welcome

What’s not to like about fall in the Texas Hill Country. By mid September we start to get nights down in the mid to low 60’s and the dry climate makes the days fantastic. There are so many things that start happening around here in the fall that it’s hard to find time for them all. In this issue we have highlighted many of the opportunities that are happening around the area from football season to the launch of the new fall menu at the club. There are several events that you don’t want to miss at Cordillera Ranch this fall. The “Three Phantoms” event that is to be held at the clubhouse on October 23 is sure to be a big hit. This is a very unique opportunity to see these three very talented gentlemen, who have all played the role of the Phantom of the Opera on Broadway during their career, bring a very special performance to us. Mary Denise Verses, and her company My Harmonic Wellness, have worked very hard to bring this event to Cordillera Ranch and it is certain to be a very special night. For more information or to purchase tickets go to www.threephantomsconcert.com. In addition to the Three Phantoms event on October 23, that same weekend we will be hosting an open house to recognize the official grand opening of the new villas at Cordillera Ranch called Di Lusso. The first three villas are now well underway and a couple more will start soon. The first villa will be completed this fall and the Di Lusso community is really starting to take shape on top of the hill. If you are thinking of visiting the hill country this fall, October 22-24 would be a great weekend to do it. I am also very happy to announce the opportunity that you, as Clubs of Cordillera Ranch members, now have to use the luxurious Roadhouse Custom Coaches. These custom luxury buses are being provided for our members through an exclusive arrangement with Roadhouse. Whether you are looking to take an evening trip into San Antonio for dinner and a show or want to travel in style to a college football game, these buses are awesome. Through the arrangement with Roadhouse, you can use one of their buses for up to 20 people to go anywhere you want at specially defined “Cordillera” pricing. Find more on page 56 or just call the clubhouse at 830-336-9000 to find out how to book your trip. This is our largest issue of Cordillera Ranch Living yet. Thanks to all of you who give us feedback on what you like and what you don’t like. The best ideas for future issues will come from those of you who live and socialize in Cordillera Ranch. I encourage you to call or email me with any ideas you think will interest you and your fellow residents, members and property owners. Please don’t hesitate to send your feedback and ideas. Enjoy,

STAFF PROFILE

NAME: Manny Ortiz HOMETOWN: San Antonio FAMILY: Wife, Sheri Two Children; Scott & Patrice, Daughter in Law, Rachael Three Grandkids; Jax, Maleah & Austen EDUCATION: The University of Texas at Austin B.A. History HOW DID YOU GET INTO YOUR FIELD? My grandparents owned several restaurants, so I grew up in the business. Let’s just say that some of us have it embedded in our lives. HOW LONG HAVE YOU BEEN WITH CORDILLERA RANCH? My first day was May 11, 2010. WHAT IS YOUR FAVORITE ASPECT OF WORKING IN THE HILL COUNTRY? The Hill Country offers a quick escape from the “Big City.” I love the drive to and from my home in San Antonio. The beauty and serenity of the Hill Country is spectacular. WHAT ARE YOUR HOBBIES/ INTERESTS? It may sound clichéd – God, family, friends, food, wine – celebrating life. WHAT’S YOUR FAVORITE SPORT? Football and baseball are my favorite sports. I love football because of the electricity in the air when you are in the stands with thousands of other people and the social atmosphere surrounding the games. My fatherin-law was a pro football player for Pittsburg and Philadelphia, so my wife 14 | JULY/AUGUST 2010

grew up loving football, too! I love baseball because of its purity and the fun I have watching our grandson playing the game. FAVORITE SPORTING EVENT YOU’VE ATTENDED? The 2006 Rose Bowl – Texas defeating USC for the National Championship. It was unbelievable! FAVORITE QUOTE? “The clock is running. Make the most of today. Time waits for no man. Yesterday is history. Tomorrow is a mystery. Today is a gift. That’s why it’s called the present.” * FAVORITE MOVIE? WHY? The Natural. I think it helps remind me of the many hours that I shared with my son teaching him the game of baseball. Now I enjoy watching him share his love for baseball with my grandson. I have seen The Natural many times and still get excited watching Roy Hobbs hit the homer at the end of the movie.

WHAT HAS BEEN YOUR GREATEST CHALLENGE IN YOUR BUSINESS? Finding people who love what they’re doing and don’t see it as a job, but as a career. Yogi Berra probably said it best – “If you come to the fork in the road, take it. If you don’t know where you are going, you might wind up someplace else”. WHAT HAS BEEN THE MOST REWARDING EXPERIENCE IN YOUR BUSINESS? People make it rewarding. No two days are the same; no two people are alike. I really enjoy serving our members as well as our internal guests and our employee partners. FAVORITE ASPECT OR FEATURE AT CORDILLERA RANCH? Cordillera Ranch is a special place that is one of a kind. I love that I’m part of a team that gets a once in a lifetime opportunity. *From the 1902 book, “Sun Dials and Roses of Yesterday: Garden Delights...” by Alice Morse Earle

SUMMER

2010 SUCCESS

By Glenn Barton

Success on the tennis court is usually measured in wins and losses like other sports. There’s no doubt that winning is good but success depends on your skill level. For some just making good contact with the ball is the result they hoped for. For others, it might be winning the Club Championships or a city-wide competition. Tennis this summer at Cordillera Ranch has been full of new players and successes big and small. As summer winds down, let’s take a look at all the great things that have happened this summer in our tennis program. Tana Watson won her first roundrobin Women’s Extravaganza event with a six-point lead over second place. Not so easy to do with seven others competing for top honors. Mary Beth Burgess, age 8, won her first Around the World competition during tennis camp. Not that unusual, except that her competitors were junior high and high school players. Mary Malone, JoEvelyn Etter and Melody Abrahamian all won a speed-doubles competition this summer. All were beginners last year and now will be representing Cordillera Ranch this fall in the USTA sanctioned league play. Tessa Willis won three city-wide Gran Prix singles titles and one doubles tournament this summer in the girls 14-year-old age group. Tessa is ranked number #1 in the city in the Gran Prix rankings. Greg Rickert hit the hardest overhead in Cordillera history. The ball bounced in the court, then cleared the fence on its way to the pond past the tennis shop. That’s a big hit!

20 | SEPTEMBER/OCTOBER 2010

Jared Blake and Samantha Sherwood tied for 1st place in Summer Camp #1 this summer. After battling for two hours through the heat and a field of eager competitors they found themselves dead-locked on the scoreboard. Remington and Ryder Welch both received the “Most Improved Juniors of the Summer” award due to all their hard work and sweat. They decided to take up tennis and a short summer later they are starting to win against more seasoned athletes. Cara Rickert won a city-wide doubles Gran Prix in the girls’ 14-year-old age group. Cara also competes in basketball, volleyball, makes good grades, and plays in the school band. Success comes naturally to her. Luke Hendry won the Fredericksburg Summer Swing

Open tennis tournament in the boys’ 14-year-old division. Luke is well known around Cordillera Ranch as a talented golfer, but is a gifted tennis player as well. Kelly Moore won the Grand Slam Division of Summer Camp #1 with a convincing victory over many older opponents with more experience. Kelly’s backhand came up big for her this summer. Success is something we all strive for. It lets you know your hard work is paying off, it challenges you to do more, and is a good measure of where you are with your skills. Most of the time improvement happens and you don’t even notice until you find yourself handling situations that would normally cause you to fail. Success shouldn’t be measured in wins and losses, but rather, in how we handle the challenges before us.

C STAR

MEMBER GUEST

By Marc DeWall This year we have some exciting new elements planned for the 5th Annual C-Star Member-Guest. For those of you that have played in this event in previous years, you know what a great tournament it has become. Each year the event has grown in popularity with 72 teams participating last year during the opening of the spectacular new clubhouse at Cordillera Ranch. This year’s event incorporates a new format and entertainment value that promises to be even more exciting! The tournament format will now be five 9-hole matches played out over two days. Each match will be 4-Ball Match Play played off of the difference of the low handicap player in each match. This allows players the opportunity to interact with more participants than ever before. The field is limited to the first 60 teams to sign up and will be placed into 10 flights of six teams each based on combined team handicap. Players must be within nine strokes of each other and must have a verifiable USGA Handicap. Events begin on Thursday with a morning practice round. We will have an optional game to participate in and players will tee off both #1 and #10 tee. The popular Horserace will once again take place that afternoon and provides another great way to meet new people on the course in a fun environment. Later that day, we have a special treat planned with a short clinic conducted by a PGA Tour

player. The Player’s Pool party will take place Thursday evening at the Equestrian Club. Dress will be “Cowboy Casual” and we have a fantastic evening planned. Dinner will be served there along with some fun activities for you and your guest to participate in. The Player’s Pool will be handled differently than in prior years as each team will have the opportunity to purchase their own team and the Player’s Pool will be separate and in addition to the team entry fee. The tournament-proper begins on Friday with three matches being played by each team throughout the course of the day. Three separate shotguns at 9:00am, 12:00pm and 3:00pm are allotted for each of the three matches. Lunch will be available when players come in from their first and second matches. Participants will be on their own for Friday evening and are encouraged to have dinner here at the Club where Chef Bryan Overdyke and his culinary team have a great menu planned. Friday is also Ladies’ Day! Participants’ wives or significant others are invited to spend a day in the historic town of Fredericksburg. Ladies will meet here at the Club and travel to Fredericksburg in luxury buses for a fun day of lunch, shopping and wine tasting at Becker Vineyards. The second and final round of the tournament takes place on Saturday. The final two matches take place

22 | SEPTEMBER/OCTOBER 2010

at 8:00am and 11:00am, respectively. We will have a Shootout with all of the flight winners to determine the Overall Champion beginning at 3:00pm. All participants are encouraged to come and enjoy the Shootout where we will have a special drawing at the conclusion of the event where we have some fabulous

prizes to be given away. Saturday evening marks a special conclusion to the tournament with our closing Awards Party. Be prepared for a fun filled evening with incredible food and our “Howl at the Moon” style dueling piano bash highlighting the evening entertainment.

MARC DEWALL NEW PRESIDENT OF THE SOUTHERN TEXAS SECTION OF THE PGA By Alison Turner

The golf industry is rapidly changing and chief among those who are helping Cordillera Ranch keep up with the ever-changing game is Head Golf Professional, Marc DeWall. DeWall was elected last February as the President of the Southern Texas Chapter of the PGA (STPGA). Before taking his post at the Clubs of Cordillera Ranch in 2006 he was the head golf professional at The Dominion Country Club from 1995 until 2006. DeWall, a Nebraska native, was elected to membership in the PGA of America in 1992. He was a scholarship golfer at St. Mary’s University. DeWall has also been active in national activities, serving as the chairman of the PGA of America’s Annual Meeting Committee in 2003. He was a member of the PGA’s President’s Council in 2006 and 2007. He was selected as the STPGA’s

24 | SEPTEMBER/OCTOBER 2010

1997 Merchandiser of the Year (Private Facilities) and was the 2001 STPGA Horton Smith Award winner (for leadership in the education of PGA members). He has also earned a number of awards from the Western Chapter of the STPGA, including three selections as the Chapter’s Golf Professional of the Year (2001, ‘04, ‘05). But DeWall’s awards are not something he likes to focus on. “I tell everyone best part of being part of the association [the STPGA] is the stewardship of the game—helping golfers work closely with golf professionals and growing and taking care of the game,” said DeWall. “I’m not in it to win awards.” The STPGA has wide-reaching effects on the game from teaching professionals how to properly fit golf clubs to preserving the traditions of the game. “I’ve strived to make the association better and make

sure golf as a sport grows. The association does a lot of different things like provide opportunities for juniors and beginners,“ said DeWall. “We as members of the PGA have to educate ourselves and make sure we’re experts in the game and business of golf.” The STPGA’s territory includes Austin, San Antonio, Corpus Christi, Laredo and Houston. DeWall’s position has helped him make key contacts and develop a network of some of the top golf professionals. “I use [these] networks constantly to stay apprised of changes in the game. It has opened up the flow of ideas. Being involved in the section is good exposure for our community. Cordillera Ranch reaps the benefits of being involved. [Golf] is such a fast moving industry that it helps keep Cordillera Ranch on the cutting edge.”

FALL&WINTER

HUNTING OPPORTUNITIES IN SOUTH TEXAS By Shane Reynolds

With the end of summer near, many Texans begin the preparation and planning for the autumn and winter hunting season. Texas is known around the world for some of the best hunting opportunities available. The Club of Cordillera Ranch has many members on hunting leases who enjoy the hunting lifestyle so much that it’s part of their daily 26 | SEPTEMBER/OCTOBER 2010

lives. The Club also understands that it takes a tremendous amount of time, energy and resources that many of our members simply do not have. One of the services we offer at The Clubs of Cordillera Ranch is to find the exact hunt you’re looking for. Whether you’re looking to hunt quail, dove, whitetail deer, duck, geese, hog or exotics, I have an established network of opportunities

in Texas to provide any type of hunt you’re looking for. There are some very close options within an hour of Cordillera Ranch that include Joshua Creek Ranch, Diamond K Ranch, Buck Valley Ranch and the 777 Ranch. Many of our members utilize these resources and have enjoyed the close accessibility for many years. There are far more opportunities in South Texas in the

world famous brush country and along the Texas coast for hunting opportunities. If you are interested in dove hunting, we’ll be offering a dayhunt opportunity for club members and their guest in late September to the famous 777 Ranch in Hondo. The 777 Ranch has been providing world-class hunting experiences for 40 years. Not only does the 777 offer some great dove hunting, but they have almost every hooved game species on the planet and some great bass fishing in their stocked lakes. If you are interested in whitetail hunting, I have some great contacts with some ranches near Pearsall, Carrizo Springs, Uvalde, Hunt and

Cotulla. These ranches are all in the heart of the brush country of south Texas. If are looking for a special hunting opportunity with your son, daughter or grandchild, the youth season and many Texas ranches offer wonderful hunting opportunities to get kids involved in hunting. For our waterfowl hunters, the Club will be offering several duck and teal trips this fall to the Rockport, Eagle Lake and Baffin Bay areas. Be on the lookout for a special trip we plan to offer called the “Cast and Blast,” which is a full day of waterfowl hunting and fishing. We’ll start the morning early with a teal hunt, then onto the bay to hunt redfish and speckle trout, then back to the duck blinds in the

late afternoon. This will truly be an adventure that will not be forgotten! As the Outfitter of The Clubs of Cordillera Ranch, I can arrange a variety of outdoor recreation activities, so don’t hesitate to contact us. Whether you’re looking for a hunting package, day hunt, a coastal fishing trip, a family camping adventure, or a backpacking trip to a secluded wilderness area, it’s my pleasure to be of service to the members of the Club.

CORDILLERA RANCH’S MUST ATTEND PARTY, IS GOOD FUN FOR AN EVEN GREATER CAUSE BY BEN SCHOOLEY PHOTOGRAPHY BY WEST VITA

ordillera Ranch’s annual Shindig is one of the largest charity-driven events held anywhere in Kendall County. Occurring every other year, the event has quickly become the must-attend party for not only Cordillera Ranch residents, but for the entire community. Founded in 2002, the Shindig has benefited local charities to the tune of over $500,000 and has had an amazing impact on local groups who help those less fortunate. While many attendees might see the event as a social function, the event has a much, much deeper purpose and inspiration. Such inspiration comes from people like Carla Northington and Barbara Wynn, who have spent tireless hours making the event happen. “I wasn’t living here when we had the first Shindig, but I attended the first one in 2002. The two chairs (Judith Rivers and Julie Styskal) came together and thought ‘Hey, we live in such a great place - let’s give back to the community.’ So they held it at the community park, put it together quickly and gave to the Meadowlands. That was the first time I had ever been to an event like that. It was just amazing,” Barbara says. With $26,000 going to the charity, people quickly took notice that the event had a powerful local impact. For 2003, the official moniker of “Cordillera Ranch Shindig – A Good Time for a Good Cause” was established, and the event was moved to the Northington Horse Barn. Carla explains, “Carol (Jarvis) mentioned that Judith (Rivers) said she would do it if it was for a good cause. So that’s where the motto came from. So in 2003 we moved it to the barn. Judith and Carol cochaired that event and they made 3 times as much. It was even more successful. All $70,000 went to the Hill Country Daily Bread, a Christian

34 | SEPTEMBER/OCTOBER 2010

food and resource ministry dedicated to helping families and individuals in need.” Again, in 2004, the Shindig was held at the Northington Horse Barn and pushed the charitable contribution to $90,000. Susan Toensing and Nancy Gray co-chaired, and all proceeds went to the Star Ranch, a program for children with severe emotional disturbances and learning disabilities. As the amount of charitable contributions continued to climb, Carla saw a need to incorporate the Shindig’s interests into a 501(c)3 organization. “Previously people wrote the checks to the charity, but we saw that we were generating more and more money, so we saw that perhaps giving so much money to one charity wasn’t responsible,” Carla said. “We wanted to spread that around more. So we called an attorney and he helped us put together the 501(c)3. So the Cordillera Ranch Shindig Corporation was formed right before we had the party in 2006.” Carla is the President, Barbara is the Vice President, and Kay Johnson is the Secretary/Treasurer. From the beginning the Shindig team has carefully and responsibly chosen the recipients of the money. “We have different committees, and one of them is the philanthropy committee. We put an announcement out to the residents of Cordillera, property owners, and Cordillera Ranch Club members and have them nominate the different groups that would possibly be a beneficiary. Then it’s up to the committee to decide if they qualify,” Carla said. “We really only benefit people, and they need to be Kendall County people. The philanthropy committee then narrows it down to several organizations. Their reps come to a steering committee meeting and tell us what their

Carla Northington and Barbara Wynn

needs are, and then we select the recipients.” The Shindig in 2006 was held at the Cabana Grille and Pool Pavilion. Carla said, “They had just opened the Cabana Grille. In fact, the day of the party they were still putting in landscaping. We had a great turnout because people were so excited to attend. Chris Hill (Vice President, Cordillera Ranch) told us we could only have 600. But people just kept coming to us and I think we were

at 750 at one point. We were so worried as more and more people kept coming, but we just couldn’t turn them away,” Barbara said. By the time the Shindig was over, the event, chaired by Barbara Wynn and Carla Northington, had generated a staggering $200,000 that was spread between the Bergheim Volunteer Fire Department, the Christian Women’s Job Core, Hill Country Family Services, Hill Country Pregnancy Care Center, and the Rainbow Senior

Center. With such a large event, friendships are forged and strengthened. Barbara explains, “It takes almost a year to plan these things, so we moved it to bi-annual. It’s a big project. You can get so involved in it and it consumes you. It takes almost 3 months to recover from these parties.” Carla added, “It’s so much fun to chair these events. It’s a blast. You make such great friends and you’re working so closely and it’s just

Cindy Taylor and Audrey Bearden

a great way for the whole community to come together. To see people come out of their houses and work for the greater good is just amazing. We have so many new people here on the Ranch and we really want the mission realized. We know that the people of Cordillera recognize the blessings from God and we feel responsible to give back to the community. People are just so generous. The organizations we benefit are the same ones our people give hours of volunteer time to, so we don’t just throw money at these issues, we give of our time and energy.” For the 2009 event, Cindy Taylor and Audrey Bearden chaired the Shindig at the Northington Horse Barn/Cordillera Equestrian Center. Barbara explained,”Cindy (who is also the Cordillera Social Club President) was so enthusiastic about the whole thing. Her best friend is Audrey and they just dove right in and made the whole event a lot of fun. Everybody just loved it at the barn and it was such a great success. They did just an amazing job.” Raising $100,000, money was given to the Bergheim VFD, the Christian Women’s Job Core, Kendall County Women’s Shelter, and Triple H Equestrian Center. While the community has given so much via the Shindig, they don’t stop there. Carla said, “The residents are just so giving. The Marisol Luncheon is another example of that. The luncheon was to benefit the Kendall County Women’s Shelter which was

held in January, right before rodeo. We figured if we could make $10,000 we would be happy. Ranch at the Rim outfitted our Cordillera models and set up a store at the club helping to make it a fabulous event. We made $27,500. It was incredible. The Shelter is now one of our commitments for the 2011 Shindig.” Jamie Amerman and Tobi Baize really caught the vision of the Shindig Board by participating in the Marisol Luncheon. Both women saw it as a true inspiration to become more involved locally. Jamie explained, “I’m a stay at home mom, but I’ve got some talents and skills that God has given us and I just felt that these traits should be used to help others and the community. I wanted to show my children why we’re doing what we’re doing. God used the Marisol Luncheon to get the younger women and spark the fire to get out of the homes and to do great things.” The Shindig board quickly saw two young women that were great candidates to chair 2011’s Shindig. Jamie says, “One day Tobi and I were at the pool with the kids. Carla was there with her grandkids. She asked me if we’d like to help with the Shindig. And I said ‘SURE.’ Carla called me and said, ‘We need you guys to come over to meet with the board.’ So, we brainstormed and figured we could help them get some auction items. We met with the board, and they told us all about the event, and then they said ‘We want you to chair it.’ After much prayer

and talking to our husbands we agreed!” “We thought it to be such an honor,” Jamie continued. “We’re just so amazed that they would trust us to take such a great event and run it. We are just so excited and can’t wait.” And Tobi agreed. “ I’m so excited to meet new people and try to make a difference in the community,” she said. “I am doing it for the same reasons. I saw that there were things I could do that could help change people’s lives. I’ve worked with special needs kids, and I just want to help. We had been praying so hard in our Bible Study to find the ways for us to help. As soon as Carla came to us, we saw it as an answered prayer. So many of our requests to God were us looking for a niche in the community and we had come up with a lot of ideas, and this way we could help a LOT of charities and to give other women the vision as well.” The 2011 Shindig will be held at the Cordillera Ranch Clubhouse on Saturday, April 30, 2011. Utilizing the new facilities, the group is hopeful that next year’s event is the largest yet. And while the event is always designed to be a lot of fun, it is still staying true to its original purpose. Tobi explained, “At our first meeting, I realized I saw this as something I could do for others that I could never be repaid for. We’re just seeing the fruits and the blessings. It’s not about me, it’s about serving others.”

MARKS THE SPOT Six Destination Restaurants Worth The Drive By Alison Turner

It’s no secret that good food draws a following.

Some restaurants have such a fervent following that people are willing to drive for miles to these destinations. Cordillera Ranch residents are lucky to have a short drive to a couple of excellent restaurants in Boerne. Others however, are a great endpoint for a road trip. Get out on the road, enjoy the crisp Hill Country weather, the fall foliage and check out these one-of-a-kind restaurants.

ARTFULLY PREPARED SHRIMP DISH AT THE CREEK RESTAURANT

THE CREEK RESTAURANT

The Creek is a great restaurant you don’t have to drive for miles to get to—though I would anyway. Located in a historic building dating back to the 1870s, The Creek has a tranquil view of the Cibolo Creek. The décor was chosen to keep the old world charm but the food is making strides to become one of the hottest destination restaurants. The management at The Creek is taking steps to develop a sustainable kitchen, already coordinating with local farmers to serve fresh herbs cut from the field the same day. Other elements at the fine casual dining establishment include staff members who have worked with the likes of Wolfgang Puck at Spago; some of the freshest and best seafood for miles; and a romantic ambiance that can’t be beat. The Creek Restaurant is located 10 miles from the gates of Cordillera Ranch. For more information, please visit www. creek-restaurant.com.

WELFARE CAFÉ

If you are looking for an off-the-beatenpath local eatery with loads of character and good food, check out the Welfare Café. Located in Welfare, Texas, this hidden treasure is a great place to take out of town guests to for a taste of local history, verdant views and great local food. The Welfare Café, a historical landmark, was once upon a time a general store and post-office. Nowadays, it is home to an eclectic little restaurant serving traditional German fair along with other great food with a gourmet twist. Notables on the menu, which changes seasonally, include steaks, schnitzels (including Jager schnitzel topped with a shiitake mushroom au jus), and a variety of German beers. Welfare Café is located 21 miles from the gates of Cordillera Ranch. For more information, please visit www.welfarecafe. com.

AUGUST E’S

Purveyors of “Nouveau Texas Cuisine,”August E’s is adding a new twist to traditional Texas cuisine. From their traditional Continental Menus featured at lunch and dinner, to artfully crafted sushi, August E’s offerings are truly varied. “Thai Tuesday” is a weekly celebration as guests are treated to the native cuisine of the Executive Chef Leu Savanh. Among August E’s awards includes a Zagat Rated 2009 Extraordinary for Food with a 27 and an AAA three Diamond award. August E’s is located 50 miles from the gates of Cordillera Ranch. SUSHI FROM AUGUST E’S

LITTLE GRETEL

Located in Boerne along the banks of the Cibolo Creek, Little Gretel offers unique old world charm. From the bright European bistro feel and the furniture imported from the Czech Republic to the Rembrandt etching integrated into the décor, the Gretel offers a unique dining experience. Veteran chef Phillip De La Plane and Czech-native Denise Mazal have cooked up a menu that integrates the New and Old Worlds. The dinner menu includes Bohemian herb roasted duck, rib eye steak and even vegetarian pasta. Little Gretel is located 10 miles from the gates of Cordillera Ranch. For more information please visit www.littlegretel. com.

THE GROTTO GRILL AND COFFEE BAR

Nestled in Bandera, the “Cowboy Capital of the World,” The Grotto is a true gem. Owner/Chef Jason Boyd creates all his meals from scratch every day. This makes for a limited menu but all meals are made fresh daily with some of the best ingredients found at farmer markets that day. Menu offerings include steaks, vegetarian offerings, pizzas, soups and salads all with a gourmet flair. The Grotto is frequented by ranchers and artists alike who are brought together by the delicious food. One thing is for sure, The Grotto is one of the Hill Country’s best kept secrets. The Grotto Grill and Coffee Bar is located 49.5 miles from the gates of Cordillera Ranch. For more information please call The Grotto at 830-796-9555.

MAC & ERNIE’S ROADSIDE EATERY

If The Grotto is the best-kept secret, Mac & Ernie’s is the Hill Country’s most famous restaurant. With multiple billings on the food network including segments on Diners, Drive-ins and Dives and Bizarre Foods with Andrew Zimmern, Mac & Ernie’s has truly become a destination restaurant. The staff will regale you with stories of people flying out from New York for the weekend just to try the famous cabrito burgers. Located outside scenic Tarpley, Mac & Ernie’s offers a unique dining experience. The dining facilities are at once low-tech but the finest you’ll ever experience; patrons dine outside under the stars on picnic tables. On a warm summer night, the fireflies are truly a sight to behold. The simple and well-executed menu offerings compliment the facilities. Regular menu items include quail, mahi mahi, lamb chops and steak cooked to perfection. Mac & Ernie’s Roadside Eatery is located 48 miles from the gates of Cordillera Ranch. FASHION Fall means many things here in the Texas Hill Country. The days are shorter, the air’s a bit cooler, and the return of fall foliage on some of the trees. The kids head back to school—hello metime for mommies. You lose control of the TV again because of football. After a long summer of shorts and sandals, the elegance of fall fashion returns. Several new trends emerged on the Paris, London, Milan and New York runways. Here’s the skinny on what’s in style this season. LADYLIKE GLAMOUR For this trend think Grace Kelly in Rear Window or January Jones in the TV series, Mad Men. Items that emulate this look include full skirts, corset tops, cinched waists, pointed-toe heels and small, structured bags. Louis Vuitton and Prada pumped up the volume for their fall collections with 1950¹s style full skirts (sans poodle). If you want to try this retro look be careful to keep the top simple and slim to balance out bottom pieces with full volume. You can rock the corset (ala Louis Vuitton), a shell or tank with a fitted cardigan, even a nearly-offthe-shoulder knit much like Ms. Kelly would have worn. Don¹t forget the slim waist belt to pull it all together. Worn correctly, this look can give you a gorgeous hour-glass figure.

CAMEL Not to be confused with the animal, camel is a gorgeous, neutral color that popped up everywhere on the fall runways. Labels like Chloe, Tommy Hilfiger, Marc Jacobs, Michael Kors, Stella McCartney, among others, all featured it in their collections. Try a camel-colored handbag, a chunky, knit sweater or a pair of wide-leg pants. Wide-leg pants are extremely flattering on most body types, and a refreshing change from the skinny silhouette! For the serious fashionista, try on a camel cape. Stunning and sophisticated, a cape is the perfect way to make a statement. Right now the only ones I’m seeing are super pricey, but wait a month. No doubt the more affordable adaptations will hit stores soon.

ANIMAL PRINTS Another huge trend this fall is reemergence of animal prints; whether it’s leopard, cheetah or zebra, the animals are clawing their way back into our closets. Those who want to be seen can go for a fur coat or trench or if you are just looking for a fun accent piece, try a scarf or shoes. There are some amazing peeptoe, leopard-print pumps out there (think Prada, Jimmy Choo). Another perfect way to work this trend, buy a feminine, feline blouse that you can wear alone or under a blazer. Bottom line; don’t be afraid to walk on the wild side!

HERE TO STAY

Some of these fall fashion trends you may recognize are here to stay. Here’s what you should keep on your style radar: OVER THE KNEE BOOT Who knew we’d be wearing Pretty Woman boots? These boots are perfect over skinny blue jeans, leggings or with a short skirt. The key to pulling off the short skirt with the thigh high boot: tights or stockings. For an edgy, equestrian look, try the boots over a pair of camel colored trousers (fitted or slouchy). VELVET I’ve had a gorgeous velvet blazer for several years now that I’m very much looking forward to busting back out. You may have one in your closet too. MILITARY Pair tough military inspired cargo pants and utility jackets with super feminine lace or ruffles. MAXI SKIRTS Bohemian feels fresh and fun again with these full skirts. LACE Wear these Victorian-esque lace blouses under a blazer paired with jeans and an edgy bootie. FUR Fur vests and fur collared coats, faux or real, are still stylish for Fall. From demure and delicate to the classic elegance of camel to modern military mash-ups, there’s a style to suit just about every fashion personality this fall. The keys to looking your best: be creative and sport any style with confidence. If you’re confident, you’ll look chic. CordilleraRanchLiving.com | 53

DOMINION DESIGN & INTEGRATION AUTOMATING THE CLUBHOUSE Dominion designed and installed the Cordillera Ranch Clubhouse Security/CCTV, Card Access, Audio and Video systems. Dominion also provided the Clubhouse staff with easy to use controls to operate the facilities many TV’s. Our scope of work included pulling miles of low voltage cabling to centralized points within the facility. Equipment Racks were assembled in multiple areas and serve as hubs for the Audio/Video gear. Dominion coordinated closely with the leadership of Cordillera Ranch to design the system from the ground up, starting with the restaurant and pool, which was the first phase of the project. Site coordination with various trades, designers, and Cordillera personnel was necessary in order to ensure a successful installation. In addition to the Clubhouse, Dominion has designed and installed systems in the Tennis Center, as well as 40 Cordillera residences.

66 | SEPTEMBER/OCTOBER 2010

EQUIPMENT RACKS These racks, strategically located around the club act as hubs for the Audio/Video Systems. The racks house amplifiers, audio system equipment, audio sources, video sources, and system surge protectors.

TREADMILL TELEVISIONS The TV’s are actually part of the Treadmill apparatus. The location of the treadmills was determined in advance to facilitate the necessary wiring of the machines. CLUBHOUSE TELEVISIONS This picture shows a multiple TV installation to allow for different feeds to be viewed simultaneously. Great for watching multiple sporting events at once. For ease of use, a single wireless control was provided for operation of the system. Each TV is installed with a “full motion” mount in order to provide multiple viewing angles.

SYSTEM DOCUMENTATION creates and provides a detailed record of the systems installed for future servicing purposes and for our clients who may require service from a third party. UNIVERSAL REMOTE This single, but simple to use remote, operates wirelessly and eliminates the need for multiple remotes. Each remote stores away in it’s own built -in wall docking station. CARD ACCESS As part of the overall Security System, Card Access readers were installed at designated points around the club. ROCK SPEAKER These speakers were used for several of the outdoor areas in order to provide great sound in an inconspicuous way.

RURAL OASIS

It really is the best home in the rural Boerne area—bragging rights bestowed upon Dena and Alan Schaefer’s home by the Greater San Antonio Builders Association. Built and designed by Authentic Custom Homes and Peña, Terrian & Associates, the home on River Crossing is truly a Cordillera Ranch masterpiece, and a winner of two prestigious Summit Awards. By Jeanna Goodrich 76 | SEPTEMBER/OCTOBER 2010

King Bravo of Authentic Custom Homes with homeowners Dena and Alan Schaefer

Given annually by the Greater San Antonio Builders Association [GSABA], the Summit Awards recognize outstanding product and design in various building and remodeling categories. As a testament to the home’s quality and craftsmanship, the Schaefers and Authentic Custom Homes brought home two Summit Awards this year: Best Rural Product, $1,501,000+; and Best Pool and Water Feature, Residential Pool $50,001+. “We looked through our portfolio of homes that we had just completed, and we felt like the Schaefer home truly represented Authentic,” King Bravo, Director of Sales and Marketing for Authentic Custom Homes, said. “We submitted their landscaping and their master bedroom as well as entering them into the Best Rural Product and Best Water Feature categories.” The Schaefer home definitely makes a great first impression. Through the wooden gates that open into the courtyard, down the sidewalk winding by a babbling brook, and through an entryway looking out over the Guadalupe River below, there’s no secret as to why this is an award-winning home. And in the rocks below, a refreshing pool, hot tub, and fountain sparkle in the sunlight. “The pool is definitely my favorite part of the house,” Dena said; the calming sounds of the running water and the rugged texture of the natural rocks make the Schaefers’ pool area a wonderful place to spend a relaxing afternoon. Dena and Alan moved into their rural oasis on January 28, 2009. “We bought the lot in January 2007, and it took us about a year to decide what we wanted to do with it,” Alan said. “I found Authentic [Custom Homes] online, and was immediately impressed by them,” Dena added. “We never really researched anyone else.” After attending a builder’s fair at Cordillera Ranch in 2007 and meeting Ted Robinson, Israel Peña and Jim Terrian, Dena and Alan confirmed their impression that Authentic Custom Homes would be their builder. After the Schaefers purchased their lot, Dena admitted to falling for an oak tree

CordilleraRanchLiving.com | 77

that she wanted to keep—even to showcase—on the center of their land. “We wanted the tree to be in the center of the courtyard, which kind of dictated the design for the rest of the home. The tree is at the high point of the lot, and then everything falls down to the river from there.” “Authentic and the Peña-Terrian design team had to take into consideration the shape of the lot in order to give the Schaefers what they wanted in their home,” King explained. “But we also had to design a view looking out over the river and the ranch, the Twin Sisters to the northeast, and a westerly view without over exposing the house to the western sun.” Dena added, “When we bought the lot, we couldn’t really see the river, and it wasn’t until we cleared the land below that we had our river view. We were pleasantly surprised!” “There were certain challenges in building the home,” King said. “Instead of building up, like we do in other homes, we built the additional story down, meaning that the second story had to be built into the side of the hill.”

78 | SEPTEMBER/OCTOBER 2010

King explained that the rocks had to be carefully excavated out, and were reused in building and designing the pool and other landscaping features. “Another unique feature of this home is the detached garage and apartment, and the carport next to it,” King added. Dena chimed in, “I had to have a carport—I grew up with one, and it was an automatic addition in my mind.” The unique features of the home blend seamlessly into the home’s functionality. “We wanted to make sure that we incorporated every aspect of the Schaefers’ lifestyle into a functional, livable home. We need to have a feel about how the clients are going to utilize the home, and so we talk numerous times with our clients about how they plan on truly using their home.” “I think Authentic has really captured it for us,” Alan affirmed. “When the house is full of people, it’s perfect,” Dena added. An outdoor kitchen overlooking breathtaking sunsets wraps around to a grand fireplace with a view of the river and the Twin Sisters. Inside, the rooms are just as magnificent. Dena and Alan had their

own interior designs in mind, and chose to purchase their furnishings from their favorite spots in Houston. “We bought all of the furniture and interior decorations in Houston,” Dena said. “Most of it came from The Arrangement; some came from Louis Shanks. They trucked everything in and were here with us for about two days, helping us get everything settled in.” The couple used Le Ragge Rugs in San Antonio to put the finishing touches on the window coverings and treatments. “Israel Peña started the company over 20 years ago, and has been in the Boerne area bulding homes,” King said. “As Cordillera Ranch grew to be an upscale large development, Israel’s reputation earned Authentic the opportunity to become a preferred builder, and has maintained that status for over 10 years. We’ve been able to focus our efforts in a development that controls their architectural guidelines and protects their residents’ investments in their homes here.” Dena and Alan both confirmed that the peaceful luxury of Cordillera Ranch made it the perfect place for them. “We

had decided we wanted to move to the Hill Country, and we had a good two years to figure out the whole process and move,” Alan said. “I did some research—think Google—and instantly fell in love with Cordillera Ranch,” Dena added. “It was kind of a gut instinct, and we knew it would be the best place for us to start over.” “There’s such a tight-knit, smalltown feeling here at Cordillera Ranch,” Dena continued. “Authentic has not only been our builder, they’ve been our friends. From conversations over a bottle of wine, to golf games and dinner parties, the Authentic family and the Schaefer family have formed a steadfast friendship. “Alan can put up with my golf game—and there aren’t many people who can do that!—so we get out on the course from time to time,” King laughed. “We work hard not only to build a home our clients want, but to build a relationship with them,” King continued. “We want to make sure that once they move in, we can continue to have that relationship for years to come.”
