ne has to wonder about the origin of our species when you consider the purpose of our brief sojourn on planet Earth. The recent election results indicate that most South Africans seem to be okay with things as they are although we hope for better days ahead.
I suppose it’s a bit like the psychology of domestic abuse or, as they say in the movies…it’s complicated. If you look at the election manifestos we should be living in an African utopia but, alas, it’s complicated. So, here we go again with promises of good things to come but with fingers crossed behind our backs because, well, it’s complicated! So, what makes us as gullible as we are? We seem to be evolving at a rapid rate when it comes to the development of technology, yet we lack the capacity to create a better world for all. There is apparently enough to go around – if available resources are equally distributed there should be no poverty, hunger and deprivation on planet Earth. Yet the gap between rich and poor gets bigger. In South Africa the rich get richer and the poor…well, the poor only really count at election time. But enough of that – the glass is still half full and it’s still a while before closing time! Talking of technology, here’s an interesting bit of trivia for you. Did you know that the Zulu king Cetswayo played a pivotal role in history by stimulating our connectivity to the rest of the planet? Seriously…he did. You are probably up to speed with
the legend of Shaka – after all, they named an airport after him, but you probably won’t be as familiar with the rest of the family unless you have an interest in these things. Cetswayo was the fourth king of the Zulu nation and, like his legendary uncle, Shaka, he was a fighting man. So much so, that he took on the might of the British army in 1879 and gave them the hiding of their lives at Isandlwana. This was quite an upset and the implications were enormous, but no one in Britain was aware of it at the time because there was no telegraph between South Africa and Britain back then. News of this calamity took several weeks to reach the great white queen Victoria and her Prime Minister, Benjamin Disraeli, whose political career would ultimately be cut short as a result of these events. As you can imagine, the British public was now rather keen to follow events in South Africa and it was considered imperative to speed up the relaying of news from this remote and hitherto economically irrelevant part of the world. After all, news was already big business and the Empire was obliged to strike back. So it was that the Eastern Telegraph Company was prevailed on to divert the Kangaroo, a cable ship headed for Australia, to Durban unravelling miles and miles of copper cable on the sea floor as it hurried towards Natal. It arrived here on May 26th 1879, ready to connect us to the world, but diplomatic red tape and political wrangling delayed deployment of the cable for several weeks. Eventually on July 5th the undersea cable was hauled ashore at the mouth of the Umgeni River and we
were hooked up to the “grid” - the East African line - through the Suez Canal. The Zulus quite literally put South Africa on the map, telecommunicatedly speaking, although poor old Cetswayo never got to make a call. He was captured by the British and sent into exile in 1879 until he was pardoned and repatriated in 1883. He died in Eshowe less than a year later. That first undersea cable landed in Natal just 135 years ago – far less than the blink of an eye on the evolutionary time line - and look at how far we have come. EASSy, the latest undersea cable following an almost identical route, arrived here in 2010. This is a state-of-the-art fibre optic cable serving sub-Saharan Africa, with more than ten terabits per second in two fibrepair configuration. It delivers direct connectivity between South Africa and Europe and interconnects with multiple international submarine cable networks for onward connectivity to Europe, the Americas, the Middle East and Asia. We now have instant access to the world of commerce, communication and entertainment across the planet and what was technologically impossible yesterday will be history tomorrow. Technologically, we are flying, but, apart from readers of Life & Style, there doesn’t appear to be much intelligent evolution happening here because… hey, let’s call a spade a shovel…it’s complicated! The attraction, which costs $5 to tourists and is thought to be the first of its kind, holds up to eight people, with the platform slowly moving outward to an adventurous angle above the Windy City. The Impossible Dream A World-First Epic Team Swim from Coin der Mire

O
ff the North West coast of Mauritius a giant sailshaped wedge of rock rises up from the black waters of the deep ocean. This is Coin de Mire. No one lives here although centuries ago there was an attempt to grow sugar on the more accessible slopes of this rugged tropical island. The towering cliff face on one end of the enclave plunges sheer into a hundred metres of ink-black sea and is pock-marked by cannon fire from sailing ships ranging their guns as they sailed from Mauritius to plunder the oceans. Pirate ships ruled these waters and some say the ghosts still linger in the inky blackness of the deep water that surrounds it. It’s an eerie place. As a boy, Jose de Charmoy looked across Casita Bay from his family cottage at d’Eglise, and dreamed about swimming from that distant rocky point in the sea.
Only one man had ever attempted this feat. Ultra long distance swimmer, Roger Finch is thought to have tackled it in 2010 in preparation for an English Channel swim but not much is known about it. Mauritian locals considered it madness even to contemplate such a swim. This is where some of the strongest currents on the island come together creating forces that even seasoned mariners steer well clear of. Then there are the sharks. Tiger, Bull, Oceanic White-tip… some of the most
feared denizens of the deep congregate in these black waters. And if that isn’t enough to deter you, the lethal box jellyfish and squadrons of blue bottles that drift on the tide with stinging tendrils potent enough to temporarily cripple a swimmer, would be enough to scare off most adventure seekers. But still Jose dreamed of swimming from that rock in the middle of the sea – it became an obsession. That was nearly a lifetime ago, and having taken up distance swimming as a hobby later in South Africa, his desire to fulfil this childhood dream grew stronger.
challenge, a challenge that, as far as they knew, no team of swimmers had ever attempted. They would give it their best shot and, if they succeeded, they would be the first recorded group of swimmers in history to achieve what most considered impossible. The date was set for April 2014 and the training began in earnest.
In Ballito KZN, Jose met two kindred spirits, Mike Oberholzer and Andrew Stevens, who shared his passion for long distance swimming. Over the years their friendship grew and so did Jose’s determination to swim from Coin de Mire to Merville Beach. And so the plot was hatched. It was madness, but, like Everest, it was there…. The attempt would have to be timed perfectly and planned meticulously taking weather, tides and local conditions into consideration. The distance was not that great by modern open water swimming standards, just over 8kms, but the currents and the other threats made it an extreme An enormous amount of preparation had to be put in for this 8km swim. All factors had to be perfect - the moon phase, the currents in the channel, the wind direction, and they would have to swim on the incoming tide. Local experts were consulted and contracted to support the attempt with two craft that would accompany the swimmers enroute and keep a look-out for sharks. Some local Long distance swimmers were tempted to join the South African contingent, but at the last minute, they backed out. At 6.53 on the morning of the 24th of April, the three swimmers set off from the cliff face of the island. Because the current was not as strong as expected on that particular morning, they set off directly towards Grand Baie, turning towards the shore, through the pass at Casita Bay and on to Merville Beach. Two hours and thirty seven minutes later,having covered a distance of 8.27 kms of treacherous ocean, Jose de Charmoy, Mike Oberholzer and Andrew Stevens became the first team of men in the world to successfully complete the swim from Coin de Mire to Merville Beach in Mauritius. For all of them this was an epic adventure … a world first…the achievement of a lifetime. And for Jose, it was the realisation of a dream come true.

This way they get to learn different crafts and from there they can determine where their interests lie should they wish to further develop their skills. Coffee Bourbon Pecan Nut Pie

ecans are featuring hugely at the moment as we have four beautiful, big trees here at the Litchi Orchard and are harvesting them with every gust of wind that comes up as they fall to the ground. So delicious when shelled and used directly as they are still so plump and fresh! I love a buttery pastry shell filled with anything such as custard, fresh berries, chocolate ganache, plums and almond, but filled with a caramel-pecan filling it’s always a winner. I love adding a few tweaks to make it my own and turn an old fashioned favourite into a loved again autumn treat.
THE BEST
Easy Pastry Shell
Preheat oven to 180C degrees 1½ cups cake flour 1 tsp caster sugar
Pinch of salt 120g cold butter, cut into cubes 3 to 4 Tbs iced water
Place flour, sugar and salt into food processor, pulse a few times. Add the cubes of butter and pulse until mixture resembles breadcrumbs. Whisk the egg yolk with the water and add this to the flour and butter mixture. Pulse once again until the mixture comes together, remove and knead briefly until blended, wrap in cling-wrap and place in fridge. Once cool, roll out on a floured surface and line a (20cm) pie tin, place some greaseproof paper over the pastry and fill with beans/rice. Bake blind for 15 minutes. Remove paper and beans and allow pastry case to cool slightly.

90g butter, melted ¾ cup caramel sugar ½ cup caramel syrup ½ cup golden syrup 3 eggs, at room temperature 2 Tbs Bourbon
1 Tbs instant coffee powder 1 tsp vanilla extract ¾ tsp fine salt 1/3 cup finely chopped pecans 1 ½ cups pecan chunks or halves
In a medium saucepan over medium heat, melt the butter and cook, swirling the pan occasionally, until the butter is brown, 3 to 5 minutes. Immediately whisk in the caramel sugar and syrup until smooth. Remove the pan from the heat and let cool slightly. One at a time, whisk in the eggs. Whisk in the bourbon, espresso powder, vanilla, and salt. Stir in the chopped pecans. Scatter the pecan chunks/halves over the pastry shell and then pour the filling over this. Bake for 45 – 1 hour. Allow to cool completely before you remove from the pan and slice. I like to serve this cold with a dollop of mascarpone.

T
his may sound strange to some of you but I just recently complimented one of my clients on the state of her butt and drew a parallel to a pillow. When she started Pilates with us over one year ago she had very little muscle tone in her bum and that’s being generous. I suggested that her bum used to be as soft as a “goose down pillow”, it then slowly progressed to the firmness resembling that of a scatter cushion and now I am not aware of any pillow on this planet that can adequately describe what her bum feels like. A rock hard pillow could do it some justice! Not to mention her stomach, which went from being like unbaked bread dough, to being more like a flat hard ciabatta, this being said with the utmost respect for her beautifully toned
stomach and for a wonderfully baked ciabatta. But in all seriousness, even though I am obviously biased towards Pilates, I am always amazed at the results!
Pilates is the workout to turn to for a flat tummy. A 2008 study found that Pilates mat exercises engage and strengthen the deeper abdominal muscles responsible for a sleek, flat stomach. But Pilates isn’t just about whittling your waistline: It can also give you exceptional whole-body toning and graceful posture, plus make your daily activities (like hoisting groceries) easier to do. Ready to get a Pilates body of your own? Here is my ultimate 20-minute Pilates workout. Do it three times a week for a month to drop up to 15cm all-over.

Incline Plank Targets: the triceps, biceps, chest, core, quads, hamstrings and butt. 1.From a seated, feet-forward position, place your hands on the ground slightly behind your waist, fingertips facing forward. 2.Straighten both legs, pressing your heels and palms into the ground, and contract your abs while lifting your hips up off of the ground. Form a straight line with your body from head to toe. 3.Keep your gaze forward and your shoulders pressed down and don’t lock your elbows. 4.Lift your left leg straight up as high as you can (as shown), then lower it without allowing your right hip to sag. 5.Do 10 reps then repeat on the opposite leg. Pilates Kickbacks: Pilates Kickbacks Targets: the triceps, biceps, core, butt, hamstrings and back. 1.Kneel on all fours, toes tucked under, keeping your back neutral. Draw your belly button in towards your spine as you contract your abs and lift both knees about 5cm off the ground. 2.Keeping the abs engaged, bring your right knee towards your nose (as shown in the top image). 3.Then kick your right leg straight out behind you, squeezing your butt (as shown in the bottom image). Keep your lower abs contracted and your hips facing the ground to protect your back. 4.Repeat 15 times then switch legs and repeat. Swan Dive: Swan Dive Targets: strengthens the triceps, shoulders, lower back and stretches the abs and chest. 1.Lie on your stomach, stretch your arms overhead, point your toes and lift your arms and legs about 15cm off the ground. 2.Hold for 1 count, imagining your legs being pulled out and back, away from your hips. 3.Next, circle your arms out to the sides and behind you. Exhale and reach your arms towards your toes, palms facing inwards (as shown). 4.Hold for 1 count, then bring your arms back to starting position and relax your entire body to the ground. 5.Repeat 10 times.

If you are truly connected with your surroundings, you can never be bored – sit still outside and watch the miracles that take place around you. The moving of the sun across the heavens, the sounds, the detail you have previously missed. Take the time to just close your eyes and feel aliveness. Not every day can be sacred, sometimes there is a plumbing problem or the car breaks down or you just feel low. That’s okay – the good days will seem even better. Finding sacred moments in your day gets you through – yoga class is a whole sacred hour!

Sit under a tree, have a foot rub or a nice hot bath, buy yourself some fresh flowers or have a glass of wine. Read an uplifting book, take a slow drive with the windows down, come to a yoga class. These are some of the treats I love – I’m sure you have dozens of your own – treat yourself each and every day by slowing down. No excuses, no apologies – enjoy your treat knowing you deserve it! Leg Circles: Leg Circles Targets: the core, inner thighs, outer hips and the butt.
1.Lie on your back with your hands behind your head. Contract your abs, lifting your upper body slightly off the ground. 2.Raise your right leg 10cm (or keep it on the ground if that’s too challenging) and lift the left leg straight up towards the ceiling. 3.Keeping your core engaged and hips stable, trace 5 small circles clockwise with your entire left leg. Then reverse, circling 5 times in the counterclockwise direction. 4.Then lower both legs, switch sides and repeat. If you are also looking at your “pillow soft” bum and thighs and your “doughy” stomach and are not satisfied with what you see, then use these exercises or join one of our group classes to begin reshaping and firming your stomach and bum.

o you often feel worried, restless, nervous or tense? Or how about you can’t sleep, can’t think straight or you find yourself avoiding certain social situations? If you are nodding your head, you may be suffering from an anxiety disorder. Now this term 'anxiety' is unfortunately used far too casually in conversations to describe general stress or simply failing to get through your to-do list. But for a vast majority of South Africans it is a very real and debilitating condition.
Typically, anxiety is classified as a purely psychological disorder that can only be treated with medication. However, while short-term, temporary use of anti-anxiety meds may sometimes be warranted, they are not the ultimate answer. As with any illness, anxiety arises as the result of an underlying issue. It is always our goal at Lifestyle Health to identify this issue and then focus the treatment accordingly.
First Things First: Get tested Aside from a psychological cause, anxiety can also arise from a physical imbalance in the body. It is therefore important to not only consult with a psychotherapist but also to get assessed by your trusted health practitioner. Ask them to check the following; •Stress hormone (salivary cortisol test) •Sex hormones •Thyroid •Blood glucose •Vitamin D status •Micro-nutrient tests (to rule out deficiencies) •Digestive health •Food sensitivities or allergies •Heavy metal toxicity •Liver health •Inflammation •Also check the side effects of any other medications you may be taking. Once you've discovered the underlying cause of your anxiety, your targeted natural protocol may begin.
10 Natural solutions
The following are 10 natural solutions to help treat and alleviate anxiety: 1. Feed your brain with fat. Your brain is made of fat! The more fat you consume, the happier your brain is. Studies have shown a significant reduction in tension and anxiety (as well as anger and hostility) in patients placed on a high fat diet. Make sure you eat the right fats though! These are Omega 3-rich foods such as wild salmon, sardines and cod liver oil; saturated fats such as coconut oil, butter, egg yolks and high quality animal fat; as well as other healthy fats such as avocados, nuts and seeds, olives and olive oil. Supplementing with high dose omega 3 fish oils may also significantly reduce anxiety as well as improve mood and the ability to handle stress. 2. Heal your gut. Ever heard of the term “gut brain connection”? Research has shown that we actually have two brains. One in our head and the other in our gut. What's even more interesting is that these two brains are linked through the Vagus nerve. This means that whatever one brain feels will eventually have an effect on the other. It is therefore essential that we take care of our digestive health. Remove all foods to which you may be sensitive as well as all processed 'junk' foods, grains, legumes, sugar and anything with trans fatty acids or hydrogenated oils (i.e. margarine and vegetable oils). aging through a magazine recently, I saw an article recommending a ponytail as a quick way to do your hair for a party. The article suggested that a simple ponytail was a good alternative to a fancy style especially if your outfit was doing all the talking. e seem to have an endless battle trying to sort stuff out, get on top of issues, make necessary changes in our lives etc. Why is it an endless battle? Studies in Neuroscience indicate that as much as 95% of our consciousness is actually subconscious. So as research shows us, these extremely stressful emotional issues stem from deep seated negative beliefs stored in our subconscious mind, which, until now, we have had no control over.
For your information the subconscious mind controls all the bodily functions we never really think about i.e. blinking, heartbeat, digestion, organ function, hair growth, sleep etc. Whilst the conscious mind, our logical mind, controls our conscious decision making i.e. it is time to go to work, 2 plus 2 is 4. The conscious mind operates at 40 bits of information per second, which is about as fast as the ADSL service in South Africa, whereas the subconscious mind operates at 40 million bits of information per second. Another interesting scientific fact is that most of our beliefs were programmed into our subconscious mind before the age of 9, the logical conscious mind or frontal lobe of the brain only starts forming at about the same age and is only fully formed by our mid 20’s. Therefore these beliefs are not even our own they come from the perception of our ancestors, parents, schooling, religion, society,
media etc, whatever is supposed to be the ‘norm’, and these beliefs have lifelong devastating effects. So if beliefs are stored in the powerful subconscious mind and logically we do not really know what they are, how they work and if in fact they are true, or we have an idea of what they may be and try to use our logical mind to sort them out, which part is going to win, the 5% or the 95%? Like it or not, snoring increases with age – and for many women reaching menopause, snoring can become a midlife crisis in its own right. According to the American National Sleep Foundation, snoring affects 90 million adults, 37 million of them on a regular basis. Men – usually middleaged and older men – are twice as likely to snore as women. However, the gap between male and female snorers closes after menopause and, after 50, equal numbers of men and women snore. According to the British Snoring and Sleep Apnoea Foundation, the male / female split in snoring is due to biological differences in lung size and respiratory function. The upper airway is larger in women and the airway walls are less flexible and therefore less prone to yield to pressure and collapse when muscle tone falls during sleep. However, with age comes a loss in muscle tone and even the palate can become more flabby and susceptible to vibration. soiree - a party of people assembled in the evening (usually at a private house) musical soiree - a soiree assembled for the purpose of listening to music It’s a bit of a pretentious word, conjured as it is from its French roots, but in essence it’s a label for a super get-together where good live music comes with a glass or two of interesting wine and delicious treats to keep you comfortably satisfied with life as you take it all in. From a musician’s perspective, this type of occasion is first prize because the audience has actually come to listen to the music which is unusual in the age that we live in. Most venues feature live music as a sort of background soundtrack over which life goes on as usual. So to be actively listened to while you bare your soul to an audience is an increasingly rare experience. For lovers of good live music, the opportunity to share the experience with others who are equally interested in these things in surroundings conducive to an absolutely good time

he inaugural Stella Rd Soiree was a great collaboration between the creative team at Life & Style, HandMade Concerts, Big Sound Projects, the Maverick Stretch tents team, Food Matters and William Jonsson from Meander Fine Wines.
It was decided from the start that this would be a
prototype event to determine the viability of it becoming a more regular showcase. This meant transforming a Ballito home into a performance venue for the evening by covering the swimming pool with secure decking to augment the usable entertainment area and covering the entire space to make it weather proof. Then it had to be stylishly furnished and illuminated. A stage had to be constructed as the focal point and all of this had to happen with a minimum of fuss and disruption. Matt and Guy Bower, owners of Maverick Stretch Tents in this part of the world, were amazing with their extensive product range and expertise, literally transforming the space overnight from a domestic setting into a pop-up auditorium. Skumbuzo Manyoni from Big Sound Projects with input from Alec Mackay from Alver Guitars did an amazing job with the sound and staging. In a smallish space, you really don’t want to be overwhelmed with sound but you need warmth and clarity – quite a challenge in a mixed setting, and they achieved the perfect balance. Jacqui and Jiff Rey and their Food Matters Catering team moved in on the day with style, flare and expert organisation to create magic on the catering front with a simply to die for soup and home-made bread combo, followed by fresh coffee and a selection of cakes from heaven. These were augmented by Chocolate brownies and cakes by Kerry Hedges of Lemon Canary – Ballito has some of the best foodies in the world! William Jonsson brought in cases of exceptional wine from the Foothills Vineyards – varietals that you have to discover more about if you enjoy good wine, and this was the perfect opportunity. Then, there was the
music. The HandMade Blues Band scaled down to a two-piece acoustic act for the show with Dave Charles and Alec Mackay engaging the audience in an unusually closeup and personal encounter that went down really well. Next up were Brothers Mike and Dan Charles with their recently formed Cape Town based duo, The New Noble Savages. They performed a set of extraordinary originals with some classic covers thrown in for good measure, much to the delight of the audience. A highlight of the evening was the vocal performance by Cape Town Jazz singer, Sade Ross who literally stopped the show. Last year’s winner of Cape Town Idols and selected to perform at the Cape Town International Jazz Festival this year, Sade is an enormous talent – and you heard her first at the Stella Rd Soiree! Headlining the soiree was consummate guitarist singer-songwriter, Nibs van der Spuy who managed to juggle his busy performance schedule to play for us and, as usual, his set was just superb. The Stella Rd Soiree, we are pleased to say, was an unqualified success. It was a gathering of gentle, lovely people, who came together to enjoy an evening of music and fine company in a pretty setting. It was such a success that we are already planning the next one. n business, you cannot make a profit without sales and you cannot sell anything if you don’t market your product / service to your target market. In today’s competitive marketplace businesses are finding it difficult to break through the noise to get their marketing communication message heard. The less a business is heard, the more invisible it becomes…
It goes without saying that selling is a critical part of this business process, but all too often business owners overlook the basics of sales.
Here is a simple selling strategy to apply to your business: 1. Double the time a salesperson spends in front of the people who are in the best position to say “yes” to what your business is offering. 2. Ensure that these people are qualified prospects who prove by their actions that they are interested
in what your business is offering. 3. Generate as many of these qualified prospects as you can for your business. 4. Convert as many of these prospects into buyers. 5. Keep in touch with these buyers and continue to sell to them over and over again. If part of your marketing campaign is set up to offer direct response marketing, then it becomes easier for the salesperson to spend much more time in the follow-up process. This ultimately generates more business from qualified prospects who bought from you as well as those who did not. Following up is critical to success in sales. In fact, the more follow-up you do with value-adding information through your marketing to highquality prospects, the more sales you will ultimately make. Never give up – just because a prospect doesn’t buy
today does not mean they never will. Your best client may be lying dormant in your database and are just a few follow-up interactions away. This strategy works, regardless of the way you market to get in front of your prospects. Get your salesforce to spend maximum time in front of qualified prospects and your business will boom. Build relationships, offer valueadding information in your marketing campaign(s) and your target market will not forget about you. They can’t forget you because you constantly remind them that you are open for business when they want what you offer. he students of Crawford College North Coast have had a busy term collecting items of grocery. Each register class was assigned specific items and these were collected over a term. The result was over 28 hampers which were packed by the Community Service students and taken to NOAH.

NOAH (Nurturing Orphans of Aids for Humanity) is a day-care crèche and feeding facility where children from Shakaskraal and the surrounding areas can spend their day in a structured, caring environment and receive at least one meal a day. The hampers were handed over and will be distributed among the needy households in the area.

wonderful Mother’s Day breakfast was held at Crawford College North Coast College. Talented music teacher, Nina Watson put together a delightful show featuring Prep and College musicians, singers, rappers and dancers. Past pupil and fashion designer, Julia Ferrandi added elegance and panache to the occasion by allowing the senior students to model some of her exquisite gowns and matric dance dresses. Therapists from Mangwanani Spa provided foot massages throughout the morning as moms relaxed and enjoyed the delicious eats. However, it was not all relaxation as each table was given the challenge to create a unique floral arrangement. These arrangements were then delivered to the Westbrook Retirement Village by the Grade 12 Music students who gave an impromptu concert to the delighted residents.
