FORINGREDIENTSTHEFILLING: • 300g Minced beef or 150g each of minced beef & pork • 4 Green or red peppers • 2 tbsp Olive oil • 50g Celery finely chopped • 50g Carrots finely chopped • 1 Small onion finely diced • 1 tbsp Sweet sherry • 15g Raisins • 10g Candied mix peel • 25g Flaked almonds • 35g Pecan nuts • 1/2 tsp Dried oregano • 1/2 tsp Ground cinnamon • 1/2 tsp Ground allspice • Salt and black pepper to taste • Squeeze of lime This festive dish is typically served in the month of September to celebrate Independence Day because the colours of the dish resemble the colours of the Mexican flag; green, white and red. Traditionally made with Poblano chillies, but any peppers work well for this recipe. CHILE EN NOGADA (MEXICAN STUFFED PEPPERS)
STEPMETHOD:1:Using a pair of tongs, char the peppers over a flame until blackened, then peel off the charred skin and set them aside. Alternatively, you can roast them in the oven until blackened. STEP 2: For the filling, heat the olive oil in a frying pan over a low to medium heat and sweat the celery, onion and carrot for about 10 minutes until softened. STEP 3: Turn up the heat, add the meat and fry until lightly browned, then add the sherry and the rest of the ingredients. Cook briefly, then remove from the heat and allow to cool.
