A COUNTRY OF EXTREMES PAUL-JAMES FIRST TRIP TO CHINA was in late December 2001 on a modelling assignment that was to be one of many that took him all over China, but when you ask Paul what China represents to him the answer is “a country of extremes”, and believe me he should know. Whilst working in China as both a model and photographer he was exposed to just about everything China could throw at him. Shoots in the middle of winter on the edge of the Gobi Desert, typhoons in Hong Kong, poverty stricken villages, six star hotels on the Tibetan border and yet other photo shoots where the only people as far as the eye can see are the ones you came with (and in a country of over 1.6 billion people that’s not easy). By the time Paul arrived in China he was already a seasoned traveller, so to say that he was surprised by the level of culture shock that he experienced would be a bit of an understatement. “When I crossed the border into China I felt immediately oppressed, the smell, the lack of personal space, the poverty and the reality of communism weighed heavily on me”. “After my initial adjustment period the ‘real’ China started to creep in and get under my skin. I started to see the freedom that the people had found within their boundaries and the genuine kindness of the people in small villages frequently took my breath away, people with nothing to give found ways to open their homes and hearts to me.” With so many differences between our cultures and countries initially Paul says it took a little while to “find the essence” of the country and it’s many regions. China’s cities are living breathing masses of concrete contradictions, ancient temples and

modern towers of concrete and steel. “You’ll see a man standing at the base of the monstrous office building which is essentially a celebration of modern design holding a straw broom and talking to a woman doing shoe repairs on a 1930 pedal powered sewing machine on the street, it really is quite extraordinary.” Outside of the cities, China’s natural beauty is truly remarkable but as a foreigner one thing you notice is that the nation as a whole seems to be under the impression that since it’s been there for so long they can do whatever they want to it. Coming from a country as beautiful as ours and being faced with the polar opposite both culturally and environmentally the hardest thing for me to do is look for and find the beauty in something so foreign, lucky for you though Paul-James Hay takes the photographs. Having shed his preconceived ideas of what China would be like and embracing what it is he produced work as interesting and diverse as the country itself and has managed to see beyond the overpopulation and pollution to capture some incredible images. “Some of the most beautiful things that I experienced whilst being there were the interactions with the people. There I was with my Gucci glasses and my i-pod coming from a carpeted home with fresh running water and here were these people who had none of those things

and may never experience them in their lifetime and we would sit there in the dust and communicate! None of the modern trimmings mattered just that we both had a desire to understand and appreciate each other, it’s an amazing and humbling experience.” In the three years that Paul-James did business there his attitude toward the country changed dramatically, from feeling “immediately oppressed” to being amazed and humbled is quite a journey for any man. To then take your experience and share it with others who may never have the opportunity to go to China is quite a gift to be able to give. When I see Paul-James photographs it reminds me of how simple life can be and how when you have so little you can make so much of it. Just so that you know I am completely aware that I am beginning to sound like my mother but we all should “think ourselves lucky” for sitting smack dab in the middle of paradise. Now quick! everybody run outside breathe the fresh air, shake your neighbours hand and then dash back inside and raise a glass of clean water to the //im Illawarra…Or not.

And what does the future hold for this dynamic duo? “The main focus for Allison and

Dapto Draught – Our standard lager brewed with pilsner & crystal malt, and the late addition of * *GERRINGONG GINGER BEER: Beware! This beer is not as innocent as it seems… 4.5% Hallertau hops for aroma to produce a crisp palate. Amber coloured with a slight honey finish. 4.8%
BULLI BLACK: A dark ale in the “Old” style brewed with chocolate and roasted malts, resulting in a medium bodied sweetish beer with hints of coffee. 4.6% RUST: This beer is brewed in the style of the Red Irish Ales, resulting in a beer that has a subtle bitter character with hints of roasted malts, acting as the perfect palate cleanser. 4.4% LONGBOARD: Our Belgian style “Wit” beer, consisting of 50% wheat malt, with the late addition of orange peel and coriander added into the final brew, producing a citrus characteristic. The Longboard is naturally cloudy due to it being unfiltered. The Belgians describe their Wit Beers as 'Summer Beers', and traditionally serve them with a slice of lemon. 5.0% LIGHTHOUSE LIGHT: Our “Clayton’s” light beer, it doesn’t look like a light beer or taste like a light beer, it is a lite beer with flavour! Perfect if you have to drive. 2.5% PARKYNS SHARK OIL: Named after the only inhabitant of the Five Islands, who caught sharks to produce shark oil. Our Shark Oil is a traditional Indian Pale Ale, with wonderful hop and bitterness characteristics, producing a refreshing ale. 4.7% PIG DOG PILSNER: An old nick name of the owner Michael Bolt (don’t ask!) has been coupled with a classic Pilsner. Using a single Pilsner malt, Czech Saaz Hops and a specially imported Czech Pils Yeast producing a dry classic European Lager.

Discovering Danielle Discovered by an international talent scout at a local contest, Dapto teenager Danielle Harriss will soon follow in the (high heeled) footsteps of several successful Australian models now working abroad. The 17-year-old natural beauty – who graces our cover – left Dapto High at the end of last year and is currently considering an offer of work in Japan. She will take with her a selection of image photographs, shot locally by one of our own. “I think some of these photos look very European, and I’m thrilled to be able to include them in my portfolio,” she says. Danielle first started thinking about modeling in primary school (St. Johns, Dapto). She was one of those long, lanky girls who everyone said should model. As she grew to 178cms, she kept eating, but always burnt it off. “I play a lot of sport, including netball, and I love the beach. I can pretty much eat what I like.” The level-headed teenager has received lots of support and encouragement from her parents and two sisters, one of whom is good at sport, the other at art. “My family has offered me a lot of support and encouragement over the years,” says Danielle. “And while my parents are now divorced, they have shown me different sides of life. My father lives in Sydney and has exposed me to lots of art and culture. My mother and stepfather have simply offered me the kind of daily support a teenager needs! While obviously ambitious, Danielle appears to be realistic about modeling and the kind of a lifestyle it offers. “I'm just going to see how far I can take it – and enjoy the adventure. At the same time, it’s great to think that you can earn (good) money while travelling and making new friends. If it doesn’t work out, I’ll simply go to TAFE and do some kind of business course.” While Danielle is expected to take up the Japanese offer (where she will be chaperoned) she has never traveled abroad before.The contrast between Dapto and Tokyo is sure to be extreme, but exciting nevertheless! >21

Warm lamb salad with shaved fennel, broad beans, white asparagus and tarragon. Serves: 2 300g Lamb (loin or fillet) 50g broad beans 1/2 bulb fennel 1 bnch white asparagus 1/2 red onion 50g green peas 20g shaved pecorino cheese 1/2 salad leaves
Tarragon dressing 1 bnch tarragon 1 garlic clove 10g crusty bread 10ml red wine vinegar 50ml extra virgin olive oil 5g maldon sea salt 10ml lemon juice
Method 1 Season lamb well and sear in a hot pan, cook for approximately 3-4 mins until medium rare, place meat aside to rest whilst making the salad. 2 Using a mandolin slice the fennel bulb as thin as possible then soak in lemon water to stop it going brown. 3 After 5 mins or so drain dry on kitchen paper. Take your broad beans, asparagus and peas and plunge them into boiling water and cook until tender yet still retaining their colour, this should only take around 30 seconds, a little longer for the broad beans. 4 Slice your red onion and shave your pecorino and set aside. 5 To make the tarragon dressing first set aside a few of the tarragon leaves to add to your salad mix. 6 Either using a mortar and pestle or a food processor crush the garlic and sea salt into a fine paste, then add your chopped tarragon, incorporating until a bright green paste has formed. 7 Take your crusty bread and soak it for a minute in the red wine vinegar then squeeze the vinegar from the bread into the paste. Crumble the bread whilst adding a slow pour of extra virgin olive oil, continue to incorporate until it has fully emulsified. Serving 8 In a large bowl combine your salad ingredients, slice the lamb diagonally and serve topped with the shaved pecorino and tarragon dressing. THE BUSTLING VILLAGE OF BALGOWNIE HAS A LOT TO OFFER. Joining the gift boutique,florist and beautician is a relative newcomer, the Urban Grind Café. It is clear the locals are doing just that. There are Mums having lunch with their kids, friends chatting over coffee, retired couples soaking up the relaxed atmosphere. Proprietors Matt and Kylie Davidson have thoughtfully provided comfortable lounge style seating with current magazines and publications towards the back of the café for those who wish to linger. As well as regular indoor seating there are tables and chairs outside which are well shaded from the sun. Urban grind is open seven days a week starting
with breakfast at 8.00am weekdays and 8.30am weekends. Breakfast includes a healthy muesli, fresh fruit and yoghurt and Calina coffee. It is also nice to see tea being given special attention. It seems that coffee has all but eclipsed this traditional beverage, however, various blends are available. Lunch offers a selection of Turkish breads, melts and sandwiches with the invitation to design your own sandwich if the creative urge takes you. THETRUCK! in the hot seat A LOCAL BOY, TROY PILON WAS BORN AT Wollongong Hospital in 1975 to a family with strong sporting roots. Troy’s Dad, Ron played rugby league for the Newtown Jets and later Balmain Tigers, while his granddad played rugby league for Australia. Troy grew up in Dapto and later West Wyalong, after the family returned to the land when his Dad’s rugby league days were over. During high school, Troy played both basketball and rugby league but it was the fun side of basketball that prevailed and at the age of 20, after finishing his teaching degree at Canberra University, Troy was signed for the Canberra Cannons. Since then, basketball has taken Troy to Brisbane and most recently back to Wollongong, after a chance [PHOTOGRAPHY_PAUL

Since then Troy “The Truck” Pilon has been a favourite with local basketball fans, known for his relentless on court enthusiasm, energy and physicality, one player who is prepared to put his body on the line for the team. In between games, Troy spoke to Image’s Health Editor, Susie Burrell about the ins and outs of being a popular local sports star in the midst of a fantastic season. SB: It is well known that the basketball season is pretty full on, when you are playing, what is the training schedule like? TP: Yes, you are right. Between September and April the Hawks may play
two to three games every week which can be very demanding. On average we would train between four to five days each week for two hour sessions which would include team training, drills, scrimmages and general fitness, we then add in weights two to three times each week, a couple of video sessions and also school clinics. All in all we are kept pretty busy. SB: Can you tell us some more about the “Dare to Dream” program currently being trialed in schools? TP: “Dare to Dream” was a program which was originally developed by Athlete Development Australia and aimed to promote high profile athletes as role models

The program involves athletes visiting secondary schools and discussing the importance of making good decisions in life, and outlines how individuals’ decisions can impact in various ways on their lives. For me, it has been a really enjoyable experience especially given my teaching qualifications and also personally, as it makes you reflect on your own decisions, SB: Basketball in Australia sometimes receives a bit of a battering in the sports media, especially given the nations obsession with league and union. How do you feel basketball is perceived? TP: I think, like any sport, basketball has had its ups and downs although we are lucky in Wollongong as it is so well supported by local fans. Hopefully with some long term development plans, and getting more kids interested in basketball via programs such as “Dare to Dream” , the

games survival will be ensured long term. SB: Do you follow any particular diet to help you get ready for the games? TP: I try and eat pretty well during the week and my wife prepares pretty healthy meals for me all the time. On game day I like to eat breakfast cereal, and avoid any heavy fatty food. SB: We have just hit half way in the season, what are your hopes for the rest of the season? TP: This year we have been really lucky as we have a great group of guys, and it is one of the best teams I have played with. Over the next few moths, our focus will be on maintaining intensity for the entire game, in some situations this season; we have been ahead with a huge lead and have not been able to maintain it. Our first goal is to go into the finals in a good position, hopefully finishing first or second on the ladder and
then following it through with a strong finals series. The guys and fans all remember how disappointing it was last year to get through to the finals only to be booted out after two successive losses. This year we want to follow it through and bring it home for the fans. SB: What does life for Troy Pilon involve away from basketball? TP: Going back to country when the basketball schedule allows it and taking my baby daughter Ava to some of Wollongong’s beautiful beaches. SB: What does the future hold for Troy Pilon? TP: I want to be able to play basketball for as long as possible. You just do not get brothers and sisters working well together. Maybe it’s the whole sharing enchilada. You know, sisters swapping clothes, brothers bikes, that sort of thing. “We don’t always agree,” admits 26-year-old Jonni Harrison, who runs the Lagoon Restaurant and Lounge with her (younger by a year) brother, Andrew, who says: “It is amazing how we are working together. Because we are a year apart, we have been conflicting siblings since we were very young and there has been many a hole through doors and windows at home from our little fights and everything.” It is no small operation. The original Lagoon Restaurant burnt to the ground in 2001 and in its place on the original near-perfect location overlooking Wollongong’s North Beach is a $4 million purpose-built a la carte restaurant, lounge bar and function rooms, licensed for 278 people. It is busy, too. November, last year, had already booked out for weddings, weekends there is live music, and any number of theme nights are on the cards. “At the start it was much more difficult because we didn’t have defined roles; we were overlapping here and there,” says Andrew, the ever confident front-of-house man. “It was just a matter of feeling our way and getting into our designed roles.”
