Kerryn McCann has become one of Australia's most respected sporting icons, representing her country at three successive Olympics in the most gruelling event of all - the marathon. In 2004, just months after giving birth to her second child, Kerryn represented her country at the Athens Olympics in a race she describes as the hardest race of her life. Kerryn McCann (KM) spoke to IMAGE's Health Editor Susie Burrell (SB), about the Athens experience, and her plans for the future.
at sport, especially running. I stopped training for a couple of years when I was a teenager and then, during my late teens, became particularly interested in long-distance running. My first major marathon was at the 1994 Commonwealth Games and, after that, I took some time off to have my first child, Benton. After a year's break I found that the fire was still burning, so I started training again and have since competed at the 1996, 2000 Olympics and 2004 Olympics.
SB: Kerryn, can you give us some background on how you became interested in long–distance running? KM: I came from a sporty family and, with my small, athletic build, I was always reasonably good
SB: You have described the marathon in Athens as the hardest one you have ever run. What made this one so tough? KM: In hindsight, all I can put it down to was that it was such a hot day. Apart from that, my
preparation had been perfect. I was lucky enough to have my family around me in Athens, including the kids, and I was very relaxed. This marathon was different to the previous ones I had competed in, as it was held at six o'clock at night, which meant not only did I have all day to think about it, but that the ground had been absorbing heat all day, which made the run itself very tough. I came 31st and ran a time of 2hrs 41mins, which was my slowest time in 15 years, which was quite disappointing. The next day was full of mixed emotions. I was particularly disappointed for my support staff, but also relieved that it was over. SB: When you were younger, did you ever imagine that you would be representing your country in an event as gruelling as the marathon? >13 imagemagazine

make plans for the day ahead, and think about what I am going to make for dinner! SB: Do you follow any particular diet? KM: At the moment I am still breastfeeding my daughter Josie, so I eat whatever I like. I am always hungry and actually find it difficult to eat all the food that I actually need to get through. SB: Take any special supplements to help with recovery? KM: Mainly just Vitamin and C. Nothing special and I always have a sport drink after one of my long runs.
KM: No, I had never really thought about running in that way. I simply ran because I loved it, although I was always a stubborn and determined child, particularly with regard to sport; qualities which no doubt help direct your energy in an event like the marathon. SB: As the mother of two small children, how do you manage to find a balance between training for an Olympic event and being a mum? KM: I think that having the support of my family actually helps my running. It is a good grounding. I walk in the door after training or running a race and straight away I am back to just being mum. I am also really lucky because I am blessed with an incredibly supportive husband, who helps out a lot. >14 imagemagazine
SB: Preparing for an Olympic event often involves a number of different support people, who are the key members of your support team? KM: My coach, Chris Warlaw, my husband Greg, and our parents – they provide a lot of support, especially in relation to babysitting! SB: When you are out for your long training runs, what sorts of things do you think about? KM: It's funny, because I am able to really "zone out" on my long runs. I have run past people I know, and they later tell me that I completely ignored them, and I have no recollection of seeing them. In saying that, I really do not think about anything in particular. I just
SB: What does the future hold for Kerryn McCann? More marathons? KM: I am back in training now, preparing for the upcoming half marathon in Sydney. After that I will re-evaluate to see if I will continue to compete. I will run marathons for as long as I can. I love the travelling, as does my family, and while I still have the passion for running, I will continue. SB: What does life away from marathon running include for Kerryn McCann? KM: Spending more time with my children. SB: How would you like to be described? As a person and as a competitor? KM: I would like to be remembered as a good person, someone who put family before everything else. In respect to my running, I would most like to be thought of as determined, and someone who had managed to find balance between running and family life. //im

While this trend seems set to continue, running alongside it is a trend towards "integration" whereby products become less dominant and more in tune with the overall mood, tone and feel of the home kitchen. Modern style and practicality Overseeing what’s happening on the shop floor at Domayne Warrawong is David Pietruska, who says that while the trend toward stainless steel seems “to have been with us for ages and continuing well into the future” there is also a shift back toward traditional white and black cooking appliances. “I'm not sure why this is, but there has been a much greater demand lately for white or coloured ovens, fridges and dishwashers.” This is best illustrated in the Miele range of ovens featuring bold, black doors, the Fisher & Paykel SA310 oven (pictured) and Fisher & Paykel Fab 28 range of fridges. Mr Pietruska believes there is a real move toward “integration” and products that are more harmonious to their environment. “Integration means having products that fit in with an overall theme but do not stand out on their own,” he explains. “For example, most dishwasher manufacturers now have products that allow you to add your own cupboard door, so that they are, in effect, hidden. Others allow for ‘semi integration’ which is about displaying the control panel, but little else.” Like many other kitchen products, dishwashers have come a long way in recent years, with quieter, water saving devices of various sizes to suit every family. “The Fisher & Paykel dual drawer washer [pictured] has been very popular because it integrates well and allows families to do big or small loads, as do many other brands. These days, most dishwashers are also a lot quieter." The cleaning issue is also high on everyone's agenda, particularly when it comes to the horrible task of tackling greasy ovens. The new Pyrolytic type ovens solve many of these problems. “Pyrolytic cleaning occurs at high temperature, so dirt and grease accumulated along the sides, base and roof of the oven carbonises and turn into a light ash,” explains Mr Pietruska. “All you have to do is wipe the ash away once and the oven has done its work.” The excitement surrounding stainless steel has been somewhat tempered by the fact that it records finger marks

and needs regular maintenance. “So, with fridges in particular, there is move towards what we class as pewter finishes that are much easier to keep clean.” Also making life easier in the cleaning stakes is the traditional range-hood. The newer ones are not only more effective and efficient, but most filters can simply be popped into the dishwasher. Mr Pietruska believes that, while design and aesthetics are important, “we will always be attracted to products that make life easier and fit in with the way we live.”
Substance over style While Kleenmaid’s Chris Lozenkovski has strong views on style and design, he believes aesthetics often cloud important issues, such as the way many stainless steel products are sold. “What a lot of consumers and retailers don't understand is that, unless you are buying the highest grade steel, you are getting an inferior product; one that will stain easily and be hard to maintain. It’s all very well having something that looks good, but does it work and will it last?” he asks. Kleenmaid is a kitchen specialist that employs its own designers and chefs who test the products. Mr Lozenkovski strongly believes in recommending products to suit the lifestyle and family needs. “When people come to see us we will often sit them down and ask them questions about how they live, and what the demands are. The great news is that there are products that can save time and labour.” On his list are products like the GE range of fridges or “food preservation devices” which save time and money because they make produce last twice or three times as long. “I have kept a cut watermelon fresh for 26 days, and celery crisp for 21,” says Mr Lozenkovski, a former electrical engineer, now franchisee. He is equally enthusiastic about the ovens available today, particularly the Pyrolytic or self-cleaning types. “We also sell what we call ‘Domino’ cook tops which can be put together to suit your cooking needs. You may want to have a grill on top or an induction BBQ. It just depends what you want to achieve." These cooktops can employ both gas and electricity
"again to suit your needs". More importantly, Mr Lozenkovski believes that people should take advantage of these labour saving devices. "We all have busy lifestyles; so the days of cooking roasts for four hours are gone. These days, induction cooking means the roast can be done in an hour – it's great!" He also says that the new ovens are much safer, with glass doors that are cold to the touch "so the little ones don't get their fingers burned." Many ovens also automatically shut down, once the cooking time is up "so you can go away and have a relaxing bath without worrying about your dinner being burned." Laminex Back On Top The sales manager of Laminex Wollongong, Peter Joyce, is understandably excited about the fact that the company has just opened a new showroom in Unanderra, showcasing a large range of products including two leading decorative brands: Laminex and Formica. Mr Joyce says that Laminex remains popular in the region because many of the original houses featured its products. It also remains a practical, versatile material "that has evolved to include hundreds of solid colours as well as natureinspired and abstract textural designs." The Laminex Colour Palette is now at the cutting edge of contemporary design, featuring a range of over 200 colours and effects that are constantly updated. As a result, Laminex is now used for benchtops, splashbacks and cabinetry as well as "a complementary range of fittings for doors and handles." Laminex is also hygienic and easy to clean. "In the kitchen, every surface needs to be durable and easy to maintain, particularly for benchtops and lower cabinetry doors. Laminate has excellent stain and moisture resistance and, importantly, is more forgiving than other materials such as stone if objects are dropped, or the kids are testing the boundaries at breakneck speed," adds Mr Joyce. advertising//_feature revival due to the open plan nature of modern housing design, where it is important for themes in kitchen décor to flow into the living areas. "We do a lot of work to anticipate trends," says Mr Joyce. "As such, the Laminex brand has expanded beyond laminates to include a complete collection of timber veneers, and the recently launched Freestyle Surfaces - an acrylic-blend solid surface that can be moulded and shaped without any visible joins, allowing for unprecedented design freedom. It's a leading edge alternative for people who like the look of natural stone but are not always happy with its porous characteristics." As Mr Joyce rightly says, "New laminate on your kitchen benchtops will update your look without blowing the budget."
Consistency of Style John Lambert has seen many trends come and go over the last 26 years – and is happy that some are long gone. "Remember the trend for lime green and orange," he asks with a smile. He says that while some clients will always be influenced by up-to-the-minute colour trends, it is equally relevant to take a conservative approach. “It’s refreshing to work with someone who wants to make a statement, and there are certainly a lot of choices available to people today. The important thing to remember is that the colour scheme must fit in with the client's personal style, and the kitchen must always be functional." Indeed, Mr Lambert is a stickler for function and says that by having a thorough briefing with his client, he is able to develop something to match their needs. "We are continually complimented about how well our kitchens work by past clients and their families," he says proudly. He believes that timber remains popular because it has a "timeless" appeal, as does the durable laminated benchtop. At the same time, Mr Lambert has noted a trend toward solid surfaces in four types. "Stainless steel is used for its commercial look, granite for its depth and beauty, quartz stone for its strength,
durability and look. Last, but certainly not least is the stainfree, seamless look of acrylic benchtops." These are typically done in Corian, although Laminex's new acrylic-blend Freestyle Surfaces offers many possibilities (Lambert Kitchens was responsible for building all the demonstration kitchens in Laminex's new showroom at Unanderra.) Mr Lambert has also noticed a trend towards slick, minimalist kitchens that typically use "light stone benchtops, white tone doors, either in laminates or polyurethane with glass splashbacks." He says that today's clients are extremely knowledgeable when it comes to knowing what products are available and what trends are current. "This is obviously due to an increasing number of specialist showrooms, magazines, Internet and TV shows that highlight the latest products," he says. While Lambert Kitchens specialises in replacing existing kitchens, it also builds new kitchens in new homes. Lambert's employs several leading designers; among them Diane Papac – a Certified Kitchen Designer (CKD) who has also been involved in training other designers on behalf of the Housing Industry of Australia. "Our team goes to great lengths to keep abreast of ever changing trends and products," says Mr Lambert. As such, the future is likely to see Lambert Kitchens maintain its place as a leading design company servicing the Illawarra.
Colour trends Domayne's Karen Hillcoat belongs to an exclusive club. Each month a buying committee consisting of five people meet up to discuss ideas sent back to them from a designer who travels the world on behalf of Domayne sourcing ideas, trends and colours. "Our fashion trends reflect what is happening overseas and we work 12 months in advance," she explains. "Our designer gathers fabric samples and products of interest, returning to Australia where the colours are worked together into four main fashion themes. This season we have some beautiful colour combinations and fashion stories named
Outback, Night Sky, Greenhouse and Persian Rose. "We concentrate on four main fashion trends each season so that we remain focused and our customers can clearly see what is new and what works well together. Once the designer has forecast the colours and fashion trends we start developing exciting new products to create these looks in peoples homes, such as lamps, cushions, bedlinen, vases, table linen and dinnerware. "Right now we are working on summer 05 and it's looking very exciting indeed."
Reflecting A Lifestyle The managing director of Leisure Coast Kitchens, Troy Hunt, says that just like cooking, the success of any kitchen project is about having the right ingredients. In terms of trends, he has seen a move toward kitchens that feature "square edges, straight lines and a variety of textures and rich colours." "Many customers are combining two colours with different textures such as stone, glass, steel and laminates," he says. He also believes that laminate has overcome its '60s/'70s image, becoming "a sleek contemporary product that can result in several different looks." Leisure Coast often works with Laminex products, but also has its own computer-aided machines that cut laminates to fit the exact requirements. "The other great thing about laminate is that it is cost effective, giving you more to spend on features such as carousels, appliances and storage solutions," says Mr Hunt. Whether homeowners choose laminate, thermoform, polyurethane or timber, there are several innovative materials available – making personalised kitchens a reality. The Leisure Coast Team recently installed a chic kitchen in Barrack Heights, complete with the more expensive Corian top, with red splashbacks to make a dramatic statement. "While today's kitchen remains the hub of the family home, it typically is open to other areas of the house," says Mr Hunt, adding: "It's all about reflecting a personality, and the lifestyle needs." im

FOOD FOR THOUGHT comes to mind as we were welcomed by the diffusion of grinding coffee, permeating its way through a wonderful selection of spices, jams, muesli, pastas, even daiquiri mix, for the party person inside you. Walking up a flight of stairs, a mother and daughter team have renewed this early Victorian home and former downtown florist into a quaint & versatile café. Walking through to the upstairs terrace we reach a sitting room. Still intact is the original 12 foot ornate ceiling, crystal chandelier & antique furnishings. The menu is small but smart; offering patrons the choice of designing their own sandwiches & salads. Vegetarian dishes are eagerly promoted, such as the vegetable stack with basil sauce and tomato & bocconcini bruschetta proving to be popular with other selections available. Antipasto & cheese platters for two are satisfying and stimulate a delicious talking point. Instead I order the stuffed chicken breast with tomato, goat’s cheese & asparagus. Well informed the dish takes 20 minutes to prepare. The meal arrives promptly and the service pleasant. Well worth the wait. Meal sizes are generous and presented with pride.

Owners Joe and Tracey Bono own this busy Italian family restaurant and proudly display their culinary awards above the front counter – Best Pizza Restaurant on the South Coast in 2003/04. The focal point of the restaurant is the animated mosaic of ceramic rays that emanate from the hot mouth of the “Sun Oven”. Owners Chris & Joy Wells proudly display the Irish flag in the main entrance and continue this theme throughout restaurant. The atmosphere is comfortable and the service is welcoming. Looking around the place reveals a good sense of humour. The outdoor deck is complete with grandma’s pantry as a focal centerpiece, layered with old biscuit tins and above, in the rafters is a mixed bag of odd collectables with horse’s saddles, lanterns, pots, cauldrons and all other things kitsch and amusing, that clatter and jump as the occasional south bound train races along the tracks behind the restaurant. Inside, private rooms are subtle and homely. Great for family dinners, a business luncheon or a party for up to thirty of your closest friends. On the menu is a most appetising selection for the keenest carnivore. Generously served are veal scallopine, chicken parmigiana, chargrilled t-bone, fillet mignon, rack of lamb, eye fillet and Reef ‘n beef and of course the traditional beef & Guinness pie

The black board specials are worth a try and add variety to the meaty fare. Children are welcome. Supplied with pencils and a menu, the young ones can keep themselves amused by colouring in enchanted characters. Our cheerful dinner for three was only $90.00 for an entrée and damper to share, mains, beers and soft drinks. Murphy’s Bar & Grill is fully licensed. The wine list is unpretentious and suitably priced. BYO (wine only) is allowed, but more importantly one has to treat themselves to a stout from the worthy range of Irish beers. Tomato Sauce 2kg Tomato 500g Leek 150ml Olive Oil 1 Bunch Basil 10g Salt
Anchovy Aioli 100ml Mayonnaise 1ea Garlic Clove 20g Anchovy 5g Black Pepper
Method 1 To make your fish stock, first wash the elfish bones thoroughly under cold running water, remove any blood or entrails. Place in a 10 litre pot with the rest of the stock ingredients and fill with cold water, slowly heat until almost to the boil, constantly skimming the impurities that rise to the surface, do not rapidly boil or it will go cloudy, simmer for 1hr then strain through a very fine cloth. 2 For the tomato sauce, blanch, peel, de-seed and chop the tomatoes, in a heavy based pot, saute the leek and garlic in olive oil until soft, add the tomatoes and salt, cook very slowly until it becomes a dark red shiny sauce finish with some fresh basil and a little sugar to sweeten it. 3 The anchovy aioli is a basic mayonnaise with some roasted garlic and anchovy fillets 4 In a very hot pot add 3 or 4 cleaned mussels, a couple of prawns and scallops, then add a small amount of your fish stock, cover with a lid and steam rapidly for 1–2 mins, add a good spoonful of the tomato sauce and add a little more stock. 5 Slice a baguette and either brush with butter or garlic oil then toast. Serve with the crusty bread with a big dollop of the anchovy aioli, grind some fresh cracked black pepper on top and a little basil pesto drizzled into the soup. NB :ensure the fish bones you use are white fish bones ( from a white fleshed fish eg snapper/cod ) do not use salmon trout bones etc…

dessert: White Chocolate & Blueberry Cheesecakes Preparation time: 1hour + Overnight chilling Makes 6 individual cheesecakes 250g Sweet Biscuits Crushed Topping 180g Butter, Melted 500g Raspberry Jam 1 teaspoon Mixed Spice 1 tablespoon Gelatine 2 tablespoons Gelatine Fresh Blueberries 200g White Chocolate 250g Cream Cheese Softened 1/2 cup Caster Sugar 2 Eggs 2 Cups Cream 1/2 teaspoon Pure Vanilla 1 Place 2cm x 2cm wide strips of baking paper into each 6 medium muffin pans, crossing at the centre and extending over the top by 5cm. 2 Cut 4cm strips of baking paper and wrap around the inside of each muffin case, creating a collar extending vertically out of the pan. 3 Mix together biscuit crumbs, melted butter and mixed spice in a food processor until combined. Press one tablespoon of biscuit mixture into each muffin case to form the base. Press evenly into cases using the bottom of a cup. Refrigerate while you prepare the topping. 4 Dissolve gelatine in 4 tablespoons of boiling water, then leave to cool slightly. Melt the chocolate in a heatproof bowl over a pan of barley simmering water, then allow cooling. 5 Beat cream cheese and sugar with electric beaters until light and creamy. Beat In eggs, cream and vanilla until just combined. With beaters still running at low speed; add cooled gelatine and melted chocolate and mix until combined – do not overeat. 6 Pour over biscuit bases, to fill the cases. Refrigerate overnight to set. Topping: 1 In a small pan simmer raspberry jam until, liquid forms 2 Dissolve gelatine in 2 tablespoons of boiling water & add to strawberry jam when cooled 3 Allow for raspberry sauce to cool and top approx 1 teaspoon of sauce to each cheesecake, Decorate with blueberries and refrigerate until ready to serve.

This time of year, when the weather starts to turn and our tastebuds go from salads to salsa, is a great time of the year to explore new grape varieties. Summer should have seen you all dechardonnayed, and the best of the last vintage Sauvignon Blancs and Rieslings should have all but sold out by now! At the Taste of New Zealand wine fair in Sydney I discovered that the Shaky Isles have a little more to offer than just stinky Sauvignon Blancs and world class Pinot Noirs. Among the standout wines were several of the Gewürztraminer variety, and a couple of the Pinot Gris variety, mostly from Marlborough and Hawkes Bay. Gewürztraminer has a wonderful bouquet. Instantly you want to drink it because of its alluring aromas of coriander and rosewater. On the palate, it offers a clean, fresh finish to balance its sweet, soft-mouth feel. It really is the perfect companion to spicy Asian foods (unless you're drinking beer). The best one I saw at the show was probably the Mills Reef, closely followed by the Spy Valley. Either of these will satisfy. The origins of Pinot Gris lie in the vineyards of The Rhone in France. It's a derivative of something else and a long, long story… so let's move on! The variety grown in NZ produces wines that smell of baked pear and apple, and unfolds fruit richness and textures on the palate. The Nautilus Pinot Gris is a ripper. Sink your teeth into a nice,
fleshy flathead fillet with a squeeze of lime and chips, and have a glass of this on stand by. When it comes to red wine, NZ manages to deliver quite a few interesting Merlots and Cabernets, but they are renowned for their Pinot Noir. For a few interesting red varieties this month, I'm going to skip back over the pacific to Australia and introduce a few newer styles, Petit Verdot, Rose and Tempranillo. By and large, Australia is a hot, dry country. In our largest grape growing regions, the varieties that flourish in the heat are often overlooked for more classic, fancied styles. These conditions provide the ideal environment to grow Petit Verdot (PV) and Tempranillo. There has been much debate in wine circles about PV. Some critics feel that it is not a serious wine, while winemakers love working with it. It is a relatively easy wine to make, requiring little or no wood treatment and, because it is so approachable so young, it gets to the market fairly quickly. It is suited to warm sundrenched climates and works well in the South Australian Riverland district and the Barossa floor. It produces a fruit-driven wine with similar mouth feel features to Shiraz, with a Merlot-like softness. It's a great food wine, one that I recommend you look at with lamb, or a rich veal dish. Of the varieties currently available, look for the Kingston Eschelon 2002 – it’s great. Don't lay this wine down; for fewer than 20 bucks, you can pull the cork and enjoy.
Tempranillo can also provide a great drinking experience. The finished wine displays soft and savoury flavour combinations. At its best, it is a delicious, soft, well-structured wine that shows the spicy, leathery flavours of the classic Spanish grape variety. It can be beautifully balanced with subtle oak, and the result is a fantastic food wine to try over some tapas or paella. I like the 2003 Bidgeebong Tempranillo. The flavours are soft and not too overpowering, yet the wine has good length and finishes with that nice earthy spice. For something a little more exotic, go for a good rosé. The rosé phenomenon hasn’t quite reached the Illawarra yet. There are hundreds of them flowing on restaurant tables in Sydney and Melbourne – we've been a little slow in the uptake. When looking for a good one, try a rosé made from Cabernet Sauvignon, Sangiovese or Grenache. They tend to be a little more complex and have a “sweet and sour” palate. Not too sweet is the key. Also, look for length and persistency; just because it's light in colour doesn't mean it's light on flavour. I like the “All Day" Rosé from Tin Shed, a small Barossa producer. My eldest son Simon wanted to concentrate on building up the Raine & Horne agency in Dapto, and I thought it would be a fantastic challenge to purchase the franchise back and work at running the office together with three other partners. Look out everyone, Harry's back! He may have been two years into retirement, but Harry Kersten couldn't resist the challenge and after a short hiatus, he's back in charge of Raine & Horne Wollongong. For many years, the name Kersten has been synonymous with elite level track cycling. At various times during the past ten years, each of the four Kersten boys – Simon, Joshua, Tim and Ben – have cycled for Australia. Ben, the youngest, is still competing internationally. Outside cycling circles, the name Kersten has closer links to Illawarra real estate. Indeed, Harry has worked in the industry for almost 40 years, starting out at Tom Jarman & Bradbury in Woonona. He spent the next ten years learning the ropes in both the Illawarra and country New South Wales before becoming a partner at Richardson & Wrench Wollongong in the late '80s.
