W

hile some members have left for the summer months we still have enough activity at the Club to keep those of you in town pretty busy. For those with young kids, or grandkids, Deering Bay Summer Camp runs for eight weekly sessions, starting on Monday, June 12th, and usually sells out, so please get your kids enrolled today! Dining hours are a little less than during the winter season as we are closed for dinner on Tuesday evenings. Please reference the last page of the newsletter for a full list of our summer hours of operation.

We have a lot of new faces around the clubhouse and course, including new summer members joining us from June 1st through the month of October. Please take time to welcome them! Between all the new summer members, preview members and young executive members, please make them feel welcome and if there is room in your golf game, invite them to join you. Our next New Member Reception will be on Friday, June 9th; feel free to bring some of your friends who are not yet members and let them enjoy the complimentary food and drinks. If you bring a prospective new member that night, please let us know and if you stay for dinner, we’ll send over a bottle of house wine for your sampling. Our tentative 2017-2018 golf schedule has been circulated by our golf committee to as many members as possible. We would like your input as far as scheduling so in the event there are scheduling conflicts we will know in advance and try and accommodate as many as possible to participate in next year’s tournaments. We will finalize that schedule within the next month and it will be available online and as a printout in the Golf Pro Shop. If you have any questions about tournaments, please speak to our Head Golf Pro, Dave Ragan III. By the way, did you know that Dave’s father, Dave Ragan II, was a multiple time winner on the PGA tour, played in the Masters, U.S. Open and the PGA. If you watch the Golf Channel, you may see him on an old episode of Shell’s Wonderful World of Golf, playing against his friend, Arnold Palmer. We wish the best of luck to our Director of Marketing & Membership, Laura Decker, who will be leaving us this week. If you joined the club in the last 8 years, Laura was the person who welcomed you to the Club. She will be missed. Laura has taken a position with a club in Rhode Island, and we are in the process of interviewing candidates for her position. Congratulations to Ferne Kalstone, a long time club Board member and officer. Ferne has been named President of the MPOA, and we look forward to having continued successful relations with the MPOA. What is good for the Club is good for the MPOA and vice versa.

There will be some enhancements done on the golf course this summer so please check the schedule below for the course closings. We have just seen mangroves trimmed on the 5th and 9th holes, and we are waiting for final clearance from DERM to trim the mangroves on the 2nd hole. As you know, Troon will begin working with our staff as of July 1st. Our senior staff has already had meetings with Troon representatives and those will continue through June. pring has sprung quickly into summer and we are gearing up for another fantastic summer season! The staff and managers have worked effortlessly in bringing you the Summer Survival Guide which is packed with events and activities for members of all ages, their guests, whatever their interests! Please take a moment to review your guide and plan to make the most of your summer stay-cation! For those leaving us for the next couple of months; safe travels and make many memories, as I cannot wait to hear about them next fall. Please be on the lookout for more information regarding the 2017-2018 Calendar of Events. Max, Dave, Pedro, Kathleen and Renny are dedicated to bringing you the best year at the Club yet for the 2017-2018 season. Fun Fact: Just like any other season, summertime lets us explore our seasonal food palette with new and refreshing flavors! I’m proud to announce that with these new dishes comes a new lunch menu starting next week, Tuesday, June 6th! Thankful is the best word I can use at this moment to describe my journey these past few weeks. As many of you know, last month I donated a kidney to a very close and dear friend of mine. With all of your love and support I am proud to say that all was successful. I am truly grateful for the kind words I received during this personal matter. Thank you again! Also, as some of you may know, your Director of Marketing & Membership, Laura Decker, will be departing us this week. I have had the privilege of working with Laura for the past 10 plus years. Not only has she been a tremendous asset to the Club, both to the membership and staff alike, but also she has been an amazing friend. Laura truly leaves an impact that will never be forgotten and I’m confident that her team will continue on her success. She leaves us this month as she continues her new endeavor to Rhode Island. Laura, thank you for everything. We are now officially in the beginning stages of transitioning to Troon. Our senior staff has had the opportunity to meet with several members of their leadership team, and are excited about the joint collaboration that is to come. Please welcome our guests, as you will see them throughout the next few months in what we foresee will be a seamless transition. The Membership Ambassador Referral Circle (MARC) has now come to an end. Thank you to all of the members who submitted names and took pride in showcasing their Club to their friends and family. However, if you still have someone that will like to see what life ON THE BAY is like, please refer them to our membership team as they have a limited amount of Summer Memberships available. With the conclusion of the MARC, please note that the initiation fee for Full Golf has officially increased to $50,000 beginning today, June 1, 2017. Last but certainly not least, congratulations to your Women’s 3.5 USTA Senior Team, who for the first time in Club history attended the USTA state championships the weekend of May 19th. This is an incredible feat for the tennis department and Club alike. Special congratulations to Cheryl Porter, Head Tennis Professional, without whom this would not have been possible. Congratulations to Debbie Antonelli, Karell Campbell, Maredith Ehrman, Sally Klein, Sherry Kranys, Audrey Martinez and Karen Zinn for all of your hard work and dedication to Deering Bay! t Deering Bay Yacht & Country Club we are dedicated to providing our members quality golf products, programs, activities, facilities and services. Throughout this year, our members have arguably enjoyed the finest playing conditions from October through April since the Club opened in 1991. The unseasonably warm winter and early spring resulted in increased rounds in several months during the golf season.

The Golf Staff did a magnificent job overseeing this year’s major golf tournaments. The Men’s & Women’s Member-Guest, Member-Member’s, Club Championship’s, President’s Cup and Match Play were successful events. The professional staff conducted a wide variety of tournaments and learning programs with over 190 separate events on the calendar for the 2016-17 golf season. Participation in events was the largest in recent years and the individual lesson program grew as members enjoyed a variety of instruction from private lessons to Men’s, Women’s and Junior clinics. The Junior After-School program continues to grow under the leadership of professionals Craig Merlin and Dan Tupaj. Nicole Huntley, Merchandiser produced increased merchandise sales over previous seasons. During the 2016-17 golf season, the Club hosted 12 golf outings with over 1,400 participants on Mondays while the course was closed. Many of these outings were hosted by or referred to the Club by our members. Thank you for hosting your special guests at Deering Bay. • • • • • • • • • • • •

Accomplishments: John Pallot, Assistant Professional was named the South Florida PGA Southern Chapter Senior Player of the Year for his outstanding play. I, Dave Ragan III, was recognized by the South Florida PGA Southern Chapter as a nominee for Golf Professional of the Year and Teacher of the Year. The Golf Schedule for 2017-18 is shaping up to be one of the most exciting golf seasons ever. Our traditional Men’s and Women’s Championships along with the MGA, WGA, Interclub’s, Couples and Junior events will be an eventful one. One of the highlights of 2018 will be playing host to a major state golf association event. In September 2018, Deering Bay will host the FSGA Mid-Senior Four-Ball South Championship. This event will feature a two person team in a better ball format for ages forty and over. Some of Deering’s best players along with very talented golfers throughout the state will gather at the Club to test their skills on the links. To our wonderful members, thank you for your support of golf throughout 2016-17, and thanks to the entire golf team for their daily efforts. We are looking forward to another successful year in 2017-18!

Prep time: 30 Minutes Cook time: 4 Hours Serves: 6

INGREDIENTSAVOCADO-TOMATO SALSA • 2 beefsteak tomatoes • 1 jalapeño chilies, seeded and coarsely chopped • 1/2 small red onion, diced • 1/4 cup fresh cilantro chopped • 1 tsp. salt and pepper • 1 avocado, halved, pitted, peeled and diced • 1 tbsp. lime juice INGREDIENTSBRAISED SHORT RIB • 1 tbsp. smoked paprika • 1 1/2 tbs. canola oil • 1 yellow onion, finely chopped • 1 green bell pepper, seeded and finely chopped • 3 garlic cloves, finely chopped • 1/2 cup lager-style beer • 1 tsp. sherry vinegar • 2 plum tomatoes, seeded and coarsely chopped • 1 1/2 tsp. ground cumin • 3 lb. beef short ribs, “boneless” • salt and freshly ground pepper, to taste • 4 cups beef broth GARNISHES• 1 pack flour tortillas • 1/4 cup coarsely chopped fresh cilantro • 1 cup shredded cheese • 1 cup sour cream CI • • • • • •

LANTRO SAUCE1 cup sour cream 1 cup mayonnaise 1 lime, freshly squeezed 1 bunch cilantro, chopped 1 tsp. sriracha pinch of salt and pepper

DIRECTIONS• To make the salsa, mix all ingredients except avocado. Stir in the avocado before serving and season with salt and pepper. •

Over medium-high heat in sauce pan, add warm oil. Add the onion and bell pepper and sauté until softened and lightly golden. Add the garlic and cook for 1 minute. Pour in the beef broth and vinegar and stir to scrape up the brown bits from the pan bottom. Transfer the contents of the pan to a blender, add the tomatoes, smoked paprika, cumin and process until smooth.

Season the short ribs all over with salt and pepper and sear in a pan till golden brown. Pour the beef broth liquid/mixture over the ribs, cover and cook in an oven at 325 for 4 hours.

Transfer the ribs to a plate and shred the meat and set aside. Pour the braising liquid into a saucepan. Set the pan over medium-high heat and reduce mixture to 2 cups. Add the meat to the sauce.

Heat a nonstick fry pan over medium heat. One at a time, warm the tortillas, turning once, for about 30 seconds per side. Wrap in a kitchen towel to keep warm until all have been heated.

When ready to eat place garnishes on table, mix all cilantro ingredients into a squirt bottle and build your own tacos!
