Have We Found Our Biggest Fan? We Go Down Memory Lane with Sophie Murray

Costalink Magazine was created and launched 16 years ago and has been the go to Magazine for English speaking Expats ever since. Whilst travelling around the Costa, we have met hundreds of partners and readers alike, all looking forward to the next issue to arrive.

During our travels, and talking to you, the reader, we often ask what it is you like the most about Costalink Magazine. The answers are varied, yet consistent. You like reading our articles, finding them interesting and informative (thank you!), you look forward to the jokes, you enjoy the puzzles, and you make use of our advertising partners, as you have told us, you find them useful to helping you live here as an expat. All great stuff, and appreciated!

Whilst distributing Costalink to the various approved outlets, we came across a charming young lady and were greeted with “Ooh! Is that Costalink? Brilliant, I’ve been reading this since I was four years old, I always look forward to it!”

Meet Sophie Murray who is in her twenties, and moved to the Costa del Sol when she was one years of age, alongside her siblings and Mum, Karen and Dad, Sean Murray, when the family relocated from Ireland and the UK.

Sophie went to Spanish school finishing her education at the age of 18 in a school called College St. Francisco De Asís, in Las Lagunas de Mijas, and has fond memories of growing up on the Costa, including those first memories of Costalink Magazine, and witnessing the development from a small town to what it is today.

Her favourite place along the Costa del sol is Fuengirola, as it’s where she grew up with her friends and knows where to look to discover some hidden gems, bars and restaurants with food to die for, without a Marbella price tag.

Sophie is a volunteer at local dog shelters, as she feels it’s a good incentive to get out of the house especially on grey days, knowing dogs are dependent on her to get out for a walk, and she fosters newborn puppies and bottle raises them until they’re old enough to find forever families.

Sophie loves pink beachy clothes and her favourite outfit is a bikini as she is happiest at the beach on her downtime.

A sister to Joseph, Jessica and Benjamin, Sophie recollects when they, together with their Grandmother, used to sit in the car in the parking lot of Overseas Iceland in Fuengirola whilst their Mum would get the shopping for the week. As a reward for waiting, Mum Karen would take back treats for her children, anything to make the shopping trip quicker and easier!

7 Garden Growing Basics When You Don’t Have a Garden!

Living in an apartment without a garden can be a challenge for those who love the outdoors. But don’t worry, creating a garden on your balcony or solarium roof is easy and fun. Here are seven garden growing tips to help you get started.

Choose the right plants

The first step in creating a balcony or roof garden is choosing the right plants. Look for plants that are easy to care for, grow well in containers, and can withstand the Costa del Sol’s hot and dry climate. Popular plants for this region include succulents, cacti, bougainvillaea, jasmine, and hibiscus.

Use the right soil

Using the right soil is crucial for growing healthy plants. Choose a well-draining potting mix with plenty of perlite, vermiculite, and peat moss. This will help your plants grow strong roots and prevent water from sitting in the soil, which can lead to root rot.

Water your plants regularly

Watering your plants regularly is essential for their growth and health. Be sure to water them deeply, allowing the water to penetrate the soil and reach the roots. But be careful not to overwater, as this can also be harmful to your plants. A good rule of thumb is to water when the top inch of soil feels dry to the touch.

Give your plants plenty of sunlight

Most plants need plenty of sunlight to thrive, and the Costa del Sol is blessed with sunshine for most of the year. Place your plants in a spot that gets at least six hours of direct sunlight each day. If your balcony or solarium roof is shaded, look for plants that can tolerate low-light conditions.

Prune your plants

Pruning your plants is an important part of maintaining their health and appearance. Regularly removing dead or damaged leaves, flowers, and stems can encourage new growth and prevent disease. Be sure to use sharp, clean pruning shears and follow proper pruning techniques.

Protect your plants from pests and disease

Unfortunately, pests and disease can be a problem for balcony and roof gardens, especially in warm and humid climates like the Costa del Sol. To protect your plants, inspect them regularly for signs of pests or disease, and take action immediately if you spot anything suspicious. It’s A Funny Old World:

The current U.S. flag was designed by a 17-year-old student

Have you ever heard of Robert G. Heft? No? We’re not surprised!

Believe it or not, Robert created the most famous flag design in the world as part of a school project when he anticipated Alaska and Hawaii joining the United States. He designed the American flag back in 1958.

Ironically, he only got a B- for the assignment and a reprimand from his teacher for having too

many stars. As he would state later, his teacher told him, “You don’t even know how many states we have.”

Not discouraged from his teacher’s reaction, Robert sent his design to the White House. His design was chosen out of more than 1,500 designs that were given to President Dwight D. Eisenhower. His teacher then changed the Grade to an A.

Here’s my top 5 tips for damage limitation during your stay!

1 - Keep the Training Alive!

There are going to be days where it’s impossible, but over the summer if you cease to train like you usually do, you could end up developing a new habit, the habit of not training! So whether it’s a 20 min half assed gym session, or an hour and half beasting, SHOW UP, the very act of showing up ensures you keep the good habit of training intact!

2 - Avoid ‘All or Nothing’

You know the drill, it’s the weekend, you’ve been really good all week, you have a couple of drinks which leads to a whole host of poor food choices, you’ve got the dreaded hangover the day after which leads to more of the same....you end up thinking ‘SOD IT’ and all the hard work is undone! Don’t panic, don’t worry, it’s not the end of the world, just get right back on track the day after! Progress is rarely a linear affair!

3 - Drink Low Cal!

Whilst those fancy cocktails are appealing and equally delicious and sex on the beach sounds exotic, albeit maybe a tad uncomfortable, you could be consuming around 240 kcals for one of those bad boys. Whereas if you opted for a vodka and diet coke, that would only set you back around 90 kcals. Try to stick to spirits with zero calorie mixers!

4 - Save a Few Calories!

Calorie banking is a way of holding back a Little during the week in order for you to have more calories available to you at the weekend. If you know you have an event coming up at the weekend and you know for sure it’s going to be calorific, then save some calories during the week. Try intermittent fasting to shorten the window of eating opportunity and consume less calories for a few days, then you have more ‘wiggle room’ for the weekend!

5 - Get Active

Surfing, hiking, swimming, cycling, mountain biking, padel tennis, some of the best gyms in Europe are all here in Marbella, take advantage whilst on holiday. Get out in the fresh air and get moving. There’s so much you can be doing and exploring during your stay!

Above all, enjoy your summer, spend time with your loved ones and create memories that will last a lifetime, and don’t forget, you’re probably not going to care about your six pack when you’re 80 odd!!

Sleep Is Vital For HealthWake Up Refreshed, Not Groggy!

Many people wake up feeling groggy, tired, and sluggish, which can make it challenging to be productive and focused throughout the day. However, there are several things you can do to improve the quality of your sleep and wake up feeling refreshed.

Here are some tips on how to wake up refreshed: Stick to a consistent sleep schedule

One of the best things you can do for your sleep quality is to establish a consistent sleep schedule. This means going to bed and waking up at the same time every day, even on weekends. This routine helps regulate your body’s internal clock, making it easier to fall asleep and wake up feeling refreshed.

Create a relaxing sleep environment

Your bedroom environment plays a critical role in the quality of your sleep. Make sure your room is dark, quiet, and cool. Invest in comfortable bedding and pillows, and remove any distractions such as electronics, pets, or clutter.

Avoid stimulants before bed

Good sleep hygiene includes adopting healthy sleep habits such as avoiding naps during the day, avoiding alcohol before bed, and establishing a relaxing bedtime routine. It’s also important to create a comfortable sleep environment, as mentioned earlier.

Consider a sleep supplement

Some natural supplements such as melatonin, valerian root, and chamomile may help improve sleep quality and promote relaxation. However, it’s important to speak with your healthcare

provider before taking any supplements to ensure they are safe and effective for you.

Seek professional help if needed

If you have persistent sleep problems, it’s important to speak with your healthcare provider. They can help identify any underlying health conditions that may be impacting your sleep and recommend treatments such as cognitivebehavioural therapy for insomnia or sleep medication if necessary.

How Do You Really Know Your Wine Isn’t Fake?

Are you buying the real deal, or are you unwittingly financing one of the biggest hidden frauds in Europe?

It’s big business, and really important for the economy, needless to mention the thousands of jobs the beverage industry provides. Europe accounts for 63% of global wine production, while the number of breweries in Europe now exceeds 11, 000. Spain is Europe’s second largest exporter of wine, with 27% of the market.

European Union wine sales are 16 billion litres with an export value close to € 20 billion, while beer production in the EU in 2020 amounted to 33.1 billion litres.

However, Alcohol ranks among Europe’s most counterfeited products. Unfortunately, the consumer appeal of such household names as Spanish Rioja, Portuguese Porto, and Italian Prosecco attracts the attention of criminal gangs seeking illicit profits. Wine fraud, where a cheaper product is passed off as a fine wine, is estimated at €1.3 billion annually, or around 3% of total sales. This does not include beer or spirit fraud, so gives you some idea of the size of the problem faced by legitimate producers, who employ people and pay taxes.

So, how do you know if it’s fake or the real deal?

Since 2020, the main goal of the TRACEWINDU project is to improve the productivity of vineyards and to create an innovative system able to certify the origin of the wine and the quality of the bottle delivered to the consumer.

At the moment, a wine label provides consumers with information about the origins and flavours of the product. However, it can’t enlighten them about the number of intermediaries between the vineyard and the shop or restaurant where it’s purchased.

The TRACEWINDU project has set out to try and change this by focusing on a decentralised blockchain technology that, with a printed QR code, could register information about a wine bottle’s whole life cycle in a transparent manner. Blockchain technology is familiar to users of socalled digital currencies such as bitcoin because it promises security and traceability.

‘Wine producers are concerned about illicit trade, so we need to identify in an unambiguous way the origin of the wine,’ said Gustavo Pérez González, senior project manager at the Universitat Autònoma de Barcelona in Spain.

Tracewindu is also investigating the possibility of including information derived from analytical chemistry techniques in the QR code. These can be used to specify the unique features of a bottle of wine, such as the geographical location, providing a further guarantee of the contents.

Winemakers participating in the project also suggested tracking the temperature during transportation. This would help ensure that the wine hasn’t been degraded when it reaches its destination, improving consumer satisfaction.

So, start looking out for those QR Codes, and enjoy reading all about the authenticity, journey and origin as you sit back and enjoy another glass of the real stuff! .

as the world’s premier producer of wine and a significant manufacturer of beer, Horizon-backed scientists are researching ways to reinforce Europe’s competitiveness in the drinks industry.

The wine sector has built its reputation and dominant market share based on quality, but all the turmoil of recent years and the risks from climate change mean that the drinks industry cannot afford to stand still, especially with imported beverages becoming increasingly popular.

Enhancing beer and wine flavours through research into new yeast strains is one way the drinks industry is trying to stay ahead. On the other end of that, more secure supply chains are needed to ensure delivery of a quality product. This will help Europe’s drinks industry retain its market position.

Distinct aroma

Alcoholic flavours result from complex metabolic reactions performed by yeasts. A type of fungus that transforms sugars into alcohol during fermentation, yeasts also help to give each wine its distinct aroma and taste.

The Horizon-funded Aromagenesis project, led by the University of Dublin in Ireland, focused on understanding the genetics and biochemistry of yeast strains that are responsible for aromas and flavours in lager beers and wine.

Aromagenesis, which finished researching in May last year, assessed whether science could help by varying the flavour profile of certain strains. Working with the drinks industry, through experiments, co-fermentation and hybridisation, the researchers were able to select new yeast strains.

They then created a bank of natural yeast that can produce different flavour compounds and in varying amounts. This led to a bounty of new yeast varieties and taste profiles.

Yeast palette

The new yeast palette is currently available to companies involved in the project. They include German brewer Erdinger Weissbräu and Canadabased Lallemand, which develop yeasts for the global market.

“We are now finishing the first trial fermentations in our experimental wineries,’ said Jose Heras, technical manager at Lallemand Oenology in Spain.”

Spain is Europe’s second largest exporter of wine, with 27% of the market in 2019. The project will now turn to the winery to ‘validate four of the hybrid yeast strains created for aromatic white wines,” he said.

‘The traditional wine and beer industry uses specific and limited numbers of yeast strains,’ said Ursula Bond, professor of microbiology at the University of Dublin. “We thought it was important to make a big survey of different wines’ and lagers’ yeasts and characterise them to see whether some already existing in nature have more favourable aroma and flavour.’

According to Heras, the drinks industry intends to put the yeast research to immediate use with commercialisation of more flavourful Sauvignon Blanc and Verdejo wines, potentially starting in 2023.

Some consumers have reservations about genetically modified organism (GMO) products, so the research was conducted exclusively with non-genetically modified (GMO) yeasts. This will potentially broaden the appeal of the results within the drinks industry as a whole, according to Bond.

Aromagenesis research is published as a publicly available resource, which could also end up benefiting many others in the drinks industry.

Environmental goals

In line with the European Green Deal plans to reduce the use of pesticides and fertilisers, the project also has environmental goals.

This resilience will be reflected in the label, too. If it can be shown that the organic characteristics of the wine are not altered, this feature could add value by showing which winegrowers comply with European sustainability goals.

Pérez González also foresees a possible bottle-return system. This would require winemakers to commit to the QR coded and laser-printed bottles on a long-term basis, but it would align with the circular- economy objective of reusing food packaging rather than producing more of it. This would lead to job-creation in the traceability, distribution, and logistics sectors.

“We are now looking at ways to reinforce the immune system of grapevines and therefore reduce the need for additional chemicals,” said Pérez González.

Gluten Free Roast Duck Leg, Truffled Cauliflower Cheese & Roast Potatoes

You’ll serve crispy, tender British duck leg with truffled cauliflower cheese and a sweet redcurrant jus in this take on a British roast. You’ll make perfect crispy potatoes that are cooked in the duck fat for added flavour, before wilting baby red chard in garlic butter for extra indulgence on the side!

Step 1 - Roast the duck legs.

Preheat the oven to 190°C/ 170°C (fan)/ 375°F/ Gas 5 and boil a kettle. Add the duck legs to a baking tray and season all over with a pinch of salt. Put the tray in the oven for an initial 20-25 minutes, or until you reach step 3.

Step 2 - Par-boil the potatoes.

Meanwhile, peel the potatoes (chop any large potatoes in half). Add the potatoes to a pot of boiling water with a pinch of salt, bring to the boil

over a high heat and cook for 10-15 minutes or until fork-tender. Once the potatoes are done, drain and leave them to steam dry for 5 minutes.

Step 3 - Roast the potatoes.

Once the potatoes are done, remove the duck legs from the oven. Add the drained potatoes with a generous pinch of salt and give everything a good mix up until coated in all of the duck fat (add a little vegetable oil if they’re looking a little dry!). Return the tray to the oven for 50 minutes further, or until the duck is cooked through (no pink meat!) and the potatoes are golden and crispy.

Step 4 - Roast the cauliflower.

Meanwhile, cut the cauliflower into florets. Add the cauliflower florets to a baking tray, drizzle with 1 tbsp [2 tbsp] vegetable oil and season with a pinch of salt. Put the tray in the oven and cook for 15-20 minutes or until tender and golden.

Step 5 - Make the redcurrant jus

Dissolve 1/2 chicken stock cube (save the rest for later!) and the redcurrant jelly in 250ml [400ml] boiled water. Add the stock to a pot and bring to the boil over a high heat. Once boiling, reduce the heat to low and cook for 10-15 minutes or until the sauce has reduced by half. Once reduced, add a knob of butter and cook for 1-2 minutes further or until thick and glossy – this is your redcurrant jus.

Step 6 - Bake the cauliflower cheese

Dissolve the remaining stock cube in 50ml [100ml] boiled water. Grate the cheddar cheese. Heat a pot over a medium heat with a small knob of butter. Once melted, add 1 tsp [2 tsp] flour and cook for 1-2 minutes or until a roux (sandy paste) has formed. Stir the chicken stock gradually into the roux and stir in the truffle flavoured oil, Dijon mustard, crème fraîche and grated cheese – this is your truffle cheese sauce.

Add the roasted cauliflower to an oven-proof dish and pour over the truffle cheese sauce. Put the dish in the oven for 15-20 minutes or until golden.

Step 7 - Make your garlic chard

Peel and finely chop (or grate) the garlic. Return the pan that was used to boil your potatoes, to a medium heat with a knob of butter. Once melted, add the chopped garlic and cook for 1 minute or until fragrant. Add the baby red chard with a pinch of salt and cook for 2-3 minutes or until slightly wilted – this is your garlic chard.

Serve up!

Serve the duck leg with the roasted potatoes, truffled cauliflower cheese and garlic chard to the side. Drizzle over the redcurrant jus.

Growing up in Latvia, a small Eastern European country, Alexandra always had a feeling that in the future she would do big things. From a young age, she was very passionate and had a love for teaching and knowledge sharing.

Alexandra’s first “serious” job was at a leading dance school in Latvia, where she trained herself and taught kids and teens dancing. It was her passion, and it took her all around the world, from Poland to New York City. She danced her heart out, yet she understood there was more to life than just one passion. So she moved to London after meeting her first love and took a leap into the CRM industry, working for a prestigious Salesforce consultancy.

It was a life-changing decision, and within a year, she completely transformed her career path, immersing herself within the industry and working on dozens of successful projects with top experts in the field. She even joined her partners’ IT startup and travelled the world, living the nomad dream.

But as much as she loved the nomad life, she knew that she wanted to do more. Therefore she returned to the UK, took on an exciting new role at a consultancy firm, and even competed in bodybuilding and qualified for The British Nationals.

Through her endless enthusiasm and ambition, Alexandra gained many new IT certifications and opportunities to work with some of the world’s top enterprise businesses like L’oreal, Onfido, Veganuary, Village Waters and more.

She implemented more than a hundred CRM and MarTech solutions, helping businesses thrive in the digital and online era.

And then, in 2018, she decided to start her own IT business in the UK. It wasn’t easy, but within the first four months of opening her own Ltd Company, she signed a contract with the worldrenowned London Stock Exchange Group and many other leading companies.
