Key Lime Bars By Suzanne Jacobus, Resident since 1993

Lemon bars have always been a favorite in my family for a sweet treat. The use of fresh key limes gives these bars a nice twist and a special St. Patrick’s day delight. Ingredients: Crust: • 1 cup softened unsalted butter • 2 cups all-purpose flour • ½ cup powdered sugar, plus extra to sprinkle on top • ¼ teaspoon of almond extract • ¼ teaspoon sea salt Filling: • 2 cups granulated sugar • 4 large eggs • 1/3 cup fresh key lime juice • Rind from 1 ½ key limes • ¼ teaspoon of sea salt • A few drops of green food coloring (optional) Directions: • Heat oven to 350 degrees. • In a food processor mix together all crust ingredients. • Press dough into a 9-by-13-inch pan. • Bake for 15 minutes. • While crust bakes make filling mixture. Using a food processor mix thoroughly the filling ingredients. • Pour mixture over the baked crust and bake for an additional 25 minutes. • Let cool than dust with powdered sugar. • Cut into squares.
