I

want to take this opportunity to thank our Board for its engagement throughout the year, and particularly during the summer months when many members are traveling. Attendance at both scheduled and ad hoc meetings has been exceptional. An appropriately engaged Board is a substantial asset to all our members as we oversee the challenges of a long overdue renovation, provide leadership to grow our membership, and collectively work toward the long-term health of our Club.

Board officers Sara Kuhn and Richard Pollack are term-limited, creating two openings on our Board. The following reflects information for the end of each Board member’s term. John Marshall – 2021 Leo Chomiak – 2021 Steven Sonenreich – 2020 Gaston Legorburu – 2020

Based on these imminent vacancies, our Board of Directors will soon begin considering qualified candidates to fill three Board positions. Should you wish to be considered, please visit the Club’s website at www.dbycc.com for an application, or collect a printed application at the clubhouse front desk. All completed applications should be submitted via email to Daniella Tosta at d.tosta@dbycc.com, or dropped off at the clubhouse to Daniella’s attention. A digital photo is also required for all applicants. The deadline for submitting completed applications is Saturday, Sept. 28, at 5 p.m. More information on the recruitment process will be provided at a later date. However, the following provides a tentative time line for the recruitment process: October 9-11 - candidate interviews November 5 - candidate speeches Early December - voting and final selection process during the Annual General Meeting of Equity Members During this critical time at our Club, I intend to be very engaged with the recruitment of new Board members as we begin the renovations that we know will positively transform our Club. If you are interested and would like to chat about the time commitment for being a Board member, please contact me at your convenience. On Thursday, Aug. 29, the city of Coral Gables’ Board of Architects unanimously approved our renovation plans, with zero alterations required. The Board was very complimentary of the design and approach that will be used. We are on schedule with the city for final approvals and initiating construction this fall. I look forward to seeing you soon.

I

t’s truly amazing how summer 2019 will come to an end in a few weeks, ushering us into my favorite time of year – fall. With the new season’s arrival comes some exciting annual traditions like resuming Tuesday Night Dinner on Oct. 1, Thursday Pasta Night on Oct. 3, and our daily fresh salad bar during our lunch service. As we continually seek ways to enhance your dining experience, it is also important that we honor the tradition of celebrating Labor Day in a special way.

As a friendly reminder and as the season progresses, kindly ensure that you and your guests contact us in advance to sign up for tournaments, and make event and dining reservations. This practice allows our team to prepare accordingly, and ensures we are poised and ready to always provide the best in service excellence as we serve you. Our foremost priority is to ensure memorable experiences in all aspects of our operations for our members and their guests. It is my pleasure to share that our summer camp program just ended as yet another remarkable season. This year, we are delighted to announce that we experienced recordbreaking attendance with an average of 18 kids per week. This is an exceptional statistic and the best one yet for this program. This is truly a splendid accomplishment for our Kids & Teens Department under the oversight of our Catering Manager Jessica Terry and Kids & Teens Coordinator Lee-Ann Smith. As we advance our quest to sustain the most progressive, fun and engaging junior program in town, our summer camp provides kids with the opportunity to preview our programs throughout the summer months with their junior fellow members. I am also delighted to announce that our Director of Tennis Pedro Leon recently competed in the USTA – Men’s 4.5 Team 40+ Sectionals, becoming the number one single in the team, and winning amidst a highly competitive group of former top 100 tennis professionals from around the world. Congratulations, Pedro, on this remarkable accomplishment. We are delighted to have you on our team as you and Cheryl continue to serve our members with excellence. On behalf of Troon and our Club’s Board of Directors, we certainly value the contributions of our entire Club staff, and are continually committed to providing our team members with the resources needed to excel. Further, one of our foremost priorities is to ensure that we recruit and maintain the most dedicated and skilled employees committed to maintaining our tradition of service excellence. This mantra is reflected in the official introduction of our new Executive Chef Marcos Quijano. During the transition to Chef Marcos, Sous Chef Joaquin Canalda Moreno did an admirable job of assuming some of the executive chef’s responsibilities. During this brief but successful assignment, Joaquin served our members with dedication, and we are truly thankful for what he has done to get us through to this phase. Now that we are ready to officially welcome Chef Marcos, we believe that Max, along with Chef Marcos, will be instrumental in advancing our Club’s vision and mission within the food & beverage department. Further, we are confident that Chef Marcos’ extensive experience within the industry, coupled with his ability to build and sustain relationships with those he serves, will be an integral part of the success we expect within our food & beverage department. In light of this, it is my pleasure and honor to share information on Chef Marcos’ illustrious career within the food & beverage industry (please see the end of my article).

Executive Chef Marcos Quijano Bio Of Cuban ancestry and inspired by his parents’ and grandparents’ “love and respect for quality and tradition,” Chef Marcos had an interest in the culinary field from an early age. After graduating from Johnson & Wales University at age 23, Chef Marcos sought opportunities to further develop his creativity and insatiable desire to advance within the culinary field. His culinary repertoire flourished during an internship under Chef Pascal Oudin at the Grand Bay Hotel, followed by The Palm D’or at the Biltmore Hotel where he was the chef de partie. He subsequently became a sous chef under Chef Phillipe Ruiz, during which he significantly developed and refined his culinary techniques. He then proceeded to Sonesta Beach Hotel in Key Biscayne where he served as executive sous chef. There, he extended his skills to all facets of the hotel’s operations, landing him at its fine dining restaurant Purple Dolphin as he “pleased the palates of the restaurant’s most exclusive clientele.” After spending two years with the Sonesta Hotel Group, Chef Marcos accepted the role of executive chef at Mariposa Restaurant located within Nieman Marcus in Coral Gables, and had a remarkable opportunity to engage in and learn contemporary and progressive culinary skills and cooking techniques. After three years, Chef Marcos was offered an incredible opportunity to serve as executive chef at Trump National Doral Miami Resort & Spa. In 2008, Chef Marcos pursued an entrepreneurial enterprise, creating his own restaurant & healthy meal delivery service branded Serving the Soul. This venture afforded him the opportunity to elevate his healthy cuisine project, updating the menu seasonally. Chef Marcos’ vast menu of international comfort food ranged from fried chicken, to indigenous dishes like Swordfish Escabeche that his father created when Chef Marcos was a toddler; as well as Chef Marcos’ grandfather’s famous stuffed local tomatoes with crab salad. In 2016, Chef Marcos sold his business and decided to return to working in the hotel sold his restaurant. In fall 2016, he began his tenure with Menin Hospitality where he oversaw food and beverage operations for several restaurants, including Bodega Taco & Tequila, Pizza Bar and Halves & Wholes. Subsequently, he joined the Brand Essence Group as an executive sous chef for Bagatelle Miami located on South Beach, and has run the scratch kitchen operation for the past nine months.

In closing, I extend my sincerest thanks and appreciation to my staff, our members, our Board of Directors and Troon for the support and gratitude you have all shown over the past year. This month marked one year since I began at Club, and my experience has been remarkable, rewarding and a learning experience as we grow together toward the exceptional vision we all have for our vibrant community. It is with eager anticipation I look forward to continuing to serve you. e welcome the month of September with excitement as more and more people within our community are hearing about Deering Bay. Last month, Miami Today published in article featuring our club and our upcoming renovations. Univision 23 taped an interview at Deering Bay showcasing our diverse membership and the game of golf. The interview aired four times throughout a busy weekend. Bill Ussery Mercedes – Benz, through a partnership with the club is promoting Deering Bay to select customers. The South Florida Luxury Guide wrote an editorial on Deering Bay this past month. All of these public relations efforts coupled with our select community partnerships and social media activity have really put a spotlight on our beautiful club on the bay! We have positive momentum in gaining new membership to the club as well as positive buzz around our upcoming clubhouse renovations. It is definitely a great time to be a member at Deering Bay. As always the best source of adding new members are your referrals and we appreciate it! Kindly continue to share the good news about the club with your neighbors, family, and friends.

Tip Of The Month WORK ON YOUR GRIP I live by this saying regarding the GRIP. I have seen a lot of bad golfers with bad grips, but I have never seen a bad golfer with a good grip! Since the hands are the only part of the body that comes in contact with the club, it is vital to get the grip right. There are three main grips: the interlocking, the Vardon and the 10-finger or baseball – decide with our professionals which is best for you. A proper grip will not take as long as you may think to learn. The results will lead to better clubface control, increased club head speed and proper compression of the golf ball. All point to lower scores and enjoyment of the wonderful game we all love.
