Marty and Erica are one of i98 FM’s leading “brands”. Anyone tuning into

How do you cope when you are having a bad day, and how do you plan each day’s show? Erica: Each day’s show starts with meetings, research and interviews, recorded for broadcasting later in the day. If I’m having a bad day, I will tell listeners. I believe we should mirror to our listener’s lives. Not everyone feels great all the time. By being honest, listeners empathise and identify with us.

IMAGE: What kinds of things do you guys do outside of work? Marty: My work day starts around 4.30am, but is more or less finished by midday, which means I get a lot of time to play with my two kids, Taylor-Jane, 6, and Jackson, 3. Yesterday I spend hours kicking a football in the park with Jackson. It was great fun and good exercise. I love being with my family and friends; I’m not one for the limelight. Erica: I’m a bit of a workaholic but I enjoy socialising with my friends. IMAGE: Are you also looking for love? Erica: Yes, I am currently single. IMAGE: What are you looking for in a partner? Erica: Marty says I am ridiculously fussy, but I am looking for mental stimulation and someone I can share a laugh with. IMAGE: Erica, how would you describe your personal style? And what Australian fashion labels do you like? Erica: I’m built for comfort. I love Sass & Bide, Bare, Alex Perry and Leona Edminston, but I usually wear Sussan. IMAGE: How do you keep fit and healthy? Erica: Yoga and Sure Slim. Marty: I play beach touch footy three days per week. IMAGE: Describe some of your funniest moments at i98? Erica: The listeners are the stars. They crack us up regularly. We celebrated a ratings win pretty hard one time and then Marty and I rang the management staff at 6am the next day to wake them up. That was pretty funny. Marty had 4 weeks off last year and we were pretty funny without him. Marty: It was when Erica was away and I did the show on my own. Can’t say too much – she might get upset. IMAGE: Who do you admire and who are your mentors? Erica: I admire CNN reporter Christiane Armanpour, ABC Perth breakfast host Eoin Cameron and Enough Rope’s Andrew Denton. Recently, when I was going through a bit

The rainforest experience is awe-inspiring – a spiritual experience capable of elevating the senses, if you let it. How does a grand old fig tree, with its gigantic-twisting roots, exist so dominantly beside fragile beds of tiny, lace-like ferns? As sunrays spear through the towering, columnlike trunks of the forest trees, it is not difficult to imagine a fairy, wings glistening over a bubbling stream, or a playful pixie, peeping out through the misty layers of sunlit vegetation. Enchanted sounds of life linger in the heavy air of the rainforest, every scene alive with countless shades of glorious green. The park is tastefully laid out with easy pathways, bridges and crossings with the redevelopment done in such a way so that any construction is unobtrusive. A trip to the Minnamurra rainforest is highly recommended – a testament to those who contributed to its preservation. Education tours for individuals, groups and school excursions are available. The park provides ample parking, picnic and BBQ facilities and the café offers light meals and refreshments. You can browse and select from a wide range of Australian-made products, environmental publications and souvenirs at the centre’s retail shop. Tristan.Knowles [story_susie burrell] [photography_paul–james hay]
While many elite sportsmen have compelling stories to tell of their struggle for success, Tristan Knowles’ story is a truly inspirational one. Diagnosed with bone cancer when he was just nine years old and then a secondary lung tumour three years later, surviving meant losing one of his legs. Such a loss would have devastated most people, but Tristan’s love of sport was not to be daunted. Indeed, he has gone on to represent both Wollongong and Australia in the fast-paced game of wheelchair basketball. Susie Burrell sat down with the Roller Hawks player to learn more about the sport, what motivates team members, and Tristan’s own plans for the future. SB: Tristan, what was your first experience with wheelchair basketball? TK: Obviously it was hard losing a leg, but one of the hardest things for me was that I could no longer play the sports I loved. Prior to the cancer, I had been involved in all sports – tennis, hockey, swimming, and especially AFL; I loved them all. After I recovered, I tried a number of different sports for disabled athletes, but wheelchair basketball was the first one that I liked. It was fast, rough and I loved the team aspect. The first time I played was when I was 15 years old, and I have not stopped since. SB: Now just 22, you have made it to the top of your sport very quickly. Can you run us through your career so far? TK: I first started playing in the local competition in Canberra, where I grew up until I was 18. I was then asked to come to Wollongong and play for the Roller Hawks, an extremely good team competing in the national wheelchair basketball competition. I played my first season with the Roller Hawks in 2001 and have been with them ever since. The Roller Hawks are the only regional team to compete in the National Wheelchair Basketball League, and we have been very competitive, winning the League in 2003. Since the club’s birth in 2001, it has been the breeding ground for athletes. Both Brendan Dowler and myself were selected for the Australian team for the 2004 Paralympics, and Brett >50 imagemagazine
Stibners is shaping up to be a star. SB: The last 18-months must have been an amazing time for you, being selected for your first Paralympic games. Can you tell us about this experience? TK: I was first selected in the training team for Athens in late 2001. Twentyfour players were chosen for the squad, which would later be narrowed down to 12 for Athens. I then decided to give selection my best shot, and deferred university during 2004 to focus solely on basketball. This decision paid off, as I was selected in the final team for Athens. The team went on to win the silver medal at the games. I was the second youngest on the team so I didn’t get to play much, but I still had an amazing time. SB: What is your standout memory from Athens? TK: It was a huge experience to have the opportunity to play that level of basketball, but the highlight came before the games even started. When we arrived in Athens, the coach took the players aside and asked each member of the team to describe what being there meant to them. It was such an emotional journey, hearing what other team-mates had sacrificed to be a part of the team, and the hurdles they had overcome in their lives after becoming disabled from horrendous accidents and terminal illnesses. After hearing these moving words, it was easy to give the game everything

SB: What are your plans for the future? TK: My long-term goal is to make the 2008 Paralympic team. In preparation for this, I am going to spend a fair amount of time playing over in Europe. In October I went to Italy and will continue to play our off season over there as there is more opportunity to play; maybe 50 games a year, whereas here there are only 15 games or so. This, in turn, will hopefully improve my skills for Beijing. SB: What does your training involve at the moment? TK: At the moment I am doing around 12 sessions, which includes three weights sessions, as I am trying to put on some weight. With two team sessions with the Roller Hawks, three aerobic sessions and another five shooting sessions. With this training load and full-time university, I am pretty busy. SB: Who are your role models? TK: My two role models happen to be AFL players. Jason Dunstall used to play for Hawthorn and is known as a true leader and is the second highest goal scorer of all time. I also admire Dermot Brereton as he is remembered for playing his best footy in the big games. SB: What plans do you have for life outside of wheelchair basketball? TK: I am in my last year of study in financial planning at Wollongong University, so I look forward to building a career in this area when I finish playing top-level basketball. SB: Tristan, yours in truly an inspirational story. We look forward to hearing more about the success of the Roller Hawks, and your role in the Australian wheelchair basketball teams over the next few years.

11/2 cups natural muesli 1 cup wholemeal self raising flour, sifted 1/2 cup sugar 1 cup grated carrot 1/2 cup grated zucchini 1/2 cup sultanas 1 egg, beaten 1/3 cup canola oil 1 cup Lite White milk
Preheat oven to 200°C (400°F/Gas 6). Lightly spray 12 mini muffin holes with canola oil spray. Sift the flour and bran into a bowl and stir in the cheese and ham. Make a well in the centre. Whisk together the milk, butter and egg, pour into the well and mix until just combined (the mixture should still be lumpy). Divide the mixture among the muffin holes and bake for 10-15 minutes or until the muffins have risen. *Freeze the muffins in an airtight container or sealed plastic bag for up to 1 month

Aqua Restaurant Since late may, the owners of the cool space known as Aqua, Ana Babic and Alex Matijevic, have shaped this restaurant into a place of familiar acquaintance. Here, people show a keenness for good food, and a mature team manages the service with genuine respect for their customers. The menu begins with “small plates”, Tapas-style meals such as fritto misto and spicy chorizo meatballs, designed to offer customers a casual dining option, emblematic of Wollongong's laid-back beach lifestyle. Admiring the tranquil horizon from our alfresco setting, I let our multi-talented host decide for us. First to arrive was Ana’s very own freshly-baked ciabatta, toasted and topped with a ton of marinated roasted capsicum and Greek fetta. Fantastico. Ana's no fuss, home-style approach to cooking is clearly evident in the subsequent dishes; a roast pumpkin salad of rocket, baby spinach, cashews and lemon olive oil, with a pan fried chicken breast stuffed with Camembert and wrapped in crispy prosciutto served on saffron rice (see recipe). The presentation seemed effortless and the flavours were mouth watering. At Aqua, main meals average just over $20; superb value for the quality. Most meals are served as entrees and main sizes, great for the ladies who want to fit in dessert. As it was, my dining partner (my sister) chose one of the cakes on display, the raspberry delight, a nutty meringue filled with raspberry infused cream. “Scrumptious,” she purred, leaving me little more than a crumb. Aqua’s specials board is popular with “cheap eats” for lunch and dinner, with homemade pizzas and pasta around $12.50. Aqua’s all-day breakfast menu has the largest serve of pancakes in Wollongong, and Ana’s home baked banana bread served with yoghurt is densely moist and good value, at $4. While Aqua is fully licensed, the wine list is limited. However, the restaurant has its own Aqua-branded house wine. BYO wine is allowed at $4 corkage per person. Aqua is open everyday from 7am for breakfast until late. All major credit cards are accepted, as is Eftpos. Bookings are recommended. Signature dish from Aqua’s James Donaldson Pan-fried chicken stuffed with Danish Camembert and wrapped in prosciutto, served on saffron rice (serves two) Ingredients 2 x 250g chicken breasts 40g Danish Camembert cheese 2 x slices prosciutto Olive oil 1-11/2 cups jasmine rice 1/2g saffron threads 150g baby spinach 500ml fresh cream 1 Tbsp rock salt Cracked black pepper 5g crushed garlic (more to taste) 5 coriander sprigs
Method 1 Preheat oven to 200 degrees. Pierce the side of each chicken breast to create a pocket, and stuff with Camembert. Wrap each in sliced prosciutto. Heat two tablespoons of olive oil in a pan; sear chicken for 30 seconds on each side. Place pan in oven and cook for 15 to 20 minutes. 2 Add saffron threads and rice to 2-1/2 cups cold water, and bring to the boil. Cover, reduce heat to low and cook until rice has absorbed all the water. This should take about 15 minutes. Do not take the lid off while cooking. Stir once cooked. 3 Pour cream into a pan; add garlic, rock salt and cracked pepper. Bring to a boil and reduce for approximately five minutes, or until it reaches a thicker consistency. When finished, add chopped coriander and set to the side until ready to serve. 4 Shred baby spinach leaves and place in a serving dish, creating a bed. Mould rice in a dish, and tip over spinach. Place chicken over rice. 5 Finally, pour sauce over chicken and garnish with basil leaf or fresh parsley and cracked pepper.

People are often quick to criticise regional wines, questioning their quality, price and accessibility. However, I believe this criticism is often based on ignorance and/or a lack of understanding of the industry.
Big company marketing and consumer friendly retailing can give wine lovers a false sense of security, but if you really love wine you should consider visiting regional wineries, talking to the producers, and searching for the hidden gems in the pack. They are out there. Which brings me to the second annual Kiama Wine Show, held in conjunction with the Kiama Show recently. Open to wines from the vibrant wine regions of the Shoalhaven Coast and Southern Highlands, 130 wines from 27 local wineries were entered, with several emerging vineyards having a crack at the trophy cabinet. Among them were newcomers Bawley Vale Estate, from Bawley Point and Cushendall Wines at Taralga, near Goulburn. The judging comes at a time when both the Shoalhaven Coast and Southern Highlands wine regions are flourishing with a near doubling of vineyards in the last four years. Kiama Show Society president, Sandy Rendel, commented, “Regional wineries have endorsed Kiama with their entries, and responded well to our extra exhibitor activities for the judging weekend, which helps create additional recognition and awareness for the industry. “The competition aims to identify quality local producers and help promote excellence in the wine industry by issuing awards, but also by creating a structure that provides a forum for networking, communications and education.” Among the judges was Canberra Times wine writer, Chris Shanahan, chairman Geoff Goodworth, and respected winemakers Chris Cameron and Keith Tulloch. It was no surprise to see Coolangatta Estate scoop the trophy pool. Once again, the showstopping 1998 Semillon provided the trophy backbone for Coolangatta, snaring trophies for “Wine of the Show”, “Best White” and “Best Shoalhaven Region Wine”. Coolangatta also enjoyed the trophy for “Best Overall Exhibitor”. Encouragingly Coolanagatta also collected a swag of medals for its recent vintage wines, with the 2005 Verdelho and Semillon toping their class. This only enhances Coolangatta’s already strong stable. Other South Coast wines to shine were the 2005 and 2004 Chardonnay’s from Cambewarra Estate, along with the 2003 Kladis Reserve Cabernet, which picked up a gold along with the trophy for “Best Red Wine”. I was particularly pleased to see the 2003 Silo’s Reserve Shiraz top its class; I wine I reviewed back in April which impressed me greatly as a local red. Predictably, the Southern Highland wines dominated the aromatic varieties of Riesling and Sauvignon Blanc. This wholeheartedly endorsed the comments made in our August edition by senior Viticulturist Mark Bourne, who earmarked the region for some outstanding cool climate whites in years to come. Bourne also mentioned Merlot as a strong performer for the region, and low and behold, the Southern Highlands Winery 2003 Merlot picked up the trophy for “Best Highland Wine”.
