A Letter From The President I hope you are enjoying these last few weeks of Summer. It has been an eventful month at the club with all of the ongoing construction projects and fall planning in process.

On the clubhouse renovation project, we have run into several unexpected challenges that come with an aging building and the availability of labor and construction materials in the market. Also, as building and permitting codes have changed over the years, we have spent a lot of time working through these regulatory requirements with our management and contractors to do things right for the club’s future. We also have reviewed the need to upgrade many of our club systems to ensure that we are as modern and efficient as possible for the opening of our new facilities.

Throughout this project, we have experienced increasing costs for materials and labor as well as encountering product availability issues due to market conditions and supply chain limitations. Age related building issues had to be fixed to maintain our beautiful clubhouse. Due to these unexpected circumstances, the renovation project to date is approximately $250,000 over the original budget so far. We are confident that the new and improved clubhouse will be worth all of the time, money, and energy everyone has spent over the past few months. We appreciate all of your patience while we get these projects done. At this time, we are still expecting the new restaurant and kid’s club to open on November 1st. Both the restaurant and kid’s club will be turned over to Deering Bay around mid-October, then our staff will have about two weeks to get the areas ready for member activities. The Fitness Center is expected to be completed around December 9th and it should also be open shortly thereafter. Due to the City of Coral Gables permitting process which takes up to 60 days, we expect to commence the 19th Hole Construction Project along with work on the pool in about 90-120 days. We will keep you all updated on the timing. The search for the new Head Golf Pro and Golf Course Superintendent have been aggressive and ongoing. Troon has evaluated more than 20 candidates for the Director of Golf alone. We are close to finalizing the hire of a Director of Golf and Golf Course Superintendent. Membership growth continues to be strong and we are looking forward to welcoming all of our new members into this new chapter at Deering Bay. Due to the high interest in membership, the club will be implementing a new initiation fee structure starting this month, which can be found in Director of Membership Daniella Tosta’s letter. The club’s financial performance continues to be strong even though the clubhouse has been shutdown for an extended period of time this summer. I wanted to remind you all that the Board of Directors has scheduled the first Member’s Open Forum on Wednesday, October 6th at 6:00 PM. Members will be able to join via Zoom or in person in the Pool Terrace on that date. We will send out an email with more details in a few weeks. We encourage all members that have any questions or feedback to join us at the forum. We will also host a second Member’s Forum in late November or early December this year as we finalize our projects. It is almost time for elections for the Board of Directors. If you wish to be considered for a position on the Board of Directors, applications are now open and can be found at the front desk or on the club’s website. I thank you all for your patience and understanding this summer, and we are all looking forward to seeing you back at the clubhouse very soon.

A Letter From The General Manager We are excited about getting the clubhouse ready for our members to return to the club. The Golf Shop is about ready and we will be moving back in after we get our air conditioning back up and we get reset. In Food & Beverage, Julio Canales has put together a great team of managers and staff and we are looking forward to Chef Jose GomezFernandez and his great cuisine. Julio has some great wine events planned and some special treats on the list for our membership in the next few months.

We are planning a Labor Day Weekend BBQ for Sunday, September 5th on the lawn by the Tennis Courts (weather permitting). Please make your reservations and the staff will be ready to serve you.

The Board of Directors has asked us to plan a Welcome Back Reception upon the re-opening of the Clubhouse. We appreciate your patience these last two to three months and we would like to get all of you to enjoy the club again as soon as we can. Stay tuned for the details and the reception date. As Mr. Chomiak mentions in his letter, the projects are progressing well but with some delay. We have been all working hard to get this Clubhouse reopened. The biggest challenge has been to get the air conditioning working again, which is the first obstacle in allowing us to clean the Clubhouse, shampoo the carpets, and set the Clubhouse back up. Our challenges continue with getting the utility company to connect our new chillers which have been installed for two weeks now. We are hopeful they will get us set up later this week or early next week. Last month I had included a chart of estimated opening dates for various facilities. Other than the pool, we have not been able to get the timing completed accurately due to the project delays. I have included new estimated dates again in hopes that we can get these projects completed. The main kitchen was gutted and we have replaced the ceilings, walls, drains, air vents, and flooring. The age of the kitchen was creating issues for us and we will have a great new facility for our staff going forward to work in and to complement the new restaurant. We welcome our many new members from the month of August. Our continuing growth of membership has been very positive. The Deering Bay family continues to grow and we are all excited get our new project finished in the next few months. We are here to assist all of you. Chef Jose Gomez Chef joins Deering Bay Yacht and Country Club with over 30 years of experience, having begun his career in San Juan, Puerto Rico, and refining his skill set at The Culinary Institute of America. Having received training from several world-renowned chefs, including Michael Mina, Roland Passot, Sylvain Portay and Jean-Georges Vongerichten, Chef Gomez held Executive Chef positions at The Waldorf Astoria Panama and the Waldorf Astoria the Reach in Key West, Florida. Gomez transformed the food and beverage programs at The Hyatt Ziva and The Hyatt Zilara in Jamaica – placing them in the top five for Hyatt properties throughout the US and most recently was at The Windjammer Landing Resort in St. Lucia on a F&B consultant job. Joining at a time when Deering Bay is looking to further push boundaries in the F&B industry to make its daily work more sustainable, Gomez and his team will spearhead the Club’s farm-to-table initiative, building and nurturing relationships with local farmers, fishermen, and livestock and poultry breeders. This will ensure the Club’s produce remains local, fresh and seasonal. As a Culinary Institute of America graduate, Gomez is an expert on sous-vide cooking, modern cuisine, food pairings, and avant-garde culinary techniques. Food pairing is the principle of combining 4-5 ingredients in one plate that might sound very unsimilar but share the same aromatic molecules and therefore are a perfect match combined. Aping into his cultural heritage, Gomez’s favorite dish to prepare is suckling pig roast “caja china” or “roasting Chinese box.”

Chef Jose Gomez is father of two teenagers; daughter and son. On his spare time likes to golf, go to beach, read and visit trendy restaurants to see what’s going on in the industry as well as spending time his kids.

Hello everyone! I wanted to take the time to formally introduce myself as Deering Bay’s newest Communications Manager. I will be taking care of everything from this newsletter emails, flyers, social media, website maintenance, and other projects around the club. I am originally from Boston but I graduated from Florida State (Go ‘Noles!) this past spring, so I like to consider myself a Floridian now. I am looking forward to meeting all of you over the next few months as life at the Club begins to return to normal. News From Golf Hello again Deering Bay Members! As summer draws to a close and we begin to prepare for the best time of the year (college football season!), things are starting to pick up here in golf operations. We are seeing more members return from their cooler summer homes to what will hopefully be a cooler Deering Bay in the near future! Jimmy and his team have completed all of the intense agronomy practices and the course will be in fantastic condition soon.

Speaking of Jimmy, we wish him all the best on his new endeavor up in Vero Beach. What an honor for him and it speaks volumes about his work here. On a brighter personnel note, we are super excited to welcome Nicole Huntley back to the golf shop in mid-September! She has truly been missed and we cannot wait to get her back in the fold. The next few weeks feature our Labor Day Tournament as well as our Summer Club Championship. The calendar really starts to pick up in October with lots of fun events leading up to the busy season. With the clubhouse projects continuing to progress it is going to be a very exciting time this fall here at The Club. Once again, thanks so much for your hospitality to me here at Deering Bay. I hope everyone has been enjoying their summer; we have had a busy one out here on the golf course. We have successful completed all three of our closings that included 3 aerifications on the greens and tees, two aerifications on the fairways, and one verticut on the fairways. The turf has recovered well from all of this and is extremely healthy. I know that the greens are still a bit slow; this is because we haven’t yet started to lower the height of cut and use growth regulators on them. We wanted to keep them growing as much as possible while the weather is still conducive to growing healthy turf. Over the next couple weeks we will slowly be adding growth regulators and lowering the height in anticipation for the start of season.

Throughout the summer we also completed a few projects. The most important one being the removal of the wicking barriers and sand dams in the front of the greens. We completed this on 6 of our 18 greens. These greens include numbers 1, 4, 13, 15, 16, and 17. This will greatly improve the water movement off of the greens surfaces and allow them to dry faster, helping eliminate the algae buildup we saw last year. We also laid about 30,000 square feet of sod throughout the golf course. One of the biggest areas we sodded was left of the landing area on number 9 where we removed Bermuda grass and a lot of tropical signal grass. Lastly, I am sure most of you have heard by now that I have resigned my position here as your Superintendent. I have accepted a role at John’s Island Club up in the Vero Beach area. This decision was not made lightly, but in the end it was the best decision for my wife and me both professionally and personally. I will miss Deering Bay and all of the relationships I have made here. I feel that I have left the golf course operation in better condition than when I first started here five and a half years ago. I hope that all of you think the same. Thank you all for the support over the years and if there is anything that I could help with in the future please don’t hesitate to ask me.

News From The Kitchen As you can imagine, the food and beverage team is super excited to welcome you back to our dining areas. We are working on many details to guarantee that our team is well trained and ready to serve you. I’m glad to share with you that our department is almost fully staffed and we feel confident that our team will be trained before the middle of September when we expect the clubhouse to reopen.

A Labor Day celebration will be hosted our tennis lawn area on Sunday, September 5th from 12pm to 3pm. We have a fantastic buffet and grill for the delight of our members at the cost of $25.00 per adult, including soft drinks. We are planning games and surprises, all while a DJ plays your favorites songs. For Rosh Hashanah & Yom Kippur celebrations, we will be partnering with Joanna’s Marketplace and will provide a ToGo service. The pick-up for both celebrations will be at our valet at the main clubhouse.

Wine of the Month: Lewis Cellars was established in 1992 by Randy and Debbie Lewis. Randy grew up in Atlanta, Georgia with a passion for professional car racing. He competed in a variety of races including Formula Three in Europe, Formula 5000, and five Indianapolis 500’s. He is not the only former professional racer to own a winery or have a connection to wine-making in Napa Valley. Mario Andretti still produces wines and incidentally used to lease a winery space just a short distance north of Lewis Cellars. Randy Lynch at Bennett Lane, Gil Nickel (deceased), and Jeff Gordon all raced in some capacity. It was through racing and his time in Europe that Randy Lewis developed a love for wine. While attending San Jose State, Randy would take advantage of the proximity to Napa Valley by driving to wine country on the weekends. Over the years, Lewis Cellars wines have earned critical acclaim from various wine publications, sparkling scores, and have been served at the White House. In late 2016, Wine Spectator Magazine named The Lewis Cellars 2013 Cabernet Sauvignon as their number one wine of the year. In September, to celebrate the reopening of our clubhouse we will have available the following wines from Lewis Cellars: Lewis Chardonnay, Sonoma 2019 Lewis Alecs Blend, Napa 2018 Lewis Cellars Cabernet Sauvignon Hillstone Napa 2018 We will have a tasting table available in the pool terrace room once we reopen. Also, we want to share with you that our new Chef Jose Gomez is working on a mind-blowing fall menu with the help of our culinary team. As always, we thank you for your continued patience and understanding about our renovation project, but we will be back soon with great plans. Whether you are tailgating outside of Hard Rock Stadium or relaxing on your couch, this recipe is the perfect dish to prepare for a Fins game!

Ingredients:

8 oz. cream cheese 1 small red onion 6oz smoked Mahi Mahi 1 tbsp. lemon juice 2 tsp. horseradish 6 shakes hot sauce 1/2 tsp. each salt & pepper 1 tsp. dillweed

Procedure: 1. In a food processor, pulse chop a small red onion. 2. Add the smoked fish to food processor and pulse 4 times. 3. In a bowl with an electric mixer, whip cream cheese until smooth. Add the onions, fish, lemon juice, horseradish, hot sauce, salt , pepper, and dill weed. Mix well. 4. Transfer to a serving dish and enjoy with your favorite crackers, tortilla chips, or pita chips!

Deering Bay offers seven of the area’s best Har-Tru surface tennis courts, all of which are illuminated in the evenings with a Pro Shop that is open until 9pm. 2. I have been working hard envisioning the future of fitness here at Deering Bay and as always, I welcome any comments or suggestions regarding what you all would like to see offered here. You will find our September fitness schedule below should you want to join us, and I will keep you all updated via email about any changes that occur.
