Golfing Fever
Few could miss the start of the Illawarra on the South Coast of New South Wales, where the mountains meet the sea and the postcard views rival any you’ll find along the Coast. It’s an easy drive from Sydney, with lots to see along the way. • Turn off into the Royal National Park – the second-oldest in the world – and take a scenic drive to the popular hanggliding site of Stanwell Tops. • Drive down the coast and explore the
Northern Wollongong Coastal Villages, famous for their beaches, cosy cafes, arts and antiques. • New South Wales’s third-largest city, Wollongong, is just an hour’s drive from Sydney and this thriving holiday hub offers everything from adventure sports to relaxation, great shopping and gourmet restaurants but if you’re searching for some calm and inner peace visit the Nan Tien Buddhist Temple – the largest
Buddhist Temple in the Southern Hemisphere. • Water sports abound in nearby Shellharbour, home to Lake Illawarra, plus famous local surf spot The Farm in Killalea State Park. • There’s also great hiking and refreshing swimming holes to be found in Macquarie Pass National Park on the Illawarra escarpment. • Further south is Kiama, a picturesque
fishing village famous for its ‘Blowhole’ This natural spout is fed from the sea below and can shoot a stream of water up to 60 metres high! • Adrenaline junkies can also get their kicks at Jamberoo Recreation Park, which is just a short drive from Kiama. • If you’d rather flake out on a beach with a good book, you’re sure to find a slice of heaven around Gerringong and Gerroa.

wouldn’t call my journey to ancient Mayan villages in Guatemala a “holiday”. Sure, there’s all that sunshine, the lush sub-tropical forests, and a gracious people of timeless culture at every turn. That has all the makings of a great getaway. Not this trip. This was packing 70 pounds of medical supplies and basic food staples on my back (not to mention my camera gear) and climbing trails so steep and at altitudes so high that your nose could start bleeding with a sneeze. This was lungs set on fire - ignited by the thin air that’s left at 7,000 ft above sea-level.This was hard work. I’m not a sucker for pain. Let’s be clear on that point from the beginning. I like my international trips to fully cater to my comfort. I expect plenty of food and drink, a comfy room with a view - and if possible a hot tub. This trip to the mountains of Guatemala, however, held no promise of the good life. The plan was quite simple. Bring medical relief, food and construction aid to the villagers of a poor region in the Guatemalan highlands. San Pedro Necta is a small town nestled in a lofty eyrie between two mountains. Coffee and colourful fabrics are its economic mainstay. If you’re lucky enough to make a living in either of those industries you stand a decent chance of living beyond the age of 40 and are most likely able to afford a tin roof over your mud-brick home. If you happen to be on the lower end of the scale and struggle to find seasonal employment - you’re going to need some serious help. The Mayans are a proud ancient culture. They have stood the test of time with incredible ingenuity and grace. They are also considered to be on the lowest rung of the social ladder in this predominantly Latin country.Their homes are found up in the hills that surround San Pedro Necta. As a community, each
I
Mayan keeps an eye out for their neighbour. Maze corn, small vegetable gardens and quite rough looking chickens are the tenuous staples that keep them alive from one millennia to the next. Outside of that, if you suffer an abscessed tooth, have a fever or develop an infection of any kind - you’re in for a lot of pain. Relief is simply unaffordable. My trip was organized through the group “Missionary Ventures”. It focuses on providing relief to those who suffer most throughout the globe. The organization strikes a healthy balance between nurturing both the body and spirit of those they help. Basically, they put their money where their mouth is and get the job done without a fuss. So, I find myself looking down at clouds - not fog that wreath the mountain side. I’m out of breath and overheated and will probably remain this way for a most of the day.The rice, beans and antibiotics in my bulging pack have gained weight with every torturous step up the trail. Insects, the size of rodents and in colours you only see under the influence of serious drugs, scurry across my feet. A cheerful Mayan family greets me outside a humble mud hut no bigger than a doublesized garden shed. They graciously provide whatever comfort they can - a small plastic chair to rest on and an apron full of oranges. I empty part of my pack with enough goods for one family (there will be several others to visit before the day is done). The children’s eyes light up at the gifts I offer. The mother’s eyes well up with tears. Her gratitude is heartfelt and honest. I’m genuinely humbled by these beautiful people. Later, as I make my way back down the mountainside, I’m feeling no pain. It dawns on me then… a change like this is as good as a holiday.

Name: Rochelle Gilmore Occupation: Professional cyclist Date of Birth: 14/12/1981 Loves: Family, winning and the water. Dislikes: Cheats; cheating in sport and people who cheat on loved ones. Favourite movie: A Time to Kill. Favourite food: Ice cream and chicken Favourite drink: Hot chocolate
cyclin A STANWELL TOPS RESIDENT FOR MOST OF HER LIFE, Illawarra cyclist Rochelle Gilmore is currently enjoying some of the most exciting times of her illustrious career. Just weeks before the Commonwealth Games, IMAGE Health Editor Susie Burrell grabbed a few minutes with the busy cyclist to gain some insight into the world of elite level cycling. SB: Rochelle, how long have you been cycling for and how did you initially become involved in the cycling? RG: When I was 13 years old, a program called 'Talent ID', came to my high school in Bulli. I was then selected to undergo fitness testing during school hours which involved sprinting, jumping, throwing balls and endurance runs, among other things, to identify sporting talent. From there, the Illawarra Academy of

Sport contacted me at home and gave me a bike to train with for a month. I then won my first National Championship and realised I had potential in the sport.
SB: Can you outline your career success so far? RG: In 2005, I won World Cups in both road and track cycling. Previously I have placed 2nd at the World Championships, on three occasions on the track and at the 2002 Commonwealth Games.Although I have been up there among the world’s best for a few years now, I am still yet to win any of the big races and so am as hungry as ever for this type of success.
SB: What are your immediate and long term plans in regards to cycling? RG: My immediate goal is to win at the Commonwealth Games; before I have done that, nothing else matters! My long term goal is to become

the world’s fastest road sprinter and to win an Olympic Gold medal, in road or track cycling.
SB: And after cycling? RG: I often think of a career in television, possibly presenting cycling events. I would also like to have a family someday.
SB: Who has had the biggest influence on your career thus far? RG: There have been so many people who have influenced my career and my life in different ways. Ultimately it has been my family who are always there motivating me in their own funny ways! SB: What does your current training program involve? RG: Basically lots of road kilometres! For example,
SB: With so much training, you must burn through plenty of calories. How do you stay fuelled up for so many hours on the bike? RG: During my ride, I’ll eat a couple of “High 5” energy bars, then make a huge calorie packed protein shake with low fat milk and ice to consume immediately after training. Mid afternoon I will eat steak, eggs and veggies with some dinner rolls; a big meal. Before bed I’ll make another milk shake to fuel up for the next day. SB: What is your fondest memory of cycling so far? RG: It was definitely winning the opening round of the Road World Cup last year. I had a new coach Warren McDonald - who wrote a very specific and scientific program to prepare me for that race.We both put a lot of effort in and I was delighted to come up with the result on the day. It was very satisfying. SB: What does life involve for Rochelle away from cycling?
RG: Not much! At the moment my life is 100% cycling. If I get side tracked it means that I am not giving cycling 100% and that means I’d be lacking commitment. There have been times when I have focused on other things, like last month when I could not exercise due to a fractured vertebra. During that time I worked with Channel Ten commentating. I am also always studying something while recovering between sessions; currently I am increasing my knowledge of the Italian language since I spend a considerable amount of time cycling in Italy. SB: What are your favourite things about living in the northern suburbs of Wollongong? RG: We have a beautiful property of 50 acres up in Stanwell Tops and the beach is just 3km away! I live in the most perfect location for cyclist – turn right to head along the stunning coastline or left to venture through the National Park. SB: Out of all the places you have visited with your cycling, what is your favourite place around the world? RG: I love the Italian Dolomites. I have just purchased a 3-bedroom home there. It is an amazing place for a white Christmas holiday. My other favourite places are Cronulla, Switzerland and San Francisco. •

INVESTMENT IN YOUTH [story_susie burrell] [photography_david finlay]
WITH THE START OF ANOTHER FOOTY SEASON UPON US, THE NAMES BARRETT, TIMMINS, RYLES AND GASNIER FILL THE SPORTS SECTION OF LOCAL NEWSPAPERS, AS THE ST GEORGE ILLAWARRA DRAGONS ONCE AGAIN GO IN SEARCH OF A PREMIERSHIP WIN. AS IN ANY TEAM, BEHIND THESE STARS ARE SOME EAGER YOUNGSTERS, WHO ARE MORE THAN READY TO STEP UP AND HELP THE DRAGONS IN THEIR SEARCH FOR PREMIERSHIP GLORY.
Three of these players; twenty one year old Ashton Sims, Ben Creagh and Justin Poore are all local boys, proud to grow up in the Illawarra and even prouder to play for their local team at national level. Ben Creagh Ben Creagh’s rugby league career was far from planned. A representative sportsman in rugby union, league and basketball, Creagh says it was eventually the team nature of footy that helped him to make his decision to play league full time; “It was a big decision for me to quit basketball. I was already playing basketball for the junior Hawks but when it came down to it, I realised I enjoyed footy a lot more”. Creagh signed with the Illawarra Steelers when he was just seventeen and two years later he found himself playing first grade for the Dragons. Creagh’s potential was perhaps realised late last year, when he was named as a late inclusion in the Australian Kangaroos team to tour Great Britain. “I had a great time on that trip. More than anything it made me see how much more work I need to do with my footy to improve and be able to play at that level. At the moment my primary goal is to stay in the St George first grade squad, and ultimately represent my country again”.
Ashton Sims How Ashton Sims managed to get enough food to grow into the 6’ 4” monster he is in a family of five
is questionable but ultimately his football has been the biggest winner. The formidable character has a long history of footy, and played Australian schoolboys with Justin Poore back on 2002. Sims made his first grade debut for the Dragons at the tender age of eighteen. “I think that since it happened relatively easily, at that time I took playing first grade for granted. Since then I have struggled to play consistently well week in, week out. This year I want to play well every week”. A strong off season has put Sims in a positive frame of mind; “I have started the year out better than I ever have before. I feel fitter and stronger and my attitude has changed; I want to go to training. The hardest thing about being at a strong club like the Dragons is that you can be dropped at any time. It is a lesson I have learnt the hard way and I won’t let it happen this year”
Justin Poore Another Dragon from a large family is Stanwell Tops based player Justin Poore. The third of a family of six, Justin relocated to the northern suburbs of the Illawarra from Perth with the rest of his family when he, Justin was ten years old. Justin quickly became a player of all positions as a Helensburgh Tiger before finishing school at Endeavour Sports High, by which time he was showing much potential as a representative footy player. “All I ever wanted to do was play first grade footy, since I was just ten years old. I have always loved it, being with my mates, the
whole thing”. Poore was recruited by the Illawarra Jersey Flegg side in 2002 but admits that at that time he was too young to take footy seriously “I was too young in the head and just wanted to hang out with my mates”. A year off was just the ticket to see Justin get back on track. “After I had a year off I realised that I really wanted to give footy a good go”, and by 2004 Justin was back on the bench for the Dragons. Poore believes it will be this year that is a true test of his future in footy, “My main goal this year to play consistently well. Ultimately I would love to make the country origin squad; I know that it is now or never”. Rest assured Dragons fans, your footy future is in good hands.

Low carbohydrate diets are based on the principal that as carbohydrate is the primary fuel for the muscles and the brain; by removing it, the body will have no fuel available and will be forced to burn body fat. In theory, this is true. When the majority of bread, rice, pasta, fruit, sugar, jam, honey, soft drink, fruit juice and cordial is removed from the diet, most people will lose body fat. The biggest issue with a low carbohydrate diet is the sustainability, as it gets very boring eating only a mix of lean meat, eggs, vegetables and salad,

diet or no diet? FOR MANY OF US, A NEW YEAR SIGNIFIES A NEW START, PARTICULARLY IN RELATION TO DIET AND EXERCISE HABITS. SO, WHAT DIETS ARE OUT THERE, WHICH ONES SHOULD YOU TRY AND MOST IMPORTANTLY, WHICH ONES WORK? GENERALLY SPEAKING, all of the popular “diets” can be grouped into one of three categories; low carbohydrate, moderate carbohydrate or low fat. All “diets” are composed of a certain combination of foods that manipulate the various proportions of the three energy-giving macronutrients, carbohydrate, protein and fat. Certain dietary proportions of these nutrients help with fat loss, as do diets that reduce the total number of calories you are eating. The most important thing to remember when choosing a diet is to identify one which is sustainable long term. A diet which requires you to live off soup and tuna seven days each week will see weight loss, but how long can you do it for?

Sometimes I throw underpants at myself. Most embarrassing Album in your collection? The Magic of Liberace First album or single you bought? Deep Purple Latest album you bought? INXS – “Switch” and IL DIVO
achieved platinum status. Even though we would not want Powderfinger to break up, I’m sure that the success of this album will guarantee that this will not be Bernard’s last solo album.

festivewines I GOT TO TRY SOME GREAT WINES over this festive season and summer. Christmas really is a time where most of us shake off the $8.99 special, and splurge a little on something a little more exotic; take the opportunity to impress with a bottle of French bubbles, or maybe a single vineyard Victorian Chardonnay. After all, who wants to eat the fabulous festive feast with a glass or two of Chateau Le Box – (cask wine)? Not I! Speaking with the local wine retailers, they reported that the varieties of Sauvignon Blanc, Chardonnay and sparkling wine were the most popular this summer, with a bigger move toward Rose-styled red. Bottle shop owners where chuffed to see a fresh enthusiasm for newer styles and the trading up to French Champagne over other Sparkling. Jacqui O’Carroll of Thirroul Village Cellars spoke of a “summer vibe” based around boutique beers and rose, with Champagne making an impact out in northern fringes this year. “The wine companies came in with some excellent deals on French, so we offered them in store, and the drinkers were happy to give them a try. We also suggested people try a slightly chilled Pinot Noir over Christmas lunch
with their turkey, and these also sold really well.” Tim Hampton of Crown West Cellars told of a different story in his shop in town. “The New Zealand Sauv Blanc’s were quite strong, but we had many open minded customer let us make decisions for them, and as a result, we sold a few nicer dry-styled Roses, and some exotic varieties such as Pinot Gris (Pinot Grigio.)”
So what did I like this summer? The big hit for me was bubbles, mainly because my partner demands we open a bottle on most occasions (“every day is worth celebrating…”). We had a few bottles of French, but the real Aussie hit this summer was Jansz from Tasmania. I loved the 2001 Vintage Cuvee. It shows a delicious, complex aroma of honeysuckle and strawberry hints, married with the more traditional shortbread wafts. And a fabulous palate: so soft, textured and with all night persistence. In table wine, I loved a few of the 2005 Sauvignon Blanc’s, mainly from the cooler Australian districts of the Adelaide Hills. Kirrihill is a small Clare Valley producer with some outstanding red wines. The 2005 Kirrihill Estates Sauvignon Blanc, from the Mount Torrens vineyard in the
Adelaide Hills is an intense little wine with tropical/pineapple fruit character and a softness to its racy, edgy finish. I never stop warming to good chardonnay either. Each year, I come across some true gems, and this year, the precious stone was the 2004 Hungerford Hill Tumbarumba Chardonnay. In times past, I have written about Tumbarumba in NSW as one of Australia’s leading chardonnay regions. This wine reinforced my thoughts ten fold; such a beautifully crafted wine, with ripe, graceful grapefruit and subtle oak-integrated flavours. Spend about $25 on a bottle of this wine and see what I mean. Other notable glugs have come in the shape of two fine Rieslings - the 2005 Heggies Riesling, and the 2005 Pirie South Riesling. I use the term “ glug” with affection, as these days I like my Rieslings to be subtle and structured, with an easiness to drink and not be too acidic, or sweet. Both these wines are from cooler regions, Eden Valley and Tasmania respectively, so the taste spectrum tends to be a little more elegant. There are distinct regional nuances to both these wines, so they are quite different to each other in flavour, yet similar in style. The great news is that all these wines are still out there on the shelves, so seek and enjoy. •
