W
e are in the middle of the dog days of summer, a term which applies to both summer in South Florida and the post All-Star break in the baseball season. Most of us have escaped the South Florida heat for at least part of the summer enjoying some cooler temperatures. My wife Karen and I just got back from a trip to Wyoming and Utah, and if you have never been to Yellowstone National Park it is a must. Truly spectacular. We played several great golf courses that have something that none of the South Florida course have—unlimited land. At Deering Bay we maximize the limited space we have and wish that Jeb Bush had been able to convince his father when he developed the Club to deed over the U.S. agricultural property to the right of the entry road into Deering Bay.

Jimmy Germana, our Director of Grounds, did his major summer aeration while the course was closed in mid-July. The fairways and rough are back in great condition and the greens are recovering and should be rolling really well in another week. The long awaited mangrove trimming on hole #2 has been done and the days of not being able to see the second green are over. We will be able to trim those mangroves in perpetuity. We are in the process of reviewing resumes and will begin the interview process for a new Executive Chef to replace Luke Livingston, who left last month to work at Indian Creek. Luke will be missed but Karen Harmon is confident that based on what she has seen, we will have a top person in place in the near future. Congratulations to Head Golf Pro Dave Ragan III and his daughter, Alexandra, who won a FSGA Parent-Child Tournament which was held in mid-July at Walt Disney World Golf (Oak Trail) – Lake Buena Vista. Dave credits his daughter for the victory. Alexandra is 11 years old and is entering the 7th grade. Deering Bay has several top junior golfers and 12 year old John Marshall Jr. has been playing the USGA and US Kids circuit this summer, traveling around the country to compete. John is one of the top ranked juniors for his age. Also, congratulations to member Rudy Stern, who shot a career best 72 at his South Carolina summer home course, which included a hole-in-one on July 25th. Member Jeff Wechsler looked good on ESPN at the end of June when he was seen on NBA draft night. Two of Jeff’s clients were taken early in the first round of the draft. If you are in town in August, note that we have a Member Mixer on Friday evening, August 11th in conjunction with Movie Night for the children, and Thursday, August 24th will host Grill & Chill. Both are great times to enjoy good food and beverages and meet friends or new members. In visiting other clubs I always look at things they do to see if we can make improvements at Deering Bay. If there are things you see at clubs where you spend the summer that you think would make Deering Bay better, please feel free to pass the suggestions on to me at David@bhfloridalaw.com or to Karen Harmon at K.Harmon@dbycc.com. appy summer, as I hope that all the members are enjoying time with friends, family and having safe travels! Always keep in mind that if there are any interesting stories/photos that you’d like to share in the next issue of ON THE BAY, please email them to our Communications Manager, Bryan Rodriguez at communications@dbycc.com. As for the membership currently in town, make sure to take advantage of one of the greatest Club amenities: our refreshing junior-Olympic size swimming pool. We have an Aqua Aerobics course that makes its return this month with classes every Tuesday and Friday at 11AM. Also, don’t forget to join us this month for our End of Summer Pool Party & Cookout on Saturday, August 19th. Wow, we are almost in fall..how the time flies by!

The past few months we worked on various improvement projects around the Club. A “Summer Refresh” if you will. We worked hard to make sure we are aesthetically pleasing to all of our members and guests and we’re renovating structures on the Club and grounds for refinement. We made improvements that included: paint touched the floors on all three levels, polished marble in the hallways, wood floor at the bar was re-sanded and stained, all carpets were steam cleaned, valet ramps were pressured washed and a deep cleaning was conducted around the Club. Alongside this, the golf staff has done a magnificent job on their own course improvement projects since beginning of May this year. The weather has definitely been on our side as Jimmy and his staff didn’t let any rain stop them. Fun Fact: Take a walk over to catch a glimpse of the view from Tee #2! After many months of working with DERM, Jimmy obtained a permit to cut the mangroves back substantially. With the addition of Troon, the staff has undergone an extensive training and systems change. All staff should be congratulated as they did not miss a beat! They care so much about making this Club better every day! A very special thanks to Cynthia our Controller, for without her leadership and countless hours of producing reports, the system change would not have went through such a seamless transition. I do ask however, that you bare with us while the dining staff gets acclimated to the new software. The Club calendar will soon be available within the upcoming months. Events ranging from: the Lecture Series, themed parties and a wide array of golf and tennis events; the 2017-2018 season will definitely be one for the books, so please keep your schedules open as we promise to bring you everything you need to keep you active and entertained! I hope you continue to have a fantastic 2017, and as always, if you ever have any questions, comments or concerns please feel free to stop by my office. My door is always open.

Prep time: 30 Minutes Cook time: 30 Minutes Serves: 4
INGREDIENTS• 1 lb. tenderloin tips cut in thin slices • 3 tbls. vegetable oil • 1 small red onion cut in thick slices • 3 plum tomatoes cut in wedges • 3 tbls. soy sauce • 2 tbls. red wine vinegar • 2 tbls. pisco • 2 tsp. cumin • 1/2 cup fresh cilantro, coarsely chopped • 2 green onions sliced, tip to tail • 1 whole aji amarillo, stem cut off • 1 lb. frozen thick cut french fries, freshly fried • 4 cups of cooked white rice DIRECTIONS1. Season the beef with salt and pepper. 2. Add soy sauce, vinegar, pisco and cumin in a bowl together. 3. Put a pan over medium high heat. 4. Add oil and sear the tenderloin tips, brown on one side, flip over and cook for an additional 2 minutes. 5. Remove meat. 6. Stir in the onion and cook for 2 to 3 minutes. 7. Add the tomatoes and cook for just a minute. 8. Add beef to the onion and tomato mixture. 9. Stir in soy sauce mixture. 10. Add salt and pepper to taste. 11. Turn off the heat, toss fries with the beef mixture. 12. Add chopped cilantro, green onion and serve with white rice. PAIRED WITH-

TAMIAMI TRAIL IN THE BEGINNING Tropical Botanic Artists Celebrate the Opening of the Tamiami Trail Tuesday, May 2nd – Sunday, September 17th, 2017 in the Crystal Room Portraits of plants found over a century ago along the historic Tamiami Trail are on display in the Crystal Room until Sunday, September 17, 2017. “Tamiami Trail: In the Beginning” is an exhibition of original works by members of Tropical Botanic Artists. Deering Bay resident Jeanie Duck is a member of the Miamibased collective. The exhibition was first shown at the Kampong where the decision to build the Tamiami Trail was made. The exhibit marked the 100th anniversary of the start of work on the Tamiami Trail, the Miami-to-Naples roadway begun in 1915 that crossed the Everglades then extended north to Tampa through a former wilderness. Scientific information about the route’s flora and fauna was developed by Florida Coastal Everglades Long Term Research Program (FCE LTER), part of the Network established by the National Science Foundation.
