and locals alike have enjoyed Christmas in Comfort for over 20 years. Christmas in Comfort takes place November 28. Johnson City: Johnson City, President Lyndon B. Johnson’s boyhood town, is a must see if you are a fan of Christmas lights and decorations. The historic Blanco County Courthouse celebrates Christmas Hill Country style with 100,000 lights just down the street from the Pedernales Electrical Co-op headquarters, where a million lights outline trees and buildings. Take a carriage ride beneath the festive

decorations to truly take in the holiday ambiance. The Johnson family will light the Christmas tree on the LBJ Ranch Dec. 16 as they have done each of the past 38 years. Visitors will enjoy a traditional candle-lit German Christmas tree and enjoy cookies at the SauerBeckmann Living History Farm, located in LBJ State Park. Johnson City’s holiday festivities take place November 27-28.

St. Nikolaus Market in Fredericksburg:

During the Holiday Season, Fredericksburg is home to St. Nikolaus Markt in Fredericksburg in celebration of Weihnachten or the German observance of Christmas. Come enjoy the Christmas market and festival complete with a Christmas parade, Christmas Tree Forest, live entertainment and traditional German food and other delicious refreshments. The Locker & Fitness Center is full of offerings that will not only allow us to use our time more efficiently but also keep us healthy and continue to build lasting relationships with our friends, neighbors and community. From our Fitness Center with state of the art equipment, to Kids Camp, massage therapy, facials, manicures and pedicures, and numerous gathering areas, there is something for everyone. At six o’clock on a cold Tuesday evening, smells of a delicious chicken casserole and orange spice tea filled the kitchen in the home of David and Ellen Tippetts. By Jeanna Goodrich

David and Ellen, along with sons John Luke and Sam and daughter Skylar, have been residents of Cordillera Ranch since 2007, when they fell in love with the natural beauty of the Hill Country. A truly welcoming home, the environment outside merges with the environment inside to create a place where nature and comfort compliment each other in style and sophistication. And throughout the home, a family presence—John Luke’s homework on the kitchen table, Sam’s reptile photographs on the walls, Skylar’s paintings on the easel—embrace visitors with kindness and open hearts. The Tippetts’ journey to Cordillera Ranch began in a big city. “After living in Houston, we had talked for several years about moving to the Hill Country,” David began, “and Boerne appealed to us for


several reasons. I was in the middle of a trial in Houston when Ellen and I decided to visit Boerne for Dickens on Main. We were in the middle of all the festivities when Ellen said, ‘What do you think about living here?’ and in a ‘weak moment,’ I said, ‘Sure, why not!’” After visiting several places around Boerne, the Tippettses took a trip to Cordillera. “When we went into the visitors’ center, I walked in and looked out the window and said, ‘Now this is what I’m talking about.’” Gary Peterson took David and Ellen on a tour of Cordillera, showing them the various available lots. “If we were going to move to the Hill Country, I wanted to

live on a hill,” David had said to Gary. “I was also very interested in the water,” Ellen added, “so Gary showed us the creek and told us about the river.” When Gary showed them the final lot, David and Ellen knew they belonged at Cordillera. After a ‘four-wheelin’ trip up a road that wasn’t even built yet, Gary took the Tippettses to the top of Mayacama Ridge, where, sure enough, their home now stands. “I turned around and saw that view and I loved it,” David said; “We went back to the visitors’ center to discuss the contract, signed it, and were the proud owners of a lot at Cordillera Ranch.” To incorporate both the breathtaking view and the CordilleraRanchLiving.com | 29

rocky landscape, the Tippetts’ next step was finding a builder. “Everyone we talked to all said the same thing: You can’t find anyone better than Robert Thornton,” Ellen said. “Stephanie [Latham], Danny [Kreifels], Dave [Morris] and Robert—the way they work together, make such a great team. They have a fantastic combination of resources for each step of the building process.” “Robert had spent so much time with it, and with us, throughout the design process, that we didn’t even think about taking our building project anywhere else,” David added; “The building process was incredible.” Outside, one notices the extraordinary efforts put into melding the house with the nature around it. A two-story home with the entry on the second floor, the design of the house follows the hilltop ridge down to the yard and pool below. Landscaping contours to the shape of the rocky terrain, allowing the natural elements to accentuate the exterior. All of the details come together to further emphasize the Tippetts’ magnificent view of the Hill Country. “After looking around for quite a while for someone to design our pool, we met Jeff from Pristine Pools,” Ellen said. “His design was unlike any other we’d seen up to that point,” David added. The family admired the way Pristine Pools worked diligently to incorporate the pool into the 30 | November / December 2009

ground without disturbing much of the terrain’s natural shape. “Even the huge rocks [around the pool] came straight from the ground where the pool is,” David commented. And with a recommendation from Jeff, the Tippettses found their landscaper: John Vroman Landscapes. Both David and Ellen remarked on how well Pristine Pools and John Vroman Landscapes worked together to create such an aesthetically appealing result, and praised their efforts as a team. “They left nothing undone,” David said. “Every little aspect of the design, installation, and implementation was taken care of.” Inside, the cave-rock walls, antique wood floors, wooden beams, and sounds of the waterfall from the pool below—


all highlighted, of course, by the panoramic view—bring a beautifully harmonious balance between nature and the cozy comforts of home. Entering the house, warmth, charm, and a peaceful serenity immediately satiate the senses. “We appreciate the old, recycled, and reclaimed,” Ellen said about the incredibly unique interior furnishings and ornaments. As a self-proclaimed antique and exotic furniture enthusiast, Ellen did much of the interior decorations herself. “Stephanie [Latham] helped a lot with the interior designs. I had a bunch of different pieces from places all over the world that I knew I wanted to somehow incorporate into different rooms in the house, “ Ellen said, “and Stephanie had a great eye for it; I can’t compliment her enough!” “Our eclectic tastes consist of cultures from all over the world,” Ellen explained, “but David and I are very Texas-proud! We love to blend cultural styles and periods and make it our unique home.” An antique, teak door from India beckons entry

into the master bedroom; a piece of wood from South America serves as a small bar across from the kitchen; even the wooden floors are antique salvage, the knots and grains adding an elegant and earthy texture to the main living area. Ellen’s favorite addition, though, is the handpainted and -crafted Moroccan design from India adorning the ceiling of the entryway. “I knew I wanted to incorporate this into the house in some way, but wasn’t quite sure how. I suggested to Robert that we hang it in the entry, and I think he was skeptical as to how it would turn out,” Ellen laughed, “but it’s such a wonderful piece of art to have as you enter the house. I think it turned out just perfectly!” Inside and out, the Tippetts’ home is naturally beautiful, and a wonderful place to share with family and friends alike. John Luke, Sam, and Skylar all proclaimed that their favorite part about living at Cordillera Ranch is “being out in nature,” an aspect which the family has integrated into their everyday lives. “The components of nature in the Clubs at Cordillera—the equestrian club, the shooting range, the river—spoke to us as the kind of environment we wanted to be around and how we wanted to raise our kids,” David said. “We like the natural elements of the home, and of Cordillera—it’s a major part of what drew us out here in the first place.”

celebrated the opening of their brand new Cordillera Ranch Clubhouse. Almost six years in planning, design, and construction, the Clubhouse is the culmination of a tremendous amount of work, dedication, and passion. Utilizing the input from members, the designs and ideas of a select group of professionals, and the finest in materials and finishes, the Cordillera Ranch Clubhouse is easily one of the finest club facilities in Texas, if not the country.

As the residents and members celebrate the opening of their clubhouse, the story behind all

of the hard work of the Clubhouse is one worth telling. Follow us on a “behind the scenes” journey of the history of the project, meet the key individuals responsible for the Clubhouse, and hopefully you’ll appreciate the facility even more.

David Hill – President, DH Investment Company and Chris Hill – Vice President, Cordillera Ranch Development From the beginning of the clubhouse project, these two set out to find the best consultants they could find. David had the vision to create the finest club community on the best piece of land anywhere in the southwestern United States. With the right team in place, the clubhouse was destined to help Cordillera Ranch meet this objective. While all the homeowners and members have watched with anticipation as the clubhouse has come into being, most don’t know just how long this project has been on the drawing board. “When we began the community in 1997 we thought a golf course would be a nice amenity, particularly given the quality of the piece of land,” David said. “We initially carved out a portion of the ranch that was best suited for the golf course and developed around it. There were a number of

hurdles that would have to be overcome before we could really consider pursuing it. First, we wanted to prove there was a market for a quality Hill Country community. Without this proven market and the large size of the community, the economics of the club project wouldn’t make sense. Second, there were a lot of entitlement hurdles that had to be overcome. We had to provide a responsible and long-term supply of water for the golf course and the homes.“ Once the initial challenges were addressed, the focus began to shift back to the clubhouse itself. “By 2002 we had overcome these hurdles and retained Jack Nicklaus to design our golf course, but a lot had changed in the private club business. After the tragic events of September 11 a dramatic shift occurred in what families felt was important in their lives. We felt that just the same old country club amenity package was not enough to meet the needs of today’s family. Families want more than just golf at their private club. This forced us to think about ways to offer activities to attract every member of the family. By adding the river club, rod and gun club, and equestrian club to a

world-class golf course and tennis facility we already had more amenities than most clubs. The only thing left was to build a clubhouse that was as unique and would separate Cordillera Ranch from any other community,” Chris said. As for what were the key features and considerations for the club, Chris summarizes, “First, architecturally, the clubhouse was meant to feel like a village. A place that is consistent with many of the original homesteads in the Hill Country where multiple buildings may have been built over a period of time. This was a major feature of the property. From a functional design standpoint, there were a few things that were key. Flexibility is number one. The clubhouse will serve as the social center of the community and it needs to provide our members with a comfortable place to have a casual dinner, host a wedding or just meet friends for a bottle of wine. Taking advantage of our climate and the dramatic hilltop setting was certainly another desire. Throughout the entire Clubhouse Village there is an abundance of terraces that can be used for dining or sitting around a fire pit enjoying the sunset. Cordillera Ranch is not in the middle of a city surrounded by restaurants on every block. Without a lot of restaurant choices close, we designed the clubhouse to have a lot of different spaces and have many different atmospheres when dining. The fitness center and spa is a very large component of the new facility as well. It is important that our members don’t feel like they need to be a member of another health club. The fitness center and spa were not an afterthought in the new facility. With a full array of fitness equipment, group classrooms and child care, the fitness center is something that is a very important component for our members.” An enormous project years in the making, the Cordillera Ranch clubhouse is the crown jewel for members and homeowners alike, and one that Chris and David are quite proud of: “Our favorite aspect is that even though it’s an extremely nice clubhouse with high end finishes, it doesn’t feel formal. It’s just a very casual but nice place where our members can feel comfortable whether they just came in from golf or are going to dinner in a pair of shorts. ’Casual Elegance’ was the objective, and I think we accomplished that.”

MIKE MARSH – architect – MAI Design Group Mike has built a career on the design and construction of high-end clubhouses for communities around the world. From Japan to New York to Texas, Mike has had a hand in the creation of dozens of clubhouses for the finest developments the world has to offer. Once approached about the Cordillera Ranch clubhouse, not only did Mike and his wife Paula fall in love with the project, they fell in love with Cordillera. Mike explains, “My wife breeds Friesian horses, and although Denver is beautiful, the winters were tough. So for the past 10 years I would take my wife Paula to all these beautiful areas like Rancho Santa Fe, California, Flagstaff, Arizona, Bend, Oregon.....but we would always stick with Denver. Then we got the Cordillera Ranch project and our entire lives changed. I brought Paula down to San Antonio and Boerne one weekend in late 2004 and Chris Hill showed her ’the ranch‘. Monday when we returned to Denver she sent Chris a check for 50 acres. Four months later I was living in Denver with a chair, a bed and a couple pots

and pans, and Paula was in Texas. She later told me that after living in Cordillera for 6 months she felt more at home than after 14 years in Denver. How many places can you live where you can have 50 acres for horses, parks with rivers that rival Central Park, hundreds of thousands of oak trees and be inside the gates of a Nicklaus Signature golf community, and still be 35 minutes from a major airport and 20 minutes to top tier shopping?” Once relocated, the clubhouse project continued to push forward. One of the challenges for Mike was how to design a facility that would market itself well to the many different demographics that make Cordillera Ranch home. “Designing clubhouses that the sales team can market to today’s wide demographics can be a challenge. One key component we use to achieve this is flexibility. The most simple and cost effective way to achieve flexibility is through a ’village’ type plan. Cordillera’s village consists of five buildings, a clubhouse, locker / fitness / spa, snack bar (phase I kitchen), pool dining (phase I clubhouse) and the pool restrooms and showers (phase I locker rooms). Obviously for this approach, the project’s climate must allow exterior circulation between some facilities. Luckily, if it does it opens a door to much more flexible project construction phasing. This allows the team time to see how members actually use the club and adjust future facilities accordingly. We have completely redesigned the Cordillera Ranch clubhouse 4 times.” As Mike went through design after design, the architectural aspects changed and yet remained similar, and they are ones that have been utilized almost perfectly. “We strive to design buildings that are architecturally different than what is being built in a region, yet at the same time belong,” Mike said. “For instance, Cordillera Ranch wanted ‘Texas Hill Country’ which typically translates to limestone walls, galvanized roofs and some exposed timbers. And although Cordillera has all those materials, we used them to achieve different textures and forms throughout the buildings, as well as massing that incorporates more vertical elements. In addition, we utilized locally grown and milled rough cedar timbers. So much of the Texas Hill County is dotted with stark white limestone buildings which try to replicate the historic architecture of the past, but most miss the mark. We strived to bring back this historic flair of the region, drawing from the truly historic architecture but in a way that highlights the richness of the community that is Cordillera Ranch. MAI design group displayed its extraordinary talents and abilities to design the new facilities from the ground up that meld into the areas historic architecture but are a beacon for new trends in Texas Hill Country Architecture.”


JIM GRAY – Landscape Architect - Rialto Studios While the interiors of the Cordillera Ranch clubhouse are unparalleled, the designers also knew that the outdoor environment would be just as important. Enter Jim Gray with Rialto Studios, the landscape architecture firm for the clubhouse project:“I’ve been working with David Hill and his development group since the inception of the project. We developed the theme for the entryway and the development standards for the entire property. That’s where we came into the ethic for the entire site, as we respected what was there and built on that as a theme for the development. I started working on this project from the beginning. We had site plans going back a long way and we consulted with Marsh and Associates and worked closely with them to revise site plans to make the most sense. So as each building has come online, we have been involved.”

As both the interior and exterior aspects of the project came together, Jim was faced with both challenges and successes. “My favorite part of this project has to do with not necessarily an individual element, but the way that the entire project fits into the land and how the amenities are integrated so well with the natural elements of the area,” Jim said.“The design team did such a good job of respecting the land and building something great around it. Along the same lines, the biggest challenge was the tightness of the site. We were trying to build a large facility on a small area, and I think we did it in a pretty interesting and creative way.” Jim also found the entire process of the clubhouse one that was enjoyable to him and his firm. “DH investments has really allowed us to practice landscape architecture in the way that we like to,” he said.“We are founding members of the design team, and that’s wonderful. A lot of times civil engineers lead the design elements, as there are so many variables, but in this case David put so much faith in us and we were really responsible for shaping the entire site, and these are things that we are so appreciative of.”

the user. Even the bathrooms are tremendous. Every focal point has been thought through. No matter where you’re sitting, walking, or looking, there is something special. There’s not one thing in this building that I don’t love. And that’s rare for me. I’m my own worst critic. I even love the smells…all the leather and the natural materials. It’s just so clear to me that this is such a tremendous environment.” Utilizing the input from the Hills (DH Investments) and the Northingtons (original ranch owners), Beth was able to take the idea and begin to formulate her plan. “For starters, I knew it would be first class. This development is so memorable, and I knew the project would be so unforgettable. I knew that the land means so much to the developers, but also for the homeowners. I knew it would be personal and hands on.” And Beth is certainly hands-on. In collaboration with the staff of the club, Beth hand-selected every chair, every fabric, and every piece of art, and that involvement only adds to the clubhouse. “The involvement from David, Chris, and Carla has just been amazing. It wasn’t a cursory review; they have been so completely involved in every single detail. From the chairs and how they fit to the color of the woods, every piece of art was hand-selected. We selected the accessories, the materials…this is really, truly something that they created. A lot of times owners will get involved simply as managers. This was something that was so personal, and that makes this so different than anything else I’ve ever done.” The clubhouse did bring with it some challenges, however. Beth was able to use her skills to address problem areas and create something amazing. “The biggest challenge is that the building is so massive and so grand. To try to humanize it, and to create intimacy inside this large volume of space was a real challenge. We didn’t want to lose the grand scale, but sometimes it can become a bit cold. It can be so overpowering, and so what we did was to divide the areas visually. The larger spaces were divided into separate areas, and inside each area we could create different environments. It enables the patron to relax, spend some time, and experience different sensations depending on where they are. Whether it’s cozy, and enjoying some wine, or enjoying the vistas…. Beth Thiel – Interior Designer – Thiel and Thiel “This has been the most enjoyable project for me in 26 years in this business. I feel like I’m at summer camp!”, Thiel exclaims while touring the clubhouse. Pointing out her favorite features, it’s obvious that Beth is quite enthusiastic about this project. “Every time you turn, every place you look, there’s something special. Every space is designed specifically for


there’s a different experience around every corner.” The real artist behind the visual impression of the clubhouse interiors, Beth sums the entire project up nicely, “The word ‘intoxicating’ is my favorite descriptor!! I left Friday night to get some sleep, and I walked in the building, and that was the first word that came to my mind. I just love every inch of this building, and the entire experience!” SCOTT SHAHEEN – General Contractor – Hooker Construction Of all the contractors, Scott and his team have probably the longest history with Cordillera Ranch. “Back in ‘98 or ‘99 when we bought property, David Hill had mentioned that they had plans to build the course and the club. We told him that we’d love to look at the project,” Scott recalled.“Many, many years went by, and we had worked with Mike Marsh on a lot of projects, and I had suggested to David and Chris that once they were moving forward, they should talk to Marsh. They talked to a bunch of architects, and eventually chose Mike. I told them that I’d love to help in any way I could once they started plans. They opened it up to bids, and we ultimately we were selected as the contractor.” A deeply personal project for Scott, it’s been both fun and challenging. “The challenges have been the same with most any clubhouse. It’s the changes in the scope and the entire design process…as we tried to figure out the best ways to have the club work. During construction, the changes and trying to maintain budgets has, and always will be, a big challenge,” Scott said. “Now that we’re done, the club just feels so very livable. Of all the clubs we’ve done, this one just has the best feel. We’ve done more elaborate designs, but this one is just the most comfortable and has a great feel to it. The views are also my favorite. The outdoor areas are wonderful. The timber framing is my favorite feature.” Scott, as well as all of the vendors have enjoyed the feedback from all of the residents and members. “Cordillera solicited a bunch of input. They listened to their members, and most clubs don’t do that. Most of these projects that are used by a community, you can’t make everybody happy, but I think that Cordillera has made as many people happy as they can while maintaining the integrity of the project.” As a Cordillera resident, club member, and clubhouse builder, Scott has truly enjoyed this project. “Personally, this is tremendous,” he said.“From the day we moved out there, we saw how unique the community is. I wanted to be a part of opening the golf club. We have a personal stake in this, and of all the projects we do, golf clubs are my favorite. It’s been a great treat to be able to do this, especially when we’re building it for our neighbors.”

the story behind the details The Cordillera Ranch Clubhouse is visually one of the most stunning facilities to tour. Every piece of furniture, every original piece of art, every door and window, and every other decorative piece has been hand-selected by Beth Thiel, owner of Thiel and Thiel, a world renowned interior design firm. What follows are some of the more extraordinary elements of the new clubhouse, with Beth’s thoughts and impressions.

One of my favorite rooms in the club - the Living Room. I call this an emotional space - as it will simply take your breath away. This room has much to absorb with interesting colors, fabrics and leathers, hand selected accessories - including woven twig baskets with raw wood branches, and a custom rug designed specifically for this space. Carla Northington discovered the organic leaf panels seen in the lower level of the room during one of our shopping trips. These panels are composed of intricate metal, holding 24 candles, creating one of the most striking visual experiences in the room. Mike Marsh designed magnificent architectural lighting in the entire club which provided multiple opportunities to create drama and interest in this room.

All rugs and carpets provided for Cordillera Country Club were custom, unique designs created by Thiel and Thiel and manufactured specifically for this project. The Cordillera logo inspired the pattern of the carpet - and the color scheme was intuitively developed from the natural materials used by Mike Marsh in the building. This carpet is called the “modern” axminster with the highest quality fibers used for hospitality type installations. This carpet is most commonly seen in five star hotels.

The challenge in a massively scaled, dramatically designed building is to introduce artwork and accessories that won’t get lost in these towering spaces. The mixed use of materials - copper, carved wood, and stone have visual strength as well as mass.

One of the most important focal points in the club is seen at the end of the hallway. Here we have displayed David’s favorite piece of art which is unmistakably Texas. I love this Texas collection that celebrates the use of natural materials - petrified wood, cowhide boxes, carved wood furnishings, and metal.

Mike Marsh created a building that provided wonderful areas for decorative embellishment. The staircase niche is one of those spaces. Recessed into the wall and lit from above, this niche was a perfect setting for the interaction of texture, color, and light. Embossed metal straps hang loosely within the niche and due to the changing natural light and shadows from the windows, cast different silhouettes throughout the day. I think this collection is one of the most unique presentations in the club - and is a personal favorite of mine.

The moment we first saw this piece, we unanimously agreed that it would be prominently displayed above the fireplace in the Living Room. It is truly the most intriguing piece of art in the club and must be experienced in person. The artist - Peter Robbins - is a west Texas cowboy and his unique style of photography is something that must be seen. In this case, the photograph is printed on copper, absorbing light differently from each angle, making this piece absolutely come alive. At sunset, the horses take on a fiery glow which is nothing short of magnificent.

The culmination to years of anticipation, Cordillera Ranch members were finally able to celebrate the Grand Opening of the Clubhouse on October 10. A party that will be remembered for years to come; for a facility that is absolutely timeless. Featuring three incredible bands that played late into the night, awesome food and over 600 excited members, the new clubhouse opened in grand fashion. The fabulous weather allowed everyone to spread out both inside and outside and enjoy the company as much as the setting. It was great to see all who attended enjoy your new facility.

buffalo A Healthy Alternative to Beef by Bryan Overdyke

In the American West, the

buffalo was a fixture on the Great Plains and staple on the plates of ranchers, settlers, and pioneers. Today, the American Bison is making resurgence on the menus of many restaurants including our fall menu at Cordillera Ranch.

Just like beef, buffalo is easy

to roast, braise, and grill. It has prime rib flavors and hearty steak texture but where it separates itself from beef is in its nutritional value. Buffalo is lower in fat, cholesterol, sodium and calories than beef while being higher in protein, iron, and B vitamins. As a grass grazer, it also has higher levels of omega-3s than most beef and pound for pound is a healthier option.

At the Ranch, we feature a twelve

ounce buffalo ribeye grilled to order and served with horseradish mashed potatoes and jumbo asparagus. Because of its lower fat content and marbling, buffalo retains a deep red color and is best served between rare and medium. Pair buffalo with your favorite full bodied red wine from the wine list and you are sure to have a delicious match! 60 | November / December 2009

For the do-it-at-home chefs here is a great recipe : Char-Grilled Bison Ribeye 1 Bison Ribeye Steak 1 tablespoons extra virgin olive oil Garlic Salt granulated Ground black pepper Preheat charcoal grill one hour before you want to start cooking. Coals should be ash gray and glowing red. Brush grill well to remove charred remains from previous cookouts. Coat steaks well with olive oil, on both sides, rubbing into muscle. Season both sides well with garlic, granulated salt, and ground black pepper. Let Bison Ribeye Steaks set 20 minutes before cooking to allow seasonings and oil to form a seasoned film. When ready to cook, place steaks on grill and turn often to prevent burning. If flare-ups occur, snuff fire with grill lid. Cooking time for a 1� Boneless Bison Steak over direct heat should be about 4-5 minutes per side. If doneness is in doubt, cut into steak to see if it is done to your desired degree. Steaks should rest on a platter in a warm place 10 – 15 minutes before eating to let the juices redistribute through the meat. What is your favorite aspect of living in the hill country? It is a combination of things. First of all, no SNOW! I married a Texas girl and we love the climate of the Hill Country with all four seasons. We have close proximity to all there is to do in San Antonio with the entire family. There is great diversity and so many different things we enjoy. The kids have access to places like Fiesta Texas and Sea World and yet we can take a drive to one of the many small towns in the Hill Country and have a relaxing Sunday afternoon. It is a unique and a special place to live. What are your hobbies/interests? I saw this question and dreaded answering it in fear that I am the dead opposite of the “Dos Equis” man. He is the most interesting man in the world…and let’s just say that I am not. Ha! I enjoy reading, the beach, most all sports and doing anything with my family. Life is absolutely crazy with three children but I wouldn’t change it for anything.

Since the beginning of the golf operation 3½ years. What is your involvement with the STPGA? I currently serve as the President through 2010 and have served on the Board of Directors over the last 10 years. It is my way of giving something back. We want to continue to grow the game and enhance the lives of the golf professionals in our Section. It truly has been an honor to have been elected by my peers. I have gained knowledge as well as friendships during my time of service that have definitely shaped me as a person. How did you get into the golf business? I started playing golf at a Par 3 course close to home when I was 10 years old. The PGA Professional let me play for free if I picked up the trash around the clubhouse at night. My responsibilities grew each year and I worked for him all the way through high school. He was a tremendous influence on me and I knew early on that I wanted to be a PGA Professional. After college, I started as an Assistant Golf Professional at The Dominion. 62 | November / December 2009

What’s your favorite sport? Favorite sporting event you’ve attended? Have to say golf…but college football is a very close second. It is tough being a huge Cornhusker fan here in Texas but we do have one thing in common: Texans love their football. I have been to some great sporting events but attending a Nebraska game each year with my oldest son is always my favorite. Favorite quote? Anything from Jim Valvano. But my favorite from him is “Don’t give up. Don’t ever give up.” Also, I think about my high school motto to “Be a man for others.” What has been your greatest challenge in the golf business? The business has changed so much over the years and is much more corporate. Today’s PGA Professional is asked to utilize strong business skills and wears so many different hats. Focusing on our core responsibility of helping our members enjoy the game of golf can get lost if we are not careful. At the same time, these challenges are what I also enjoy about my job. What has been your most rewarding experience in the business? Two things. First: The relationships I have built with members and guests that I would otherwise not have had the opportunity to meet. Second: Watching many of the young people that I have worked with move on to bigger and better things in their career. Knowing that I have helped them achieve their goals has been very rewarding. Favorite aspect of Cordillera Ranch? How can it not be the golf course? Mr. Nicklaus did an incredible job designing the golf course. It is challenging, fun and absolutely beautiful and there is no place better for me.
