pring in Santa Fe is always a time of seasonal contradictions, and local residents have learned not to put away their winter clothes until the wide variations in weather conditions have settled down and summer is finally on the horizon. That time has now arrived and we can all look forward to a Santa Fe summer that promises to be more ‘normal’ than it has been for the last couple of years. Our renowned, signature events are back in full force once again: Indian Market (which celebrates its 100th anniversary this year); the International Folk Art Market; the Santa Fe Opera and Spanish Market. And this year we welcome a new one as well—the Santa Fe Literary Festival, featuring well-known local and national literary figures like George R R Martin and John Grisham. This is clearly a time to get out and about, and with the warmer weather comes the opportunity to enjoy eating outdoors. Many of our restaurants offer patio dining, and picnic enthusiasts can also take advantage of takeout dishes, as can opera-lovers for pre-performance tailgating. Enjoying a fine meal on a warm summer evening, in a natural environment with decorative lighting, is one of the great pleasures Santa Fe has to offer. All those many months of being home-bound and sedentary, connecting and meeting via Zoom, have inspired many of us to become more focused on improving both our health in general, and our physical appearance in particular. ord on the street is that this is going to be a bumper summer season for Santa Fe. The Indian Market is celebrating its 100th birthday, the International Folk Art Market and the Opera are back in full swing, and the inaugural Santa Fe Literary Festival, featuring prominent literary figures like John Grisham and George R R Martin, was also launched this year.

People who have been confined to their homes for far too long are itching to get out and travel, and Santa Fe, with its unique environment and notable artistic and culinary attractions, is a popular destination. Canyon Road is, of course, high on everyone’s list and the two galleries featured in this section, with their lush, colorful outdoor settings, are especially attractive places to visit at this time of year. The Tierra Mar Gallery welcomes visitors with a prominent display of distinctive, super-size sculptures by ceramic artist Jarrett West, in and around the grounds in front of the entrance. These unique works, inspired by the natural world, are all molded, put together, glazed and finished by hand, by the artist himself, and are intended to live outdoors. They both reflect and complement the environment, their personality shifting and changing with the different seasons, weather patterns, or time of day. West is a well-established local artist and any one of his pieces (there are also smaller ones for inside the home) would be a genuine and enduring Santa Fe treasure. A little further up Canyon Road is the Longworth Gallery, a fine art gallery specializing in metaphorical realism. There are actually two galleries, set inside a beautifully landscaped garden area, and in addition to wonderful paintings, they also offer a limited selection of jewelry, lamps, vases and unusual artefacts. Something you are certain to see nowhere else is a stunning set of kaleidoscopes, each one attached to a base of healing stones, such as quartz or malachite. These kaleidoscopes/sculptures are fully operational, at the same time as being exceptional works of art and would make wonderful family heirlooms.

From the moment he started working with clay, Jarrett West knew what he wanted to do. “I was a high school student at the time and I took to it immediately,” he recalls. “I was a natural.”

orn in Santa Fe and raised on ranches and farms in New Mexico, Wyoming and Idaho, Jarrett had been drawn to the rural outdoors since early childhood and had little interest in, or exposure to, the arts growing up. It was his experience with clay that set him on the road to becoming an artist and after graduating he returned to Santa Fe, where some of the most renowned ceramic artists were living and working at the time. “I started making a nuisance of myself,” he says, “knocking on doors and asking to be taken on as an apprentice. It was the 1980s and I guess things were different then.” His persistence paid off and he completed several apprenticeships over the next nine years or so, learning his craft from people who knew he was serious and really took the time to help and educate him. “I’ll always be grateful to the Santa Fe art community and to my mentors,” he says. “They were definitely my greatest artistic influence.” Jarrett began by making practical objects, like bowls, plates, mugs and teapots, but as time went on he learned how to build kilns, dig native clay and master special glazing techniques. He even ended up designing and building homes. Working on a much larger scale prompted a significant shift in his artistic evolution, especially as the work of JapaneseAmerican artist Jun Kaneko was attracting much attention at that time. Kaneko was completely re-imagining the accepted size and shape of ceramic art, creating sculptures that were as much as 13 feet high, with very distinctive, glazed surfaces, a combination of sculpture and painting. “Having worked in construction for a number of years, that really spoke to me,” recalls Jarrett, “and I remember thinking I could do that.” And that is what Jarrett West is now renowned for, larger-than-life ceramic sculptures, often consisting of several layers that can be as much as 10 feet high, with very distinctive, hand-made glazes and textures that reflect the colors of the natural environment. His work, which is typically very feminine, with soft contours and shapes that reflect the harmony and symmetry of Mother Nature, has often been described as ‘huggable.’ Because they are designed to live outdoors, his sculptures are crafted specifically to withstand the impact of snow, hail, wind,

rain, ice and UV rays from sunlight. They also interact with the environment, their energy shifting to reflect the different seasons and even the time of day, since sunshine and shadows, light and dark, create nuances that produce subtle differences in their shapes and surfaces. As for the meaning of his work, Jarrett prefers to leave that to the viewer to decide. “Like any abstract art, I think it’s important to let people’s imagination run free,” he says simply. A show featuring Jarrett West’s work will be held in July at Tierra Mar Gallery on Canyon Rd., which is proud to provide exclusive representation of his natureinspired outdoor sculptures. GAJA WINERY

Giovanni Gaja founded the GAJA winery in 1937 and began producing wines from the family’s 2 hectares of vines in what is now the Barbaresco appellation. Focusing on quality over quantity, Giovanni kept up production during World War II, and in the 1960’s he began purchasing some of the best vineyards of Barbaresco, including the three historic cru plots that have become the flagships of the winery: Sori Tildin, Sori San Lorenzo and Costa Russi. While it was Giovanni who provided the foundations for the family’s winemaking empire, it was his son Angelo Gaja who elevated the family name to the legendary status it enjoys today. From early on, Angelo dedicated himself fully to Angelo Gaja changing the image of the wines of GAJA and of Barbaresco overall by applying his broad, international perspective gained from his travels. He began experimenting with green harvest and other techniques he had learned in France, often against the advice of his father. By the time he fully took over the family business in 1970, he had introduced sweeping changes in both the vineyards and the winery, including green harvesting, planting at higher densities, limiting yields, shortening the pruning of the vines, vinifications with temperature control, shortening maceration time and, perhaps most importantly, the introduction of French oak barriques for maturation with the 1975 Barbaresco cuvée. Angelo believed the French oak barriques would tame and refine the powerful tannins of Nebbiolo, resulting in a softer, smoother style. Gaja’s holdings are now extensive, ranging from Barolo wines from the Sperss vineyard in Serralunga d’Alba, Piedmont; Brunello wines from the Pieve Santa Restituta vineyard in Montalcino, Tuscany; the Super Tuscan wines from the Ca’Marcanda vineyard in Bolgheri, Tuscany; and the IDDA wines from Mt. Etna in Sicily. The world owes a great debt to Angelo Gaja and his remarkable vision. Drinking a Gaja wine is a journey of excellence and an experience not to be missed. He and Sazón’s co-owners Lawrence and Suzanna Becerra will be heading to Chicago in June for the awards ceremony to see if Chef Fernando takes the title. “Just to have Chef Fernando nominated is an honor for everyone at Sazón,” says Lawrence Becerra. “What’s different this time is that New Mexico and Texas are no longer in the same category – that’s a big deal and gives our small state some room to shine.” Whether or not he receives this great distinction, Chef Fernando will continue to dazzle diners with his sophisticated takes on traditional Mexican cuisine. Sazón’s immediate and ongoing success. Reservations can be hard to come by during peak times like Santa Fe’s busy summer festival season unless booked well in advance. Chef Fernando loves to tweak his recipes with the freshest seasonal ingredients, garnishes and sides. That means that even the same protein – whether seafood, lamb, beef or pork – will be a new and different experience every time a guest comes in. And speaking of wines, Sazón is the place for oenophiles interested in learning more about the little known but exceptional offerings from some of Mexico’s best winemakers. “For a while we couldn’t get anything because of shipping and travel logistics. But with so many good winemakers in the Baja region now, we knew we had to expand our selection. We worked with a distributor to taste them here and added 16 more Mexican wines to the list. Among the new additions are two new reds of note – a Casa Jipi Nebbiolo and a Solar Fortun Syrah,” says Lawrence. “We’ve also added two whites that are perfect for summer: a Palafox Pionero Blanco, a classic Chenin Blanc with a fresh and aromatic palate that pairs perfectly with seafood. The other, a Vinsur Reflejo is a Chenin Blanc/Sauvignon Blanc blend that’s equally delicious that everyone is sure to enjoy.” Already known for its leading selection of tequilas and mescals offered by the glass, Sazón is equally well regarded for its regular Wednesday and Friday flight tastings. Guest sip five tequilas and mezcals and two flavors of Sazón’s house made sangritas, paired with a savor of Chef Fernando’s famous home-made moles. hen summer arrives in Santa Fe, there’s no excuse for not being outside and enjoying the mild weather, abundant sunshine and distinctive adobe architecture. And those are just a few of the reasons that lunch or dinner at Sassella, the City Different’s premiere Italian fine dining restaurant, should be on anyone’s menu. That’s right, lunch service is back, every day except Wednesdays. That also means Sassella’s spacious, leaf-shaded courtyard is the perfect spot for al fresco brunch or whiling away the afternoon with a new cocktail in perhaps the most romantic outdoor patio the city offers. And to celebrate the return of lunch service, Executive Chef and co-owner Cristian Pontiggia has added several tempting choices to Sassella’s already delicious menu of traditional Italian favorites, salads and of course, oysters and champagne. A fresh, light pear carpaccio, dotted with Meredith Farms goat cheese, artichoke, encapsulated lemon and mango pearls, mint, pistachios, and aged balsamic is a reinvention of the traditional shaved beef classic. For those interested in heartier fare, the Muffola di Gamberi – seasoned fried shrimp, baguette, pancetta, romaine, tomatoes, giardiniera, and basil mayo served with house made potato chips, plays on the New Orleans classic with Chef’s Italian flair. At dinner, Chef Cristian has outdone himself with a new quail dish, too. The partially de-boned bird is stuffed with sausage, drizzled with red wine rosemary orange demi-glace, and served with Brussels sprouts and mashed potatoes. They are delicious, lighter pinot style wines and good values, too. We also added two special reserve wines: Bruno Giacosa, Barolo ‘Falletto’, Piedmont, 2017 and Giuseppi Quintarelli, Alzero, 2007. They are both magnificent wines.” Sipping a cocktail is also a welcome pleasure at Sassella, whether on the patio, the bar, or in the gorgeous dining room with its exposed stone walls and décor designed by co-owner Suzanna Becerra. New this season are a number of specialty cocktails made with Amaro, a quintessentially Italian herbal liqueur. The Sicilian Sling is a Tiki classic reimagined with an Italian twist, while the Il Vialé (Italian for boulevard) is a bourbon-based Negroni rooted in the classic Boulevardier. JOSEPH’S CULINARY PUB Embracing the New Normal By Anya Sebastian

he unprecedented challenges faced by restaurants over the last couple of years have resulted in significant changes that are likely to be felt for some time to come. “The new normal is not the same as it was,” declares Joseph Wrede, chef/owner of Joseph’s Culinary Pub. “Everything is in a state of flux and people are still adapting to the changes, but the old normal is definitely not coming back.” One of the positive things that Wrede has been noticing in both customers

and staff, is an increased sense of appreciation. After long periods of isolation and a lack of social interaction, eating out is now a special occasion, even a luxury. Everything is taken care of - the food is cooked, expertly presented and brought to the table, together with drinks and any special requests. Unlike eating at home, diners can linger over their meal for a couple of hours and can finally leave without having had to do anything except enjoy their meal. “People have definitely been showing their appreciation by

leaving generous tips,” says Wrede, “and for the staff as a whole, the fact that we survived the storm and are now back in a familiar social setting, is something we are all immensely grateful for.” People also seem to be becoming more adventurous in their food choices, opting for dishes they cannot, or do not, cook at home. Wrede has definitely noticed an increase in the popularity of items that are labor intensive and time-consuming to prepare, such as his Pad Thai Duck

Confit, with Thai style cabbage, peanuts, egg, rice noodles and crispy duck skin, or Banana Lamb Curry, with lemon turmeric rice. There is also a discernible trend towards eating healthier food and exploring new things. “People are more open to dishes that expand on traditional themes,” observes Wrede. “The status quo is not as valued as it once was.” Hence the popularity of Joseph’s Vegetable Enchilada, with acorn squash, corn, local mushrooms, red chile, Cotija cheese crumble, spinach purée & green rice. Another popular dish is his Root Vegetable Napoleon, with roasted root vegetables, Brussels sprout leaves, sheep cheese, carrot custard, honey, cardamom & espresso dusted phyllo. Perhaps because it is something that people seem reluctant to cook regularly at home, Joseph’s Fish du Jour is also a consistent winner. The ‘special’ features

wild-caught, fresh fish, flown in daily and prepared with Wrede’s customary culinary flair and originality. See page 45 for a typical dish. Fish is also popular with visiting tourists. “For some reason, people seem to associate fish with being on vacation,” says Wrede.“ Because we’re so far from the ocean, we make a point of putting together something really special. It has to be good and fresh; none of our fish is frozen.” Local produce is also favored as much as possible. “Not only does it taste better, but it avoids long supply chains and dealing with corporate farming with no personal connection,” he explains. “Having a local business model is also the most logical way to deal with the economic uncertainty we are dealing with right now.”

As for the future, Joseph’s is looking forward to acquiring a spirits license, an exciting and welcome new addition to the restaurant, that should be up and running soon. For dinner, try the grilled sterling silver rib eye with green beans and green chile mashed potatoes, the grilled New Zealand rack of lamb, or the Pacific blue crab cakes. Over the years I experimented with many different ways to serve roasted peppers, and after a lot of experimentation I settled on a soup presentation we call Sopa de Amor, or Soup of Love. The dish plays with sweet and savory with the use of roasted poblano peppers and chocolate; hot and cold with the use of a heated soup topped with a cold almond foam; all served over a lump of blue crab. WITH SPRING’S RECENT ARRIVAL and temperatures beginning to rise, one of nature’s toughest pests has begun stirring: Scorpions. Notoriously one of the most difficult pests to eliminate, Scorpions spend most of their time tucked away in cracks or crevices and are even found in children’s sand boxes. Although they are not aggressive hunters, their sting can be quite painful, and in the case of one species found in the U.S. (Arizona Bark Scorpion), it can sometimes be fatal. If you ever experience any of the following serious symptoms, call Poison Control (800) 222-1222 or go to the emergency room immediately: breathing difficulties; difficulty swallowing or talking; dizziness; drooling/salivation; extreme or persistent pain; hyperactivity; muscle twitching or thrashing; numbness that spreads to entire extremity; paralysis of area or extremity; unusually high or low blood pressure; vomiting; or weakness. Some things homeowners can do to help prevent scorpions include keeping their house clean, de-cluttering floors, keeping your home insect-free, eliminating hiding places like loose rocks, piles of leaves, trash, and other unnecessary debris, consistently trimming tree branches away from a home’s exterior, and sealing

anta Fe Awning was started almost 30 years ago by a single dad with two young kids and virtually no income. Jeff Maul did everything himself, working out of his home. He completed design work at the kitchen table, sewed awnings in the living room, and welded steel frames on the back patio. His 12 year-old daughter, Sara, would frequently answer the phone. The company has come a long way since then and recently moved from a 6,000sq. foot building to a 12,000sq. foot space on Rodeo Park Drive. Sara, who went on to get a degree in business, now runs the company and is celebrating her 20th anniversary with Santa Fe Awning this year. “My dad is still very much involved,” she says, “and my goal is to continue to support and expand his vision.” The company’s handiwork can be seen all over town, from the awnings at Meow Wolf, to the impressive, outside shade structure at the Opera House. “Everything is made to order,” says Sara, “and we do all kinds of jobs, from specialty work like the opera, which took 4500 tons of steel to complete and had us working seven days a week, to small window screens and skylight covers.”

t took one bite of my Jordan Pond House popover to know the accolades about these treats were true. The muffin-like concoction was fluffy and buttery, and served piping hot with strawberry jam. A glass of blueberry lemonade made the perfect accompaniment, as did the picturesque view of Jordan Pond and the Bubble Mountains of Maine’s Acadia National Park. Acadia boasts towering, rocky headlands, a rich cultural heritage and an abundance of diverse environments. Much of the park lies on Mount Desert Island. Use the Park Loop Road to access the island’s notable spots and hiking trails. One highlight is Thunder Hole, a natural rock formation affected by sea conditions. Watch as waves crash into the hole with a thundering boom. Sand Beach is another point of interest. “Polar bears” might enjoy swimming here, as the warmest water temps are a balmy 55 degrees in August. Spectacular vistas can be found at Otter Point and Otter Cliffs, but no otters. Monument Cove is known for its namesake pillar— the result of wave action over centuries—and nearby Boulder Beach boasts bowling ball-sized rocks. At 1,530 feet, Cadillac Mountain is the park’s highest point. If you don’t want to hike to the summit, you can drive to the top for the same vistas.

Rockefeller Jr. to thank for this system, as the philanthropist wanted to travel on motor-free byways via horse and carriage into the park. For another view of the area, take a boat trip. Bar Harbor Whales offers daily excursions departing from the town of Bar Harbor. Prepare to be regaled with details about the history, geology, wildlife and more. You’ll hear about “Millionaire’s Row” and its notable residences. Kenarden, for example, belongs to the Campbell Soup family and during the summer, they fly a white flag with a big red tomato on it. Another, the High Seas Estate, was owned by a Princeton professor. Story has it he built the house to entice his fiancé to move here from Europe and marry him. The good news—she agreed. The bad news—he booked her on the Titanic! As for lighthouses, we saw several, including photogenic and purportedly haunted Bass Harbor Light. Staying in Bar Harbor makes the most sense during your visit. This charming community has a colorful harbor, numerous shops and plenty of choices when it comes to accommodations. This is also the case when it comes to dining options. Of course, fresh seafood reigns supreme. I ate “lobstah” in every combination possible. I even tried it in ice cream, which is the only form of lobster I discovered I didn’t like!
