Friendship. Sacrifice. Courage.

T

hose are the words which came to mind when I learned that our General Manager, Karen Harmon, was donating a kidney to a friend of hers who suffers from kidney disease. It cannot be an easy decision to make when you give away one of your body’s organs, knowing that you will be undergoing surgery that has nothing to do with your own medical welfare. Most of us would hesitate to undergo surgery when it is needed for our own wellbeing, but to do so when you will get no possible physical benefit from it is quite a different story. I am sure all of us wish Karen and her friend a speedy recovery from this upcoming procedure. As you might expect, Karen will be out of work after this procedure and I am confident that her staff will continue to strive for perfection during her absence. No doubt Karen will be emailing and remaining in contact with key personnel to make sure that they are taking care of your concerns here at Deering Bay.

On another note, your Board of Directors voted to engage Troon to assist us in the management of Deering Bay. Karen will still be in charge of the day to day operations of the Club, but she and all of our senior staff will have additional resources at their disposal. We do not think you will be aware of the transition as our staff will remain in place. We are hoping that with Troon’s support we will be able to finalize a strategic long-range plan and improve our physical plant—the pool, the fitness facility, the 19th hole outdoor dining area, etc. We also considered that the private clubs we spoke with, as we did our due diligence, all reported an increase in membership following Troon’s arrival at their clubs. If we need help in one particular area it is in increasing our membership. We currently are offering our members incentives for helping us attract new members, and if any of you have friends who you want to introduce to the Club, please give their names and contacts to Laura Decker, our Membership Director, and she will extend an invitation to use the Club for a month to see if they would like to join. We met with our auditors who indicated that we have passed our audit review. Compared to other clubs in Southeast Florida, there is good news and bad news. The good news is that we have less debt than most clubs, but on the other hand we are not as well off in terms of capital reserves. The auditors once again expressed that clubs in residential communities are much stronger financially with community membership being required, and told us that a new FIU study shows increased property values of 8-10% in golf course communities. We once again urge the MPOA to consider the community membership proposal that we had worked out with them over the last year and which the MPOA apparently put on the shelf. On the golf front congratulations to our new Men’s Club Champion, Steve Torcise, who I had the pleasure to play with and watch as he shot two excellent rounds in windy and tough conditions. Kudos also to Maria Dresnick as she retained her title as Deering Bay’s top woman golfer. Rounding out our Championship Weekend was our Super Senior Champion Don Elliot, Super-Super Senior Champion, Howard Greenberg, Men’s A Flight (Gross) Champion, Richard Lewis, Women’s A Flight (Net) Champion, Kathy Sanchez, Men’s A Flight (Net) Champion, Bruce Lamchick, Men’s Super Senior (Net) Champion, Jack Kaplan and Men’s Super-Super Senior (Net) Champion, Michel Nahmad. s we near the end of spring and the days get longer as we usher in summer and spend time with our loved ones, let’s not forget to celebrate the love and dedication of our mothers as well as to the fallen members of our military who proudly served our country. May brings us a great variety of events for you, your family and friends to enjoy. We have our first ever Men’s Golf Member/Member/Guest on Friday, May 5th, Mother Daughter Tea on Sunday, May 7th and our annual Memorial Day Weekend Celebration that includes prodigious events such as; Movie Night, Cookie Decorating, Golf Tournament and Pool Side Celebration!

Since we have so many events going on, where do you even start? Did you want to try something new? Is it conflicting with another activity you love? No worries! Keep an eye out for your Club’s Summer Survival Guide that will be arriving in your mailboxes very soon! Your Marketing team of Bryan, Daniella and Laura have been working on the most comprehensive guide we have seen to date! We filled it with all your summer activities and a few starting to trickle into fall; this is the ultimate summer experience just miles from your homes. This year, the Women’s Golf Member-Guest was one of our best! It would not have been possible without Susan Elliott and her collaboration with the Catering, Golf & Marketing team to create one of the most unforgettable events of the year. Congratulations to this year’s team of Geraldine Blakely and Willie Siert, along with their guests Linda Johnson and Min Hee Lee who earned the title of 2017 Women’s Member-Guest Champions. Last month on April 26th I celebrated my 6th year anniversary at the Club and with that I would like to extend an enormous Thank You! To the membership for always showing their care and support to the employees; Accounting, Catering, DBKT, Food & Beverage, Fitness, Golf, Kitchen, Marketing & Membership, Maintenance and Tennis, the success of the Club wouldn’t be possible without all of your hard work and dedication. And a special Thank you to our former Head Bartender, Gregory “Greg” McNesky for over five years of service to the Club. He has accomplished a very big milestone in his life in completing his undergraduate studies and leaves us to pursue new career endeavors. On behalf of everyone we wish him nothing but success! Also, we wish our former Dining Room Manager, Rodrigo “Rod” Aguilera the best in both life and in his professional career. Stephanie Perez, who recently graduated from Florida International University with a Bachelor’s degree in Hospitality Management, will be taking over the Dining Room operations. For over five years, Stephanie has been a remarkable asset to the Club to both the membership and the staff alike. I’m confident that she will continue to exceed your expectations. Have a friend or family member who’s always at the Club but not a member yet? This is your last opportunity to be a part of the Membership Ambassador Referral Circle. Good day all, I hope everyone has enjoyed the changes they have seen on the golf course this year. We have been working really hard to restore the course to a higher standard for everyone to enjoy. Some of what we have worked particularly hard on this past season has been the greens conditions, and all-around turf conditions. We have also continued to clean up plant beds and create new ones throughout the golf course, which include new pine straw beds. This summer we will continue to work on improving all turf conditions especially on the greens. Although there has been significant improvement to the greens they’re still not as healthy as we would like to see them. This is due to the fact of our water quality and the layering that it has caused in our soils. This layering will continue to improve with our aggressive aerification schedule throughout the summer. We have scheduled four closings (as seen on Pg. 4) this year to accomplish our aggressive approach. Although these summer closings are an inconvenience to our members, they are necessary for the health of the turf and will result in better greens condition in the fall and winter months. We will not only be taking an aggressive approach on the greens but all turf on the golf course. We will be verticutting and aerifying fairways, tees and rough throughout the summer. All of these agricultural practices will result in better turf quality in the fall. We will do our best to have the turf recover as quick as possible after we complete our work, but please know that recovery for aerification usually takes around 10 to 20 days on the greens. I know that this is not ideal but like I said these practices are necessary for optimal conditions in the winter months. Along with all the agricultural practices we will be completing we will also continue our ongoing plant addition and restoration on the course. I hope that everyone has enjoyed what we have completed thus far and what is to come this summer! I want to thank all of you for your patience with us over this past year. I know that there has been some up and downs with the conditions of the golf course, but I am confident that these will be few and far between as we move forward with the course. For those of you staying here in South Florida I hope to see you around the course, and for those of you traveling, safe travels! I hope everyone enjoys their summer and I look forward to seeing all of you in the fall.

(Young Executive, Corporate, Golf, Social and Tennis) • The initiation fee for full golf membership goes up on June 1st, 2017 from $40,000 to $50,000. • Our Tennis Equity Membership is more appealing than ever before with the attractive initiation fee rate of $15,000 and the ability to play golf in the off season. • We have an excellent summer membership that allows a family to enjoy the benefits of membership for summer months. • The young executive membership allows new members to join up to age 40.

Prep time: 15 Minutes Cook time: 3 Minutes Serves: 4

INGREDIENTSCRISPY SHRIMP TEMPURA • 1 cup all-purpose flour • 2 tbsp. cornstarch • 1 pinch salt • 1 cup water • 1 egg yolk • 2 egg whites, lightly beaten • 1 pound medium shrimp, peeled and deveined, tails left on • 2 cups vegetable oil for frying DIRECTIONSCRISPY SHRIMP TEMPURA 1. Heat oil in a deep-fryer to 350 degrees F

INGREDIENTSCILANTRO-SWEET CHILI SAUCE • 1 cup sweet chili sauce • 1 tbsp. sesame oil • 3 cloves garlic, minced • 1 tbsp. ginger • 1 pinch kosher salt • 1/2 cup malt vinegar • 2 tbsp. fish sauce • 2 tbsp. brown sugar • 3 tbsp. soy sauce • 1 tsp. lime juice • 1 bunch cilantro, chopped • 1 green onion, chopped

2. First whisk flour, cornstarch and salt in a large bowl. Make a depression in the center of the flour. Stir in the water and egg yolk. Mix just until moistened; batter will be lumpy. Stir in egg whites.

DIRECTIONSCILANTRO-SWEET CHILI SAUCE 1. Heat the sesame oil in the skillet over medium heat. Stir in the garlic and ginger, cook for 2 minutes to soften. Pour in the vinegar, brown sugar, and fish sauce. Bring to a boil.

3. One at time: first flour the shrimp, then dip the shrimp into the batter to coat. Carefully place a few shrimp at a time into the hot oil. Fry until golden brown, about 2 minutes. Drain on paper towels. Shrimp should be cooked all the way through.

2. Scrape the mixture into a blender, and add the sweet chili sauce, soy sauce, lime juice, cilantro, and green onion. Puree until smooth. Let cool and refrigerate.
