editorial: issue 03 ImageMagazine is, hopefully, becoming more of a familiar face around town thanks to the fact that we have now published our third issue – and are halfway through our fourth! Perhaps, then, the time has come for you to be introduced to the Image team – a passionate collective of people with a single-minded vision: to produce a world class magazine that not only reflects changes in the Illawarra and South Coast, but highlight the achievements of local characters. ImageMagazine is also designed to showcase some of the region's best real estate, and the designers and architects who will build the homes of the future. The magazine is the brainchild of local graphic designer Martin Costanzo who has trained with some of the best advertising and marketing names in the business and his colleague, Kane Weeks, who has an almost evangelical commitment to helping local agents market and promote their properties for sale. Other key team members include sales director Leonie Cox, who has been involved in running some of Australia’s largest events, myself (as editor) who has more than 15 years magazine experience, and Paul James Hay – an international model-turned-photographer who grew up in Wollongong and remains committed to the area. We're also proud to have a bunch of great contributors, including health expert Susie Burrell, journalist Rod Cowan, wine and food connoisseur, Brendan Bate, fashion student, Melody Giles, and many others. We’re all keen to hear from you, and to take on board any feedback that will help us fulfil our dream! Meanwhile, we hope you enjoy this issue; in particular the fashion story featuring the successful Italian model Igor who, like Madonna, goes by just one name! History of Switzerland Switzerland’s geographical position with its transit routes over the Alps made it a desirable possession for European great powers through the ages. Switzerland developed slowly over many centuries, as more and more regions came together to form a loose confederation whose members gave each other mutual support. At times their different interests stretched the bonds between them almost to breaking point. In 1848 that Switzerland became a more centralised federal state which favoured its economic development.

Climate From a climate point of view, Switzerland is located in a transition zone. In the west, there is a strong influence of the Atlantic ocean. Winds bring a lot of moisture into Switzerland and cause rainfall. In the east, there is an almost continental climate, with lower temperatures and less precipitation. On the other hand, the alps - which run from east to west act as a climatic divide. South of the alps, there is an almost Mediterranean climate, with significantly higher temperatures but also a lot of precipitation.

According to co-organiser, Lynne Jones, several local artists have made “a name for themselves” through the festival, including Frank Nowlan who has since been able to retire from teaching to pursue a career as a full time painter. For those wanting to learn more about art – and local artists – there is a free “Artists Trail” which offers bus trips to the homes and studios of 70 local artists (maps are also available for drive-yourself tours) as well as an Exhibition Walk which takes visitors on a trail through the village and the multiple exhibitions being held (everything from photography to cartooning to quilting). Art-in-the-Shops makes the work accessible to everyone, while Sculpture on the Shore takes the brief out into new territory. Family-focused events include Saturday “Nite Alive” which involves local schoolchildren carrying homemade lanterns through the streets, as well as a range of hands-on activities throughout the day. Of course, the stalls, carnival and camel rides will excite the youngsters, who don’t get a lot of this kind of entertainment. Down the beach, teenagers will enjoy watching the surf films and, for the foodies amongst us, there will be tastings and special events in the local cafes and restaurants. CREASE denim origins â&#x20AC;&#x2122;Serge de Nimesâ&#x20AC;&#x2122; In fashion history, jeans and denim history continues to baffle. No one truly knows the perfect answer to where jeans began. As so often happens fashions often emerge together in various parts of the world and are the result of the sudden availability of a new fabric, cloth, dye or technique. But we do know that the phrase denim jeans is thought to derive from several sources. No one is totally certain where the words come from. A majority of source books suggest that denim derives from the English translation of the South of France French phrase 'serge de Nimes'. Denim fashion history is thus associated with Serge de Nimes. It may well be that the fabric which was made in France also had a version made locally in England and was called by the same name of denim in the same way that Cheddar cheese is called cheddar all over the world. The Serge de Nimes was originally a wool silk mix, twill weave. Certainly by the 19th century in England denim had a white warp and a navy woof (weft). Denim was considered a hard wearing sturdy fabric, ideal for heavy labouring.

Pepper crusted beef on slow roasted aubergine with tomato and chilli jam, garlic confit and sherry vinegar Serves: 4 800g beef fillet 1 large eggplant 12 garlic cloves 50ml de soto sherry vinegar 4 sprigs thyme 20g cracked black pepper 50ml reduced beef stock
Tomato chilli jam 4 ripe roma tomato 1 small brown onion 2 birds eye chilli 1 garlic clove 150g castor sugar 50ml port 50ml red wine vinegar 10g cumin 10g curry powder
Method 1 Get your butcher to cut and clean you an 800g piece of beef fillet, in a shallow flat tray roll the beef in a generous amount of cracked black pepper so it completely covers all sides. In a very hot pan seal the beef all over adding a little salt to taste. Place in a pre-heated 200˚c oven for 10-12 mins until medium rare. Remove from the oven and allow to rest at room temperature. 2 Take your eggplant and slice into 2cm rounds, place in a tray covering liberally with extra virgin olive oil, whole garlic and thyme, cover with foil and roast at 200˚c until tender. 3 For the tomato chilli jam, score the tomatoes on either end then plunge into boiling water for 20 seconds then into iced water to cool. Peel, de-seed and dice then set aside. In a hot pan fry your onion, garlic, chilli and spices, add your tomato with the port, sugar and vinegar and cook down until it has reached a dark jam consistency.
Serving 4 Slice beef and place on eggplant and jam stack, finish with a small quenelle of the jam and drizzle with rich reduced beef glaze and sherry vinegar. Serve the roasted whole garlic cloves as garnish. 5 To lighten the dish you could top with a horseradish mascarpone and some green such as mustard cress or mache.

THERE ARE RESTAURANTS YOU GO TO FOR THE VIEWS, there are restaurants you go to for the atmosphere, and there are restaurants you go to for the food. Shellharbour’s Relish on Addison falls into the latter category. Located in a converted terrace house on the main strip of the fast-gowing suburb, In 2004, Relish won the NSW Restaurant & Catering Association’s Award For Excellence (South Coast region), and was a finalist the year before. Owned and operated by chef Tom Laws and his wife Maria, Relish’s menu is modern Australian with a Mediterranean twist. Where “Linguini with sautéed king prawns, squid, mussels, tomato and lemongrass” fits into this picture we weren’t quite sure, but the meal was delicious. Indeed, it was one of those dishes you couldn’t imagine working, but did (a traditional spaghetti marinara infused with Asian flavours).We also tried the Mezze platter,
which included a mushroom risotto cake, smoked salmon, avocado, crispy calamari, marinated olives and assorted dips with sourdough toast. It was beautifully presented and tasty to boot. There’s something on Relish’s menu for everyone; Grilled sirloin or rib of beef for the fellas, light meals, pasta and lots of seafood for the girls (as well as fab sweets menu!). Tom Laws is an adventurous, new-age chef who will certainly deliver a memorable meal.While there are no sea views from the restaurant, there are lots of lovely nooks and crannies for a romantic, memorable dinner (warning, eating too much may mean that your romantic night never reaches its natural conclusion!). Coconut Thai is just one of many Asian restaurants lining Keira Street,Wollongong.There’s everything from Japanese to Vietnamese, Chinese to Malay. Like the Sydney market,Thai appears to be extremely popular, meaning the Coconut Thai has plenty of variety. Its point of difference appears to be a crisp, clean, air-conditioned environment and flavours of traditional Thailand food. Like many Asian restaurants, the Coconut Thai’s menu is very extensive and may take some time to select from it. At the same time, all your old favourite dishes are here:Tom Yum, red curry, jungle curry, noodles and stir-fries, as well as a few Chinese dishes (Mongolian lamb and lemon chicken) thrown in for good measure.
We visited the restaurant as Saturday lunch was just getting underway – which isn’t the fairest time to review a restaurant, as the waiting staff is just cranking up for the day! Our waitress was very polite and friendly and you get a sense of traditional customs and behaviours shining through as your order is being taken! We ordered off the lunch time menu (crying beef and BBQ pork) as we were in a bit of a hurry, and felt disappointed when our meals arrived without a vegetable in sight (It is good policy to offer vegetables if they do not come with the meal?).The meal itself was satisfying, and the experience was pleasant! For those who wish to extend the pleasure tables and chairs are provided for the visitor to enjoy luscious gourmet sandwiches and wraps with seriously good coffee. A tantalizing selection of cakes and cookies is also available. On top of all this there is an added bonus for holidaymakers. with susie burrell The trials and tribulations of being a local football superstar. ST GEORGE ILLAWARRA, NSW AND AUSTRALIAN RUGBY LEAGUE PLAYER Jason Ryles is a Wollongong boy through and through. Born in Wollongong Hospital in 1979, Jason developed a love of rugby league early in life and was one of the original Illawarra Steelers before joining the St George Illawarra Dragons when the two clubs merged in 1998. Jason has suffered from a horrific injury run over the past two seasons, making a long awaited return to football in mid 2004 after spending almost 12 months on the sideline with a shoulder injury that almost ended his football career. True to form, Ryles then went on to have a great season with the Dragons, and was an automatic selection on the Kangaroo Tour of Great Britain late last year. On his return to Australia, Ryles has again found himself under the surgeon’s knife for minor surgery in preparation for the 2005 league season. In some of his recovery time, Jason spoke to IMAGE’s Health Editor, Susie Burrell, about the trials and tribulations of being a local football superstar. SB: First of all, congratulations on last year’s inclusion in the Kangaroos Squad. Is that the ultimate for you, representing your country, playing the game you love? JR: I just love playing footy, whether it’s for St George, NSW or Australia. Obviously there is something extra special about wearing the green and gold, and I’m sure
that it means a lot to both my parents whenever I play for my country. SB: Jason, the last two years must have been pretty difficult, as you have struggled from one injury to the next. Can you give us the complete list of injuries you have had during you league career? JR: Prior to playing first grade, I had ankle, knee and shoulder surgery. I then had a pretty good run for a few years until early last season when I tore my hamstring and was off the paddock for six weeks. The most severe of my injuries came in late 2003 during the last State of Origin game, when I went into a tackle the wrong way and dislocated my left shoulder, which injured not only the joint but the nerve The doctors were not sure if I would ever be able to play again, as it was possible that the shoulder would never regain full functioning. I was very lucky though, after ten months of rehab and intensive medical and physiotherapy it has come good, although the shoulder muscle is still only about 30 per cent of the size of the other shoulder. Since then I have had a couple of nagging injuries, including a torn hammy, but I should be right a couple of games into the 2005 season. SB: When you hear things from the doctors like you may never play footy again, how do you cope? JR: Initially it was very hard. You
definitely learn to appreciate the football when you can play, but you are also made aware that there is more to life than just training and playing. The reality is that injuries are part of a contact game like league and you never know when your time may be up. I have learnt that the most important thing is to maintain a life outside of footy so if something does go wrong, you have a job to fall back on. I have completed half of my electrical apprenticeship and have also enrolled in a real estate course, so if and when footy ends, I have other things happening in my life. SB: Is there pressure put on players to recover quickly, when clubs are paying them big dollars to perform for the club? JR: St. George has always been a very supportive club and understood that the nature of my shoulder injury meant it would take a significant amount of rehabilitation to get back again. During the time I was off, the club were fantastic, there was never any pressure, more support than anything. SB: When you are playing, what is the training schedule like? JR: It’s pretty full on. Gone are the days of training twice a week and then playing on Sundays. A normal week for us consists of a recovery session on Mondays with swimming, yoga and Pilates followed by weights, conditioning, video sessions, ball work and

SB: I have noticed that there now seems to be a much greater emphasis on a holistic preparation with massage, Pilates and yoga a common part of training schedules. Do the guys find that these types of sessions help them to recover after the games? JR: I think they do. I am definitely more flexible since these activities have been added to the programs. SB: Do you follow any particular diet to help you get ready for the games? JR: I never used to, but over the past year I have made a concerted effort to eat a diet that is low in fat. I have recently moved out of home and try and keep my meals as simple as possible when I cook, like stir fries and pasta dishes. SB: Any special supplements? JR: Probably the main thing I take is protein bars and powders from Powerbar. Their products are low in fat and taste pretty good for high protein products.
JR: The guys were pretty flat for a few days afterwards. It was extremely disappointing to not have another chance after the Penrith loss, especially when we had finished the season so well. I guess we are now just really looking forward to a big season in 2005. SB: What does life for Jason Ryles involve away from football? JR: Movies, surfing, Xbox and spending time with friends. SB: What does the future hold for Jason Ryles? JR: In terms of footy, just trying to remain injury free and be the best rugby league player I can be. In other areas, developing a career away from footy so when itâ&#x20AC;&#x2122;s all over I have something to go on with. SB: 2004 was a disappointing season for the Dragons, with an early and somewhat unexpected exit from the finals. What was the general feeling around the club after this happened?
