I’d love to tell you that the situation there is under control, but after numerous e mails and phone calls, the only comment I could elicit from Sarika Somai-Sewpersad, GM Zimbali Estate Management Association (ZEMA) was “No comment…” I’m sure they are doing their best to fix the problem, but if you live on the estate it’s probably a good idea to keep your doors locked until further notice…just in case. A Whale of a Time on the North Coast Duncan Pritchard

I

t’s that time of the year again, the time of year when you can expect to start seeing thirty plus tons of marine mammals gently cruising past our gorgeous coastline. It’s whale season!

Each year thousands of Humpback Whales leave their wintering grounds in the Southern Oceans and head north, passing by the North Coast en route to Mozambique, to mate (gestation period one year) and calf (the next year). It’s a special and often impressive sight and to help you get the best out of whale spotting season, here are some of our useful tips for whale spotting on the North Coast. The best time for viewing whales is in the early morning, when there is less wind and the ocean is flatter, making them easier to spot. Having said this, as the day progresses and sometimes gets windy, this is the time of the day when the whales will be breaching out of the water and putting on fantastic displays. So, as a rule of thumb, early morning for the best viewing conditions, later in the day for the best displays of whale behavior. Look out for the “blow” of water from the whale’s blowhole. This is the best thing to be looking for as nine times out of ten, you will see the spray of water long before you see the whale itself, especially if the whale is swimming quite far offshore (which they often do.) A useful little “trick” to know, you can identify different whale species by the spray they produce, Humpbacked Whales produce a pear shaped spray that goes up to 3m into the air, compared to the Southern Right Whale (which are also seen along the north coast, but not as common) which produces a V shaped spray that only goes a meter or so into the air. You can spot whales from virtually anywhere, we have seen them breaching whilst driving at 120km/h down the M4 and we have seen distant spray while sitting at a view point waiting for hours. There is a bit of luck involved, but as a good rule, during the months of July and August, if you get yourself into a nice

elevated position and sit watching the ocean for a couple of hours, you’re almost certain to see a whale doing something. Try gauge the whale’s behavior and next move, the direction it is swimming, how fast, is it going to come up for air soon again or is it diving deep and coming up again far away? To do this, look out for the whales tail “flukes”. A whale will generally make a few shorter, shallow dives before making a deep dive. Deep dives last about 10-20 minutes, by which time; the whale could be well out of sight. A Humpback Whale making a deep dive will show you its tail flukes just before diving. If this happens, expect a long wait or look elsewhere as the whale has probably moved on. Some other important and interesting whale watching information

• In South Africa it is illegal to approach any whale closer than 300m. If you do see boats closer than this distance, please notify Ezemvelo KZN Wildlife • Whales moving south back towards the Southern Oceans (October/November) tend to move a lot slower as the females have claves that need to feed. These calves, believe it or not can consume a whopping 250l of milk a day

• Unlike many other whales that are filter feeders, living of microorganisms, Humpbacked Whales feed on fish that they actively hunt. When in our North Coast waters, the Humpbacked Whales rarely feed, instead, they live off the body fat they have stored up from feeding in the rich Southern Oceans over the summer.

usiness networking is very important in our daily lives. The building of relationships has taken place via this process for hundreds of years.

Networking is not about meeting lots of people, interacting with them and then never communicating with them again. It’s about getting to know the individual and finding out if you are able to make the business relationship mutually beneficial. If you aren’t, then a powerful alternative is to see if you can introduce them to someone more compatible to their business. All it requires is that you be creative, listen well, ask relevant questions and develop a good reputation with others. The obvious things to be aware of include: being on time, taking care of grooming, delivering a firm handshake, making eye contact, watching your personal space, being authentic and constantly assessing the person’s personality style. Now let us take it one step back… if you walked into an elevator (a lift) with a prospect and you had 60 seconds to outline the benefits of your business, what would you say? Of course you want to make a strong first impression, deliver an impactful message and leave them wanting more. To help you achieve this, here are eight essential elements to create a powerful “elevator pitch.” 1. Be concise - your pitch should take no longer than 3060 seconds. 2. Speak simply and clearly - use language that everyone understands. Don't use fancy words thinking it will make you sound smarter. Your listener won't understand you and you'll have lost the opportunity. 3. Deliver impact - use words that are powerful and strong. Give them the "Sis-Boom-Bang" to grab their attention. 4. Speak visually - use words that create a visual image in your listeners mind, making your message more memorable. 5. Consider telling a short story - someone with a problem finds a solution by working with you. 6. Be targeted - an elevator pitch is aimed for a specific audience / target market. If you have different target audiences, deliver a unique pitch for each. 7. Goal orientated - a great elevator pitch is designed with a specific outcome in mind. For instance do you want to make a sale, gain a prospect, enlist support for an idea, or earn a referral? 8. Have a hook - this is the element that literally grabs your listener's interest and makes them want to know more… the phrase or words that strike a chord.

his is one of our most popular cakes. South Africans LOVE a delicious chocolate cake and this one hits all the right spots! The sponge is deliciously moist and SO easy to make. The frosting is made with lots of butter and melted Belgian chocolate. I am very passionate about using local products; however chocolate and vanilla are the two we let slip by. I really advise using a good quality chocolate for your frosting as you can taste the difference.

Kerry Hedges Ingredients 2 eggs 1 cup milk ½ cup oil 2 tsp vanilla essence ¾ cup boiling water

2 cups (400g) sugar 1 ¾ cups (245g) flour ½ cup cocoa 1 ½ tsp baking powder 1 ½ tsp bicarb 1 tsp salt Preheat oven to 180˚c Sieve all the DRY ingredients together Mix wet ingredients (EXCEPT boiling water) in separate bowl and add to dry ingredients. Mix well together for a few minutes. Add boiling water and put mixer on

GENTLY until all combined. Grease and line two 20cm cake tins Bake 20cm cakes for 45min – 1 hour Cupcakes – Pipe mixture into cases and allow to SIT for at least 15 minutes. Then bake for 15 minutes – 20 minutes.

Melt the chocolate, butter and milk gently together until smooth. Allow to cool. Once the mixture has cooled simply beat the icing sugar into it with a hand held mixer.

Use the frosting straight away as it tends to get bubbles if left to stand. No problem if it does, just give a quick mix with the beaters to get it back to a smooth consistency.

Think you know how to cut a cake?

Think again: Scientist reveals 100-year-old trick involving parallel lines and rubber bands

F

orget everything you know about cake cutting; this new method could turn the seemingly straight-forward practice on its head.

Although, using the word ‘new’ isn’t accurate, because the method is actually a 100-year-old trick unearthed by London-based author and mathematician Alex Bellos. He describes how taking wedges out of cakes leaves them susceptible to drying - and we should instead be cutting them in lines so the whole cake can be sealed and stored. If a wedge is taken out of a cake but the rest of it is then stored in the fridge, the edges of the cake open to the air will be ‘dry and horrible’. There is a better way of cutting cakes that dates back more than a century.

The method was first published in Nature on 20 December 1906 in the letters to the editor section by English mathematical scientist Francis Galton. Titled ‘Cutting a round cake on scientific principles’, Galton’s letter explained how the ‘ordinary method of cutting out a wedge is very faulty’. He went on to state the cake should be cut in parallel lines, starting in the centre, with the rectangular segments of the cake then taken out and eaten. This would allow the cake to then be closed, provided it is one with icing, to keep the sponge inside sealed and retaining its freshness. It is also recommended an elastic band is used to hold the cake together and keep it sealed. So, by using this crafty trick, you can have your cake and eat - it moist and fresh - for days!

The Bug-A-Salt is an air-powered rifle that blasts a pinch of table salt at such high velocity that it is lethal to creepycrawlies. Unlike fly swatters, which often leave smears of dead fly after they have been squashed, the only clean-up this device needs is a quick brush. The pump-action fly-killer has already been bought by almost 100,000 people in the US, and the device will soon be available in South Africa. The plastic shotgun requires no battery power or charging and instead uses compressed air to propel a pinch of table salt at the intended target, and holds enough salt for 50 shots before reloading. The device is made by Skell Inc, a start-up company founded by Santa Monica, California artist Lorenzo Maggiore. They say using ordinary table salt as opposed to dangerous chemicals and pesticides is a better way to dispose of critters. Because it uses ordinary granulated table salt, it would never break the skin on even the smallest child although firing it at people is not recommended. Apparently if you’ve got half-decent aim, you can take out a fly from more than a metre away.

We all spent the day together. I witnessed her open grief as she described the experience. There was lots of talking, crying and laughter that cracked in the dry air of sadness and lots of tea. I believe in tea, it’s comforting. My younger daughter bemoarns the loss of a brother in law she met in her early teens. Her husband has known his brother in law from childhood. My grandson is just out of school and inarticulate at the loss of his father and my beautiful granddaughter, always polite and slightly aloof is tearstained and crushed. I love these people and they are in agony – it’s awful. Death messes with your heart and your head. It trips you up on your life path. It’s so drastically final. It sends you plummeting into the past for memories and shooting into the future for visualised occasions he will not be present at. I came home in time for a yoga class and felt so grateful for the normality of people arriving and the chance to do heart openers and breathe. Sorrow closes chests and stoops shoulders – it helps to open up. Yoga has always been my friend and ally. When I’m happy I want to be cool, walk naked and feel the breeze on my skin and swim in the night. When I’m sad I want to be warm. I dig out socks, scarf and fleecy bed covers. My

dogs are a great comfort, warm, relaxed, close. I wake often, I suppose I’m overheating. Late at night it’s easy to feel everything is just a balls-up of exes and misses and botched relationships, distant grandfathers and people who die. My small grandchildren have lost a much loved uncle. It’s all so far reaching – ripples in a pond. Then the light seems to alter slightly and I know morning is on its way bringing fresh hope, a pink sunrise heralding a new day, a group of mannikins expecting a sprinkling of bird seed. Its Sunday, no not today, I’ll just stay warm, make extra tea and read a bit – nothing heavy – maybe a magazine – I love the whippy sound it makes as I flip the pages one by one – colour – objects, trivia – that’s OK. The funeral is in a few days. We will band together and deal with it in our own individual ways. My daughter slowly coming to terms with being a young widow. Grandchildren dealing with first real big life knock. A multitude of thoughts and emotions going through everyone, the common knowledge being that we have lost a decent, kind member of our family. Reach out to family members, heal rifts, allow old emotional pain the freedom to dissolve, make enormous use of forgiveness and above all be abundantly grateful for the glorious, winding bumpy road called LIFE! Heart Disease

Stephanie Wills - Lifestyle Health Cholesterol does not cause heart disease.

For some of you this may come as shock, but it is true. Without going into too much detail, two popular hypothesises about cholesterol have now been disproved. First, that eating cholesterol in the diet raises cholesterol levels in the blood (so please enjoy your eggs!). And second, that high cholesterol levels in the blood cause heart disease. In fact, research shows that there is absolutely no relationship between total cholesterol levels and mortality from cardiovascular or any other causes.

Bottom line: Cholesterol is not bad. It is an essential substance present in the cell membranes of all tissues of all mammals. It is involved in numerous bodily functions from brain health to hormone production and without it we would die. Instead let us rather address the real risk factors for heart disease; 1. Inflammation: is the key contributor

to heart disease. Chronic inflammation is responsible for the oxidisation of lowdensity lipoproteins (LDL) which forms atherosclerotic plaque. Inflammatory cytokines produced at the atherosclerotic site then weaken and loosen the plaque, causing it to break off and block the blood flow in the artery. These clots are the ultimate cause of heart attacks and strokes. Inflammation can arise from poor diet (too much sugar, chemical-laden foods and damaged fats), a sedentary lifestyle, stress, autoimmune diseases, food allergies, hidden infections (e.g. gum disease) and toxins (e.g. smoking). All of these causal factors need to be considered if there is inflammation in the body. To assess the degree to which your body is inflamed, test for your C-Reactive Protein (CRP) level. You are in a healthy zone if your reading is less than 0.8 mg/dL.

2. LDL Particles (LDL-p): Just to clarify, LDL is a lipoprotein (fat combined with a protein) that acts as a carrier, transporting cholesterol and other substances through the bloodstream. It is not cholesterol itself nor is it 'bad' cholesterol. The total LDL value (LDL-c) is harmless. It is the number of circulating LDL particles (LDL-p) that really matters. Elevated LDL-p is what initiates the development of heart disease. It is therefore essential to know your count, especially because it may be high despite your LDL-c being within the normal range. LDL-p can be estimated by measuring another marker called ApoB. Each LDL lipoprotein particle has one ApoB protein (Apoprotein B), so the higher the number, the higher the LDL particle number. The normal range for apoB is between 40-125 mg/dL.

3. Triglycerides to HDL cholesterol ratio (TG/

HDL): If your ratio is greater than 4, you have elevated LDL-p which, as discussed above, can accelerate the development of atherosclerotic plaques. Research found that the higher your TG/HDL ratio, the more likely you would be to have a heart attack. Excess insulin is the number one reason trigylceride levels increase. A high TG/HDL is therefore also a good indication of insulin resistance.

4. Insulin resistance: is another predisposing

factor to heart disease. It occurs when the cells become desensitized to insulin. Glucose cannot enter the cell to produce energy so instead it is sent to the liver to be converted into fat which is then distributed around the body via the bloodstream. Insulin resistance is the underlying cause of metabolic syndrome; a collection of risk factors which include; weight gain, high blood sugar levels, high triglycerides, low HDL (good) cholesterol) and high blood pressure. All of these put huge stress on cardiovascular function and dramatically increase your risk of heart disease. To test for insulin resistance measure your fasting blood sugar (a good reading is less than 90mg/DL) as well as your Hemoglobin A1C (HbA1c). The latter determines the average amount of sugar in your blood over the past 2-3 months and can be used to help diagnose insulin resistance. You're in the healthy zone if your HbA1c is less than 6% of your total haemoglobin count.

5. Homocysteine: is an amino acid and breakdown product of protein metabolism. Elevated homocysteine levels are thought to contribute to plaque formation by damaging arterial walls. High levels may also act on blood platelets and increase the risk of clot formation. An inadequate intake of B vitamins (namely B6, B12, and folate), as well as genetic factors that impair the body's absorption and use of folic acid, can lead to elevated homocysteine levels. A healthy reading is between 6 and 8 umol/L 6. Hypertension: is another important risk

factor to monitor. Often termed 'the silent killer,' it can damage your body long before any symptoms appear. The increased pressure of blood flowing through your arteries can lead to atherosclerosis and narrowing of the blood vessels making them more likely to block. Damage to the arteries can also result in aneurysms (bulges) that could potentially rupture causing severe haemorrhage and other life-threatening complications. High blood pressure is defined as a systolic pressure at or above 140 mmHg and/or a diastolic pressure at or above 90 mmHg. However, even if you have a reading of between 120/80 mmHg and 139/89 mmHg it is advisable to modify your lifestyle and monitor your readings closely. When considered as a whole, these heart attack risk factors can be used to more accurately determine your susceptibility to developing cardiovascular disease. Make sure that you specifically ask your doctor for each test because not all of them are traditionally screened for when it comes it comes to determining heart health. If intervention is needed please speak to your trusted health practitioner who may guide you as to what dietary, supplemental and lifestyle changes need to be made in order to lower your risk of developing heart disease. Here are our top moves for the washboard abs you’ve always wanted: Flat Back Jack Knife with the Ball This Exercise Targets: deep underlying abdominals and obliques. 1.Lie face-up on the floor with arms and legs extended up with palms and shins pressed into the stability ball. 2.Lower the left arm and the right leg towards the floor, getting as close as you can without arching your back. 3.Return to starting position then lower your right arm and your left leg. 4.Do 25 to 30 reps, alternating sides.

Loaded Side Plank Hip Dip This Exercise Targets: deep underlying abdominals and obliques. 5.Lie on the floor on your right side, resting on your bent right elbow, propping up your torso and your hips with your feet stacked. 6.With your left hand hold a 2- to 3-kilogram medicine ball firmly on top of your left hip. 7.Lift your hips to get into the side plank position and with your body forming a straight line from head to toe. 8.Slowly lower the right hip towards the floor, briefly tap the floor, then return to side plank position. 9.Do 10 reps. Switch sides and repeat. BONUS: this exercise works your deep abs 28 percent more than crunches!

Single Leg Curl-in on the Ball This Exercise Targets: deep underlying abdominals, obliques, glutes and hamstrings. 1.Start on the floor in full plank position, balancing on your palms with your shins resting on top and in the center of a stability ball. 2.Lift your left leg a few inches off of the ball then bend your knee as you curl the ball in towards your chest. 3.Straighten the leg as you curl the ball back to starting position. Then repeat. 4.Do 10 reps. Switch sides and repeat. MAKE IT EASIER: Keep both shins on the ball as you curl the ball in and out. Spider-man Plank Crunch This Exercise Targets: back muscles, deep underlying abdominals, obliques, glutes and hips. 1.Start on the floor in the plank position, balancing on your forearms and toes. 2.Slowly bend the right knee and bring it out to the side and towards the right elbow, touching it if possible. (Keep your hips parallel to the floor). 3.Hold for 3 counts then return to the starting position. 4.Do 10 reps. Switch sides and repeat

ast week I read a book review on The Spark – A Mother’s Story of Nurturing Genius and Autism. An extraordinary true account of baby Jacob (diagnosed with autism) and the triumph against all odds to nurture instead of medicate. This is a lovely example of looking outside the box when it comes to Science versus Spirit.

I was first introduced to young Jacob, doing a TED Talk (video) about two years ago at the age of 13, by Speech Language Pathologist - Suzy Miller. Jacob was presenting his fascinating life story on stage to a large audience. In a more recent TED Talk, Jacob says “Stop learning Start thinking – that’s how Maths and Science began”. He has now been tipped for a Nobel Prize. Suzy has focused her attention and career on autism since her life was turned upside down, about 15 years ago, by a young autistic boy called Riley. The American National Sleep Foundation’s explanation of exactly what happens during sleep shows exactly why a little airway aerobics might be of help. “While you sleep, the muscles of your throat relax, your tongue falls backward and your throat becomes narrow and floppy. How Vicks VapoRub ended a MONGOOSE WAR: Creature kicked out of troop for losing his scent is reintegrated after ointment is used to make them all smell the same

W

hat do you do when a mongoose is ostracised from his troop because he doesn’t smell like he used to, leaving him all alone? That was the problem facing Fort Wayne Children’s Zoo in Indiana, before they came up with an innovative solution.

Zookeepers decided that, instead of trying to return his original smell, they would use Vicks VapoRub to make all the mongooses smell the same - and they were able to reintegrate the lonely

mongoose into the pack. The problem started when one of the zoo’s banded mongooses from South Africa, had his medical checkup. Upon his return the zookeepers found that the rest of his troop wasn’t keen on him re-joining them because he smelled different. For mongooses, smell is a big

indicator of identity in order to recognise each other. Some of the other mongooses even became

aggressive to him, leaving him lonely and without a troop. That was when zookeeper Nancee Hutchinson found a unique solution. Troops of mongooses are known to roll around in a smell in a process known as ‘scent marking’. This common tactic in the wild ensures members of a troop all smell the same. So, with this in mind, Hutchinson put her plan into action.

‘We bring them indoors and spray Vicks VapoRub on the floor,’ she said. ‘The whole troop comes running and rolls all around in it. Then they all smell the same, even the one who spent some time away. ‘When we spray Vicks inside the mongoose enclosure, the mongooses respond by scent-marking,’ continued Hutchinson. ‘They all roll around in the Vicks. This overrides any old smells that might have caused them to reject a member.’

The New Peugeot Hybrid - It Runs on Air

F

or decades, car makers have been searching for the perfect environmentally friendly fuel. Now, one firm seems to have found the answer – a car that can run on nothing more than air. The Peugeot 2008 Hybrid Air promises to be more ecologically sound than the current breed of ‘green’ vehicles that combine electric engines with traditional ones. It has a conventional petrol engine linked to a hydraulic air motor and pump.

While the car is moving, air is pumped into a cylinder – just like a balloon being inflated – using surplus energy from the petrol engine, plus energy from the wheels and heat from the brakes. The air is then released to drive the hydraulic motor – allowing the car to run on air, petrol, or a combination of the two. Motorists will be able to use zeroemissions air power for lower-speed driving in cities. The feature is activated automatically when the car is doing less than 80kmph. When accelerating or climbing hills, combined or ‘hybrid’ mode is preferable as the vehicle receives power from both engines. And for long-distance cruising,

traditional petrol power is best. Current hybrids – such as the popular Toyota Prius – rely on heavy and expensive batteries that are difficult to dispose of, causing their own environmental problems. On pure electric cars, the batteries can also go flat and leave the driver stranded. In contrast, the new Peugeot will need no batteries. Instead, it will replenish itself automatically by re-using energy that is ‘lost’ when slowing down and braking. The sports utility vehicle, available from 2016 will be the first of a new generation of Peugeots running – in part at least – on air. It currently manages around 33km/l but engineers say that by 2020, future Peugeots could average 41km/l. Around 100 elite scientists have spent the past three years working on the air-powered car in top-secret conditions at Peugeot’s research and development centre at Velizy, just south of Paris. A spokesman for Peugeot said: ‘We are not talking about weird and wacky machines. These are going to be in everyday cars.’

f you’ve ever ridden behind a good road cyclist, you’ll understand the importance of technique.

The pedalling, gearing and braking are all so smooth and fluid as to be imperceptible. The hips are still, the cadence steady as a heartbeat. They are one with the bike. No piece of expensive kit is going to get you to that place. The only thing you can do is observe how others do it and practice, practice, practice. Technique is often a factor of fitness. Climbing technique, for example, is pretty much a direct function of how fit you are, and how steady you can keep your cadence on the ascent. Descending, on the other hand, is all

about bike-handling, and requires quite complex techniques in order to master it to its best (and most enjoyable) effect. Pedalling, gearing and braking require a combination of experience and common sense. Watch the pros in their races, and listen to the more experienced members of your group. The more you embed the movement patterns of good technique into your neuromuscular pathways, the closer you’re going to get to that effortless glide.

1. PEDALLING Pedalling technique is a much debated issue, with many cycling gurus advocating the concept of ‘using the whole of the pedal stroke’ by pulling on the upwards stroke as well as pushing on the downwards. I’m not a great believer in this philosophy. The best literature on this, in my opinion, comes from Dr Jeff Broker, who has dedicated over a decade of research to the art of pedalling. According to Dr Broker, pulling up on the pedal does not increase maximal power output, and in fact it can cause injury. Pulling the pedal up puts a lot of pressure on the hamstrings and the hip

flexors. These muscles are designed to lift the weight of the leg against gravity whilst running or walking and struggle to cope with the demand of contracting repeatedly against the resistance of the pedal. As the muscle fatigues, this increases tightness, which can contribute to lower back and hip pain. In addition to this, at recommended cadences of 80-90rpm, the muscular system cannot contract and relax quick enough to deactivate one group of muscles and contract another. In other words, as the left leg pushes down, the right leg cannot get out of the way quick enough to create negative pressure on the pedal, let alone generate force in an upwards direction. In short, pulling on the upstroke does not work. So what is the correct pedal technique? Dr Broker advocates directing all your power into the downward stroke, starting the stroke at 12 o’clock, and ending it at 6 o’clock. This is termed the ‘drive phase’. As the drive phase is coming to an end on one leg, it should be beginning on the other leg, while the first leg relaxes. Peak torque during the drive phase should occur around the 3 o’clock position. Some pedalling exercises: • If you are used to ‘push/ pull’ pedalling, retrain your muscles to switch off on the upstroke by replacing your clipless pedals with flat pedals and doing some sessions with your bike on the turbo trainer. • Note your average cadence on a normal, steady-state turbo session. Next time, try to increase it by 10rpm. • This one-hour training session will focus your attention on pedalling: Warm up for 10 minutes. Every five minutes after that, shift your gears to the small ring and a big sprocket, and sprint as fast as you can for 10 seconds. Do this for 40 minutes, and then cool down for 10. • 30-30s: Ride for 30 seconds at a super high cadence in a low gear, followed by 30 seconds of easy pedalling. Repeat this 10 times and do four sets, recovering for 10 minutes between sets. • Muscle tension intervals: Pedal at 50-60rpm in a gear that keeps your heart rate below zone 3. Focus on pushing down on the pedals, concentrating on the contractions of your gluteals, hamstrings and calves. Do this for 10-minute blocks, making sure your posture is correct and that your heel does not drop down. In the next issue, we’ll be looking at gearing.
